MEDITERRÁNEO LA TIENDA DE ELENA MASUT EN EL COTILLO

Mediterráneo es una de las pocas tiendas de moda que podemos encontrarnos en El Cotillo. Ropa con un marcado estilo isleño, alegre e inspirada en los colores del mar, de marcas italianas muy conocidas y piezas únicas y artesanas elaboradas en ganchillo por su propietaria, Elena Masut. Y es que Elena es una amante del crochet desde bien pequeña, una auténtica artesana de la moda. Entre sus creaciones en crochet podemos encontrar fulares, cinturones, collares, pendientes… pero sobre todo sombreros. Hace mas de 15 años que Elena comenzó a hacer gorros en ganchillo, tiene su propia marca de sombremos en crochet «Capplè» inspirados en los diseños de los años 20/30. No solo eso, si no que además ha publicado varios manuales de patrones en ganchillo de sus diseños de sombrero. No hay un sombrero igual a otro en su tienda. Cada modelo es una pieza única que a veces adorna con botones, hebillas o corbatas encontradas en anticuarios a lo largo de los años En Italia estos son muy conocidos y han protagonizado desfiles de moda, sesiones de foto e incluso se han convertido en objeto de decoración para tiendas que nada tienen que ver con la moda.

Mediterráneo is one of the few stores we can find in El Cotillo. Clothes with a typical island style, lively and inspired in the colours of the sea, well-known Italian makes and unique handicrafts, croqueted by their owner, Elena Masut. And this is because Elena has been a crochet lover since she was very young, an authentic fashion craftswoman. Among her crochet creations we can find foulards, belts, necklaces, earrings… but mainly hats.

En Fuerteventura ha adaptado sus creaciones al calor, elaborando estos sombreros en rafia y algodón para obtener un resultado suave y veraniego. Pero la capacidad creativa de Elena va mucho mas allá del crochet, en Mediterráneo, la tienda que fundó junto a su marido hace 4 años, puedes encontrar preciosas sandalias que hace ella misma a mano inspiradas en las sandalias típicas de la isla de Capri, corbatas para mujer con diseños muy especiales, tocados, alfombras, bolsos, cinturones, bañadores… Te invitamos a visitar Mediterráneo y disfrutar del arte de la moda.

Over 15 years ago, Elena started to make crochet caps; she has her own make, «Capplè», inspired in designs of the 20’s and 30’s. But she has also published several manuals of croquet patterns she has used for her designs. There is not a single hat which is similar to another in her store, each one is a unique piece, many of them decorated with buttons, buckles or ties she has found in antique shops throughout the years. In Italy they are well-known and they have starred fashion parades, photo sessions and they have even been used as decoration in shops that have nothing to do with fashion. In Fuerteventura, she has adapted her creations to warm weather, making her hats with raffia fibre and cotton to get a softer and summery result. But her creative capacity goes beyond crochet. Lleva en Fuerteventura desde 1990 y surfeando desde el ‘74. Juanjo y sus colegas de olas de aquel entonces, unos 15 o 20 en total, fueron pioneros en el mundo del surf en las Islas Canarias, en una España todavía franquista en al que el surfista era un espécimen extraño y mirado de reojo. .6

¿Cómo era el surf por aquel entonces? Era otra historia, en aquella época deseábamos que viniera gente a nuestras playas, para no estar solos. (risas). Yo empecé a surfear en Las Palmas. Teníamos una casa de veraneo en la playa en San Felipe, conocido como Vagabundos, a media hora de Las Palmas hacia el norte. Entonces empezaban a venir los chicos de Las Palmas, sólo había una tienda de tablas que traían del País Vasco, pero no había nada más. Después de años surfeando con maderas o corchos que encontrábamos, mis padres vieron que estaba engan-

chado con esto y Papá Noel me trajo una tabla (risas). Compartíamos tablas entre amigos y entre hermanos, que comprábamos de segunda mano a los ingleses que venían a una especie de camping que había en Arinaga. También los «chaques», aquí en las islas todavía no había, surfeábamos sin él incluso en invierno. Mi primer traje fue de pesca submarina, con la cremallera por delante, de manga y pernera corta… terminaba con un dolor de cabeza tremendo (risas). ¿Qué modalidad te gusta más? Empecé pequeñito, tenía 11 o 12 años y las tablas me

quedaban grandes, pero empecé con short. Luego probé el longboard en el primer campeonato de long que organizaba la tienda Matador y me quedé con el tablón, de esto hace unos 14 o 15 años por lo menos. Recuerdo que vinieron las leyendas del surf hawaiano a la isla, nunca habíamos visto ese nivel aquí en Fuerteventura. ¿Tú has competido alguna vez? Sí, bueno, en campeonatos y circuitos a nivel local, hacíamos bastantes pruebas al año. Quedé campeón del circuito de longboard de Fuerteventura. ¿Viajes de surf? Las islas, por supuesto, y además he estado varias veces en Indonesia y en Francia también. ¿Qué te aporta el surf? Me olvido de todo. Es meterme al agua y dejar el estrés o los pensamientos a un lado. Supone una completa desconexión. En los años en los que empezábamos nosotros no era como ahora, no había tanta preparación deportiva, ni de ningún tipo, sumándolo a que era una época bastante convulsa y durilla, digamos que gracias al surfing yo me escapé para Fuerteventura y me salvé de aquello. ¿Cuál es la mayor diferencia que encuentras entre antes y ahora? Era muy diferente, en aquella época, con Franco todavía en el poder, se nos veía como golfos, asociaban el surfing a las drogas y la mala vida. Sin embargo, no recuerdo broncas en el agua, podías unirte a la gente y no había problemas de ningún tipo. La gente que venía de fuera tenía respeto por el lugar y por los surfistas locales, sabían moverse y respetaban, ahora mismo eso se ha perdido. ¿Qué medidas habría que tomar para devolver esa tranquilidad al lugar? Hay una falta de sentido común total, no sólo aquí sino en todo el mundo. A mi no se me ocurriría viajar a otro sitio y meterme a coger olas en cualquier sitio, sin respetar a los que están. Esto es el Hawái de Europa y hay que cuidarlo y está bien que se aproveche, pero siempre con respeto. En Fuerteventura con la cantidad de picos de hay, creo que

hay sitio para todos si se hace bien y con la tranquilidad y respeto por la gente y por la isla. La evolución lleva a esto y para sacarle el punto positivo a esta situación hay que educar para que se haga de manera ordenada y bien. ¿Practicas otros deportes? Corro un poquito, pero fundamentalmente el surfing. Lo malo es que si como este invierno hay poca ola lo que más practico es el «sofing» (risas). Siempre se dice que la comunidad surfera local es como una gran familia, ¿es así? Sí, no estamos juntos todos los días, pero siempre hay buen rollo. Ya sea al ir al sur con los chicos de allí o cuando ellos vienen al norte. Nos conocemos y nos arropamos todos mucho. ¿Cuál es tu spot predilecto? Lobos y la izquierda del Hierro, son mis favoritos. En Lobos voy a contramano pero aún así es ideal. ¿Tu plan perfecto de fin de semana? Ahora mi plan es que mi hijo de 7 años crezca un poquito más para que podamos irnos juntos y meternos al agua juntos. Y lo cierto es que, estoy un poco en plan «buitre» en el agua aprovechando los años que me queden, siempre digo que mi hijo va sumando pero yo restando. Así que tengo que aprovechar todo lo que pueda. (risas) Un consejo para nuevas generaciones… Que se enfoquen bien en lo que quiere hacer en la vida. No hace falta mucho para vivir. Si lo que les gusta es el mar que vivan cerca y que estudien algo relacionado con su conservación, por ejemplo. Lo que cuenta es ser feliz. Juanjo está involucrado en el Club de Surf Mar Azul que se fundó hace casi veinte años por surferos locales y que llevan años en la isla, con el objetivo de organizar campeonatos, festivales de surf y charlas que ayude a motivar a la cantera y darles soporte en su formación. He’s been living in Fuerteventura since 1990 and surfing since 1974. Juanjo and his fellow surfers then, around 15 or 20 in total, were the pioneers in the world of surf in the Canary Islands, still in a Spain ruled by Franco, where a surfer was a bit of a weird specimen, suspiciously looked at. What was surf like by then? It was quite another story. At that time, we were looking forward to having visitors on our beaches, not to be alone (giggles). I started to surf in Las Palmas. We had a summer home on San Felipe beach, known as «Vagabundos», a half-an-hour drive from Las Palmas towards the north. Then, boys from Las Palmas were starting to come; there was just a store of surf boards that were brought from the Basque Country, but there was nothing else. After years surfing on pieces of wood and cork we came across, my parents realised I was hooked on that, and Santa Claus brought me one (giggles). Friends and siblings used to share the boards, which we bought second-hand from Englishmen who came to a kind of campingsite in Arinaga. Also wetsuits, as there weren’t any in the islands yet; we used to swim without it in winter as well. My first wetsuit was a short-legged and short-sleeved underwater .8

fishing suit, with a front zipper… I used to end up with a terrible headache (giggles) Which modality do you like best? I started when I was very young, 11 or 12 years old, and the boards were big for me, but I started on a short. Then I tried the longboard in the first long championship organised by Matador store, and I kept the longboard. This was 14 or 15 years ago at least. I remember the legends of Hawaiian surf came in the island, we had never seen such skills here in Fuerteventura. Have you ever competed? Yes, well, in local championships and circuits, there were several events throughout the year. I got the first position in longboard in Fuerteventura. Any surfing trips? The Islands, of course, and I’ve also been several times to Indonesia and also to France. What does surf contribute to you? I forget about everything. When I get into the water, stress and thought are left aside. Surfing is going away from it all. When we started, it wasn’t as it is now, there wasn’t so much training whatsoever and they were turbulent and hard times. We could

say that thanks to surf I escaped to Fuerteventura and I could stay away from all that. What’s the biggest difference you find between before and now? It was very different; at those times, Franco still ruling the country, we were considered as layabouts; surfing was associated to drugs and the bad life. However, I can’t remember any quarrels or fights in the water. You could join the people and there weren’t any kinds of problems. Visitors respected the place and the local surfers, they knew how to move very respectfully. Now this respect has disappeared. Which measures should we adopt to recover the peace and quiet? There’s a complete lack of common sense, not just here but in the whole world. It wouldn’t come to my mind travelling to another place and catching waves anywhere, without respecting the ones who are already there. This is the European Hawaii and we must look after it. It’s alright to take advantage of it, but with respect. In Fuerteventura, there being so many peaks, there is place for everyone if we know how to do it, quietly and with respect for

the people and for the island. Evolution brings us to this, and to reach the positive aspect of this situation we must educate so that people do it properly and in an orderly way. Do you practise any other sports? I do some running, but I am mainly into surf. The bad point is that, as this winter there have been few waves, it has been «softing» that I have practised most» (giggles) It’s always been said that the surfer community is like a big family, is it really like this? Yes, we aren’t together every day, but there are always good vibes. Either if we go with the boys in the south or if they come to the north, we know and protect one another. Which is your favourite spot? Lobos and the left in El Hierro are my favourite. In Lobos I go the wrong way, but even so, it’s perfect. Your perfect plan for the weekend? Now, my plan is letting my seven-year-old child grow up a little bit so we can get into the water together.

At present, when I have a chance to get into the water I try to take advantage of the years that lie ahead; now, every year that goes by I say that my son gets one year «less young» but I get one year older. So, I have to make the most of every single minute (giggles) A piece of advice for new generations… To focus on what they really want to do in life. If it’s the sea that they like, they should live near it, study biology or something related to it. You don’t need too much to live and being happy is what really matters. Juanjo is involved in Mar Azul Surf Club, founded almost twenty years ago by local surfers and people who have been living on the island for a long time with the aim of organising championships, surf festivals and speeches that help motivate the team, giving them support in their training. After a silent period, the club is now resuming their activity, and they will give news in short.

DEPORTE POR TODOS Actividades de Ocio y deportivas para todos Este mes de Mayo se han iniciado los programas de formación y actividades de ocio y deportivas para el colectivo de personas con discapacidad en el municipio de la Oliva bajo el nombre «Deporte por todos»

«El deporte tiene que ser accesible a todo el mundo», y con este lema se inicia el programa, que promueve el Ayuntamiento de La Oliva, y que se basa en la realización de actividades de ocio y deportivas dirigidas dirigidas al colectivo de personas con discapacidad con el objetivo de mejorar su calidad de vida en lo que se refiere a la condición física, social y auto concepto. El programa, que se presenta como pionero en la Isla de Fuerteventura, se basa en el deporte como punto de encuentro para todos, sin importar las circunstancias particulares de cada uno. Inclusión es que los niños y niñas puedan hacer deporte juntos, tengan o no una discapacidad. Así, se realizaron unas jornadas de formación para el personal de las escuelas y centros municipales, con el objetivo de contar con instructores que puedan tener en sus actividades también a personas con discapacidad, para que la inclusión, poco a poco, esté presente en todas las disciplinas. El fin de semana del 12 y 13 de Mayo se celebró la primera Convivencia Formativa, en la que participaron los hijos de las familias acogidas al programa «Deporte por Todos», con y sin discapacidad, y los propios monitores pudieron poner en práctica los conocimientos adquiridos. La actividad principal de esta primera convivencia se desarrolló en la Escuela Náutica, en la que todos los participantes pudieron aprender y disfrutar del kayak y el paddle surf, entre otras muchas dinámicas de integración y convivencia que también se desarrollaron en el Albergue de El Cohombrillo, lugar elegido para la convivencia. Para impartir esta formación, el Ayuntamiento de La .10

Oliva ha contado con la asociación Plan and Train, organización con años de experiencia en la inclusión de personas con discapacidad en los deportes de invierno, entre otros muchos, y cuya delegación en Fuerteventura viene desarrollando también un programa de deporte adaptado en el medio acuático. La responsable de esta entidad en la isla, Mariona Masdemont, considera que «la convivencia es fundamental si queremos avanzar hacia la inclusión. Durante este fin de semana los niños han estado sin sus padres, acompañados solo de los monitores y de sus hermanos y primos. La idea es que participen todos juntos para que la actividad sea verdaderamente inclusiva. El deporte y este tipo de convivencias permiten mejorar sus relaciones sociales, su autoestima y su condición física para el día de mañana». Es un proyecto a largo plazo y es por eso que hay que trabajar paso a paso. Lo primero que hicieron hace meses fue reunirse con las familias para ver sus necesidades. Ahora están en esta segunda fase, que es la formación del personal en materia de adaptación e inclusión para desarrollar las actividades deportivas y de otro tipo, en las que puedan participar estas familias. El programa de «Deportes por Todos» ha sido incluido este año en el Plan de Actuación Municipal del Área de Planificación Deportiva, con el objetivo de completar una oferta deportiva que ya incluye actividades para la tercera edad, actividades físico-deportivas para adultos, eventos deportivos, o la campaña Verano y Deportes para los más pequeños, entre otras muchas actividades como las que se ofrecen a través de las Escuelas Municipales Deportivas.

SPORT TO EVERYBODY Leisure and sport activities for everyone

This month of May, a training, leisure and sport activity programme for disabled people in La Oliva has been started. It’s called «Deporte para todos» (sport for everybody) «Sport must be accessible to everybody», and with this «motto» they have started the programme, promoted by La Oliva town hall. It’s based on the leisure and sport activities targeted to disabled people with the aim of improving these people’s lives, regarding physical fitness, social relations and self-concept. The programme, presented as pioneer in Fuerteventura island, is based on sport as a meeting point for everyone, no matter what their individual circumstances might be. Inclusion is about boys and girls practising sport together, whether they are handicapped or not. That way they organised two training days for the staff of schools and municipal centres, aiming to get instructors able to integrate disabled people in their activities so that inclusion, little by little, be present in all their disciplines. Last 12th and 13th May it was the first co-existence training, in which the children of families enrolled in the programme «Deporte para todos», disabled or not, and the instructors themselves could put into practice their acquired knowledge. The main activity of this first experience took place in «Escuela Naútica», where all the participants could learn and enjoy Kayak and Paddle Surf, among many other bonding dynamics which also were developed in «El Albergue de El Cohombrillo», chosen place for these days of co-existence. To carry out this training, La Oliva Town hall had the cooperation of the association «Plan and Train», organization with years of experience in the inclusion of the disabled in winter sports, among many others, and whose delegation in Fuerteventura has also been developing a programme of sport adapted to the aquatic environment. The person in charge of this entity on the island, Mariona Masdemont, considers that «coexistence is essential if we want to progress towards inclusion. During that weekend, children have been without their parents, just accompanied by instructors, siblings and cousins. The idea is to have all of them participating together so that the activity be really inclusive». «Sport and this kind of coexistence days», Masdemon points out, «allow improving social relations, self-confidence and their physical fitness in their future». It’s a project in the long run, and this is why we must work step by step. The first thing they did months ago wast to meet the families to find out about their needs. Now they are on the second stage, which is the training of the staff regarding inclusion and adaptation in order to develop sports and other kinds of activities in which these families can take part. The programme «Sport for everyone» has been included in the «Plan de Actuación Municipal del Área de Planificación Deportiva» (Municipal Action Plan of the Sport Council), with the aim of completing a sport offer including activities for the elderly as well, physical and sport activities for adults, sport events of the Summer and Sport campaign for the youngest, among many other activities like those offered via Municipal Sport Schools.

VACUNAS… ¿Qué es la sobrevacunación y por qué puede ser perjudicial para tu mascota? Las vacunas principales protegen a nuestras mascotas de enfermedades infecciosas graves pero con la sobrevacunación tu mascota puede desarrollar efectos secundarios, como fiebre, reacciones alérgicas y enfermedades inmunomediadas. ¿Cómo podemos evitar la sobrevacunación? Aunque los veterinarios estamos de acuerdo en que las vacunas son necesarias y siguen salvando muchas vidas de perros y gatos, la frecuencia con que se administran las vacunas principales puede exceder sus necesidades. La clave para conocer la necesidad real de vacunación de tu mascota se basa en un sencillo test de sangre, un test de titulación. ¿Qué es un test de titulación? Un test de titulación mide la cantidad de anticuerpos producidos por las vacunas previamente recibidas. Nos ayuda a saber si tu mascota está ya inmunizada. Si los anticuerpos están presentes en la sangre de tu perro o gato, no hay necesidad de revacunar. Es un procedimiento rutinario en otros países que todavía no está muy extendido en el nuestro. ¿Cómo analizamos los veterinarios los resultados de las pruebas de titulación? Los estudios han demostrado que cualquier nivel mesurable para las vacunas principales indica que tu mascota .12

Para perros : Hepatitis, Parvovirus y Moquillo Para gatos: Panleucopenia, Herpes y Calcivirus ¿Cuándo deberías hacer un test a tu mascota? En cachorros y gatitos: Resulta muy interesante confirmar que tu mascota está protegida después de las vacunas de cachorro cuando se cumplen las dieciséis semanas de edad (WSAVA). Mascotas adultas: Un test de titulación puede ser usado para confirmar la protección de los anticuerpos después de transcurridos tres años después de la última vacuna. Animales abandonados: Un test puede ser muy útil cuando no conocemos el historial de vacunación de un animal. ¿Cómo se hace un test de titulación? Necesitamos obtener una pequeña muestra de sangre en la que se realiza una prueba semicuantitativa para determinar la cantidad de anticuerpos presentes en tu mascota. TALKING ABOUT VACCINES… What is over vaccination and why can it be harmful to your pet? The main vaccines protect our pets from serious infectious diseases, but if you over vaccinate, your pet can develop side effects like fever, allergic reactions and immune-mediated diseases. How can we avoid over vaccination? Although vets agree that vaccines are necessary and keep saving lots of dogs’ and cats’ lives, the frequency with which the main vaccines are administrated can exceed their needs. The key to know the real need of a vaccine for your pet is based on a simple blood test, a titer test. What is a titer test? A titer test measures the quantity of antibodies produced by the vaccines taken previously. It helps us know whether your pet is already immunized. If the antibodies are present in your pet’s blood there is no need to vaccinate again. This is a routine procedure in other countries which is not widely spread in ours yet. How do we, vets, analyse the results of this titer test? Researches have proved that any measurable level for the main vaccines indicates that your pet is immune and does not need any more vaccination for the time being. What main vaccines can be tested? For dogs: Hepatitis, Parvovirus and Canine distemper. For cats: Panleucopenia, Herpes and Calcivirus. When should your pet be tested? For cubs and kittens: It’s very interesting to confirm that your pet is protected after the vaccines they take when they are sixteen weeks old (WSAVA). cuidando de ti El sueño de Silvestre de León cumple veinte años. El empresario, fallecido en 2002, decidió a finales de los noventa abrir un centro de fisioterapia con el que cubrir la demanda existente en Fuerteventura. Dos décadas después, el Centro Médico Fuerteventura (CEM) cuenta con más de medio centenar de especialistas y sofisticada tecnología que lo han convertido en el centro de referencia y vanguardia en la isla y más allá de sus límites geográficos. El proyecto de Silvestre de León echó andar en 1998, abriendo sus puertas en un pequeño local en la calle María Estrada, en Puerto del Rosario. En su fachada colocaron un rótulo con el nombre de Centro Clínico Fuerteventura. A los servicios de fisioterapia iniciales no tardaron en unirse nuevas especialidades médicas, mientras Silvestre seguía soñando con incorporar nuevos servicios sanitarios que cubrieran necesidades de la sociedad majorera. En 2002 cumplió un nuevo sueño: instalar en la isla la primera resonancia magnética. La llegada de la maquinaria supuso toda una revolución en la sanidad insular. Un acuerdo con el Servicio Canario de Salud ponía fin a los traslados de los pacientes a las islas de Gran Canaria y Tenerife y a las listas de espera. Ese mismo año Silvestre falleció y su proyecto lo continuaría su esposa Marisa Darias, que ha seguido la misma línea persiguiendo dotar a la isla de Fuerteventura de los mejores especialistas, métodos punteros para pruebas de diagnóstico y maquinaria de vanguardia. Poco a poco, la familia del centro fue creciendo y, tras una unión entre el Centro Clínico Fuerteventura y el Centro de Especialidades Médicas (CEM), el centro, ahora ubicado en la calle La Graciosa, cuenta .16

con un enorme catálogo de servicios con las tecnologías más punteras: ecografías 4D en ginecología, radiología totalmente digitalizada, criocirugía en otorrinolaringología –único en la isla-… Además de a particulares, atiende también a las compañías de seguros privados, mutuas de accidentes laborales y aseguradoras. El sueño de Silvestre se ha cumplido. Más de una veintena de especialidades y medio centenar de profesionales que trabajan a diario para que el CEM continúe siendo un referente en la sanidad insular.

That very year Silvestre died, and his project would be continued by his wife, Marisa Darias, who has pursued the same targets: providing the island of Fuerteventura with the best specialists and cutting-edge methods for diagnosis tests and equipment. Little by little, the family in the

Esta vez nos adentramos tierra adentro donde, tras las breves pero intensas lluvias del norte de Fuerteventura, su suelo nos muestra cada año su gran fertilidad. Lo que al final del duro verano es un campo despoblado con algunos cereales, en primavera se transforma totalmente, y la tierra rebosa vida que explosiona con un mínimo de humedad. En zonas rocosas donde esta humedad se retiene por más tiempo , el crecimiento de algunas plantas se ve facilitado. Ecosistemas como el malpaís o también llamado malpey retienen parte de esta humedad creando un paisaje muy particular. Están compuestos por coladas de lava, de las que existen varios tipos: tipo AA, más viscosas e irregulares por su lento avance durante una erupción (y que en Canarias normalmente denominamos malpaís); pahoehoe, del hawaiano, que originan un paisaje mucho más suave, también denominadas «cordadas» por su morfología en forma de cuerdas, son las más comunes. Los primeros seres que encuentran de este ecosistema basáltico un lugar idóneo para crecer son los líquenes. Se trata de los primeros colonizadores en islas volcánicas y son originarios de la asociación entre un alga, hongo (parte reproductora) y levaduras, juntos tapizan todo el paisaje con distintas especies y tonalidades. Nombres como Xanthoria (rojos y naranjas) o Ramali.18

na (de color verdoso, y denominado «escán») llaman la atención por sus extensiones, sin embargo, si acercamos la mirada, descubriremos en las rocas muchas especies y colores, como Roccella canariensis (la Orchilla, en color marrón, comercializada antiguamente en Canarias para hacer tinciones). Junto a los líquenes, una gran variedad de especies vegetales salpican de verde el paisaje: espinos con sus característicos frutos rojos y tabaibas son las más abundantes entre otras. Pero sin duda la «tojia blanca» (Asteriscus schultzii) centra toda nuestra visión en sus flores tipo magarza con capítulos muy finos, se trata de una planta nativa sensible a la alteración de su ecosistema en el archipiélago. Creciendo también junto a éstas, una maravilla botánica, la «cuernúa» (Caralluma burchardii), con una subespecie en Marruecos y otra subespecie endémica de las canarias orientales (Lanzarote, Fuerteventura e islotes). Esta planta de aspecto carnoso, y que no tiene relación con los cactus, se encuentra incluida en el Catálogo Canario de Especies Protegidas como sensible a la alteración de su hábitat. Con flores púrpuras y centro amarillo, debe su nombre a la característica forma de sus frutos. Nuestros ecosistemas, únicos y muy frágiles, están llenos de sorpresas que disfrutar y cuidar. ¡Hasta el siguiente capítulo!

CHAPTER 1:

This time we go inland where, after the short but intense rain period in the north of Fuerteventura its soil shows us its great fertility every year. What at the end of the harsh Summer is just a deserted field with some cereal, in Springtime transforms completely, brimming with life that bursts out with just a little dampness. In rocky areas, where this dampness is retained longer, some plants find it easy to grow up. Some ecosystems like «malpaís» or also the so called «malpey» keep part of this humidity, thus creating a very particular landscape. They’re made of lava flows and there are several kinds: AA, more viscous and irregular due to its slow pace during the eruption (usually know as «malpaís» in the Canary Islands); Hawaiian «pahoeloe», which gives place to a much softer landscape, also known as «cordadas» due to its morphology, in the shape of ropes, which are the most common. The first beings that found this ecosystem as the idyllic one to grow up were the lichens. They were the first colonists in volcanic islands and they resulted from the association between an alga, a fungus (breeding part) and some yeast (all of them together cover the whole landscape with different species and shades. Names like Xanthoria (red and orange) or Ramalina (greenish and also called «escán») draw our attention because of their extensions; however if we go closer we’ll find out several species and colours among the rocks, like (the brown Orchilla, traded in ancient times in The Canary Islands to make dyestuffs). Together with the lichens a great variety of vegetal species dot the landscape: hawthorns with their characteristic red fruits and spurge are the most abundant among others. But undoubtedly, the «tojia blanca» ((Asteriscus Asteriscus schultzii schultzii)) draws all our attention to its flowers, similar to the «magarza» (anacyclus clavatus) with very thin flower heads; it’s an indigenous plant, very sensitive to the alteration of its ecosystem in the archipelago. Also growing up with them we find a true wonder of botany: «la cuernua» (Caralluma Caralluma burchardii burchardii), having a subspecies in Morocco and another one in the oriental Canary Islands (Lanzarote, Fuerteventura and islets). This fleshy plant, which is not related to cactuses, is included in the Canary Islands catalogue or protected species as sensitive to habitat alteration. With purple flowers and yellow centre, it owes its name to the characteristic shape of its fruits. Our ecosystems, unique and fragile, are full of surprises to enjoy and look after. Hummus with Smoked Sardines RECIPE BY ISRAEL FRANCO ZUBIAGA Chef in La Bodeguita de Corralejo

Ingredientes para 4 personas: — 250 g. de hummus* — 40 g. de sardina ahumada — 2 g. de pimentón dulce — 1 hoja de pan papadum

*ELABORACIÓN BASE DE HUMMUS — 200 g. de garbanzos cocidos — 150 g. de limón (el zumo del limón) — 14 g. de tahina (pasta de sésamo) — 5 g. de aceite de sésamo — 60 g. de aceite oliva 0,4 suave — cilantro seco molido al gusto — nuez moscada al gusto — comino al gusto — 100 cl de agua de cocción — sal y pimienta negra al gusto

* ELABORACIÓN DE HUMMUS Hidratar los garbanzos durante 12 horas en agua templada. Una vez hidratados, cambiamos el agua y cocemos hasta que estén blandos (aproximadamente 2:45h). Triturar en turmix con los demás ingredientes e ir añadiendo el agua de cocción poco a poco hasta conseguir la consistencia deseada, quizá necesites menos agua de cocción de la indicada anteriormente. Rectificar de sal y pimienta. Freimos el pan papadum en abundarte aceite a 180ºC hasta que coja color y este crujiente. Lo secamos sobre papel absorbente. Cortamos la sardina ahumada en trozos regulares y reservamos para el montaje.

MONTAJE: Repartimos el hummus en 4 boles o platos hondos y colocamos encima la sardina ahumada en trozos, espolvoreamos pimentón dulce y finalizamos partiendo con las manos el pan papadum y colocándolo dando volumen, listo para comer. Qué os aproveche.

NOTAS: • Si prefieres que el plato sea vegetariano, una opción es cambiar la sardina ahumada por verduras de acompañamiento, crudités: — pepino, apio y/o zanahoria. Debes lavarlos bien, no olvides pelar la zanahoria, y cortarlos en bastones regulares. Si quieres modificar su sabor puedes encurtirlos*. • Si quieres ahorrar tiempo en lugar de cocer tu mismo los garbanzos puedes comprar unos ya cocidos de buena calidad. Encurtir: sobre una base de agua añadimos sal, azúcar y vinagre de jerez o vino, y le damos un hervor. Añadimos las verduras y dejamos que enfríen. También es un método de conservación de las mismas. Una vez que se hayan enfríado ya podemos usarlas en nuestro humus como acompañamiento.

*HUMMUS ELABORATION Put the chickpeas to soak in warm water for 12 hours. Then, change the water and boil them until they are tender (2:45h approximately). Mix with the blender together with the rest of ingredients and add cooking water little by little until you achieve the desired consistency. You may need less than 100cl cooking water. Taste and add salt and pepper as necessary. Fry the papadum bread in plenty of oil at 180ºC until it gets brown and crunchy. Dry it with absorbent paper. Chop the smoked sardines into regular pieces a set aside until plating up. PLATING UP: We distribute the hummus into 4 bowls or hollow dishes, and we place the chopped smoked sardines on top. We sprinkle sweet paprika, and we end up breaking the papadum bread with our hands and placing it so that it makes the plate bulkier. Ready to eat. Enjoy your meal!
