Choosing your Christmas meat Christmas is near and if you are preparing a big feast for family and friends, we have a few ideas to make sure your main Christmas dish looks and tastes amazing this year– apologies to vegans, you will have to look away now. The Classic Turkey If you go with turkey but want to make sure the meat will be juicy and tender we have two words for you: marinade and fat. Make sure you marinate the bird for a night in brine with spices before putting it in the oven. Just before putting the turkey in the oven, add butter under the turkey’s skin. Stuffing also lengthens cooking times but also gives moisture to the bird. Don’t forget to baste while in the oven. If turkey is definitely not your cup of tea, we have a few more suggestions: The Next Best - Roast beef A beef fillet can be a perfect Christmas dish; make sure you remove it from the fridge at least 30 minutes before cooking it and that you ask the butcher for a middle cut so it is equally thick. Add your favourite spices, or wrap the beef in prosciutto to make sure it stays juicy and tender. Follow cooking time, take out of the oven, cover for a few minutes. Roast is done! And let’s not forget the added benefit of leftover sandwiches on Boxing Day. The American Way - Pulled Pork Pulled pork is usually made from a less popular pork cut, which makes not only for a tasty dish but also a budget friendly one. For pulled pork, choose good quality pork shoulder and marinate it or cure it

before slow cooking it for 6 hours (for a 2kg/4lb pork shoulder). There are many ways to flavour your meat. If you are a purist or absolutely sure of the quality and provenance of the meat, just a rub in salt and sugar might be enough, but if you like spices add mustard, fennel, smoked paprika or cayenne for a bit of a kick. Once the meat is cooked, pull it from the bone with a fork in serving dish and serve with the regular mash and veg trimmings. The Unconventional Way – Chicken Parcels or Individual Pies If you feel like shaking things up a bit this year, go for what may seem an unexciting meat – chicken breast – in a new exciting way. Chicken parcels are made by wrapping chicken breasts with greens and butter in well buttered filo or shortcrust pastry. It will be different, it will be fun, it will give people something to talk about! Although there is something incredibly pleasurable in observing traditions around Christmas time, we think we can all agree it is the gathering together in celebration – big and small, young and old, living far or close - around a plentiful table is what Christmas is really all about – whether we eat the custom turkey, based on an old family recipe or a vegan dinner inspired by the latest gastronomic trends. Chocolate Bread & Butter Pudding INGREDIENTS:

METHOD:

200g (7oz) good quality milk chocolate 75g (3oz) butter 250g (8oz) (or about 10 slices) white bread 3 eggs 1 tsp. Cinnamon Ground 25g (1oz) caster sugar 1 Vanilla Pod 600ml (1 pint) milk Cocoa powder and icing sugar for dusting

1. Pre-heat the oven to 180°C, 350°F, Gas Mark 4.

2. Lightly grease the sides of an ovenproof dish measuring approx. 30cm x 20cm (12" X 8"). Break up the chocolate and, together with 25g (1oz) butter, put into a heatproof bowl set over a pan of lightly simmering water. Leave until melted. Stir lightly.

4. Melt the remaining butter in a saucepan and remove from the heat. Beat the eggs with the Cinnamon, sugar and the seeds from the Vanilla Pod. Add the butter and milk and stir thoroughly. Spoon the mixture over the bread so that all of the bread is saturated. Allow to stand for 1 hour.

3. Cut the crusts from the bread and slice into 4 triangles. Arrange approximately half of the slices, overlapping, in the dish and spread with the melted chocolate sauce. Arrange the remaining

5. Bake the pudding in the oven for 45-50 minutes until the custard has set and the bread .is golden brown.

Hangover Help! This is the time of year when most of us end up regretting that last glass of wine. And we all love a good Christmas party (or two) but often the morning after is not so much fun; pounding headaches and an upset stomach are what most expect. There are hundreds of old wives tales about how to cure a hangover but do any of them really work? And is it science of just a placebo effect? Sadly a perfect hangover cure has yet to be discovered however there are some tricks you can use to reduce the severity of symptoms. Don’t drink on an empty stomach. Have a good, healthy dinner before going out. It is a long known fact alcohol does a lot more damage on an empty stomach, so try a healthy meal with plenty of fruit and veg first. Hydrate. One of the best tips for lessening the symptoms of your hangover is to drink lots of water both before and after a night out. Alcohol is a diuretic, meaning it removes fluids from the body, so drinking too much can lead to dehydration. Dehydration is what causes many of the symptoms of a hangover. This is why you should also avoid drinking anything caffeinated; caffeine is also a diuretic and will make the dehydration even worse. Replace Salts. Another less known result of alcohol intake is a loss of salts in the blood. Eating

a large fry up after a night on the town is sometimes a good idea. Failing that just go for seasoned eggs, they contain taurine which is known to reduce liver damage. If your stomach isn’t up for solids try isotonic drinks or take a Dioralyte sachet. Yes they are for other types of ailments, but a hangover also depletes your body of essential salts and minerals. Another great suggestion is juicing – by mixing vegetables and fruit and blending them you obtain a refreshing drink that can help your liver recover too. Exercise. The most dubious myth circling around is the idea you can sweat off a hangover. Strangely though there is scientific backing to using exercise as a helpful hangover cure. Exercise is one of the best ways to increase your endorphin levels. The main purpose of endorphins is to impede the transmission of pain signals; they may also produce a feeling of euphoria very similar to that produced by other opioids. Both of these things will help reduce the symptoms of your hangover. Although probably running the marathon with a hangover might be a bad idea, taking a walk, a yoga or pilates class might bring some benefit. Generally speaking, it is always better to prevent than cure, so moderation is probably the best way to approach a night out. We wish you great nights out while keeping safe and healthy!

Did Great Grandad Really? by JANE HARRIS, JANEALOGY, PROFESSIONAL GENEALOGIST. Christmas, family gatherings, times when stories are told and memories shared. But how much truth is in them? How can we be sure? My uncle told me that his grandmother’s youngest brother was asked to stand as a Labour Party candidate in a general election. The youngest child of a poor Orkney crofter?? I was very doubtful but did some research, starting with Alexander Groundwaters birth, marriage and death records so I knew I had the right person. He’d left Orkney to join an older brother in Salford and eventually became a Congregational minister. While serving in Shetland he was elected as a local councillor, so some politics there. Then I found it, an article in the Glasgow Herald, December 1938. It described how he had been asked to stand as an Independent Labour Party candidate in Kinross and West Perth. After scanning the vast constituency, and bearing in mind it was winter and funds were low, “It dawned on me,” he said, “that the whole thing was hopeless.” So my uncle’s story was right. Sometimes clients have been told they are related to someone famous, Flora MacDonald for example. Depending on the availability of records, it can be possible to prove this. In other cases, the supposed connection is no more than a shared surname. To check such stories, start with yourself and work backwards. We generally have two named parents, four grandparents, eight great grandparents, doubling the numbers for each earlier generation. Some lines can probably be

If you start with the famous person and try to work forward, you will have all their children to check, then grandchildren, a load of different lines to try and find your connection. Famous or not, whoever your relations are, discovering your family history is fascinating. Some family history research or a voucher towards having some done make great Christmas presents.

Poisonous Food for Pets With the festive season fast approaching there are many potentially toxic substances that could prove fatal to your pet if ingested. We have a put a list together of the most common Christmas poisons to try and increase owner awareness this season.

Chocolate Poisoning

Chocolate contains theobromine which is very toxic to pets and is at its highest concentration in dark chocolate. The most common clinical signs of chocolate poisoning are vomiting and diarrhoea however, theobromine stimulates the central nervous system and the heart so animals can often appear hyperactive with increased heart rates. In the extreme cases animals can develop tremors and convulsions. Grapes, Raisins, Currants and Sultanas The toxic doses for these fruits are very variable between individuals. Some dogs are able to eat large quantities with

Keep your home safe this Winter by STIRLING ELECTRICAL As the weather gets colder and days shorter, the use of electricity for light, warmth and entertainment inevitably increases. Fire Detection: Ensure you have smoke and heat detectors installed in properties. These detectors should interlink with each other and mains powered detectors are recommended. External Lighting: Replace old high energy usage 500 watt halogen floodlights with new LED floodlights ranging from 10 to 30 watt.

RCD: A RCD device which plugs into a socket is recommended to be used inline on appliances such as Christmas lights and any equipment used outdoors.
