Chocolate Fondant Tart Preparation time: 45 mins (plus chilling time)

Cooking time: 30 mins

Serves: 6-8 Ingredients Pastry 100g/3½oz plain flour 50g/1¾oz icing sugar 50g/1¾oz chilled butter, diced Yolk from 1 large egg 1 tbsp water

Filling 100g/3½oz butter 150g/5½oz dark chocolate (70%) 150g/5½oz golden caster sugar 75g/3oz plain flour 6 medium eggs

To serve Icing sugar Strawberries or raspberries Cream

Method For the pastry

For the filling

1. Place the flour and icing sugar in a large bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.

1. Melt the butter in a medium pan over a low heat, then add the chocolate and stir until melted, smooth and glossy. Remove from the heat and beat in the sugar and flour, then beat in the eggs, one at a time.

2. Add the egg yolk and water and mix quickly so that it comes together to form a firm dough. Wrap in cling film and leave to rest in the fridge for about 30 minutes. 3. Preheat the oven to 200C/ Gas 6 (180C fan). 4. Dust the work surface with flour and then roll out the pastry to form a circle about 5cm/2in larger than your flan tin. Line the tin with the pastry. Pop it into the fridge to chill for a further 15 minutes.

2. Place the pastry case on a baking tray. Pour the chocolate mixture into the pastry case, filling it almost to the top then place in the oven. Bake for 10-12 minutes, or until just set around the edges and still slightly wobbly in the centre. 3. Remove from the oven. You can serve it warm with raspberries or strawberries, or allow it to cool and dust with icing sugar.

5. You now need to blind-bake the pastry. To do this prick the base of the pastry with a fork then line the pastry case with a circle of greaseproof paper and fill with baking beans (these are ceramic beads, but you can use lentils or dried beans if you don't have any). Bake the pastry for 10 minutes, or until just lightly golden-brown, then remove the paper and the beans and return the tart to the oven to cook for a further 5-7 minutes, or until golden-brown and dried out.

Meet & Eat on Friars Street by LOVE LOCAL MAG

Whether you are looking for a quiet cup of coffee, a spectacular dinner for a special occasion, or simply some great food with friends, Stirling’s Friars Street has long been a popular place for food and drink in Stirling. For many years Number 3 Friars’ Street was home to the Central Restaurant and popular with Stirling Albion fans, with the proprietors also providing the matchday snacks at Annfield Stadium. Today Number 3 is home to the “Fat Cyclist Café” Friar’s Wynd is a wonderful boutique hotel that opened in 2016 and is packed with character and fully restored period features. The theme of Scottish landscapes and Scotland’s rich literary history permeate through the hotel. The Wine Bar and restaurant offers some excellent, contemporary dishes or if you simply want a relaxing cup of coffee, you must try some of the traditional Scottish baking as well. Each of the eight bedrooms is individually designed and free wifi is avaible throughout the hotel. If you don’t feel like cooking, then Napizza at 19 Friars Street is quickly gaining a reputation for the best pizza in Stirling with one customer recently remarking that Napizza offers the “closest to true Italian pizza you can get without going to Italy.” Alex and Elpido are on a mission to offer fresh pizza made with the best ingredients from Southern Italy and be healthier than any other pizza in Stirling. They’re also happy to share their authentic Italian techniques with weekly classes where the whole family can learn how to stretch the dough and use the ovens. Their colourful, traditional pizza ovens are a bright and happy sight when you walk through the door, but are you brave enough to try the pizza called “Dante’s Hell”? Artisan coffee house “Sable and Flea” at Number 12 Friars’ Street offers so much more than delicious, single origin coffee. Customers can also enjoy their

organic bread, focaccia, antipasto and homemade cakes while soaking up the atmosphere of the eclectic selection of wrought iron, enamel, apothecary jars and French furniture. Or if the weather is nice, you can enjoy some calm time in the secluded garden courtyard. With so many interesting shops and restaurants with attractive window displays, we often forget to look up and admire the building the shop is situated in. Number 29 Friars Street (currently a convenience store) is the creation of local architect John Allan and is built using Welsh Ruabon brick and features a Dutch gable and large plate glass windows. If you look at the façade you’ll see 6 stone panels, 2 made from marble and 4 made from sandstone.The date of construction (1902) is carved into one of the panels. Others have symbols that are probably related to the Holy Rude Kirk, where John Allan was a member, and the Kings Park, where he lived. For many years 29 Friars Street was the premises of “J M Hay”, one of Stirling’s Music Stores. Selling everything from grand pianos to records, the Hay family were involved in most aspects of musical life in Stirling until they closed in 1996. Music lovers in Friars Street are well served today with popular independent music store “Europa Music”. Many of John Allan’s plans, along with fixtures and fittings from Hay’s music shop are on display at the city’s Stirling Smith Art Gallery and Museum The name Friars Street is linked to the early days of Stirling’s history. Stirling was made a Royal Burgh by David I (1124-53) with a regular market in Broad Street. Broad Street led into Bakers’ Wynd. Friars’ Wynd then weaved down the hill to the Dominican Friary on the edge of town. The Dominicans were known as Blackfriars because of the black cloth they wore over their tunics. Blackfriars were educated men who ministered to the poor and

LOVE FOOD & DRINK sick, acted as confessors, collected alms and much more. In Stirling they owned the Town Mill, which was located near to the present day Craig’s Roundabout. The Friary was founded by Alexander II in 1233 and lasted until it was destroyed and abandoned during the Reformation in 1559. Friars’ Wynd would have continued beyond the burgh boundary and on past the harbour towards Cambuskenneth Abbey. The Friary’s main entrance was most likely where the FUBAR is today. The Alter of the church was located opposite the Clydesdale Bank. The Friary had some notable visitors. King Edward I of England recovered there from injuries he received at the Battle of Falkirk in 1298. In 1419 a man arrived at Stirling’s Friary claiming to be English King Richard II, who was supposed to have died twenty years early after losing his throne to Henry IV. Unable to verify whether this was true, the man became known as the “Mammet King” and eventually died at the Friary and was buried in the church.

In 1537, during the Reformation, Friar Killour of Stirling wrote and performed a play at Stirling Castle for James V. The play was seen as an attack on the church and so the following year, Friar Killour was burned at the stake in Edinburgh. By 1652, the site of the former Friary was controlled by the Burgh Authorities and by the early 1800s was the location of a pub called the “Saracen’s Head Inn”. The inn was demolished in 1835 to make way for a Bank of Scotland. The bank was demolished in the early 1990s and on the church site today is a block of flats and an open public space. So while you’re enjoying a coffee or a meal in one of the many excellent restaurants and cafes on Friars Street, look out of the window and imagine the Blackfriars winding their way to and from the Friary, and the Kings and Queens who came to visit over the years. Meet the Humans of Stirling: Alexandru co-founder of Napizza by IRIS, FOUNDER OF HUMAN OF STIRLING FACEBOOK PAGE How did the idea of Napizza come about?

Outside of this, what hobbies do you have?

When I came here two and half year ago I noticed the negative idea people had about pizza. Back home, we don't consider it unhealthy, quite the opposite really thanks to the ingredients used. I felt that I needed to change people's view of it, the entrepreneurial mindset kicked in and I decided to open this place. Along the way, we faced many challenges, the biggest one being the oven. It was difficult getting the consent, as well as moving it in. It weighs 2500 kg, so we had to remove the shop front and then build it back up again.

I play futsal, which is an indoor smaller version of football. I'm a lover of cinema and movie editing. I always wanted to be a director, but I have not yet had the time to dwell into that as much as I've wanted to. This is the problem when having too many passions: if you run after two rabbits, you catch none. But that doesn't stop me from planning to do a documentary about the gypsy culture and about the music they make. I think it's completely unbelievable how people that don't study music manage to compose such incredible songs, it feels very pure and natural to me. Such pure talent.

When I first started the restaurant I looked for someone to back me up. Elpidio was a friend of mine, and he is a pizza geek, just like me. After five minutes of proposing the idea to him, he immediately said 'Yes'. From there on, a full immersion into the pizza world happened. We started looking at all the ingredients, oven, designs together, and we worked really well together as we both wanted the same things. When you say, 'back home', where is that more specifically? That's quite difficult to tell. I believe home is where your heart is, and at the moment for me that's Stirling. But I am originally from Napoli. And that's where the name of the restaurant comes from: Napoli pizza. The shape of our logo represent the Vesuvius volcano. But originally, in Italian, when you order a pizza, you usually say 'Fatte 'na pizza!' That's not a formal way of saying it, of course, but it gets the point across. What has setting up this restaurant taught you so far? A lot of things. It taught me that it's not about the success, and that it's all about the people. The ones you work with, the ones you're able to give jobs too. It's all about making as many people happy as you can. It's matured me a lot so far.

Plan Ahead for Healthy Travel As Spring thankfully approaches you may be looking forward to planning a Summer holiday abroad, and hopefully you won't forget to plan and seek health advice for safe and healthy travel. Over 60 million people from the UK travel abroad annually yet only 50% will seek travel health advice prior to travelling and therefore potentially putting their health at risk. Why? 1. Many travellers do not think about health advice as part of their travel checklist to include vaccinations, malarial prevention, travel safety, water related risks and ensuring taking a list of prescribed medications in case of loss or theft abroad. 2. Travel health advice sources are often fragmented and travellers unsure where to seek reliable advice online. 3. Not all clinics offer a complete travel advice service and the quality of advice may vary and appointment times inadequate to fully cover travel health issues comprehensively. 4. NHS GP Practices may not offer full travel

health services or offer convenient and timely appointments for patients to promote ease of accessing travel health advice and patients often unsure where to turn for a robust travel health clinic service. 5. Lack of knowledge may mean travellers may leave it too late to seek travel health advice and vaccinations. Many vaccinations for travel abroad require 4-12 weeks to offer full protection. The challenge to improve travel health is to raise awareness of travel related health issues and encourage travellers to seek professional advice and vaccinations prior to travel. Patients also require improved access and convenient appointment times to engage with travel health care clinic professionals with appropriate travel medicine experience. Your sight is so important. Even so, when it comes to looking after yourself, do you think about maintaining your eye health? Eye ailments, from cataracts to glaucoma and age related degeneration are more common than you might realise and there are simple steps to take that help to keep your eyes in top condition. Eye conditions to be aware of: Myopia, also known as short sightedness, is the most common and less serious visual defect of all, often appearing in the teenage years but sometimes before. Distant vision will be blurred though close vision is generally unaffected. Children may not realise they have this, so watch out for any changes in your child’s behaviour such as sitting close to the television or regular squinting. Hyperopia, or farsightedness, can commonly produce symptoms such as headaches, eye strain, tiredness and irritability and tends to get worse as you age. Though similar, hyperopia is different to presbyopia – the onset of sort sightedness than comes on during middle age due to natural deterioration of the lens. Many people have trouble achieving clear distance and close vision simultaneously, especially as people age. There are fantastic products on the market now, such varifocal lenses by top brands such as Varilux, which save the effort of switching between distance and reading glasses altogether.

Don’t take your eyes for granted – regular checks and a healthy lifestyle will help to protect them for life.

More serious eye conditions include glaucoma, deterioration of the optic nerve which leads to tunnel vision, which everyone over 40 should be checked for at their regular eye test. Most cases can be treated, or at least delayed, using special eye drops. Cataracts are also more common to develop as you age, with the eye vision becoming blurry due to cloudy spots on the eye. Local Business Interview: Help-In-Hand INTERVIEW WITH MORAG KIRKWOOD, OWNER OF HELP-IN-HAND What kind of service does help-in-hand provide? Help-in-Hand provides a domestic homehelp service for the elderly in Stirling and surrounding areas. As well as housework and shopping, we can also provide an accompanying service to hospital, doctor and dental appointments. How did you start this business? The idea came to me during the bad winter of 2009/2010. At the time I was managing my son Gavin's sweet shop and noticed that a lot of our elderly customers disappeared for a few months. I started thinking about how difficult it was for them to go shopping, etc if they didn't have family or friends nearby to take them. I added to that the possible need for help with housework and Help-in-Hand was started up in June 2011. How many people are in your team? I have six members of staff at the moment who are fully insured and registered under the Protection of Vulnerable Groups Scheme (Disclosure Scotland). Usually once they start working with a customer they stay with that customer for as long as they are needed. That means that the customer gets to know the person regularly coming into their home and the staff get to know their customers and their needs. How much does the service cost? Our charges are £12.50 per hour for customers who are disabled or over 60. For customers not in these categories, the charge is £14.50 per hour. What is the impact of the services you offer on the lives of your customers? As people get older they sometimes worry about not being able to keep up with daily chores, etc., and I would like to think that we take some of that worry away. We visit our customers on a twice weekly/ weekly/fortnightly basis depending on their requirements and they can change this at any time. They also know that we are only a phone call away if they need a hand. For example, I have a customer whose family live abroad. As well as a fortnightly cleaning visit, I telephone her every night to make sure that she is well. She is not linked to the MECs system so my daily telephone call reassures her that, if she is taken ill and unable to get to the phone, I will be there checking that she is ok. We want our eldery or disabled customers to feel that if they have a problem, no matter how small, they can pick up the phone and say "can you help me with this?"

A Good Read: The Guilty One by Lisa Ballantyne It is true that the premise of this book may put some people off: eight-yearold Ben is found dead in a park and eleven-year-old Sebastian is arrested and charged with his murder. With echoes of other high profile cases it does ask us to question how our behaviour as adults can lead to horrific consequences. However, it is a very well-written and gripping novel. The focus of the story is Daniel, a solicitor chosen to represent Sebastian in court. Despite the child being quite difficult to warm to, Daniel sees something of himself in the boy and he begins to recall his own childhood as the son of a drug addict, who spent most of his time in foster care. Here the narrative splits and we discover his story in the mid-1980s interspersed in the current day court case.

where Daniel finally finds the warmth and love he has been looking for in the shape of his foster mother, Minnie. She immediately takes to this boy that no one else wants and an unlikely relationship develops between them. What becomes apparent though is that something went very wrong with the relationship and ass an eath adult, facing the death of Minnie, and the trial n, of young Sebastian, Daniel is forced to confront his own e childhood whilst we are left wondering who the guilty one really is.

Stirling Residents: Your help is needed by CAROLE O'CONNOR What do Suffragettes, actresses, authors, artists, witches, first ladies football team, and first female archaeologist have in common? Answer….Stirling. So much has happened in Stirling women’s live over the years, and still continues to do so. A new book is being written on these proud, and sometimes overlooked women of Scotland . So many events happened, such as two world wars, various Scottish battles, Cholera and typhoid outbreaks, poorhouses, women’s rights movement, the list is endless Stirling women were steadfast and united in many of their daily lives and experiences. The book will cover not just the suffrage movement, but how the Stirling women went about their daily lives. What work did they do? How was their health, their

children, children’s schooling? What leisure pursuits did they undertake? The book is thirsty for knowledge on these women. What is now needed are vital pieces of information from readers who may have lived latterly in that period, or whose relatives were indeed around, and there is a story to tell. Do you fit into these categories? If so I would love to hear from you. I would welcome photographs (they will be returned), and any information, tales to tell, even if only snippets however brief, which will bring this book to life. Puppy Socialisation by STRUTHERS & SCOTT This is getting your new pup used to the world they live in. Socialisation means exposing them in a safe way to all different kinds of people, animals and places so they grow up to be confident and happy.

Also introduce them to as many different looking people as you can. Dogs be scared of types of people they haven’t seen before so get them meeting people with hats, high viz, beards, wheelchairs, children etc.

The best time to actively socialise your puppy is from when you get them home up until around 16wks. This is because during this time, known as the socialisation period, they are likely to be curious about new things. After the socialisation period dogs are more likely to respond to something new with fear.

And finally socialise them with other dogs so they are happy to meet new dogs on their walks. Choose calm older friendly dogs and keep the meeting short and sweet. You can also join a puppy party through most vet practices which is a great way for them to play with other young puppies and learn how to interact with other dogs in a good and friendly way.

So have a good think about the kind of life your dog is going to lead: Will you be walking around busy streets, going on public transport, or walking in the countryside around sheep and cattle? Now is the time to get them out and about and seeing these places.

Tool Library Continues To Grow by LOVE LOCAL MAG If you’ve ever found yourself in the frustrating position of having to buy a tool or piece of equipment which you’ll only need once or twice before resigning it to the garden shed or loft, you can probably appreciate the many benefits of borrowing instead of buying. Transition Stirling, a local environmental charity, opened the tool library in the Stirling Arcade in 2016 and has recently received funding to continue for another year. Only the second of its kind in the UK, the tool library works just like an ordinary library, except instead of borrowing books, you can borrow all sorts of equipment. With over 300 items, members can borrow anything from sewing machines, drills, and saws to mechanical tools, gardening tools and cooking equipment.

This year the tool library will be offering a delivery service for those who don’t regularly access the town centre or who have difficulty lifting larger items. Transition Stirling are also introducing a new monthly ‘repair café’, bringing individuals together to learn how to mend broken items and give tired tools a new lease of life. The tool library also hosts a series of workshops including sewing and mending workshops, upcycling workshops and a programme of growing, cooking and foraging workshops. Traditional Buildings Health Check The Traditional Buildings Health Check Scheme (TBHC) is the first of its kind in Scotland, a 5-year pilot scheme open to all owners of traditional building types within the Stirling City boundary. The TBHC is a membership based service providing impartial and expert advice on the maintenance and repair of the external fabric of traditionally constructed buildings. By joining the scheme traditional building owners could save money, safeguard their building’s condition, be energy efficient, sustainable and support skills training and employment in the local area. Benefits of membership include: • An affordable and comprehensive external building inspection • Expert and impartial advice from our inspection team all year round on looking after your building • Access to our online membership area, a

quarterly newsletter, and exclusive events throughout the year. • The Traditional Buildings Repair Grant (TBRG) is a small grant available to members of the scheme. It is for traditional repairs which have been highlighted in the TBHC report. Members can apply for 50% of eligible works to a maximum of £5000 per building. With one year left of the pilot scheme, the main focus is for the TBHC scheme to reach as many new members as possible. This will ensure the longevity of as many traditional buildings in Stirling as possible. If the pilot is successful, Stirling City Heritage Trust hope the TBHC can continue and grow beyond 2018. Below are some reminders of common pitfalls to avoid as you move forward: Having documented where you want to go, setting goals to get there can spur you steadily forward in the right direction, but keeping those goals in balance can be a challenge for entrepreneurs who love what they do. It’s important to have goals, but be careful not to set yourself up for failure with unrealistic goals.
