1 boneless prime rib roast (8-10 pounds)

1 tablespoon, plus 1/4 teaspoon, kosher salt
•
1/2 cup panko breadcrumbs

2 teaspoons fresh black pepper, plus additional for pecan topping

2 tablespoons unsalted butter

8 garlic cloves, divided

1 cup raw pecan pieces

2 tablespoons Dijon mustard, divided

DIRECTIONS: 1. Season prime rib with 1 tablespoon salt and pepper. 2. To make pecan topping: Heat oven to 325 F. In food processor, process pecans, rosemary, thyme, breadcrumbs, butter, 2 cloves garlic, 1 tablespoon mustard, remaining salt and pepper until combined. Set aside.

3. Cut small slits in fatty side of prime rib; stuff with remaining garlic. Rub remaining mustard over top of prime rib and apply pecan topping, making sure to press firm. 4. Transfer prime rib to roasting pan. Place rib roast in lower-third of oven, insert digital probe thermometer in middle and loosely cover top of prime rib with foil so pecans don’t burn. Cook 1 1/2 hours, remove foil and continue cooking until internal temperature reaches 120 F. 5. Allow prime rib to rest covered 30 minutes so juices can redistribute. Serve with Horseradish Cream Sauce, if desired.

1 cup low-fat sour cream

1/4 cup horseradish, grated

1 tablespoon Dijon mustard

1/2 lemon, juice and zest only

DIRECTIONS: To make Horseradish Cream Sauce: In small bowl, combine sour cream, horseradish, mustard, lemon juice and zest, and fresh chives; add salt and pepper, to taste. Sauce can be prepared 1 day ahead of time and refrigerated.

nowmobiles are an exhilarating way to experience the majesty of the mountains in winter, of taking the family deep into the backcountry no matter their fitness level, where breathtaking views and solitude await. And let’s face it, gunning a roaring engine as you tear through snow-draped forests or chop up untouched powder is a heck of a lot of fun, too. “You’re at 12,000 feet and can cover miles and miles of ground that some people aren’t physically able to do without the use of a machine, be it health issues, the altitude, age, etc.,” says Carolyn Barbers, with Dillon-based Colorado ATV and Snowmobile Rentals and Tours (www.coloradosnowmobile.com). “The machine is doing all the work for you. It’s a good multi-generational sport. Everybody can participate. Whereas grandma’s not going to be skiing or backcountry skiing or snow-shoeing and you’re not going to take your small children on things like that, with snowmobiling you can.” And you don’t have to spend thousands of dollars on a snowmobile to do it. Throughout Colorado are companies like Barbers’ where you can give the family a memorable day for a fraction of the cost of buying a snowmobile (not to mention the trailer, safety gear, etc.) Forget about the image of snowmobiles as clunky tanks with a tendency to break down. Today’s machines are slick, fast and reliable, and anyone 14
over can drive one from her rental shop (with an adult in the back). “Snowmobiles are pretty easy to operate. It’s just gas, brakes and steering, but it does take some common sense and normal safety precautions,” says Barbers. “A lot of people have the impression you have to be an expert snowmobiler but that’s not the case.” Families unfamiliar with the sport or uncomfortable navigating and reading maps can book a guided tour, which at Colorado ATV and Snowmobile Rentals and Tours start at $170 for a single rider plus $55 per passenger, for two hours of riding through some of Colorado’s most stunning scenery high on Vail Pass, where the Rockies spread out in all directions in all their glory. Ready to strike out on your own and lead the family on an adventure? Most outfitters also offer unguided rentals, starting at $110 for an hour for a single rider, $135 for a double. You can set your own pace, explore wherever you want and choose your own snowy adventure. The outfitter will provide maps and directions. You can rent traditional snowmobiles for cruising the roads and groomed trails or high-performance machines for tracking up the deep powder. Just be warned: The kids may have so much fun you could find yourself buying a machine of your own before winter is over. Continued on page 22

What You’ll Need to Know Be sure to bring snow gear, including snow pants, underlayers, jackets, face masks, gloves and warm hats. Helmets are required and available for rent. And don’t forget sunscreen, food, water and your camera. Most snowmobile operators run whether it’s snowing or sunny, though hazards like high winds or avalanche danger can lead to cancellations. Don’t get left out in the cold. Be sure to book your trip well in advance. If riding your own snowmobile, it must be registered with Colorado State Parks, for $30 a year. Out-of-state visitors who bring their snowmobiles must buy a non-resident permit, also $30.
Where to Go Here are some of Colorado’s best snowmobiling areas. Keep in mind backcountry permits may be required at some areas. Rabbit Ears Pass This pass near Steamboat Springs, where the snow is so light and fluffy it’s where the phrase “champagne powder” was coined, offers a huge expanse of backcountry open to snowmobilers, 200 miles of trails and roads and endless opportunities for playing in the powder. This is remote, wild country, and even more so in winter. Rentals: Steamboat Snowmobile Tours (www.steamboatsnowmobile.com) Permits: Required, free, available at Dry Lake Parking area Grand Lake This town on the western edge of Rocky Mountain National Park claims the moniker ‘snowmobiling capital of Colorado’ for its 300 miles of groomed trails, running near town and deep into nearby national forests and even the national park. This town is bustling with tourists in summer but rather sleepy in winter, adding to its charm. You can even ride on snow-packed streets in town and on the lake. Cottonwood Pass This pass crosses over the Continental Divide high above the Arkansas River town of Buena Vista. It’s closed to cars in winter, offering a great destination for both beginners and experts to cruise along snowy highways, explore rocky alpine bowls and drink in amazing views of the Sawatch and Elk Mountains. You can wrap up the day with a soak at Cottonwood or Mount Princeton hot springs. Rentals: All Season Adventures (www.allseasonrentals.com) Vail Pass This is one of Colorado’s most popular backcountry winter destinations, and for good reason. The Vail Pass Recreation Area spans 55,000 acres, much of it above timberline, in White River National Forest, where you’ll definitely get that top-of-the-world feeling. The easiest access is at the rest area along Interstate 70 at the top of the pass. It’s also a great place to go snowmobile skiing, using the machines to access untracked ski runs, but be sure to have proper avalanche gear and training. Rentals: Vail Snowmobile Tours (www.snowmobilevail.com), Nova Guides (www.novaguides.com) Permits: Required, $6, available at trailhead Georgia Pass This 11,585-foot pass over the Divide in Summit County is a spectacular place for winter riding. From Breckenridge it climbs through forests and meadows for playing to above timberline, with a total of 40 miles of trails and roads for your snowmobiling pleasure. Soak in Nature’s Hot Tub Colorado’s mountains are home to dozens of natural hot springs that are open for a hot soak. Soaking in natural mineral water is believed to provide a variety of health benefits and foster relaxation. Go for a Float Nothing says warmth like a day at the beach, but without any oceans in Colorado, residents must find other creative ways to access the healing and relaxing properties of water. Salt water float therapy is gaining in popularity as a therapeutic way to address body aches, stress and anxiety. During a session, typically lasting an hour, the floater is submerged in a sound- and lightproof tank filled with salty water that delivers healing minerals to the body while allowing the mind to relax, stress to subside and relaxation to take over. “Float therapy is a great way to warm up this winter because not only is it soothing, but the body and brain are very powerful and if we just give them the time and space to do what they’re created to do, it’s pretty impressive how much can be accomplished in a short period of time,” said Lisa Lopez, owner of Healing Waters Float Studio in Westminster. “Depression and pain issues kick in during the darker and colder winter months and the float tank is one of the best tools out there to help us heal and face some of the more difficult times.”

3. Spread batter into an ungreased 15x10x1-inch baking pan. 4. Bake in a 350° F oven for 25 to 30 minutes or until the center comes out clean. Cool completely in pan on a wire rack. 5. In a medium mixing bowl beat together cream cheese, butter, and vanilla until fluffy. Gradually add sifted powdered sugar, beating until smooth. 6. Frost pumpkin bars. acking for a winter hike or snowshoe outing isn’t really much different than hiking during any other time of year along the Front Range. It’s important to be prepared for the unexpected whenever you are outside for any length of time. If hibernating during the long Colorado winter doesn’t appeal to you, consider one of the following trails within about an hour drive of the North Metro. If you’re new to snowshoeing and don’t want to buy a pair, many sporting goods stores rent snowshoes at a reasonable price.
The following destinations are good for hiking (take along some Yaktrax®) or snowshoeing and are rated in order from easiest to more rigorous.

NEARBY METZGER FARM
CARIBOU RANCH OPEN SPACE
With two miles of new inter-connected gravel hiking routes, a dock, picnic pavilion, and designated parking suitable for 40 vehicles, the 152-acre farm is a result of a joint effort between the cities of Broomfield and Westminster. This is a near-ideal snowshoe area given adequate snowpack. Consider the quick mile out and back jaunt along the trail from the north edge of the parking area. Or hike east staying right to drop down by the pond’s spillway and crossing the bridge connecting to the Big Dry Creek Trail system.
Caribou Ranch, with its neighboring Blue Bird Mine and 1870s DeLonde Homestead offers 2,180-acres of designated open space. The trail here is a manageable 4.5 miles out and back, offering a pleasant, forested loop. The lack of elevation gain staying steady at about 8,600 feet, and the fact that more than half of the route is on a road; Caribou Ranch is a great place for novice snowshoers.
Getting There: From US 36 in Boulder, take Canyon Blvd.

DIAMOND LAKE
MITCHELL LAKE TO BLUE LAKE
Hardy old-growth forests and several now-frozen waterfalls distinguish the trail leading to exquisite Diamond Lake. The lake sits quietly just below tree line only two miles from the trailhead with about a 1,000 foot elevation gain. Be prepared: It’s a workout on snowshoes. Both Diamond Lake and (following) Blue Lake can be found on the National Geographic Indian Peaks Gold Hill map #102.
Winding and climbing from the Mitchell Lake trailhead through a lovely dense woodland, you’ll come upon spectacular vistas en route to Blue Lake in the nearby Indian Peaks Wilderness Area. Blue Lake sits in a rock cirque at 11,352 feet. But first you’ll pass Mitchell Lake on your right at 10,700 feet. Blue Lake is two miles further. The guard station is now closed for the season so it’s free to enter the Brainard Recreation Area, but making your way to the Mitchell Lake trailhead adds a mile both ways to your outing. This trek on snowshoes is for the very fit among us.
Getting There: Take Hwy. 36 west to Boulder and turn left (west) on Canyon Blvd., continuing to Nederland. From Nederland on CR 130, drive through the town of Eldora, then about five miles on the dirt road to the sign indicating Hessie on your left and Buckingham Campground, Fourth of July Trailhead to your right.
Distance: 4 miles round trip Difficulty: Moderately challenging in the snow
To the Trailhead: Take Hwy. 36 west to Boulder, turn left on Canyon Blvd. all the way to Nederland. Take CO 72 north from Nederland for about eight miles to Ward. Turn west on FR 112 and drive about five miles to the Brainard Lake Recreation Area. The Mitchell Lake Trailhead is your starting point.
