Tracy Phipps, owner of the Loft Salon in Parker, has been in the business of cutting and styling hair for 35 years, and has always known the positive impact a good hairstyle can have on people. Wine is a staple around the holidays – to pair with a meal, sipped at get-togethers with family and friends, and even given as a gift. But navigating which wines to select can be tricky, especially with Colorado’s eclectic wine scene. With so many people moving to this great state, not to mention visitors for the holidays, wine preferences are coming from everywhere.

hen it comes to pairing wine with a holiday meal, Raymond Domenico, Assistant Winemaker at Balistreri Vineyards in Denver says don’t overthink it, and drink what you like. “However, great pairings are an awesome experience, and it’s really fun to see the marriage of compatible and precise foods with precise wines,” Domenico says. The wine you choose can really enhance your meal. Some of his rules of thumb for classic holiday dishes are pair a Syrah with lamb, Cabernet Sauvignon with a roast; Zinfandel, Riesling, or their orange-style Muscrat with turkey; and Sangiovese or Carignan with pasta. 12

“You cannot fail by pairing a chocolate dessert with a red or a petite Sirah with a cranberry sauce,” says Carol Ann Edenburn, Head Chef at Deep Roots Winery and Bistro in Denver. Cheese plates can be paired with both white and reds depending on the cheese you are choosing, she explains. She says a nice mulled wine is always enjoyable when it is cold and goes really well with your common holiday dishes. Edenburn says go with a wine you like. “Reds will bring out the spice in a dish while a white will tone it down,” the chef adds. She recommends red wines with red meats and whites with seafood. in Denver recommends Riesling, Gewurztraminer, lighter reds (Pinot or Cab Franc), and even bubbles, too. She says to consider avoiding wines with too much oak or too much tannin. When you’re buying wine for a crowd, it could be daunting to feel like you need to accommodate everyone’s taste. “The host can either buy a mixture of wines that are the most popular or go with a white and red that is sure to please anyone’s taste,” Edenburn says. Her suggestion would be a Pinot Gris or Barbera if you’re going that route. Lindenbeck suggests keep the crowd in mind. Consider if it’s an adventurous bunch and would enjoy trying something new, or perhaps they’re just looking for wines that are tried and true. “If your get together is willing to try anything, bring on the funky stuff, the obscure, the sweet, the weird. If not, choose tasty stuff that requires less of a conversation about the wine and leaves more time for chatting with those you love,” Lindenbeck says. Wine is also a popular gift idea around the holidays. “People are now more adventurous with wine than ever before,” Domenico says. He adds that the Balistreri Sangiovese and Tempranillo are always recommended for gifts in the tasting room and recipients often come in looking for more. If your recipient is more traditional, go that route, or for those who enjoy something sweet, a dessert cherry wine or Port. Edenburn suggests finding a unique bottle the recipient hasn’t had. “Find out what they like and try to find a similar wine,” she adds. Another suggestion for wine lovers is buying a wine accessory – glass tags, chilling rocks, wine carriers, and so on. A simple route is opting for a gift card to a winery to have the opportunity to come in and experience the wine on their own. Walking through a wine store, whether shopping for a party or a gift, can be overwhelming. If you’re not sure, just ask. Find a store where there is a wine expert on staff, which isn’t hard. Describe what you’re looking for and what you’re serving, and the staff can most likely offer recommendations. Another alternative is to style your party like a wine tasting. Prepare a variety of finger foods and appetizers, and ask friends to bring a bottle of their favorite wine or a particular style of wine to share. If you’re a wine person but have some beer enthusiasts at your party, there are fantastic options for local craft beers aged in wine barrels for a intriguing combination of the two worlds. For example, Great Divide’s Flemish Sour Brown Ale is aged in wine, whiskey, and bourbon barrels for 12 months.

“At the end of the day no one is going to remember what color the streamers were or your decorations. The holidays are upon us, and for many in Colorado, that means guests from out-of-state. Who can blame them? Colorado is a great place to visit any time (just ask the 86 million people who visited the state in 2017) but it’s an especially magical place to spend the holidays. With cold air, snowy mountains and a million things to do, who wouldn’t want to come here instead of some flat, snow-less state? Having guests is also a great excuse for locals to explore some parts of Colorado you might not have seen and to do things you might not do otherwise. Why just take your visitors to see Red Rocks or the 16th Street Mall when there are so many other things to do out there in colorful Colorado within striking distance of the Front Range? We’ve put together a guide to some off-the-beaten-path activities to give your visitors (or yourself) a quintessential Colorado experience. Just remember that the weather in November and December can change from fall-like to deadly winter in short order, so plan and dress accordingly.

Play in the Snow

Hike the Flatirons

In an average year, Colorado’s mountains are blanketed in snow well before Thanksgiving and will remain so into June. The mountains are probably what your visitors had in mind when they came to Colorado, so show them off! If they want to go downhill, ski areas Loveland and Arapahoe Basin, both within an hour’s drive of Denver, usually have plenty of terrain open by the holidays - in fact, both opened in mid-October this year. You can go cross-country skiing at the Breckenridge Nordic Center or rent snowmobiles to explore the backcountry around Winter Park or enjoy the tubing hills at ski areas Copper Mountain or Keystone.

If snow and cold aren’t necessarily your guests’ cup of tea, there are plenty of lower-elevation options to get out and explore Colorado. The closest and best to Denver can be found on the west side of Boulder, where the famous rocky spires of the Flatirons dominate the view. With hikes ranging from gentle to strenuous and with amazing views, your guests will be able to enjoy a classic outdoors experience without tromping through deep snow (unless, of course, it has snowed recently.) Top it off with a stroll down Pearl Street in Boulder, with its plentiful shops and restaurants and colorful characters on the street.

Drive the Pikes Peak Highway Just west of Colorado Springs is one of the world’s highest roads, a paved highway that takes you all the way to 14,115 feet, on famed Pikes Peak. Unlike Mount Evans, the highway is open year-round (but closed on Thanksgiving and Christmas days.) The road twists for 19 miles as your guests gasp in wonder as you pass through all of Colorado’s ecological zones, from pine forest to frozen tundra. Road crews make an effort to keep the entire stretch open, but snow and winds often keep the upper stretches closed for days at a time. Don’t worry - the views are still sublime even if you can’t get all the way to the top.

Visit Great Sand Dunes in the Offseason The highest sand dunes in North America are a few hours’ drive south from the Denver area but well worth it. They were formed by eons of blowing sand up against the jagged wall of the Sangre de Cristo Mountains. Great Sand Dunes National Park is one of Colorado’s mostcrowded places in warmer months, but by late autumn the crowds are mostly gone and the sand is cool enough you can walk it barefoot. Your guests’ jaws will drop at the sight of the massive dunes flanked by snow-capped peaks.

Visit the Paint Mines Hidden in the folds of the windswept prairie southeast of Denver is a geological wonder. This dazzling network of multicolored hoodoos and twisted rocks near Calhan offers a gentle 3.4-mile trail that will have your visitors wondering if they’re in the desert Southwest or the prairie of eastern Colorado. It’s free to visit. The drive is about 90 minutes each way from Denver to 29950 Paint Mines Road, Calhan. If the weather is nice take a side trip to Castlewood Canyon State Park along the way.

Hike a 13,000-foot Mountain If your guests are fit and have had some time to acclimate to the high altitude, take a road trip west of Denver on Interstate 70 and up Loveland Pass. This paved road to 11,990 feet is the highest year-round pass in Colorado, with awe-inspiring mountain views. From the top parking lot it’s a 1.75mile hike east along a ridge to the summit of 13,200-foot Mount Sniktau, and your guests will be able to brag back home about climbing a Colorado mountain. Wind keeps snow to a minimum along the route so it can usually be done year-round without snowshoes, though prepare for frigid weather. This hike is not recommended during snowstorms (when the pass is often closed anyway.)

INGREDIENTS: Garlic and Herb Lamb Chops •

2 tablespoons fresh rosemary, chopped

•

4 teaspoons fresh garlic, minced, divided

•

1 tablespoon lemon zest, grated

•

3/4 cup Holland House brand Marsala Cooking Wine or similar, divided

•

2 tablespoons extra-virgin olive oil

•

2 racks of lamb (approximately 3-4 pounds), trimmed and cleaned

INGREDIENTS: Marsala Mushroom Sauce: •

1 tablespoon butter

•

1 pound fresh baby bella or cremini mushrooms, cleaned

•

2 tablespoons fresh shallots, thinly sliced

•

1/2 cup beef stock

•

1 teaspoon Dijon mustard

•

Salt and Pepper, to taste

•

1 tablespoon fresh parsley, chopped

DIRECTIONS: 1. In large bowl, combine rosemary, 3 teaspoons garlic, lemon zest, 1/4 cup cooking wine and olive oil. Add racks of lamb, meat-side up, and cover bowl. Marinate 6-24 hours. After marinating, heat oven to 400 F. Transfer racks of lamb to heated, oven-proof sauté pan on stovetop and sear each side 2 minutes until golden brown. 2. Transfer oven-proof sauté pan with lamb to heated oven and cook approximately 10 minutes, or until lamb reaches 135 F in center. Remove pan from oven and take lamb out of pan to rest. 3. To make Marsala Mushroom Sauce: In same pan, melt butter over medium heat; add mushrooms and sauté. Add shallots and remaining garlic, cooking until fragrant. Deglaze with remaining cooking wine. Add beef stock and whisk in Dijon mustard. Season with salt and pepper, to taste, and cook 2 minutes to reduce and thicken. 4. Carve racks of lamb by cutting between ribs. Serve drizzled with Marsala Mushroom Sauce. Garnish with parsley.
