Tradizionalmente, il granchio reale veniva venduto in clusters da 10 kg con le diverse parti del carapace. Kjell decide quindi di offrire le singole parti porzionate del granchio reale, crude e nelle quantità desiderate. Kjell capisce che il principale problema del commercio del granchio reale consisteva nello spazio e nel lungo tempo di preparazione e lavorazione del prodotto richiesti agli chef e l’imprevedibilità delle quantità delle singole pezzature del granchio, che potevano variare rendendo la programmazione del menù dei ristoranti estremamente complicato. MS Donna was able to identify the key problems of the king crab market and create a product that offers an innovative service, never distributed before in Norway. Traditionally, king crab was sold in clusters of 10 kg, with the different portions of the carapace sold together. Kjell instead decided to offer individual portions of specific parts of king crab, raw and in the desired quantities. After a series of interviews with Norwegian Chefs, Kjell understood that the main problem the crab market faced was the space taken up by the 10 kg clusters in the relatively cramped Norwegian kitchens, the long prep time chefs needed to dress the product and the unpredictability of the quantity of each part of the crab, which could vary, making menu planning extremely difficult for restaurateurs.

Il frantoio di ultima generazione permette di operare a freddo, estraendo grandi oli con uso limitato di acqua per rispetto verso le risorse idriche e ambientali. Centumbrie prevede due linee di lavorazione, una a 2 fasi e una a 3 fasi al fine di adottare la migliore soluzione estrattiva in funzione delle caratteristiche delle olive raccolte. Con numerosi accorgimenti tecnologici, l’intero ciclo di lavorazione è rigorosamente monitorato così da garantire un’altissima qualità dell’olio extra vergine d’oliva. Prima della spremitura le olive vengono pulite dalle foglie e dai residui di acqua, polvere e altre impurità. Lo stoccaggio e l’imbottigliamento vengono eseguiti in locali a temperatura controllata e con l’ausilio di gas inerte per salvaguardare le caratteristiche organolettiche e chimiche del prodotto. I macchinari sono divisi dallo spazio esterno tramite pareti vetrate, che rendono visibile a tutti e ovunque le fasi della lavorazione delle olive.

Tenuta Chiaramonte produces and distributes several organic extra virgin olive oils under its label, including two DOP and one IGP, which stand out for their quality and organoleptic properties, which have been recognized and rewarded, also in prestigious international competitions. The oils, in four versions, are marketed in bottles distinguished by very unusual artistic labels, depicting the typical gargoyles of Ragusan baroque architecture. The catalogue is completed by metal cans and other containers for all kinds of consumption needs.

COLTIVAZIONE CULTIVATION

Le coltivazioni sono irrigate a goccia e solo lo stretto necessario, con approvvigionamento idrico da pozzo privato che preleva direttamente acqua pura di falda. Le varie essenze coltivate sono state selezionate, abbiamo scelto accuratamente ogni varietà grazie alla collaborazione con l’erborista, affinché abbiano una maggiore concentrazione di aromi ed olii essenziali che trasmettono al loro utilizzo. È stata eseguita l’attenta analisi del suolo per valutare la composizione organica/minerale del terreno e sulla base di questi risultati abbiamo deciso dove e cosa coltivare.

The crops are drip irrigated, using only the absolutely necessary amount of water, drawn from a private well that supplies pure groundwater. The various essences cultivated were carefully selected, consulting with a herbalist to choose the right varieties to achieve a good concentration of aromas and essential oils for later use. The soil was analyzed to evaluate its organic/mineral composition, allowing us to decide what and where to cultivate.

RACCOLTA HARVESTING

La raccolta avviene manualmente nelle ore più fresche del giorno, le erbe raccolte quindi vengono trasportate subito (pochi minuti dalla raccolta) nel locale di essiccazione e poste su graticci di legno con rete a uso alimentare che permettono un’ottimale ed uniforme essiccazione. Harvesting is done by hand in the coolest hours of the day, and the herbs collected are immediately (just a few minutes after they are harvested) to the drying room, where they are placed on wooden trellises approved for use with food, guaranteeing optimal drying.

ESSICCAZIONE DRYING

L’essiccazione avviene in modo naturale, non utilizza il calore ma è dotato di deumidificatore, questo permette alle piante di non perdere i propri oli essenziali e quindi di preservare i loro aromi/odori/gusto. Herbs and flowers are dried naturally, not by heating but by de-humidifying, so that the plants will retain their essential oils and thus preserve their aroma/scent/taste.
