I’d like to introduce myself - Tracey or Trace for short. Yep, I am a local of Old Bar and I absolutely love this area - the Mid North Coast. This magazine has been a dream of mine for sometime and now its finally here. I wanted something different, something to be proud of and something which is local - local info, local produce, locally designed and locally printed. Most importantly is our community, I love the idea of walking into the butchers and he knows my name, also the real estate, the bakery, everywhere... I want to show off this area! A truly inspirational person, Lyn Heher grew up in the outer suburbs of Sydney and moved to the twin towns of Albury-Wodonga as a teenager and slowly made her way to a little cottage not too far from Wingham.

What's happening now?
A much needed lifestyle change led me to beautiful Forster. I then met my soul mate Stephen in the Great Lakes Seed Savers Group and now I share his piece of paradise up in the Caparra Valley with our growing family.
Food grown on our farm. There is something deeply gratifying about growing your own food and growing it organically is a must. Oh and potatoes in their jackets with a pile of yummy topping... Oh yes and my cookies and cream cheese cake. So wickedly delicious!
My childcare career is on hold as I am a full time mum to our son Indigo. I’m also pregnant with our third child, due mid September. We sadly lost our precious beautiful daughter, Daisy in 2009. I want to spend as much time with our children before they grow up. I have so much I want to teach them about our beautiful world and about life.
Why this area? It’s sheer beauty. Whether it is the amazing ocean water or the perfectly shaped mountain, its just so beautiful. How lucky are we all to live surrounded by such amazing natural beauty.
Favorite place? My fairy garden down by the creek on our property. I’m just a big fairy at heart and its such a magical place to be. Not too many people don’t enjoy a visit to my fairy garden, big or small.
Favorite Eat-out food? It’s got to be Bent on Food in Wingham - fantastic local and tasty food. You have to try the vegetarian dishes on the menu! Mmmmmmm!
Who inspires you? My husband Stephen. His love of nature, energy and enthusiasm always inspires me to get motivated and to live simply. The Manning Valley Little Sunflowers Steiner inspired playgroup - just being a part of the mothers group inspires me as a mother and as a child care worker.

Where in 20 years? Still happily married to Stephen and watch our children grow into adults and inspiring them to fulfill their hopes and dreams with love and compassion. Plenty of gardening and of course playing in my fairy garden.. I refuse to grow up.
Final say.... Happiness is a choice and I choose to be happy, happy, by living simply and truly being grateful, it always turns what I have into enough!
Local producers
Berry Farm Old Bar For over 5 years Ron and Chris from the Old Bar Berry Farm have been producing quality home grown berries for lovers of berries. The little known farm, not far from Old Bar has a wide variety of berries. Strawberries and Raspberries seem to be the favorites, with Young Berries (cross between a blackberry and raspberry), Boysenberry and Silvan Blackberries.
Most of the berries are ready to be harvested in the Spring and generally produce right through the summer. All of the berries are delivered to local businesses as well as jams and honey gathered from 30 bee hives on the farm. Your can buy your berries, honey and jam direct from the farm keep an eye on their sign on the corner of Half Chain and Old Bar Roads to see if you can pick some up on your way home. HINT: Check out the Strawberry Trifle recipe on page 12

There are a couple of ways to use the castings Firstly the liquid which is drained through the worm farm can be mixed 1-10 (1 part worm juice and 10 parts water). Pour it on and give all your plants a feed. Secondly you can use the ready made castings. Grab a few handfuls and mix it together in a full bucket of water and pure directly on. Your plants will love it!

Food From Your Garden!
Established in 1993, Greenpatch Organic Seeds supplies and distributes seeds, plants, organic garden products and books Australia wide. Seeds and plants are also available in bulk quantities for larger gardens, sprouting enthusiasts and commercial growers.
A warm, sheltered position is ideal. At least half a day of full sun, for optimum growth. Keep the soil moist but not wet.
With over 350 varieties of Heritage Seeds and over 250 varieties of culinary herbs, useful and edible plants, Greenpatch Organic Seeds is well placed to provide the home gardener with resources to establish a vegetable, herb and kitchen garden.
The garden bed or seed tray can be covered with shade cloth or vege net to reduce the drying out of the soil until seeds have germinated.
Soil preparation is the most IMPORTANT job to grow successful plants. Prepare a loose friable garden soil to a depth of at least 25cm. The fertility of the soil can be improved by adding organic matter like compost, well-rotted animal manures and organic fertilisers. The addition of lime to acid soils will help bring the ph to around 6-6.5 favourable to the majority of vegetables, herbs and flowers. Mulching is beneficial for weed control and retaining moisture. When sowing in containers or seed trays, minimum depth of 6cm is required. Sow seeds direct in the garden or in a seed tray. Small seed needs to be covered very lightly and larger seeds, double the thickness of the seed.
The main objective with raising seeds is to have a fine tilled soil that is well drained, then sowing depth, soil moisture, warm sheltered position.
Once the seedlings have grown to a height (5cm) they can be separated and planted in the garden. Water well, fertilise as required and enjoy the abundance! Not only does it reduce the transport costs of shipping food to distant locations, it is the environmental impact which is most important - keeping carbon emissions as low as possible. Chefs and cooks are keeping on their toes with menus in-line with seasonal fruit and veg. There is also a high demand for more organic and homemade delicacies by consumers, as well as strict dietary requirements such as gluten, nuts and dairy free meals.

A local and family owned café and restaurant, Martine’s is situated in the heart of Old Bar, in easy walking distance to the beach.
Being a local chef, Tristan knows the importance of purchasing local produce and recently has branched out into homemade marmalades and chutneys.
It’s pretty difficult to walk past the café when the coffee grinder is working its magic with a wide range of freshly roasted coffee, teas and a variety of fresh fruit smoothies.

Then tripping overseas to try functions and events catering and returning to settle back into Old Bar.

with Tomato and Fetta

1 punnet of local cherry tomatoes
1 French stick
Fresh basil leaves, chopped fine
50g greek fetta cheese crumbled
2 garlic cloves, crushed
Parsley to garnish
1. Cut cherry tomatoes into quarters Drain off extra fluid 2. Combine tomatoes, basil, garlic and fetta 3. Cut french stick in 1½ thick pieces and grill both sides until golden brown and put aside.
4. Put topping on toasted french stick pieces and garnish with a basil leaf. 5. Serve immediately with a sprinkle of cracked pepper and parsley! Yum!
mini trifles with strawberries
Makes 6+ small glasses 1 punnet of local strawberries
2 cups of custard
250g jam mini rolls
300g cream
400g peaches with syrup
½ tsp vanilla essence
90g Raspberry Jelly crystals
2 tsp icing sugar
1. Cut mini jam rolls into 1cm thick wheels & place around the bottom of each glass. 2. Drain peach juice and spoon syrup over rolls (you can use sweet sherry as well). 3. Boil kettle, make a cup of tea and dissolve jelly crystals as per packet. Drink your tea while this sets in the fridge. Cut into cubes and lay on top of rolls.

4. Wipe cream with icing sugar and vanilla essence. 5. Place peaches (cut into small pieces), then custard, some extra strawberries and then pipe the cream on top and garnish with a strawberry and kiwi fruit. Kids love making this recipe. It can be made the day before and the flavour will soak right through to the top!! YUM!
Warm Caesar S;alad with chicken
Serves 4+
2 chicken breasts from your local butcher - trimmed
1 avocado
2 rashers of bacon - trimmed
Anchovies
2 gloves garlic
Parmesan cheese
1 small brown onion
Good quality caesar dressing
1 large cos lettuce
Bunch of parsley
1 french stick or crusty bread
Salt & pepper
1. Gently pull off the leaves of the cos lettuce and place standing up around the edge of each large bowl. Roughly tear remaining lettuce and place in the middle. Cut avocado into slices. 2. Cut bread into squares and lightly drizzle with olive oil and cook in moderate oven until brown - set aside. 3. Put eggs on to boil 4. Heat a few teaspoons of oil and cook onion, garlic and bacon then chicken. Season with salt and pepper.

5. Once cooked - allow to cool slightly then place the chicken, onion, garlic and bacon together. 6. Once cooked - cut eggs into quarters and lay on top of chicken, then anchovies and avocado slices. Manning Valley Tomatoes has turned a broken down nursery into a productive tomato farm. The 40 acre farm situated not far from Old Bar was originally a highly productive wholesale nursery called Allots, growing mainly
indoor plants and employing around 20 employees during the eighties. From 2004 Manning Valley Tomatoes has slowly repaired some of the original greenhouses to grow tomatoes and other produce all year round. Deb has a passion for gardening and also grows a variety of fruit and veggies. Cucumbers, spinach, strawberries and Asian greens which are supplied at the farm gate. Some produce makes it to our plates via local cafÊs, restaurants and markets. ALL LOCAL! So don’t drive past without picking up home grown veggies. feature Old Bar Beach Festival It’s coming into its 7th year and the Old Bar Festival is becoming a very important part of Old Bar’s history - it’s no longer a few market stalls... The Old Bar Festival has seen its fair share of ups and downs in the past few years. In 2008 it battled severe weather and last year an unfortunate plane accident into the ferris wheel, many locals thought it was the end of the festival. boating & Fishing It’s Spring - you beauty! The weather is warming up, so it’s time to go into the back yard and see if you can find your boat. It’s time to go FISHING!! We are so lucky living in this beautiful area - Wallabi Point, Old Bar, the Manning River, the “Islands” and Manning Point. So many places to fish, so little time! Beaches, estuaries, lagoons, headlands, river entrances and ocean and so many ways to fish these areas - in boats , in kayaks, in waders or just wetting a line with the kids at your favourite local jetty. We are definitely blessed! Whiting, Jewfish, Flathead, Bream, Tailor, Snapper, Black Fish, Gar Fish, Mullet, Teraglin, Morwong, Drummer, Bass, Perch, Marlin, Tuna , Crabs, Prawns - too many species to name in this short article! Also a great variety of ways to fish for these species - bait, soft plastics, lures, fly - whatever your preference our local area can provide all this and more! So what’s been happening on the local fishing front? The Jewfish (Mulloway) were thick on the beach right through Summer and into Winter - taking Beach Worms, big Squid, Tailor or Salmon slabs and even whole Tailor. Tailor had a go this year too - they’ve been quiet over the last few seasons - I heard of fish up to that three kilo mark - very good fish. The “rockhoppers” have also caught some very good Drummer.
The river has been fishing consistently for Bream, Flathead, Jewfish and Black Fish and continues to look good for the rest of the season - since the Fisherie’s restocking program a few years ago the Jewfish population has increased dramatically. The Whiting should be around soon - hopefully a bit thicker than last year! The Mud Crabs had a “cracker” of a season in the river - the biggest I saw at the bait shop was just on 3kgs, with crabs to 2kgs not uncommon! The dredge is up and running and is currently undertaking works near Charlies Island and Mud Bishops - they have also completed the “Taj Mahal”of toilet blocks at Farquhar - the jetty has also been completed - making life much easier for “day trippers” and campers. Good to see at least one government body investing in our local area. Don’t forget about the new life jacket regulations when you’re on the river - check the Waterways web site if you’re unsure. Well, that’s it for the Fishing Page first edition - congratulations to Trace and the magazine team for their efforts - I better go before J.G. hits me with a 10% Carbon Tax for letting off too much hot air!

locAll me Y Community CLUB Surf Life Saving Club Since 1928, the Taree Old Bar Surf Life Saving Club has be saving lives on Old Bar Beach. In 1927 after drownings in the area, a meeting was called to form a surf club to provide trained rescuers to prevent further tragedies occurring.
This meeting failed and subsequently in 1928, a further meeting with the help of Vic Rushby, formed the Taree Old Bar Surf Life Saving Club. Today the Club has a strong following with many patrolling, Nippers and associate members.

Quiet and pristine, Manning Point is the perfect spot to sit and relax. A sleepy little town where locals stop in the middle of the road and chat for half an hour before they move on. You could say Manning Point is undiscovered and untouched, located on the entrance of the Manning River, Manning Point is both a river and beach town with beautiful views. The local General Store has everything you need from a postage stamp to a bottle shop. The hamburgers are the best around and you can sit and enjoy a coffee or grab a take away and head to the park with the kids. The local park has a great BBQ area with lots of picnic tables (under cover) and a playground for the kids.
East's Ocean Shores holiday park
Located 330km north of Sydney, only 50 minutes south of Port Macquarie and 20 minutes from Taree, East’s Ocean Shores Holiday Park is a fantastic choice of Caravan or Holiday Park on the Mid North Coast of NSW with such features as a large resort style pool and jumping pillow for kids. We are the closest park to the centre of Manning Point. The bowling club is right next door.
