Chuck Courtney: Sherman's Deli Matzo Ball Soup. Q: How do you personally, or your restaurant, stand apart from the rest in such a large industry? CC: As a team, it is our attention to detail, going the extra step—food from scratch, excellent caring service, paying attention to presentation, both in the front of the house and with the plate of food. This sends subtle messages to our guests that add up to a great experience. Q: If you could only use three ingredients for the rest of your life, what would they be? CC: Good bread, good butter, and sea salt (don't tell my doctor!).

I could eat sushi every day. I love the different textures and flavor combinations. Never gets old. Q: How do you personally, or your restaurant, stand apart from the rest in such a large industry? FD: All of us have a love for what we do here. We try to use the best ingredients to

make the best products we can. If something isn’t up to our standards we won’t use it. And you can’t beat the view.

Drew Davis CHEF AND OWNER, CATALAN MEDITERRANEAN RESTAURANT Q: If you could eat one thing in Greater Palm Springs for the rest of your life (not from your restaurant), what would it be? Drew Davis: The Bacon Flight at Cheeky's. Q: How do you personally, or your restaurant, stand apart from the rest in such a large industry? DD: With our unique menu. I like to change the menu four times a year in order to work with the best ingredients the season has to offer. Giving our guests a nice element of change helps them move out of their comfort zone and try something new. As a family owned and operated business we like to treat our guests and staff like family. Q: If you could only use three ingredients for the rest of your life, what would they be? DD: Salt, pepper and pork. Q: What does it take to run a restaurant successfully? DD: Passion, simplicity and changing with the trends.

Q: If you could only use three ingredients for the rest of your life, what would they be? FD: Pork shoulder, rice and garlic. Three ingredients with almost endless possibilities. Q: What does it take to run a restaurant successfully? FD: Passion, dedication and the ability to think on your feet.
