




Perfect for outdoor entertaining.
Cold smoking meats is the act of infusing through a smoking process that purposefully falls short of cooking the meat. Historically, the process was used in tandem with a salt brine or crust that creates a barrier on the outside of the meat, sealing in all that flavor, as well as extending the lifespan the protein can hold for.
These days the technique is used almost solely to deliver a smoke flavor into an already flavorful protein for those looking for that extra hint of flair to a dish. This technique doesn’t stop at just meat however, many have used it for cheese, nuts, herbs, spices, and sauce.
Using either a custom-built environment, like a wood barrel or tube, a home oven, or BBQ pit, it’s very important to have a sealed environment to trap as much smoke as possible.
Woods historically used range from Hickory, Cherry, Maple, and Mesquite, but most common smoking woods will do.
During this process, temperatures don’t normally exceed 80 degrees Fahrenheit, again calling back to the fact this process is not used to cook the meat. This controlled environment allows as much smoke to develop as possible while avoiding getting the meat hot enough to begin the cooking process.

Most recipes recommend anywhere from 10-30 minutes under smoke, depending on the desired intensity of smoke flavor. For something like a ribeye, where you don’t want to overpower the natural flavor, most recommend 10-15 minutes.
Once the smoking process is complete, pan sear the ribeye as you normally would for an all-natural ribeye. If a salt brine or crust was used, avoid using extra salt during the actual cooking process.
The Butcher’s Market recommends 5-7 minutes for each side depending on your desired internal temperature. Finish off with a garlic and rosemary baste.

As the heat starts to rise, it’s a wonderful time to welcome family and friends over for fun summer entertaining - if you’re willing and able to make the time.
I n the June issue of NC Eat & Play Magazine, we want to highlight some great ways to make your gatherings bright, lively, and full of fun. If you’re like me, summertime means you’re in-between finding fun things to do with your kids while the sun is out and working all day (and sometimes nights). Then there’s the birthday parties, pool parties, sleepovers, etc. that fill your schedule. Before you know it, there’s barely time to catch your breath - let alone catch up with other adults in your life.
I ’ve learned I need to make more time for such gatherings for me and my husband, Harrison. To be completely honest, we usually just go to others’ homes if we’re craving adult interactions, but I’ve learned that I can be a great host too. It’s all about making the effort. If you treat it like a mini-event, it can be fun, enjoyable, and worth the slightly added stress.
F ind a reason to gather. That’s my first tip. It can be something as simple as recognizing the last Friday of the month, or maybe debuting some new recipes. Whatever the reason, my advice is to just do it. I used to cringe at the thought of having to host something, but now I’m learning that after it’s all done I usually feel rewarded from the experience - and yes, still exhausted but rewarded.
I n the June issue, I get a chance to live out my mocktail dreams with the help of Wye Hill Brewing. As someone that doesn’t drink alcohol, I’ve always felt a little left out when I see such gorgeous creations at restaurants. I would say my choice in being alcohol-free started from my religious upbringing, but now it’s really just a personal decision. Thankfully, popular inclusive establishments like Wye Hill Brewing use their mixology talents to heighten their drink menus with delicious mocktails so you don’t ever feel like you’re missing out.

Anne-Yael Dorsey is the owner of Meat & Graze, a cheeseboard company in Durham. Meat & Graze has been operating since 2020 at local pop-ups around the Triangle before moving into its Boxyard RTP storefront in 2021.
Me at & Graze is a small but mighty team with Anne-Yael and her husband as its only full-time staff. She shares, “I recently married my favorite person in the world and have the pleasure of working with him each day.”
W hen not creating her popular “Cheeseperiences,” Anne-Yael also volunteers as a grant reviewer for NC IDEA twice a year. She states, “I’m passionate about entrepreneurship and uplifting women and underserved communities.”
Why did you start your business?
Growing up, my younger brother, Joshua, and I both loved food. We shared countless memories around the dinner table.
Af ter he was killed in 2019, I developed an interest in creating cheeseboards and learning about food pairings as a way to help manage grief. It was truly therapeutic.
Th e following year, I shared my very first Cheeseperience with friends and family. It was a massive hit and, I received an overwhelming amount of encouragement to follow this path.
Having worked in the hospitality industry for more than seven years, I felt confident in fusing my knowledge in cheese with my experience to offer tempting catering platters that would foster fellowship and lasting memories. After almost a year and a half of online sales and pop-up markets, we were able to open our doors at Boxyard RTP.

We got our start at the beginning of the “charcuterie craze” and have since continued to gain experience and hone our craft. Our team’s collective knowledge of cheese, charcuterie, food pairings, and design skills enables Meat & Graze to stand out from the rest. Folks are always impressed by how much they learn at our classes.

We are Durham’s first cheeseboard company and the first black (woman) owned cheeseboard brick & mortar in NC- and I believe second in the nation.
We are one of the inaugural tenants at Boxyard. We’ve had the pleasure of servicing and collaborating with many well known local companies and universities, including an event with Ruby Bridges at Duke University.
Have you always been interested in this line of work?
Not exactly! While I’ve always had an entrepreneurial spirit and vision for how I wanted my life to go, I can’t say that cheese and charcuterie was what I saw for myself. Ultimately, my background in the food & hospitality industry, entrepreneurial mindset, and new found hobby coincided into a successful business opportunity!

We are very proud that Meat & Graze has not only survived COVID, and this strenuous economy, but is growing year over year.
Ou r sales are on pace to be about 30% higher than 2023. Like all businesses, there are ebbs and flows, but we are hanging in there and actively doing everything possible to succeed.
So metimes we have to remind ourselves that we started online with no following and made a name for ourselves at pop-ups, hootenannies, and farmer markets. We’re beyond hopeful and excited for Meat & Graze’s future.

Wye Hill is a fabulous restaurant and brewery with perhaps the most beloved view in the area. Their patio is located on Boylan Bridge and provides an unmatched view of the Raleigh skyline.
Wy e Hill is also known for its craft beer and appetizers. The Brussels sprouts and pimento cheese are both perfection!
Taverna Agora
Taverna Agora boasts one of the most charming patios I’ve ever dined on. Their rooftop garden terrace is a dream and makes for the perfect girls’ brunch or date night.
Taverna Agora serves Mediterranean cuisine and feels like being transported to a village in Greece. We love the pita with hummus, lemon soup, and chicken Mykonos pasta.

Jo lie
Jolie brings a stunning French bistro with a rooftop patio to downtown Raleigh and is one of my favorite restaurants in the Triangle. The patio is beautiful, and the food is exceptional–right down to something as simple as the butter!
Mu lino Italian Kitchen & Bar
Mulino’s patio is one of the most unique and enchanting in North Carolina. You’d be hard-pressed to find another patio resembling Mulino’s rustic, romantic poolside dining.

Cortez is a tropical little oasis in downtown Raleigh serving chef-driven small plates and seafood. The food is incredible, and the vibe is hard to beat. The gambas al ajillo (shrimp in a garlic-butter lemon sauce served with a toasted baguette) is a 5-star dish everyone needs to try.
Ea st End Bistrot
East End Bistrot is one of the best new restaurants to grace the Raleigh food scene, and our team can’t get enough of it. It’s an upscale French bistro that feels modern, eclectic, and romantic inside and out. The patio is clean and inviting, and you won’t find a better ribeye!
Sa lt & Lime Cabo Grill
Salt & Lime is a favorite among our followers, but many don’t realize they have patio seating at both Raleigh locations! In addition to great Baja-style food and drinks, you can eat outside among the palm trees.
V Pizza
V Pizza is an incredible Neapolitan pizza restaurant serving high-quality food with ingredients imported straight from Italy. Both its Cary and Raleigh locations have expansive patios and connected cocktail bars. Enjoy some wood-fired pizza and wings in the fresh air, and wash it all down with a craft cocktail.
MC Restaurant
I sing MC Restaurant’s praises to anyone who will listen. I genuinely think it’s one of the most enchanting and impressive restaurants around. Upscale Asian cuisine is served in a historic home in downtown Cary. Guests can dine outside on the porch or in the garden. Dreamy, right?
Me rritt’s Grill
Merritt’s Grill is a Chapel Hill institution for two reasons: the out-of-this-world BLT sandwiches and the large patio. Tables covered with bright red umbrellas seat patrons as they indulge in sandwiches worth writing home about.
OS HA Thai Kitchen And Sushi
OSHA, located in Holly Springs, serves outstanding Thai food and colorful, flavorful sushi. The modern, beautiful outdoor seating is lined with potted flowers underneath string lights.
I hope this inspires you to ask for patio dining next time you’re at a restaurant that offers outdoor seating. It truly enhances the experience, especially when the patios are as enchanting as the ones in this guide!
Want a simple and festive way to enjoy food with friends for daytime gatherings? Here are some perfect recipes that are tasty as well as visually stunning. My mom and I make these plates when we opt for lighter fare with friends and family.
They’re perfect for the summer heat, when you don’t want heavy dishes.
Ingredients
• 2 tbsp. olive oil, plus more for brushing on the baguette slices
• 5 cloves garlic, finely minced
• 2 pints red grape tomatoes, cut into fourths
• 1 tbsp. balsamic vinegar
• 16 basil leaves, chopped
• salt and pepper to taste
• 1 baguette
• balsamic glaze for drizzle
Directions (cont.)
1. In a small skillet, heat the oil over medium heat. Add garlic and gently stir for about a minute or until fragrant. Be careful not to let the garlic brown. Slightly golden is okay.
2. Add tomatoes, vinegar, basil, and salt and pepper to a bowl and combine. Cover and refrigerate for at least an hour.
3. Preheat the oven to 400 degrees Fahrenheit with a rack in the middle of the oven. Cut the baguette into 1⁄2 in. slices and brush the baguette slices lightly with olive oil. Place on cookie sheet and bake in oven for 5 min. or until lightly browned.
4. To serve, put a small spoonful of the condiment on the baguette slice and drizzle the balsamic glaze over the top.
Ingredients
• 12-16 slices good quality white bread
• 8 oz. cream cheese, softened
• 2 tbsp. mayonnaise
• 2 tbsp. butter, softened
• 1⁄2 tsp. dried dill or 2 tsp. fresh dill, chopped
• 1⁄4 tsp. garlic powder
• 1⁄4 tsp. salt
• 1⁄4 tsp. pepper
• 1 green onion, chopped
• 1 large English cucumber
Directions
1. Put bread slices on a parchment lined baking sheet and freeze for an hour. This makes slicing the sandwiches with clean edges easier.
2. Put the cream cheese, mayonnaise, and butter in a bowl. Mix until creamy and combined. Add the dill, garlic powder, salt, pepper, and green onion to the bowl and mix until everything is evenly mixed and cream cheese is spreadable.
3. When you are ready to make the sandwiches, cut the cucumber into very thin slices. (You can peel the cucumber if desired or use a peeler to make strips.)
4. Using 2 slices of bread at a time, spread some of the cream cheese mixture on each slice of bread. Layer the cucumber slices over one piece of bread and then top with the other slice of bread with the cream cheese side covering the cucumbers. This helps to keep the bread from getting soggy.
5. Slice the crusts off, then cut the sandwich into the shapes you want. Repeat with all the other slices of bread until your cream cheese mixture is gone.
6. Serve immediately or wait no more than an hour before serving.
Summer is right around the corner, and in North Carolina that means pool parties and other aquatic adventures. Between the beaches, lakes, and pools, there is no shortage of water activities all over the state. Unfortunately, drowning remains the number one cause of unintentional injury-related death among children ages 1 to 4, taking the lives of three children in the United States every day. As your family is preparing for summers filled with water fun, it is critical to brush up on water safety tips now before making a splash this summer!
1. Enroll in Swim Lessons & Practice Basic Moves Before Returning to the Pool: One of the best ways to protect your children against drowning is to improve their comfort level in the water and strengthen their swimming capabilities through swim lessons. Swim lessons have been proven to reduce the risk of childhood drowning by 88%. Lessons help increase muscle memory by practicing basic techniques for kids to use during a water emergency - such as the crab walk, properly getting in and out of the pool, going underwater, rolling on their back, treading water, learning different strokes, etc.
2. Swap Out Floaties & Puddle Jumpers for U.S. Coast GuardApproved Life Jackets: Don’t rely on floaties and puddle jumpers to keep your kids afloat. They can give children a false sense of security in the water, can easily come loose or deflate, and teach children to float in a vertical position which is the opposite of how our bodies actually float. Search for the Coast Guard approval on floatation devices, as it means the lifejacket has met all the regulations that the Coast Guard has set in place for performance, construction, and materials. Pay attention to proper fit because if your child’s head or ears can slip down beneath the life jacket, the device won’t be able to work as designed to keep their head above water and allow for proper breathing.
3. Seek Out Bright Colored Swimwear & Properly Fitted Goggles: When shopping for swimwear, avoid colors that could blend in with the water and choose suits with bright colors instead. This will make your children stand out in the water and make it easier to spot a swimmer in need of help. When shopping for goggles, there are a couple of factors to look for: make sure they fit around the eye comfortably (the top of the goggle cup should fit under the eyebrow and comfortably seal on the bottom under the eye socket), that the nose piece is not too tight or too wide, and that the straps easily adjust.
4. Play it Cool and Follow the Rules: Sometimes when our little ones are in play mode, rules can be hard to remember. Review safety rules together as a family before letting your kids go enjoy the water. Schedule your swims for when lifeguards are present, if possible. Make sure your kids know what to do in a water emergency. Their first instinct may be to go towards a person having trouble in the water. Instead, they should throw or reach a life preserver of sorts –and don’t go! That way, they aren’t putting themselves in jeopardy as well and are truly able to help!
5. Designate a Water Guardian: Make sure to always keep your eyes on your kids – even if lifeguards are present. Kids are curious and can push the limits without knowing the true hazards. Designate an adult “Water Guardian” and be sure to change guardians every 30 minutes so he/she is alert and refreshed. A Water Guardian’s sole responsibility needs to be keeping an eye on the swimmers. Vigilance is key – no chatting, no checking your phone, no distractions.
By keeping all these water safety tips in mind, you can feel confident in your family’s ability to stay safe (and have fun) around water all summer long!

The 36 year old mom of two wonderful kiddos, Harper (7) and Parker (9), creates fun and excitement with her beautiful bounce houses and impressive decor and decaling.
“Troy Speelman is my supportive, loving, adventurous (and incredibly patient) husband,” says Chantel. “My favorite moments in life revolve around our family. Ch antel grew up with an entrepreneurial spirit. As a child, she took to baking and selling snickerdoodles at the baseball field. She created custom scrapbooks on eBay during her high school years. She owned an Etsy shop in college selling handmade items. Eventually, Chantel owned her own network marketing business for seven years.
She proudly shares, “Creativity has always been a driving passion in my life. My parents always encouraged me with words of support throughout my life, emphasizing, ‘We believe in you and we believe you can do anything you set your mind to!’”
In 2022, Chantel felt the urge to start a new business venture that would allow her a creative outlet as well as the opportunity to bring memory-making to her community. “After months of consideration,
gathering feedback, and pen-to-paper brainstorming, our venture led us to what I knew would be an exciting and unique experience for the residents of Raleigh and surrounding areas.”

How did you start Little Bounce Company?
My kids love bounce houses, and we always enjoyed renting them but we were never fond of the colors. They often came in primary colors and character themes which never quite fit the theme of our parties.
So, we decided to start Little Bounce Company and bring to life a customizable option - the white bounce house - which can fit any theme, style, or concept.

How is the business doing and what are your hopes for it in the near future and beyond?
At Little Bounce Company, we believe the best time to celebrate is whenever you can, and we have been delighted to learn that our community feels the same, as we have helped over 100 clients celebrate special occasions in our first year.
In itially, we began with just four bounce houses, but we have now expanded our collection to 11 bouncers.
We recently introduced our first modern colored bounce houses, which are 3-in-1 combo bouncers, with the exciting option to use wet or dry. Our wet option features a large bounce area with a water slide into a mini oasis pool, while the dry option features a large bounce area with a slick
slide into a large ball pit. Our new LUXE bouncers are available in either Lavender or Seafoam.
Lo oking ahead, we plan to continue expanding our collection with additional colors that are both pleasant and aesthetically pleasing, ensuring we meet the evolving needs and preferences of our clients.
We love receiving feedback from our clients, and we are happy to respond with new offerings based on their requests. Cr eating a special place outdoors for your guests can seem daunting, but it can be easier than you think.
Yo u can easily transform an outdoor space and make it feel more inviting by using a designer element you’re probably already using indoors, and that’s rugs.
Th ere are a wide array of options for outdoor rugs these days. Opting for weather-resistant materials like polypropylene, acrylic, or bamboo are great because they are durable and can withstand various weather conditions.
Pl acing the rug under seating or dining areas help define the space and add comfort underfoot. You can also use smaller rugs to create cozy nooks that are inviting for guests to sit.
Yo u’ll want to measure your space and choose a rug that fits well. For dining areas, ensure the rug is large enough to accommodate the table and chairs with enough space to pull the chairs out.

When Megan first started planning for a summer entertaining issue, she immediately thought of doing mocktails because of its benefits to enhancing an overall entertaining experience for all guests to enjoy.
As she joined the team at Wye Hill Brewing for a bright mid-morning cover photoshoot for the mocktails & cocktails feature, she started to grow a deeper appreciation to all that goes into crafting a great mocktail.
At Wye Hill, the entertaining vibes are abundant.
It’s this appreciation for the art of creation that got Megan thinking about what mocktails represent to her and the meaningfulness of it all.
As an adult that doesn’t drink alcohol, Megan doesn’t discriminate on those that choose to enjoy it. At nearly every single NC Eat & Play event, adult beverages are present, if not included in ticket prices.

Megan notes, “First, I have to say everything at Wye Hill is impressive. The warm hospitality of their staff flows just as amazing as the drinks we prepared for the photoshoot.”
She adds, “I wasn’t expecting to grow such an appreciation for what goes into making a tasty drink. As a visual person, I generally gravitate to the appearance of the drink before I even seek to understand its ingredients.”
She learned that the ingredients can seem complex but are actually easily accessible and easily made - and when brought together with thoughtfulness, can become an ingenious pairing of flavors that’s surprising and delightful.
Similar to learning from a great cook, you discover ways to enhance a creation by choosing to experiment and play with variations that build flavors. “It’s really an art form,” she concludes.
and never shares a personal opinion on taste or quality because hasn’t tried the product. So you may wonder, why?
As a foodie and content creator, why hasn’t she given in and just taken a sip or two for the work or to appease others that drink in her presence?
That answer lies somewhere between her childhood religion and her rooted sense of never feeling the need to do things just because others do them. Of course, when the majority of your community around you doesn’t drink alcohol (because of religious beliefs) it much easier not to as well.
But as someone now more independent from restrictions dictated by a religion, she’s found a brighter way of thinking about her choice to live alcohol-free.
The benefits to enjoying moments sober have really taken shape in Megan’s view.
Megan says, “I’m not willing to place judgement on anyone that likes alcohol responsibly. Some of the best people in my life love having an adult beverage when we’re out enjoying a meal together.
For me, it’s about being fully present. That’s important to me - especially because I’m usually (even if subconsciously) seeking a way to share the experience with followers of NC Eat & Play.
That’s how I want to experience everything. In fullness of it all.
I want to be able to take in all the flavors, colors, conversations, and everything that happens in the moment.
I know for some, this choice may have come after consuming alcohol for awhile. I’ve known people that made sobriety a focus because of addiction or they simply had enough and don’t want it in their lives anymore.
Thankfully, more and more establishments are making fun and interesting creations for all of us wanting to experience the artistry of mixed drinks without the alcohol.”
Megan is proud to share a couple of great mocktails she learned to make from Wye Hill, and in respect to their master mixologists and the thousands of patrons that enjoy their drink menu, she’s highlighting their cocktail menu as well.
Again, she didn’t try any of them but her team did, and they vouch for them wholeheartedly. No matter what the choice is for a beverage, Megan’s recipe is always to enjoy it fully with great food and company.
When it comes to summer entertaining, a well-planned drink menu is always a good idea for gatherings and special events. For those like Megan who do not drink alcoholic beverages, mocktails are an excellent idea for a more inclusive selection.
O ver the years, mocktails have gained in popularity. Several local bars and restaurants have started seriously catering to the non-alcohol desires of their patrons and offer mocktails crafted with premium ingredients and innovative artistry.
W ith the help of the mixologists at Wye Hill Brewing, located in downtown Raleigh, here are a couple of their popular and impressive mocktails to enhance any gathering.
Me gan shares, “What I love about sharing these mocktails is introducing new, but easily accessible ingredients like coconut water, elderflower syrup, and orgreat syrup which adds complex flavors and a craftsman touch to a drink menu. The drinks are also very pretty.”
• 1.5 oz. fresh cucumber juice
• 1 oz. elderflower syrup
• .75 oz. lemon juice
• .5 oz. orgeat syrup
• 2.5 oz. soda water
• 2 sprigs of rosemary
C ucumber Juice: Slice five cucumbers (so you have extra juice) into manageable pieces. Blend on high until pureed and smooth. Strain through a fine mesh strainer or cheesecloth, discarding the pulp.
E lderflower Syrup: Super easy to find online or in-store. If you have extra time on your hands, you can make yours from scratch, like Wye Hill does in-house using:
• 1 qt. sugar
• 1 qt. water
• 2 whole lemons, sliced
• 1 cup dried elderflower I n a pot on low heat, combine the sugar, water, and sliced whole lemons. Stir until the sugar is released to create a simple syrup.
I n a separate container, measure out one cup of dried elderflowers (which can be purchased online). Add two rosemary sprigs, and pour your simple syrup overtop. Stir to combine well and let cool. Seal your container, and let it sit in the refrigerator for 48 hours to steep. Strain the solids. Voila!
L emon Juice: Fresh is always best… but store-bought works in a pinch.
Or geat Syrup: An almond, sugar, and orange syrup that is easily purchased online.
Co mbine all ingredients into a cocktail shaker. Shake well, pour/strain into a collins glass and top with soda water. Add ice and enjoy!
• 1 1/2 oz. of fresh cantaloupe juice
• 3/4 oz. of fresh lime juice
• 1/2 oz. of coconut water
• 1/2 oz. jalapeño syrup*
• 1/2 oz. of cinnamonginger syrup**
• 2 1/2 oz. of soda water
(How to make it):
Ad d all ingredients into a shaker, shake vigorously, and strain into a glass with ice.
Ja lapeño Syrup
• 3 jalapeños
• 1 pt. of sugar
• 1 pt. of water
• 1 tsp. of salt
• 2 tbsp. of lemon juice
S lice the jalapeños into thin slices. Combine water and sugar in a pot and heat until the sugar dissolves. Add the other ingredients and let the jalapeños steep on the heat for 3 minutes. Let the jalapeños steep off the heat for 10 minutes. Pour the mixture into a blender and blend until everything is completely incorporated. Strain off the solids.
C innamon-Ginger Syrup
• 1 qt. of water
• 1 qt. of sugar
• 1 pt. of ginger root (peeled and shredded)
• 2-3 tsp. of ground cinnamon
Peel the skins off of the ginger root then shred the root in a blender or with a grater. Place the sugar, water, and cinnamon into a pot. Place the pot on the heat and start stirring. Try to break up the cinnamon (it will clump) and also make sure the sugar is not sticking to the bottom of the pot.
O nce you release the sugar, add the shredded ginger root. Stir the mixture consistently until the mixture starts to simmer. Let simmer for around 2 minutes and then take it off the heat. Place the mixture into a container, then seal it. Let the mixture steep for 30 minutes. Strain off the solids.
Wye Hill patrons may be very familiar with the popular cocktail version of this recipe called, One in a Melon. If you want to offer an alcoholic version of this drink, you can easily switch out the soda water and add 1 1/2 oz. of blanco tequila and 2 dashes of Angostura bitters.
In June 2024, Wye Hill Brewing will celebrate its 5-year anniversary. Known for their popular beers brewed underneath its iconic patio vantage point of the Boylan Bridge, Wye Hill has become a friendly and welcoming gathering place for great drinks, seriously delicious food, and the best downtown Raleigh vibes.
