Baked Sweet Potatoes A great alternative to the humble spud these baked sweet potatoes are, well… pretty sweet!

Ingredients

Method

4 medium to large sweet potatoes 1 medium bunch curly kale, ribs removed and cut into 4 cm (bitesized) pieces 3/4 cup crumbled fetta cheese 1/2 cup coarsely chopped walnuts or walnut pieces 2 tablespoons olive oil 1 teaspoon salt 1/2 teaspoon pepper

Preheat oven to 200ºC. Pierce each sweet potato several times with a fork. Place directly on oven rack or on a lined baking tray and bake for about 45 mins.

Line a baking tray with baking paper and lay out kale evenly on tray. Bake in 200ºC oven for about 10 to 12 minutes, or until crispy, turning halfway through and rotating pan.

Meanwhile, add olive oil, salt and pepper into a medium sized bowl. Add chopped kale and toss to coat.

To serve, cut each of the baked sweet potatoes in half. Top with crumbled fetta, walnuts and the crispy kale.

Motor Neurone Disease Victoria’s

Stavros and Fiona to trek the Great Wall of China to raise money for Motor Neuron Disease Victoria. Why are they fundraising? Stavros and Fiona are inspired by the work of Motor Neurone Disease Association Victoria, who provide a tremendous amount of support to those who have MND. Stavros and Fiona would like to raise $50,000 in memory of their father, who they lost to MND last year. What is involved in the challenge? Stavros and Fiona will be trekking for five consecutive days, up to seven hours a day to raise money for Motor Neuron Disease Victoria. This Challenge will require them to navigate a variety of terrain, including restored and unrestored sections of the Great Wall. There are many steep ascents and descents and thousands of steps.
