Rising above the Mornington Peninsula, Arthurs Seat is the most familiar of all Port Phillip Bay landscape features. Its 314-metre summit, reached by road or on foot, gives spectacular views of the bay and Port Phillip Heads. On a clear day the view extends as far as the city skyline, the You Yangs and Mount Macedon.



Mushroom

2.8 litres chicken stock

250 grams Portobello mushrooms diced 125 grams Shiitake mushrooms thinly sliced

125 grams oyster mushrooms chopped 1 tablespoon soy sauce 1/2 tsp curry powder

2 cloves crushed garlic 1/2 tsp white pepper 1/4 cup butter

1/4 tsp dried basil leaves 1 tsp seasoned salt

1/4 tsp black pepper

1/8 tsp cayenne pepper

Soup

Bring stock to boil in heavy pot. Add Portobello mushrooms, Shiitake and oyster mushrooms. Add soy sauce, curry powder, garlic, white pepper, butter, basil, salt, freshly ground pepper and cayenne. Continue boiling for 10 minutes. Reduce heat and simmer for 25 minutes. Garnish with spring onions.

To reconstitute dried mushrooms, cover with warm liquid (water, broth, wine, etc.) and let sit at least 30 minutes. Drain, rinse, and blot on paper towels. The liquid can be used to flavour soups, stews, and stocks. Strain the liquid before use.
