pineapple, guava & banana sorbet Serves: 4 - 6 Ingredients 1. 2 bananas, peeled, cut into chunks and frozen 2. ½ pineapple, skin and fibrous centre removed, sliced and frozen 3. 1 cup Bundaberg Guava Method 1. In a large food processor, place the chunks of frozen fruit and run for about 30 seconds. 2. Add a quarter of the Bundaberg Guava and run again for another 30 seconds. Repeat the process until the liquids have been blended into the frozen fruit and the mixture is smooth. 3. Pour into an airtight container and freeze until firm. Serve when needed.

guava chicken wings Serves: 4 - 6 Ingredients 1. 1 cup Bundaberg Guava 2. 1 cup caster sugar 3. 2 kg chicken wings, chopped into drumettes 4. 1 lemon, juiced 5. 2 garlic cloves, peeled and chopped 6. 2 red chillies, chopped

¼ cup soy sauce 1 tbsp all spice 9. 1 tbsp corn flour 10. Salt and fresh ground black pepper 11. 2 tbsp sesame seeds, toasted To serve: ½ red onion sliced thinly + 1 cup coriander leaves, chopped 7. 8.

Method 1. In a small saucepan, combine the Bundaberg Guava and sugar. Bring to a boil then simmer on a medium heat for 10 minutes. 2. Add garlic, chilli, soy sauce, all spice and cornflour and stir though. Once it has thickened, remove from the heat and allow to cool. 3. Place chicken drumettes into a mixing bowl and season with salt and pepper. Pour over the guava marinade and add lemon juice. Coat well, cover with cling wrap and refrigerate for 2 hours before cooking. 4. Preheat oven to 180°C or 160°C fan. Line 2 large oven trays with non-stick baking paper. Arrange wings on oven trays and bake for 30 mins. Sprinkle with sesame seeds and cook for a further 10 mins, or until golden brown. Toss red onion + coriander over the top to serve.
