Michelle Mascher of Brisbane is the heart and soul behind Ugly Duck Preserves, combining her great love for growing and preserving food and her strong belief that food should not be wasted. She works in small batches with seasonal produce that she collects personally from the surplus of farms and private gardens as well as rescuing fresh fruit and vegetables that were rejected by shops and supermarket chains. Her ethos is that the taste and freshness of the ingredients are the only qualities that matter, odd shapes and sizes don’t and whenever she heads into the kitchen, the seasons' surplus produce determines the recipes. This Apple Rosemary Jelly is one of their best sellers, not only because it’s a taste sensation but it is also made from fresh spray-free Rosemary from Michelle’s own garden. This particular batch was made with rescued apples from an abandoned orchard near Stanthorpe. Naturally the apples were wax free and chemical free. This jelly goes best with a hard cheese like cheddar and can also be used as a glaze or sauce for lamb or ham. Or try stirring into a warm bowl of breakfast porridge. Every family has something that they cherish, and for family business Chittiles P/L, it was the recipe for a beloved, homemade snack they call Dough Nuggets.
