EXPERIENCE PARADISE THAT IS THE INLAND NORTHWEST

S

ummertime brings a sense of freedom. With the beautiful weather, warm temperatures, blue and sunny skies, it makes it so easy to get up, get out, and start exploring this incredible place we live here in the Inland Northwest. As the past two years brought uncertainty and separation, many of us found ourselves closed off from our friends and loved ones. Many lost their jobs due to businesses being forced to close; others had the option to work remotely in the safety and comfort of their homes. Add in those with children, who found themselves not only Mom and Dad, but teacher. It was a lot. Two years of our lives upheaved. As we welcomed spring earlier this year, we breathed in a sense of relief, of life, as normality had finally returned–for the most part. Many of us have found a new appreciation for all that we have and where we live. We hold those we hold dear a bit closer, find ourselves loving more, giving more, and appreciating more. Life is precious, and each day is worth living to the fullest.

W

hen looking to spruce up your backyard, there are a plethora of options for anyone to make their yard stand out on any budget. First, consider what you have, consider what you want and then what you need. Be sure to include your budget and the time you have or want to spend on your backyard. Don’t have a backyard theme? Does your backyard currently look like a sandlot? Consider seeding some green grass or even premiere synthetic grass if you don’t have a lot of time to put into taking care of your lawn. Also, consider making space for a small patio area or deck to place your furniture.

Adding a patio can be as easy and affordable as adding some pavers on the ground. They will take up some lawn space so you will have less lawn area to maintain. Whether you choose to have a deck or patio, know that both will take time and money to implement and maintain. A patio may have less maintenance and be less costly, but a deck will surely add more value to your home. Once you have decided on the spacing of your lawn with specifics as to what elements you would like to add (patio, deck, sandboxes, playsets, pools, ponds, etc.), you should select the appropriate type of grass that fits you and your space and go from there. If you go the traditional grass route, choosing the type of grass and the timing in which you plant the correct grass seed will greatly enhance your backyard.

The next likely step is to check out the type of soil that currently sits in your yard. You can test your soil and compare it with others, or bring a soil sample to your local nursery for professional advice. Once you have done this, be sure to prepare your soil. Use a sharp spade shovel to remove any existing grass (a sod cutter may get the job done faster). Once you’ve removed all your old grass, if any, remove rocks and debris using a rake and even out the soil surface. Whether you are resodding, planting grass in a specific area of your yard, or just doing some summer prepping, you’ll want to do this regardless. At this point, you may want to consider adding other elements like stone or brick pathways, or even levels to your yard if you are willing to put more work into creating them. The more you do in this area, the higher the cost, but it could be worth it to you. If you do decide to add a pool, pond or rock wall fountain to your yard, be sure to map out the area where you plan to install your water feature, and make sure the soil is moist for digging and zoning. Be sure to do your research and either prepare the foundations for these larger water features yourself or hire a contractor to prepare and install these for you.

Once your soil is prepped for grass, it’s time to seed your lawn. Be sure to seed and feed on the same day. If you have issues with weeds, look for turf-building solutions that will help prevent weeds like dandelions and crabgrass. Using these types of solutions will jumpstart your lawn and help it grow quickly. Be sure to water your lawn appropriately. The key is to keep the top inch of soil consistently hydrated, but not soggy. Check with your local nursery or home improvement store for more tips on lawn care.

Now that your lawn is taken care of, now it’s time to choose the correct type of plants and flowers that will work for you and your space. Hanging baskets and planters are an easy way to spruce up your backyard, thinking about the little things like where you would like to keep a small herb garden in a pot or a planter close to the kitchen window. When selecting specific plants and flowers, selecting appropriate colors that appeal to you and complement your space is important. Selecting annuals like million bells and petunias are great because they bloom all summer long. Planting these in the ground with a planter requires low maintenance, it’s not costly, and it is highly recommended by professionals. Another popular trend is hanging baskets. If you have an awning or some coverage over your back deck, hanging planter baskets can be a fresh way to add varying levels of color that either meet or carry the human eye. Hanging flower baskets like this is ideal if you work out a drip system. If you don’t have a drip system, and you aren’t keen on watering overhead, you may want to consider keeping your flowers on the ground or a deck. Hanging ferns can also have the same effect as hanging flowers. If hanging plants and ferns aren’t enough, hanging lights to brighten up your deck at night can add a whole level of atmosphere to your backyard. They are perfect for hosting. If you plan to hang bird feeders (including hummingbirds), it may be good to hang them a few feet away from your deck or patio. here’s no better way to enjoy the warmer months in the Inland Northwest than spending an afternoon or evening outdoors, taking in fresh air and beautiful scenery. And what better way to unwind and spend time with family and friends than enjoying the sounds at one of the many outdoor summer concert series, or taking in the art during a city-wide artwalk, the area has to offer. Over the years, outdoor concerts continue to grow, and the community is loving it. You will find people of all ages enjoying the sounds of local musicians on nearly any given day at area venues.

Thanks to the support of generous area sponsors, outdoor summer concert series have made themselves a staple to the delight of those in attendance. Here’s just a sampling of the music, and art, that abounds over the next several months right here at home. Arbor Crest Wine Cellars is known for more than their awardwinning wines and spectacular views offered at their Cliff House Estate in Spokane. 2022 marks Arbor Crest’s 22nd year of their summer concert series. From the beginning of May through the end of September 29, artists from all over the Pacific Northwest take to the stage to perform. Concerts are held every week on Thursday and Sunday evenings. “With concert admission costs being $8 (Thursdays) and $15 (Sundays), our guests are able to enjoy the music on one of the most beautiful and historic locations that Spokane has to offer, all without breaking the bank!” affirms Kanaan Shawlee, Arbor Crest’s marketing coordinator. “Country, Rock, Indie, Pop, Soul music and more will all be featured throughout this season’s performances.” Concerts are held in the courtyard at the foot of the Historic Cliff House, providing a sweeping view over the Spokane River and Valley. the years, Tyler is proud to have been a part of several changes that have taken place: altering previous city alcohol policy to allow families to enjoy events together without the need of a separate area for drinking; adding the much-needed 3 Phase Power terminals in McEuen Park to allow large production concerts (6,000 capacity) after experiencing a devastating power failure that resulted in an acoustic-only show for Stephen Marley; supporting local nonprofits and providing a substantial economic impact increase to downtown Coeur d’Alene businesses. “Mostly though, I feel proud that we have created a community event that caters to all ages and walks of life to gather on a Wednesday night and enjoy the arts in our beautiful downtown,” smiles Tyler. “Live After 5 is its own identity and has become a destination for thousands of weekly attendees to experience our beautiful park and downtown.” So what are some of the concerts Tyler is most excited to bring to audiences this summer? Fortunate Youth on July 6, Eric Gales on July 13, Pinky & the Floyd on August 24, “and of course the annual Rub Finale on September 7,” he adds. “But honestly, every week features incredible local, regional and/or national acts, and I am looking forward to a great season at Live After 5 Coeur d’Alene! All concerts take place from 5:30 to 9pm, with the gates opening at 4:30pm. A day pass is $15 for ages 13 and older; 12 and younger are free. Please note, some shows will be $20 for ages 13 and older. Live After 5 will also return to Post Falls for a six-week run, which kicked off June 23. These concerts are held on Thursdays in Tullamore Park (at Highway 41 and Poleline).

The Stage of Dreams: IF YOU BUILD IT, THEY WILL COME! Music Conservatory of Sandpoint opens newly renovated Little Carnegie Concert Hall BY JILLIAN CHANDLER

“F

rom the very beginning, we wanted to create a Juilliard of the Wild West,” recalls Karin Wedemeyer, director and co-founder of the Music Conservatory of Sandpoint. “We never lacked ambition nor dreams or imagination, nor desire to work hard no matter what sacrifices it took. Yet, looking back, it also took a good number of miracles for this dream to come to life!” It has been 13 years since the idea of establishing a music conservatory in Sandpoint began. Over a decade ago, the school opened its doors to musical hopefuls, with just a handful of students in the cold back room of a dance studio, in September of 2009. Today, it has grown to be more than anyone could ever have envisioned. Guided with international flair, by German-born opera singer and archeologist, Karin Wedemeyer, along with 24 professional musicians and staff, the Music Conservatory of Sandpoint is poised to take flight. In 2010, MCS moved into the historic landmark at 110 Main Street (formerly the old City Hall and fire station) on the corner of 2nd Avenue in downtown Sandpoint. In 2019, MCS acquired the building, making it their permanent home. “When we came into ownership of this historic building, it was what we had dreamed about and worked on for years. Yet, it was unbelievable to us when it actually happened,” shares Karin. “And now we are on a journey of discovery as we have opened some of its old walls, uncovered its history and found its original rooftop bell. This building has become our best friend, and we are taking care of it with great love.” The conservatory has fulfilled its mission by expanding opportunities for performing arts. MCS classes follow semester-based enrollment and a rich and vibrant Summer Academy, which attracts students from the Inland Northwest and beyond. As an accredited school of performing arts by the Western Association of Schools and Colleges, the staff pays great attention to their curriculum. “Aside from our instructional material, we have shown our innovative side by creating the Music Matters! Symphony—a curriculum that takes a child through early childhood Little Mozart classes, into pre-orchestra and beginning private lessons, all the way to becoming an established musician,” states Karin. “It is a oneof-a-kind set of classes that interlink and give an extraordinary opportunity of skill-building. Since it is grant supported, Music Matters! is highly affordable and accessible.” MCS has two goals and aspirations: first, working to become a leading school in the performing arts with international connections; second, to become a prototype of creative

placemaking and create awareness of the wonderful things the conservatory and its students are capable of doing. MCS’s Little Carnegie Concert Hall officially opened June 3 of this year with a grand gala opening and concerts. The concert hall and its stage allow students, staff, and invited musicians from across the world the opportunity to share their music with the outside world. “Naming our stage the ‘Stage of Dreams’ came to me when I saw students flocking to it the moment the paint was dry. I was not the only one dreaming—everyone was!” Karin smiles. The opening of Little Carnegie will have a significant impact on the conservatory’s many music ensembles, as well as provide ample space for early childhood programming and the first dedicated rehearsal space for the Youth Orchestra and Musical Theater in the school’s history. For Karin, Little Carnegie Concert Hall is the realization of a longheld vision of nurturing a vibrant culture in Sandpoint. “We invite

the community to participate, so that our students can dream up their musical future in Little Carnegie,” she says. “The stage honors that we are not just consumers. We are poets and painters, mathematicians and musicians, and so much more.” MCS’s historic renovation is made possible through the generosity of community partners, the Avista Foundation, Confidence Foundation, Idaho Forest Group, Idaho Pain Clinic, Idaho, Heritage Trust, Laura Moore Cunningham Foundation, and STCU, plus private support. The conservatory’s superlative design, creative and construction team includes Architecture 311.5, Seven Bee Interiors, and Winterhawk Construction, among others. The events calendar is beginning to fill up, according to Karin, but she promises “there will be room for spontaneous music making, theater performances, opera, you name it—you will hear it!” Through the years, MCS has stayed true to its vision, following the path it has led them on. And as Karin affirms, “We are not done!”

022 kicked off with much excitement for Patrick Volkar and TJ Tombari, as they purchased The Culinary Stone from Sandy and Pat Volkar on January 1. This marks a new chapter for the beloved Riverstone establishment, which has become a place for those passionate about all things culinary! Whether you’re shopping for food and wine, kitchen items and specialty cookware and dinnerware, looking to enjoy a quick meal or glass of wine, or attend a cooking class, this is your onestop destination for it all! “Pat, Patrick and myself have been so impressed with the work TJ has done at The Culinary Stone since she joined the store in May of 2021,” shares Sandy. “We are thrilled she has joined Patrick as we pass the ownership baton to the two of them. They make a great team in all ways, and we are excited to see their visions for the store come into fruition this next year!” The pair has secured a consulting firm to assist them in planning for the expansion of the store’s various departments—specifically the Wine Department, The Café and The Deli. “The Wine Department will be expanding as we add more varieties of wines from different regions and in varying price points, with a focus on

increasing the number of wine events we offer,” says TJ. These include Saturday Wine Tastings, an informal yet informative drop-in wine tasting for just $10 per person; Pours & Picks, a wine tasting with a charcuterie offering 4 to 6pm on Wednesdays in The Café; and Wine Pairing Dinners featuring samplings of wines by winery owners, winemakers and winery representatives, hand-selected to pair perfectly with a specially prepared four- to five-course menu by one of The Culinary Stone’s talented chefs. The Café is now serving up coffee from award-winning Caffé D’arte Italia Coffee Roasters. Patrick and TJ are also looking to expand the food offerings and refresh the existing space. “I have turned The Café into a wine bar on Wednesdays, and we are working to transition it into more of a wine and coffee bar,” TJ shares. As of June 2022, the Deli is offering charcuterie and to-go offerings for all of their boating customers looking for gourmet food to take out on the lake. Though there are grab-and-go items, phone-ahead orders are much appreciated. Exciting things are happening at The Culinary Stone in 2022 and beyond, and Patrick and TJ are looking forward to providing and sharing a new chapter, and new experiences, with their customers.

After owning their first restaurant in Hope, more than a decade later Chad and Meggie are excited to be opening their third Sweet Lou’s at the halfway point between their current Ponderay and Coeur d’Alene locations. “Our first five years in Hope were very important to us. Without Hope, we wouldn’t be where we are today,” Meggie explains. “We learned a lot of hard-taught lessons about running a successful business, in a very supportive community.” The Fousts’ Ponderay and Coeur d’Alene locations were opened in buildings that were already constructed, but with their newest location in Athol, which opened April 1 of this year, Chad and Meggie built the restaurant from the ground up. The architecture and design “was inspired by the naval history of Farragut and created by the genius architect Monte Miller of Miller Stauffer Architects in Coeur d’Alene,” Meggie shares. While the interior looks a bit different from its sister locations, guests who’ve experienced a night out at Sweet Lou’s will be treated to a very similar atmosphere, menu, and level of customer service of which they’ve

Consistency is one of the key factors Meggie attributes to their continued success and growth. That and the drive and will of husband Chad. “He never stops,” she affirms. “He’s very wary of being complacent in business, so he’s always thinking of how to improve and how to grow. I’m grateful for his knowledge and his energy.” The Fousts’ goal for the new location was to create an atmosphere where you can enjoy a night out on the town, or just grab a quick bite while catching the game, all while having a great dining experience—and that’s exactly what they’ve accomplished. You’ll find fan favorites like the Tailgate Egg Rolls, Fish and Chips, and 60/40 Burger, and plenty of regional craft beers to complement the great food. It’s also likely you’ll see someone in the Foust family during your meal. “Chad and I both do our best to be in the restaurants, on the floors, as much as possible. It’s the only way to maintain that consistency and know we are doing things the way they are expected.” Since opening their doors this spring, they proved that the anticipation was worth the wait! “We are excited to now be serving the local customer base in the Athol, Bayview and Rathdrum areas,” says Meggie. “We’ve had a lot of support from customers in these areas, and we are pleased to be their neighbors.” Take a seat at Sweet Lou’s. yringa Japanese Café + Sushi Bar celebrated its 16th year in business earlier this year, on April 7, and owners Viljo and Autumn Basso couldn’t be more proud of what they’ve built, and accomplished, since first opening their doors on that cool spring day back in 2006.

“Honestly, it’s hard to remember what that first day was like,” shares Autumn. “We’ve evolved and have seen so many changes in the 16 years we’ve been in business. We are just so grateful that our community has supported our restaurants.”

After the opportunity presented itself to relocate Syringa to a much larger location just north on Fourth Street, the Bassos seized it and have continued to flourish. And with Syringa’s original space now empty, the couple decided to add a third restaurant. This fall will celebrate the third anniversary of the couple’s most recent venture—Monarch Ramen + Noodle House.

With a flair for originality and excellence, Syringa, located in Coeur d’Alene’s midtown, has established itself as a favorite among locals and restaurant destination for visitors. Always delivering the best in sushi and modern American cuisine, they’ve set the bar high and continue to deliver. Viljo uses fresh high-quality ingredients and wonderful flavors in each dish they prepare—and guests can taste the difference. In 2016, the couple was ready for their next endeavor, and The Bluebird - A Midtown Eatery was born. I

t was 1999 when Joe Hamilton, with just one employee, opened Pilgrim’s Market in Coeur d’Alene. The goal was to invest in the local community, with a focus on providing healthy foods and supplements. Today, Pilgrim’s Market has flourished to now occupy an entire city block, with 120 staff members. In addition to the plethora of fresh produce and grocery items, Pilgrim’s produces its own line of fermented foods—The Cultured Mama. “Fermented foods are the traditional way to get probiotics; a very healthy tradition that’s been lost in the modern American diet,” shares Joe. What started with just sauerkraut and a fermented cashew vegetable dip has grown to offer more than 60 different items. They recently added Fermented Cashew Cheesecake to the list, with seasonal offerings utilizing raspberries and strawberries grown in Pilgrim’s organic garden, and huckleberries later in the summer and fall months. Joe recently acquired the vacuum store next door to Pilgrim’s and plans on moving their Cultured Mama fermented foods production space into that building, which sits at approximately 1,300 square feet. Making hundreds of healthy and tasty food items from scratch every day, Pilgrim’s provides an experience and product selection not found anywhere else. They are currently expanding the bakery and bringing in new equipment, with a focus to improve the quality of their breads and expand products, making laminated dough for more fresh-baked options like croissants, pastries and danishes. The one-of-a-kind deli is filled with the healthiest foods available in town. “The reality is it is prepared food that is fresh, fast and healthy, and very affordable for the quality of food we’re producing,” Joe affirms. With a hot bar and organic salad bar, and pre-made grab-and-go meals, enjoy items like the Keto Steak Salad, Salmon Rice Bowl, and Tarragon Chicken Salad. And there’s more, with a grill where items are made fresh to order. If you’re in the mood for a Yak Burger, Veggie Bean Burger or Chicken Chipotle Sandwich, this is the place to go. Behind the store you’ll find Pilgrim’s organic urban farm, which produces thousands of pounds of farm-fresh foods each year. “Anytime a customer sees the GRH (Grown Right Here) logo, they will know that it was grown, or made with items grown, in our organic farm,” says Joe.

ver the years, Turkey-native Raci Erdem has made a name for himself here in the Inland Northwest. Since 1996, he has been dedicated to bringing an unforgettable dining experience to those who take a seat at The White House Grill in Post Falls. Featuring a menu inspired by Mediterranean flavors, combined with his personal flare—and a lot of garlic— diners have continuously shown their support to Raci, his restaurant and the staff.

space showcases an open-kitchen concept, a large bar and two cozy dining rooms. Offering a menu similar to that of The Oval Office, with its delicious and diverse small-plate menu, as well as entrée featuring steak and seafood, and their specialty politically inspired martinis, it’s open and ready to serve customers seven days a week for both lunch and dinner—especially those wanting a taste of The Oval Office while it’s under construction.

Raci is looking forward to the next chapter of The Oval Office and excited to share what he says will be “a healthier restaurant” with the community, featuring a state-of-theart kitchen, a bit more seating (around 60 seats versus the previous 40) and a much larger bar for guests to gather. “It will be much improved,” he says, adding that there will now be three restrooms versus just the one it previously had. hile many frequent the 219 to sip drinks inside one of the Northwest’s most historic and well-preserved bars, summer is a time when visitors and locals alike step outside the bar for some fresh air and fresh tunes. From the early days of back-room poker and a rough-and-tumble crowd to what’s become the go-to spot for live music, “The Niner” is ready for another great season of live music on the patio every Friday and Saturday. “Music this summer will range from Bluegrass, Country, Classic Rock or a full-on Funk party. We really try our best to cover local and regional music selections,” says General Manager Mark Terry. Shaking it on the dance floor will definitely work up a thirst, and the 219 has something for every palate. The taps consist of easy-drinking domestics, and a rotation of Northwest IPAs and other specialty beers. Relationships with distributors also has allowed them to bring in some impressive and rare selections not easily found elsewhere. There are 15 single-malt scotches as well as bourbons from well-known and upand-coming distilleries. “We try really hard to bring in special bottles from Weller and Michter’s, and smallbatch items from Buffalo Trace Distillery,” adds Mark. Summer seasonal drinks are also a fan favorite. You won’t find pre-made or store-bought margarita mix; everything is fresh squeezed including the Huckleberry Mojito in which Mark personally gathers the berries to make his own syrup from its juices. Mark also makes

ginger syrup from shaved organic ginger that adds a nice bite to another house favorite, the Dark ‘n Stormy. “The secret to great cocktails is that every bartender follows the same recipe for our classic cocktails, we exactly measure out our ingredients, no free pouring. Our customers love our classic cocktails and come back for more knowing that they will get a quality cocktail that tastes the same every time, no matter who is bartending,” says owner Mel Dick. The 219 Lounge has been in business continuously since 1937. Over the years the bar has changed with the times, but it’s always been a gathering place for locals and out-of-town guests of all walks of life. A place where people come together to share good times with friends, meet interesting people, listen to great music and have fun. “While we are currently the owners, I really view us as ‘caretakers’ for the bar,” adds Mel. “The real owners are our customers and employees. t’s those beloved restaurant staples that continue to stand the test of time, serving their communities the best in food and service, while maintaining that feeling of “home.” And since 1996, friends and business partners John Grollmus and Brad Fosseen have remained committed to their community, their staff, their patrons—and their friendship. John moved to Spokane with his family in 1974. Having worked in restaurants, he went on to complete the hotel and restaurant management program at Washington State University, was involved in several restaurant openings and found success in the corporate restaurant world. With stops from Colorado to Seattle to San Francisco, the Inland Northwest was calling him home. He headed to Sandpoint before making his way to Coeur d’Alene to join forces with Brad to try and open their own restaurant. Brad was born in Spokane, spending all of his summers in Post Falls on the river. He would leave in 1988 to attend college but returned in 1994. “I’ve always loved this area for all the outdoor activities and beauty of the area. It’s big enough to not be boring—but not too big,” he says. Like John, Brad was drawn to working in the restaurant industry, with a love for the fastpaced environment and making guests feel comfortable and welcome. The pair, who are childhood friends, were working together at a Coeur d’Alene restaurant when they made the decision that it was time to bring their own vision to life. “Our original goal was to own and operate just one restaurant in Coeur d’Alene. You can’t stop evolution though,” says John. They would open Moon Time in 1996, followed by The Elk Public House in Spokane’s South Hill in 1999, The Porch Public House in Hayden Lake in 2003, and Two Seven Public House in Spokane in 2008. 126 126

Their formula for success was to apply all the lessons they learned throughout their restaurant careers to their own place; building on the good experiences and carefully avoiding the negative. Obviously delicious, affordable food served in a comfortable atmosphere and served by genuine, friendly folks is what they have strived for since day one, but what sets them apart is how they go about it.

For John, it’s all about hitting the slopes. “My wife, Kim, and I both love to hike, mountain bike, boat and, more than anything else, ski. Winter is my favorite season, although I enjoy them all. I love the feeling of the cool, crisp air and the way a fresh layer of snow can make everything around you feel new and full of hope.” Kim works as a full-time professional ski patroller, while John works as a backcountry ski cat guide. With a love for community, their employees, their business and the outdoors, John and Brad will continue to be committed to the place, and the people, that make the Inland Northwest home. Two is Better than One LOCAL RESTAURANTS OFFER THE IDEAL SPACE FOR COMMUNITY TO GATHER by JILLIAN CHANDLER

L

aura and Seth Carey have been serving the Kendall Yards neighborhood through their family restaurant, Versalia Pizza (formerly Veraci), since 2014. Over the years, the restaurant has maintained a strong, loyal following as a place for the community to not just grab a bite to eat but to gather and enjoy one another’s company. So, when the right opportunity presented itself to open a second location, the Careys were eager to move forward. “We’re blessed to be able to bring what we’ve established and fostered in Kendall Yards to Liberty Lake,” shares Laura. “Seth and I are very loyal to Liberty Lake because we started at the Liberty Lake Farmers Market with our mobile oven back in 2009 and have long-standing relationships with customers there.” It was at that market where Laura and Seth would meet Joe Frank of Greenstone, who would sell them the idea of opening a restaurant in Liberty Lake. (His father, Jim Frank, had sold the couple on opening their Kendall Yards location.) Already immersed in the community, the location in the River District—next to Orchard Park and in the heart of a residential neighborhood within walking distance,

while still easily accessible to everyone—was an ideal situation for the Careys. Versalia Pizza opened in Liberty Lake in January of 2022. The earthy and bright space seats approximately 50 patrons inside and offers a large seasonal outdoor patio—perfect during the summer and into the fall season. The style of service is a bit different from its Kendall Yards location, as customers place their order at the counter, receive a number, and the staff will bring the food to the guest. Guests will enjoy the same flavorful thin-crust pizza as its sister location, along with a variety of appetizers and salads, brews and wine. They also introduced their Mug Club, with the hope it too would foster community building within the space. And to their surprise, their Mug Club has been a huge success, selling out of mugs within the first few days of introducing it! “The neighborhood has been exceptionally welcoming to us,” shares Laura. They have plans to bring live music to their Liberty Lake patio periodically throughout the summer months for patrons to enjoy. Laura adds, “We’re excited for the Wednesday Night Market in Kendall Yards, running through September, along with more live music coming to the updated Nest in Kendall Yards.” When looking for a cool, inviting atmosphere to sit and enjoy a great meal, Versalia Pizza in Liberty Lake or Kendall Yards is the place to go. “More than anything, we’re a place for community, not just a place to eat,” smiles Laura. ry Fly Distilling is known for its award-winning spirits and canned craft cocktails. It’s also become a pillar in the community when it comes to lending a hand. Dry Fly was recently recognized with a philanthropic award for its work at the onset of the pandemic, delivering 30,000 gallons of donated housemade sanitizer throughout the Inland Northwest. “I will say this about the sanitizer, it was a time of great uncertainty and people were scared. We were uniquely positioned to help, and so that decision was easy, but there is no way we could have pulled it off without all the help we got from the community,” explains Co-Owner Terry Nichols. “It was really a community effort from the great community we live in, and that is why giving back is important to us. This is our home; we care about the people that live here.”

“There is great attention to every detail, from the raw ingredients to the cuts made along the way in the distillation process, to the barrel aging. Everything is done with painstaking care to ensure the highest quality,” affirms Terry. “Our VP of Operations and Head Distiller Patrick Donovan agonizes over every detail; it is what makes him the best at his craft. We are very lucky to have him, and the awards and accolades reinforce that.”

Indeed, Dry Fly supports many community organizations and prefers to keep most donations under the radar so as not to distract from each organization’s mission within the community. The company’s commitment to not just the local community but building a superior product has allowed Dry Fly to grow from “the local distillery” to having a massive regional footprint and being available in 40 states. “There are still 10 states left on the board, but I feel like we are doing a good job of setting the base for future growth,” Terry smiles.

While the expansion of the on-the-go craft cocktail line and the popularity of its well-established products are exciting, settling into a new facility in downtown Spokane is by far the most exciting thing happening at Dry Fly. Now open seven days a week, the new headquarters, located on Riverside Avenue, offer an expanded bottle shop and merchandise area, unique restaurant and bar, and a oneof-a-kind event space. “The event space is the best space in the whole building—awesome views across the production area and a really cool bar,” says Terry. Guests can see the new production line up close, and it is massive in comparison to Dry Fly’s original setup. This allows them to distill much larger quantities, and high-speed bottling and canning equipment is also up and running to meet high demand. While it’s a bigger and faster operation, don’t think for a second that Dry Fly is cutting any corners on quality ingredients and methods.

ou can get a bottle of liquor in just about any flavor these days, from cucumber mint vodka to peanut butter whiskey. Just about every well-known brewer is also expanding into the hard seltzer market with a wide range of tropical citrus flavors and combinations. While these industries battle it out over what’s currently hot in the market, experienced winemakers know that the secret to a good product isn’t anything new and flashy, instead utilizing proven methods, harvesting quality grapes at the appropriate time, and aging wine to each grape’s perfection.

A recent article in Forbes shows wine sales up 16.8 percent in 2021 over 2020, and Americans are on track to drink more than 1.1 billion gallons by the end of 2022. About one in three U.S. adults consumes wine, with higher concentration of wine drinkers in the 50-plus age category. Consumers are also now more willing to step away from the grocery store aisle and purchase higher quality wines directly from the winery. A big reason for this is visitation to the numerous wineries or tasting rooms located all throughout the Northwest. While on property or at a tasting REALNORTHWESTLIVING.COM

In Washington, there are 60,000 acres dedicated to wine grapes, and the state produces the second most wine nationally behind only California. Access to so many vineyards has helped grow the state’s number of wineries from just 200 in 2002, less than 400 in 2012, to a whopping 1,050 in 2022. While much of the grape-growing region is found in South Central Washington, savvy winemakers have opened tasting rooms both on-premise and also in concentrated areas of the state. Popular places to visit and wine taste include: Woodinville to the west, Wenatchee and Leavenworth in the central part of the state, Walla Walla to the south, and Spokane to the east. Each offers dozens of wineries from which to sample and can provide for a wonderful long weekend with friends or loved ones. If you haven’t tasted before, it might be intimidating at first, however, it’s not as formal or stuffy as you might expect. Here are a few things to keep in mind as you sample from our bountiful region:

Cleanse your Palate In order to get the most out of your tasting, avoid strongtasting foods or beverages before you taste. Pairing wines with foods is fun, and many foods can change the flavor of the wine for the better, but lingering bitterness from coffee or spice from lunch fajitas can have a negative effect. The same goes for smells. Use neutral-smelling lotions or cleaners on your body the day of your taste, and also avoid perfumes or other scents that might get mixed in with the aromas of the wine.

Choose a Flight While some wineries offer just one tasting flight, others will offer two—and sometimes a wine club exclusive tasting flight. Typically flights include four to eight 1-ounce to 2-ounce pours and run in the $10 to $15 range at modest wineries and upward of $20 to $30 at higher priced venues. The standard serving size for a glass of wine is 5 ounces, so keep in mind that each tasting is equivalent to a glass or two of wine.

Sip and Savor Your flight will be poured by and attended or marked in a suggested order. Lighter-tasting white wines are usually the leads, followed by medium-body reds and blends. Full-body reds round out your taste. Start by taking in the color of the wine by holding it up to a light. Next, swirl the wine a little and place your nose in the glass. Inhale and gather the unique smells that each wine will produce. Take a sip and let the wine linger in your mouth for a moment. Now comes the fun part: finding the many unique aromas and flavors with each sip. Do you taste something different than what the tasting notes say? Try again and see if you can pick up an additional note. If you don’t care for one of the wines, it is very much acceptable to pour it out into the receptacle at the table, but hopefully with each taste you are discovering something new and enjoyable.

Concluding the Taste After you’ve finished your taste, an attendant will ask if you would like to “revisit” anything (i.e. have another pour of a wine you previously tried). There is almost always no charge for this and is helpful if you are debating on whether to purchase a glass or perhaps a bottle to-go. Most tasting fees are refunded with the purchase of a bottle, however, some require a minimum spend or two-bottle purchase. You are not obligated to purchase a bottle or join a wine club, and paying for just the taste is very much acceptable. Gratuities for staff are always appreciated, however, you don’t need to tip on the bottles you purchase to bring home.

With more than a thousand wineries to choose from, you won’t soon run out of Washington wine in which to explore. Having a few quality bottles on hand for celebrations and holidays adds a nice touch to gatherings, and knowing it was produced regionally adds even more to the celebration. Joined by their daughter Natalie Barnes, they are continuing that mission four decades later. “It’s hard for me to imagine the 40-year mark, since I am only 39 myself,” smiles Natalie. “I grew up in these walls, climbing stacks of wine in the warehouse playing with Barbie dolls, bottling the wine in the summers with my high school and college friends. I can’t imagine my life without the winery in it.”

STAY If you are taking a couple’s getaway, Sandals Grenada is the place to stay. This luxury resort consistently receives excellent reviews with many repeat visitors. It is just a short drive from the airport in St. George’s but feels like a world away when you step onto this beautifully landscaped retreat. Everything is included— even scuba diving. If you are a diver, you will appreciate the Sandals Dive Center with PADI-certified staff and Newton Dive Boats to take you to the incredible dive sites around Grenada. With this being an allinclusive resort, you may find it hard to leave, but with its location it is easy to get into town to explore and experience the local culture. The Mount Cinnamon Resort and Beach Club is nestled among lush landscaping on a hill overlooking the renowned Grande Anse Beach. This lovely boutique hotel welcomes families with children of all ages. During peak season, the resort offers a Montessori Kids Club. You’ll find 37 suites and villas, most with a sitting room and full kitchen. The resort has an exclusive Beach Club with non-motorized water sports. Fort Frederick has more than 250 years of history, and it is the best-preserved European fortress on the island. The views are stunning from this perch where, looking toward the south, you can see St. George’s and Carenage, the horseshoe-shaped inner harbor. Looking to the north you will see mountain ridges and lush vegetation with quaint homes tucked into the mountainsides. Fort Matthew is the largest fort on the island and, at one time, served as an insane asylum. To enjoy the beautiful natural environment of Grenada, take time to visit a national park. Levera National Park is a coastal park with white sand beaches, lagoons, and the largest mangrove swamps in Grenada. Take a hike on the trail that loops around a 23-acre pond. During the summer months, book a nighttime tour to watch endangered leatherback sea turtle hatchlings work their way to the ocean. Grand Etang National Park is in the central portion of Grenada. The entire park is a pristine tropical rainforest with gushing waterfalls, Grand Etang Lake, and Mt. Qua Qua. This is the place to go if you like to hike. The hike to the top of Mt. Qua Qua is family friendly and worth the effort for the epic views of Grand Etang Lake, St. George’s and the coast of Grenada. 154

On an island known as the "Spice Island," agri-tourism is a must. The Belmont Estate is an authentic 17th century plantation that is about an hour outside of St. George’s in St. Patrick. The plantation is fully functional and allows guests to visit, participate and learn where their food comes from. Tours include visits to the organic farm and cocoa processing facilities. You can stroll through the lush gardens and enjoy the lovely surroundings. Learn about traditional rural life by visiting the goat dairy farm. A great way to experience a variety of local favorites is to take a Savor the Spice Tour. You will head out on foot to discover Grenada’s culinary secrets by visiting hidden gems you won’t find in the guidebooks. The tour features eight bites and sips. During your walk you will discover Grenada’s history and culture, and its impact on local cuisine. You’ll also learn about the island’s spices. Brian Benjamin, known as Chef BB, was born in Grenada and serves up delicious local dishes at BB’s Crabback Caribbean Restaurant overlooking St. George’s Harbor. BB is famed for two dishes: his Crabback, which is so good he named the restaurant for it, and his Signature Curried Goat. The Crabback, a local dish, is like a crab Swiss. BB sautés fresh local crabmeat and mixes it with a cheesy white wine cream sauce and herbs, then serves it in a crab shell. Divine! Produce for the restaurant comes from his family garden, and many of his dishes are named after his children and other family members. Well worth a stop, with many visitors eating here more than once during their stay. La Plywood is the epitome of a Caribbean beach bar. It sits right on the beach and has a tropical feel with its turquoise-colored walls. It is located at Morne Rouge Beach—or, as the locals call it, BBC. This darling bar is famed for its Blue Light Gin on tap, which is made locally. The friendly staff also serve up a limited menu of fish sandwiches, fish tacos, smash burgers (a double patty cheesy delight) and Grenadian fries. This is the casual type of place you can come right out of the water and plop down on the wooden deck to enjoy a cocktail. Sunsets are legendary, and La Plywood is hugely popular with both locals and tourists. So, what are you waiting for? It’s time to pack your bags and plan a trip to explore Grenada, the Spice Island.

INGREDIENTS 3-4 lbs. pork shoulder 2 tbsp. olive oil 1 large onion, quartered 3 cloves of garlic 2 large navel oranges 1 lime 1 cup chicken broth 1 tbsp. chili powder 1 tsp. cumin 1 tsp. oregano 1 bay leaf salt and pepper to taste

1. Cut the pork shoulder into large chunks (about 3 in.). Season with salt and pepper. Heat a large pan and add olive oil. Brown the pork in small batches. 2. Using a vegetable peeler, peel 4 to 5 strips of rind off the oranges and 3 strips off the lime. Juice the oranges and lime. 3. Place pork, citrus juices, peels and spices in a slow cooker with chicken broth and onion. 4. Cook on high for 4 to 5 hours or low for 8 hours, until the pork is fork tender. Discard bay leaf. 5. Turn the oven on to broil. Pull the pork into large chunks and place in a single layer on a large cooking sheet. Spoon a little bit of juice on top. Broil 4 to 5 minutes or until crisp. Stir and add a little bit more broth. Broil an additional 5 minutes. 6. Spoon juices from the slow cooker over the pork. 7. Serve in corn tortillas with your favorite toppings. 1. Heat the grill to medium heat, approximately 375˚F. 2. Cut your peaches in half and pit them. 3. Brush the cut halves with oil, then set them cut side down on the grill. 4.
