t was this time last year that we rebranded as REAL Northwest Living, and we are pleased to share that our biannual publication continues to be the number one distributed and picked-up magazine across the entire Inland Northwest! Featuring lifestyle, dining, entertainment, real estate, beauty and so much more, REAL Northwest Living can be found throughout the Inland Northwest, from Spokane to Sandpoint, Bonners Ferry to the Canadian border—and everywhere in between! Showcasing all that is wonderful in our own slice of heaven, it’s no wonder why we’re seeing an influx of people moving here like never before! They are coming here for the same reasons we chose to make this place home—the mountains, trees, lakes and rivers; the small-town values and kindness found within our growing communities; the arts, music and entertainment; and the creative and inspiring culinary scene, with wineries, breweries and distilleries continuing to expand. of the last territories given statehood, pioneers, entrepreneurs, homesteaders and fortune seekers were making their mark in Washington and Idaho well before they became states number 42 and number 43 on November 11, 1889, and July 3, 1890, respectively. Some came to stake claim to the fertile farming lands, while others heard tales of vast riches to be found buried within the Silver Valley. Spokane was a boom with train traffic, as goods from the Pacific were sent back east, and people from the east continued to move west and branch out. While some boomtowns have all but vanished and other cities have moved from working class to main street business and catering to tourism, remnants of the days of mining, logging, rail and industrial factories remain all around us. With so much immense change happening across the Inland Northwest, it would have been easy to level many of these old structures and make way for shiny new buildings. Instead, conscious community members, local leaders, businesses and organizations have remained steadfast in keeping these important signs of our past ever present in our communities.

There might be no better example of this than the town of Wallace. In fact, the entire town is on the National Historic Register. Founded in the mid-1880s, its location nestled in the Bitterroot Mountains was used extensively for logging and expanded greatly with the discovery of precious metals in what was soon to be known as the Silver Valley. Like all “Gold Rush” stories, few made it ultra rich, but the craze brought people from all around—at the time creating one of the most ethnically diverse areas in the West. A stroll through downtown Wallace today is like living through history. Everything from the courthouse to the saloons has been preserved much as they were since the day they were erected. One of the last remnants of the Wild West was the Oasis Bordello, which didn’t close until 1988—the last legal bordello in the country to do so outside of Nevada. Today, the Oasis is a museum and was left exactly

as it was on the day it was closed. Visitors get a firsthand look at how working girls conducted business here, and learn how this was just one of many similar bordellos that littered the streets during Wallace’s heyday. The Northern Pacific Depot Building also stands tall today and provides a look into what life was like for your average rail worker and track layer. Rail played a key role in moving both harvested timber and precious metal out of the valley. Many original tracks have been paved over, in some cases becoming recreational bike paths. Over Moon Pass is the small town of Avery, Idaho. It’s hard to believe more than 5,000 people once lived in the tiny valley, which now has less than 100 residents. Avery was a major railroad hub but

today caters more as a fly fishing locale and pit stop for those picking up camping supplies before heading to their spot along the St. Joe River. Here you can hop aboard a once-functioning train car, which includes a cramped kitchen and many photos of the old rail yard. Murray, Idaho, carries a similar feel. Another boomtown that saw its population dry up considerably once the rush for silver slowed. The Bedroom Goldmine Bar is a wonderfully preserved building that now functions as a bar and restaurant. Its namesake perfectly encapsulates what it was used for, as you can still see the owner’s original bedroom and the hole in which he was digging for gold directly below it. While not encompassing the entire town, a large portion of downtown Sandpoint, including Cedar and Main streets and 1st and 2nd avenues, is also listed under the National Register of Historic Places. In 2018, the number of buildings on the register expanded. The Panida Theater was built in 1927 and still provides a wide range of entertainment while maintaining its decades-old charm. Today, The Hive is one of the Northwest’s favorite live music venues, but that wasn’t always the case. The building it’s housed in at 207 North First Avenue was once a notorious gambling hall. Longtime Sandpoint locals can also recall when it was the Pastime Sports Shop and Pastime Café. The Sandpoint Historic Preservation Commission has constructed a wonderful self-guided walking tour packet that’s available in print and digitally. In it you can see which buildings housed general stores, financial establishments, libraries, dentists and even brothels. While there are many fascinating buildings in greater Coeur d’Alene, there’s a particular house that’s stood for well over 100 years and has an impressive list of former residents. The Hamilton House, at 627 Government Way, is now the Music Conservatory of Coeur d’Alene. According to its owners, the building was constructed in 1908 for the second mayor of

Coeur d’Alene, Boyd Hamilton. An Idaho Supreme Court Justice and county prosecutor once lived here, as did several prominent opera singers, drummers and vocalists of the 1920s and 1930s. The home was actually designated for demolition in 2019, before the conservatory, with the help and support of those in the community, pushed back and eventually purchased the home, keeping the music going for yet another generation of artists. Just a block from the center point of downtown Coeur d’Alene, at Fourth and Lakeside, another long-standing building was saved from demolition and is now an integral part of town again. The Wiggett Building has stood for more than 90 years and is coming to life once again. The building served many purposes over time, with its beginnings as a Montgomery Ward in the late 1920s. It sat empty from 2006 until a renovation began in 2018. The sidewalk level now contains a bakeshop selling coffee and yummy treats. The upper levels are still being updated and once completed will be functioning offices with a mixture of current design trends and homage to the building’s past. The Wiggett Building now contains elevators as well as a fitness room with lockers and showers. Another fun stop is the visit to the old downtown of Westwood, or as it is known today, Rathdrum. The original Kootenai County Jail, built in 1892, still stands. It functioned as a jail up until 1908 and has since been used as a library, maintenance shop, and even as City Hall. Today it serves as a museum. Westwood Brewing has become the new local hangout and place to go for dinner since opening in 2016. It sits in a building built in 1897 that was originally known as Hart Hall. The building served as both a private bank 34

Spokane became the greatest urban hub

and a hardware store. A massive fire destroyed two city blocks in 1924, but the Hart building survived. Diners can still see burned sections of the building, now almost 125 years old. While there was money to be made in the woods, not everyone wanted to live in the wilderness. To this end, Spokane became the urban hub of the greater Inland Northwest. It served as a starting point for newcomers to the region, and a place of commerce and trade. It continued to thrive, eventually landing Expo ’74, which attracted more than 5 million visitors to the area. After a downturn, Spokane has roared back to life over the past 20 years, and many buildings that have stood for a century or more serve a new purpose today. The Davenport Hotel housed dignitaries, movie stars and the well to do before falling into disrepair for much of the 20th century. The painstaking process of bringing one of the centerpieces of downtown back to its former glory has helped set off a wave of renovations all across greater Spokane. One of the original—and still most iconic repurposed projects—is the Steam Plant. The facility once powered all of downtown but today houses several businesses and well as a restaurant and brewpub. Working gears and control panels are found throughout the space, and you can even peek up inside one of the 225-foot smokestacks. 36

A more recent renovation was done on the Washington Cracker Company building, found in the Northeast section of downtown adjacent to the railroad tracks. Workers labored in this factory for decades making biscuits and other sweets. After sitting vacant, it’s now become one of the more popular hubs in downtown. In the basement you will find Hogwash Whiskey Den, a lowly lit cocktail bar with a speakeasy vibe and rare spirits. On the main floor is Inland Pacific Kitchen, which features a wideopen room and open kitchen where you can watch the chefs prepare your meal. A tasting room for Overbluff Cellars is also found here adjacent to Terrain Spokane, which operates as a galley, performing arts space, as well as wedding or private event space. With trains continuing to run just a few feet from the building, it’s a very unique experience no matter where you go.

Some in Spokane achieved great wealth, as evidenced by the many massive homes found along Manito Boulevard, Sumner Drive and Cliff Drive. While most are private residences, you’ll find homes you can still tour east of downtown in Browne’s Addition. The Campbell House is located adjacent to the Northwest Museum of Arts and Culture (MAC). Inside you can see preserved formal dining and entertaining spaces, the kitchen, as well as servants’ quarters. One of Spokane’s oldest and most celebrated homes will also soon be opening up more to the public. The 12,000-square-foot Patsy Clark Mansion was recently sold, and while the top floors will remain business offices, the new owners plan on opening the lower level more to the community. Initial plans would allow the first floor to be used for weddings, charitable events and holiday parties.

Finally, what’s more fun than finding vintage goods in one of Spokane’s oldest neighborhoods? If you’re in search of bits of history or unique finds, you can head into historic Hillyard in search of one-of-a-kind antiques and memorabilia. After the turn of the 20th century, you would find workers here assembling and repairing trains for the BNSF. Hillyard didn’t actually become part of the city of Spokane until 1924. While industry is long gone, many of the original buildings remain. Today you’ll find coffee shops, markets, and several antiques and vintage goods stores.

T

his summer is all about relishing moments with friends and family, and bringing that feeling of coziness, comfort and joy to the inside and outside of your home no matter the occasion. Particularly after the difficulties of the past year and a half, we’re ready to live each moment to its fullest in a way that goes beyond mere possessions and mindless distractions.

For inspiration on how to live this summer mindfully, taking extra care to make moments sweet, intentional and oh so full of peace and joy, we look to a Danish concept for inspiration that’s been taking the world by storm over the past few years: Hygge. Hygge (pronounced HOO-gah) is the Danish word for cozy, but it embodies so much more. Originally from Norwegian and old Nordic dialect meaning to seek protection, refuge and shelter from the outside elements, the word was adopted into the Danish language in the 18th century, and it’s become an intrinsic value and practice of the Danish people.

Hygge can be that feeling of ease when you’re someplace comforting; it can be enjoying a moment like that first cup of coffee in the morning or a laugh with a close friend, or it can be a gathering of close friends over food and drinks. It means different things to different people, but at its heart is a feeling of being home, of comfort, warmth, happiness and ... coziness. Even in summer, Hygge is a big part of daily life in Denmark, and Americans are starting to catch on too. Here’s how you can make your summer a bit more hyggelig, courtesy of the Danes.

Keep it simple. The Danes know how to keep things simple and tidy; even their furniture and design concepts are minimalistic, ergonomic and convey a sense of calm. Having a clean, tidy space you can relax and enjoy is conducive to a cozy environment to welcome family and friends or enjoy some time alone. Don’t overdue your space; focus on things that make it welcoming and restful, and add a few small touches here and there to make it a peaceful oasis you can enjoy all summer long.

ENVIRONMENT

Lighten the mood. That’s where lighting comes in. It might sound silly, but lighting is a big part of creating that hygge moment and space. It adds depth, comfort, beauty and relaxation, and can completely transform any indoor or outdoor space. Candles are an easy way to add lighting, but also think about lamps, natural sources of light, and even some outdoor additions like a fire pit or tiki torches. But keep the light calm and natural. Fluorescent brightness isn’t a great way to set the mood.

At its core, the concept of Hygge is about enjoying the moment, and so much of that feeling of comfort comes from your surroundings and space—even more than we know. While you’re getting into the spirit of adding some hygge to your life, look to how you can set up the ideal environment right at home.

Add some green to your space. No, not in the paint sense, we’re talking about adding some plants. Particularly here in the Inland Northwest during the summer, it’s time to embrace the green, lush blooms we’ve missed all winter. Add some indoor and outdoor plants to your space to create a calm, beautiful environment that’s as great for entertaining as it is to relax and have that perfect cup of lemonade in the middle of a summer day. You can even take the “green” concept one step further and find some additional ways you can be more environmentally friendly in your household this summer, whether it be doing away with toxic cleaners and chemicals, or starting to save scraps for your garden mulch. Make it personal. One of the keys to hygge is living in the moment and enjoying the simple things in life. HABITS Because hygge is as much a practice or experience as it is about your surrounding environment, there are certain habits or perspectives that are central to the concept. They are things we’ve heard before, but sometimes in the midst of the summer business and whirlwind, they go by the wayside. Here are some helpful ways you can slow down this summer and live in the moment. Be present. Right at the heart of hygge is the concept of being present in the moment. When people talk about hygge, they are referring to gatherings or moments of enjoyment that are focused on that particular moment, and not clouded by what’s been or what is to come. Even if it’s just a small moment, if you make a point to enjoy it simply as it is, without rushing it or clouding it with the stress of what you have to do the rest of the day, you’ll learn to slow down and enjoy the small things in life.

Make a point to enjoy it simply as it is, slow down and enjoy the small things in life. Be intentional. Intentionality goes right along with being present in the moment. Take the time to be intentional, whether it is with the friends and family in your life, or simply in the way you spend your time. Take the time to make a cup of coffee in that mug you love and enjoy it in a beautiful space before you start your day; or invite a friend over for lunch, and be intentional about spending undistracted time together. This extends to how you host or plan the night. Be intentional about creating a welcoming space that makes enjoying the night even that much easier, but don’t go running around trying to make everything perfect while your guests or family are together. Part of being intentional and in the moment is being there. Plan ahead, and when the time comes, relax and enjoy. Disconnect. These days, we are all attached to our mobile devices, ready at a moment’s notice to respond to that text, call or email. This summer, make an active choice to disconnect for those hygge moments. If you’re having friends over for backyard drinks, or having a family game night together, turn the phones off, or leave them in another room. This goes for video games and other electronics as well. Hygge is a feeling of togetherness in the moment, not watching a movie or talking on your phone while you’re trying to relax with your family. Along these same lines, make a decision to leave topics that cause division or heightened emotions for another time. There are plenty of opportunities to talk about politics, religion or that argument you had the other night, but perhaps that relaxing gathering with your closest friends to reconnect is not that time. If hygge is about enjoying the 58

moment and a sense of being at home, then a debate, no matter how well-meaning or polite, isn’t part of the menu. Make it a daily habit. Hygge doesn’t have to be a big affair or throwing a dinner party; it is simply part of every day. Make a point to set aside moments each day to disconnect, relax and soak up the moment. It could be with an iced tea in the garden, reading a book in a quiet nook, playing games outside with the kids, cooking with your loved one, or even just relaxing after dinner together with a glass of wine. Set aside time to enjoy moments with close friends and family that are intentional and fun, whether it be outside dinner parties, barbecues, afternoon tea or a summer cocktail hour, but then also make time for the daily things that we often take for granted, but that bring so much joy into our lives. Go out for a walk without your phone, stop to enjoy breakfast and coffee solo or with someone you love, or take an extra 20 minutes and soak up the sun while you catch up on that magazine you haven’t had a chance to read. Whatever your summer hygge moments look like, take the time to relish them to the fullest, and make intentionality and beauty a part of your every day.

Combining a love of

WOOD & MUSIC Inland Northwest musician creates beautifully crafted instruments By Jillian Chandler

G

rowing up in the Missouri Ozarks, Edward Byler began woodworking with his father from a young age, and when it comes to his fine craftsmanship with wood today, he follows his heritage. “My father worked as a carpenter, and my grandfather built furniture,” Edward says.

The close-knit family also had a love for making music. Developing his skills in the carpentry business with his father and brothers, paired with the love of music fostered in him throughout his childhood, inspired Edward to unite those woodworking skills with his passion for music—and he began to build his own musical instruments. As a teenager, he crafted a banjo, followed by a hammered dulcimer and then a guitar. A true artist, Edward was also afforded the opportunity to take painting lessons during his youth, and he received training in art and sculpture by the late Dennis Anderson. It was 30 years ago that Edward, his parents and brothers moved to Bonners Ferry, Idaho. “We loved the west—and in particular North Idaho,” he smiles. Today, you will find Edward carefully crafting violins and violas as a luthier at Edward Byler Violins, which he introduced to the community—and musicians across the globe—in 2013. It is here where his senses of sight, sound and touch come to life through the elements of wood and string, uniting his love of music and wood craftsmanship to create beautiful violins with world-class tone. “My goal is not to build quantity as much as it is to build them with personality,” affirms Edward. He makes his own purfling and cuts the channel by hand, giving each instrument a more organic appeal. He cooks his own varnish and pigments in the attempt to have them look as much like the colors on the old Italian instruments as possible. “I build mostly del Gesu model violins and am impressed by the humanity that shows through the originals by the tool marks and wear they’ve gotten over the centuries.” More recently, in addition to the del Gesu model violins he is known for, Edward has focused on making Amatis; each handcrafted violin is built with undeniable love of his craft. “My wife and family have been huge supporters of my passion, and God has given me the ambition and the talent to rise above the challenges and stay focused,” says Edward. “I have also been very fortunate to have my friend, and world-class violin maker, Ryan Soltis, teach me everything from construction and varnish to tonal adjustments in the final setup of the violin.” Edward has attended the Acoustic Workshop at Oberlin College and is a member of The Violin Society of America. Over the last few years he has won numerous gold and silver medals for tone and workmanship at the SVA and VMAAI competitions.

T

he sun is shining, the outdoors is beckoning, and live music is back! 2020 brought with it many challenges, but one thing we all missed was the fun of letting go at a summer concert series while enjoying the best the Inland Northwest has to offer in live music. From the yearly music series and festivals we wait for with bated breath to last-minute enjoyment of some live music at our favorite winery or brewery, last year put a halt to many of our live music pursuits, but this year promises to make up for the loss. From Spokane to Coeur d’Alene and Sandpoint, the festivals, series and intimate live music events we love are back, and we won’t soon take them for granted again. The health of attendees, workers and performers is still a central concern, but a return to a bit more normalcy means we can take out the blankets and chairs, grab our friends and family, and head out to enjoy summer the way we know best: with some great artists and the sounds of summer. So, whether you want to go all out and attend a regionally and internationally recognized music festival, or are looking to keep it more intimate and small with an outdoor weekly summer music series or even a performance at one of the local hot spots, here is what the Inland Northwest is tuning up for this summer season.

es, you heard correctly, summer music festivals are back! Though a bit different than in years past, they’re still as fun and full of the artists we’ve missed. These are the big once-a-year events you can’t miss, so mark them on your calendars, and don’t forget to get tickets before they sell out—space may be more limited than in previous years.

The VOLUME Inlander Music Festival is expected to return to Spokane this year. Set at various locations across downtown over a weekend, the summer festival is a music mecca for all, featuring up-and-coming performers from around the area as well as iconic Northwest bands. Stay up to date on expected festival dates as well as a lineup by visiting Volume.Inlander.com or following @volumespokane on Facebook. Like in 2019, a festival pass should get you into all participating venues to experience the different bands, but keep in mind things are subject to change depending on city and state health precautions. Music performances are slowly returning to the Spokane Arena, with performances from headliners like the Backstreet Boys. Just across the state line, the music will be flowing the weekend of July 9 through 11 at both the Post Falls Festival at Q’emiln Park on the Spokane River, and the Stateline Summer Jam at Cruisers Bar and Grill. The Post Falls Festival will feature live music from local bands, food vendors, a craft fair, beer garden and movie night in the park during the three-day festival, while the Stateline Summer Jam on July 10 will include a host of local rock, metal, country and other bands from the Spokane area and North Idaho. Later in July, Hayden Days will be taking over Hayden and Coeur d’Alene the weekend of July 23 and 24 with live music, dancing, food and craft vendors, and a parade and car show that will provide fun for the whole family. The free event is essential North Idaho summer, with local community spirit and family centered fun that harkens back to old-fashioned times.

SANDPOINT SANDPOINT SANDPOINT SANDPOINT The Festival at Sandpoint is back this year after being canceled last year, and it promises to deliver all of the fun, excitement and great music that fans from around the area—and even country—have come to expect. The eight-day festival will take place at the newly redone Memorial Field July 29 through August 8, with a range of eclectic music and artists from all over the country, many of them leading names in the industry. Grab a chair or blanket, bring some goodies—BYOB is allowed—and settle in for a night (or eight) of pure enjoyment. Food and drink vendors will be back, with a slightly new format this year. You can order your goodies (including merch) from the app whenever you’re ready, or even in advance, and you’ll be notified when it’s ready to pick up. The Sandpoint SummerFest is expected to return this year. Northern Quest’s Outdoor Summer Concert series are back throughout the summer. Spokane is home to some incredible music talent, and some great bars, restaurants, wineries and breweries that host them. The pandemic slowed things down and canceled live music for a time, but places are slowly getting up and running. Wander Spokane’s downtown and surrounding neighborhoods, and you’re likely to find some local favorites, like Mootsy’s, a chill neighborhood bar that often plays host to some great bands and offers good beers and cocktails. Zola is the place to be when it comes to live music, good food, great drinks and a fantastic atmosphere. For a larger venue, the Knitting Factory Spokane hosts a variety of concerts throughout the year, and is attached to an adults-only restaurant. BridgePress Cellars on West Pacific Avenue plays host to a collection of live concerts over the summer, and you can sip on some of their delightful wines while you soak up the tunes. If you’re in the mood for more instrumental and classical music, the Martin Woldson Theater at the Fox is the permanent home of the Spokane Symphony, and hosts their regular performances in addition to other special music events. These are just a few of the many hot spots for live music in Spokane, so take some time to explore and find your own favorite spot. Just keep in mind things are opening at different paces, and depending on health conditions and local rules, certain places may not be offering live music.

Walk the charming Lake City’s downtown and you’ll be hard put to find a good spot that’s not hosting live music. From the NYC Piano Bar’s dueling pianos and colorful performances to local watering holes Moose Lounge and Iron Horse, there's a lot of fun to be had, often without charge (or just a small cover). Many of the local winery tasting rooms also bring live music in over the weekend, so stop in Cork & Tap, Coeur d’Alene Cellars and other places to toast some whites or reds and enjoy some relaxing tunes. Downstairs of Honey Eatery you’ll find the Social Club, ready with delicious cocktails and usually playing host to live music on the weekends (and even some weeknights). If you’re looking for a more elegant and romantic atmosphere, Seasons of Coeur d’Alene and Beverly’s will often have live music on the weekends to accompany a delicious dinner and drinks. For those looking for a more broadway-esque night, Coeur d’Alene Summer Theatre features some of the most beloved musicals throughout its summer season, and is a fun and entertaining way to spend an evening out.

You can easily hop between the several local favorite spots for music in the intimate downtown, and you’ll find a different style of music at each place. Over the weekends, live bands grace the stages of Pend d’Oreille Winery, MickDuffs’ Beer Hall, Eichardt’s Pub and more. For a hidden gem, wander down to the Back Door below Baxter’s and enjoy live music multiple nights a week accompanied by a great wine and beer list and jovial company. The 219 is Sandpoint’s oldest bar and often features live bands over the weekends for a late-night spot to hit up. Looking for weeknight tunes? Eichardt’s hosts Monday Night Blues Jam every week to help stave off the weekday blues.

Whether you’re seeking fun and sun on the water, a relaxing day on the links, a challenging hike in the deep woods, or something even more off the beaten path, there are near endless options. Check out some of these can’t-miss summer favorites and enjoy being outside this summer in this wonderful place we call home!

BEACHES HARRISON, IDAHO People find this small town of less than 1,000 residents via scenic drive, boat or bicycle, and the city’s small beach is the main summer gathering point at the sound end of Lake Coeur d’Alene. Boaters can tie up in the marina for up to 72 hours, and there are tent and RV camp spots adjacent to the beach as well. Its location on the Trail of the Coeur d’Alene’s bike path makes it a quick cool-off for cyclists. It creates for a unique mix of families, motorcyclists, bicyclists and overnight boaters, all seeking a relaxing day on the water.

CITY BEACH, SANDPOINT It’s tough to find a more picturesque view than that of City Beach in the heart of downtown Sandpoint. The peaceful, shallow waters with striking mountain backdrop will instantly set you at ease. There is plenty of beach to spread out across the 22-acre park, which also includes tennis, volleyball and basketball courts, picnic benches, a boat launch and playground. After a beach day, it’s an easy stroll into Sandpoint for a bite to eat or afternoon beverage.

SUNSPOT AT YAP-KEEHN-UM BEACH, COEUR D’ALENE Better known to most as the beach at North Idaho College, a simple stroll west along the shoreline from Coeur d'Alene City Park, you’ll find more space to stretch out as well as a few opportunities to get out and paddle the lake. North Idaho College rents various craft right on the beach. From Memorial through Labor Day, you can rent sailboats, one- and twoperson kayaks, canoes and stand-up paddleboards. Walk down far enough and you’ll see where the Spokane River begins its journey. Mature trees provide plenty of shade, and there are many picnic benches to enjoy.

CAMPING & HIKING REVETT & BLOSSOM LAKES If you are relatively new to backpack camping, these sites are a great place to start. The hike into Revett Lake is 2 miles each way or, for a bit longer trip, climb to Blossom Lake—a 6-mile round trip. Both are located on the Idaho/Montana border near Thompson Pass, and those not wanting to spend the night should be able to complete a day hike in a few hours. Both trails are wide, well marked and offer gradual upward slopes. Keep an eye out for huckleberries when in season. Several primitive campsites are available along the lake. On your way back, stop in the one-time boomtown of Murray for a look back at the area’s mining history. REALNORTHWESTLIVING.COM

KALISPELL ISLAND, BARTOO ISLAND Instead of pulling up the RV or hiking into your campsite, why not arrive by water? Whether by boat, canoe or kayak, there are several fun and unique locations on Priest Lake, accessible only by water. Bartoo Island is 219 acres and includes 25 campsites each with a fire ring and picnic table. Another popular location is Kalispell Island, which is a 3.5-mile boat or paddle up to the Upper Priest Lake Scenic Area. There are 52 campsites on this island. There are no showers or toilets, but toilet buckets are available for checkout at the Kalispell Island boat launch. Reservations can be made through Recreation.gov.

RIVERSIDE STATE PARK While it’s just a few miles from the bustle of downtown Spokane, you can feel worlds away exploring the more than 9,000 acres that is Riverside State Park. Within its boundaries you’ll find miles of hiking and mountain biking trails. Paddle your way down the Spokane and Little Spokane River or cast a line from shore. Off-road enthusiasts can enjoy 600 designated acres of terrain, and horseback riders have 25 miles of trail in which to ride and explore. There is a designated equestrian campsite with 21 spots and corrals, as well as three other campgrounds—the most popular being at Bowl and Pitcher. Book early!

LIBERTY LAKE LOOP While many go to Liberty Lake State Park for the beach, to paddle or have a picnic, local hikers know that there is also an excellent trail to be found at the south end of the lake. The roughly 8-mile loop begins at the park and offers several different routes. All routes connect and circle back, so there is no need to worry about getting lost. In all you’ll gain about 1,500 feet in elevation but will be treated to views that are stunning, especially considering how close you are to downtown Spokane. A $2 entry fee is charged during summer months.

SCOTCHMAN PEAK While it is one of the more intimidating hikes in the region, the view from the tallest point in Bonner County just can’t be replicated. Trail #65 is about 4 miles long with 3,700 feet of elevation gain as you climb to the top of 7,009-foot Scotchman Peak. Forest quickly gives way to busted rock and steep climbs, but the trail is well maintained due to its popularity with mountain enthusiasts. Your legs will be on fire at the top, but the rewarding view of Lake Pend Oreille and the Cabinet Mountains will make it all worth it. You might even see a family of mountain goats that have long called the area home.


Guided Fly Fishing & Float Trips The Kootenai River is a hidden gem for fishermen in North Idaho and is a classic dry fly fishery. This classic large river holds many species of fish and is best fished from a drift boat.

GOLF COURSES THE IDAHO CLUB Boasting Idaho’s only Jack Nicklaus Signature Design course, the Idaho Club’s 18 holes take full advantage of the surrounding beauty of the area. The course, located in Sandpoint, Idaho, flows naturally with the Pack River, so water is found all throughout the course. Tucked in a valley, the surrounding forests are also striking. You won’t find homes or structures of any kind lining these fairways in Worley, Idaho. Instead the course utilizes all aspects of nature across its 620 acres. EMERALD CREEK GARNET AREA What do India and the Idaho Panhandle have in common? They are the only two places in the world you will find the unique Star Garnet gem. You can channel your inner miner and search for these 12-sided crystals at the Emerald Creek Garnet area in the Idaho Panhandle National Forest. There are two sluice boxes in which you can process material. Garnets range in size from tiny particles to golf balls. The site is run by the U.S. Forest Service and, as of this writing, permits and advanced reservations are required. It’s truly a unique experience the whole family will enjoy.

ZIPLINE If you’d like to get a taste of nature but aren’t in the mood for a strenuous hike, you can get a unique view by gliding high up in the trees at one of the area’s zipline courses. Mica Moon offers a nine zip package that also includes a line that’s 3,500 feet long! The property near Liberty Lake, Washington, also has an aerial park in which you can rise high up in the trees and cross rickety bridges, tight ropes and other fun obstacles. In Coeur d’Alene, Timberline Adventures offers several zip tours, two sky-high suspension bridges, and a lunch in a tree house 30 feet up in the air.

RIDE THE HIAWATHA There are many wonderful bike trails in the Inland Northwest, but there are few that can match both the beauty and ease of the Hiawatha Trail. The 15-mile stretch near Lookout Pass follows an old railroad route. In fact, riders go over seven train trestles and through 10 tunnels, including the more than mile-and-a-half-long St. Paul Pass tunnel. The route is paved, with occasional packed gravel, and nearly all downhill with a shuttle available to take you back to the top, making it friendly for all level of rider. The sweeping views of the Bitterroot Mountains can’t be beat.

ften times with acute injuries, like a fall, it is easy to know that the injury is serious. However, other times, it may be more difficult to identify whether an injury is something to worry about or not. How do you know when that constant irritation might be a signal of something worse? Certain symptoms may indicate that other, more serious, problems are present, and it is important that you understand the warning signs and when to seek professional help. As we find ourselves engaging in more activities during the summer months, which can increase our chances of injury, here are some important signs and symptoms, whether you are an athlete or outdoor enthusiast, to watch for: Pain. If you have persistent pain that is not really going away with rest. If you have pain when you touch an area whether it is muscle, joint or bone, it could be serious. If you have pain that is getting worse instead of better, then you need to see your health-care provider.

YOUR Swelling. If you have a great deal of swelling in an area, and the swelling does not subside with ice, elevation, compression and rest. If the swelling increases with joint movements and activity, then this is a signal for you to have it assessed. Loss of Motion at a Joint. If a joint feels stiff, like it doesn’t want to move, has a sharp, throbbing pain when you try to use it, and it lasts more than 48 hours, you need to see your medical doctor. Weakness. Muscles and joints that feel like they want to “give way” when you try to use them is a sure sign that something is not right with either the muscles, joints or both. You should be symmetrical on both arms and legs. If one side can do the motion and the other side is unable to do it, then something is wrong and needs to be looked at by a professional.

Numbness and Tingling. If you ever have any numbness and tingling associated with any injury, this is a sign that a nerve has be compromised. This needs to be assessed by you MD. Numbness and tingling is not normal and needs to be dealt with quickly as not to damage the nerve.

Talk

Loss of Mobility. Any loss of mobility, whether in muscles or other soft tissue, is a signal something is not right. An old scar from surgery may be too tight, and when you started training or becoming more active it hurt and made other tissue painful. Loss of Balance. Any unusual, unexplained loss of balance during your daily activities or training needs to be discussed with your doctor if it does not subside. You should be able to stand on one leg for three minutes if you train regularly. Many of us, whether athletes or not, sometimes tend to push our bodies too hard and do not listen to the warning signs that our body is talking to us about. That back pain that happens every day on our drive to work; that shoulder that is so stiff you can’t put your arm behind your back; and that foot that swells every day after standing at work. Many times, more serious issues can be avoided if we just listen and decide to be proactive. Start with the easy care first like rest, ice, compression and elevation. If the body does not respond, then seek the attention of your physical therapist. They are movement specialists; it’s what they do every day. They can screen you and help to determine if you have a more serious injury. If multiple symptoms listed above are affecting you, and you are unable to participate in your daily life, gym or sports, please call to schedule an appointment with your MD. You want to quickly resolve issues before they cause more problems.

T

he combination of a beautiful location, warm atmosphere, delicious food and friendly professional service makes Forty-One South a destination for both locals and tourists. Located in Sagle, Idaho, just south of the Long Bridge, and housed next to the Lodge at Sandpoint, owner Cassandra Cayson is honored to be able to serve guests a truly unmatched dining experience unlike anywhere else in North Idaho.

“I am proud that Forty-One South is considered a ‘Sandpoint Staple’ now,” she smiles. “After many years of turnover ownership, it was not expected that we would make it past two years.” 2020 marked Forty-One South’s 10th anniversary, “And we are looking forward to the next 10!” Cassandra shares. Cassandra is joined by Head Chef Michael Dabrowski, who brings his deep passion for food and knowledge of various cuisines to the table. Raised in Sandpoint, Michael fell in love with food creations as a young child. After attending the Seattle Culinary Academy and putting in years of hands-on kitchen work, including working with Chef Tom Douglas in Seattle, Michael returned to Sandpoint to continue his culinary career, joining Forty-One South in 2017. Though they provide four seasonal menus throughout the year, many of the items remain on the menu year-round, such as the Caramelized Goat Cheese appetizer, the Stone Harbor Crab Bisque and the Smoked Filet. “About 50 percent of our menu changes, which allows us to work with ingredients and preparations that are appropriate for each season,” says Cassandra. “We also make all of our desserts in-house including Carrot Cake, Southern-Style Bread Pudding and Flourless Chocolate Torte, to name a few.” The cuisine is complemented by a full bar and extensive wine list. If you’re undecided on what libation to indulge in, Cassandra recommends the Handmade Whiskey Sour or the Pend Oreille Sunset Martini. The wine list has more than 100 selections covering a large spectrum of varietals, regions and price ranges, with a strong influence from the Northwest. They also feature some of the amazing beers and wines from local Sandpoint purveyors. The restaurant can accommodate approximately 70 guests in the main dining room, not including the bar/lounge and their private dining room—the perfect space for private groups up to 18 guests. During the summer months and when weather permits, the expansive outdoor patio can seat 150 patrons! From in-house table service to takeout orders and custom family meals to-go, Cassandra and her team ensure you a memorable meal, no matter where, or how, you choose to enjoy it. Cassandra attributes the continued success of Forty-One South over the past decade to her staff for their support, understanding and their continuous efforts, and to the Sandpoint community. “I think that is one of the best things about being in a small town—you never feel like you are just another business on a list.” Dinner is served daily from 4:30 to 9pm (though hours are subject to change), with reservations strongly encouraged. CHAPTER SET TO BEGIN

Local restaurateur excited for his next endeavor By Jillian Chandler

I

t was 2009 when Café Trinity began to outgrow its space on Sandpoint’s First Avenue, which turned out to be ideal timing for the restaurant and its owners, as the lease was soon set to expire. And as fate would have it, an incredible location in the heart of City Beach became available—and Trinity at City Beach was born. “City Beach is one of Sandpoint’s greatest, most underutilized assets in our community,” says Justin Dick, owner of Trinity at City Beach. “It’s been an amazing ride to serve the locals, tourists and, in some cases, the wildlife, and play host to some of the most memorable gatherings and nonprofit events.”

The new—emphasis on new—restaurant will be a great relief to Justin and his team, as everything will be new! New floor. New kitchen. New equipment. New bar. “I’ve been putting band-aids on mortal wounds for the better part of six years at Trinity in anticipation of the building teardown—and I’m out of bandaids,” he reflects.

In September 2022 (originally scheduled for September 2021), the Best Western, in which Trinity at City Beach currently resides, is set to be torn down. Though this will end one chapter of the Dicks’ legacy, it has prompted the start of a new chapter. Justin and wife Shaunavee recently purchased the 113 Main Street location in downtown Sandpoint, which will be home to a new restaurant.

Justin and Shaunavee are dedicated to creating a dining destination that will appeal to everyone. “Our favorite part of having Trinity at City Beach is the wide reach of customers we have served from all walks of life and backgrounds, locals and tourists, and the many newcomers to the area,” smiles Justin. “We aim to have inclusive food and beverage services for everyone; the overall experience will be defined by the customer, not us. “We learned many years back that the customers will help refine your services, but ultimately, we are responsible for providing great service and the highest quality products at affordable prices.”

Guests can expect a space that is warm, cozy, open and inviting, with a touch of rustic and modern. The restaurant will seat between 75 and 80 guests and will include ample bar seating as well as outdoor dining.

While Trinity will remain open (and is set to return to City Beach once the hotel rebuilds), they are moving forward with their new eatery, and it will open as a separate concept to its sister restaurant; the name still yet to be determined. Nearly everything on the menu will be fresh and new; that is, until they absorb Trinity once it closes its kitchen for the final time. What will remain the same is much of the staff, according to Justin. “We have an unbelievable opportunity to cross-train staff among both locations and move staff freely between the two restaurants as events pop up and business volume changes for each locale.”

t was 1996. The Coeur d’Alene dining scene was wanting, and two friends stepped up to fill a void. That’s how it all began, when John Grollmus and Brad Fosseen sought out to open their first restaurant— and soon after, Moon Time was born. The menu, from the start, has featured creative and upscale pub food, made to order from scratch, bringing a variety of items from many different cultures together. The food is paired with 19 carefully selected beer handles and a wide variety of wines, chosen specifically to complement the fare. Since day one, Moon Time has provided the community a warm and comfortable atmosphere where guests feel at home and are provided an exceptional experience— every time. Twenty-five years later, their philosophy has never wavered, and Moon Time continues to provide their guests with familiar faces, great service, a comfortable atmosphere, and great food and drink at a reasonable price. Hayden Lake can be found just north of Coeur d’Alene, and this small town has been dishing up some big flavors since the debut of The Porch Public House in 2003. Since opening its doors 18 years ago, The Porch has earned the distinct reputation as “Hayden Lake’s gathering place,” and John and Brad could not be prouder to be able to continue to offer a retreat for the community to relax and enjoy a wonderful meal out.

It was a quarter century ago that Raci Erdem, a native of Turkey, first brought the flavors of the Mediterranean to North Idaho. andpoint’s “hometown bar,” the 219 is ready to celebrate this summer after a very difficult year. “Overcoming the pandemic has probably been the single biggest challenge bars have faced since the days of prohibition,” explains 219 owner Mel Dick. His team had to close its doors on several occasions—and the music that is the lifeblood of the historic bar was also put on hold. Now, they’re just ready to get back to what the 219 does best: great drinks and great music. Beginning over the Fourth of July weekend, the 219 will be featuring live bands on the patio (weather permitting) every Saturday evening and some additional Fridays as well. If the weather pushes the music inside, fans won’t miss a beat while tapping their toes to a state-ofthe-art sound system inside. “We love to feature local and regional musicians,” says Mark Terry, manager. “We really work hard to line up music that everyone can get into.” That range includes everything from high-energy funk to classic rock and roll and bluegrass. By October, the 219 will have been in continuous operation for 87 years—with the exception of a brief period during 1936 and 1937, when the original bar, The Old Bohemia Club, was reconstructed on the site

due to a fire. “In fact, as you look up at the massive beams in the bar, you can still see the charring from the fire,” says Mel. Over the last several years, Mel says the “Niner” has evolved from a smoke-filled dive bar to a non-smoking venue serving great classic cocktails, craft beers and wine in a fun-filled atmosphere that everyone enjoys. During the daytime you’ll also find a “Cheers” type atmosphere. “Our regulars discuss everything from local happenings to solving the world’s problems. The crowd at night is playing pool or listening to music while enjoying a great rotating craft beer or cocktail,” he adds. This summer, try the flagship margarita, old fashion, or choose from a great selection of rare bourbons. Another favorite is the huckleberry mojito, as the mint is grown on the outdoor patio, and Mark picks the berries himself from his secret spot. Either way, make it a point to visit one of the Northwest’s longest running—and still standing—watering holes. “We are a historic hometown bar that has evolved over the years, where everyone is welcome and feels comfortable having a good time at the ‘Niner,’” shares Mel. 219 N. or the past 12 years, Veraci Pizza had been a staple in the Spokane community. Throughout the years, the restaurant has evolved, and when the time came to renegotiate their agreement with the Seattle-based trademark brand, owners Laura and Seth Carey decided it was time to move forward to expand under their own brand—and Versalia Pizza was born in February 2021. “We’ve been pleasantly surprised with how well the transition has gone. The only complaint that we’ve heard is that people don’t know how to pronounce our new name,” Laura laughs. Guests will partake in the same experience as before and find their favorite items—with the addition of some new musttry menu choices. To complement the award-winning pizza, guests will be treated to appetizers like the Caprese Plate, Antipasto, Garlic and Herb Flatbread, a variety of salads and mouth-watering house-made desserts. “Our food menu has something for everyone,” Laura says. “Many people come for the salads when they’re not craving pizzas, and we’ve added vegan cheese as well as a vegan pizza to expand our offerings to more customers!” With a drink menu that changes seasonally, patrons will find the ideal concoction perfect for a warm summer evening out on the restaurant’s patio. eing the first post-prohibition craft distillery in Washington gave Dry Fly Distilling owner’s Don Poffenroth and Terry Nichols a head start on what is now a booming industry. Still, both knew they had to create a superior product in order to keep customers coming back and to continue to expand. As evidenced by its new home, Dry Fly is atop the minds of spirit drinkers—not just in the Northwest, but across the entire country. After adding New Jersey, Pennsylvania and Maine to their goal of eventually distributing to all 50 states, the fly fishing buddies are now more excited than ever to open the doors to a new experience for their customers. “The new facility brings together so many things that we need: increased capacity, the ability to lay down more whiskey, as well as offering Spokane a really cool gathering place downtown. I think I am most excited to see the looks on people’s faces when they see the place for the first time, says Terry. The new 24,000-square-foot facility, located in the Spokesman-Review’s previous printing operations building, will increase the production capacity from 20,000-proof gallons to 75,000, with the ability to expand even further in the future. The distillery will start with four 650-gallon fermenters but can house as many as 10, along with an additional column still. The bigger space will allow the bottling line to be optimized at 1,000 bottles per hour and increase the canning capacity of the very popular On the Fly cocktails from 40 cans a minute to 100. Once the new distillery is fully operational, Dry Fly will go from 16 to 35 employees. The new 70-seat restaurant will pay homage to Spokane’s history and include imagery of the distillery’s namesake. There will also be a separate tasting room and gift shop, as well as an event space, and the state-of-theart kitchen will allow chefs to exercise their creativity. “There will be a focus on developing a variety of tasty small plates to complement happy hour, as well as some handhelds and entrees. We will incorporate some of our spirits and the gin botanicals into unique dishes as well,” explains Terry. Dry Fly is also seeing its On the Fly canned craft cocktails continue to gain in popularity. While there are plenty of mild or nearly flavorless hard seltzers on the market, Dry Fly’s line is not to be confused as a seltzer but a true craft cocktail you can take “on the fly.” “Premium Dry Fly spirits, fresh juices and cocktail syrups, all-natural ingredients that actually taste good, and we focused on flavor first,” says Terry. “I mean, we use real 100 percent Idaho huckleberry syrup in our Huckleberry Lemonade. Who does that? Nobody, because it is too expensive, but you taste that drink and you are glad we did!” Be on the lookout for a new gin-based Greyhound in stores this summer. Dry Fly will also be releasing a Huckleberry Vodka, and a few more special bottles to commemorate its new home. Stop by the new location and prepare to be wowed!

stablished in 1982 by husband and wife Mike and Ellena Conway, Latah Creek Wine Cellars has been pouring excellence into each glass and continues to bring affordable, award-winning wines to the Inland Northwest. Joined by their daughter Natalie Barnes, they are continuing that mission 39 harvests later. Wine lovers have continued to enjoy sipping wines while visiting with friends and neighbors in the beautifully remodeled tasting room and gift shop at Latah Creek Wine Cellars in Spokane Valley, Washington. The open space, which can comfortably accommodate patrons and easily adhere to social distancing rules, has become a gathering place to relax and taste. As winemaker Natalie says, “We love that people can have a wonderful place to sit and sip our wine, while being able to see all of our fabulous gifts at the same time.” Currently at the winery, you will find nearly 20 wines that are available for tasting, by the glass or bottle purchase. They are excited to once again be offering wine tastings, in which you can enjoy five tastes of your choice for just $5! “We have a few 2020 vintage wines that we are so excited for!” shares Natalie. Latah Creek’s Orange Moscato was released in January after their one-year supply sold out in less than eight months. They released their small-lot 2020 Chenin Blanc the end of March, which was followed by their Gold Medal winning 2019 Pinot Gris in April. “One of the most anticipated releases was our Sangria, which was released on May 1. This is a limited time available wine that sells out every year!” says Natalie. “Oh, and I can’t forget our 2020 Maywine!” Bottled in late March, it was released in mid-April. “We have been sold out of this wine for over six months, and we weren’t sure if we were going to be able to make it again,” she explains. “But we were able to find a source for the woodruff herbs used to make this wine (we had been unsuccessful at finding them since 2018).” The gift shop, which is a labor of love for Ellena, is truly unique, offering many gift and gourmet food items that can’t be found anywhere else! “We love sending customers home with gift baskets that will make them shine,” smiles Natalie. Natalie joined her father in the family business of winemaking in 2004, and her passion for her craft continues to grow with each season. She is grateful to be able to do what she loves while working alongside her parents. “When working with your family, there is a closeness that you can’t get on your own,” she says. “We love sharing wine with one another.” With two daughters of her own, Natalie looks forward to passing down her love and appreciation of food and wine to the next generation. “I hope that I can have the same experience with them as I am having with my parents and being able to work alongside them.” You won’t want to miss Latah Creek Wine Cellars’ 39th Anniversary Celebration, which will take place mid-July at the winery. 13030 E. ith summer upon us, it is time for a road trip. Texas is so huge that the best way to do this road trip is to fly into a city near the areas you want to visit. For this trip we are flying Alaska Airlines from either Spokane or Seattle to Austin, Texas, and renting a car. This journey will take us through the Texas Hill Country with visits to Austin and Waco, then down to the South Texas Plains and San Antonio. The Gulf Coast Region and South Padre Island will allow some beach time before heading back north to the charming town of Victoria. Then it’s back to Austin for the flight home.

SAN ANTONIO

Make Austin your base for a few days. The city is known for its many parks and outdoor spaces, as well as being the Live Music Capital of the World. There is something for history lovers, foodies, outdoor enthusiasts, music buffs and so much more. Start your visit at the official Austin Visitor Center & Gift Shop on Fourth Street. They offer Downtown Guided Walking Tours, and you can also book a variety of activities and attractions right at the center. It also has a great gift shop. There is so much to see and do in Austin; it can be overwhelming. So, take the time before you arrive to look at all the city has to offer and pick your favorites.

San Antonio is a city rich in history and a melting-pot culture with diverse influences from Mexican, Tejano, German, Irish, Czechoslovakian and many more. The Alamo and the San Antonio Missions National Historical Park are a UNESCO World Heritage Site. This site comprises the five Catholic Missions established along the San Antonio River and represents the largest concentration of Spanish colonial missions in North America. You can drive to the individual sites or rent bikes through the San Antonio Bike Share and ride along the Mission Reach Trail. With more than 65 docking station and over 575 bikes, this is a great way to get around the area.

South Congress Avenue has a funky vibe with shops and great places to eat. Kids will love the circus-themed Big Top Candy Shop, which is like the Disney World of candy. For a fun sightseeing tour, take an Austin Duck Adventure in an amphibious vehicle that will tour the city, and then drive right into Lake Austin for a boat ride. In the evening, check out one of Austin’s kid-friendly outdoor concert venues like Guero’s Taco Bar and Oak Garden. Enjoy great food and live music at this famed destination.

The city is one of two U.S. cities designated a UNESCO Creative City of Gastronomy, and there is some amazing food. The best way to enjoy the dining scene is at a riverfront café on San Antonio’s worldrenowned River Walk. This 15-mile urban waterway sits tucked below street level and can be accessed just steps away from the Alamo. You can explore either side on the walking path or take a Go RIO river barge for a guided tour. Go RIO also offers river shuttles that will take you to the area known as the Museum Reach. From there you

CORPUS CHRISTI - THE GULF COAST CAPITOL Plan to rent a beach house on Padre Island, known as “the Island” by locals. The Padre Island National Seashore is the longest undeveloped stretch of barrier island in the world. Explore miles of white, sandy beaches with windswept dunes and unobstructed views. Truly beautiful and such a great way to relax. On this portion of your road trip, take some time to slow down and don’t overschedule. Check out Doc’s Seafood and Steak Restaurant for great food, live music and the most photographed sunset in Corpus Christi. There are a variety of attractions and museums in the area. The USS Lexington Museum is a vintage World War II aircraft carrier that also served as a training ship for scores of Navy Pilots. VICTORIA The darling town of Victoria is one of the oldest cities in Texas. Immerse yourself in history by taking the Explore Victoria Texas History Trail. Learn

more about the area at the Museum of the Coastal Bend, which details 13,000 years of history. Add in the Old Victoria Driving Tour, featuring over 80 homes and properties. You can even visit a historic place to eat. Fossati’s Delicatessen was established in 1882 and is still owned and run by the original family. You’ll be treated to great sandwiches, soups and daily specials all in a building on the National Register of Historic Places. Head out of town to Goliad, home to the Presidio La Bahia, and one of the world’s finest examples of a Spanish frontier fort. It played a significant role in Texas history. A fun excursion is to rent a kayak and explore the 25-mile-long Victoria Paddling Trail along the slowmoving Guadalupe River; perfect for all levels of paddlers. Plan to finish up near the PumpHouse Riverside Restaurant and Bar set in a historic location with great food. Waco is so much more than just the T V show.

WACO Most people know Waco from Chip and Joanna Gaines home improvement show, HGTV’s “Fixer Upper.” Due to its popularity, the Waco Convention & Visitors Bureau created the self-guided Magnolia Trail. There are also local companies that give tours to see some of the homes featured on the show. If you can’t get enough, you can rent one of the three homes renovated by the Gaines and offered as vacation rentals. Waco is so much more than just the TV show. There is a lovely historic district and a vibrant downtown area. One of the most unique attractions in the area is the Waco Mammoth National Monument, where the remains of 25 mammoths can be found. Tour the dig shelter, with its suspended walkway that provides a stunning view of the mammoths. HOMEMADE STRAWBERRY ICE CREAM INGREDIENTS

4 cups fresh strawberries 2 tsp. fresh lemon juice 5 organic eggs, whipped 4 cups heavy whipping cream 13.5 oz. can full fat coconut cream 1/2 cup Swerve confectioners sweetener 2 tsp. vanilla 1/2 tsp. Himalayan salt

METHOD

• Remove stems from strawberries and cut into quarters. Place strawberries in a large bowl and add lemon juice. Using a fork, mash strawberries until chunky and juice has extracted from berries. Set aside. • In a blender, blend eggs until mixed, about 10 seconds. Add whipping cream, coconut milk, sweetener, vanilla and salt. Blend another 10 seconds. • Pour mixture into an ice cream maker and stir in strawberries. Freeze according to the ice cream machine’s manufacturer’s directions. When the ice cream is firm, place in a freezersafe container and chill for 3 to 4 hours before serving. Enjoy!

Blueberry Lemon Zucchini Bread METHOD

INGREDIENTS

For the Bread: I cup almond flour 1/4 cup whey protein powder 1/4 cup coconut flour 1 tbsp. baking powder 1/3 cup melted butter 1/3 cup Lakanto brand sweetener 1/3 cup sour cream

2 eggs 1 tbsp. lemon extract zest of one lemon 1 cup shredded zucchini 1 cup fresh blueberries For the Glaze: 1/2 cup Swerve confectioners sweetener 2 tbsp. coconut or almond milk

For the Bread: • Preheat oven to 325˚F. Line a 1.5-quart loaf pan with parchment paper and lightly butter parchment. • In a medium size bowl sift almond flour, whey protein, coconut flour and baking soda. Ensure there are no lumps. • In a separate medium bowl, beat melted butter, sweetener, sour cream, eggs and lemon extract. Stir in lemon zest. Pour mixture into the dry ingredients and mix until combined. Mix in zucchini and blueberries. • Pour mixture into prepared loaf pan and bake for 50 to 60 minutes or until a toothpick inserted in the center of the bread comes out clean. Allow bread to cool. For the Glaze: • In a small bowl, mix confectioners sweetener and milk until no clumps appear. Pour glaze over the top of the bread. 164 164

4 - 6 mint leaves 1 lime wedge 1/8 cup fresh or frozen huckleberries 1 small slice jalapeño, seeds removed (for more heat, add the seeds) 1/2 tsp. Swerve confectioners sweetener 2 oz. vodka 4 oz. club soda

METHOD

• In a 10-oz. drinking glass of your choice, muddle mint leaves, lime, huckleberries, jalapeño and sweetener until pulverized. • Add vodka, ice and club soda. Stir. • For garnish, add a slice of jalapeño and huckleberries.

Triple Berry Chicken Summer Salad with Balsamic Dressing INGREDIENTS

For the Chicken: 1 tbsp. avocado oil 2 medium chicken breasts, about 4 oz. each salt and pepper For the Salad: 1 container (5 oz.) baby spring mix lettuce

1 medium avocado, sliced 1/2 cup fresh blueberries 1/2 cup fresh raspberries 1/2 cup fresh strawberries, sliced 1/4 cup red onion, sliced thin 1/4 cup raw sunflower seeds 1/4 cup almonds, sliced 1/2 cup feta cheese

For the Dressing: 4 tbsp. olive oil 2 tbsp. balsamic vinegar 1 tbsp. brown mustard salt and pepper

METHOD

• In a medium saucepan over medium heat, add oil. Salt and pepper both sides of the chicken breasts and add to the pan. Cook until golden brown, about 5 minutes. Flip chicken over and cook the other side until golden brown or cooked through, about 5 to 7 minutes. Remove chicken from the pan and set aside to cool. • Using two large plates or one big platter, lay out mixed greens and top with remaining salad ingredients. Slice chicken breasts and place on salad. • In a mason jar, add dressing ingredients. Screw lid on mason jar and shake dressing until completely combined. Pour dressing over salad and serve immediately.

FINAL THOUGHTS A

s you may know, REAL Northwest Living is a biannual publication, and I am tasked with writing my final thoughts every six months, which feels like six weeks (you know the feeling). This go-around feels no different, but something has changed in these short six months—something major.

From Bonners Ferry to Spokane and everywhere in between, people have finally stopped talking about moving here and actually did it, and they came all at once! People often want to know my opinions and have asked me why here and why now? And I say the same thing: It’s simply a combination of things. They are fed up with big-city politics, taxes, home prices and, of course, COVID. Yes, COVID has changed the way we work as video/email/phone are all replacing the face-to-face time we used so prominently in the past. Add this to an underdeveloped, beautiful area; low taxes; small, accessible government; and some of the nicest, friendliest people around. The Inland Northwest just became one of the hottest real estate markets in the country! As our population soars locally, we all need to be reminded that this area is still underdeveloped and undermanned. We don’t have the infrastructure or manpower to handle the sudden surge of new residents, so let us all try to show extra patience and kindness as we go about our day.
