Business SPOTLIGHT

Useful Goods & Gifts

Organic Bistro & Espresso

Under the Sun

“It is quickly becoming more of a business than a hobby though,” she adds referencing the popularity of the coffee.

By Patty Hutchens

Walk into Under the Sun in downtown Bonners Ferry, and you may not leave for quite awhile. With the unique home décor, gifts, jewelry, and local crafts, this whimsical, charming and fun store certainly does carry just about everything under the sun! Shelly and Jack Yount opened the store in May 2006, and operate it with the help of two of their three daughters, Kendall Cady and Kynsie Pauls. “We are a very family oriented business, and we treat all of our employees as if they are family,” said Shelly, who has called Bonners Ferry home since she was six years old. “In turn the customers always comment how they love how it feels like home here.” And just like home, customers can enjoy a wonderful meal in the store’s organic bistro that includes a full organic espresso bar, smoothies and gelato. They have a full lunch menu where the soup, sandwiches, salads, pies and cake are all made from scratch. “We always use organic and natural ingredients and, whenever possible, local products,” said Shelly. Jack, who has lived in Bonners Ferry his whole life and who has worked as a self-employed logger, does the roasting of the coffee at Under the Sun. “Jack is our in-house roaster with Red Rooster Coffee Co.,” said Shelly.

Perhaps just as unique as the gifts and home décor at Under the Sun is the building in which it is housed. “This building holds a lot of good memories for a lot of Bonners Ferry locals who remember it as the Lindsay-Helmer Hardware Store,” said Shelly. “We received a lot of support for having kept all the original character of the building. The store really wouldn’t be what it is without this building.” The couple has three daughters and three grandchildren. In addition to working at the store, something that Shelly said is more like a hobby than a job, they both enjoy fishing, hunting and hiking. Shelly, Jack and their entire staff are committed to the community of Bonners Ferry beyond the walls of Under the Sun. “We donate our time to the Domestic Violence & Crisis Hotline Fashion Show every year and also donate to as many local charitable functions as possible,” said Shelly. The couple credits their success to many factors, including hard work and a true passion for what they do. “We love our job and we have such great support from our loyal customers,” said Shelly. Whether it is looking for great gift ideas, shopping for some new home décor or just a tasty and healthy homemade lunch out, Under the Sun will provide you with all that and more!

ver 600 spaghetti dinners were sold in a joint band-choir fundraiser concert held at Boundary County Middle School October 23, 2013. Choir students from Valley View Elementary School, Boundary Middle School, and Bonners Ferry High School alternated choral performances with numbers played by BCMS and BFHS band students. Well over one hundred students participated in the performances. Band teacher Jessica Hanna has been involved with this sort of concert Photo by Paula Petesch before when she taught at Homedale. Choir teacher David Carpenter was thrilled at the opportunity, giving it a hearty “thumbs up.” Students reveled at the opportunity to listen to each other and participate together. BFHS student Samantha Barradale said, “It was fun to have both band and choir join together because normally our concerts are separate. We got to see each other perform.”

The fundraiser event is part of an ongoing effort to provide enriching music opportunities for band and choir students. For instance, the BCMS band is attending the Gathering of the Bands at North Idaho College on Wednesday, Nov. 13. Hanna and Carpenter plan on taking students to Music in the Parks at Silverwood Theme Park in the spring, a competition that involves schools from throughout the region. Long term, Hanna would like band

students to be able to attend the Heritage Music Festival in Seattle, an event in which she participated when she taught at Homedale. The Heritage Festival provides adjudicated competition and crosscultural enrichment. Hanna and Carpenter, as well as the many students with whom they work, are looking forward enthusiastically to the events of the coming year. Said sophomore Bri Copeland, “The theatrical arts students are working on something big, extraordinary, and new, and you’ll see it soon!”

Boys’ Soccer Team Has Successful Season By Paul Bonnell | Reporting by Desi Minor and Brandon Newsom

T

he Bonners Ferry High School Badger boys’ soccer team won the District 1 tournament handily following a 6-0 league record during the fall season.

Said Coach Ed Moe, “We capped our league season with a 5-1 victory over St. Maries at St. Maries. It’s a tough place to score like that, and we headed into Districts on that momentum.” Moe noted that the season has been a good one. It started off well, although the quality of play declined a bit mid-season. After the slump, however, there was a rebound in effort and quality, and subsequently, great hopes for success in the future. Said Moe, “We played well in our defeat to Sandpoint, a solid 4A-size school.” The team garnered numerous compliments after this challenging game, and moreover, they learned from the experience. Moe emphasized the growth process in the team. They developed tenacity and pulled off reverses, a difficult feat. “We played far better

against St. Georges of Spokane the second time we faced them.” A few weeks ago, the Badgers secured a remarkable comeback win at home over the Libby Loggers. “We were down 3-1 and came back to win 5-4,” said Moe. Moe was pleased with the team growth during the season. “We had a talented team this year. We all played well on the field and developed a strong sense of cohesion and teamwork.”

Although wins did not materialize as hoped during the State tournament, the Badgers played well, illustrating their collective team strengths. Said senior Oscar Lopez, a captain, “We played really well even though we didn’t score like we wanted to. I feel good about our performance. We were competitive.” Photo by Ed Moe

d Moe was the Bonners Ferry High School boys’ soccer assistant coach for two years prior to becoming the head coach in 2009 succeeding Wayne Wilkerson. Moe has been involved with soccer for decades, playing since he was only seven years old. The sport has been a family activity for three generations. Moe was coached by his father in Tacoma, and both of his sons, Aaron and Evan, played soccer for the Badgers. When not coaching, Ed Moe works as a planting preparation manager for Hancock Forest Management. During his free time, Moe enjoys golfing, hiking, soccer, basketball, and being outdoors.

For the Lady Badgers, Jill Alexander ended on a high note, finishing 38th in 3A cross country with a time of 23:55. Amanda Bauer finished her first season with a strong performance at the state meet, finishing in 26:48. Sophomore Hannah Lysne and junior Jordan Merz paced each other, coming in at 27:25 and 27:37 respectively. The girls capped off an impressive season. This fall they went from barely having enough runners to field a team to competing at state. Coaches are proud of all the girls who worked hard all season long and finished their season crossing the line in Idaho Falls. Senior Luke Reoch in his final cross country race ran a gutsy 18:19 for a 22nd place finish, just missing taking a spot on the podium by 6 seconds. Tucker Cavender came in at 20:09 to wrap up his best season yet. Cavender is already looking forward to next season. First year runner Nolan Stidham crossed the finish at 20:43. Louis Balcaen ran at 21:35 and fellow sophomore Alva Swanson finished in 22:14. Freshman Eric Ellis was right on Swanson’s heels with a 22:15. The boys also had a great season. They battled through adversity and pulled together a great team effort at Districts to send them to State. The team was fun-loving and hard-working, rallying together and challenging themselves to accomplish their goal. Senior Luke Reoch finished his high school cross country career with a solid race in Idaho Falls and a season full of great memories. He, his teammates, and his coaches will not soon forget the year two Badger cross-country teams went to state.

Zero Robotics/Spheres Worldwide Competition Trey Dufrene combines passion for programming with real life experience By Paul Bonnell | Reporting by Desi Minor and Brandon Newsom

“A

ttention to all teams: A comet headed toward Earth threatens humanity’s very existence!” Thus opens the September 7, 2013 letter by Dr. Alvar Saenz-Otero, the Massachusetts Institute of Technology SPHERES Lead Scientist. Across the world, students such as Bonners Ferry High School junior Trey Dufrene took on the challenges of programming satellites to compete in Zero Robotics/SPHERES. According to the “Game Play” outlines from MIT, “Matches will be played between two SPHERES satellites, controlled by code written by two different teams/alliances. Each team attempts to redirect the path of an incoming comet from its home base.” The competition begins in simulation and “mimics the operational volume available aboard the International Space Station, where the 3D finals will be conducted in January 2014.” Dufrene’s programming

expertise has earned him entry into the semifinal rounds, a significant accomplishment as he has faced competition from over 400 high school programmers (140 teams) from the United States and Europe. He will now work with two other teams from Texas and New Jersey in an alliance against the other top winners. The top teams of this round will see their code and strategy played out on the International Space Station. Dufrene has been involved in the BFHS Zero and First robotics programs for all three of his years at the high school. He has augmented a personal interest in gaming and programming with invaluable realworld experience—collaborating with MIT aerospace researchers, meeting NASA astronauts, traveling to MIT, conducting high-level problem solving, and working with local adult mentors such as retired BFHS math teacher Carrick Remaley. Said Dufrene of Remaley, “He’s pretty much a

Photo Courtesy of the Katzes genius. When I started, a majority of the math was over my head, but he has brought me up to speed. His mentorship has been enlightening.” BFHS science teacher and robotics mentor Ed Katz said, “It’s wonderful to see a student take the initiative to participate in a oncein-a-lifetime opportunity. His enthusiasm, resourcefulness, independence, and hard work will serve him well in whatever career path he chooses. I am very grateful to Mr. Remaley for lending his expertise and time to help Trey.”

Shop|Local Bonners Ferry Why Shop Local?

made locally, you are helping reduce pollution from shipping and help reduce congestion and sprawl.

It’s holiday shopping season, and that means the promise of deals, deals, deals! National retailers are ramping up the TV commercials, newspaper inserts, radio spots, and tweeting out deals and sale announcements to their loyal fans. Americans spend billions of dollars from now through the end of the year on gifts, travel, and dining, and thousands of businesses are competing for your coveted dollar. While it might be easiest to choose a large box store and get as much done in one trip as possible, Living Local would like you to consider the benefits of shopping with your local small businesses. We realize that it’s not always possible to get everything you need or want from local retailers, but by supporting these businesses, you are not only helping out your friends and neighbors, but you are investing in your community.

While many corporations sponsor large non-profit organizations such as the Red Cross and American Cancer Society, it is small businesses that help fund a little league soccer team, community anti-drug campaign, local cancer organizations and care for our local seniors. According to the organization Sustainable Connections, non-profits receive an average 250% more support from small business owners than they do from large businesses.

Small business is what drives the local economy. Numerous studies have shown the majority of small business owners purchase goods and services from other small businesses in their area, keeping more dollars in the local community. These dollars are reinvested in the hiring of local workers, which in turn are more likely to reinvest their income into local businesses as well. Instead of seasonal employment, strong local businesses are able to offer good paying jobs and promote from within as their business expands. Many shoppers don’t consider the environmental impact of shopping online or at large retailers. By purchasing products

Perhaps the best part about supporting small business is the vast amount of unique choices you have. Our area is blessed with a creative blend of artists and entrepreneurs. You can pick up locally roasted coffee, handmade chocolates, infused olive-oils and incredible baked goods. You can have a custom leather belt made, a piece of furniture created from timber harvested in our area or unique clothing made just down the road. As you browse through the next few pages, we encourage you to visit these unique businesses and see what they have to offer. As a small local business ourselves, we are thankful to have their support of our publication’s growth and vision as the go to source for everything local. It might not always be possible but we ask that you; Think Local, Buy Local, and Live Local. Happy Shopping!

HEALTHYLIVING

Keep your family on track and incorporate a few simple rules for healthy living into your busy lives.

Busy Women Do Not Have To Sacrifice Fitness Stay Fit Even With a Hectic Schedule

I

n today’s busy, high-tech era, women are carrying more and more responsibility. Society expects them to earn a living, climb the corporate ladder, manage a home, and provide for the family by cooking, cleaning, doing laundry and helping care for them. In addition, these women, many of whom are spread too thinly and on-call 24/7, are expected to look good and feel good. Many women say to themselves, “I used to be very active and worked out every day. These days, I find it hard to fit exercise and diet into my day.” They often ask, “What can I do, and

where can I start?” It’s a simple question that typically gets a notso-simple answer. In order to see that people get and stay healthy, here are some quick tips for those busy women and even men. •

hen the holidays come around, budgets can get tight. So feeding an entire family a festive meal requires knowing how to stretch a dime. One key: inexpensive side dishes. This California Raisin Bacon Brussels Sprouts recipe is a money-wise example. At less than a dollar per serving, it’s a traditional side that won’t break the bank. California Raisins provide a delicious burst of sweetness to the savory Brussels sprouts and salty bacon.

CALIFORNIA RAISIN BACON BRUSSELS SPROUTS

Not only are raisins ranked as the most economical dried fruit by the United States Department of Agriculture, but you can also feel good about adding all-natural California Raisins to any dish. This small but mighty fruit delivers fiber, potassium and antioxidants, and just a quarter cup of raisins provides a serving of fruit. Check out loveyourraisins.com for this recipe and hundreds more!

Makes 4-6 servings

Ingredients:

• 3 slices Hickory Smoked Bacon, cut into 1/4 inch slices • 1 pound Brussels sprouts • 1 small yellow onion, chopped • 1/2 cup California Raisins • 1/4 teaspoon salt • 1/4 teaspoon pepper • 1/4 teaspoon red pepper flakes (season to your taste)

Wash, trim and quarter Brussels sprouts; arrange in microwave-safe container with 1 tablespoon water. Cover, and microwave on HIGH for 5 minutes. Meanwhile, in large skillet over medium heat, cook bacon until crisp; remove with slotted spoon to drain on paper towels; set aside. Reserve 1 tablespoon drippings in skillet; add onion and cook over medium heat until tender. Then, stir in cooked Brussels sprouts, raisins, salt and pepper; toss to combine, and continue to cook just until heated through. Sprinkle cooked bacon pieces on top. Turn into large serving dish; garnish with cooked bacon pieces, and sprinkle with red pepper flakes, as desired.

long with the beauty that cooler days bring also comes fewer daylight hours. While you should practice caution when driving no matter the season, it’s important to take extra precautions this time of year to prepare yourself and your vehicle for nighttime driving. As the days get shorter, and inclement weather descends upon us, Firestone Complete Auto Care provides the following tips. •

Develop a habit to make sure your tires are properly inflated, rotated and in good condition.

Make sure your lights and mirrors are clean and properly positioned. Incorrectly aimed headlights can temporarily blind other drivers and reduce your ability to see the road. Properly aligned mirrors also reduce blind spots.

When in doubt, turn on your headlights. Even if they don’t help you see better, they’ll make it easier for other drivers to see you.

Use high beams sparingly. Live in an area with high fog? It’s not a good idea to use your high beams. Instead, you should use only your low beam headlights, since high beams reduce your ability to see. Some newer vehicles even come equipped with special fog lights. Maintain your ability to see well and adjust your vehicle’s interior lighting if necessary. If streetlights cause a lot of glare, dim your dashboard lights and use your sun visor. Avoid using any other light inside your vehicle.

Boundary PERSONAL CARE

Switch your rearview mirror to its night setting. By changing the angle of the reflective surface, the lights reflecting in your mirror will appear to be dimmed.

Clean your windshield inside and out. Keeping your windows clean -- especially the windshield -- is crucial to road safety. Wipe
