Frozen Pizza to the Rescue

Imay not be the best writer, graphic designer, or editor. And I definitely might not be the best wife or mother. But I know how to get things done. If you ask me for something by a specific time and date, I’ll deliver. And if I can’t, I’ll let you know upfront.
For about 25 years, I’ve lived by a simple professional motto: good enough.
I’ve hesitated to share it here because many of my readers are also clients, and I wouldn’t want to suggest that I don’t put my heart and soul into this magazine. That said, the integrity of my soul is still up for debate.
A more polished version of this sentiment, often attributed to Voltaire, is: “Don’t let perfect be the enemy of good.”
The truth is that efficiency matters, and striving for perfection can sideline essential projects.
I believe the first time I said “good enough” was when I was a design director at another local magazine. As a creative professional, it’s easy to lose
yourself in endless tweaks. I constantly ask myself: Could this be better? Do the visuals enhance the story? Is it clear? Does it look good? But if you keep tinkering, you’ll never finish. You can spend five hours perfecting something that should have taken 45 minutes. I’ve gone down more stock photo rabbit holes — searching for the perfect image — than I care to admit.
And when it comes to writing, the pull toward perfection is even stronger. Writers are notorious for missing deadlines because there’s always a better word, a sharper phrase, a more succinct way to drive a point.
Ta-Nehisi Coates once said, If you think writing is easy, you’re doing it wrong. Only a writer could put it that perfectly.
The truth is we all balance quality and efficiency every day.
Sometimes, peeling plastic off cardboard and throwing a frozen cheesy disc in the oven for 15 to 21 minutes is the best you can muster.

No sane person would argue that frozen pizza is better than homemade or the real deal from a pizzeria. But when you’re tired, hungry, and questioning all your life choices, “good enough” starts looking pretty spectacular.
And the truth? This file has been sitting on my computer for close to a year. I keep tweaking it, revisiting it, trying to make it better. But at some point, you have to let go.
So here it is. Good enough? Y

Broward Health Breaks Ground in Lighthouse Point
Bringing First Freestanding Emergency Department to the City
Broward Health on Feb. 19 celebrated a major milestone with a groundbreaking ceremony to kick off the construction of the first freestanding emergency department in Lighthouse Point.
“This project underscores the importance of expanding access to high-quality emergencycare close to home,” said Shane Strum, President & CEO of Broward Health. “In life-threatening emergencies, every second counts, and soon Lighthouse Point residents will have access to faster, lifesaving care right in their own community.”
The freestanding emergency department will be equipped with 10 exam rooms and will be supported by an additional 9 exam rooms on the second floor of the medical offices. Broward Health anticipates treating approximately 18,000 patients annually at the new facility.
“Beyond providing essential medical care, the freestanding emergency department is expected to generate a significant economic impact,” said Christopher Pernicano, chair of the North
Broward Hospital District Board of Commissioners. “It’s expected to generate more than $15 million for the local economy and create 30 full-time jobs.”
This cutting-edge, two-story, state-of-the-art facility will handle the same level of care as a hospital-based emergency department, including specialized adult treatment and care. On average, discharge times at a freestanding emergency department are 90 to 120 minutes, compared to 220 minutes at a hospital.
“This facility will not only enhance emergency wait times but also bring peace of mind to families of Lighthouse Point knowing that high-quality healthcare is available close to home,” said Lighthouse Point Mayor Kyle Van Buskirk.
The 14,251-square-foot facility will consist of 9,418 square feet dedicated to the emergency department and 4,833 square feet for medical office space, with 41 parking spaces available for visitors and staff.

A Pyramid to Success
Lessons from the Most Successful Coach in Sports History
Coach John Wooden is the most winning coach in sports history. He coached the UCLA Bruins basketball team for 27 years (1948 – 1975), and within that time, he led his team to 10 National Championships in a 12-year period. He won seven consecutive championships in a row from 1967 – 1973. On top of that, he coached the Bruins to four undefeated seasons. He was also named NCAA College Basketball Coach of the Year six times. As far as coaching goes, he is the undisputed GOAT!
Many have studied his career and tried analyzing what made him so successful. The results they came up with will likely surprise you.
Views on Winning and Losing
Surprisingly, Coach Wooden never talked to his players about winning and losing. One reason for that is that he had a definition of winning that differed from most.
Coach Wooden believed that true victory comes from preparing thoroughly and giving your best effort. Many times, he viewed his team as winners simply for their preparation and hard work. He also stated that there were times when they won according to the scoreboard, and yet he was disappointed with his players’ performance. He might have seen his players coasting through the game because they were ahead on points. Other times, he would see them make careless mistakes because they were unfocused in practice.
He believed that how you play in practice is precisely how you will play in the games when the pressure is on. He was right!
He knew that if the players gave 100% in preparation and gave

their best effort on game day, the score would take care of itself. He was right again!
Preparation and Organization
Coach Wooden’s practices were meticulously organized, running for exactly 90 minutes. He believed that knowing the start and end times helped players manage their energy and focus fully. Each practice was planned in detail, with specific drill durations and transition times, maximizing every minute of that practice .
He is well-known for his speech and instructions on the first day of practice. On that day, he teaches his players how to properly put on their socks and lace up their shoes correctly.
Why did he review this each year with National Champions on his team? Because he knew that if your socks were not put on properly and your sneakers were not tied properly, there was a good chance you could get a blister on your foot, and that would certainly affect a player’s performance.
Coach Wooden had a passion for the fundamentals!

Coach Wooden viewed himself as a teacher, not a coach. He felt it was his job to teach his students how to be successful in life, not just on the basketball court. The late author, speaker, and business philosopher, Jim Rohn famously said, “Teach your team to be successful in life, not just on their jobs.” He learned that from watching Coach Wooden’s success!
The Pyramid of Success was designed to teach his players solid principles that they could apply in life. Florida Law for Pedestrians and Bicyclists

If you are a pedestrian or a bicyclist and you are injured by a car, there is important information you need to know. If you own a car, your car insurance PIP (no fault) coverage will be your primary medical insurance for hospital and doctor bills. Just as you would do if you were injured driving your car, you should contact your car insurance immediately to report the accident and get a claim number for your PIP coverage. You should also obtain the
a settlement for your injuries. I recommend at least $100,000 per person for uninsured motorist coverage. If you have more than one vehicle, I recommend stacking. Please see other articles that I have written for further details.
It is possible that the other insurance company may find you at least partially at fault if you disobeyed the rules of the road. For example, while you have the right of way as a pedestrian on a marked crosswalk, you must yield the right of way to all vehicles if you are not using a marked crosswalk. If there is a sidewalk on the street, you have to use it. If there is no sidewalk, you have to walk on the road facing traffic. If you are a bicyclist, however, you need to be going in the direction of traffic, in a bike lane if available. Even if you are disobeying the rules of the road, you may still be successful in getting at least some settlement for your pain and suffering, over and above the medical bills. Florida has the law of comparative negligence. If a jury were to decide the case, your total damages would be reduced by the percentage that you were found to be at fault. For example, if the jury finds that your total damages are $100,000, but you were 70% at fault, then you would still receive a net verdict of $30,000.

Spring Fling Fishing in Full Effect

t’s springtime in South Florida, and the fish are loving the weather. I am happy to report solid fishing news across multiple regions and species. The Lighthouse Point Saltwater Sportsman’s Association (LHPSSA) has held or participated in several fishing events over the last few months. We had fishing events in Venice, Louisiana, Key West, the Bahamas, the Florida Panhandle, and the SE Florida coast. If you have not gone to Venice and experienced the inshore and off shore fishing there you are missing out on some of the best fishing in the world. It’s not uncommon to catch over 100 redfish and trout on a half-day charter inshore. The yellowfin
tuna bite has been incredible. If you want a shot at a 200+ pound tuna — this is the place to go.
Fishing near oil rigs and behind shrimp boats is an amazing experience. Spending a day before or after your trip in New Orleans is also top notch. Speaking of tuna — usually we are talking about getting ready to chase tuna in the NW Channel between Bimini and Grand Bahama in April, May and June. We have wondered for years if tuna are there all year…..well I am happy to report that we have had members go over on calm days and crush the tuna in January, February and March this year! There were less birds and generally fewer sharks but fields of schooling tunas. There were still some wahoo around and the spearfishing was good too.
The spring sail fishing tournament series has been in full effect. A few weeks ago an absolutely amazing bite happened during the second leg of the 22nd Annual Sailfish Challenge Tournament Series. Day one of the tournament broke the US record for a single
day sailfish release count during a tournament with 912 sailfish released. By the end of day two, the 61 boats in the tournament caught and released 1,467 sailfish. Incredible! Shout out to our local friend Capt. Art Sapp aboard the Native Son on an impressive 48 releases on day one and a total of 65 releases for the two day tournament taking first place.
The Jimmy Johnson Quest for the Ring tournament was held in early March and boasts one of the largest payouts in the world of sail fishing with a guaranteed $1M dollar purse. The weather was not ideal for this tournament but the just about 80 boats still landed approximately 450 sailfish in two days. Congrats to teams Remix and Paradise Found for great fishing!
Even if you are not fishing one of these competitive sail fishing tournaments you can usually follow the live results online or on one of the tournament apps – its fun to root your buddies on.
Some very large 300 – 400lb class swordfish have been brought to the scales, multiple wahoo are being caught regularly out front, tuna are chewing in the channel and sail fishing is red hot! Get out there and get a line tight. Y

Couples argue about how to save money and how to spend it. But guess what? Arguments about money are rarely about dollars and cents. The arguments are more about what money means to each partner

When I was in middle school, I was in the chorus, and every year, we put on a concert for our school. I had this beautiful pink and white gown, but it was about three inches too short when I tried it on the following year. I begged and pleaded, but my dad didn’t buy me a new dress. I can still see the picture of the chorus in my mind. I am in the front row, no less in my short dress. All the kids made fun of me, and I felt embarrassed and ashamed. That experience stayed with me. That moment in my childhood contributed to my beliefs about money. There were plenty of other moments as well. Many of your experiences have contributed to your beliefs as well. Our personal beliefs determine how we deal with money in our marriages.
Money conversations are loaded with power and meaning for couples, sometimes making discussions heated and, yes, even hurtful. Learning how to communicate and seeking understanding of how your partner came to be the way they are, will bring you closer to your partner. Alternatively, money can and will push us apart from our partners when we don’t seek to understand each other.
Love is we-ness, not me-ness. Only when you both feel understood by each other regarding money can you be motivated to compromise with your finances. Believe both of your beliefs are valid. When we accept that our spouse’s beliefs about money are equally valid, there is no longer a need to argue for our position. Then, we can stop fighting about money and begin focusing on understanding and validating each other so that we can have a healthier relationship with money and our partners. Choose love. Y

Ingredients
Cooked jasmine rice for serving
1 pork tenderloin
1 tablespoon fresh ginger, grated
2 garlic cloves, grated
1/2 teaspoon freshly ground black pepper
1 teaspoon kosher salt
1 tablespoon neutral oil

Peanut Sauce
1/2 cup smooth peanut butter
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
1 garlic clove, grated
1 teaspoon fresh ginger, grated
Water, as needed
Preparation
Heat the oven to 375°F.
Nuoc Cham Sauce
1/4 cup rice vinegar
1/4 cup fish sauce (such as Red Boat)
1 teaspoon sugar
3 garlic cloves (optional), grated
Season the pork with salt and black pepper. Heat a large cast-iron or grill pan over medium-high heat. Brush with oil and sear the pork on all sides until golden brown. Remove any burnt bits from the pan. Rub the garlic and ginger all over the pork, then return to the pan. Roast in the oven until the thickest part reaches 145°F, about 8-12 minutes.
To make the peanut sauce, whisk all ingredients together, adding water a little at a time until the sauce reaches your desired consistency. To make the nuoc cham, whisk all ingredients in a bowl or shake in a sealed jar until combined.
Let the pork rest for 10 minutes before slicing. Serve over rice with your favorite veggies, and don’t skimp on the peanut sauce — it’s the star of the show. I also like to drizzle on nuoc cham because life is better with more condiments. Y

hat’s a sommelier got to do with it? Of course, the “it,” is wine, and the answer is a lot — certainly more than even I realized. I’m not trying to be cute. I mention this because recently
I interviewed George Miliotes, one of only 12 Master Sommeliers in Florida — and fewer than 300 worldwide. Master Sommelier is the top professional certification for people who perform and manage wine service in restaurants and other places. Before interviewing Miliotes, I participated in one of his popular blind wine tastings at his Disney Springs restaurant, Wine Bar George. Together, the tasting and interview provided a revealing window into what it takes to be a highly skilled and trained sommelier, as well as how an especially talented and accomplished one can so entertainingly educate people about wine.
The tasting I participated in was both fun and illuminating. The setting was casual — it’s Disney after all. Guests sat comfortably in small groups at tables set with two-ounce servings of six different red and white wines. There were also generous platters of tasty cheese, crackers, charcuterie, and other goodies to munch on. To make the tasting “blind,” each of the six wines was assigned a number but no other identification. The object was to figure out — okay, guess — what kind of wine each was by using one’s senses and prior wine knowledge and experience. It’s a bit like a sommelier’s exam, except in those tests, tasters must identify more than just the type of wine. Sommeliers are expected to determine where each wine is from, the year it was made, the grapes used, how it was vinified, plus other details.
Obviously, some knowledge of wine is helpful when doing a blind tasting, but you can still have fun and learn a lot without a lot of wine wisdom. In Miliotes’ tasting, the wines were all delicious and purposefully selected, and Miliotes’ enthusiasm, quick sense of humor, and knack for storytelling made the tasting anything but boring. He started by describing how sommeliers observe, smell, and taste wine and then coached. One glass at a time, as we sniffed and sipped away, he gave hints and clues for
each wine and fielded comments and questions. After revealing each wine, he discussed it, explaining why it tasted the way it did, and what foods would pair up nicely and why. He also shared interesting and humorous stories about the wines and the often-colorful people who make them, along with his own experiences. Participants loved it. (If you’re wondering, I correctly identified all but two of the six wines — not too shabby for a guy who writes about wine. I also dug into the thumbs-up assortment of delicious cheese, fruit, and prosciutto to see how the fattiness, sweetness, and saltiness of those foods mixed with each wine. Yum!)
SO, WHAT’S A SOMMELIER?
In the most basic sense, a sommelier is a wine steward. Picture the person in a fine dining restaurant who helps guests pick wines that will pair well with the food they order. Miliotes stresses that good restaurant sommeliers are not condescending, are sensitive to guests’ tastes, and respect how much they want to spend. To do these things well, they need to know their wine collections thoroughly and should regularly adapt wine lists and recommendations to fit changing tastes and menus. Often sommeliers also manage and curate the collections in addition to being responsible for an establishment’s selection of beer, spirits, liqueur, and cocktails.
Sommeliers work, as well, in multiple other aspects of the beverage, food, and hospitality industry. Some, for instance, are consultants to wine makers or are vintners themselves. Some are chefs. Others work for beverage distributors and retailers, and many have become entrepreneurs. Miliotes, who has had a lifelong interest in food as well wine, was engaged in opening and managing dozens of highend restaurants for notable hospitality firms before opening his current business, which he owns and operates with his wife, Leanne.
The term sommelier comes from the early French word, saumalier, which described a person who drove pack animals. Imagine a king or wealthy nobleman traveling from one grand estate to another followed by oxen, horses, and wagons loaded with clothing, bedding, wine, brandy, and other supplies. Once settled, these workers often served as the principal stewards of household supplies. The English called them butlers, a term derived from bouteiller, early French for “bottle handler.” An ancient reference to a butler who specialized in wine
is Pharoah’s chief cupbearer in the Old Testament story of Joseph. The cupbearer along with the chief baker, you may recall, were jailed after upsetting Pharoah. Both had dreams which Joseph, then a fellow prisoner, interpreted. That worked out well for Joseph and the cupbearer, not so much for the baker. In any case, the biblical Hebrew phrase for the cupbearer, sar ha-mash-keh (‘official who gives drink”), still means butler in modern Hebrew. Who knows? Maybe the tastevin, the silver medallion-like tasting cup and chain that sommeliers are sometimes seen wearing in movies and posh restaurants, is somehow linked to that ancient Egyptian butler.
A SOMMELIER’S JOURNEY
Miliotes journey to becoming a Master Sommelier started when he was young. His interest in wine started as a teenager helping in his father’s restaurant and delicatessen business. The business sold wine, and one of Miliotes’s jobs was to keep the wine bottles neat and dusted. The bottle labels fascinated him, and he learned how to decipher them. Eventually at family dinners and trips to Europe, he tasted many different wines, developing a love for Riesling in particular, while also becoming passionate about good food. After college, he worked in his father’s business, gaining experience and skills that enabled him to help start and become general manager of the California Grill at Disney World’s Contemporary Resort. From there, he became director of beverages and hospitality for Darden’s Seasons 52, Capital Grille, and Eddie’s V’s restaurants. He left to open Wine Bar George in 2018, where he offers one of the country’s largest and most impressive selections of by-the-glass servings.
During his years at California Grill and Darden, Miliotes committed himself to achieving the highest standards in beverage and food service. He began and completed the rigorous, years-long, multilevel certification process for becoming a Master Sommelier in 2007. It’s The Court of Master Sommeliers’ highest distinction. Miliotes explained to me that the key to accomplishing and maintaining that level of excellence is discipline and constant learning. After making an analogy to the importance of practice in professional sports, he remarked, “Want to be a good (wine) taster? Practice! That’s a truism for most things we want to do well in life.”
Miliotes and I also talked about wine more generally. I asked him for some practical suggestions for enjoying wine. He mentioned several: 1) Refrigerate wines briefly before drinking if they’re not already cool; 2) Use thoroughly cleaned and rinsed glasses; 3) Establish relationships with good wine shops and restaurants and ask questions; 4) “Don’t be shy about how much you want to spend. Be candid: ‘This is what I’ve got.’” We then discussed current frustrations of buying certain wines, such as red French Burgundy, that have gotten so expensive for the average buyer. He suggested trying pinot noir wine from New Zealand and Oregon, many of which have a Burgundian character. His top recommendations for books about wine: Kevin Zraly’s classic Windows on the World Complete Wine Course and Tom Stephenson’s The New Sotheby’s Wine Encyclopedia. Miliotes favorite way to enjoy wine is while traveling: “Build wine tasting into trips” and “drink what locals do.” Shy of that, attending a Miliotes wine tasting is a pretty good substitute. Y

Over 100 years ago, rum-runners and bootleggers in Fort Lauderdale created their own Gulf Stream — a flow of smuggled spirits from the Bahamas and secret stills hidden in the swamps. They believed prohibition couldn’t keep up with their clever schemes, transforming the city into “Fort Liquordale.”
Today, Gulf Stream Distilling honors these pioneers with premium vodka crafted from wheat. What started as a backyard distilling experiment has become a boutique craft distillery in Fort Lauderdale, known for using all-natural ingredients.

Exploring Old Florida Book Shop
On a recent trip to Washington, D.C., my daughter suggested we visit a used bookshop she adores. So when she came home to Florida for a long weekend, we made our way to the Old Florida Book Shop, conveniently close to the Fort Lauderdale airport.
Tucked into an unassuming strip mall in Dania Beach, the shop might not catch your eye at first — but don’t let that fool you. If you love books, stepping inside is like discovering a hidden treasure trove.
Floor-to-ceiling shelves, dark wood, and towering stacks of books create an atmosphere that feels straight out of a dream. I imagine it’s how Harry Potter must have felt entering Hogwarts for the first time — pure magic for a book lover.
The shop isn’t just about books. It’s filled with antique furniture, vintage lamps, oriental rugs, an adorable cat named Peter and an eclectic mix of curiosities, all collected by owner William Chrisant over the past 40 years. Originally from Ohio, Chrisant first opened an antique bookstore in Akron before relocating to Florida in 2009. Today, his Old Florida Book Shop is a must-visit for anyone who appreciates the charm of well-loved books and the stories they hold.
