If you haven’t had the pleasure yet, then it’s time to meet Sandi, the world’s only 35-foot, 700-ton holiday “tree” made of sand. Sandi stands at the heart of the West Palm Beach Great Lawn during the holiday season, and is truly a sight to see.
A Tree Lighting event, from 6 to 10 p.m. on Thursday, December 4, will kick off a month-long series of Holiday in Paradise activities taking place in the area. Many of Sandi’s familiar friends will be back, including Ferris, the 50-foot Ferris wheel, a flock of her sand-sculpted companions, a giant sand pirate ship, and a 50-ton sand bar where children can play.
A host of fun-filled festivities and events will include nightly synchronized music and light shows, Sandi and
Santa’s Annual Breakfast on Dec. 8, Clematis by Night with live music on Dec. 12, Screen on the Green on Dec. 13, the Aloha Islanders Tropical Holiday Spectacular on Dec. 15, live jazz on Dec. 18, a party band on Dec. 19, and a New Year’s Eve celebration on Dec. 31. Here are 10 tips to keep in mind if you are feeling the weight of the holidays.
1. Don’t over-schedule. Remember, it’s okay to say no. If your calendar can’t accommodate all your social demands, it’s okay to take a pass on one, or all of them.
2. Take a walk. Hit the reset button by taking a trip around the block. Your mind and body will thank you as soon as you breath in that fresh air.
3. See some lights. Hop into the car, turn on the holiday tunes, and take a neighborhood holiday lights tour in your area with your family. This is something you can even do in your pjs!
4. Focus on gratitude. Having an attitude of gratitude will set the precedent for all of those around you. There are many ways you can do this. You can keep a gratitude journal, participate in acts of service, volunteer and donate items, among others.
5. Accept imperfection. The cookies may burn. The bow may be lopsided. You may not find that hard-to-find gift. Tell yourself it’s okay. And believe it. None of us are perfect, and some of the best memories stem from those imperfect moments.









6. Set a budget. If your holiday tradition includes gift-giving, set a budget for the gifts you will be giving and stick to it. And not all gifts need to come from Amazon, or a big box store. Why not create a personalized masterpiece for your loved ones. It’s something they will cherish for years to come.
7. Maintain healthy eating habits. It’s easy to grab a cookie or brownie for a quick pick me up when there are so many sweet treats within reach, but try to fuel your body and mind with nutrient-rich stuff first. Meal prep by chopping up raw veggies, fruit, or making cheese and meat bentos in advance which are healthy and easy to grab and go.
8. Sleep. We can’t lose sight of how important a good night’s rest is, particularly during the chaos of the holiday season. Try to cut back on any late-night caffeine drinks and screen time, which can both alter our sleep schedule. Instead, prepare yourself for a good night’s rest by taking a hot bath, sipping on non-caffeinated tea or reading a book.
9. Belly laugh. Let yourself laugh out loud. It’s a great way to reduce stressful situations. Our brain also releases endorphins and produces serotonin when we laugh, giving us a greater sense of happiness.

10. Spend time with loved ones. After all, this is the greatest gift of all.









The smashed taco trend really caught my attention, especially after seeing a Big Mac smashed taco. I had to try making them for dinner, and although they were a hit, preparing 15 individual smashed tacos was quite the effort. Then, I discovered a way to make a batch of quesadillas in the oven, which inspired me to try the same method for smashed tacos. And it worked!
Recipe and

Rosser
1 pound ground chicken
6 (6-inch) flour tortillas
Garlic powder to taste
Cajun seasoning to taste (optional)
Salt and pepper to taste
3-4 tablespoons grated Parmesan cheese, plus more for sprinkling
1 head romaine, washed and finely chopped
Caesar dressing (see below)
Croutons, crushed in a plastic bag
Neutral oil for spreading on the sheet pan
1. Preheat the oven to 425 degrees F. Pour a bit of oil on a rimmed sheet pan and use one of the tortillas to spread the oil around.
2. Place the tortillas on the sheet pan and top each one with a portion of the ground chicken, spreading it into a thin layer and reaching the edges. Season with garlic powder, salt, and pepper and the Cajun seasoning if using. Sprinkle Parmesan cheese over the chicken. Bake in the oven for about 5 minutes, or until the chicken is cooked through.
3. Using a spatula, fold each tortilla in half and continue baking until they are golden and crispy. Remove from the oven and let cool slightly.
4. In a large bowl, combine the chopped romaine with enough Caesar dressing to thoroughly coat the lettuce. Mix until well blended. You will have extra dressing.
5. Open the chicken filled tortillas and top with some Caesar salad and a sprinkle of crushed croutons and more Parmesan. Serve with the extra dressing.
(These tacos are very adaptable for toppings. Feel free to add avocado, tomato, radish, red onion, or any of your favorite taco ingredients.)
CREAMY CAESAR DRESSING
1/4 cup mayonnaise
1/4 cup fresh lemon juice
2 cloves grated garlic
Several dashes of Worcestershire sauce
Salt and pepper to taste
2-3 tablespoons grated Parmesan cheese
2 teaspoons Dijon mustard
3-4 minced anchovies
1/2 cup neutral oil (like avocado or grapeseed)
Whisk everything together except the oil. While whisking, gradually drizzle in the oil. Refrigerate until ready to use.

Years ago, I came down with a terrible case of the flu while living on the 23rd floor of an apartment building in Manhattan. I remember gazing out my window at the people hurrying along the sidewalk below. They looked so normal – rushing to work, doing errands, carrying shopping bags. None of them seemed sick or miserable. I wondered if they realized how lucky they were to simply walk down the street feeling fine.
Then another thought hit me: maybe they weren’t fine. Maybe the woman in the red coat had just finished a long night caring for an elderly parent. Maybe the man in a suit was dealing with a breakup or worrying about a child. I couldn’t know what anyone was carrying inside. That realization has stayed with me ever since – the truth that we rarely see the full weight of someone else’s struggles.
Even within our own families and friendships, invisible battles often play out quietly. When a longtime friend suddenly stopped returning my calls, I was hurt and confused. My husband suggested she was probably dealing with something personal, but I couldn’t help feeling cast aside. Maybe I should have reached out and asked if she was okay – but my ego got in the way. I didn’t want to be the one chasing after a friendship that seemed to mean more to me than to her.
passed away. Emotions ran high, and for a while, we barely spoke. Then a friend asked me a question that stopped me cold: “Do you really want to be one of those families who says, ‘We had a falling out, and we just don’t talk anymore?’”
The answer was no. So, I picked up the phone. We had the hard conversation – the one where everyone’s voice trembles a little and nobody feels entirely comfortable. I explained how I’d felt hurt; they opened up about their grief. It wasn’t easy, but it was worth it. That conversation brought us closer and reminded me that love can be found on the other side of pain. I sometimes think too many relationships – friendships, marriages, family bonds – end not because they’re broken, but because we never learned how to have those uncomfortable talks. We let silence take over, and we call it closure.

If there’s someone you’ve lost touch with – someone who still crosses your mind –maybe it’s time to reach out. After all, it’s the holiday season. Send a message. Make the call. You might not get a perfect resolution, but you might just find your way back to something that matters – something stronger, kinder, and more forgiving than before.
It’s easy to walk away and tell ourselves there was nothing we could do. But sometimes, that’s just not true.

Imagine walking straight into the notebook of the greatest genius who ever lived. Pages stretch overhead, sketches fill the walls, and inventions seem to leap from concept to reality. That is the experience inside Leonardo da Vinci – 500 Years of Genius, now open at the Phillip and Patricia Frost Museum of Science. Leonardo’s bound journals, or codices, hold thousands of sketches, experiments, and big questions about how the world works. In this exhibition, these pages appear beside his inventions, letting families explore his ideas as they unfold.
From the moment guests enter, it feels as if they’re stepping into Leonardo’s imagination. Printed studies of flying machines, detailed anatomical drawings, and engineering concepts fill the space, revealing ideas centuries ahead of their time. This is the most comprehensive and immersive exploration of Leonardo’s life and legacy ever presented.
Created by Grande Experiences in collaboration with the Museo Leonardo da Vinci in Rome, Leonardo da Vinci – 500 Years of Genius blends storytelling, technology, science, and art. It is also fully bilingual (English and Spanish), making it welcoming and accessible for families across South Florida.
Leonardo wasn’t only an artist. He was an engineer, inventor, scientist, and dreamer. His curiosity powered everything — and in this exhibition, families get to see that curiosity in action.
Throughout the exhibition’s themed galleries, Leonardo’s sketches don’t just stay on the page — they become real. Full-scale models of flying machines, early helicopter concepts, and mechanical systems stand tall, built using Leonardo’s notes. Families can walk around them, explore different angles, and see how an idea became a working design.


There’s also a space where guests can try their hand at invention. Children and adults can attempt to assemble a bridge based on one of Leonardo’s original engineering concepts. With no glue or nails, the challenge is to figure out how the beams support each other.
Nearby, additional stations let guests interact with small mechanical models. Turning a gear or rotating a mechanism reveals exactly how Leonardo studied movement, force, and balance.
In another hands-on moment, the Vitruvian Man interactive station invites guests to compare their own proportions to Leonardo’s iconic drawing in a playful and unexpected way as they to step inside one of the most recognizable images in the world.
