Joyful Contagion BY SUSAN ROSSER

I have a prediction to make. After the pandemic is behind us, movie theaters will come roaring back. Prior to the whole Covid debacle, theaters were having a rough go of it. Streaming services like Netflix, Hulu and others were taking a big bite out of their business. It's easier and certainly cheaper to watch a flick as you lounge on your sofa and eat popcorn from your pantry. And I admit, I had fallen into that rut. But during the pandemic, movie lovers realized that magic happens inside a theater. Let me explain. Years ago, my friend Selena insisted we go together to see the comedy "Bridesmaids." She had already seen in it, loved it, and knew I would too. As we sat next to one another, I laughed so hard I thought I might have developed appendicitis. And even though this was Selena's second time around, she cried from laughing so hard. She happens to have one of those contagious laughs. So between her laughter and the uproarious comedy playing on the silver screen, I'm not sure I have ever laughed harder at a movie. In fact, everyone around us was absolutely hysterical. If this had been a live performance, someone would have told us what a great audience we were. There was a palpable shared energy in that theater. We all know that laughter is catching. So while everyone howled at the comedy before us, our reactions were increased by one another. A few weeks later, I took my husband to see the film. For some reason, that audience wasn't as raucous as the first. Don't' get me wrong, I laughed all over again. But this time, I didn't fear an appendectomy. And although I know this was my second time seeing the film, so none of the jokes were new to me, I realized immediately that I experienced some sort of audience alchemy that first time around.

And I think after almost a year of missing out on theater, concerts, religious services, classes and large gatherings of all sorts, we have a more profound understanding of connection and how vital it is. I am not talking about close relationships, which undoubtedly provide some of life's greater joys. But connecting on a larger scale to the community all around us is also essential. Laughing along with a theater full of strangers is cathartic, uplifting and provides a sense of belonging. It's a truly human experience. When we hear the word contagious, images of the sick and masks and charts upon charts creep into our consciousness. And never has that been more real than in the past year. But other things are contagious, and chief among them are laughter, kindness and generosity. The world certainly has a different vibe these days. When I am out and about, I miss that carefree energy you could find in restaurants, theaters and even the grocery store. I miss being part of an audience all laughing at the same joke or applauding the same song. What can I say? I want to go to the movies and be immune to the fact that the person behind me is laughing so hard that invisible viral particles may have landed on me. On the other hand, I do want to be infected by their laughter. Y

Awards Season TWO OF THE CITY’S FIRST RESPONDERS WERE HONORED FOR THEIR EXCEPTIONAL WORK DURING THE PAST YEAR. KYLE KAY

Police Officer of the Year Officer Kyle Kay was recognized as Police Officer of the Year by Lighthouse Point Police Chief Ross Licata for his accomplishments in 2020, which included important self-initiated arrests leading to the resolution of ongoing criminal activity that had plagued the city for months. “During the past year, Officer Kay has displayed an outstanding work ethic and constant high level of vigilance, professionalism, and outstanding service to our agency and citizens,” said Lighthouse Point Police Chief Ross Licata. “His enthusiasm and initiative have proven to be instrumental in arresting and intercepting criminals, solving crimes and making Lighthouse Point a safer community for everyone to enjoy.” Kay was hired by the Lighthouse Point Police Department in 2013, right after completing his training at the police academy of Palm Beach State College. Prior to becoming a police officer, Kay, who grew up in Broward County, served in the Marine Corps infantry for four years, making two combat deployments to Iraq. “Being an officer in the city for seven years, I’m very aware of the people that walk around at night, or

who comes and goes, and I use that to my advantage when I interview people,” said Kay. In October 2020, Kay observed an SUV next to the Lighthouse Point Post Office's drive-thru mailboxes for an unusual amount of time late at night. Kay conducted an investigative stop based on his knowledge of previous intelligence about ongoing thefts from the exterior post office collection boxes. Upon making contact with the occupants, Kay observed items that could be used to fish mail out of the mailboxes, as well as several pieces of mail and two election ballots on the floorboard of the vehicle. His follow-up investigation resulted in the arrest of two men from OpaLocka. The subjects confessed to stealing mail and have been tied to dozens of similar mail thefts from the Lighthouse Point Post Office mailboxes and other locations throughout Broward and Dade County, with losses exceeding $150,000. The Lighthouse Point Police Department’s joint investigation with the U.S. Postal Inspector has resulted in the resolution of 16 open cases in the tricounty area, with additional cases expected to be solved. In November 2020, Kay was on

routine patrol in the early morning hours when he observed two suspicious males in the residential area at NE 29th Street. After conducting an investigative stop, Kay determined that one of the males was carrying a concealed firearm that was stolen during a recent burglary in the City of Coral Springs. This on-view arrest likely prevented numerous burglaries from occurring in Lighthouse Point and removed an armed subject from the city, said Licata. Kay serves as a field training officer for new officers joining the police department. He is also a marine patrol operator of the Lighthouse Point police boat. “We get a lot of support here in Lighthouse Point from residents,” said Kay. “It’s nice going to work knowing that the people you work for appreciate you.” Y

Firefighter of the Year The honor of being named the Lighthouse Point Firefighter of the Year was awarded to Captain Patrick Jones. This October will mark his 48th year with the Lighthouse Point Fire Department. “He still comes to work like he’s a brand-new captain,” said acting Lighthouse Point Fire Chief Tony Long. “He still has that excitement and is still very motivated.” When Jones was hired by the Lighthouse Point Fire Department in 1973 at age 19, he was one of the first paid firefighters for the City of Lighthouse Point. Before that, the city had a volunteer fire department. Jones said he has seen the fire department evolve in the time he has been there. Until the mid1990s, the city did not have its own EMS services. The fire department used the services of Broward County EMS and ambulance companies

as well as his fire officer and fire inspector training, through what is now called Broward College. Jones is one of the department’s fire inspectors who perform fire

Jones, who grew up in South Florida, mostly in the Pompano Beach area, did his fire training with the Fort Lauderdale Fire Department. safety inspections throughout Lighthouse Point during the year, while also completing their firefighter-paramedic duties. Long commended Jones for training his crew every shift and having their safety as a prime objective. Long said most people with 47

He chose to stay and protect the citizens and firefighters of Lighthouse Point,” said Long. City Commission Discusses Transient Rentals and Homestead Exemptions During its meeting on Jan. 12, the City Commission discussed the problem of Lighthouse Point property owners who have registered their homes as transient rentals with the City but are maintaining their homestead exemption. Broward County Property

Under Florida law, if a person rents their property for more than 30 days per calendar year for two consecutive years, they automatically lose their homestead exemption. If the property is rented for more than six months, it's considered commercial property, and the homestead can be removed. If the property is rented in any way on Jan. 1, the homestead for that year will be removed. If the homestead exemption is revoked, a home gets reset to market value, and the property owner pays tax on the full value, Kiar explained. Raabe discussed the various ways his team of nine investigators, mostly former police officers, root out homestead exemption fraud. For example, they have a database that allows them to find out if someone owns property anywhere else in the country. Under the law, a property owner with a Florida homestead can’t have a homestead anywhere else in the world as a permanent residence. Raabe talked about some >>>

New Year & New Habits BY CRAIG HALEY

2020 IS IN THE REARVIEW MIRROR, AND WE ARE IN HIGH GEAR, WORKING TO MAKE 2021 A MUCH BETTER YEAR. STILL, MOST PEOPLE WHO MAKE NEW YEAR'S RESOLUTIONS NEVER actually execute the changes or improvements. Only 4% of people who set New Year's resolutions stick to them. Yet, we hear of some people making changes and accomplishing great results. I read that New Year's marks four years of sobriety for actress Rumer Willis. Comedian and game show host, Drew Carey, stopped drinking, started exercising, changed his diet, and lost nearly 100 pounds some years ago. So, how do some people do it while others struggle? Is it just doubling down on your will power? No way! There was a study on willpower. Two groups of people were asked to work on an unsolvable problem. One group was given a plate of warm, freshly baked chocolate chip cookies, and told not to eat them until they finished the problem. The other group was given a plate of radishes and told not to eat them until they were done with the problem. Needless to say, that wasn’t too hard to do! The chocolate chip cookie group only worked on the problem for nine minutes before giving up. The radish group worked for over 20 minutes. So, clearly will power tires you out and fades with time! The answer lies in changing your habits. Did you know that 90% of everything we do is based on our habits? Let’s talk about some strategies to change your practices this year to create better results, achieve your goals, and live the life you want to. STRATEGY #1: MAKE IT EASY! If you want to start exercising first thing in the morning, set yourself up for success. Lay your clothes and sneakers out the night before, so when you get up, everything you need is right there. If you don’t do this, it’s too easy to talk yourself out of taking action. Suppose you want to read more, place your book on your reading chair so you can’t miss it. Do you want to practice guitar more frequently? Pull the guitar out of the case and set it up where you practice. We are all lazy! It’s human

nature. Set yourself up for success in advance, and it will be much easier to follow through consistently. STRATEGY #2: REPLACE IT! One of the best ways to change your habits is to swap a bad habit for another one. For example, you can swap out drinking soda with sparkling water with a squeeze of lemon — both have that fizzy satisfaction. Do you want to stop snacking on chips late at night? Swap out the chips for carrot sticks. It’s the same crunching sensation! If you are trying to cut down on alcoholic beverages, drink sparkling water mixed with cranberry juice. Or switch out beer for the nonalcoholic beer. STRATEGY #3: FOCUS ON ADDITION, NOT SUBTRACTION!

When Montel Williams was diagnosed with multiple sclerosis, he had to make changes to his diet. He had to give up foods that he loved, like steak and potatoes. Instead of focusing on what he could no longer have, he focused on what he needed to add to his diet — like salmon with a large, flavorful salad. He got excited about some of the new foods he tried and enjoyed. Focus on what you get to add in! STRATEGY #4: BET ON YOURSELF AND MAKE THE PENALTIES OF FAILURE STING! Accountability is a powerful strategy. Find a

partner and tell them your goal. Then commit that you will write a check to a person or an organization you detest if you fail. Tell your accountability partner that they cannot listen to any stories or excuses of why you did not follow through. It’s all about results. If you hit the goal, you keep the money. If you fail, they send in your money to that person or organization that you loathe! Make sure you give them the check at the beginning, so there is no backing out! 2021 can be a fantastic year! Decide on your three big goals, identify what habits you need to add in, change, or eliminate, and watch the success and victories come rolling in. What to do Legally When Your Partner Dies BY MARTIN ZEVIN, ATTORNEY LOSING YOUR SPOUSE, PARTNER OR SIGNIFICANT OTHER IS A VERY TRAUMATIC EVENT. IT IS ESSENTIAL FOR YOUR PHYSICAL AND EMOTIONAL HEALTH TO GIVE YOURSELF TIME FOR THE GRIEVING PROCESS. Once you feel mentally and emotionally able to do so, you should schedule an appointment with an attorney to review all legal documents. You should bring your will and/or revocable living trust, the deed to your home and any other real estate, a certified copy of the death certificate and, if married, the date of your marriage. If you have advanced care directives such as a living will, durable power of attorney and designation of health care surrogate, you should bring those as well.

If everything you owned was in both names, it is not necessary to probate the will. However, regarding your home, and any other real estate, it is important to "clear the title." The lawyer will prepare and have you sign a "continuous marriage affidavit," which is why you need the date of your marriage. The affidavit will state that you were married on a specific date and remained continuously married without divorce until the date of death. It will provide the legal description of your home and other real estate and indicate your intention to clear title. This document will be recorded, along with an affidavit of no Florida estate tax due and the death certificate without the cause of death. Recording these documents will clear title and allow you the option to do a new deed to avoid probate when you die. If you do not have a revocable living trust, this appointment will be a good opportunity to discuss creating a trust and preparation of a deed to avoid probate on your home and other real estate. You can also discuss the option of a life estate deed to avoid probate. If you do have a trust, this may be an appropriate time to consider doing an amendment to the trust based on new circumstances. Your home and other real estate (in Florida and out-of-state) should be owned by you as trustee of the trust. You may wish to name one of your children as co-trustee to make it easier to manage the assets in your trust if you become incapacitated. You may also want to make changes in your living will, durable power of attorney and designation of health care surrogate or create those documents if you do not have them. In most cases, there is no urgency to contact an attorney. It is much better to have peace of mind and clarity. Some lawyers, including myself, will offer a free consultation. This consultation should include your options and give you the opportunity to sleep on it before finalizing any new legal documents. A Case of Covid BY DR. JILL SELBACH

I KNOW WE ARE ALL TIRED OF DEALING WITH COVID-19 IN SO MANY WAYS. AS I WRITE THIS ARTICLE, I AM REFLECTING ON MY RECENT EXPERIENCE. I THINK IT'S IMPORTANT TO SHARE. On a Friday morning, I woke up and worked for a few hours and then exercised with some friends. Tough workout. And I got through it with my usual complaining. Felt great, as always, when I was done. I had dinner with a few friends and began to feel a slight tickle in my throat. Saturday was uneventful, and I felt a little more of that tickle in my throat and a bit tired. Sunday, I woke up with nasal congestion. We have had quite a bit of construction in my house, so I chalked it up to allergies due to the 2-inch thick dust that had collected on everything. However, I declined my husband's offer to go out with him just in case. I sat outside for the day and stayed away from the kids. On Monday, while still congested, I felt fine otherwise. Out of what I considered to be paranoia, I went to get a Covid test. I went to a site that only gave PCR tests, which take up to three days to come back. I worked by phone or video on Monday. Tuesday, I got in the car at 7:15am and drove to a site to get a rapid test, just in case. On the way home from my test, I received my results…. POSITIVE FOR COVID. I was shocked. I spent the day experiencing so many emotions. I thought that the average person probably would never have gone for a test in the first place and surely not curtail their outings. That was a concern. I saw the positive test results and thought this is not the most accurate test. Let me see what the PCR test says. So the isolation began. I informed my family that they were now going to wait on me hand and foot and run the household for the next 10-14 days. Then, their panic ensued, not because of COVID but because of all the work they needed to do. So, I started this whole process with denial. How could this happen? Where did I get it? I had a moment of fleeting fear for myself (mainly because I was at the mercy of my family). Then I had to call everyone with whom I was in contact. Oh the dread!! These were not calls I wanted to make. I worried about the reaction people would have and then I worried about their health if they did fall ill. Two weeks is a long time to wait to see if you are the responsible party who infected someone. I realized I had gone through all the stages of grief outlined by Elizabeth Kubler-Ross. Denial, anger, bargaining,

depression and finally, acceptance. Then as my isolation period was up, I began walking around the neighborhood only to have neighbors ask how I was. I now understood the shame that people had who had been infected and how they did not want to readily share this information with others. Suddenly my neighbors were wearing masks in their driveways to talk to me from the street. People were afraid of me! There would be no Christmas or New Years' Eve for the Selbach family. Then just as my isolation was ending, my family got retested to be safe. The rapid tests all came back negative. Two days later, my son's PCR test came back positive, and the other family members had to isolate again. The waiting and isolation was luckily, the most challenging part for our family. We have been so fortunate to have only mild symptoms and not to have infected the people we were with before developing symptoms. We all need to stay vigilant and not go around others when we have any symptoms without checking to see if it is COVID. Please don't assume you know that it isn't COVID. Be patient while waiting for test results. Think ahead to how you will feel if you chose not to stay home and infect someone who becomes seriously ill. These were the hard discussions we had with ourselves and our children. Now we are looking at the next weekend when no one is infected to celebrate Christmas with the standing rib roast waiting patiently for its debut in the freezer. "ARE YOU ULTRA?" I ASKED A FRIEND. "ULTRA? AS IN ULTRA-LIGHT, ULTRASOUND, OR ULTRAVIOLET RAYS?" SHE ASKED. "No, an Ultra as in food. Do you eat ultra-processed food?" I got a wide-eyed, blank stare. Ultra is the type of word that makes anything sound better,

positive and modern. In the dictionary world, ultra is defined as extreme, beyond or fanatical. But when it comes to ultra-processed food — ultra is not a positive. Obviously, we all know what the word food means. But, how about this processing term? Processing is transformation. As it applies to food, processing is developing fresh food into a food product. For me, just the phrase "food product" is unappetizing. If you were at a family dinner and asked, "Please pass me that food product, sweetie?" you might get some odd looks. Ultra-processed foods go through multiple steps, such as

extrusion, molding, or milling. In the process, fresh food loses nutrients and sugars, fats, starches and calories are added. In other words, these food products do not resemble, even in the smallest way, the original food source. If you spent the day at a U-Pick-Em field, you would never ask the farmer where you can pick some potato chips. "Hey Farmer, I want to pick some chips! Point me to the field that grows those ultra-foods, such as chips, candy, fast foods, cakes, cold-cuts, hot dogs, chicken nuggets, and frozen meals?" Ultra-processed foods also contain artificial preservatives, emulsifiers, food colorings, flavor enhancers, defoaming, anti-caking agents and more. If you want to avoid generally poorer health, heart disease, weight gain, and other diseases, it is best to avoid ultraprocessed foods. The food industry has its own ultra-language. The labels read like a biochemical dictionary, with words that I cannot even pronounce. Scary and confusing! Do I add these chemicals to my meals when I cook at home? "Hey Honey, how about these glow-in-the-dark mashed potatoes — I added some chemicals! "Yeah, nobody says that. Ultra-processed foods, in my opinion, are ultra-manipulated food products hatched by the food industry with ultra-shelf life, for ultra-taste, producing ultra-economics. Iguana Wars (continued) BY JIM TERLIZZI

REGULAR READERS MAY RECALL PREVIOUS COLUMNS IN WHICH I CHRONICLED MY BATTLE WITH THE IGUANA INFESTATION. I THOUGHT I WAS winning for a while, based on a decrease in iguana droppings on my deck. Not so. These wily creatures have brought in reinforcements: Cuban lizards. At least, I think they’re Cuban. Their accents tell me some of them may be Dominican. Whatever, they have increased their numerical superiority. This has required a massive, drastic response. Aside from the mess they make, my biggest concern is to keep them off my roof, as they can do serious damage. Since iguanas can jump huge distances, I have cut down all trees and defoliated all plants with Agent Orange. I have blown up so many of their dens that I am almost out of C-4. I have greased the downspouts with bacon fat. This makes them slippery while providing me with my favorite aroma. Finally, I had a moat dug around the whole house and filled it with water and nasty flesheating fish, which I purchased from Piranhas “R” Us. (They are on sale this month if you need some.) Despite all of this, one iguana still manages to access the roof. I call him "Wally," short for Wallenda. (You may have heard of the circus act, the “Flying Wallendas," who did seemingly impossible high-wire stunts.) Wally sunbathes in the same place on the roof every day. I tried hosing him off, to no avail. He gave me the finger. (Or, in this case, the claw.) That's when I noticed he bore a tattoo: "Roof Problems-Call Pirate Roofing Company." It is a little-known fact, which I may have mentioned before, that roofing companies train

iguanas to make holes in the underlayment to create leaks. I will attempt to teach iguanas to eat roofers. I did have some success using a professional iguana removal service. They placed traps baited with cantaloupe around the property. This worked too well. It seems the lizards came from all over the city to enjoy the fruit. At $30 per iguana, in two weeks, I ran up a bill of $9,000. This prompted me to buy my own trap. Since WinnDixie was out of cantaloupe, I baited it with watermelon. I caught three opossums, two raccoons and an unidentified creature that looked like a cross between a wombat and Joe Pesce. No iguanas. I will try again. In the meantime, I have one more trick up my sleeve. I will buy 5,000 cantaloupes, cut them into pieces and leave a trail leading to Boca Raton. Since Boca Raton translates to "mouth of the rat," perhaps the iguanas will feel more at home in a city named for fellow vermin. If people could get over the “ich" factor, the lizards could help us solve two problems — hunger and the iguana infestation. Maybe it would help if we started calling them "chicken of the trees." There are dozens of good recipes for these green monsters. It is time to eat the enemy. Y

Spinach and Artichoke Salmon INGREDIENTS

4 salmon fillets, skin on or off kosher salt and black pepper 1/2 teaspoon paprika 1 tablespoon extra virgin olive oil 3 tablespoons unsalted butter 2 shallots, thinly sliced 3 cloves garlic, finely chopped 1/2 teaspoon crushed red pepper flakes 1 cup heavy cream 4 ounces cream cheese, room temperature and cubed 1/2 cup grated Parmesan cheese 4 cups fresh baby spinach 1 (14-ounce) can artichokes. quartered juice from 1/2 a lemon

PREPARATION

Preheat the oven to 350 degrees. Sprinkle the paprika, salt and pepper on the salmon. Heat the olive oil in a large oven-safe skillet over high heat. (I like to use a cast iron pan for this.) Add the salmon and cook for 2-3 minutes until it is seared and takes on a more goldenbrown hue. If using skin-on salmon, sear the skin side too. Remove the salmon from the pan to a plate. Reduce the heat to medium and make sure the pan has cooled off a little. Wipe down the pan with a paper towel — no need to wash it. In the same pan, melt the butter and add the shallots and cook until they are soft and translucent, about 5 minutes. Add the garlic and cook until the garlic is fragrant about 2 minutes. Add the crushed red pepper flakes, heavy cream and cream cheese. While stirring, bring the sauce to a simmer over medium heat. Continue stirring until smooth and creamy. Add the Parmesan cheese, artichokes and spinach. Cook until the spinach is wilted. Add the lemon juice and remove the pan from the heat. Taste the sauce for seasoning. Parmesan cheese is pretty salty so it may not need more salt. Nestle the salmon fillets into the sauce. Transfer to the oven and bake 10-15 minutes or until salmon is cooked through. Serve with lemon wedges and good crusty bread for optimum sauce soakage. Or cook up some orzo to toss with the extra sauce. Y

The Magic of Port

A SHORT GUIDE FOR THE PERPLEXED

FOR MANY WINE LOVERS, PORT IS A SUBLIME TREAT. SWEET AND DISTINCTIVE, PORT CAN COMBINE A RANGE OF RICH FRESH AND DRIED FRUIT, NUTTY, AND OTHER FLAVORS WITH velvety texture and the punch, power, and pizzazz that comes with 15-20% alcohol content (ABV). It’s terrific by itself, with chocolaty, vanilla, baked fruit and other desserts, or with an assortment of cheese before or after a meal. For the uninitiated, however, there’s a catch. Port is made in multiple styles selling at widely different price points that can make buying Port a perplexing experience. My goal, then, is to provide some tips for buying and appreciating Port. Hopefully, they’ll encourage you to try or renew your acquaintance with this delicious and enjoyable wine. Most good wine retailers have a selection of Port. In-store, it might be in the dessert wine section near wines, like sherry and sauternes, or with other wines from Portugal, the country where all authentic Port is made. Even if you know a little about Port, it’s okay to ask: What is all this stuff? How are "vintage,” “LBV," "tawny,” "ruby," Ports

different from one another? Most obvious, of course, is the big range in prices such as vintage Port with seemingly random years, such as 1994, 1997, 2003, 2011, or 2016, 2011, 2003, 1997, 1994 or even much older vintages costing $75, $100, or $200 and more. At the other extreme, bottles labeled ruby may cost only $10-20. And in between those price points, there should hopefully be some bottles that say 10, 20, or 30 year-old tawny Port and other bottles labeled Late Bottled Vintage, or LBV with a vintage year and possibly an indication whether the wine is unfiltered or not. Clearly, not all Port wine is the same, any more than are all California cabernet sauvignon or pinot noir wines. Port, though, is in a special category. First, all Port is fortified by adding brandy during fermentation, leaving it both sweet and potent. The various styles result from careful grape selection and distinctly different winemaking techniques that create Ports that can be as different as they are alike. Before explaining further, a little background is essential.


Magic in a Bottle Part of the magic of Port wines is that they are made at all. Like some other famous and delicious wines, most of the best Port wines are made from grapes grown on hillsides and river embankments so steep as to seemingly defy cultivation. Yet that’s precisely what people have been doing for over a thousand years. Great German riesling vineyards reside on the steep slopes rising from the Rhine River's Mosel tributary. Similarly, superlative Syrah is grown on sharply angled inclines lining France’s Rhone River. But no wine-growing area is as spectacular and formidable as Portugal’s Douro River valley. Its embankments ascend as sharply as 70 degrees, interspersed with olive trees and neatly terraced vineyards cut over centuries into the schist and granite rock with walls as high as 15 feet. They’re planted mostly with the touriga nacional, touriga franca, tinta roriz, and other grape varietals needed for blending quality Port. Each imparts specific colors, smells, tastes and other characteristics that help make each bottling unique. The accompanying photos give a sense of this terrain. One shows the view from a high vineyard and olive orchard my wife and I visited overlooking Pinhão (peenyeow), the town at the center of the Douro River valley’s most important growing area. The grapes grown in this area will ultimately make many of the finest Port wines. If it looks steep looking down, many slopes appear positively wall-like when viewed from the river’s surface 1,500 feet below, as the second photo shows. An added challenge is the upper Douro valley’s climate. It’s semi-arid with modest rainfall, freezing cold winters, and brutally hot summers. Summertime temperatures can routinely exceed 100 degrees. About 60 miles upriver from the Douro’s source near Porto, Portugal's second-largest city, mountains form a natural barrier that blocks most cool, humid Atlantic Ocean air from reaching the upper river valley. To adapt, grapevines on the valley’s slopes often send roots 60 feet or more into the rocks. Remarkably, these austere conditions produce grapes that can achieve exceptional levels of ripeness that will produce beautifully balanced wines with opulent, inviting flavors. Making and shipping Port wine posed considerable challenges until the middle of the last century. The upper Douro valley’s formidable terrain, fast-moving water, and dry, hot conditions were inhospitable to easy travel and settlement. A rail line did not connect Porto and the upper valley until the late 1800’s and modern roads weren’t built until much later. So small, flat-bottomed, gondola-like boats were the only means for transporting wooden casks of Port downriver from Pinhão to the lodges, or warehouses, in Vila Nova de Gaia across from Porto where most Port wines are still aged, blended and bottled. Dams and locks were constructed on the Douro late in the last century, making possible today’s popular cruises up the Douro and into Spain. Making Port The historic methods for fortifying wine are still used today. Strong grape brandy is added roughly 36 hours into the fermentation process. That raises the wine’s alcohol level to 18-20%, which kills fermentation yeast before it converts the nascent wine’s remaining sugar to alcohol. The fortified wines are kept segregated by grape type and vintage and put into wooden

casks for aging and blending. Initially, Port was shipped in casks and then poured into flasks for drinking. However, around 1775, Port became the first wine to be stored and shipped in sturdy cylindrical wine bottles that could be securely corked and sealed to lie flat during storage or shipping. These new bottles also made long-term bottle aging practical, giving birth to Vintage Port. More on that momentarily. Christian monks in the region were likely the first people to fortify wines with alcoholic spirits, probably to make them both sweeter and more potent. For 17th and 18th century British merchants, fortifying wine in this way solved an important problem. While traditionally made Portuguese wine often turned bad during the

long, sometimes difficult voyages to British ports, fortified wine withstood the trip. The timing was fortuitous. British upper classes had developed a taste for French wines, whose shipments during the 18th century declined and, for a time, stopped as relations between France and England deteriorated. British merchants, who enjoyed good relations with Portugal, filled the gap with increasingly popular Port. Ultimately, a handful of British shipping and merchant families and wealthy Portuguese dominated the Port trade. Their names, like Cockburn, Croft, Dow, Graham, Taylor Fladgate and Sandeman, still grace Port bottles today, along with now-famous Portuguese brands like Fonseca, Quinta do Noval, Quinta do Vesuvio, Quinta do Villado, and Ramos Pinto.

Buying and Appreciating Port There are four main styles of Port: vintage, LBV (Late Bottled Vintage), aged tawny, and ruby or reserve. Each style is different due to the quality of grapes used and the winemaking and aging methods employed. All, except Vintage Port, are ready to drink when bottled. VINTAGE PORT: Vintage Ports are deeply colored and known for their power, velvety texture, and vivid, sometimes explosive, rich cherry, plum, blackberry, chocolate, spice and other flavors. Try the Wine <<< “declared” vintage. Declared vintages typically occur only two or three times a decade. Consequently, Vintage Port is available only for these selected years. After being fortified, Vintage Port is stored for two years in oak barrels, blended, and bottled for additional aging. They’re often not released until five years or more after the vintage year, and then continue to develop for decades. Experts generally recommend against opening Vintage Port until at least 10 years after the vintage, although producers are working to make some Vintage Port that can be appreciated sooner. Check bottler websites for opening recommendations. Vintage Ports build up sediment and need decanting. LBV OR LATE BOTTLED VINTAGE PORT: These Ports can be blended in any year from a single year’s highquality grapes. LBV is aged four to six years in barrels before bottling and is ready to market and drink at that time. LBV Port’s basic color and flavor profiles are similar to that of vintage Port, though at a fraction of the cost. Expect less character, power, richness and vivid flavors than properly aged vintage Port. Unfiltered versions are preferred but throw off the sediment and need decanting. Once opened, they can last nicely up to a couple of weeks in the refrigerator. Some people suggest pouring it off into smaller containers to reduce oxidization. AGED TAWNY PORT: Tawny Port is quite different from vintage and other Ports. It’s made from highquality grape blends of different vintage wines that have aged in porous oak casks for the average number of years specified on the bottle: usually 10, 20, or 30 years, and in some cases 40 years or more. The older they are, the more expensive they'll be. (Wines labeled simply tawny are often blends of lesser quality aged red and white Port.) I love aged tawny Port and recommend 10 and 20-year versions for both their quality and lower cost. Extensive oak aging gives aged tawny Port its classic amber or auburn color and seductive combination of nutty, fresh and dried fruit, and vanilla flavors on a silky frame. Aged tawny is more subtle than the more powerful, berry-fruit flavored vintage Port. A typical bottle should last up to two to four weeks after opening if refrigerated. It might turn brown after several days but should still be delicious. RUBY OR RESERVE PORT: These are usually inexpensive Port wines made with good quality grapes from multiple vintages. They've been aged four to six years before being bottled, sometimes with a “salesy” label and moniker to get your attention. Good ones are bold with tasty, uncomplicated cherry-berry flavors. Stick with leading producers for better quality. In addition to the producers I mentioned above, also look for Niepoort, Quinta do Intanfado, Carvalhas, Warre, Churchill, Vale D. Maria, Quinta do Crasto, and Ferreira. Any of these brands are worth trying. Y

ike many readers of this publication, I have spent quite a hefty chunk of my days on this Earth at Frank McDonough Park. It's where countless first goals, touchdowns, and other priceless memories have been made. The park is named after the late former Lighthouse Point Mayor Frank McDonough, who served our community for over two decades and was instrumental in our little town's founding. During this time of global pandemic and national political upheaval, perhaps a story about how two mayors of Lighthouse Point and Pompano Beach, resolved the prickly issue of higher water rates will remind us of simpler times. Frank McDonough gave decades of his life to our community, and in an interview with a Florida Atlantic University student reporter, Barbara Zisk, in the final months of his life, he told a story that would have made an excellent episode of "Parks and Rec." In the late 60s, the City of Pompano Beach considered raising the water rates for a portion of Lighthouse Point that was still subscribed to Pompano Beach's water distribution system. When McDonough became aware that

some Lighthouse Point residents would have to pay higher water rates, he felt it was unfair since not all Lighthouse Point residents would be subjected to the higher prices. At the time, the mayor of Pompano Beach was a man by the name of Ed Stack who also owned the Silver Thatch Tennis Center. "Everybody who was anybody in tennis visited there, played there, and Ed Stack owned it," said McDonough during his interview with Zisk. So, the next time the press brought up Pompano Beach raising those rates, McDonough publicly challenged Stack to a tennis match. The winner would decide whether or not to raise the water rates. Eventually, after several years, they finally played. However, Stack had apparently been training with a professional tennis player for weeks ahead of the big match and leaking his efforts to the press. "His pro was Ian Laver. Rod Laver was the great Australian left-handed tennis player... This was his cousin, who was also a great pro," McDonough recounted.

Stack brought out all the stops for this match. "Ed had the band from Pompano Beach High School. He had the cheerleaders. He had a professional sitting in the chair to mediate the match. He [the umpire] had been doing this all his life; everywhere, England, [Wimbledon] and a real pro," McDonough remembered during his interview with Zisk. According to McDonough the referee clearly favored Stack. "He called out balls that were obviously in. He just harassed the daylights out of me all in good fun," he recounted to Zisk. "And Ed's standing back there with a big smile on his face," said McDonough. The fix was in all along, but not how you might expect. "The thing was, he didn't have a chance. He wasn't that good," said McDonough In the end, Mayor Stack of Pompano Beach threw his hands in the air and conceded the match to McDonough. And he didn't increase the water rates to the residents of Lighthouse Point. If only things were still that simple. Y

With all the tennis courts closed during quarantine, I would sit on my balcony and enjoy my morning coffee. Our Gumbo Limbo tree had a couple of very bright orange birds hopping around in it. At first, I thought they were Baltimore orioles, but after a quick internet search, I learned we have spotted chested orioles here in South Florida. Who knew? I was then pleasantly surprised to see that they had a nest at the very top of the tree, and were making many visits throughout the day. I put my 400 mm “space shuttle lens” on my tripod-mounted camera and had the experience of a lifetime for the next two months. The resident Lighthouse Point “bird lady, “ Cynthia Rohkamm, told me I was very blessed to witness three baby orioles being raised right outside my window. When it came time for the babies to take flying lessons, I called my neighbors and asked them to keep their indoor-outdoor cats inside for a few days until the babies were fully flighted. Just when I thought they had flown away for good, one drizzly day, dad and baby were on the fence looking for more caterpillars. Snap! Another Audubon photo Unlike many people, I was never bored during quarantine because those orioles must have fed those babies 100 caterpillars every day. Now I guess we have another bird lady in Lighthouse Point. With a bird feeder in the backyard and another in the front yard, I have captured some fantastic photos of birds that I never really paid attention to before this Covid-19 fiasco. It’s incredible what’s all around you if you take the time to look.
