Food Issue

Welcome, fall! As the leaves turn and the air cools, our cravings lean toward those comforting flavors that warm the soul.

For me, autumn brings back cherished memories of sitting in my mom’s kitchen, surrounded by the aroma of cinnamon, baked apples, pumpkin pies, and homemade Italian cookies. Food has a magical way of connecting us to the past while creating moments to savor in the present. Whether it’s a night out with friends or a cozy dinner at home, these shared meals make life flavorful.

In this issue, we explore the catering options for your next celebration at Black Gold Golf Club, discover the delicious lunch and dinner offerings at Stefano’s— and learn about Frank’s inspiring commitment to giving back to our communities. We’ll also dive into tips for designing a kitchen that blends functionality, style, and convenience, Oktoberfest, and The History of Halloween.

In honor of our food issue, I encourage you to try cooking a new dish in preparation for the holidays—or visit a local restaurant with family and friends. Supporting local businesses not only feels good, it strengthens our communities.

Here’s to a season of gathering, savoring, and stirring up memories that last a lifetime.

Thanks for reading Lifestyle, and I hope to see you around town.

What could be better than sharing a delicious homemade meal with family and friends in the comfort of your own home?

Cooking in a kitchen that’s stylish, functional, and ready for holiday hosting!

Let Interior Exterior Designs, Inc. take your personal space from drab and dated to tastefully customized, refreshed, and conveniently designed.

For owner/designer Leon Williams, true craftsmanship means doing things the traditional way—with hands-on expertise and uncompromising quality.

“We’re just an old school, furniture-grade custom cabinet shop,” he says.

“We're not just building boxes, ordering cabinets online, or having the parts milled by another company and then assembling them in our shop or at the clients’ home, like many companies do.”

Backed by an art background and extensive training in his trade, Leon opened the business in 1984.

Today, Interior Exterior Designs is a local gem for anyone looking to elevate their space, backed by a well-earned reputation for outstanding customer service and unmatched artistry.

“We have built our company name on the highest quality of cabinetry that you can have done,” says Leon.

“Are we the ‘best’ shop in the area? I'm not saying that we are… but because we specialize in design, mill, assemble, finish, and install every job that we are blessed to have landed, and give 100% on every job–that has catapulted us to a level that is within the top 5% of what we do.”

Another hallmark of Interior Exterior’s expertise is their dedication to designing spaces that are truly original.

“We aren't pushing ‘boxes’ for our clients' kitchen or bathroom–we're doing one of a kind, artistically enhanced kitchens, home offices, entertainment centers, furniture pieces, mantles, bathroom vanities, simple or luxury closets, and more,” he says.

The opportunities to elevate your home don’t end there–no job is too big or too small.

“We also do wainscoting, false beams, and moulding packages, which includes base, case, and crown. We can design and/or build pretty much anything that our clients can dream up!”

With decades of experience under his belt, Leon has refined his craft—starting with building genuine trust and lasting client relationships.

“We listen to our clients’ desires and wishes, building off of that initial consultation and ideas together to bring their vision of design and functionality to life.”

Leon and his team pride themselves on approaching every design or renovation project as a unique opportunity to create something truly distinctive.

“Every job is designed to look as amazing as possible,” he says.

“The fact that we're building each job one at a time in our shop–with no limitations–means we will be able to construct cabinetry in various woods, simple finishes, or artistically enhanced, distressed, stained, and glazed finishes.”

They enjoy showing clients the seemingly endless options for add-ons, making additional storage/organization a breeze in

their redesigned room or space, from trash pull-outs, blind corner systems, and ½ Lazy Susans to drawer dividers, cookie tray dividers, mixer lifts, and much more.

Convenience is key when creating fresh kitchen spaces for their clients.

“When designing clients' cabinetry, we typically design the base cabinets and the taller pantries with pull-outs behind the doors, so that they aren't having to bend over or stoop down to try to access the lower areas, which is especially advantageous as we get older,” he says.

They also design with a purpose, like creating a triangle setting for the sink, refrigerator, and range or cook top.

“As far as extra space for food prepping, that is typically not dictated by design, but will depend upon the space available,” says Leon.

“We always try to create the design symmetrically, centering the island and range tops when possible. There's usually plenty of space that's left for our clients to comfortably do their prep work.”

Where design flair meets functionality, Leon and his team expertly transform kitchens—creating spaces that balance practical needs with stunning aesthetics to ensure lasting client satisfaction.

“One of the first things I look for when I do the initial consultation is how to enlarge the clients’ kitchen,” he says.

“It's the most important room in the house, where our clients will spend a great deal of time cooking and entertaining. The most common feedback we get from our clients is that we provide numerous ideas for enhancing the floor plans, giving ideas that the competition didn't.”

These glowing client reviews are a result of taking the time to listen to their needs and creating unique ideas that are in-line with the customer’s space, vision, and budget.

“When we finish a project, it’s apparent that it was done in a custom manner. When they’re entertaining, there will be well thought out places for family and friends to all be able to sit around an island, or at a custom designed nook bench and table.”

What’s the most rewarding part of creating custom designs for their clients?

“It's a lengthy process, but when we're done getting creative with the design work, spending time in our showroom, selecting the details, woods, and finishes, it's always well worth the effort.”

CELEBRATE

LIFE’S

MOMENTS at Black Gold

From intimate gatherings to weddings, Black Gold creates memorable events with elegance, cuisine, and scenery.

This fall, immerse yourself in the stunning scenic beauty of Black Gold Golf Club, where gourmet dining and breathtaking views deliver an unforgettable experience.

Whether you’re looking to enjoy a delicious meal, play a round of golf, or celebrate memorable milestones in one of their elegant event spaces, Black Gold has it all.

“Black Gold Golf Club is more than an award-winning golf course. It’s a full-service event destination for weddings, social events, meetings, and golf tournaments.”

Guests flock to Black Gold for an upscale dining experience, featuring delectable dishes crafted by a skilled executive chef, Ron Armendariz, and his talented culinary team.

Recent accolades for Black Gold include Best of Yorba Linda (1st Place),” Best Event Services” (2024), The Knot “Best of Weddings” (2024), and WeddingWire “Couples’ Choice Awards” (2024).

Their onsite restaurant, Derricks Grille, was also recognized by the National Golf Foundation (NGF) in their nationwide survey for excellent quality and service.

Here, the catering philosophy centers on elevated hospitality, culinary creativity, and seamless event execution.

Led by Ron Armendariz, executive chef the culinary team creates seasonal menus featuring fresh, locally inspired ingredients, from plated dinners to refined buffets tailored to suit every budget.

In addition to a beautiful backdrop, there’s much more than meets the eye at Black Gold.

“What makes us unique is the combination of our incredible setting and the care we put into every detail. The views are breathtaking, but what guests remember most is how we make them feel–welcomed, relaxed, and able to enjoy their celebration. Whether it’s a wedding, anniversary, or golf tournament, our team works closely with each client to bring their vision to life, and our in-house chef creates menus that are as memorable as the occasion itself.” Julie Crow, Director of Marketing.

From the first planning stages to the final toast, hosting a special event at Black Gold is effortlessly enjoyable for every client.

“We start by getting a feel for what they want their day to be like. We’ll show them the spaces, talk through menu ideas, and go over timing. We put together a clear proposal and keep in touch along the way, adjusting as needed. On the big day, we’re there early, making sure everything’s ready.” Joni Egger, Director of Catering and Events.

In the world of catering, flexibility is key. Black Gold prides themselves on staying prepared, adaptable, and focused on delivering a seamless experience for their guests.

Chef Ron says, “One of the big challenges in catering is timing and making sure everything comes out fresh, hot (or cold), and right when guests are ready. We handle that with a solid game plan and a team that knows how to adjust on the fly if things change. Guest counts can shift or dietary needs pop up last minute, so we always have backup options ready. And if something unexpected happens, we pivot quickly so the client never feels the stress.”

The catering and events team at Black Gold knows that the mark of a truly successful event is fantastic food–so they make sure it’s unforgettable, from “grab and go” breakfasts to buffets that are anything but ordinary.

“We make the food just as memorable as the event itself, and often customize breakfast, lunch, and post-round options,” says Armendariz.

Black Gold’s culinary team brings global flavors to the table, offering a diverse range of cuisine designed to delight even the most discerning palates.

“From All-American to Halal, we offer it all! We take a lot of culinary options into consideration so our menus can appeal to everyone.”

Client satisfaction starts with careful planning for dietary needs and allergies well in advance, all without compromising on quality or flavor.

“When we plan an event, we ask about any special needs up front, so our team can create options that are safe–and just as delicious as the rest of the menu,” states Egger.

In an industry as detail driven as event planning, Black Gold sets itself apart by delivering a truly personalized experience.

“Black Gold Golf Club is more than an award-winning golf course. It’s a full-service event destination for weddings, social events, meetings, and golf tournaments.”

“We really listen to what each client wants, then work together to bring those ideas to life in a way that feels effortless for them. We build relationships by taking the time to get to know the people behind the event. It’s not just about menus and timelines–we want to understand their style, their priorities, and what will make the day special for them.”

Black Gold stays ahead of the curve by embracing the latest trends in event planning to make every event feel fresh and unique.

Julie Crow explains, “Our team is always looking out for what is trending both in food and décor presentation. We are always trying to offer what others do not.”,

Committed to sustainability and responsible sourcing, Black Gold does their part for the environment, too.

“Our Chef and his team are constantly searching and resourcing local sustainable ingredients. We actively participate by recycling food scraps and growing our own herbs. We participate in local food recycling programs using Chow Match, environmental grease recycling programs to recycle food grade oils, and we work hard to recycle all bottles and cans from our beverage program.”

“We are excited to roll out our new drop-off catering service for local businesses, perfect for office lunches and meetings. Additionally, we will be rolling out our new fall menu soon.”

FAMILY, FLAVOR, AND COMMUNITY AT STEFANO’S

STEFANO’S GOLDEN BAKED HAMS DELIVERS EXCEPTIONAL FOOD, PERSONALIZED SERVICE, AND HEARTFELT COMMUNITY SUPPORT, CREATING MEMORABLE MEALS AND LASTING CONNECTIONS FOR FAMILIES AND FRIENDS ALIKE.

In a world where dining out can often feel impersonal, local eatery Stefano’s Golden Baked Hams brings hospitality back to the table with their heartfelt mission.

“We provide outstanding food with great service at reasonable prices,” says owner Frank Stefano, a Yorba Linda resident since 1991 and dedicated community leader.

Frank & Colleen
“We love what we do and enjoy the interaction with our guests; they are part of our family—we are constantly ‘touching tables’.”
–Frank Stefano

“Our approach has always been to make sure the customers are treated like guests in our home, and we are preparing a nice lunch or dinner for them. We try very hard to make all customers feel very welcome from the time they walk through the door until they are ready to leave. In a nutshell, customers always come first,” he says.

“We love what we do and enjoy the interaction with our guests; they are part of our family—we are constantly ‘touching tables’—another way of saying we are overly attentive to their needs.”

Beyond his business endeavors, Frank is a devoted humanitarian who embodies the highest ideals of his beloved community.

He and his wife, Colleen, actively support St. Martin de Porres' Octoberfest and were co-chairmen for the event several years ago, and STEFANO's has provided a weekly meal service to at-need parishioners through church volunteers for over twenty years.

They are also involved with For Family of Active Military, assisting military families during the holidays and honoring fallen soldiers.

“We learned many years ago to give back as much as we can to the community, preparing meals for senior citizens, donating to food banks, and participating in local school events. Two of our favorite recent events have included participating in career days at Travis Ranch and speaking to young high school boys about writing resumes and job interviews.”

The Stefano Team

In addition to strengthening their community connections through philanthropy, STEFANO's stands out for its unique, multifaceted approach to food service.

“First, we are Golden Baked Hams, the leading provider of spiral-cut hams and full dinners at the holidays. Secondly, we are a full-service catering company, providing food for engagements, bridal and baby showers, birthdays, and celebrations of life. Lastly, we are a full-service restaurant known for our outstanding panini-style sandwiches and our Italian entrees.”

Catering is a meaningful area of expertise at Stefano’s, where they aim to create unforgettable events for their clients.

“Catering is a special event for our guests—it doesn’t matter if it’s a birthday, shower, graduation, or celebration of life. We work hard to provide the best food, always being on time with hot or cold food and setting up according to the customer’s needs.”

When it comes to their fabulous food, a few standout dishes always steal the show at STEFANO's.

“Our most requested lunchtime dish would have to be our ham and Swiss panini, but on Fridays, it’s our famous lobster rolls, which are only served on Fridays and Saturdays from Ash Wednesday to the last Friday in October. After 5 pm, we sell many spaghetti and meatball dinners, chicken piccata dinners, and, on Friday nights, our prime rib dinners are the best value in town!”

STEFANO's takes pride in making local support a cornerstone of everything they do.

"Over the years, STEFANO's has donated hams, turkeys, and side dishes to such groups as Bracken's Kitchen, local food banks, and senior citizen groups experiencing food insecurity. Additionally, STEFANO's supports a growing number of various local organizations, schools, and charities.

“Our family has been blessed with many successes over the years, and it’s very rewarding to see many families coming with their children and grandchildren.”

For Frank, giving back isn’t just a kind gesture-- it’s a way to uplift and empower others. Frank’s inspiration to give back to the community stems from the satisfaction of making a positive impact. His dedication to coaching young talent has led to several success stories among his former employees.

“We are extremely proud of our team— some of whom have been with us for all twenty-two years! Our alumni group is special. We have multiple nurses, one doctor, two law enforcement officers, one physical therapist, a chef, and one young man who went on to manage the cafeteria services for a major university!”

At Stefano’s, success isn’t just measured in meals served, but in the generations of families who continue to walk through their doors–a tradition they cherish deeply.

“Our family has been blessed with many successes over the years, and it’s very rewarding to see many families coming with their children and grandchildren. We even have a couple of third generations coming in!”

At the end of the day, Frank firmly believes that drive, dedication, and personalized customer service are the keys to success in any business.

“Make your customers feel welcome; help them feel like they are guests in your home. Remember, at the end of the day, what sets you and your small business apart from the competition is understanding what you do and being passionate about it!”

HISTORY OF HALLOWEEN

Unmasking Halloween’s journey through time—from sacred traditions to costumes, candy, and cultural celebration worldwide.

The History and Evolution of Halloween Halloween is a holiday celebrated each year on October 31, and in 2025, it falls on a Friday. Best known for costumes, candy, and spooky fun, Halloween has a deep history that stretches back thousands of years to ancient Celtic traditions.

“What began as a Celtic ritual honoring spirits has become a joyful, candy-filled celebration of costumes, community, and imagination.”

ANCIENT ORIGINS: THE FESTIVAL OF SAMHAIN

Halloween traces its roots to the ancient Celtic festival of Samhain (pronounced “sow-in”), which marked the end of the harvest season and the beginning of winter—a time often associated with death. Celebrated in what is now Ireland, the United Kingdom, and northern France, Samhain was observed on the night of October 31. The Celts believed that on this night, the boundary between the worlds of the living and the dead became blurred. Spirits were thought to return to Earth, and people lit bonfires and wore costumes to ward off roaming ghosts.

FROM ALL HALLOWS EVE TO HALLOWEEN

By the 8th century, Pope Gregory III designated November 1 as All Saints Day, a time to honor saints

and martyrs. The night before became known as All Hallows Eve, eventually shortened to Halloween. Over time, All Saints Day adopted some of the traditions of Samhain, blending Christian and pagan practices. This transformation helped Halloween evolve into a holiday of both reverence and revelry.

HALLOWEEN COMES TO AMERICA

Halloween was not widely celebrated in colonial New England due to the strict religious beliefs of Puritan settlers. However, it was more common in southern colonies like Maryland, where a mix of European, Native American, and African cultures began to shape uniquely American Halloween customs.

One of the earliest forms of celebration in America was the “play party”—a gathering to celebrate the harvest where neighbors shared ghost stories, told fortunes, and sang. These social events planted the seeds for today’s Halloween parties.

In the mid-1800s, a surge of Irish immigrants fleeing the Potato Famine brought their Halloween traditions to the U.S., including the practice of trick-or-treating and costume-wearing. These customs spread quickly and began to take hold across the country.

THE RISE OF TRICK-OR-TREATING

Trick-or-treating has its roots in European customs where people would go door to door, often in disguise, asking for food or money in exchange for songs or prayers for the dead. This practice evolved in America into the modern tradition where children dress in costumes and go house-to-house collecting candy.

During the late 1800s, there was a movement to make Halloween a more community-centered and less frightening holiday. Newspapers and community leaders encouraged families to focus on festivities, games, and friendly costumes, rather than ghost stories or pranks.

By the 1950s, Halloween had become a holiday primarily aimed at children, thanks in part to the postwar baby boom. Trick-or-treating became widespread and was seen as a fun, low-cost way for neighborhoods to celebrate together and discourage vandalism.

SUPERSTITIONS, SYMBOLS, AND SPOOKY MYTHS

Halloween has always carried an air of mystery and superstition. In Celtic traditions, spirits of the dead were welcomed with food offerings left at doors, roadsides, and table settings. Candles were lit to guide souls back to the spirit world.

Over the centuries, Halloween customs evolved to include black cats, witches, ghosts, and other eerie symbols. Many superstitions still persist today. For example:

• Black cats were once believed to be witches in disguise.

• People avoid walking under ladders due to old beliefs about sacred triangles.

• Breaking mirrors, spilling salt, or stepping on cracks in the sidewalk are still seen as bad luck— especially near Halloween.

Even the colors associated with Halloween— orange and black—have symbolic meanings: orange represents the harvest, while black symbolizes death and darkness.

HALLOWEEN IN POP CULTURE

Halloween has become a favorite theme in movies and pop culture. The “Halloween” movie franchise, which began in 1978 with John Carpenter’s classic slasher film, helped define the horror genre. Other famous Halloween-themed films include “Scream,” “Nightmare on Elm Street,” and “Friday the 13th.”

On the family-friendly side, films like “Hocus Pocus,” “The Nightmare Before Christmas,” “Beetlejuice,” and the beloved “It’s the Great Pumpkin, Charlie Brown” offer fun and spooky entertainment for all ages.

HALLOWEEN TODAY: A COMMERCIAL POWERHOUSE

Halloween is now the second-largest commercial holiday in the United States, behind only Christmas. Americans spend over $11 billion annually on Halloween-related items. This includes costumes, decorations, and—of course—candy.

Here are some surprising statistics:

• One-quarter of all candy sold in the U.S. each year is purchased for Halloween.

• In 2023, Americans spent around $700 million on pet costumes alone.

• In the early 1900s, before phones were widespread, Halloween greeting cards were as popular as Christmas cards.

• During World War II, Halloween was temporarily scaled back due to sugar rationing.

THE SPIRIT OF HALLOWEEN

What began as a sacred night rooted in fear of the unknown has transformed into a joyful celebration of imagination, fun, and community. From ancient bonfires and ghostly legends to pumpkin carving and trick-or-treating, Halloween continues to evolve—honoring its mystical origins while embracing creativity and togetherness.

THE SEASON’S BEST SANDWICHES

Stacked forFall

There’s something deeply satisfying about a well-made sandwich—especially when it comes together with minimal effort but delivers big on flavor. As the season changes and appetites grow heartier, fall is the perfect time to get creative with ingredients tucked between slices of crusty bread or buttery rolls. Whether you’re looking to upgrade your lunch routine, enjoy comforting flavors and bold textures, or impress guests with a no-fuss meal, these easy-tomake sandwiches strike the perfect balance between simple and sensational.

• 2 tbsp butter (for toasting)

INSTRUCTIONS

• 2 ½ tbsp mayonnaise

• 1 tbsp horseradish sauce

• 1 tsp Dijon mustard

• Arugula

• Cherry tomato

• Caramelized onions

Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. • 1 brioche bun (toasted)

Lightly butter the inside of the bun and toast in a skillet or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast.
