F

or the love of FOOD! I got to venture into some of the coolest restaurants in town and meet the most determined and passionate people that are seeing their restaurant dreams come true. I have come to realize that food is involved in almost every aspect of our lives. From the time I get up on a normal weekday and try to provide a healthy yet hardy meal for my kids to the special occasion where I bake for days to make a meal just right. Food is a way that I can express myself and love on my friends and family.

My favorite date night is going to dinner and a movie. After spending years with young kids and hearing the words “mac and cheese” or “chicken nuggets” associated with every dinner, I welcome the opportunity to enjoy an adult meal, let alone a whole two hours of silent bliss while watching a movie in the theatres with my hubby. In this food issue you will see how Casey Gibbons, mom of five, conquered the dinner table. Follow her easy tutorial on how she has made dinner an enjoyable place to be with family even with small kids. Also, Carrie Hudson in our Healthy Lifestyle section gives us a few kid friendly and ultra healthy recipes that even I can follow. When milestones in our lives happen we are forced to realize how fast time flies since the last special occasion like our child’s birthday party or our last wedding anniversary. Our family has made meals a time to stop the clock if only for a moment and gather around the dinner table to discuss the happenings of the day.

Around Town SPRINGFIELD PUBLIC SCHOOLS OFFICER OF THE YEAR Officer Rodney Williamson was named Springfield Public Schools 2012-2013 Officer of the Year in December. A 12-year employee of SPS, Williamson currently works at Parkview High School as a school police officer, a job he thoroughly enjoys. Williamson has worked at several Springfield schools, including Central and Hillcrest high schools and Jarrett Middle School. “Just in general, I love my job all the way around,” says Williamson. “Whether it’s helping somebody or catching something, it doesn’t matter. I love it. I like solving my cases, whatever it takes to solve them, but I like the other side of the spectrum of helping people out, too.” Today, he gives thanks to his SPS family, the school police officers he works with every day. “He’s a very good police officer,” says Tom Tucker, director of school police services. “He’s very good at establishing relationships; he’s firm and fair, whether it’s with parents or students.”

SPRINGFIELD MANUFACTURER ADDS 88 NEW JOBS Stainless Technology, a local manufacturer of stainless steel tanks, has announced its plans to add up to 75,000 square feet to its Springfield facility in the Partnership Industrial Center. A longterm PIC tenant, Stainless Technology’s expansion will create up to 88 new jobs and result in a multi-million dollar, multi-phase capital investment into the Springfield region. A division of Bethlehem, Pennsylvania-based ABEC Inc., Stainless Technology produces high quality tanks and vessels for use in the biopharmaceutical industry. Spurred by a growth in sales, the expansion effort was assisted by Chamber/SBDC staff who helped secure these jobs and investment for Springfield after competition with another ABEC plant in Pennsylvania. “The Springfield community has been very responsive to the needs of our growing company,” says Scott Pickering, president and CEO of ABEC Inc. “We are looking forward to working with local partners to expand our facility, recruit candidates for these new job openings, and ultimately, make the quality products our customers are seeking.” The new jobs created by Stainless Technology’s expansion will pay above the county average wage and will more than double the company’s current workforce of 69 employees.

2014 CHOCOLATE UNIVERSITY TRIP TO TANZANIA Askinosie Chocolate partnered with Drury University and selected 13 Springfield high school students for participation in their upcoming Chocolate University program. These students, along with Shawn Askinosie, founder and CEO of Askinosie Chocolate, will travel to Tanzania, where Askinosie Chocolate sources a portion of its cocoa beans, in August 2014. NEW ADDITION TO VINO CELLARS The New Year holds much promise for the Vino Cellars family. They will be opening a new location at Table Rock Lake. Starting in January the company merged with Gourmet Grocer, which is located between Branson West and Kimberling City, lake view included. The new addition will be called Vino Cellars at the Lake.


“Steve and Mandy Hoffman, owners of Gourmet Grocer, have an absolutely wonderful shop and have truly built a unique experience highlighting not only great wine but great gourmet foods as well,” says Matt Bekebrede, owner of Vino Cellars. The Springfield location hosts weekly events, located at 2137 W Republic Rd.

ROUTE 66 PARTY Springfield’s Rockabilly fans boogied down at Billards downtown to benefit the efforts to revitalize Route 66. The event “Night at the Blue Room” was an evening of music and support for Route 66. The evening featured rockabilly acts Mike Mac and the Rockabilly Cats, Blue Plate Special and Mary of Mary and the Hound Dogs. Funds raised cover construction costs for a re-creation of the iconic Red’s Giant Hamburg sign, a major landmark along the historic Route 66 Highway. “We are thrilled to receive such a positive response, both locally and nationally, to renovate a key portion of the world-famous Route

66 highway,” explains Cora Scott, director of Public Information and Civic Engagement for the City of Springfield. “We look forward to continuing our fund-raising efforts with CrowdIt and are excited about the possibilities.” As the birthplace of Route 66, Springfield is the first municipality to use crowdfunding to help renovate the renowned national highway. CrowdIt.com was selected because of its local Springfield roots and early success in the crowdfunding market. Upcoming projects include a relocated motor court cottage with restrooms, sign replica, vending machines and visitor information; a filling station replica; and a Birthplace of Route 66 sculpture.

Mealtime Satisfaction Article Casey Gibbons

I

t came on suddenly. Just ten days after my wedding, reality hit: My husband wanted to eat every day AND he thought I would be providing the food! Me. Not his mama. Not the school cafeteria. Not the fast food places. The non-cooking girl who was so busy doing other things that she never learned how to cook is supposed to provide meals. The flash of shock was soon sobered when I realized that I was hungry, too. To add to the situation, we started having children before I truly conquered cooking so then I was dealing with not only what to make but also how to avoid chaos at the table. I had idealistic images in my mind of happy, thankful children gathered peacefully around the table while their parents shared life insights for 30 minutes. But all I saw in front of me were wriggly, talkative, complaining, fast-eating little people that made big messes and weren’t ready for meaningful conversation. This is not what I had envisioned with delicious meals and well-mannered children. So, I decided to do what any sensible woman would do...I cried a lot then I chose to conquer this thing called mealtime. In my journey to

fight hunger and attain happiness in the home, there are two chicken nuggets of insight I want to pass on for those who need them: 1. Make a Simple Meal Plan with 10 Dinner Recipes. All you have to do is learn ten dinner meals to the best of your ability and use them over two weeks. Choose five categories and two meals for each category. For example, two meals that are American, two meals that are Italian, two meals that are Mexican, two meals that are crockpot, and two meals that are hearty soup/salad/ bread. Voila. These will carry you for five nights a week for two weeks. The other two nights a week are for pizza, dates or carryout. (And, of course, the ever-rewarding backup of “cereal night” is a lifesaver if you get in a pinch.) Pick whatever your heart desires! Choose according to your family’s needs and time. Go online. Look at cooking books. Ask friends. Just focus on learning 10 main meals. Once you have this down, you are set. No need to think of 365 dinner plans. Just rotate 10. And when life changes and you are in another season with


more time, you can add to your list. But for now, there is a set rotating plan with delicious food you made five nights a week. What about breakfast, lunch and snacks? These are easier to figure out. You can rotate those every week. For instance, every Monday for us is oatmeal and boiled eggs for breakfast. Cream cheese/jam wraps are for lunch with carrots and ranch, chips and applesauce. And snack is a granola bar. The same goes on for the other days of the week. Breakfast, lunch and snack are the same on certain days every week while dinner rotates every two weeks. After years of this plan, nobody has become bored and I can rest assured breakfast, lunch and dinner are covered! 2. Make Mealtime a Priority. Mealtime is primetime! One of my favorite poems is by family activist Nancy Campbell that implores, “Where can you communicate while you eat? Where can you enjoy real fellowship sweet? Where can you laugh with friends who are neat? At the table…Where can your children learn to sit still? Acquire eating habits that won’t make them ill? Be taught good manners of which some have nil? At the table…” All this and more unfolds at the table together. Once mealtime was determined to be an integral part of my family, the manners and methods followed. If there is school, work or extra-curricular activities during dinner then we make plans for other meals such as lunch or breakfast together. At the very least, we look at the weekly calendar and find at least 3 mealtimes we are all together. It literally took our family a few years to conquer table time. But the optimistic side to that is while there isn’t perfection, we do enjoy meals now. Some practical things we do to bring peace around the plates are as follows: 1. Create a comfortable atmosphere with lighting, place settings, and music. 2. Wait to eat until all have joined the table then give genuine thanks for the food.

3. Have adults make their plates first then have the older kids make the younger kids’ plates. 4. Consider having a minute or two of the silent game so everyone can calm down and prepare to eat peacefully. 5. Set the first few minutes for the adults to chat and the kids to listen while they eat. 6. Train for manners but do not use meals to lecture or bring up conflict (that would make anyone sick!). 7. Ask meaningful conversation questions and have everyone listen to the answers. 8. Plan to have everyone stay at the table at least 20 minutes (although there are times I allow the toddler or baby to color or play so the rest can finish the meal). 9. Make sure the seats are comfortable for little ones. This helps cut back on the wriggles. 10. Have a dinner helper that gets up and down so mom doesn’t do all the work. Yes, learning a simple meal plan and prioritizing dinner has warded off hunger and added happiness to the buffet of life in the Gibbons home. So if you crave the same in your house, just take it one bite, or rather, one night, at a time and soon you will be satisfied! I

n today’s world, it’s tough being a mom trying to get your kids and grandkids to eat REAL food, when fast food is so convenient. We have become a society that consumes food like a product, not like the life-giving source of real food that it is. So what’s a mom to do? Get in the kitchen and start cooking from SCRATCH! Use real, wholesome ingredients that are organic and GMO-free when possible. Learn to cook in bulk so that the time you invest in the kitchen preparing healthy meals for your family can produce more than one meal. Cook enough for leftovers for another night that week when you don’t have time to cook, or freeze a meal for those nights when you need to be able to thaw something out in the fridge during the day and heat it up in the oven that night. As a mom, I understand how addictive processed foods are, and I too struggle to get kids to want to eat “real food.” It’s all about making healthy food taste good. Here are two healthy versions of all time kid favorites, redone to promote health and nutrition, and a little something sweet for dessert. It may take time for their taste buds to readjust from fat, salt, and sugar to healthy food, but it will happen. All recipes are from Chef Silvia, and you can find more out about this fabulous chef and her passion for healthy food at her website at ChefSilvia.com. Mac ’n Cheese with Cashew Cream and Broccoli

Ingredients: • 1 lb. pasta (I like a mini penne so that the sauce isn’t overwhelmed with a big pasta) • 1 lb. broccoli - par-boiled so that it’s halfway done 16 Springfield Lifestyle | February 2014

• 1 cup frozen baby peas • 2 cups raw cashews • 2 cups water • 3 slices of sun-dried tomatoes - cut in a 1/4” dice • 1 fresh garlic clove - finely chopped • 1 pinch of red pepper flakes for a bit of heat (optional) • 2 tablespoons of nutritional yeast • 1/2 cup of panko for the crunchy topping • 7 slices of fresh tomato for garnish Instructions: • Make the cashew cream by first soaking the cashews in the water for about 20 minutes. Add nuts and water to the bowl of a food processor and puree until smooth • In the meantime, cook the pasta in a large saucepan of boiling/ salted water, but drain when still quite firm to the touch (you’ll cook it for about half the recommended cooking time on the package) • Place a large (at least 10”) sauté pan over medium heat, add the oil and heat until hot but not smoking • Add the garlic and pepper flakes and cook just until the garlic begins to color • Lower the heat to med/low, add the cashew cream and the nutritional yeast and stir to incorporate. Bring to a simmer and allow the sauce to reduce and thicken for a couple of minutes • Stir in the pasta and follow with the broccoli, peas and sundried tomatoes • Add the pasta and sauce to a baking dish


• Sprinkle liberally with panko and top with the tomato slices • Bake covered in a pre-heated 350 degree oven for 20 minutes; uncover and cook under the broiler for 2 minutes • Remove from the oven and serve Sweet Potato Fries with Panko, Parmesan, Garlic & Sage

These sweet potato fries are so good the potato lover in me may just become a convert, especially if they’re crispy and coated in gluten-free panko and an aromatic mix of parmesan, sage and garlic. They’re so easy you can make them in minutes. Your kids, friends and family will adore you, and you can rest assured that you’ve given them a healthy snack or side dish. Ingredients: (Based on 2 potatoes) Serves 2 people • 1/2 cup of gluten-free panko • 1/4 cup freshly grated parmesan • 2 garlic cloves, finely chopped • 4 or 5 fresh sage leaves, finely chopped • 1 Tablespoon olive oil • Sea salt and pepper to taste Instructions: Preheat oven to 450 degrees • Cut potatoes in half and then in 1/4-inch steak fry slices • Place in a large mixing bowl, add the oil and toss until all are well coated (add more if needed) • Season with salt and pepper and toss • Mix together the panko, parmesan, sage and garlic and place on a plate or leave on the cutting board • Dip each fry into the mixture on both sides. Press the mixture down with your hands to help it stick • Place fries in a single layer on a baking sheet that’s been lightly coated with olive oil or place a sheet of parchment paper on the tray and then layer • Bake for about 20 minutes or until cooked through

This recipe makes 2 dozen mini biscotti or 1 dozen large ones but can easily be doubled or tripled. Ingredients: • 1 1/2 cups of almond meal • 1/3 cup brown sugar • 1 teaspoon baking powder • 1/4 teaspoon salt • 1 large egg • 3 oz. butter • 1 teaspoon almond extract • 1 cup slivered almonds • 1 cup dried cranberries • 1 teaspoon of orange zest (optional) Instructions: • Cream together butter and sugar • Add vanilla and egg • In a separate bowl mix the dry ingredients: flour, baking powder and salt • Add the dry to the wet ingredients and mix. If too sticky add a bit of white rice flour • Add the cranberries, nuts and orange zest • Roll into a log about 2” wide and 1” thick for the mini and 3” wide for the large –flatten the top and sides • Place on a lightly greased baking tray • Bake in a pre-heated 350 degree oven for about 30 minutes until golden • Remove from the oven. Cool for about 20 minutes and cut on the diagonal (about 1” wide) to make into individual biscotti • Place them back onto the baking tray (cut sides exposed) for an additional 10 minutes

Gluten-free Cranberry Almond Biscotti

I’ve experimented with making gluten-free biscotti over and over and it wasn’t until this recipe that I was satisfied with the results. These are just the way biscotti are meant to be. Not too sweet, firm enough to dunk into your tea or coffee and not so hard that you’ll break a tooth eating one. They’re surprisingly easy to make and can be varied by changing the extract, the nuts and the cranberries. February 2014 | Springfield Lifestyle 17

But, the hidden gem inside is what has food lovers flocking to the resort, like migrating birds to warmer temperatures. Step in out of the cold and directly off the main entrance, and you’ll find Chateau Grille, a sophisticated dining environment cloaked in classic style and sunset light. Opened in 1997, the hotel and restaurant were the vision of Springfield businessman John Q. Hammons, who wanted to offer the Branson traveler luxurious, European-style, overnight accommodations blended with a culinary experience that surpasses all others. “Our goal for his vision is to offer a menu like no other in our area, along with a service experience that rivals those of grand European hotels,” says Jeffery VanCamp, assistant general manager, and director of food and beverage for Chateau on the Lake. “There’s nothing like us in a 200-mile radius. The minute you walk in the door, it takes your breath away.”

Chateau Grille’s chefs take great pride in preparing meals that are pleasing to your palette. But, more important to them is a regard for eating as an agricultural act. As participants in the Slow Food movement, they are deeply committed to using local, seasonal and organically grown foods in an effort to preserve the ecosystem. “As everybody has become more in tune with food, we have found a lot of great sources we didn’t used to have,” says Executive Chef Doug Knopp. This mission of sustainability is reflected in the grille’s extensive breakfast, lunch and dinner menus, with several meals containing ingredients sourced from nearby Rockbridge and Seymour. One popular dinner entrée is slow-roasted Muscovy duck served with paint (or sauce) made from elderberries grown on the Missouri State University campus. The ability to employ innovative cooking techniques also distinguishes the Grille’s chefs, who frequently use molecular science to transform foods from ordinary edibles to culinary concoctions.


Take the beef short ribs, for example. They’re basted with a mustard barbecue sauce and garnished with sarsaparilla air, a cloud-like foam created by infusing soy lechithin, a natural emulsifier, with sarsaparilla soda. The foam is a lasting, full-flavored addition to the ribs, as well as to the overall presentation of the dish. Chateau Grille also is wine-focused and has earned Wine Spectator magazine’s Award of Excellence annually since 2006. With an expansive inventory of 1,895 bottles and 185 selections, the Chateau Grille will have no problem recommending the perfect libation to pair with your South African broiled lobster tail or your prosciutto-wrapped lamb lollipop.

Jeffery is hopeful that by continuing to uphold this superior standard, regulars will stay, newcomers will arrive, and the Grille will be a hot spot for years to come. “Our goal is to continually strive to utilize what is close at hand, as our beliefs in both the Slow Food movement and farmto-table are deep, and to continue challenging our guests with a world-class, award-winning wine menu,” he says. “As with food, wines follow trends, and we enjoy being that trendsetter in our area.” Chateau on the Lake is located at 415 North State Highway 265 in Branson. Destination Jefferson City History Comes Alive in Missouri’s Capital

on’t tell my kids, but I sometimes judge a weekend away by whether or not we’ve tried something new. It could be an activity we’ve not done before or meals eaten in places other than chain restaurants; to me, taking them away from home means stepping outside our comfort zone, if even just a tiny bit. Our recent trip to Jefferson City ranked high on my approval list for many reasons. First, it’s a reasonable drive from our home in Kansas City, and the city itself is easy to navigate. Second, it’s filled with hometown treasures that are unique and just different enough to be fun, but not so eccentric that my sometimes-picky kids immediately decide they aren’t interested. After our brief time there, it’s easy to see why the city won the “most beautiful” small-town category in Rand McNally’s 2013 Best of the Road competition. As the capital city of Missouri, it seems remiss to spend any time in Jefferson City and not visit the Capitol building. We opted for the 45-minute guided tour, and the kids were thrilled that the tour focused on the art found inside the building and the history of the state of Missouri rather than actual legislative sessions. They loved how the tour guide helped them see that one painting looked like two different pieces of art depending on the angle from which it is viewed, and I was mesmerized by the collection of stained glass, murals and carvings that depict elements of Missouri history. 20 Springfield Lifestyle | February 2014

Our favorite part of the Capitol, however, is the four wall mural in the House Lounge. Titled “Social History of Missouri” and painted by Missouri native Thomas Hart Benton, the mural depicts vivid scenes of everyday Missouri life and angered legislators who wanted to downplay less appealing aspects of the state’s history. Using the mural as a roadmap, our tour guide brought to life the state’s rich agricultural roots, its struggles with slavery and its religious fervor. Our other favorite attraction in Jefferson City was the Missouri Penitentiary Tour. Named ‘The Bloodiest 47 Acres in America,’ by Time Magazine, the prison opened in 1836 and was once the largest prison in the United States, housing 5,200 inmates at its peak. Once “home” to such infamous characters as “Pretty Boy” Floyd, “Sonny” Liston and James Earl Ray, the penitentiary served Missouri as the oldest prison west of the Mississippi River for more than 168 years. It closed in 2004. Now, former guards lead daily tours that are filled with not just history but first-hand accounts of everything from the dire state of its cafeteria food to contraband weapons to reported ghost hauntings in various cells. My boys especially enjoyed the first hand stories our tour guide shared, of the conversations he’d had with inmates and the details he disclosed about the day-to-day life inside the penitentiary.

Our trip was also full of good food from locally owned restaurants. Not far from the Penitentiary is Prison Brews, a kitschy, casual and unique brewpub. We enjoyed the rustic beer bread and cheese, the smoked brisket sandwich and their flatbread pizza but the real standout was dessert. Their BIG cookie, an oversized chocolate chip cookie baked in the wood fired oven and topped with ice cream and chocolate sauce, was a hit with each of my three kids. We enjoyed dinner at Canterbury Hill Winery and Restaurant. Lovely enough to satisfy my desire for a glass of wine but friendly enough to accommodate the kids, we shared a variety of fresh salads, creamy pastas and a divine prime rib sandwich. There was live music on the patio the night we visited; nice enough to hear indoors, but not so loud that we couldn’t hear each other talk. The place we’ll likely return to each time we pass through the area is Central Dairy. With an interior that looks like it’s frozen in time from the 1950’s and dozens of hard scoop ice cream flavors on the menu, it was a fun and tasty way to round out an afternoon of shopping in the newly revitalized Old Munichburg neighborhood. Home to historic Busch’s Florist, New Munichburg recently unveiled another landmark mural, this one unveiled earlier in 2013 and done by Jefferson City artist Jim Dyke. His work depicts buildings of the past that no longer stand, present day buildings and a veritable host of characters whose stories weave together to shed light on the rich and proud history of Jefferson City. Truth be told, there are enough attractions in Jefferson City to keep us busy for more than just a few days. Tours of the Governor’s Mansion, a stroll through Carnahan Memorial Gardens, and a day at Runge Nature Center top my list for our next trip through Missouri’s capital. Lessons Learned at the Table Words Hona Amer

A

s I walk through the rows of vendors, I can’t help but breathe in the fresh smell of the farmer’s market. There are tables lined with rows and rows of vegetables in every color that you could imagine. The long stem carrots catch my attention. I imagine the stems sticking out of the ground and someone pulling them up with care. As I talk with farmer after farmer, they proudly share their process for growing the best vegetables. In their voice, I hear a passion for what they do. And as I decide between purchasing radishes, cucumbers and turnips, there is a gentle reminder that fresh food is real food. Too often, we settle for convenient food, while missing out on the nutrition that our bodies really need. If food is fuel for our bodies, then it matters what we eat. As the vegetables are cut and prepared for a big pot of soup, I am reminded that good things don’t always happen instantaneously. It seems like it takes a lot of work to prepare one meal, but usually the best soups sit on the stove for hours. The lessons that we can learn are plentiful through the process of preparing fresh food. We can’t expect to perform at our optimum when we are always trading time in the kitchen for processed food prepared in five minutes as we zoom through a drive-thru. As we speed to our next meeting, we can forget that even the simple act of chewing our food can be beneficial to our health. In our effort to be more efficient, maybe we have lost something more than fresh food prepared for our nourishment. We need to wander back to the kitchen, where food and community go hand in hand.

In the same way we nourish our bodies, we need to nourish our minds, hearts and souls. For some, sitting around a table sharing food has no memory attached to it. Others remember times of laughter and stories shared at a table where time grew dim and the present moment lingered. Maybe it’s time to make more memories sitting around a table enjoying the people we love most. Can the table be more than a place where people are always coming and going but never connecting? Can it be a place where generations bridge the gap between the past, present and future? As food is set on the table, I want to see the smiles and hear the laughter of friends and family living in the present moment. The food isn’t the only thing that renews our strength. Conversation can be nourishing to our minds. Friends can bring joy to our hearts, and laughter can uplift our souls. Whether it is your family, a community group or a small group from church, finding moments to share food and tell stories changes our relationship with the table. It becomes more than just a piece of furniture in our homes. It becomes a simple retreat from the worries of the day, where the combination of food and fellowship nourishes our lives.
