DAVID’S CORN BREAD YIELD: 8 SLICES INGREDIENTS + 1 cup corn kernels (ideally fresh, but you can use frozen) + 1/4 pound butter + 1 pint cornmeal (self-rising) + 1 cup all-purpose flour + 1 cup high-gluten flour + 1 tablespoon salt + 1 pint buttermilk, shaken + 3 eggs, large + 1 cup buttermilk, shaken + 1/2 cup herbs, chopped

METHOD 1. Preheat 12-inch cast-iron pan in oven at 350 F. 2. In a small saute pan, melt butter with corn (10 minutes). 3. In large bowl, whisk together cornmeal, flour and salt. 4. Add 1 pint buttermilk to dry mix. 5. In small bowl, whisk eggs, add 1 cup buttermilk and mix till curdled. 6. Add egg mix to dry mix and fold together with spatula. 7. Add butter and corn mix and herbs. 8. Fold all together, but don’t over-mix. 9. Spray hot cast-iron pan with nonstick cooking spray. 10. Quickly pour in batter and smooth with spatula. 11. Bake for 45 minutes at 350 F (set timer). 12. Remove from oven and allow to cool in pan, 1 hour minimum.

FIG SALAD BANYULS VINAIGRETTE INGREDIENTS: + 1/4 cup honey + 1/2 cup Banyuls vinegar + 3/4 cup olive oil + 3/4 cup canola oil + 1 teaspoon kosher salt

METHOD 1. In a food processor, add honey and vinegar and blend till incorporated. 2. Slowly drizzle in oils till emulsified. 3. Season with salt. 4. Store in fridge and shake before using.

PUMPKIN GOAT CHEESE INGREDIENTS: + 2 cups chevre + 1 cup pumpkin puree + 1 tablespoon pie spice (cinnamon, nutmeg, clove, ginger, allspice) + 1 pinch cayenne pepper + 1 teaspoon kosher salt

METHOD 1. In a food processor, whip goat cheese till smooth. 2. Add in remaining ingredients and whip till incorporated. 3. Store in fridge.

ALSO NEEDED: + 4 cups salad greens + 1 cup toasted hazelnuts, crushed + 12 figs, fresh

SALAD PRESENTATION: 1. On medium-sized plate, make a nice swoosh of the pumpkin goat cheese. 2. Dress the salad greens to taste with the vinaigrette and season with salt as well. 3. Place the greens on the small part of the swoosh like a mountain. 4. Place figs on top of salad. 5. Sprinkle the hazelnuts on top. 6. Drizzle a small amount of vinaigrette on side.

Here we are featuring fruit as the star of the plate, instead of being an often maligned side or garnish. Western North Carolina produces some of the best apples on the planet. Especially fun is to use a variety of apples for some differing takes. Go wild! There is more in the apple family than Red Delicious. Try some Honeycrisp in late August, Jonagold in early September, and don't forget some Pink Ladies in October! This dish is all about the interplay of flavors, salty-sweet, spicy-earthy, sour-creamy. After all, an apple a day ... And what isn't better with cheese?

GRILLED MOUNTAIN APPLES with Bourbon Sorghum Walnuts, Dried Apple and Celery Mostarda and Whipped Cheddar METHOD 1. Preheat grill to medium heat. 2. Toss apples in oil and Cajun seasoning. Set aside. 3. In a small saucepan, flame bourbon and add sorghum. 4. Bring to a boil and fold in walnuts. Set aside to cool. 5. Rehydrate dried apples with juice. 6. Sweat celery and onion in pan until almost translucent. 7. Deglaze with cider vinegar and turn off heat. 8. Fold in mustard and cinnamon; hold at room temperature. 9. Place small pinches of cream cheese in food processor while it is spinning. 10. Whip till smooth and add cheddar. 11. Finish with sauces. 12. Place apples on grill, 2-3 minutes per side. 13. Spread whipped cheese on plate. 14. Make small mounds of mostarda and top with apples. 15. Scatter/drizzle walnuts about. 16. Eat and smile!

AFFIRMING SACRED WORTH AND RESTORING HUMAN DIGNITY

AT HAYWOOD STREET CONGREGATION (HSC), THE REV. BRIAN COMBS HAS BUILT A MINISTRY OF PRESENCE. Unlike many other urban ministry missions, through the past 10 years, Brian has built Haywood Street Congregation on relationships and being with people rather than doing for them. “Usually in urban ministry, what happens is you identify a need and you provide some kind of social service to solve it, and it’s called transactional ministry. But what I have learned is that often that requires you to objectify someone and keep them at a distance. It’s more of a client relationship,” Brian says. “A ministry of presence, a ministry of being with rather than doing for, assumes we both come to this relationship out of need. Together we’ll co-partner a different tomorrow. For people in poverty, that’s a dramatic thing that most haven’t heard in a while.” With that in mind, he dove head first into a project with little more than intention and a mission to build relationships and foster a sense of worth and belonging in the community. Haywood Street Congregation is truly built on relationships. Anyone who finds themselves in need can walk through the doors and expect to be greeted as a person, not a burden. From a community garden to a free acupuncture clinic and a clothing closet, it’s apparent a lot of thought, love and hard work have gone into building this safe space. And it’s hard work on both sides, not just on the side of the wealthy.

“You’re not a project; you’re a person,” Brian says. Using this outlook, positive relationships are built, and a community of trust is created. The Welcome Table is HWC’s biggest offering. It’s a seven-course homemade meal for anyone to come and partake. About 50 of the independent restaurants in Asheville provide the meal, East Fork Pottery does the dishes, Trader Joe’s does the flower arrangements—the community comes together to provide, and it’s a very beautiful experience. “It’s supposed to be the opposite of a soup kitchen,” Brian says. “A soup kitchen is just throwaway food, and if you’re on the receiving end of that for long enough, you start to internalize that you’re a throwaway person. You can eat all you want. You can come early and stay late. There are no boundaries.” There’s also a clothing closet available without restriction. There are no interviews or cameras, and there’s no paperwork to fill out. “Some people take a whole rack of clothes, and we just say, ‘That’s great,’” Brian says. It’s important to feel beautiful, and while a new shirt or shoes can help with that, there’s nothing quite like a fresh haircut, which is why Jordan Carlson of Wink Salon started Humble Hairdressers. Gifted stylists offer their services to Haywood Street free of charge. In poverty, the main thing that’s taken away is freedom of choice, and choosing how one wants their hair styled is a basic desire that is being graciously met at HSC. Along with these services, there’s free acupuncture provided by the students at Daoist Traditions, yoga, a storytelling group and a respite for those in need of rest after an injury or sickness. At HSC, no one is turned away. The theology practiced in this space is that God cares first for those who are last in line. Because of this, Brian wanted to immortalize those who have felt invisible for so long, and he did this by commissioning a 28-by-11foot fresco painting by Christopher Holt.

“Fresco is the ancient medium that all the old masters of the Renaissance used,” Brian says. “It’s incredibly laborious and expensive, so nobody paints this way anymore.” Christopher spent the past three years drawing members of the congregation and enlarging the drawings by hand so he could give the style of painting the attention to detail it requires. He’s put thousands and thousands of hours into this project, and because of the intense process, the painting will last hundreds of thousands of years. “What we’re trying to say is that poverty makes you invisible, but art can make you immortal,” Brian says. “This is a way of saying that the people who are most left behind and left out get to be front and center forever.” Because HSC is a church, there is worship as well. However, it happens at the end of the day, which is different from most urban ministries. “Usually you have to go to church first, and then you have earned the right to clothes, shelter and food,” Brian says. “But that feels coercive to us.” In this space, nothing is asked of anyone who walks through the doors. It’s a place that’s safe to be human, in whatever beautiful, messy way that may be. CHANCES ARE, ONE OF YOUR FAVORITE TRACKS FEATURES A MOOG SYNTHESIZER. In fact, if you’ve watched the hit Netflix series Stranger Things, you heard Moog synthesizers all over the soundtrack. Without this innovation in sound, music wouldn’t be what we know and love today. And the person we have to thank is Bob Moog. Of course, most people in Asheville have heard the name Moog. From Moogfest to the Moog Music Factory on Broadway, the city is proud to boast the name. What many people are just discovering, though, is the Bob Moog Foundation, founded by Michelle Moog-Koussa, daughter of the legend. Thanks to the Moogseum, which opened its doors this year, locals and tourists alike can now learn all about his legacy and how it’s still making a difference in our community today. Michelle founded The Bob Moog Foundation, a local 501(c)(3) nonprofit, in an effort to continue her father’s work and made a difference. The mission: to ignite creativity at the intersection of music, science, history and innovation. “The idea to start a foundation came when my father was ill and passed away. I don’t think we would have made a foundation if it hadn’t been for that. My father wasn’t the kind of person who would have set up a foundation in his name,” Michelle says. When Bob fell ill, a CaringBridge account was set up in his name so his friends and family could call and leave messages of support. One day, the login information became public knowledge, and after trying to keep strangers out of the messages, they gave up the fight and let people offer their words of support, encouragement and gratitude. “The day he passed away, 20,000 people logged onto CaringBridge. People left testimonials about how much he’d transformed their lives. Until then, we didn’t know the true breadth and depth of his impact as far as changing so many people’s lives. And that was truly the genesis. The Bob Moog Foundation was created to continue to inspire people the way Bob did.” It does this in three different ways. Dr. Bob’s Sound School is an interactive classroom experience, bringing the wonders of sound, science and creativity to second grade children and their teachers, who learn the curriculum from someone within the nonprofit. This program started in six classrooms in Asheville City Schools and has since expanded to more than 100 across Asheville City and Buncombe County schools. CONTINUED >

“We teach about 3,000 kids in the Asheville area about the science of sound," Michelle says. "We’re really proud of that program and gratified that it’s meant so much to the kids, teachers and even the parents. We have parents who tell us, ‘My kid went through Dr. Bob’s sound school, and it’s the most excited I’ve ever seen them about school.’" The 10-lesson curriculum combines both state and national educational standards with the foundation’s own experiential and experimental approach to learning. Through this, kids learn how sound is made, how it’s heard and how it travels. Ultimately, Dr. Bob’s Sound School opens a whole new world of creative discovery for children to carry with them through their academic and personal pursuits. The Bob Moog Foundation also inspires through a historical archive, found online and in the Moogseum. “The Moogseum is the convergence of educational and historical preservation. We were intentional in creating a space that’s both immersive and highly interactive as a way to inspire,” Michelle says. The Moogseum is the newest addition to the foundation and is meant to foster creativity and discovery for all those who visit. Michelle is adamant that even if you’re not a “music person,” you’ll find something to get excited about in the Moogseum. In fact, it’s often the people who don’t think the space was created for them who leave most excited about what they’ve learned. In fact, the Moog prototype is housed there for a limited time and is an extraordinary piece of history that was loaned from Detroit-based museum The Henry Ford. From pieces like the prototype to interactive theremins and hands-on synthesis education, the Moogseum was built for everyone. It’s no doubt that building a foundation of this scale takes an enormous amount of inspiration. Asked who inspires her, Michelle responded, “My main source of inspiration is my father, and it’s not just his legacy itself, which I continue to find awe-inspiring because it was so revolutionary, but because as I learn more and more about him I realize how many challenges he had in his work. And some of them were extreme challenges, where he almost lost his business, and those kinds of things happened more than once. The more I learned, the more I found his persistence and commitment remarkable. Someone else might have given up, and I understand why someone would have done that, but my father never did. That has inspired me in this work because this hasn’t always been easy work. He’s definitely my No. 1 source of inspiration. “I am so fortunate. This job is amazing with an amazing amount of opportunities. I love meeting all these luminaries, like Stevie Wonder and Herbie Hancock, and we’re working on a documentary and books, and we have this amazing museum, but it’s still the kids. That’s the highlight for me. "Working with children is a really profound source of inspiration. I feel like that’s where we can make the most difference in the world right now. I’m often very troubled by the state of the world, and sometimes so troubled I find it overwhelming, and I just have to push it to the side. But what I have committed myself to is focusing on where I can make a difference, and that’s with the kids. That’s how we’re going to affect future generations. WHITNEY MOORE IS THE “QUEEN BEE” IN ASHEVILLE’S MOST JOYFUL SWING BAND, AND SHE’S THRILLED TO SHARE HER LOVE OF THE CITY AND ITS RICH HISTORY THROUGH SONG. Each composition performed by her and her band is original, and it’s a tribute to all things Asheville. With songs titled “Beaucatcher” and “Helen’s Bridge,” it’s no doubt there’s a passion here that runs deep. A native to the area, Whitney grew up hearing stories of Asheville’s roots. In fact, she claims that much of her inspiration for her music comes from her grandparents. Whitney recalls having differing opinions from her grandparents, but those opinions didn’t get in the way of their love for each other. She reflects on a time when political divide didn’t carry such a weight, and she says she wants to use music and storytelling to bring us all together, no matter our backgrounds or political opinions. “This album took a lot of my grandparents’ stories I heard growing up, local legends specifically from the jazz era, and every song has a different location or name of a person,” Whitney says. “I’ve been really affected by watching our country become so divided and cutthroat,” Whitney says. “I don’t like that we’re demonizing each other. ... A big part of the inspiration for this album was my small attempt to bridge the gap and remind people of the fact that we have more in common than we have differences.” Whitney makes it clear she isn’t trying to gloss over the trials of the past. “The good ol’ days weren’t good for everybody,” she says. Her hope is that telling stories of the past—some that many Appalachian natives share and others that are more personal to her—will unite people with a sense of togetherness through experience—and a little bit of dancing, too.
