We have really clean food — and we try not to be preachy about it.” Potential new menu items include a bun-less keto burger with two patties, a fried egg, cheddar, bacon and avocado; a paleo bowl of chicken, avocado and cauliflower rice; sheet tray nachos (so every chip gets the perfect amount of toppings); crispy cauliflower with dipping sauces; Baja shrimp tacos; and a Mediterranean burger made with a 50/50 cremini mushroom and beef blend and topped with olive tapenade, roasted red peppers, and feta. Something for everyone, all served in a casual, comfortable environment. It does sound like an Applebee’s, except this gathering place’s commitment to whole, unprocessed foods, inclusive eating and earth-friendliness goes beyond the typical chains. "We feel strongly that if the person making our products does it out of passion, hard work, and love, then the customer will feel all of those things and feel good about their purchases." “Our lives were going in different directions for many years until they weren’t,” says Poss Lambert. "We spent six months dreaming up every doomsday scenario as to why it was a terrible idea until we realized it simply wasn’t. We just had to make it work, so we did!”

Poss and Christie Lambert started their store strictly on determination, previous retail experience, and a risky financial move. Coming from a lower-middle-class family, a strong work ethic was instilled in them both from a young age. “We created a world we could not have lived in unless we built it ourselves," says Poss Lambert. “And while sometimes it can feel like a glasshouse, we have gratitude every year to see it gain strength and feel a little more established.” Cedar & Hyde’s niche is not only in fashion, but fashion for the home as well. From kitchen to bath, the store satisfies the craving for ceramic pots for houseplants and woven area rugs to dress up hardwood floors. “I actually just remodeled the main living area of my home this past summer, and the style is very Southwest meets old New York. We used American Clay on the walls and ceiling to not only give warmth to the space but also to make it feel established,” says Poss Lambert. Poss used all living materials in her home — including soapstone, cement, and oak in the kitchen, which will age well with passing time. “The lighting and dishes are all handmade pottery from people I admire, and thanks to my husband, there is a never-ending supply of plants to keep it fresh,” says Poss Lambert. Poss advises to let fashion be an extension of yourself and carry that into your home. She struggles with trends and encourages anyone looking for a decor style to think about the colors, space, and designs that bring each individual person to life. “There is no right or wrong answer,” says Poss Lambert. “It’s about feeling comforted and at ease in your own little world.” Cedar & Hyde is looking forward to more brand collaborations in the future to help put their makers in front of their customers and let their stories be told.

FOR BRINE: Add all ingredients together. Place chicken in a bowl, cover and leave it in the refrigerator overnight. FOR SLAW: Clean Napa cabbage and slice as thin or thick as you would like. FOR DREDGE: Mix all ingredients in a bowl. Set aside. FOR PICKLES: Slice cucumbers. Heat liquid until it boils. Cool down. Once cooled, add cucumbers and let sit in the fridge for at least 4 hours FOR DRESSING: Add all ingredients into a blender and blend until smooth. Toss dressing with cabbage and set aside. COOK AND ASSEMBLE: 1 / Heat oil in a deep pot. Shake off the excess flour then carefully add the chicken to the hot oil. Cook for 8-10 minutes until the chicken is golden brown and crisp and cooked through. Flip half-way through cooking to allow both sides to brown. 2 / Remove the chicken from the oil and allow to drain before assembling the sandwich. 3 / To assemble, toast brioche buns. “Whoever has this magical space next, I wish you great wine, great energy, and great art.” The space was prepped and ready with everything necessary for a gallery, including an art studio that allowed for the continued unfolding of Courier's magnificent talent. In the summer of 2016, Courier visited her daughter and discovered the gallery. At the time, she’d been living in Lake Tahoe, had her work featured in twenty galleries across the country, and was well-known for her captivating acrylic paintings of tree-scapes and water scenes. Overcome with an unexplainable feeling of joy, she was certain that she was going to live in Denver; by October, Courier was a resident of the Mile High City.

Westward’s namesake is a nod to Courier’s years spent exploring the West, with an inspired nudge from her daughter. She intimately knows the highways, having spent ten weeks out of every summer traveling and instantly knew “Westward” would capture the essence of her gallery. A painter who purposely tries not to do anything typical, Courier remembers being a rebellious spirit from a young age in school. “I would think of every single way that I could make it not what everyone else was doing,” she shares. Courier starts by taking a hundred or so photos of any given area, closing in on details, and savoring each moment of the environment.

“When I’m at a scene, I take notes and I write down what day it is, the year, the time, what it sounds like, what the air feels like, is there wind, is it warm?” She immerses herself into the painting before any paint has even been squeezed out of the tube. Halfway through the process, she lets go of the photos and embodies the feeling — it’s not what she sees, but what she feels. She wants viewers to experience the feelings she has and admire the light she’s captured, not necessarily know the origins of the painting. Beyond her fierce dedication to painting and running the gallery, Courier shines as a glowing example of a woman boldly traversing the unknown to do what sets her heart on fire. It would seem as though Courier and Colorado coalesced to ignite more possibility for her future. Her work has recently been featured on wine bottles and her famous water scene blue and green hues have found their way into signature Charvin acrylic set with Jerry’s Artarama. Denver continues to inspire Courier with easy access to breathtaking scenery, endless musical talent, and hidden gems that she seems to have a knack for finding. And while a paintbrush will likely find her wherever she goes, Courier knows Denver is the home for all her hopes and dreams to continue coming true.
