IF LIFE WERE A CAKE, LIZ HALE WOULD BE THE ICING. She’s lively, bright-spirited and covers her cakes with personality. So when the Food Network discovered her creations on Instagram and invited her to appear on a new cake show, Liz happily whisked herself into the limelight. This May, Liz and her husband, Jerry, appeared on the first season of the new Food Network show, Winner Cake All. The show pits bakers against each other in a competition to create an intricate themed cake. The winning team earned $10,000. Liz and Jerry own and operate Cake Fine Pastry, a custom cake shop offering elaborate, life-like cake sculptures. Liz decorates, Jerry bakes and their children also help run the shop. Together, Liz and Jerry can create just about anything using cake—from designer purses to a Whataburger meal complete with cake french fries. The Food Network challenge was especially intricate: create a cake topper and a baby shower-themed cake. The cameras were rolling, lights blazing, and the couple was scrambling. The couple created an edible beehive complete with a moving door and a honeybee made of sugar. When the door opened, it revealed the color blue to show a baby boy was on the way. Liz and Jerry advanced to the next round. The second challenge didn’t go as sweet. Bakers were instructed to create a cocktail-themed cake for a posh baby shower pool party. The party was to be hosted on a stylish Los Angeles rooftop. Drawing from their Texas roots, Liz and Jerry designed a ginger beer cake with strawberry filling. The flavors were akin to a Moscow Mule cocktail, except with strawberries. They dubbed it a ‘Texas Mule’ and planned to sculpt it into the shape of a stork. “We tried to keep it very Texan and very Southern,” Liz says. “I was born here. I wanted to make sure our cake represented who we are.” But with less than five hours to create, and tensions rising, the couple made a critical mistake. “What really happened was the time frame,” Jerry says. “We were scrambling for our lives.” The couple cracked under pressure—cracked too many eggs, in fact. In a haste, Liz accidentally added three times the required eggs to their cake batter. Their baby cake was ruined, but the bakers pressed onward. They built a cake swimming pool filled with edible blue gel. They set the stork inside. They sculpted edible skyscrapers and palm trees. But the damage was done. Judges said the cake texture was far too dense, and the couple did not advance to the third round. Liz says it’s hard watching the show now, knowing they did not win, but the experience was enjoyable. She’s learned how to pay more attention to her decorating details, and Jerry says he’s learned more about making a food TV show. Nowadays, the couple is turning their focus to their second business, Plum Coffee on Barker Cypress. The couple recently purchased the shop which offers locally roasted coffee, pastries and regular open mic nights. And though the cake business is still their bread and butter, Liz says if another show opportunity arises, she’s ready for the limelight.

FOR FLAVOR THAT TRANSCENDS CULTURES, NEED LOOK NO FURTHER THAN BB’S TEX-ORLEANS. It’s here where Texas and New-Orleans style cooking fuse into something entirely new. BB’s ownership likes to call it New Orleans cooking with a Texas twist. “You won’t ever find another Tex-Orleans cooking anywhere in the United States or anywhere in the world,” says Maricela Bassler, BB’s chief brand officer and partner. The Houston-based restaurant offers New-Orleans classics such as red beans and rice, crawfish etouffee and po’ boys served on Leidenheimer bread, a popular bakery with deep roots in the Big Easy. It also offers fusion foods with a Texas kick. The Cypress location boasts fish tacos made with blackened catfish and Cajun coleslaw. Boudin flautas, which combine homemade boudin and pepper jack cheese in a flour taco, are also on the menu. One of BB’s most iconic items is its seasonal crawfish. This year, the company served more than 600,000 pounds of the mudbugs which are boiled in a seasoned mixture then tossed in a flavor-packed paste. The delicacies are best eaten with a bib and stack of napkins handy. For those who don’t like to get their hands dirty BB’s recently began offering a “cleaner” crawfish recipe which doesn’t come coated with paste. BB’s also added brunch to its menu after years of customer requests. Its hearty breakfast options include french toast, waffles, fried boudin served with poached eggs and other items with Cajun flair. Eggs benedict, for instance, are served over a cornbread waffle and topped with bourbon maple syrup. “It’s a very true Cajun brunch,” Maricela says. “You’re not just going to get a benedict. You’re going to get a Cajun-style benedict.” BB’s first opened its doors in Houston’s Montrose neighborhood in 2007. Inspired by his grandmother’s Louisiana-style cooking, founder Brooks Bassler offered authentic New Orleans po’ boys with Texas cooking in hopes to create a new cuisine. It worked. The company recently opened its 10th location in Webster and has plans to expand regionally. Each location has a slightly different menu and decor to reflect not only New Orleans, but Houston’s diversity. One thing that’s consistent across all restaurants, however, is hard-working staff and quality service. “The culture and the vibe here has always been a New Orleans feel with a Texas soul,” Maricela says. AMBRIZA’S CEVICHE CONSTEÑO INGREDIENTS + 2 cans of coconut milk
30 minutes 4 servings
DIRECTIONS Cut fish into 1-inch pieces sliced 1/4-inch-thick. Mix with

NATIONAL TREASURE PEACHES AND CREAM INGREDIENTS + 2 whole fresh peaches, sliced, or one medium can of diced peaches in syrup + 1/4 cup peach brandy + 1 cup heavy whipping cream + 1/8 cup powdered sugar + 2 ounces Frangelico hazelnut liqueur + Mint for garnish
15 minutes 1 serving
DIRECTIONS Separate (if canned) peaches from syrup. Sauté peaches in pan on medium high heat. As the peaches turn darker in color, add about 2 tablespoons peach syrup to the pan for caramelization. If using fresh peaches, add 2 tablespoons simple syrup (equal parts water and white sugar melted or store-bought). Carefully add peach brandy to the pan and bring to boil. Watch out for flames which may happen. The flames will burn out as the alcohol burns off. Remove from heat and cool completely. Whisk the powdered sugar, cream and liqueur. Add more or less liqueur to your taste. Serve in a martini glass or decorative container. Layer like a parfait starting with the peach mixture, then cream until the glass is full to your liking. Serve chilled. Garnish with mint.
