At a time when so many things are mass produced, scores of us are embracing “traceable” products—precious goods that are made by hand in small quantities. Whether it’s our desire for authenticity or our concerns about ethical consumption, makers matter to us. This month, we celebrate those makers among us: the artists who create objects of aesthetic value and the artisans who imbue artistry into their craft to make something functional. The lives and inspirations of a woodworker, a painter and a culinary artisan are explored in our February “Makers” issue, along with the story of two brothers who have perfected the falafel and a couple who turned their beloved home into a canvas for inspired living. There’s even a little background on some of the photographers and writers whose eyes and ears brought prose and pictures to this month’s issue. Enjoy our February issue! Happy Valentine’s Day, Groundhog Day and Presidents’ Day. May you be blessed with love, the promise of an early spring, and a day off work with the kiddos.

EACH CULTURE HAS ITS OWN INTERPRETATION OF THE FALAFEL, AND THE SAME CAN BE SAID OF MEDITERRANEAN RESTAURANTS. There are national chains who use pre-fab garbanzo powder mixed with water, restaurants who hand-make their falafels with the freshest chick peas and spices available, and everything in between. That’s where Shawarma Mediterranean Grill in Centennial takes the cake (or should we say, baklava?). And it’s one of the reasons Shawarma keeps customers lined up around the block. Opened nine years ago by entrepreneurs and brothers Abe and Pierre Dagher, originally from Lebanon, Shawarma consistently offers fresh, handmade Mediterranean cuisine in a friendly, fast-casual environment. Six days a week, you’ll find both or one of the brothers there, serving regulars and newbies with a smile and a greeting. “Our secret is not only the fresh ingredients, but the service to our customers. We know our customers personally, and they know us. If I’m not here on a particular evening, they want to know, 'Where’s Abe? Is everything ok?’” Their

kabobs, Kafta (ground sirloin beef with onions, parsley and Mediterranean spices) of course, Shawarma. “Shawarma is the process of cooking the meat,” says Pierre. “It takes at least 24 hours for the meat to salt perfectly with the spices,” says Pierre. “It turns as it cooks on a vertical spit, and we shave it off thinly with a knife.” “We love doing this,” says Abe. “Customer satisfaction is the best part. It makes us proud that we’re doing something the customers like.”
"We make everything from scratch here. We crush the fresh chick peas with the cilantro, onions and spices. And it’s so crunchy on the outside." SHAWARMA MEDITERRANEAN GRILL 7527 S. University Blvd., Centennial 303-703-4040 Open 10 a.m to 9 p.m., Monday through Saturday 14

24 HOURS WITH AN ARTIST MICHELLE NAHERNY OF HONEY B'S MACARONS “A macaron has to mature, like a fine wine,” says Michelle Naherny, maker of fine French macarons and owner of honey B’s macarons in Highlands Ranch. That carefully refined process takes up to four days, during which delicate meringue shells are rehydrated with custom fillings that include fine ingredients like honey from her family’s hives in Castle Pines. “They’re a canvas for creating something beautiful and delicious,” says Naherny, whose custom designs grace private parties and events of all kinds.

A concrete mantle with striated veins was created to surround the fireplace, simulating actual marble, while a sumptuous royal blue tuxedo sofa brought in from New York City “is so comfortable,” says Jamie. “People think it wouldn’t be, but it is.” Adding to the glamour of the room, the Klenins also installed custom crown moulding and wall mouldings, which included hand-painted decorative millwork inside each frame. Although the home’s transformation was extensive, the Klenins have only just completed the main level. There are visions for a remodel on the upper and lower levels—but Jamie says they plan to enjoy this fresh new vibe for awhile. “I'm glad we stayed,” says Jamie, “we both are.”
