Back Again and Stealing the Spotlight

Hey friends,

It’s me, Oakley, your favorite golden doodle correspondent, back for another round of tail wags and community updates. My mom usually writes this letter, but I gave her the big puppy eyes and convinced her to let me take over again. (Let’s be honest, I bring the fluff and the fun.)

So, what’s got my tail wagging this month? First up, Clydesdales! These gentle giants are the stars of this issue, and I got to sniff around (from a safe distance) and learn all about the incredible foundation working to preserve their legacy. Big hearts, big hooves, and even bigger impact.

Then there’s a local mom doing something pretty pawsome. She started Let’s Stroll, a group that brings moms and their littles together for walks, talks, and connection.

We’re also giving a big round of a-paws to the kidpreneurs of Gilbert! Young minds with big ideas, selling everything from crafts to lemonade. I met a few of them and trust me, the hustle is real (and adorable).

And for my fellow furry friends, get ready. There’s a new drink just for us pups. Yep. A refreshing summer sip made just for dogs. I had one. Then another. No regrets.

So whether you’re trotting alongside a stroller, supporting local kiddos, or just soaking in some Clydesdale charm, there’s something for everyone in this issue.

Until next time, stay cool and give your humans a little extra love.

A PLACE TO BELONG

When Jenna Colossio became a mom, she realized just how hard it could be to find meaningful connection during early motherhood. Between nap schedules, toddler meltdowns, and the weight of doing it all, many moms are left craving real conversation and community. That’s where Let’s Stroll comes in, a heart-centered mom group designed to build connection through simple, welcoming local events.

What began as a way for Jenna to meet other moms has grown into a full-fledged community where moms

“It’s not just a walk. It’s a space where moms feel seen, supported, and reminded that they’re not doing this alone.”

BARN LEGENDS

How one foundation is keeping the Clydesdale legacy alive

Tucked away in Gilbert, Arizona, amid the desert backdrop and wide-open skies, a group of passionate volunteers is working to ensure that one of America’s most iconic draft horse breeds doesn’t fade into history. The USA Clydesdale Preservation Foundation (USACPF) is a nonprofit dedicated to protecting the future of the Clydesdale horse through hands-on education, youth programs, and preservation efforts.

What began as a personal mission has grown into a full-fledged movement. USACPF Director Rebecca Stivers was first captivated by the breed as a teenager attending the Iowa State Fair. The experience of watching Clydesdales in the show ring stayed with her for years. Later in life, while working as a therapist with youth, she saw how calm and intuitive the horses were and began using them in therapeutic settings. When she

CONTINUED >

learned the breed had been classified as “at risk,” she verified the information and immediately began planning how to help. That mission has now spanned more than a decade and continues to grow through her leadership.

Clydesdales once played a vital role in American life, hauling timber, pulling plows, transporting goods, and even serving in wartime. Despite their historic importance, their population today is dangerously low, and few people realize they’re close to being lost entirely. USACPF is working hard to preserve not just

the breed, but the legacy and values they represent. At the core of their work is education. The foundation regularly invites students and youth into the barn for hands-on experiences. Through these encounters, young people learn about the horses, but also about empathy, trust, and responsibility. These lessons stay with them long after the visit ends.

Visitors are often surprised to learn that USACPF’s Clydesdales do more than just pull carriages. Many of the horses are trained to ride and participate in activities like trail rides, barrel racing, and

"Clydesdales helped build this country and now it’s our turn to protect them. Through education, hands-on care, and community support, we’re not just preserving a breed but we’re preserving a living piece of history for future generations."

even obstacle courses. This challenges the common perception of what draft horses can do and demonstrates the intelligence and adaptability of the breed. Caring for Clydesdales in Arizona’s desert climate, however, requires significant effort. During the summer months, once temperatures rise into the 80s, the horses are brought inside to climate-controlled barns equipped with swamp coolers, misters, and fans. They typically remain in the barn from evening until midmorning the next day. During winter, extra care is given to keeping them warm. Open barns are used to encourage airflow, and staff work diligently to ensure food and water remain fresh year-round.

Despite the daily challenges, Rebecca Stivers and the team are focused on the future. The foundation has several major goals in the works, including building a new barn to replace the aging structure, expanding the herd by three additional Clydesdales, and increasing volunteer participation. In 2027, the board of directors plans to travel to Europe to share their model and inspire similar preservation foundations abroad. Another exciting goal includes welcoming a foal to the herd and a valuable opportunity to educate visitors about the unique bond between a mare and her baby.

USACPF’s mission is about more than saving a horse breed, it’s about preserving a story that’s been intertwined with American history for generations. Rebecca sees it as a way to reconnect with what matters: hard work, loyalty, and the value of community. For anyone who visits the barn, it’s clear these horses leave a lasting impression. Whether you’re a lifelong horse lover or discovering Clydesdales for the first time, USACPF offers a chance to be part of something meaningful.

Elevate Your PB & J

TRANSFORM YOUR HUMBLE PEANUT BUTTER AND JELLY SANDWICH FROM LUNCH BOX BASIC TO GOURMET GREATNESS

Ready to give this childhood classic the upgrade it deserves? Whether you’re packing your kid’s lunch or treating yourself to something special, these elevated PB&J creations will make anyone excited for lunchtime.

The Art of the Upscale

The secret to an elevated PB&J isn’t complicated—it’s all about premium ingredients and creative combinations. Swap that white bread for artisanal sourdough, brioche, or even croissants. Trade processed jelly for fresh fruit compotes, gourmet preserves, or actual fresh berries that burst with flavor.

Quality nut butters make all the difference. Think creamy almond butter, rich cashew spread, or that perfectly salted natural peanut butter from the farmer’s market. These simple swaps instantly elevate your sandwich from ordinary to extraordinary.

Creative Combinations That Hit Different

THE SOPHISTICATED SWEET: Nutella, sliced strawberries, and a drizzle of honey on brioche bread

THE PANINI PERFECTION: Peanut butter, fresh blueberries, and marshmallow cream pressed between sourdough slices

THE BEAUTIFUL MESS: Your favorite nut butter topped with sliced fresh peaches, kiwi, or berries, then drizzled with golden honey or sprinkled with toasted coconut on thick-cut bread

THE GROWN-UP CLASSIC: Almond butter, fig jam, and thinly sliced pears on multigrain bread

THE BREAKFAST CROSSOVER: Cashew butter, sliced bananas, and a sprinkle of granola on cinnamon raisin bread

THE TROPICAL TWIST: Coconut butter, mango preserves, and toasted coconut flakes on Hawaiian sweet bread

THE CHOCOLATE DREAM: Dark chocolate almond butter, raspberry preserves, and fresh mint leaves on whole wheat

THE SAVORY SURPRISE: Natural peanut butter, grape jelly, and a thin layer of cream cheese with everything bagel seasoning

Pro Tips for Lunchbox Success

Toast your bread lightly for extra texture, even if you’re making it ahead. Create a barrier with your spread to prevent soggy sandwiches—apply nut butter to both sides, then add your sweet elements in the middle. Pack fresh elements separately and assemble just before eating when possible.

Cut into fun shapes with cookie cutters, wrap in parchment paper tied with twine, or pack in a bento box with complementary sides like apple slices, fancy crackers, or dark chocolate squares.

The Bottom Line

An elevated PB&J proves that sometimes the best meals come from taking something familiar and making it special. These upgraded versions will have everyone asking for the recipe—and maybe even offering to trade lunches.

UP, UP, and PLAY!

Gilbert area residents now have a new reason to bounce up and down with excitement, Elevate Trampoline Park is opening the doors, introducing a new generation of fun, creativity, and community-based entertainment.

With existing locations in Queen Creek and Mesa, Elevate is taking the next leap in expansion with a third Arizona park designed to take active play to new heights.

Leading the charge of the new park’s launch is Kimberly Wesolowski, Vice President of Operations at Elevate and a Gilbert native. Although new to the Elevate family, Wesolowski brings a deep history of business growth and strategy development and a personal connection to the area that makes this spot more meaningful.

“I grew up in Gilbert, and it’s truly special to be involved in opening something new in my hometown,” Wesolowski remarked. “I’m an ASU alumnus and moved out of state for about a decade, but coming home with my family has been so special, especially now that I get to do this kind of experience with local families.”

That family-centered focus is no coincidence. Wesolowski is the proud mom of three energetic boys who are more than ready to bounce into Elevate’s

“AT THE end OF THE DAY, IT'S ABOUT BEING  a part OF SOMEONE'S happiest moments. WE GET TO help families celebrate, AND WE DON'T TAKE THAT lightly.”

newest adventure. “They think it’s the coolest job I’ve ever had,” she said. “They’re my unofficial product testers and they give me honest feedback, reminding me who we’re building this park for.”

So what makes the new park stand out?

Wesolowski says the staff has pulled out all the stops to fun. “We’ve thought a lot and been super creative about this park. It’s loaded with attractions that are not only active but imaginative.”

Visitors can anticipate interactive play that’s woven into the attractions, giving children new and fun ways to get moving. From climbing walls, foam pits, and obstacle courses, to competition jumping zones, everything in the park is designed to promote movement, laughter, and excitement.

And it was not made with just kids in mind. “We’ve also made a conscious effort to include spaces for parents,” noted Wesoolowski. “Our café is great for snack and drinks, and we have plenty of seating in the air conditioning. We want parents to be able to spend their time here just as much as their children, whether that’s participating in the fun or relaxing while their little ones enjoy themselves.”

Elevate is also a great spot for parties, group outings, and school field trips. “Family entertainment is such a great business,” Wesolowski said. “We get to be the highlight of a kid’s week, whether they’re celebrating a birthday, enjoying a special event with their family, or coming here with a school field trip.”

Wesolowski sees these moments as the core of their mission. “At the end of the

“WHETHER YOU’RE A kid , A PARENT, OR A grandparent , THERE’S something HERE FOR everyone .”

day, it’s about being a part of someone’s happiest moments. We get to help families to celebrate, and we don’t take that lightly.”

With the Gilbert park now open, Wesolowski and her team are already thinking about what’s next. “Our five-year plan is all about community,” she said. “We want to be a staple in Gilbert. We’ll continue evolving, adding new attractions, and listening to what our guests want.”

Elevate Trampoline Park is located on Val Vista and Guadalupe in Gilbert. Families can get timely information on special promotions, grand opening events, and new features announcements through the official website at wwww.elevatefun.com or by following Elevate on social media.

Wesolowski invites everyone to come experience the park for themselves. “Whether you’re a kid, a parent, or a grandparent, there’s something here for everyone,” she said. “We can’t wait to welcome Gilbert families into our park and be part of their everyday fun and unforgettable celebrations.”

Football, Family & Fundamentals

Inside Coach Ron Bellows’ Passion-Fueled Flag Football Journey

What began as a simple act of volunteering turned into a lifelong mission for Ron Bellows. Over a decade ago, Ron stepped in to coach his oldest son’s 5-year-old flag football team, simply wanting to be involved. But what started as a way to spend more time with his child quickly transformed into a full-fledged passion. Now the founder and head coach of the Gilbert Ravens, Ron has built a thriving youth flag football club with multiple teams across age divisions, creating a legacy rooted in growth, grit, and community.

“The pace and competitiveness of flag football have evolved so much since I started,” Ron shares. “It’s no longer just a casual game. We’ve got highly trained athletes, more disciplined coaching, and even national attention.” And with that growth comes added pressure, often amplified by social media. That’s why Ron believes in balancing skill-building with emotional development. “The coach’s role has shifted and we’re not just shaping athletes, we’re guiding kids through real-life lessons on resilience and confidence.”

To Ron, flag football is the ideal sport for kids. “It teaches speed, agility, decision-making without the physical risks of tackle football. And more importantly, it

builds confidence.” Kids of all shapes, sizes, and skill levels can find a role and feel like they belong. “Seeing a kid light up after a big play and that moment sticks.”

Ron recommends kids start around age five. “It’s the perfect time to build coordination, learn teamwork, and start creating good habits around discipline and coachability.” He focuses on fundamental skills like footwork, catching, flag pulling, and throwing, but also drills deeper: “Reading the field, understanding coverage, staying mentally sharp and all of that matters.”

And it’s not just on-field lessons that matter. Teamwork and culture are foundational to the Gilbert Ravens. “Every player has a role, and I make sure they know it,” Ron says. “We celebrate selfless plays as much as touchdowns.” Off the field, team outings and tournament travel create powerful bonds, thanks in part to Ron’s

wife, who organizes many of these memory-making experiences. Older players often mentor younger ones, reinforcing leadership skills and a sense of responsibility.

When asked how he helps young players build confidence, Ron says, “It comes from preparation and belief. I put kids in positions where they can succeed and build on that. Whether they’re the fastest on the team or still learning how to pull a flag, I make sure they feel seen.”

One of Ron’s most unforgettable moments came during the Hard Count National Championship in San Diego. “We were down 19-6 at halftime in the Semi-Finals, and the

other team had the ball to start the second half,” he recalls. But his team didn’t give up. With four second-half interceptions and three unanswered touchdowns, they pulled off an incredible comeback, winning 25-19. “It wasn’t just the win. It was how they rallied, stayed composed, and came together. That moment captured everything I love about coaching.”

Ron’s advice for young players? “Have fun, be coachable, and don’t be afraid to make mistakes. Every great moment starts with trying.”

Now, as he watches former players transition to high school and even prepare for college football, Ron is filled with pride. “The Gilbert Ravens may have started as just one team, but it’s become a community. Coaching is about more than X’s and O’s, it’s about believing in kids before they believe in themselves. That’s why I keep showing up.”

WHISKING UP CONFIDENCE

Why Cooking with Kids is More Than Just Making Meals

ANIMAL Crackers

Ingredients:

• 1 cup and 2 tbsp white flour

• 1/4 tsp baking soda

• 1/2 cup oatmeal

• 4 tbsp honey

• 1/2 tsp vanilla

Steps:

There’s something truly special about inviting your child into the kitchen—not just for the cookies or cupcakes, but for the confidence, creativity, and connection that come with it. Cooking with your children isn’t just a fun way to pass the time; it’s an opportunity to build lifelong skills and memories that stick.

Cooking together also taps into something a little magical—memory. The smell of cookies baking or chili simmering on the stove can instantly transport us back to childhood. That’s not just nostalgia talking—science backs it up. Our sense of smell is closely tied to autobiographical memory, especially memories formed early in life. So those sweet, savory scents? They’re more powerful than you might think.

The key is to start simple. Let your toddler play with mixing bowls, spoons, and measuring cups. Begin with small jobs—scooping flour, flattening cookie dough with a rolling pin—and gradually add more steps as your child becomes more confident.

It won’t be perfect. Embrace the mess, stay patient, and focus on the fun. A dash of encouragement and a sprinkle of praise go a long way in keeping your little chef engaged and excited.

Over time, you’ll see the magic unfold: a child who’s not only learning how to cook but also growing more independent, capable, and proud of what they’ve created. And who knows? Maybe one day, they’ll pass those same recipes—and memories—on to their own kids.

• 4 tbsp buttermilk

• 1/2 tsp almond extract

• 1/4 tsp salt

• 1/4 cup whole wheat flour

• 1/4 cup unsalted butter, room temperature

• Optional: add 1/4 tsp nutmeg or cinnamon

1. Preheat the oven to 400 degrees.

2. Put the oatmeal in a blender or food processor and pulse for about a minute, until it’s reduced to a rough powder. Add the ground oatmeal to the whole wheat and 1/2 cup of the white flour, baking soda and salt to the bowl of an electric mixer affixed with a paddle attachment, and turn on to mix. Add butter and blend on medium speed until the butter has been incorporated and the mix looks a little like wet sand. Add the buttermilk, vanilla, honey and almond extract and blend. If the dough looks too wet to roll, add the remaining flour 1/4 cup at a time until the dough forms a ball and pulls away from the sides of the blender.

3. Turn the dough out onto a piece of plastic wrap and flatten into a disc. Cover completely and chill in the fridge for at least one hour, up to overnight.

4. When ready to bake, preheat the oven to 400 degrees and place dough on a lightly floured surface (using the remaining 2 tbsp of flour). Roll out until 1/8 inch thick. Cut out with desired cookie cutters and bake for five to seven minutes, based on your preference. Five minutes will get you a softer cracker, while seven will get you a crisp cracker.

Enjoy!
