Fresh Fall Flavors

October’s Food And Drinks
Welcome, fall! As the temperatures cool, our cravings shift toward comforting flavors that warm both body and soul. October is one of our most delectable editions of the year, and this month we’re celebrating the food and drink that makes our area such a delight for the senses. For me, it's the delicious bowls of fresh ice cream that my family shared together.

There’s an art to creating a dish that not only sat isfies your taste buds but also stirs memories of home. Food has a unique way of connecting us to our past while bringing us together in the present. Whether you’re enjoying a meal out with friends, like the signature, tender filet mignon shown here with a rich blackberry sauce for a unique flavor twist at Randy's Steakhouse, or hosting a cozy dinner at home, these shared moments are what make life flavorful.
Here’s to savoring every bite this fall.

32 YEARS OF DINING

Randy’s Steakhouse: Longtime Stable Restaurant In Downtown Frisco Rail District, Still Open During City Construction
ARTICLE BY JULIE BROWN PATTON

When Frisco area diners want something special, they often head to Randy's Steakhouse, 7026 Main St. Afterall, this restaurant's been a mainstay of Main Street for more than three decades.
Still open while area is under construction: The Rail District, Frisco's historic downtown, is undergoing major transformation with an approximate $70 million reinvestment effort by city officials. A reimagined Rail District will be more walkable and pedestrian-friendly, especially via Main Street, 4th Street Plaza, Elm Street and a new parking garage. As one of the businesses located in the construction zone, Randy's Steakhouse remains open and eager to serve customers.
Owner/chef Randy Burks assures that stepping inside the restaurant's ambiance within the historic T.J. Campbell home, with seven distinct dining rooms, two fireplaces, prime steaks, surf-and-turf options, patio dining and 200-plus wine selections, makes each visit unique. The Campbell house, which was built in 1869, is listed on the Texas Historical Registry. Randy lovingly transformed the Victorian house into a prime steakhouse, paying close attention to the history and significance of the house, Frisco's heritage and the proximity to the Shawnee Trail.
Many a memorable anniversaries, birthdays, family reunions, company events and other special gatherings have been hosted at
Randy's Steakhouse. For example, Melissa McNalley Hecht stated in online support of the restaurant regarding its longevity: "My husband and I got married there in the backyard. The staff was amazing through the whole process."
Another customer, David Crow, reminisced: "My wife and I were there in the opening few days. Enjoyed visiting with Randy table-side."
"I remember when he had family-style food," stated Sandra Schneider. "After he moved to the second location on Main Street, we took the kids and the menu had changed to a more adult style. The kids wanted things from the old menu, and Randy slipped out and got what they had requested. Love eating there!"
Established in 1993, Randy’s Steakhouse is still family-owned and operated. As an additional dining convenience, guests can choose from among a curated bar menu that boasts upscaled

traditional bar fare, such as beef filet nachos, prime rib sandwiches, classic cheeseburgers and loaded French fries.
Regarding appetizers, the restaurant is especially known for thick cut, crispy onion rings; tender calamari in remoulade sauce; and 'Mud Bugs,' which are fried crawfish tails in Randy's special sauce.
"A lot of people like my bread pudding, which has a Jack Daniel's sauce and cinnamon ice cream," Randy adds.
This local chef began his culinary career in 1986 working for Dale Wamstadt at Del

Frisco’s Prime Steakhouse. By 1993, he had the opportunity to open his own eatery, Randy’s Country Kitchen. By 1995, he established his current, first-class steakhouse on Main Street.
"I started at Del Frisco’s as a server, but soon found my true calling was in the kitchen. Dale trained me in all aspects of kitchen management, as well as how to prepare the finest steaks and seafood. I learned the precise art of being a sous chef, then was promoted to head chef and finally to kitchen manager. I enjoyed those years immensely," Randy recalls.
He says their five-course wine dinners are popular; this month's will be hosted Oct. 30.

Spice It Up!
1836 UNLEASHES BEEF CREATIONS' POTENTIAL, CAPTURES ESSENCE OF TEXAS FLAVOR
Originating from SuckleBusters in Coppell, the award-winning spice named ‘1836’ can take meat to new levels of Texan flavor flair. This seasoning serves as a rub and for sauces, inspired by the robust, authentic taste of The Lone Star State.
Its originators indicate it’s “a testament to the art of barbecue, designed to create mouthwatering crusts, sealing in juices and delivering an explosion of taste in every bite.”

ARTICLE BY CLAIRE ARMSTRONG PHOTOGRAPHY BY HANNAH BORER
Musume, an Asian and sushi restaurant from Dallas-based Rock Libations Restaurant Group, opened at The Star in Frisco. Guests now can indulge in Musume’s signature dishes, exclusive new creations and the region’s largest sake and Japanese whisky selections.
Musume at The Star’s expansive menu is comprised of sushi and sashimi made with fresh fish flown in daily from Japan, authentic Asian cuisine offered in both small and large plates, vegetarian and vegan dishes, salads, tempura, ramen, and six-or-eight course Omakase curated daily.
Standout menu items include:

Musume at The Star provides a $12 happy hour-style menu in its lounge and patio from 2-7 p.m. on Sundays through Thursdays. Designed for sharing and exploring, happy hour menu highlights include blackened tuna

tacos, chef’s choice of handrolls and tofummus (tofu-based vegetarian hummus).
Drinks are a prominent attraction at Musume at The Star, which is home to North Dallas’ largest selection of premium sake with more than 120 labels and an impressive lineup of 60-plus Japanese whisky options.
Musume also enlisted the talents of Gabe Sanchez, one of Dallas’ most awarded and acclaimed mixologists, to craft its innovative Asian-inspired cocktail menu, with notable cocktails such as the Ube Painkiller and The Black Swan Martini.
Spread across 6,000 square feet of indoor and outdoor dining spaces, design features at Musume at The Star include a private Tatami room with sunken seating for intimate 12-person gatherings, two bars (inside and outside) with bar seating plus lounge space, a nine-seat seat sushi bar, custom sake displays, zen lighting, moss and tree installations, “floating” banquettes, sake millwork, warm wood accents and chiseled stonework. Thematic restrooms — Midnight in Tokyo, Sensual Sento and Animal Instincts — also were integrated to add an element of surprise and intrigue.
Musume at The Star’s standout design feature is a custom 20x10-foot art installation created by gifted young artist Zeb Smith, a 15-year-old freshman at Booker T. Washington High School who suffers from metastatic cancer.
“We’re thrilled to unveil Musume at The Star and invite the local community to dine and drink with us,” says Josh Babb, co-owner
of Musume and co-founder of Rock Libations. “From the exclusive new menu items and fresh fish flown in daily to our unparalleled collection of sake and Japanese whisky, every detail has been designed to provide guests with an exceptional Japanese culinary experience.”
Josh has 20-plus years of restaurant operations experience.
Musume, which means “daughter” in Japanese, is part of the Rock Libations restaurant group owned by Dallas locals Josh Babb and Sean Clavir. Sean has been a staple on the national bar/ restaurant/nightclub scene for more than 20 years.
Serving as Musume’s executive chef is Yuzo Toyama, who is a native of Shizuoka, Japan, and has 20-plus years’ experience in traditional Japanese culinary arts.
Musume at The Star is open for lunch and dinner from 11 a.m. to 10 p.m. on Mondays through Thursdays and 11 a.m. to 11 p.m. on Fridays; with dinner service-only from 5-11 p.m. on Saturdays and 5-10 p.m. on Sundays. The restaurant offers a VIP program. Reservations can be made on the Open Table platform.

How To Stay Festive And Healthy? Sure Thing

Halloween is typically filled to the brim with salt, sugar and carbs. It can be hard to stay on the nutrition wagon during spooky season, but there are plenty of fun ways to add a festive spin to favorite healthy dishes.
pumpkinFRUIT BOWL
With luck finding a melon or watermelon at the store, simply carve it like a jack-o-lantern and make the mouth large enough to have other sliced fruit emerging, such as cut pineapple, sliced grapes and apple chunks. Along the side, peel mini oranges and add a green stem to mimic pumpkins.
spooky CHARCUTERIE
These fan favorite boards can easily be kept healthy with some additions. Make any treat spooky with edible eyeballs. Adding them to a small snack such as mini bell peppers or grapes and strawberries is a fun way to stay on theme without sacrificing a healthy streak. Eyeball salami rolls also can be added, starting first with a green olive in the center, surrounded by a roll of mozzarella cheese and then surrounded by salami or even prosciutto.

stuffed PEPPERS
This fall staple easily can be incorporated into a fall gathering or Halloween night by carving jacko-lantern faces in orange peppers, and resuming a favorite recipe from there. Serving bread on the side? Use a skull or pumpkin shaped cookie cutter to re-shape it.
ghostly DIP
Hummus and pitas can be made scary in no time. Use a ghost shaped cookie cutter to shape pita bread, lightly toast and serve with red pepper hummus, which is usually orange in color.
jack-o-lantern VEGGIE TRAY
The easiest bet for a quick and healthy Halloween treat? You can’t go wrong with a veggie tray shaped like a jack-o-lantern. Use baby carrots as the base, and cucumber or celery to shape the mouth and stem. The eyes? Two round bowls of veggie dip.
