Autumn is my favorite season of the year! As the leaves begin to change and the temperatures cool, our cravings shift toward comforting flavors that warm both body and soul. October is one of our most delectable issues of the year, and this month we’re celebrating the food and drink that makes our city such a delight for the senses.

We had the privilege of sitting down with the team at HEYDAY to learn all about their fall menu, brimming with seasonal ingredients and dishes and cocktails designed to make your taste buds sing. You’re in for a treat, so get ready to savor every bite!

CELINA VETERINARY HOSPITAL'S 1ST ANNIVERSARY

Celina Veterinary Hospital celebrated its first anniversary in August, marking one year of serving pets and families in Celina. CELINA NATIONAL NIGHT OUT 2025

Celina’s National Night Out, designed to foster stronger bonds between neighbors and law enforcement, returns on Tuesday, October 7, from 6:00 to 9:00 PM. Various neighborhoods will hold block parties across the community, and the Celina Police Department will be visiting these gatherings. COOK CHILDREN’S HEALTH CARE SYSTEM AND CELINA ISD ANNOUNCE PARTNERSHIP

Celina Independent School District (ISD) is proud to announce a new pediatric health care partnership launching in the 2025-2026 school year. This collaboration brings Cook Children’s trusted pediatric care directly into Celina ISD, ensuring students have fast, expert access to health services – right from school. “As two organizations committed to putting children first, this partnership represents a natural alignment,” said Kevin Greene, President of Cook Children’s Medical Center.

OKTOBERFEST

One of Celina’s favorite traditions, Oktoberfest, is back and better than ever. Organized by the Celina Chamber of Commerce, the Celina Entertainment District will be transformed into a place for all things German heritage, including authentic music, food, and beverages. Fun for the entire family can be found from stein hoisting to costume contests with plenty of games and activities for all ages. The fun begins early on October 11th with the Tapping of the Keg and continues all afternoon.

CELINA ISD HOMECOMING PARADE

Another classic tradition held in and around our historic Town Square is Celina’s Homecoming Parade. Come see your favorite floats, enjoy the sound of our award-winning Bobcat Band, and cheer on the Bobcats as they prepare to take the field for their Friday night game. Festivities begin in the morning on October 10th so get there early to get a good spot and stay on after to enjoy a bite at your favorite lunch spot!

PLANTING FOR A TEXAS AUTUMN

Texas Nativescapes Creates A Natural, Low Maintenance Garden Design

As the leaves fall from the trees and the weather finally gets a little cooler, Texans are preparing their landscape for fall and winter. Paul Rowan, owner of Texas Nativescapes, says autumn is the perfect time to “incorporate beautiful low-maintenance native plants for the fall, especially in the North Texas Ecoregion.”

Since the autumn Texas weather can be a gamut of hot and chilly temperatures, Paul offers suggestions as to what is best for this region and environment. He notes that Texas native plants are known for their durability, with fall being the best time of year to plant. Now is the time to add vital nutrients and update soil beds with organic food base compost, or a combination of mushroom or cotton burr compost (leftover parts of cotton plant after cotton fiber has been harvested). Furthermore, consider applying minerals such as Azomite and Microlife Ultimate, both organic fertilizers. He also suggests a fertilizer jumpstart by using a 8-4-6 fertilizer, 8 Nitrogen, 4 Phosphorus, and 6 Potassium, commonly known as N-K-P. The numbers indicate the percentage by weight of each nutrient in the product and are the three primary nutrients plants need to grow.

These simple protocols allow ideal conditions for Texas native plants to adapt quickly while establishing a robust root system. This results in healthier, more resilient plants that are better equipped to survive our volatile and unpredictable Texas climate conditions.

OUTSTANDING STUDENT ATHLETE OF THE MONTH

It is with great pleasure to announce the Outstanding Student Athlete of the Month as selected by the Celina Independent School District (CISD) Athletic Coaching Team. This month’s selection is Easton Clayton.

Easton began with flag football in Utah before moving to Texas in third grade and joining tackle leagues. Since then, his dedication has carried him through years of competition, including baseball, basketball, and powerlifting. His focus on football and strength training has helped him become an anchor for the Bobcats’ offensive line, contributing to the 2024 State Championship and earning a spot in the 2025 State Championship for powerlifting.

Some of Easton’s most memorable experiences include the 2024 Gunter game and military special forces–led boot camp he attended with his fellow seniors. These moments not only sharpened his skills but also deepened his understanding of leadership, perseverance, and team

unity. This year, his teammates and coaches recognized his character by naming him one of six varsity captains, as well as the school’s Fellowship of Christian Athletes (FCA) ambassador.

Outside of athletics, Easton serves as a leader in his youth group at The Church of Jesus Christ of Latter-day Saints and finds joy in mentoring others through Unified PE. He spends his free time fishing, hanging out with friends, and working the drive-thru at Swig. Through it all, Easton remains deeply grateful to the Celina coaching staff for shaping him into both a stronger athlete and a young man of integrity.

After high school, Easton would love to continue to play football in college if there is an opportunity, and he is also considering joining the Army. Congratulations to Easton Clayton on being named the October Outstanding Student Athlete of the Month sponsored by Lamar National Bank.

It is hard to believe that a year has passed, and the Heyday team is celebrating a year on Celina Square. This cozy corner of Celina has become a fixture for anyone looking for an elevated cocktail or truly amazing eats in town. Anthony Morel has prior success with Graffiti Pasta in Denton and The Nook CKMC. After working with Michael McGowan for over 20 years in the industry, Anthony knew it was time to team up. Michael runs the front-ofhouse operations. It is his job to ensure that every customer has an unforgettable, positive experience and that the restaurant is always on point. Wilborn Blalock, the master mixologist, has been instrumental in bringing the team’s vision for elevated cocktails to life. It didn’t take long for Anthony to realize that while he loved creating and designing fresh seasonal food, his skills only took him so far, so he wanted someone to lead Heyday’s kitchen. The opportunity arose in December 2024 to add Chef Joey Dawkins to the team, and since then, the menu has elevated to the next level of greatness.

When you sit down with these guys, you can't help but be reassured by their high standards. They share a common commitment to excellence, but it's their meticulous approach that truly sets them apart. Whether they're crafting a new menu, brainstorming changes to the restaurant, planning a big event, or dreaming up a new concept, their attention to detail is always evident. The day we met, they were putting the finishing touches on their fall menu, discussing the perfect harmony of pears that they could create in both their food and cocktails.

So what has this creative team from Heyday come up with to engage us this fall? In the kitchen, the focus is on comfort food that has been enhanced with the best cuts of meat and the highest quality ingredients. If you want an experience beyond the typical pumpkin spice everything, their flavors of fall make you think of cozy, crisp fall nights, warm harvest foods that make you nostalgic for that "fall feeling". Fresh apples, pears, cranberries, figs, squash, sweet potatoes, pecans, along with maple syrup for sweetening, and sage, rosemary, and thyme bring savory and earthy notes to any dish.

In their second year, Heyday is not slowing down. Anthony shared that they are excited to add a year-round patio and extend the kitchen to serve more customers and host more events. The patio, wrapping around the west side of the restaurant, will include extra seating, accommodate larger parties, and allow for more reservations. This expansion is a testament to their commitment to providing a top-notch dining experience.

It was October 16, 2015, in Celina when Holly Potts introduced us all to cryotherapy. Fast forward ten years, and C3 Aesthetics & Wellness is still thriving, providing the people of Celina and the surrounding areas with an abundance of services. Like the name implies, C3 Aesthetics & Wellness has evolved to include aesthetics, med spa treatments, and of course, recovery.

Originally known as Collin County Cryo, Holly Potts and her husband Bill realized that as their business grew and their services expanded, their name should reflect those changes. Thus, five years ago, they rebranded to what we now know as C3 Aesthetics & Wellness. Holly says, “The name reflected more of our new focus. We felt like the old name limited us where customers thought we only did cryotherapy.” In fact, C3 has always offered various aesthetic treatments. “Now the name directs its focus on all of our services— beauty, wellness, and recovery,” Holly continues.

C3 Aesthetics & Wellness offers a variety of choices in a relaxing atmosphere with medical-grade cosmetic non-surgical procedures. These treatments pamper and deliver long-lasting results improving your skin, body, and overall appearance. Holly notes that aesthetics is the most common service, the med spa being the most popular. This includes botox and fillers, LED light therapy, and facials. C3 also provides radio frequency microneedling, traditional microneedling, dermatology peels, dermaplaning and waxing.

The Diamond Glow hydro facial is a favorite treatment using a diamond-tip exfoliation to rejuvenate and hydrate the skin. This facial addresses many skin concerns and is suitable for all skin types.

The light therapy, infrared celluma LED, stimulates your cells activating the collagen in skin reducing fine line and wrinkles. Celluma LED light is also an excellent method of reducing and fighting acne as well as inflammation due to arthritis or other autoimmune issues.   Holly maintains that microneedling is the “fountain of youth for the skin” encouraging collagen and elastin production. It is known as collagen induction therapy, but is minimally invasive giving a more vibrant skin. It assists with fine lines creating bouncy, healthier skin. Don’t let the name fool you, it is not painful while some people find it relaxing enough to fall asleep. The effects of microneedling does takes time, thus you should conduct several sessions to see benefits.

Like microneedling, the C02 Laser also has a curious name. C02 Laser, according to Holly, “in a way vaporizes the skin” to get rid of cellular turnover, and banish old skin. Holly states, “We use a conservative approach to do a ‘cool peel’ that also increases collagen, decreases appearance of scars, and improves overall texture. It will take off damaged skin, like sun damage, and repairs pigment.” One of the advantages of C02 Laser is that it is good for all pigments and skin types.

Body sculpting is also available at C3 Aesthetics & Wellness. Using HIEMT, High-Intensity Electromagnetic Muscle Training, muscles are stimulated making them contract promoting fat reduction and toning. It can also reduce lower back pain. Like other treatments, body sculpting requires several sessions to see results and have maximum success.

Finally, recovery is a primary service of C3 Aesthetics & Wellness including cryotherapy, cold therapy. Holly states, “Cryo helps so many people improve their quality of life.” From those suffering from arthritis, or healing from an injury, or just general soreness, cryo and CONTINUED >

its extreme cold temperature has so many therapeutic benefits. “It makes people feel better, so we keep it. With consistent usage, cryotherapy is a game-changer,” Holly continues.

Other wellness therapies available a C3 includes NormaTec, Celluma LED light, and IV therapy. NormaTec compression therapy is perfect for athletes to improve circulation and reduce muscle soreness by using compressed air to massage targeted parts of the body. Celluma LED light is not just beauty, it also can decrease inflammation. Lastly, IV therapy is known to boost hydration, and can be used to treat those that suffer from migraines. The “Beauty” IV drip addresses skin pigmentation such as dark spots, uneven skin tone, and promotes overall health and radiance.

There’s something deeply satisfying about a well-made sandwich—especially when it comes together with minimal effort but delivers big on flavor. As the season changes and appetites grow heartier, fall is the perfect time to get creative with ingredients tucked between slices of crusty bread or buttery rolls. Whether you’re looking to upgrade your lunch routine, enjoy comforting flavors and bold textures, or impress guests with a no-fuss meal, these easy-tomake sandwiches strike the perfect balance between simple and sensational.

INGREDIENTS

• 3 oz goat cheese

• Fresh arugula

• ¼ cup caramelized onions

• 1 pear, thinly sliced

• Honey, to taste

• Butter for toasting the bread

• Rotisserie chicken breast thinly sliced

• Sourdough bread, buttered (optional)

INSTRUCTIONS

Spread goat cheese on one side of the bread. Top the cheese with arugula, caramelized onions, sliced pears and chicken breast. Drizzle with honey. Top with remaining slice of sourdough bread. Use a griddle or panini press to heat the sandwich.

Roasted Tomato & Mozzarella

INGREDIENTS

• French bread loaf, halved lengthwise

• 2 cups cherry tomatoes

• 2 garlic cloves, minced

• ¼ cup olive oil

• 1 tsp thyme or rosemary

• Salt, pepper, chili flakes (optional)

• 8 oz fresh mozzarella, sliced

• 1 cup arugula

• 2–4 tbsp pesto (thinned with olive oil)

• Balsamic glaze

• Optional: 4 slices prosciutto

• Fresh basil

INSTRUCTIONS

Toss cherry tomatoes with olive oil, garlic, herbs, salt, and pepper. Roast at 375°F for 20–25 minutes until soft and caramelized. Brush bread with olive oil. Toast in the oven at 375°F for 5–7 minutes until crisp. Layer mozzarella slices on the toasted bread. Add fresh basil. Return to the oven for 3–5 minutes, just until melted. Optional: Top with roasted tomatoes, arugula, and prosciutto (if using). Drizzle with pesto and balsamic glaze.

• 1 grilled chicken breast

• 2 slices pepper jack cheese

• 2 slices cooked bacon

• 1 tbsp fruit jam (fig, raspberry, or jalapeño recommended)

• A handful of fresh arugula

• 3–4 cherry tomatoes (halved)

• 1 tbsp garlic aioli

• 1 brioche bun (toasted)

INSTRUCTIONS

Lightly butter the inside of the bun and toast in a skillet or oven until golden brown. Spread a layer of garlic aioli on the bottom bun. Add the sliced grilled chicken breast. Place the pepper jack cheese over the hot chicken to slightly melt it. Layer on the crispy bacon slices. Add halved cherry tomatoes and a small handful of arugula. Spread the jam on the top bun. Enjoy!

Sweet & Spicy Grilled Chicken Sandwich

Savory Roast Beef with Horseradish Cream

INGREDIENTS

• 2 slices crusty bread (sourdough, ciabatta, French bread)

• 6 oz roast beef

• 2 slices provolone cheese

• 2 tbsp butter (for toasting)

• 2 ½ tbsp mayonnaise

• 1 tbsp horseradish sauce

• 1 tsp Dijon mustard

• Arugula

• Cherry tomato

• Caramelized onions

INSTRUCTIONS

Toast the bread. Butter one side of each slice and toast in a skillet until golden. Heat roast beef briefly in a pan. To make the spread, mix mayo, horseradish sauce, and Dijon. Spread on the toasted bread. Layer roast beef, cheese, and broil briefly to melt. Add arugula, tomato, and caramelized onions if using. Top with the second slice of bread.

Halloween is typically filled to the brim with salt, sugar and carbs. It can be hard to stay on the nutrition wagon during spooky season, but there are plenty of fun ways to add a festive spin to favorite healthy dishes.

With luck finding a melon or watermelon at the store, simply carve it like a jack-o-lantern and make the mouth large enough to have other sliced fruit emerging, such as cut pineapple, sliced grapes and apple chunks. Along the side, peel mini oranges and add a green stem to mimic pumpkins.

These fan favorite boards can easily be kept healthy with some additions. Make any treat spooky with edible eyeballs. Adding them to a small snack such as mini bell peppers or grapes and strawberries is a fun way to stay on theme without sacrificing a healthy streak. Eyeball salami rolls also can be added, starting first with a green olive in the center, surrounded by a roll of mozzarella cheese and then surrounded by salami or even prosciutto.

This fall staple easily can be incorporated into a fall gathering or Halloween night by carving jacko-lantern faces in orange peppers, and resuming a favorite recipe from there. Serving bread on the side? Use a skull or pumpkin shaped cookie cutter to re-shape it.

Hummus and pitas can be made scary in no time. Use a ghost shaped cookie cutter to shape pita bread, lightly toast and serve with red pepper hummus, which is usually orange in color.
