As a daily scroller of the headlines on jambands.com, it seemed like anytime there was an epic collaboration, or rare supergroup playing a handful of intimate gigs, Boulder was a likely tour stop. After living in Boulder for almost five years, it has become easy to get spoiled with all the options. While living in Kansas City, going to see great bluegrass or jam bands usually meant a one-hour commute there and back to Lawrence, Kansas.

While I enjoy nothing more than being home with my wife and four kids, sometimes you just have to get out and go to a show! Earlier this year, it was announced that founding Grateful Dead members, Bob Weir, Mickey Hart, and Bill Kreutzmann joined by John Mayer, Oteil Burbridge, and Jeff Chimenti (Dead and Company) would be returning to Folsom Field for two nights this summer. As a huge dead-head, you can imagine how pumped I was when I saw that the shows fell over the weekend of my 40th birthday. Happy Father’s Day to all the dads and we hope you enjoy reading this issue as much as we enjoyed putting it together. Certainly, a pleasure to have so many incredible local guys involved.

DENVER’S NEWEST AUDI DEALER ON THE DENVER-BOULDER TURNPIKE With a history of four decades in the city, the Audi Boulder dealership is expanding into Broomfield. Construction is just months away from being complete on the 4.5acre site near the intersection of Northwest Parkway and Via Varra, just north of Hwy 36 and the Flatiron Crossing Mall.

“Spring is my favorite season of the year because of the versatility of ingredients we get to use such as English peas, fava beans, carrots, asparagus,” says Parrett. "We work with some amazing local purveyors like Villano Brothers, Star Farms, Palizzi Farm, Rocky Mountain Fresh, and Mountain Man Micro. The new menu is meant to showcase the incredible bounty of Boulder, Colorado, pairing it with the freshest seasonal catches from the coasts.” A native of Nokomis, Florida, Parrett grew up fishing in the Gulf and learned to cook by helping his mom prepare their daily catch. “As a kid, we’d go fishing four or five times a week, and every night my mom would cook a big homemade meal for us. She was my inspiration to become a chef—bringing us all together, making something delicious, and staying so calm the whole time. I wanted to be in my element, the same way she was in the kitchen.” While the cuisine in South Florida incorporates various Caribbean elements and tropical ingredients, Parrett prefers to use the best of what-

He will oversee both the new Audi Flatirons site in addition to the existing Boulder site. Kuni, now an enterprise of Holman Automotive, has four other dealerships in Colorado, including a Lexus dealerships in Greenwood Village, a Honda dealership in Centennial and a Land Rover dealership in Littleton. The new dealership is being built just south of the Hyatt House hotel that sits at the southwest corner of Via Varra and West Midway Boulevard. The main public entrance for Audi Flatirons will be off of West Midway Watson said Audi Boulder employs 60 people. Some of those people will be moved to the Broomfield site, which is expected to employ 70 to 100 people, depending on how quickly the dealership grows, with some backfill hiring to occur in Boulder. f you’ve recently strolled down the streets of any given Boulder neighborhood, you’ve likely taken notice of all the rebuilt and redesigned homes on the rise. Perhaps you’ve even considered how you could get in on this trend. Sure, flipping homes seems like all fun and games if you’re a HGTV show with a bottomless budget, but when it comes to

Boulder, there’s truth when it comes to its reputation. That’s where Elizabeth Smith offers some constructive criticism. Literally. As one of the architects of Fanas Architecture that worked on the Meadow Lawn Park residence, Smith explains that, “Anytime you do a spec home, you’re not talking to the owner in terms of what they want, you’re trying to figure out what the market wants so that they can get the best profit margin when they sell it. “For this project, we were looking to hit on what we were observing was in high demand in the current market— open-concept main living area, an indoor/outdoor space with a large upper floor deck, large covered backyard patio, firepit and barbeque, and an upscale, contemporary feel with enough space for people to have their own areas, without feeling separated from those they’re living with.” Other features for the 5-bedroom home include a study, one-car garage, exposed interior ceiling beams, modern kitchen, walk-in pantry, full window wall opening to a great room area, updated basement with access to the backyard, a bedroom, family room and laundry room. She adds, “The existing house held little appeal, but the property boasted a large site in a desirable and up and coming neighborhood. [The buyer] understood that with the right vision and the right team, the property would be a solid investment and hired Fanas Architecture to help him realize the home’s ultimate potential.” Of course, clarifying that vision was only the first feat. Between the energy codes and solar compatibility, to name a few, Boulder is brimming with rules and regulations. To meet Boulder standards, the Meadow Lawn Park residence incorporates solar compatibility and windows for egress to meet current code, and adheres to height, bulk plane and site coverage limitations. Smith advises potential buyers to be mindful before jumping the gun. “Regardless of who you are, even if you’re just trying to buy a home in Boulder and re-do it yourself, before you do anything, before you spend money on property, go into the city, sit down with a planner and find out what all the rules are for that property,” she says. “If you don’t know what the rules are and get all excited about a home you think you can build on this lot, you may end up disappointed and out of luck financially if you’ve gone ahead and bought it and you’re not able to do what you wanted to do.” The best way to do that is give them the address, and they can pull up everything on that lot and tell you exactly what the rules will be. Smith adds, “They’ll be happy to give that information out because they’re the ones who will be reviewing the property later to make sure it adheres to these rules.” It’s a win-win. Here are several questions Smith recommends checking off your list: What would I be allowed to do or not do? Is it in the floodplain? What would my height limit be? What would my step-max be? Are there any easements that run through the property that will prevent me from building on certain parts of the lot? Ultimately, the market is still strong in Boulder, so if buyers are careful where they select and aware of what they’re getting into, spec houses are sure to have a strong presence going forward. 40

And, it’s an art studio for artists who generate creativity from interaction, not just solo reflection.” A truly unique space, The Studio (Boulder) was designed with an industrial chic mindset by artist and fellow Co-founder Jen Lewin.

Lewin and Goodrich connected on a previous project years before hatching the idea for The Studio (Boulder), and together they discovered a need for a collaborative workspace. They wanted a place that would simultaneously allow for focused work as well as the opportunity to be a part of the greater community. “One great aspect of The Studio is that it doesn’t cater to one group of individuals,” says Goodrich. “Who wants to be around a bunch of people doing the exact same thing they’re doing? People come here to work, but they come here for much more.” One member of The Studio, Lisa McAlister, owns a boutique PR and Marketing agency that needed a home. “I meet with clients on a regular basis and needed a professional space to do that in that also fits my style versus a stuffy, rented conference room,” says McAlister. “I keep fairly regular office hours and always start my day with a cup of coffee from our awesome coffee maker. I catch up with co-workers that are around in our communal kitchen and then get to work. I am sometimes in and out to meet with clients or they come here for coffee and meetings. I have a private office so when we are really

alking into the Full Cycle in Boulder on the corner of Pearl and 18th St., it’s suddenly unclear if you’re walking into the neighbor-

hood bike shop or the neighborhood bar. One side of the space is lined with bikes, gear and mechanics wrenching on equipment at a service station. Along the other side and near the front, is a brand-new bar top that sits over 15 people, with 16 taps, and a handful of large, high top tables. This was Russel Chandler’s vision since buying Full Cycle in 2016. “Our goal is to establish the Full Cycle bar and café as the community hub for group rides, bicycling events, fundraising, coaching, clinics and maintenance classes,” says Chandler. This spring, the renovation added a bar and café to the bike and service shop. Chandler hopes the newly remodeled digs can be a general hangout for folks wanting to pop in for a beer or glass of wine after a ride or grab a quick coffee and panini mid-day. “It’s also somewhat of an attempt to combat online shopping,” says Chandler. “We want to make it easy and welcoming for everyone to just come on in.” Full Cycle started in 1982 with humble beginnings in a garage under a different owner. Today, there is the Pearl Street location and the location on the hill, both owned by Chandler and his business partner, Ed Kuh.

or us, lighting the grill is a year-round occurrence. But, we know nothing defines summer more than the sight, sound,

smell and taste of a perfectly grilled steak. It is the essential dish of the season for its simplicity. All cooks should be comfortable preparing a grilled steak from start to finish: from purchasing premium quality meat to finishing off with the perfect season-

While most home cooks are comfortable shopping for steaks that have been popularized over many years, like New York Strip and Filet Mignon, we at Blackbelly recommend an “under-theradar” butcher cut: dry-aged Bavette. This “bistro cut” is more commonly consumed in France and it is a “thin” steak, that falls within the category of flap meat. The steak comes from the belly of the cow as an extension of the T-bone and Porterhouse. The Bavette is composed of the visceral muscles that assist the vitals. They help the vitals work but are not the tough weight bearing muscles. So, the consistency that forms within the meat provides a perfect intermuscular marbling, instead of a fat cap, making it super tender and juicy throughout. FROM THE BUTCHER:

• Ask your butcher what flap meat they have on hand, and what would be best for the grill. Hot, dry heat is recommended. If it’s a rainy summer night, and you don’t want to bear the elements, it can be cooked in a very hot pan. • The Bavette is great for large parties since you don’t have to grill individual steaks to order. Instead, you can cook carne asada, or serve slices of meat buffet style. • The Bavette can also be called “Sirloin Flap.” The other three visceral muscles, aka flap steaks, are: skirt, flank and hanger, and can be cooked in a similar fashion. FROM THE CHEF:

“I love the Bavette because of its great flavor, muscle structure, ease of grilling, minimal sinew, and general consistency. It’s always an amazing, affordable and flavorful cut.” -Chef Hosea Rosenberg Follow a few easy tips to cook the perfect steak:

• Make sure the grill is clean and scraped, lightly oil it before cooking. • Remove the steak from the refrigerator 1-2 hours before cooking. • Season simply and generously with salt & pepper 15 minutes before cooking. • Cook, so it’s not too far past medium rare, at a VERY high temperature. Turn once, flip, then turn once more. Don’t move it around any further. • Make sure to let your steak rest for half the time it cooks. When slicing, remember to cut across the grain to achieve slices that are tender, not chewy.

8oz Bavette per person 1. Salt and pepper the steak generously

Let rest for 5 minutes 5. Slice steak against the grain for optimum tenderness Potatoes (per person): 5-6 fingerling potatoes 1 garlic clove, sliced very thin 1 Sprig fresh rosemary 1 Tbsp olive oil 1 Tbsp butter 1. Boil potatoes in salted water until al dente. 2. Cool in ice water and keep cold until ready to use. 3. Cut potatoes in half. 4. Heat butter and olive oil in cast iron or heavy duty steel pan. 5. Place potatoes, cut side down, in pan. Cook over medium-high heat until potatoes are golden brown. 6. Add garlic, rosemary, and season with salt and pepper. Toss around pan until garlic just starts to brown. 7. Reserve. Chimichurri (Serves 4): 1 Bunch parsley, stems removed 1 Bunch cilantro, stems removed 1 Clove fresh garlic, sliced 4 Tbsp evoo 2 Tsp lemon juice Cracked black pepper Kosher salt 1. oney, light my fire etched on the window is what greets me upon

arrival at newer than new Woodgrain Bagels in Boulder between CU and downtown Pearl Street. One part Jim Morrison (at least in the signage), one part Montreal and all parts delicious, Canada (or at least some Canadian fare) has found a new home in Boulder. I’m an East Coast gal. Bagels, pizza, and toasted subs top my list of “downhome” chow. Montreal bagels are categorized by three criteria: hand-rolled, boiled in honey water and wood-fire roasted. These processes give the bagel a somewhat irregular shape, a sweeter flavor and a crispier texture.

Hailing from the Toronto fine-dining scene, Founder and Owner David Bowen recognizes that the experience is just as much of a selling point as is the food offering. Hospitality abounds as hand-rolled and handcrafted bagels, spreads and sandwiches are prepared to perfection and tailored to each customer. “By creating an inviting community-focused experience we fill emotional needs beyond hunger,” Bowen tells me in between guest interactions during a busy afternoon at Woodgrain. In a somewhat new stage of life (parenting), David remarks that after many years and long hours in food service, he is ready for more time with his family including his three young sons. “I spent many years working while my friends socialized and started families,” he explains. As we finish our interview, he mentions to me excitedly how today, in fact, he is hoping to see one of his sons practice soccer before heading home. Menu items include breakfast fare that ranges from a bagel with whipped cream cheese to a Huevos Rancheros Sandwich to a Boulder favorite, avocado toast (on a bagel). Later-in-the-day items include lunch-type sandwiches packed between two halves of, you guessed it, a bagel. I order the Mile High Rueben, a New York deli-style staple that Bowen admiringly dubs “the six napkin sandwich.” It doesn’t take long for me to figure out that he’s not kidding: this is the Godzilla, the Henry VIII, the Cersei Lannister of sandwiches. If you’re not too intimidated, try it with a side of real, Canadian poutine. “ The guest experience is paramount to any retail/foodservice operation,” Bowen explains as we conclude our interview. The food offerings coupled with the warm, inviting decor present through every aspect of the Woodgrain experience lead me to believe that we haven’t seen the last of David Bowen’s culinary prowess.
