A Time to Be Thankful
N
ovember for me has always been about food and fun times with family and friends. Our family calendar is packed full of events, dinners, activities and get-togethers from now until the first of the year. Not many things bring friends and family together like great food. In this issue, we are highlighting a few local chefs who have dedicated most of their lives to bringing people together through great food. We also added a few recipes to help you impress this holiday season. November is also a month of reflection for me and a great time to review the year with all its ups and downs while ultimately realizing how much I am thankful for and how blessed we are to live in such a great community. I want to thank some of our valued advertisers for sharing their personal family traditions they enjoy this time of year. Look for them in the pages that follow. It’s always nice to see how we all help and support each other from day to day. It’s a wonderful month to be thankful and share the many blessings we each have with our family, friends, neighbors and community. hen I went to Smoky Mountain Pizzeria Grill in Eagle a few weeks ago, I had no
idea that I would be discovering my new favorite pasta place. I thought, "pizza, seems pretty straightforward, right?" Wrong. Smoky Mountain has a huge menu with an array of choices ranging from simple to sophisticated. The appetizer menu has a little bit of everything from garlic fries to brie kisses. In addition to their delicious pizza made from your choice of crusts, sauces and toppings, they also have salads, calzones, sandwiches, burgers, grilled entrees and an impressive lineup of 14 different pasta dishes. It was a challenge even to choose which things to try. Everything looked tempting and, after trying a few of our first choices, we will definitely be returning for our second and third choices.

Jimenez was raised in a family of cooks. His parents
own a restaurant on the bench, where he grew up bussing
tables and working in the family business at around age 14. “My parents raised me with their hard work ethic,”
Jimenez says.
Bolstered with this industrious upbringing, Jimenez was exposed to every aspect of the food industry. Working behind the scenes, a young Jimenez began his hand at making desserts and salads. “I would basically stay there (in the back) until they kicked me out," he says. But this peek into the culinary world made quite the impression on the young man, and, in his early '20s, Jimenez decided to branch out of Idaho and into the trendier culinary scenes of Los Angeles. In Southern California, Jimenez was baptized in the waters of the culinary masters, learning the tricks of the gastronomical trade. With this wealth of invaluable experience, Jimenez returned to the Treasure Valley, working at the Red Feather Lounge and eventually to Le Coq d’Or in the Chateau des Fleurs in Eagle, Idaho, where he is currently creating new and exciting dishes to bring to the discerning public palate. This latest venture is one that Jimenez is most excited about. “Chateau Des Fleur is a true farm-to-table dining experience. The food is grown in the owner’s garden, so there is a true connection to the earth,” Jimenez says. “Nothing is wasted. It makes one very mindful and privileged to explain to our patrons about where their meal comes from.”

Jason Jones knows food. Growing up in the Treasure Valley, Jones began his culinary experience at one of the popular Smoky Mountain Pizza restaurants where he worked during high school. Moving on from here, Jones ended up cooking at local favorite, Asiago’s as a sous chef, a place that encouraged his love of Italian cuisine. Sticking around the Boise area, Jones was hired as executive chef at Bella Aquila preparing five-course meals that often included uniquely Idaho courses. “We would have specials like blueberry trout paired with local asparagus,” Jones says. Jones eventually landed a position at St. Luke’s, where he currently works as an executive chef and food service manager, a job that not only provides critical sustenance for recovering patients but provides a unique opportunity to implement healthy fare with tastier dishes. “We’ve learned to incorporate healthier options,” Jones says. “Now most of our meals use more nutritious ingredients like quinoa and different grains.” Good food was a constant in his household while growing up and Jones spent a lot of time in the kitchen with his grandmother—someone who

She would make them and I would help,” he says. Montana native Christopher Zahn is no stranger to the
culinary scene. Growing up in the Mountain West, he was familiar with the food preferences borne from this side of the country, but his inner foodie craved more than the prototypical meat and potatoes fare. During high school, he discovered his passion for not just enjoying a well-developed meal but loving every aspect of the culinary experience, from prep to finish. Though these formative years were mainly spent working in the back kitchens of Butte, Montana, it also planted the seeds for exploring his hand at cooking. During a stint as an assistant food and beverage manager at the Fairmont Hot Springs in Anaconda, Montana, Zahn met a chef who encouraged the young man to learn more about the food business. “Most people from here end up in Seattle or Las Vegas to expand their culinary experience. My brother had just moved to Boise so I thought maybe I would head there,” Zahn says. Once in Boise, Zahn quickly settled in finding a job at the Arid Club, where he refined his talents as a pastry chef and culinary caterer, preparing private meals and fine-dining experiences. He eventually opened Zee’s Rooftop Cafe & Zee Christopher Catering in the C.W. Moore building, a place to showcase his unique spin on Northwest cuisine as well as his passion for floral design. Zahn has also taken his talents and experience to College of Western Idaho and Renaissance High School to teach teens the basic foundations for cooking. 1. With adult help, preheat oven to 350 F. Butter a casserole dish. 2. Peel enough sweet potatoes to make 3 cups, about 5 large potatoes. Place in a pot and cover with water. Boil until soft enough to mash. Drain. 3. Mash potatoes in a large mixer. Add the sugar, eggs, vanilla, milk and butter. Mix. 4. Pour mixture into the buttered casserole. 5. Mix together the ingredients for the topping and sprinkle over the potato mixture. 6. Bake at 350 F for 30 minutes. Allow to stand a few minutes before serving.

If you go south a short way from Nampa or Caldwell, you will hit Lake Lowell, which is nearly surrounded by the wildlife refuge. There’s diverse terrain including the lake, riparian areas, croplands and sagebrush shrub/ steppe communities. All the different terrain attracts a multitude of animals. The lake is home to tens of thousands of ducks and geese, and fall and winter is when it hosts the majority of them. The refuge is also the winter home and nesting area for many bald eagles. This is obviously a large area, so check out the visitor’s center at 13751 Upper Embankment Road south of Nampa or the website, FWS.gov, before your visit. If you want to see birds up

The open enrollment period for any other individual or company plans purchased outside of the exchange may vary, so check with your agent or your company's human resources director to stay on top of any changes in your policy. “Idahoans across the state will have a choice of health insurance carriers when open enrollment begins on November 1,” Pat Kelly, executive director of Your Health Idaho, says. “Despite the limitations in other parts of the country, Idaho has maintained control of its marketplace to consistently provide consumer choice and access.” Rachel Johnston knows how hard finding the right coverage for an individual or family can be. As the owner of Health Benefits of Boise, an independent agency offering benefits from a variety of Idaho's carriers, Johnston has been a longtime advocate for Idahoans seeking coverage. With 13 years of insurance experience, Johnston knows a thing or two about navigating the open enrollment world. Here are a few tips she has for a successful, hassle-free enrollment

Johnston says this is often where many people are the most under-prepared as they begin open enrollment. Do your best to estimate how much and what type of income you'll have to claim. Despite proposed rate increases, many consumers who purchase on the exchange may see little to no change in their 2018 premiums due to tax credits, according to Your Health Idaho officials. The proposed rate increases for silver-level plans on the exchange are significantly higher this year because cost-sharing reduction subsidies are assumed not to be funded by the federal government. Tax credits will increase to offset the higher rates.
4. DO NOT PROCRASTINATE
Starting October 1, Idahoans can preview the 2018 health and dental insurance plans and networks by visiting YourHealthIdaho.org.
