I first met Jennifer from Camp Discovery while my daughter was an inpatient at the hospital. They were hosting one of their pop-up camps, bringing crafts, laughter, and a surprising amount of glitter to kids who truly needed a lift. What struck me most was how effortlessly they created joy in the midst of uncertainty. Their work is more than fun and games; it’s hope in action, and I’m so honored to share their story with you. TIKTOK SENSATION RYANE ROY OPENS UP ABOUT STRUGGLES, FAITH, FRIENDSHIP, AND HOW SHE’S TURNING INTERNET FAME INTO SOMETHING THAT MATTERS EVEN MORE.
People of a certain age (like me) can be forgiven for not knowing who Ryane Roy is. But when I told my 13-year-old niece, Brooklyn, that I’d be talking to Ryane, her reaction was immediate and enthusiastic: “No way!! I love her!!” And after chatting with the 16-year-old Boerne native–turned–TikTok superstar, I get it. Her response was genuine and enthusiastic: “That's so adorable. I love that!”
When Ryane posted her first video in the summer of 2022, she didn’t have stardom in mind. “I wasn't expecting anything out of it. My mom had the idea to film a video on her camera, and at first I was like, ‘Oh no, that's so embarrassing. People from my school are going to see that.’ And she's like, ‘How about you just try it and see how it's going to do?’ So I ended up doing it, and it blew up overnight.”
By “blew up,” she means she went from about 600 followers to over 5,000 in a few hours. Now, she has 1.7 million TikTok followers and several hundred thousand more across Instagram and YouTube. What began as a dance video has become a fullblown brand. And as her content has evolved, so has her sense of responsibility.
“When I first started, I mainly did dancing videos,” Ryane recalls. “But over time, I started getting a few hate comments, and, being so young at the time, they were very impactful on me. So I decided to start posting with kindness-themed captions and quotes because I felt like it was something that would speak more loudly than a dancing video would.”
And speak it did. Uplifting comments started pouring in, and Ryane leaned into content focused on encouragement, faith, and mental health, especially anxiety, which she’s open about. “Social media tends to be a highlight reel. And I want people to know that just because someone's life may seem perfect on the internet, there's so much more outside of that that people go through. I think it's important to make sure people feel seen in that way.”
That sense of purpose extends beyond the screen. As part of the creator collective Glow House, Ryane works with fellow influencers to raise awareness and support for causes ranging from food banks and shelters to the Children’s Alopecia Project and Texas Children’s Hospital. They’re currently running a backpack drive. “As much as it is fun to go on these trips,” Ryane says, “it's also really important to give back to the community… I know I've said that a few times, but I'm just so excited!”
If you think being an influencer sounds like a dream gig, Ryane says it can be, but it’s definitely a full-time job. She switched to homeschooling to fit education around an increasingly packed content schedule. Her advice? “Just be yourself. Don't do things just because you see other people doing them; do things that are unique to you. People are not going to remember you based on things like how you dress, the makeup products you have, your hair, or your clothes. They're going to remember you based on how you've made them feel and how you are as a person.” That’s solid advice for anyone with or without a ring light.
As for what’s next, Ryane has big plans. “Ever since I was little, I have always wanted to start my own business. I had a little slime business, a bracelet business, you name it,” she says. “Recently, my family and I have been working on launching my own line called ‘Ryzn.’” (Pronounced like “risen”—a blend of Ryane and her faith.) She lights up as she explains the brand, which will include apparel, special holiday drops, and most importantly, a philanthropic model that gives back. “Whether it's a women's shelter or a food drive or a food bank, I just want to make sure that I'm giving back to my community because it's just such a huge part of what's gotten me here.”
If there’s a stream running through all of Ryane’s content—from her videos to her new brand—it’s a heart for people and a faith that shapes everything she does. “My faith is such a big part of who I am. I just think it's so awesome that I have the opportunity to do something like this and spread God's love, especially with my big following and platform.”
So no matter how long Ryane rides the wave of internet fame, she knows what her message will be. “I feel like God has given me my platform for a reason, and I feel like I'm called to spread the love of Christ!”

I like athletic. It's comfortable to me, and it's something that I like. I like Lululemon, Athleta, stuff like that. It's more comfortable, and it's me.
WHERE DO YOU LIKE TO EAT OUT WITH YOUR FRIENDS?
Oh, I'd have to say Taco Bell. We are big Taco Bell fans. We go there like every night. It's really bad! Sometimes we even DoorDash it because we want it after our curfew.
WHAT IS YOUR FAVORITE BIBLE VERSE?
It’s Proverbs 3:5-6, which says, “Trust in the Lord with all your heart, and do not lean on your own understanding. In all your ways acknowledge him, and he will make straight your paths.”
I think this is important because we sometimes tend to go on our own path and be like, “Why is God putting me through this? Why did this happen to me?” Instead, trust the Lord and know that everything happens for a reason. I used to have the misconception that I wasn't good enough or that I had to be perfect. But it's so important to remember that Jesus loves us for who we are, and we don't have to change ourselves. I think that's so amazing.
10 YEARS OF 1HOPE
Celebrating the past and looking to a future where every child has a home.

It was born out of a simple but urgent conviction: more could be done—and more should be done—to care for children in the foster system. What started a decade ago with two employees and a vision to equip churches and the community has grown into a movement transforming lives across South Texas.
Now celebrating its tenth anniversary, 1HOPE for Kids has placed over 1,100 children in safe homes, supported more than 530 reunifications, and celebrated more than 375 adoptions.
“Foster care is a community problem,” President and CEO John Wilhelm says. “And we’re giving the community the tools to take responsibility for their own children in need.” When local people are empowered with the right tools, support, and vision, he believes they can become the solution.
Then: A Calling, a Crisis, and a Community Response
For Wilhelm, the heart for children in crisis began decades earlier behind the Iron Curtain. In the late 1980s, Wilhelm was a missionary smuggling Bibles into the Soviet Union. He remembers encountering the staggering needs of children living in orphanages, which planted the seeds of a lifelong calling.
Back in the U.S., Wilhelm spent years as a pastor before feeling called to serve again, this time in his own community. Thanks to the groundwork he laid in 2014, 1HOPE placed its first child in foster care in August 2015. What began as a two-person operation with Wilhelm and Kristi Parker, now the agency’s executive director and COO, quickly grew. The explosive growth 1HOPE experienced in its early years made it clear that many were eager to help. They just needed a clear way to get involved.
1HOPE was designed to operate through church partnerships from the beginning, equipping congregations to support foster families and offer critical “wraparound care.” This includes everything from diapers to babysitting, prayer, and encouragement. It’s a model that reflects 1HOPE’s core belief: fostering is a community mission, not an individual one.
Now: Stability, Support, and Impact
Today, that vision is bearing fruit across South Texas. More than 425 homes have been licensed through 1HOPE, and the community support remains central to its success. Jennifer House, a foster parent with 1HOPE, knows the difference this support makes. “We wanted to foster for 16 years, but it always seemed too complicated,” she says. “1HOPE made it possible. They handle the hard parts, walk with you through the rest, and genuinely care— about our foster kids, our biological kids, and us.”
House currently cares for two foster children, and says she couldn’t imagine doing this without the agency. Her caseworker checks in regularly and shows up with authentic care. She says it’s clear that this work is more than a job for them; it’s a calling.
That matters because, in Texas, the average foster parent quits after just one year. Between burnout, limited resources, and emotional strain, many feel overwhelmed. But at 1HOPE, foster families stay significantly longer—2.5 years, on average—with many fostering for over seven years. The difference? The support. Through churchbased volunteer teams and dedicated caseworkers, 1HOPE builds the kind of lasting community families need to sustain the challenges of foster care.
Chelsea Aguilar, who was licensed in 2022 and received her first placement in 2023, recalls being immediately surrounded by practical and emotional care, from a crib and essential baby gear to handwritten notes and diapers. forming bonds that may not last. But for Chelsea, that very connection is the point. “Yes, it’s hard,” she says, “but that connection is exactly what these children need.”
Next: Expanding Care for Teens and Mental Health
As 1HOPE enters its second decade, it’s tackling some of the toughest challenges in the foster care system, starting with teenagers. The group plans to launch its first family-style teen homes: ordinary houses in ordinary neighborhoods, devoted exclusively to fostering youth aged 12–17.
Unlike traditional group homes, these houses will feel like real family environments, with single parents or couples who commit to long-term care. Each home will receive an unprecedented level of support, including a full-time assistant, the ability for one parent to stay home, and double the wraparound care. It’s a bold new effort based on a proven model in Florida, and it took nearly eight years to receive state approval.
Alongside this initiative, 1HOPE is also developing its own in-house mental health department. Rather than outsourcing therapy, the organization will hire trauma-informed therapists, and potentially psychologists and psychiatrists, dedicated to serving children and families within the 1HOPE system. With both of these expansions, the goal remains the same: to equip communities to care for their own children with excellence, compassion, and faith.
From a Soviet orphanage in the 1980s to family homes across Texas today, Wilhelm’s mission to serve vulnerable children has come full circle. What began as a personal calling has grown into a thriving, faith-fueled community movement. “Foster care isn’t a state problem; it’s a people problem,” Wilhelm says. “And it’s the church’s opportunity, the community’s opportunity, to step in and take responsibility for the most vulnerable among us.”

WHY DID YOU DECIDE TO BECOME A PEDIATRICIAN?
I’ve always wanted to be a physician, but in medical school, I realized I could have the greatest impact by starting at the beginning of life. I grew up without a pediatrician, and my parents didn’t have guidance on things like nutrition, reading habits, or even what drinks were best. During my rotations, I connected easily with families and loved the challenge of working with children, who don’t always say what’s wrong. Their bodies are always changing, so it keeps me thinking and learning. My hematology-oncology rotation showed me how resilient kids are. They would be getting chemo and still find ways to play and smile. I knew then: pediatrics was my calling. I knew that I wanted to be there for families, whether their children were sick or healthy. Almost 30 years later, I would do it all over again.

HOW ARE PEDIATRICIANS DIFFERENT?
Pediatricians are specially trained in the health and well-being of newborns through adolescence. At VIVA Pediatrics, our board-certified providers stay current with continuing education, ongoing peer collaboration, and quarterly board reviews. We offer continuity of care in a kid-friendly environment, with staff trained to support children of all ages, from infancy through the teen years. We manage illnesses using the least invasive approach and the least amount of medication necessary. We track development closely at well checks and guide families on nutrition, safety, screen time, and behavior.
Vaccines are also a vital part of prevention. I’ll never forget a 13-year-old patient I cared for during residency who died from meningococcal meningitis just days after her birthday. That vaccine didn’t exist then. It does now.
Kids aren’t just small adults, and they need providers who understand that. They need to feel comfortable with their medical provider and develop a relationship for when those difficult-to-ask questions arise.
WHAT IS ONE OF THE BIGGEST CHALLENGES PARENTS FACE TODAY?
The cost of care. Insurance changes often delay needed visits or follow-ups. At VIVA, we accept a wide variety of insurance plans and offer payment options for self-pay patients. Most well visits are covered at 100%, and if vaccines aren’t covered, we use the Vaccines for Children program to help. We’re working to expand hours, and we offer same-day and afterschool appointments, walk-ins, and extended visits when parents have more than one concern. We really try to remove barriers, because we know how busy families are.
WHICH FACTORS ARE ESSENTIAL FOR PARENTS TO CONSIDER WHEN CHOOSING A PEDIATRICIAN?
Look for someone who listens and communicates well—someone your child connects with and feels comfortable around. Check for board certification. Referrals are helpful, but I always say to pay attention to the staff, too, because they reflect the practice.
The relationship with your pediatrician can last for years. I’m seeing second-generation patients now. You want someone who’s in it for the long haul. It should feel like a partnership, not just a quick visit. You want to feel like you can ask anything without judgment.
WHAT ENCOURAGEMENT DO YOU HAVE FOR PARENTS AS THEY TAKE CARE OF THEIR KIDS?
Trust your instincts and talk to your pediatrician. Keep up with well-checks. Limit screen time; it affects vision, posture, sleep, attention, and more. Read together starting at six months. Eat dinner together— with no phones. Know your neighbors. Teach your child your name and phone number before kindergarten. Help teens stay aware of their surroundings, not just their screens. Encourage play, curiosity, and sleep. And always, always use sunscreen. It’s always sunscreen season in Texas!

Imagine for a moment that your child has been diagnosed with cancer. After the initial shock subsides, life quickly spirals into a whirlwind of hospital visits, treatments, and emotional upheaval. Amid that chaos, moments of joy and connection can feel painfully out of reach. But it’s Discovery Camps’ mission to create spaces filled with hope, healing, and happiness.
At the heart of the San Antonio-based nonprofit lies Camp Discovery, a weeklong summer experience held every July for children battling cancer. Things have changed a lot since the American Cancer Society launched the camp in 1984. Joey Cavazos shaped it into what it is today, with a vision and devotion guiding its spirit for nearly 40 years, right up until his death in 2021.
"Joey was working at YMCA Camp Flaming Arrow that summer when the first Camp Discovery took place," recalls Jennifer Cavazos, now Executive Director and Joey's widow. "They didn't know how to run a camp, so he stepped in to help build the program. He fell in love with the kids and dedicated the rest of his life to them."
Jennifer started volunteering at camp in 1990, and she and Joey established Discovery Camps as an independent nonprofit in 2013. Joey, newly retired from a 25-year career as a Bexar County Juvenile Officer, was determined to make Camp Discovery thrive. Together, the couple jumped into nonprofit management, learning grant writing, fundraising, and logistics as they went. "We just figured it out together," Jennifer recalls fondly.
The camp's mission? To bring happiness to children and families navigating the overwhelming challenges of cancer. "Everything changes when a child receives that diagnosis," Jennifer says. "Our goal is to give them a taste of normal again—to let them just be kids." Since then, the organization has expanded from one program to nine, including family retreats, in-hospital experiences, and bereavement weekends. Basically, they’re taking those opportunities for normality everywhere there are kids who need them.
Camp Brave Hearts brings that mission to life in a powerful way. This in-hospital program originated after a camper named Nattalie missed Camp Discovery due to illness. When Joey visited her at the hospital, she told him, "You need to have camp in the hospital for kids like me." That single request sparked a brandnew chapter.
Today, Camp Brave Hearts operates year-round at three children's hospitals in San Antonio. Campers participate in a wide range of activities, including arts and crafts, fishing, and even spa days. Among the favorites is the “Capes and Crowns” photo shoot. Kids dress up as their favorite superhero or in royal attire and pose for a portrait. "It's a little escape," Jennifer says, "but it means the world to them."
The program also introduces moments of mindfulness and peace in an otherwise clinical setting. Kids can visit the “Zen Den,” sit in a massage chair, or create calming glitter jars—activities that help soothe anxieties and build a sense of emotional space. "It's simple but powerful," Jennifer explains. "When everything around them feels uncertain, even a small moment of calm can make a difference." Volunteers and staff often witness children who arrive shy or withdrawn emerge from their shells, smiling and talking, sometimes for the first time in days.
Out at Camp Discovery, each day begins with flagpole songs, skits, and peer-nominated awards. From there, kids rotate through five daily activities tailored to their energy and medical needs. Options range from swimming and crafts to zip-lining and
adaptive ropes courses. And after lunch, everyone gets downtime during the much-loved "Happy Nappy," a two-hour rest period that offers a break from the Texas heat.
Camp Discovery welcomes children ages 7 to 16 who receive treatment at hospitals in Central and South Texas. One thing that sets this camp apart is that more than half the volunteers once attended as campers. "That's part of the magic," Jennifer says. "You have an eight-year-old camper whose counselor once stood in their shoes. It gives them real, tangible hope."
Jennifer points to Shannon as one shining example. Diagnosed as a child, Shannon attended camp for over a decade and now volunteers every summer. "She was in my cabin back in 1990," Jennifer says. "She wouldn't dream of missing it. Camp was her lifeline."
In addition to Camp Discovery and Camp Brave Hearts, Discovery Camps also offers Camp Ohana, a weekend retreat for entire families, and Camp Firefly, a bereavement camp for those who have lost a child to cancer. The latter began after a grieving mother asked for a space where families could connect through shared sorrow and healing. "At Camp Firefly, no one walks through the pain alone," Jennifer says. "They find strength in each other."
The environment at Camp Firefly is notable for its vulnerability, honesty, and deep emotional connection. Many families arrive just after experiencing a loss. Others return annually to help guide newer families as they navigate their grief. "It's a sacred space," Jennifer says. "There's laughter and tears, and above all, understanding."
Running nine year-round programs with just three full-time staff and one parttime employee comes with challenges. The nonprofit leans heavily on more than 150 volunteers and community support. Thanks to grants and donations, every program remains free for participating families. "We never want money to be a barrier," Jennifer says. "But this year's been tough. Foundations are stretched and need to keep growing."
Looking ahead, Jennifer hopes to launch a sibling-specific camp for brothers and sisters of children with cancer. "Siblings often feel overlooked," she says. "They have their own emotional journey, and we want to create a space just for them."
For now, Discovery Camps remains a place where kids rediscover joy, families find community, and resilience takes root. It's a living legacy—born from Joey's vision and nurtured by Jennifer's leadership—that proves joy and healing can exist even in the face of childhood cancer. Discovery Camps provides a lifeline, a place where joy lives alongside sorrow, where hope feels possible, and where no one has to walk alone.
When asked what keeps her going, Jennifer reflects quietly. "It gets heavy sometimes," she admits. "But then I hear a parent say, 'My child came back from camp a different person. They're smiling again.' That's what fills my cup."

A CLEARER FUTURE STARTS NOW
Ever since Ashlynn Dennington, O.D., got her first pair of glasses in second grade, she’s been passionate about helping kids see the world more clearly. She still remembers the wonder of spotting individual leaves on trees for the first time—an experience that inspired her path into optometry.
Today, Dr. Dennington leads the team at Texas State Optical Fair Oaks, where she cares for patients of all ages. With myopia, or nearsightedness, now affecting more than a third of children, she offers insight into what parents should watch for—and how to help protect their child’s long-term vision.
Myopia is when we are able to see things up close without correction, but things far away are blurry. When the eye is too long, the retina is stretched thin, and the lens focuses light at a point in front of the retina, rather than on the retina itself.
The condition is also progressive because the eye doesn’t reach maturity until our early 20s. As the eye grows in the wrong shape, the retina is stretched thinner and thinner, and the prescription power needed to correct the error increases. Once in adulthood, the stretched retina is at increased risk for conditions like retinal holes and detachments, glaucoma, cataracts, and myopic maculopathy, which can lead to irreversible vision loss.
Early detection and treatment of myopia are critical because we can reduce the risk of our children facing sight-threatening conditions later in life.
WHEN DOES MYOPIA USUALLY BEGIN PRESENTING IN CHILDREN? WHAT ARE SOME WARNING SIGNS?
Myopia can start in children as young as 6 years old, but it most commonly shows up between 9 and 11 years of age. Having a parent who is myopic gives the child a 33% chance of also being nearsighted, and if both parents are myopic, that jumps to a 50% chance of the child inheriting the trait.
Early warning signs can be squinting, frequent eye rubbing, and moving closer to see the TV or the board at school.
WHAT TREATMENTS ARE AVAILABLE?
Traditional treatments like regular glasses and contact lenses help improve the child's vision, but they don’t help slow the progression of myopia.
To do that, I recommend soft multifocal contacts like Mi-Sight 1-Day lenses. These lenses are the only FDA-approved treatment, and they’ve been proven to slow the

progression of myopia when worn correctly by 50%. Plus, they don’t show the same regression at the conclusion of treatment as other treatment options do.
Although LASIK helps correct vision, it does not change the shape of the eye. I had refractive surgery in my early 20s, so I don’t need glasses, but I still have the same risk of having retinal problems as I did before the procedure. Unfortunately, LASIK is not a fix-all.

We always knew Grace would love the water. She was due in the middle of summer, and her mom would live on a float if she could. That, and her mom spent most of her final month pregnant in the pool. So yeah, if any child was destined to be a water baby, it was Grace.
Naturally, we enrolled her in the “Parent & Me” classes at Vista Swim Academy when she was 7 months old. We spend as much time near (and in) the water as possible, so it seemed like a good idea to get Grace ready to join us. I’m not sure where I got the idea, but I imagined infant swim lessons involving gently tossing said infant into the pool and helping them learn to make it back to the surface. Don’t they all instinctively swim like the baby on the Nirvana CD?
“There are certain criteria to be a member of the United States Swim School Association, and the method you brought up—we are not able to teach that way,” founder and owner Shiloh Hurst told me, just a little skeptically. “I know plenty of children who have had success learning in that environment, but it's not something that we've taught.” Fair enough. “We truly believe that having the caregiver involved makes it both a positive interaction with the water and a bonding experience for the caregiver and their child.”
And after going to class with Grace for the past five months, I have to say—she’s right. It really has been a lot of fun.
A big part of that positive experience has been thanks to the teacher Grace has had the most: Jennifer Anderson. She was the first to join Shiloh when Vista opened its dedicated space east of Boerne on Highway 46. “I was just like, ‘Wow! Shiloh is so passionate about this,’” Jennifer recalls. “She just really sold me on the job. I really wanted to be a part of this because I love her mission.”

It didn’t take long for Jennifer to get hooked. “It’s genuinely so rewarding to see those kids that you taught as babies go on to become some of our most confident swimmers,” she says. “Teaching the child to have trust in the water... You get to see a lot of parent and child bonding, and that just makes the classes really fun.”
So much fun, in fact, that it literally changed her life. “I was actually a finance major when I started out,” she says. “But [teaching swimming] made me change my major to nursing. I really love
growing these relationships with families, helping them learn things, and just caring for people.”
That heart definitely shines through, even in the relatively simple exercises we do in class. A big part of the lessons is teaching impulse control. We sing a song at the start of every session with the kids perched on the edge, clapping along, learning to wait to enter the water until they’re making direct eye contact with their grown-up. We practice splashing, kicking, rolling onto their backs, and making a “balloon face” so they’ll keep their mouths closed when they go underwater (with only limited success so far… right, Adeline, Skylar, and Callen?!).
Still, even slow progress builds a foundation for success, in the pool and out. “Studies show that early swim exposure can support motor skills, coordination, and language development,” Shiloh informs me. Ok, so it wasn’t just my imagination that Grace started crawling and pulling up more after we began swimming. “We see kids grow leaps and bounds in those ways, and it’s even believed that babies who start classes tend to test higher than peers who are not in some sort of social learning setting.” Harvard, here we come!
Regardless of what Grace does later in life, she’s more likely to get there safely. “We spend a lot of time teaching parents how you guys can nurture and develop safe practices around water,” Shiloh emphasizes. “You're not always going to be with a teacher, and we really want you guys to know what to practice with your kids. If you’re informed, your child will be safer.”
We’ve definitely felt that. Her mom and I remain vigilant, but we feel more confident when Grace is near the water. Plus, it’s been fun seeing her get more and more comfortable each week. It’s kind of like watching her become more and more herself.
Shiloh has noticed it too. “I just love that we’ve been able to see her come from not crawling to now, she’s starting to get mobile. She’s really excited to be in class. I don’t think she’s cried once! It’s just been really great to see her happy and to see you and your wife get to interact with her in this way.”
It always feels good when your child gets a chance to shine, and “Parent & Me” classes offer ample opportunity for that. It’s also encouraging when other people see in your child the same things you do. “Grace just got in and she was all smiles right away, and she’s been all smiles since,” Jennifer says, smiling too. “I’ve never seen her shed a tear. She clearly is a water baby! I’ve talked before with the other staff about Grace, and we just agree: she just loves the water, and she is the cutest.”

“We can do a party for anything,” says owner Hali Picciano. “The ability to create your own flavor is really just absolutely amazing.” Whether you’re hosting a birthday bash, tie-dye day, or even a wedding celebration, Parker’s turns ice cream into an interactive experience. Guests can invent their own flavors—pink Cookie Monster? Sure! S’mores with extra marshmallows? Why not!—and take home their custom creation to share (or keep it for themselves).
The shop’s flexible hours make it easy to schedule daytime events, and their "Parker’s After Dark" options add an extra scoop of fun for grown-ups. “We’ve done date nights where people can come in and make an alcohol-infused ice cream with their friends,” says Hali. They’ve even hosted church groups who use the process of making ice cream as a metaphor for faith and hard work.
While the parties are a hit with kids and adults alike, they’re also rooted in something deeper. “All of us are retired military,” Hali says of the ownership team. “We wanted to be part of our community in a much more intimate way… to give back.” That mission shows up in everything they do, from supporting local schools to mentoring the high school and college students who work behind the counter.
Even the ingredients get that same thoughtful treatment. Parker’s uses fair-trade vanilla, all-natural food colorings, and offers dairy-free options, yes, even for their boozy adult flavors. “We try really hard to make sure that everybody’s included in what we do.”

EASY EGG CUPS
YIELD 12 cups
Ingredients:
• 8 pasture-raised eggs
• 2 tablespoons pasture-raised whole milk or non-dairy alternative
• 1 zucchini, shredded
• 1 cup carrot, shredded
• 1 ½ cups cheddar, shredded
• 1 cup grape tomatoes
• 1 cup curly parsley, chopped
• ¼ cup all-purpose, gluten-free flour
• 1 packet mild taco seasoning
Directions:
1. Preheat oven to 350°F, and prepare vegetables by shredding zucchini and carrots. Roast the tomatoes by tossing them in a drizzle of olive oil and a pinch of sea salt and letting them roast for 10 minutes. 2. Mix zucchini, carrots, cheese, tomatoes, parsley, flour, and flour in a bowl. Stir to coat the vegetables and set aside. 3. Whisk the eggs and milk together in another bowl and pour over the vegetable mixture. Stir to incorporate. 4. Line a muffin tin with parchment paper baking cups. Pour egg batter evenly into each cup, and bake for about 20 minutes or until set.
Pro Tip: Look for the words “pasture-raised” on egg and dairy packaging. This helps ensure you get the most nutrient-dense and sustainably produced eggs, milk, cheese, and other delicious products.
PROTEIN BROWNIE BITES
YIELD
12 bites
Ingredients:
• 2 cups organic walnuts
• 1 cup fresh, pitted dates
• 2 tablespoons creamy peanut butter
• 1 tablespoon local honey
• 2 teaspoons pure vanilla extract
• 1/3 cup cacao powder
• 1 scoop chocolate protein powder
• Pinch of sea salt
Directions:
1. Place all ingredients in a food processor and process until smooth and sticky. It may form a large ball (that’s okay).
2. Using a mini ice cream scoop, portion the mixture and roll it into a ball with your hands.
3. Place bites onto a parchment-lined baking sheet and freeze for texture and stability.
Pro Tip: I like using a multi-powder, like a bonebroth powder with collagen, to pump up the nutritional value. These delicious bites will thaw quickly on the counter and become beautiful and brownie-like—perfect for lunches!

Summertime is the best time for kids to disconnect and enjoy being outdoors.
Long, long ago, in a time before technology, children entertained themselves and played endlessly with nothing more than ... wait for it ... their imagination. They played outdoors for hours with friends, balls, jump ropes, buckets, chalk, bicycles, you name it! The level of creativity saw no limits in the minds of these children. While some families have plans for getaway vacations, there are those planning to stay home and scrambling for things their children can do. We’d like to share some ideas that don’t include technology or cost a boat load of money for that matter. The benefits of spending time outdoors and unplugged outweigh complaints about temperature or those annoying creepy crawlers. The added bonus is that many outdoor games secretly teach life skills. Technology is used only to confirm game rules.
Ready or not, it’s time to play! A day - or two or three - full of outdoor games will invoke a trip down memory lane for some adults, or a “this is great” thought for others. In either case, playing these games has tremendous benefits - young people can fully embrace human connection, get a break from the instant gratification associated with technical devices and social media, and enjoy some good wholesome, age-appropriate fun. Many adults admit they played many of their favorite childhood games well into their teen years, and still others say they relish in a good game of dodgeball or tug of war today. This list is not all-inclusive, but it certainly gets the games started!

“READY OR NOT, IT’S TIME TO PLAY!”
CHILDHOOD GAMES
TUG OF WAR - contest between two teams at opposite ends of a rope; each team trying to drag the other across a center line.
SACK RACE - stand in your sack, hold on to the top of your sack and hop as fast as you can to the finish line!
FREEZE TAG - each player freezes when tagged and can be unfrozen only by a player who is not yet frozen. Game ends when all players are frozen.
RED LIGHT GREEN LIGHT - shout “green light” and all players run towards you, shout “yellow light” and they are allowed to walk, but when “red light” is shouted, they must stop and freeze. If player moves at “red light”, they go back to start line.
MUSICAL CHAIRS - walk to music around a group of chairs containing one chair fewer than number of players, and rush to sit down when music stops. The player left standing in each round is eliminated.
KICK THE CAN - find players in their hiding spots and put them in “jail”. Once a player is “jailed” the only way to be freed is for another player to beat the “IT” person to the can and kick it.
DODGEBALL - team sport in which players on two teams try to throw balls and hit opponents, while avoid being hit themselves. Consider water balloons instead of balls on a hot day.
