I became a food snob at a very young age.

G

rowing up in a large family (of twelve,) food was a big part of our household. I remember accompanying my mom to the grocery store. The normal week would be her buying 10 gallons of milk, and filling two grocery carts. I feel very fortunate for her dedication to cooking for me and my nine siblings. Almost every meal, seven nights a week, was homemade. It wasn’t until I grew up, and now have a family of my own, that I truly comprehend all the work, (and money) that went into feeding all of us.

My mom would say I was a very picky eater growing up, but I am quick to respond that I just had a refined palate from a young age. I was not the typical Midwestern steak and potatoes eater. You see, as soon as I could get a job and make my own money, my first priority was to buy good food.

I liked to pick out my own Granny Smith apples, as opposed to buying the value bag. I would buy fresh cold cuts and good cheese from the deli. I was obsessed. I would label every item I bought, “DO NOT TOUCH! KATIE’S FOOD.” My siblings knew to stay away, or be victim of my wrath.

The obsessions of buying good food became ordering good food, and then led to an attempt at cooking good food. What a fantastic hobby. I have found myself lost for hours in food blog world. This is where I pick up most of my inspirations and recipes.

In this “FOOD” issue, we will explore three local bloggers that are dialed in to Boulder’s food scene and whose popularity extends much further than our little bubble. Their food photography is so decadent; it makes me want to reach through the screen and sample just a bite. Also, in this issue, we will take you into what farmers are really up to in the winter. No, it’s not twiddling their thumbs, waiting for farmers market season.

Coincidentally, I happened to end up in one of the foodiest towns in America. I do not take this for granted. Although I still enjoy the comfort food I was raised on, I have a deep appreciation for the culinary knowledge and talent here. Having direct access to fresh, locally sourced, organically grown fare is something we can all be thankful for here in Boulder.

BOULDER VALLEY MOVING FORWARD WITH FIRST ROUND OF CONSTRUCTION PROJECTS USING PREFABRICATION IN CONSTRUCTION OF NEW DENVER HOSPITAL SAVED $4.3M Using prefabricated elements in the construction of the new Saint Joseph Hospital in Denver cut 72 workdays off the construction schedule and resulted in $4.3 million in savings, according to a study by University of Colorado Boulder engineers. The new facility is a modern, 365-bed hospital specializing in heart care, cancer treatment, women and infant health, respiratory care, orthopedics and emergency health.

The study, by Matthew Morris and doctoral student Eric Antillon, both of the Department of Civil, Environmental and Architectural Engineering, is one of the first to try and quantify the full costs and benefits of using prefabricated elements in a large-scale construction project. The study was done in partnership with Mortenson construction, which built the new 831,000-square-foot Saint Joseph Hospital.

Developers often choose prefabrication to save time on a project.

But because the process of building a unit — like a bathroom or an exterior wall panel — offsite can be more expensive up front, due largely to the cost of transporting the finished products to the job site, the overall financial benefits haven’t been well understood.

Aside from allowing a project to be completed more quickly, prefabricating units offsite can also improve the safety of the job site by decreasing the number of different tradespeople who need to work in the building at any one time, reducing elevated work and providing a controlled environment.

The Boulder Valley School District is planning to sell $225 million in bonds in February or March to pay for the first round of construction projects in its $576.5 million construction package. Projects were chosen for the first round that would have the most impact on enhancing the learning environment, that would require extensive design work, that were complex or, in the case of Peak to Peak and Summit charter schools, that have design work already completed. The bond issue was approved by voters in November.

Construction is expected to start in the summer and continue for the next six to eight years, with the district repairing and upgrading all of its 55 schools, including rebuilding three elementary schools. The 31,000-student school district also will build a new school in fast-growing Erie and add a centralized kitchen and new transportation center. After the first of the year, the district plans to ask for applications for members of an oversight committee, who will be appointed by the school board to represent the district’s different geographic areas and interest groups. Once the design work starts, each school also will create a design advisory committee to give input to the architects.

Around Town WHEN PURSUING GOALS, PEOPLE GIVE MORE WEIGHT TO PROGRESS THAN SETBACKS People tend to believe good behaviors are more beneficial in reaching goals than bad behaviors are in obstructing goals, according to a University of Colorado Boulder-led study.

“Basically what our research shows is that people tend to accentuate the positive and downplay the negative when considering how they’re doing in terms of goal pursuit,” says Margaret C. Campbell, lead author of the paper published online in the Journal Of Consumer Research and professor of marketing at CU-Boulder’s Leeds School of Business.

The paper includes research from seven studies involving hundreds of participants who took part in activities such as choosing between and eating a donut or a carrot and then answering questions, or reading and imagining a scenario about saving or spending money and then answering questions.

HOST CITIES ANNOUNCED FOR 2015 USA PRO CHALLENGE WITH ARAPAHOE BASIN FINISH ADDED Race officials unveiled seven of the host cities that will be highlighted as starts and finishes for the 2015 USA Pro Challenge. Taking place Aug. 17-23, the race will feature several dramatic changes for 2015, including a new overall start in beautiful Steamboat Springs, new host venues Arapahoe Basin and Copper Mountain and a challenging individual time trial course in the scenic town of Breckenridge. NEW DOG PROGRAM ENFORCES STRICT RULES New requirements for the Voice and Sight Tag Program have gone into effect, and open space rangers will be on trails making sure off-leash dogs have the new blue, not green, tag to show that their owners are in compliance. The Voice and Sight Tag Program allows dogs to go off-leash on certain trails if they can follow commands and not harass or be aggressive toward wildlife, other dogs and people.

To continue in the program, dog owners have to take an in-person class and renew annually. The city also instituted a differential fee structure that favors city residents. Out-of-county dog owners

would pay $75, compared with $13 for a city resident and $33 for a non-city Boulder County resident.

GOOGLE TO BUILD NEW BOULDER CAMPUS WITH ROOM FOR 1,500 EMPLOYEES Google plans to triple its local office space and potentially quintuple its number of employees. The proposed Google Boulder campus could employ up to 1,500 workers in a trio of four-story buildings of 110,000 square feet each. The project,

Inspiring Change in the World Through Yoga Article Emily O’Brien

F

or 90 Monkeys, inspiring change takes a “Yogarmy.” An online educational resource and in-person school devoted to helping yoga professionals refine their teaching skills, augment their yoga education, build business acumen and grow as people and leaders, 90 Monkeys offers an extensive library of world-class eCourses, vlogs, news articles and live in-person events. It was co-founded by globetrotting yoga teacher Amy Ippoliti and local Renaissance man Taro Smith, Ph.D. “We offer courses and programs that include yoga teacher trainings, as well as advanced education for active yoga teachers to enhance their skills and knowledge in all areas,” Ippoliti says.

She goes on to say that the online community is made up primarily of yoga teachers, but the events, trainings and workshops held in the Boulder studio are for a range of beginner yoga students to advanced teachers.

90 Monkeys students have grown their class sizes an average of 42.7 percent and brought more than 13,000 new students to the mat in 2012 alone, raising the bar for professional standards in yoga. The company has assisted 1,500+ yoga studios and teachers in 44 countries around the world, and it’s accomplishing this incredible feat from right here in Boulder.

“Yoga helps people connect to their bodies and become more aware of their connection to all living things. I’ve seen it change people’s lives dramatically,” Ippoliti says.

90 Monkeys believes that more people doing yoga equates to more conscious changes in individuals and improved health/ wellbeing; thus, leading to more positive change in the world. Its mission is to change the world through providing yoga instructors and studios the tools to motivate new yoga students and keep existing yogis inspired to continue practicing.

“I’ve been doing yoga since 1986. As a teen a g er,

yoga gave me an outlet to explore what it meant to be human and it allowed me to be okay with who I was even when the peer pressure from girls at my school was intense,” says Ippoliti.

When people invest in 90 Monkeys educational programs, those dollars are then stretched to help support earth conservation, children’s welfare, animal welfare and disaster relief efforts. It continues to develop its Good program, which gives a percentage of the proceeds to the organizations it loves: The Nature Conservancy, WILDAID, Farm Sanctuary, Africa Yoga Project and Children International, to name a few.

In-person events, workshops and filming take place in 90 Monkeys’ studio on Broadway, which used to be the cold food storage warehouse for Ideal Market.

When 90 Monkeys felt it was time to spruce up its space, they called upon local Boulder designer and stylist Liz Finkelstein of Mile High Style who created a cozy yet modern gathering place for students between yoga classes.

“Perhaps the sweetest thing about the space, is that every time I sit in the lounge with students and friends, I can feel the love and care that has been put into the design of the,” Ippoliti says.

im & Jake’s Cakes is a genuine Boulder mom and pop shop.

The husband and wife duo opened the bakery the same year their first child, August, was born in 2010. So naturally, he is growing up right alongside it—sleeping, eating and helping to taste test the frosting.

“We opened our doors in May and he was born in November,” says co-owner Jake Rosenbarger. “He grew up in the cake shop until he was about 2 years old. Once he got mobile, it got pretty tough.”

Fortunately for the couple he was a late walker, so they relished that time for as long as they could. Having a child months after launching a business isn’t all that Jake has had his hands full doing. About two years ago, Jake was diagnosed with Celiac disease, a digestive and autoimmune disorder that results in damage to the lining of the small intestine when foods with gluten are eaten. The damage to the intestine makes it hard for the body to absorb nutrients, especially fat, calcium, iron and folate. This is big news for someone who owns a bakery because gluten is a form of protein found in certain grains, including traditional flour.

Going Gluten-Free

The diagnosis alone involves a massive lifestyle/health overhaul. Except for Jake it went even deeper. He not only needed to keep gluten out of the foods he was eating, he also had to be cautious about inhaling it. This meant suiting up in a hazmat mask in order to keep from ingesting wheat. You can imagine how challenging and frustrating this might have been. So the shop began to transform to gluten-free right along with him.

As Jake began experimenting with and concocting gluten-free versions of its current products and they started popping up around town in stores, they started to develop a somewhat cultlike following.

He admits they were a little nervous about going 100 percent gluten-free—not knowing if it would wipe out half of its customers. Luckily, it’s done the opposite.

“Our raw materials are even better than before,” Rosenbarger adds, stressing that the quality of everything they bake with has improved over the years. They use a mix of oat, brown rice and tapioca for flour. Cake flavors run the gamut from almond poppy seed to ginger molasses to Herbs de Provence.

Baguettes are available at Fresh Thymes restaurant and The Kitchen Next Door. Additionally, there are three types of hamburger buns—plain, a seeded bun with chia, millet and poppy seeds and an olive oil, rosemary and thyme bun— available at Whole Foods stores in Boulder and Superior.

You can find its storefront tucked back in the Table Mesa shopping center in Boulder.

oulder is home to many small farmers that supply produce and meat to local restaurants, grocery stores and outdoor markets. We can all imagine what a farmer’s life is like during growing and harvesting season, but what happens on the farm during winter?

While the cold, snowy weather means there isn’t as much work to be done out in the fields, there’s still a lot to keep farmers occupied. Like in any good business, planning is a necessity.

Farmers aren’t just sticking seeds in the ground and hoping to sell whatever they grow. Records from last year’s crop yield are reviewed to see how much food is pulled from each field. Animal births are analyzed for future butchering and the breakdown of each farming activity is used to help plan for next season’s harvest.

A new crop plan is then determined based on a few factors. First, how much of each different crop - and what variety of that crop - needs to be put in the ground depends on the yield needed to supply the community. Every field is mapped out in advance with what will be planted, when and where. The process is then trickled down to how many seeds will be needed for each crop.

Anne Cure, owner of Cure Organic Farm says January focuses on repairs and planning.

“I try to get the seed order in by mid-January,” Cure says.

“Then we fix what broke from the previous season, build new equipment, modify equipment and hire new staff. All of a sudden February rolls around and we’re starting seeds. The greenhouse starts up the first week of February. These are the first greens that will be available at the farmers market in April.”

By the end of February Anne intends to plant the first round of greens and root crops in her field, with hopes that the snow will come give the seeds enough water to germinate. Cure will begin spreading compost by the end of February and in March her farm will start to turn the fields over, plow and cover crops.

“After moving the animals around to graze them, it’s the season again,” Cure says. “We never stop, just slow down a bit.”

In addition to choosing the right variety of plant for winter, ensuring the plant has reached a mature size by the onset of cold is vital. A plant can be considered mature once its root system has reached below the frost line underground. These plants have to be started in August or September, rather than October.

PRESERVING THE HEAT

HOW TO HARVEST

Chef Eric Skokan of Black Cat Farm educates us on what to plant, what not to plant and how to plant it.

Harvesting in the middle of winter can be tricky. Black Cat Farm uses light snow shovels and big shop brooms to gently remove snow and ice from leaves, in order to get to the bottom and harvest.

Chef Eric warns when the first frost comes, say goodbye to what you loved growing all summer long. Not everything grows well in the winter and some plants have been bred over time to do better than others. A plant’s ability to utilize sugar keeps cells that freeze from rupturing and killing the plant. When a plant does survive due to this molecular process, it creates the sweetest, most delicious vegetables you’ll ever have.

• Heat 2 Tbsp. olive oil in a skillet • Mix ricotta and lemon zest in a small bowl. Season with salt and pepper. Cool the ricotta mixture in the fridge (this can be made ahead).

• Spread 1 Tbsp. of ricotta mixture on each baguette slice. Top each with a few squash cubes. Drizzle crostini with lemon juice and olive oil. Sprinkle with salt and pepper. Add fresh sage if desired.

• In a food processor , pulse together almond flour, salt and baking soda • Pulse in squares of dark chocolate until the texture of coarse sand • Pulse in dates until the texture of coarse sand • Pulse in eggs • Pulse in coconut oil and stevia until mixture is smooth • Transfer mixture to a greased 8 x 8 inch baking dish • Mixture will be very thick, smooth with a spatula • Bake at 350° for 18-22 minutes • Cool for 2 hours, then serve Makes 16 brownies continued >

blood orange ginger margarita {fresh-style} This Blood Orange Ginger Margarita is prepared fresh-style not using any orange liqueur or frozen mix. The preparation of tequila, fresh limejuice and agave, along with fresh blood orange juice muddled with fresh ginger, leave a full-flavored, natural refreshing cocktail.

Be sure to taste along the way as citrus fruit can vary in sweetness and tartness. More agave nectar may be added to make the margarita sweeter to your taste.

Ingredients:

3 ounces Silver Tequila (preferably organic) 1 1/2 ounces freshly squeezed lime juice 1 ounce light agave nectar Juice of 2 blood oranges (approximately 2 ounces) 1/2 teaspoon fresh ginger root; sliced or diced Instructions:

• In a glass or jar, combine the blood orange juice and ginger. Muddle the ginger. Allow the mixture to sit for 20 minutes. Taste and if the flavor is desirable, strain retaining the liquid (or allow to sit longer before straining).

NOTE: chilled liquids will not taste as strongly as room temperature liquids.

• Combine the blood orange-ginger juice, tequila, lime juice and agave in a shaker with ice. Shake and strain into 2 Old Fashioned glasses full of fresh ice.

TIP: To yield more juice from fresh citrus fruit, place them in the microwave for 10 seconds before juicing.

Banana Macadamia Nut Pancakes:

½ cup coconut flour 1 cup oat flour 1 ½ tablespoon granulated sugar 1 tablespoon baking powder ¼ teaspoon kosher salt ½ teaspoon baking soda 3 eggs 2 cups milk (I used unsweetened soy milk) 2 medium-large ripe bananas 1 teaspoon vanilla extract ½ cup chopped macadamia nuts (preferably roasted and salted) Instructions: Coconut Syrup:

• Pour coconut milk into a medium saucepan, reserving ¼ cup.

• Combine the ¼ cup coconut milk and the cornstarch, stirring to allow the cornstarch to fully dissolve. Add mixture to the saucepan.

Also add the brown rice syrup.

• Bring mixture to a low boil over medium heat stirring often. Lower heat to low and continue to stir as the mixture simmers for 10 minutes. Remove from heat and allow to cool to room temperature (Note: it will thicken as it cools). Store and seal in the refrigerator for use.

Banana Macadamia Nut Pancakes:

• In a large mixing bowl sift together the flours, sugar, baking powder, salt and baking soda. Discard any hard bits of coconut flour that may be left in the sifter.

• Place the wet ingredients in a blender (eggs, milk, bananas and vanilla extract). Process on the lowest speed just until the mixture is fully combines and no large banana chunks are present.

• Add the wet ingredients to the flour mixture and stir by hand to full combine. Stir in macadamia nuts.

• On a hot griddle or large frying pan, drop batter in ¼ cup amounts to form pancakes. Cook until done and golden brown on each side.

hen I was growing up, eating fast food meant eating a hamburger or fried chicken out of a bucket. Later on, a “healthier” sandwich spot was introduced to the market. Denver Restaurant Week is the tastiest of the year

I

t’s time to come out of hibernation to enjoy the annual Denver Restaurant Week from February 20-March 1.

Food lovers will crawl out of their dens to enjoy some of the Denver’s finest dining for the 11th year in a row. Denver has become a well-known foodopolis and hosts the largest restaurant week in the country. That’s right, the largest. During the 9th annual Denver Restaurant Week, a record-breaking 351 restaurants participated. The event has continued to grow each year.

Visit Denver started Restaurant Week in 2005 to present the local fine-dining scene to the masses. It didn’t take long for outof-towners to recognize that the Mile-High City has a serious appetite for high-end food.

Colorado locals are well aware of the great dining options in Denver and Boulder, but restaurant week is the perfect opportunity to try something new, or to enjoy some of the renowned local eateries for only $30 per person or $60 for two.

Boulder. For restaurant week they have a great selection of vegetarian options and authentic Spanish dishes like Cabrito al horno (marinated, braised goat).

Denver’s Ritual artfully crafts a better gourmet version

D

id you know it’s possible to make something better than chocolate? It’s craft chocolate, and it only takes three ingredients: exotic cacao beans, cane sugar and a lot of love. Robbie Stout and Anna Davies, the founders of Denver’s Ritual Chocolate, know all about the art of making gourmet, bean-to-bar chocolate.

“We saw the discrepancy between the quality of wine and coffee compared to chocolate. So we thought, why not just make better chocolate?” Stout says.

Stout and Davies don’t cut any corners when it comes to making their bars, but there’s no arguing that the end product is worth the effort. And it all starts with the cacao beans.

Ritual Chocolate works closely with five cacao farmers in Madagascar, Ecuador, Belize, Costa Rica and Peru. Each region has different tasting beans due to the varying climates, soil compositions, and genetics of the fruit trees. You’ll be amazed at just how different each bar tastes from one another.

“West Africa is the worst place to get cacao beans, but that’s where 70 percent of the world’s cacao is coming from,” Stout says.

“We get it from South America, where the beans have old genetics. It’s part of their culture and people there are connected to what they are doing.”

Ritual Chocolate also has a strong connection to their craft.

Stout and Davies produce their chocolate using vintage, specialty chocolate-making equipment and take pride in each fine-tuned phase. From when the cacao beans first arrive at the factory and debris and underdeveloped beans are picked out by hand, to the final step of molding and wrapping each chocolate bar, again, by hand, there is a lot of dedication involved with making each bar.

y dad makes fun of me for my love of TV cooking show competitions. Since the audience can’t taste the food, he doesn’t understand the appeal. For me, though, these shows make up the majority of my television watching, with Top Chef being the granddaddy of them all.

I first interviewed Hosea Rosenberg back in 2009 when he was a ‘cheftestant’ on Top Chef. Not yet knowing that he’d eventually take the Top Chef title, I asked him whether he’d want to win if it meant never again eating cheese (these, apparently, are the types of questions that occur to me when interviewing TV stars).

He chose the cheese. The man has his priorities straight.

Since winning the show, Hosea has launched Blackbelly catering, put his meals on wheels via a food truck and even started his own farm. Now, after years in the making, his food has a permanent home at Blackbelly Market, the just-opened east Boulder restaurant that focuses on locally-sourced ingredients and Hosea’s bold-but-comfortable flavors.

The space is relaxed and pared-down, much like the food. It opens with a butcher counter, where you can grab custom cuts of meat and charcuterie, and continues into a dimly-lit, minimalist dining room. The marble chef’s counter offers a great view of the line and the opportunity to see all of the mouth-watering dishes coming out of the kitchen.

Considering there’s a curing room onsite, it’s no surprise that the charcuterie selection is great, with a constantly rotating menu of meats and cheeses. But it’s the Colorado wagyu beef tartare ($13) that is the standout starter. Handcut, it’s fresh, tangy and earthy. Even if you usually shy away from raw food, this is one to try.

Large plate offerings are similarly excellent and meat-centric. (The ricotta cavatelli with Hazel Dell mushrooms is a tasty vegetarian option.) Prawns and pork belly ($22) are perfectly cooked and served atop a creamy bed of cheddar grits with pepper jelly for extra pop. The smoked lamb shank ($21) is hearty, and the double pork chop with mustard spaetzle ($23) is

huge and satisfying; both perfect choices for a cold winter night.

Blackbelly is a great addition to the Boulder dining scene, and I don’t just say that as a Top Chef junkie. The prices are more than reasonable for the quality and quantity of the food. Plus, now I can taste the dishes that made Hosea famous. Take that, Dad.

rant Farm is a name you may not know, but one that should be on any music lover’s radar. The Boulder-based quartet has the unique ability to turn on a dime from bluegrass, to reggae, to psychadelic, and straight up rock and roll. The boys have steadily been blazing a trail of blistering guitar riffs and sweet Southern harmonies since 2010. In their wake are dropped jaws and dancing folks of all ages and backgrounds.

There is only room for one guitarist in this band and his name is Tyler Grant. Grant made a name for himself by winning the National Flatpicking Guitar Championship in 2008 while living in Nashville. Shortly thereafter, he joined forces with fellow Colorado jam-grass royalty Bill Nershi and Drew Emmit in the Emmitt-Nershi Band. As that project eventually morphed back into Nershi and Emmitt’s full time gigs with String Cheese Incident and Leftover Salmon respectively, Grant moved to Boulder to sew seeds for a new musical harvest.
