COVER We’re Hot Cross Buffs, Survey Reveals This Easter, bakers at the Bakers Delight Mount Gambier bakeries will be busier than ever baking thousands of Hot Cross Buns. Across Australia, over 304 tonnes of sultanas and 140 tonnes of choc chips will be used to bake Hot Cross Buns this year. With Traditional, Choc Chip, Mocha and Fruitless Hot Cross Buns being baked, there is plenty of choice for everyone. A recent survey into Australia’s Hot Cross Bun preferences has revealed that South Australians are among the biggest connoisseurs of the Hot Cross Bun, proving themselves ‘enthusiasts’ rather than ‘purists’ when it comes to the Easter treat. The survey, conducted by Bakers Delight, aimed to clear up once and for all whether Hot Cross Buns should be made available all year round. While the greater nation may be more evenly split (51 per cent in favour of the limited sales period), the majority of South Australian residents (56 per cent) were adamant that they would purchase Hot Cross Buns year round if made available, making them the most likely in the country to do so. Our penchant for the fruity bun is driven mainly by our stomachs, rather than our hearts, with 53 per cent claiming that taste is the key motivation for purchase, over any sense of sentimentality or family tradition. South Australians were also twice as likely to roll up their sleeves and bake the Easter buns at home, with 7 per cent of respondents claiming to do just that on a regular basis. Sentimentality seemed to be the biggest driver for this opinion, with 37 per cent of respondents attributing their Hot Cross Bun purchasing habits to tradition, or a feeling of connection to the Easter spirit. Almost a third (30 per cent) also stated that Hot Cross Buns seem to taste better over Easter weekend. Among Mount Gambier’s locals, Traditional is the best-selling Hot Cross Bun, with Choc – Chip second, arguably the ‘kids choice’! One person not surprised by the results was Mount Gambier Bakers Delight Franchisee Andrew Toogood. “I speak to customers on a

daily basis and Hot Cross Buns are of course a hot topic at this time of year,” Andrew said. “I have many customers coming in earlier in the year, asking when Hot Cross Buns will be ready, but those same people also tell me that the buns definitely taste better the closer we get to Easter. I don’t change the recipe, I promise!” While Bakers Delight bakeries are free to trial and sell Hot Cross Buns in February, Bakers Delight maintains a strict Hot Cross Bun season every year, according to co-founder and CEO Roger Gillespie. This allows the bakers, who undertake annual training and recipe development master classes, time to perfect their recipe and procedure. “There has been talk internally about making the Hot Cross Bun available all year round,” Mr Gillespie said. “But until the vast majority of our customers tell us that they want their Hot Cross Buns in June, we’ll stick to baking what and when they want, and keeping alive a little of that Easter

spirit.” The survey also revealed that: • The traditional fruit Hot Cross Bun is still the favourite, with 77 per cent of local respondents opting for it over new flavours such as choc chip or mocha • South Australia and Victoria were the only states where the majority voted to have Hot Cross Buns available year round • Of all states, South Australia was the most likely to be swayed by cost with just over a quarter (26 per cent) of respondents labelling it the key factor in their purchase decision • Younger respondents, those aged 34 years and under, asserted that they would buy Hot Cross Buns at any time of year if they were available. Bakers Delight will bake over 13 million Hot Cross Buns this Easter, with the majority being baked and sold on Holy Thursday, the day before Good Friday.

Leah Briggs has always loved singing – it’s just she used to only love doing it behind closed doors in her bedroom. Fast forward around twenty years and the Beachport country music sensation is set to launch her debut EP this weekend – five tracks of Leah Briggs originals. If you had told nine year old Leah singing her little heart out in her bedroom that she would one day be a regular performer and would launch recordings of her own songs, she arguably would not have believed you but you can thank the Dead Ringer Band, her father and Bill Chambers for the transformation of the talented muso. Local group the Dead Ringer Band was her first exposure to music and understandably shaped her love of country music, while it was her father that dragged her to the Frances Folk Gathering as a 14 year old to begin the journey to overcome her dread of performing. Bill Chambers, father of award winning country music legend Kasey Chambers, and fellow Beachport alumni and hugely sought after producer and musician in his own right, has been ever present in Leah’s journey and an integral part of her rather recent foray into song writing and the debut EP. After

conquering her fear of performing, the next hurdle was song writing and being prepared to perform her own originals. Prior to her EP recording, Leah had been in the studio before but nothing had even been released. She had crafted demos and recorded one off songs just for the experience but putting Save Me together took it to a whole new level and the former reluctant performer loved it. “I didn’t want the week to end,” she said. “In fact I never wanted to leave, it was such a great experience.” Leah recorded her part at John Reynolds Studio in Adelaide and in a touching piece of symmetry, it is the studio in which the Dead Ringer Band cut their first CD. “It was so exciting,” Leah said. “I would do it again in a heartbeat The EP launch will have a local flavour with Bill Chamber returning to his former family hometown and Terry and Julie Sutherland also on the line-up. It is a Bompa’s of Beachport and starts at 6.30pm.

COLLECTED STUPIDITY Eggs, buns & stuff like that... by Robbie Tansel

Well it’s Easter again. I’ve got to say that Easter is one of my favourite times of the year. As a kid you think that Christmas or your birthday are the best times of the year but as an adult you realise how foolish you were. Let me explain. Think back to when you were a child. Your year was divided into two phases. Phase one was looking forward to your birthday and phase two was looking forward to Christmas. Quite obviously this eager anticipation centred on the presents you were going to receive because you were a kid and your life revolved around getting stuff. You would spend months building up Christmas or your birthday expecting it to be the best day ever, and of course you wouldn’t get all of the seven hundred and eight different things you’d written on your present list. As a spoilt rotten kid, receiving only seven hundred and seven of the presents would lead to you finishing the day feeling like you’d been badly let down. It wasn’t that you’d had a bad day but you’d built it up so much that it could never reach the level you’d anticipated. There was no way you could get everything you wanted and be indulged in the way that you expected. In my case throw in my mother or father being in prison or on the run for most of these celebrations and an auntie who insisted on buying me new underwear each year, which without fail would have fit me nicely about two years earlier. Now think of Easter. As a kid I did love Easter too but I never built it up as much as those other two celebrations. It

may have been because Easter didn’t have the surprise factor. here was no, “Will I get this” or “Will I get that”. I was expecting chocolate eggs and I would get chocolate eggs. I was never surprised, but on the other hand I was never disappointed. The other great thing about Easter as a kid was that you’d spent the previous 12 months being told by your parents to eat healthy and not indulge in the stuff you really wanted to eat. But for one day, or maybe even a few more, it was perfectly legit to go nuts. It was perfectly justifiable to eat chocolate until you were sick. To be perfectly honest, I’m pretty sure that no parent actually cares whether their kid eats chocolate all the time because at least they’re not whingeing and grizzling. They only make them eat vegetables and what-not because people would think they were a bad parent otherwise. Every parent is worried that people will think they’re a bad parent. Before I get too carried away, I will say that there is the occasional chance for disappointment on Easter and that occurs when someone decides to buy you dodgey, cheap Easter eggs. Every now and then, you’d have the family member who would think the presentation of the egg was more important than the delicious taste. I think we all know that Easter eggs should be Cadbury, Red Tulip or Lindt, Darrell Lea, or Haighs if you want to be a bit fancy. Every now and then someone will get seduced by the egg that happens to tie in with the latest kids movie and comes with an egg cup made in China but an egg also made in China, primarily from panda dung. In case you were planning to send me an egg, I only eat Cadbury and Red Tulip. I’m not OPEN EASTER SATURDAY fancy. You probably would have guessed that. Before I finish, I would like to share a discussion at the Tansel house around Easter. Donna wants to do less chocolate for little Shaq and get him a present instead, like a toy. I’m very much of the opinion that Easter is strictly a chocolate only gift occasion. Toys and other paraphernalia are for other occasions. Jesus didn’t die on the cross so that kids could get new Lego. I’m not exactly sure it was so that I could guts myself on chocolate and hot cross buns either, but maybe we can discuss that on another day. Process herbs in a food processor until roughly chopped. Remove 2 tablespoons herbs and reserve. Add ricotta, 3 eggs and half the parmesan to remaining herbs in food processor. Season with salt and pepper, then process until just combined. Thinly slice zucchinis, then place in a bowl with pepitas and remaining 1 egg and parmesan. Season. Toss to combine. Cut filo stack in half lengthwise, then cut each half into thirds to form 6 rectangles. Divide ricotta mixture among filo rectangles, spooning into centres. Place tarts in 2 rows of 3 in prepared pan, lifting sides of filo upright around ricotta mixture. Top ricotta mixture with zucchini mixture, then scatter over reserved haloumi. Place pan on tray and bake for 20 minutes or until filo is golden and filling is set (cover with baking paper if over-browning). Whisk oil and lemon juice in a bowl, then season. Add rocket and reserved herbs, then gently toss to combine. Divide tarts among plates, then top with salad to serve.

TEMPT THE TASTEBUDS Broccoli & green chilli pasta 375g dried spaghetti 500g broccoli, cut into small florets 100g reduced-fat ricotta, crumbled 1/3 cup smoked almonds, roughly chopped Green chilli paste 2 green capsicums 1/4 cup olive oil 1 long green chilli, chopped 1 teaspoon ground coriander 1 tablespoon ground cumin 2 garlic cloves 1 cup fresh coriander leaves 1/2 cup fresh mint leaves 1/2 cup fresh flat-leaf parsley leaves 1/4 cup lemon juice Method Make Green chilli paste Preheat oven to 180°C/160°C fan-forced. Place capsicums in a baking dish. Drizzle with

1 tablespoon oil. Rub to coat. Roast for 30 minutes or until charred and softened. Transfer to a bowl. Cover with plastic wrap. Set aside for 10 minutes to cool. Remove and discard skin and seeds from capsicums. Place capsicum, chilli, ground coriander, cumin, garlic, herbs, lemon juice and remaining oil in a food processor. Season with salt. Process until smooth. Cook pasta in a saucepan of boiling, salted water, following packet directions, until tender, adding broccoli for the last 4 minutes. Drain, reserving 1/4 cup cooking water. Add chilli paste to saucepan over medium heat. Cook, stirring, for 2 to 3 minutes or until fragrant. Return pasta, reserved cooking water and broccoli to saucepan. Stir to combine. Serve sprinkled with ricotta and almonds.

LOCAL New employmnet website for dairy industry Attracting and retaining dairy farm staff is now a lot easier thanks to the launch of eMe in South Australia by DairySA and Dairy Australia. Developed using dairy service levy funds, eMe is a free website that matches dairy farm employers with job seekers. DairySA workforce coordinator Kylie Boston said the website allows dairy farm employers to advertise vacant jobs and job seekers to advertise themselves. “Job seekers are able to list their skills and experience on eMe and can then search and apply for suitable jobs. “To advertise a role on eMe, dairy farmers need to include a position description which helps them work out what kind of employee they are looking for in terms of their skills and experience. This makes it easier for farmers to identify the right candidate in the recruitment and selection process and also creates role clarity for job seekers. “eMe has been designed so that farmers can select from a range of options when creating job advertisements and position descriptions, regarding position types, duties and experience, to help make the process easy. “Both Dairy Australia’s People in Dairy website and the Employee Start Kit initiative (ESKi) also contain tips to help farmers develop position descriptions,” said Ms Boston. Michele Hamilton, a dairy farmer from Mt Gambier who with her husband Graeme, milks 470 Australian Red Dairy Breed cows, has used eMe to advertise for a Senior Farm Hand position said the site is very user friendly and has potential to be the go-to place for people to refer to for employment on dairy farms. “Finding good and reliable staff and retaining them is one of the many obstacles farmers face when building their business. eMe provides another opportunity for farmers to successfully grow their business by making sure you recruit the right people in the right position,” said Ms Hamilton. HOME & GARDEN - Taking care of everything around the house ADVERTORIAL Easter clearance sale time at Gardenarium Yes, it’s that time of year again when Easter Bunny is about to visit and that of course can only mean two things - chocolate and massive clearance sale time at Gardenarium. With that little bit of rain in the past few weeks it seems a little bit autumny again and the nights are certainly getting a little crisper - a great time for planting. This year Easter is a little earlier, so some of our Autumn foliage trees and plants will not be in full splendour but on the flip side the roses last year at our Easter Open Weekend were nearly finished. This Easter weekend we are again having our massive rose sale and awesome Autumn Trees sale to make room for all of our new seasons roses which will be out of the paddock soon. The roses are looking fantastic after a later than normal summer prune after all the hot weather and we are clearing all of the roses in our rose growing area to make room for a further expansion to our Advanced Trees section and this can only mean one thing - bargains all round. Yes, all of our roses, in bush, standard, weeping, groundcovers, David Austins, Delbards etc will be up to 50% off, with $5 and $10 bush roses and standard roses to clear. Autumn is a great time for planting as the ground is still warm and you will get some amazing growth but the main factor is that the plants will be well settled in for next spring. The other great bonus of course is that you will have a year older rose, with much more branching framework and of course masses of blooms right now. Plus you can see what you are buying in terms of rose blooms and their colours as opposed to winter when they are dormant. With the 100th anniversary of Gallipoli looming we will be showcasing a trio of commemorative roses that you wont want to miss out on !, The RSL Rose, The Gallipoli Rose

and The Veteran’s Rose. From Anzac Day until Sunday, April 29, we will have THE RSL ROSEs for sale in full bloom to plant now to remember our diggers and of course the 2 new release Roses “The Veteran’s Rose” and “The Gallipoli Rose” will be available to order. A whole swag of the 2014 new release rose varieties will also be on show and for sale in the long weekend clearance, including the very popular “Soul Sister’ which is a coffee coloured rose with masses of blooms and “Blue Emotion” and “Pink Intuition” all 3 of which many missed out on at their release last year with demand outstripping supply. Nowadays more and more of our roses raise money for charity and these will be on display this weekend also. This weekend we will also be showcasing the 2015 upcoming New Release varieties which need to be ordered this weekend to avoid missing out, especially the Commemorative Roses. Many of the new releases especially the New David Austin rose England’s Rose, The Opportunity Rose which were all officially launched at The Melbourne International Flower and garden Show in the past few days and will be showcased on television with coverage right across Australia on Better Homes and Gardens. A mail order customer from interstate advised us that we are the only distributor left in Australia with a lot of the New releases still for sale. Our website has nearly crashed a couple of times over the past few weeks and the phone has not stopped since the launch of many of the varieties in full bloom at the show. In many cases we will be sold out well

before they are even dug from the paddock, so we urge local customers to order now as most of our roses go to Queensland and New South Wales. The Love You and Man of Steel (pictured on opposite page)are also grabbing a lot of attention , so be sure to get your orders in for these varieties as soon as possible. Gardenarium will also be having a massive fruit tree sale from Easter Saturday through to Easter Monday so bring your trailer, truck, horse float whatever you like and grab a bargain. Most of the advanced trees in our Limestone Coast Advanced Trees section of the business will be reduced to clear with up to 50% off and more on clearance trees, fruit trees and citrus and $10, $15 and $20 tree specials. This will make more room for a whole new area of trees, where we aim to hold more of our stock, rather than bringing it in from our growing field. This means there will be more trees on hand and will cater better for our growing demand for our trees and fruit trees. We have already started expanding the evergreen advanced tree section and aim to widen the pathways making browsing and choosing a little easier. We don’t do “empty” very well here as many will know but it has been hard squeezing all of our huge stock in to the sales area. The Pot Shop part of the business has been busy receiving container loads of glazed, terracotta, sandstone and concrete pots over the past few months and we also need to clear some of those to make more room for more pots, trees and outdoor furniture. Some of the terracotta which is all now pre sealed , so it

doesn’t dry out like the old terracotta has been so drastically reduced and with the strength of the Aussie dollar is now cheaper than buying plastic pots. So, come in and browse through the extensive range and pick up a bargain. There will also be $2, $5 and $10 pot specials. Much of our giftware, wall art and fountains will also be on clearance, as well as birdhouses, dovecotes etc. as we make room in our New Gift shop area, which is bursting at the seams. We will be closed Good Friday but open Saturday and Sunday from 10am to 5 pm and Easter Monday 10am to 4pm. Give your pantry a design overhaul with some of the latest storage products. Some of the best include rolling and sliding shelves that draw dry goods right out to you, two- and three-tier shelving units that can double your usable pantry space, over-the-doors hooks and rails, and baskets that clip onto the bottom of shelves. Pull-out pantries If you don’t have space for a walk-in pantry, consider installing a pull-out pantry within your cabinetry that takes up minimal space and makes it easy to access dry goods from both sides. Lighting Don’t forget to install proper lighting so that you can see the entire contents of your pantry at a glance. You can buy inexpensive battery-operated LED sensors lights from Ikea that emit very little heat and are therefore safe around food. The lights switch on automatically when you open the door and switch off when you close it, so no wasted power. Cabinetry storage The latest trend is for overhead cupboards combined with fully-extending, base-level drawers units. These extra-deep drawers are used to store and organise everything from plates, cutlery and dry food, and gliding or soft-closing mechanisms. Hide clutter Banish clutter from the benchtop by tucking everyday appliances such as the kettle and toaster behind sliding doors or inside discreet breakfast nooks (make sure you have enough properly located electrical sockets). Consider a folding dishrack that can be tucked out of sight when not in use. Utilise space Make better use of awkward corner cabinets by installing pull-out corner cupboard systems, which bring the entire contents of the unit into view when you open the door.

Drawer storage Save time scrambling through drawers for that elusive utensil by adding drawer organisers and dividers to all your kitchen drawers. Find inexpensive drawer inserts at Howards Storage World and Ikea. Look for inserts that are modular and expandable to fit your drawer size and requirements exactly and don’t forget non-slip drawer inserts that keep the contents of your drawers secure. Shelf storage Boost your kitchen storage space with a built in or freestanding shelving unit, and take it right from floor to ceiling to make the best use of space. Popular options include timber, stainless steel or frosted-glass fronted shelving units. Store items used frequently between knee and eye height, and those things used less often at the top and bottom of units. Vertical storage In a space-starved kitchen make the most of vertical space by installing wall-mounted storage such as racks, magnetic rails and tall, and slimline cupboards into those unused areas of the kitchen such as corners. Fix a rail with kitchen pegs above the splashback to hold everything from utensils and the paper towel holder to the spice rack, which helps keep your benchtop clear. A wall-mounted magnetic knife rack keeps knives out of reach of little fingers and within easy reach for the cook. Hooks over the kitchen door, inside the pantry door or under the sink are the perfect spot for tea towels and aprons. Small storage Don’t forget to find a home for all the little things that can quickly clutter up your benchtop. Clear plastic containers allow you to organise and label your dry food and leftovers with ease, as well as keep tabs on how much you’ve got left. Square, stackable containers make the best use of space.

MOTOR Exciting swansong for Borderline Speedway The Borderline Speedway is set to farewell another sxciting and successful motor racing season with the running of the hugely popular Easter Sprintcar Trail this Saturday night. It is the middle meeting of the three event series that starts in Geelong on Friday night and heads to Warrnambool on Sunday. The 2015 Geelong Harley Davidson Easter Sprintcar Trail has once again attracted some of the best sprintcar drivers from around Australia as they all they go in search of claiming the major overall prize – a magnificent Harley Davidson Street 500. The 35th Anniversary Easter Trail is traditionally a full stop on the sprintcar racing scene for this region with $5000 up for grabs for each of the three feature race winners, plus the awesome Harley Davidson Street 500 for the overall points champion. That is all in addition to a very cool $10,000 cash for any driver who is good enough to sweep all three nights of competition, thus giving that particular driver, $25,000 in cash and a Harley Davidson! Is it any wonder some of the country’s best are lining up for a crack at history? With more than 40 cars nominated for each of the three nights of racing, the competition is sure to be red hot. Headlining the current list of nominations is the white hot Jamie

Veal who has taken all before him so far in 2014-15, including being almost unstoppable at both Avalon Raceway and Premier Speedway, while also having been in great form at Borderline Speedway. Veal will be joined in the chase for the Harley Davidson by crowd favorite Max Dumesny who will join son Matthew in their annual Easter pilgrimage. Also in the field will be two time Grand Annual Sprintcar Classic Champion Steven Lines, who always holds the hopes of the Borderline crowd in his hands, another former Classic Champion in Ian Loudoun while 201415 World Series Sprintcars Speed Week Champion Luke Dillon will also be a part of the action. Grant Anderson is back and would dearly love to bring home a win for his family backed team, Daniel Pestka, Darren Mollenoyux, Brett Milburn and John Vogels headline a field that boasts all of the regular Eureka Garages and Sheds Series stars. New South Welshman Sammy Walsh is a welcome addition to the field along with Jackson Delamont, while a pair of South Aussie’s in Ryan Jones and Chad Ely will also be keen for strong results at the rounds that they select to do. Tasmania will again be strongly represented with Kurt Luttrell and Tim Hutchins always keen to test their credentials against their main land rivals. Pit Parties will be held at all three venues between 3pm and 4pm on race nights, giving the race fans a fantastic opportunity to catch up with their favorite drivers, obtain an autograph or perhaps even grab some of the fantastic merchandise that select teams have to offer. Regional fuel prices update Fuel prices in regional South Australia were fair across February, mainly due to the rising wholesale price not being passed on to motorists as quickly as has happened in the past. RAA Senior Analyst Chris West said Victor Harbor topped the ratings in the latest Regional Fuel Ratings results. “The cost price for petrol rose 17cpl and diesel rose 14cpl in February, due to oil prices rebounding from their six year low in January,” said Mr West. “Despite the wholesale rise, the price of petrol in Victor Harbor remained stable throughout the month, and was even cheaper than Adelaide on 23 of 28 days in February.” Mount Gambier (3.6/5) and Renmark (3.5/5) also saw improvements in their ratings this month because they delayed passing on the recent wholesale price rise. When looking only at petrol, Victor Harbor had the best rated petrol prices at (4.6/5) followed by Renmark (4.0/5) and Port Lincoln (3.5/5). “These towns finally fell to more acceptable prices and didn’t pass on the cost price increases quickly, giving them much better results this time around,” said Mr West. Mount Gambier was the best rated town when looking only at Diesel and LPG, scoring 5/5 and 3.8/5 for each fuel type. “If Mount Gambier had fairer petrol prices, it would have ranked first in February’s regional fuel ratings,” said Mr West. Despite regional retailers achieving improved results in February overall, regional motorists are still missing out on millions in savings. “As was highlighted in a recent report by the Australian Competition and Consumer Commission, country motorists have not been able to access the falling crude oil prices at the same rate or speed as Adelaide motorists,” said Mr West.
