SUSTAINABILITY THE NORWEGIAN SEAFOOD PIONEER
SINCE 1899

&QUALITY, PARTNERSHIP
Lerøy Seafood can trace its operations back to 1899 when the fisherman farmer, Ole Mikkel Lerøen, started selling live fish at the local fish market in Bergen.
Lerøy Seafood is the leading exporter of seafood from Norway and one of the world’s largest producers of Atlantic Salmon. Today, Lerøy has grown to include 5500 employees operating in our global network within Norway, Sweden, Denmark, Finland, France,
Spain, The Netherlands, Portugal, Turkey, Italy, China, Japan and the USA. Our vision is “To be the leading and most profitable global supplier of sustainable high-quality seafood ”, and we supply 5 million seafood meals to more than 70 markets worldwide daily.
We are proud to supply a total range of seafood products from Norway. This includes many species such as Salmon, Fjord Trout, Cod, Saithe, Haddock and Shellfish. We offer fresh or frozen whole fish (gutted head on/off), fillets, loins,
portions and blocks with different trimming and cuts. Furthermore, Lerøy offers value-added products such as smoked, marinated, breaded and mixed products, all produced from one of our 23 processing facilities.
We are a fully integrated company, carefully following each step in the production, from catch and harvest to finished product. High quality is ensured by control systems based on HACCP and BRC and we have full traceability on all our 3000 products.

As one of the world’s largest producers of Atlantic salmon, Lerøy provides an excellent choice in sustainable seafood all year.
We have production in every region of Norway, from the south to the north above the Arctic Circle. Our salmon farming follows the best management practices, complying with both national and global requirements. We serve the world with one of the safest, tastiest and healthiest proteins available while leaving the smallest environmental footprint possible.
It takes around three years to raise a salmon and Lerøy Seafood controls the
complete value chain, from hatching the eggs to aquaculture at sea, processing and transportation. Lerøy offer sashimigrade salmon, 365 days of the year. Our salmon is cut and packaged within 2 hours of harvest.
Microalgae for Omega-3 rich feed
Omega-3 rich microalgae has been introduced in Lerøy feed so there is less reliance on fish input material. This is important as Omega-3’s have important health benefits.
Since 2014, Lerøy has worked with various microalgae to trigger the production of Omega – 3 fatty acids to provide a genuine alternative
to fish oil. The fish have to enjoy the taste, the microalgae must be digestible and the raw material must be reasonably priced. Together with the feed company BioMar, Lerøy uses a Producer in southern Brazil that produces microalgae by using sugar as an energy source. The Omega-3 source from algae used by Lerøy is made using sustainable and eco-friendly methods.
For several years Lerøy has chosen to sustain a higher level (7,5%) of Omega-3 fatty acids than the required industry standard (6%), with a view to both fish welfare and the quality of the product. Today, these microalgae support this higher level of Omega-3 in our products.

REFINED ON NATURE`S TERMS
In 2006, a delegation of Japan’s leading seafood experts came to Norway with one goal: to find the finest sushi-grade salmon in the world. Under the spectacular Aurora Borealis – the fabled Northern Lights - they found their prize: Aurora Salmon®. Japan’s most demanding sushi chefs have been using it ever since
In the breathtaking surroundings of Northern Norway, the magical ‘blue hour’ looks like nowhere else on earth. The majestic landscape is bathed in a
magical blue light when night becomes day and day becomes night.
Throughout history, the ghostly, eerie spectacle of the Aurora Borealis has been steeped in myth and superstition. Some believed the spectral lights to be human spirits dancing across the sky. For others, the lights were the spirits of seals, whales and salmon whirling
across the heavens. In the dark, clear winter skies over Northern Norway, the dance continues.
Aurora® supreme Norwegian salmon
Aurora Salmon® is refined on nature’s terms - and nature never rushes. The icy, clear polar waters in Northern Norway mean Aurora Salmon® matures slowly, growing steadily fatter than other types of salmon. The result is a uniquely sweet flavour and rich, vibrant colour with an unrivalled luxurious texture. Nature knows true perfection takes time. Take your time and enjoy its rewards.

THE NORWEGIAN SEAFOOD PIONEER SINCE 1899
Leroy Seafood Fjord Trout is unique in it’s origin and versatility. Lerøy Fjord Trout comes from the fjords along the Norwegian coastline, where the clear mountain water meets the salty, cold sea. Lerøy Fjord Trout is uniquely tender and has intense red colour. It is suitable for many uses – ideal for raw dishes.
NORWEGIAN
THE RED RUBY OF THE SEA
Lerøy Fjord Trout contains high levels of Omega-3, antioxidants and vitamins, all of which are beneficial for overall health.
Limited production: Norway produces around 80,000 tons of Fjord Trout annually, the equivalent of only 5% of the Salmon production. Plenty of space and fresh water in the fjords,

LERØY FOSSEN
More than 200 years of fishing and smoking fish on Osterøy island on the west coast of Norway forms the backbone of Lerøy Fossen smokehouse. In the middle of the stunning Osterfjord, knowledge of smoking fish caught from the surrounding
fjords, has been handed down through generations.
Since its inception in 1970, Lerøy Fossen has embraced traditional and artisanal techniques. These traditions continue to this day. The cold waters produce fjord fish with firm flesh that is ideal for smoking. Following
timeless Norwegian techniques, fillets are carefully trimmed by hand, drysalted and then smoked over local alder wood. Alder wood is known for only growing in the best and richest soil. Carefully collected from the local forest on the island, the wood gives a unique and mild taste, making Fossen known worldwide for its quality.
6 THE NORWEGIAN SEAFOOD PIONEER SINCE 1899
Olaf Gustavsen was born 1841 in Stamnes as the first of five children. His father was a farmer, but he also owned the rights to fish salmon in the Bolstad river, which runs from Voss down to Stamnes. At a young age, Olaf joined his father when fishing for salmon in the river, and he soon became an excellent fisherman.
Olaf Gustavsen took over the farm after his father died in 1873. From 1880, quite a lot of the best fishing places along the river were rented out to wealthy Englishmen. The Gustavsen family, however, decided to utilise the salmon themselves as the value of salmon and trout had started to climb.
Olaf took up the tradition of smoking salmon in the manner he had learned from his grandfather. Gradually he developed his own techniques, and today the products are enjoyed by fish lovers worldwide.
With roots dating back to 1949, Sea Eagle smoked salmon combines old-fashioned craftsmanship with modern scientific research. Sea Eagle is renowned for its high and consistent quality and is a premium brand suitable for fine foods, catering and food service.
Lerøy Seafood Group supplies the Sea Eagle brand worldwide and maintains the unique quality and taste of the Sea Eagle smoked salmon within our state-ofthe-art production units. The salmon goes through a meticulous process. Our salmon is dry salted by hand and contains no artificial colours or flavours. The salting, curing and smoking create a natural preservative.

A LEADER IN WHITEFISH
In 2016, Lerøy acquired the companies Lerøy Havfisk and Lerøy Norway Seafoods, two of the leading Norwegian whitefish harvesting and processing companies. The acquisition has greatly strengthened Lerøy’s position within the European whitefish segment and ensures ownership and access to more than 100,000 MT of quality raw material, including cod, saithe and haddock.
Havfisk is Norway’s leading trawler company, holding approximately 11% of the Norwegian catch quota for whitefish. In 2015 the total catch volume was 58,200 MT, including 28,900 MT of Atlantic cod, 7,900 MT of haddock and 9,100 MT saithe. The total catch amounts to about 60,000 MT(HG weight) annually. As of 2017, Havfisk has a very modern fleet of 11 vessels.
Lerøy Seafood is one of Europe’s largest and most integrated companies for processing, sales and distribution of whitefish. Lerøy Seafood has Norway’s largest landing network for whitefish, with 13 landing stations strategically located along the coast of Northern Norway. The company handles over 70,000 MT of whole fish equivalent, purchased from over 600 vessels. Lerøy Norway Seafoods has 8 primary processing facilities and 2 secondary production facilities in Northern Norway.

ARCTIC SUPREME
- where quality meets traceability
Arctic Supreme is a quality brand developed in close collaboration with a few selected fishermen. More than 140 years of experience have taught us much about processing fish. Fish is a delicate, raw material that needs to be handled carefully to preserve its optimal quality. Gentle treatment in all parts of the value chain ensures supreme quality fish, and only the best fish is labelled Arctic Supreme.
All Arctic Supreme fish has been wild-caught. The work carried out at sea is essential to preserve the premium quality. It requires both experience and excellent knowledge. Fish must be bled as soon as it comes on board before it’s put into running seawater and stored in tubs with ice and seawater. This carefully managed process and the skilled hands of our fishermen, ensure the best possible conditions, resulting in premium quality fish. We always guarantee a maximum of 12 hours from the time the fish is caught until it’s ready packed, with abundant ice, in polystyrene boxes.
The unique quality of Arctic Supreme is it’s traceability and transparency. Every fish comes with a QR code; when scanned, it directs you to the Arctic Supreme homepage where more information about where the fish is caught and packed can be found.

NORWEGIAN ARCTIC COD
– THE WHITE GOLD OF THE NORTH
Cod loves Norway’s rough, cold waters and strong currents that keep the water supremely clean. Norway is blessed with the most extensive cod stock in the world which is carefully managed. Since the first Norwegian fleet sailed more than one thousand years ago, catching, onboard processing and freezing facilities have been constantly improved.
Today, our sophisticated vessels can stay at sea for weeks at a time
yet still deliver outstanding cod in a modern and sustainable way. Cod is not just versatile and delicious; it is an excellent source of protein and rich in vitamin B12 and selenium.
The lean fish contains only up to 3% fat and almost no carbohydrates. About 150 grams of cod will naturally deliver the recommended daily vital omega-3 fatty acid intake. Cod is also an important source of iodine, which helps to regulate the body’s metabolism.
Lerøy Bulandet, facing the rough and open sea, is Norway’s westernmost active fishing community. Here
we employ many of the 400 inhabitants on the island. We are proud of our long history of only buying the best quality cod.
Norway Seafoods is our quality brand for sustainable fish, wild caught straight from the cold, fresh ocean along the coast of Northern Norway. Our main products are produced using Norwegian Skrei. Fishermen deliver their catch daily to our packing stations north of the Arctic Circle. In close cooperation with all our fishermen, we ensure that only the finest products find their way to markets worldwide.

SKREI ®
Skrei is from the Old Norse for “wanderer”.
Each January, just as it has since the beginning of time, a miracle is set in motion. After years of growing strong in the feeding grounds of the Barents Sea, Norwegian Atlantic Cod, in the prime of life, head southward, returning to the Norwegian coast spawning grounds in search of a mate. There, a determined fleet of Norwegian fishermen braves the year’s darkest, coldest nights and pounding waves to greet the arrival of the “Valentines Fish”— as Skrei is lovingly known in Norway, due to the time of the year it arrives and its quest for a mate. The spawning season spans from January to April, and Skrei is Norwegian Atlantic Cod at its best!
At the beginning of the season, some skrei will be caught by the trawler fleet. However, quality branded SKREI® is caught with long line, seines or handlines. Quality branded SKREI®
is spawning Norwegian Cod in immaculate condition - no bruises or damage - and is chosen, packed and processed following a strict criteria that guarantees the highest quality.
Due to hard swimming, skrei has extra firm muscles and firm and delicate white meat. Beautifully white, light and lean with mild, silky-smooth flavour, and a clean taste from swimming in Norway’s cold, clear waters. Its white meat is firmer than most other fish and is suitable for various preparations. The flavour is unique. It breaks into beautiful translucent flakes, which is always a sign of quality. This is a seasonal and high-quality product.
SKREI® is an ultra-premium speciality. Norwegian Cod is treasured worldwide for its beautifully white meat, delicate flake, and extraordinary flavour. Available for only a few short months each year, Norwegian fishermen brave the ferocious seas on the
darkest, coldest nights of the year in pursuit of this sought-after catch.
Protein, contributes to the growth and maintanence in muscle mass.
Vitamin D contributes to the maintenance of normal bones and teeth. Contributes to the normal function of the immune system. Vitamin B12 contributes to the normal formation of red blood cells, reducing tiredness and fatigue and forming new cells— iodine which contributes to the normal functions of the nervous system and the maintenance of normal skin. Selenium contributes to normal thyroid function and hair and nail maintenance and protects cells from oxidative stress.
SKREI® comes from one of the world’s most extensive and sustainably managed cod stocks, which are MSC certified.

KING CRAB
NORWEGIAN ARCTIC LIVE & FROZEN
North of the Arctic circle, in the Barents sea, Lerøy Norwegian Arctic King Crab is sustainably caught by local fishermen in small coastal fishing boats. Called the King of Crabs, it is considered an exclusive delicacy. Carefully processed and packed in Norway, the product’s superb quality is ensured by strict control systems throughout the value chain. The legs and claws of the Norwegian Arctic King Crab are high in protein and low in fat. The crab is carefully handled and checked to secure the best quality before packing and transportation. With its sweet and fresh flavour, Norwegian Arctic King Crab can turn any dining experience into a delicious 5-star meal.
North Eastern Barents Sea and, in the Svalbard zone, Lerøy Norwegian Arctic Snow Crab is sustainably caught by vessels. Smaller, lighter, sweeter – the snow crab is the king crab’s little cousin. As the name suggests, the snow crab lives in the winterly and cold waters of the Barents sea, preferring temperatures below 3°C. Carefully processed and packed in Norway, the product’s superb quality is ensured by a strict control system throughout the value chain. The meat in the legs is firm, sweeter and well suited to serve au gratin, grilled or in a wok with sliced vegetables and a spicy Asian sauce.

Mær is from the old Norse word, meaning “the untouched”. Seaweed hides in the depths of the sea, unspoiled and pure.
In 2013 Lerøy and Bellona, one of the key environmental organisations in Norway, joined forces, creating the company Ocean Forest AS with the aim of achieving more efficient recycling of the unexploited resources in the environments surrounding fish farms.
Excess nutrients in the sea generated by fish production are a resource that can be utilised for the production of species lower down in the food chain, like seaweed, mussels and polychaetes.
The ocean covers more than 70 percent of the earth’s surface, yet only six percent is used for food production. With climate change, scarcity of resources, along with a growing population, we need to rethink our approach to food and food production.
Seaweed binds up to five times more CO2 than the Amazon rainforest per ton. It does not require any fertilisers, land area, medicine or fresh water for growth, making seaweed
SEAWEED
cultivation one of the most sustainable ways to produce food. Today, Lerøy proudly presents our first seaweed products under the brand Mær. This is an important milestone for us, and we believe that seaweed will play an important part in the future of food. It brings us one step closer to our goal of being the world’s leading company in sustainable seafood production.
Mær products are made out of sugar kelp (Saccharina Latissima), a brown algae known for its characteristic blade with wave-shaped edges and sweet taste. Mær seaweed is a superfood in every sense. It is incredibly versatile, bursting with natural flavour. It is also loaded with nutrients, such as vitamins A, B, C and E, as well as antioxidants and minerals with proven health benefits. Sugar kelp is regarded as the most delicate of the edible seaweeds because of its sweet taste and natural content of glutamate, providing the rich and tasteful umami flavour. Umami is the fifth taste and means “good taste” in Japanese.
Mær products, made from sugar kelp are certified organic. They are offered in both retail and HoReCa/industry packaging.

What is Organic seafood?
Organic seafood is strictly regulated through regulations set down by the EU that ensures the production aims to produce as naturally as possible, as well as minimizing the environmental impact. The organic process guaranties a high standard for the fish and sugar kelp seaweed.
Certification
All providers of organic products in Norway are certified by Debio, the Norwegian certification body for organic products. Debio ensures that all parts of the value chain follow the regulations for organic production, and meet the requirements for marketing organic products under Debio’s Ø-label. Debio regularly audits Lerøy’s entire value chain.
Products and brands
With the certification Lerøy Organic, Lerøy currently offers Organic Salmon and the brand . Due to high demand in the market, we are constantly exploring the option to add more products to Lerøy Organic.
Organic Salmon
Lerøy provides a wide range of organic salmon products, both fresh and frozen, post and pre rigor. All with high quality.
Low density at sites – All fish is farmed in a spacious environment, the densities in sites consist of 99 % water and only 1 % fish. Stocking density for organic salmon is maximum 10 kg/m3, while in conventional farming the maximum is 25 kg/m3
Fed only organically – All feed ingredients are certified organic and have a higher level of marine ingredients. All-natural colour – The colorant that gives the salmon its recognisable pink colour is all natural and eco approved.
Cleaned naturally – Cleaner fish is used to help keep the salmon clean. If fish needs to be medicated, the withdrawal period is twice as long, compared to conventional salmon.
