Delivery

Certain items can be reserved, ordered and delivered separately, without any extra charge, before the festive season. We will notify you of the delivery date and we invite you to contact us if you need to change the appointment slot.

Le Petit Depot uses its fleet of refrigerated vans for all deliveries, ensuring your chilled and frozen goods arrive in perfect condition.

What’s more items are packed in an insulated cooler box with ice, something unique to deliveries in Singapore.

Items with the snowflake logo are delivered frozen.

Marennes-Oléron

Fine de Claire are favoured by those who enjoy less fleshy oysters. They are ‘finished’ in shallow salt water ponds for several weeks, where they grow a high quality shell which differentiates it from the open sea oyster, ‘Fine de pleine mer’.

While finishing in the ponds of Marennes Oléron, the oysters develop a tangy saltiness and a subtle earthy flavour. Those who’ve never tasted oysters will appreciate its moist texture and balanced flavours.

La spéciale de claire The ‘claire spécial’ has been selected by the farmer, before it goes for finishing, for its regular shape, its roundness and its thickness. The concave shape of its shell indicates a fleshier oyster within.

During tastings, the claire spécial can be distinguished from the fine de claire oyster by the greater consistency of its flesh, the volume of the oyster in the mouth and the remarkable balance of flavour between saltiness and sweetness. They are ‘finished’ in shallow salt water ponds for several weeks, where they grow a high quality shell which differentiates it from the open sea oyster, ‘Spéciale de pleine mer’. While finishing in the ponds of Marennes Oléron, the oysters develop a tangy saltiness and a subtle earthy flavour which lingers for a long time in the mouth.

Those who’ve never tasted oysters will appreciate its fleshy texture and balanced flavours.

La spéciale de Normandie The Normandie special comes from the oldest salt ponds in the region, situated on the east coast of Cotentin in Normandy. It is well known for its nutty flavour. It is fleshy with a taste of iodine. To be more precise, its full name is the Saint Voast la Hougue oyster.

Serves 4 Preparation time: 15 mins Cooking time: 10 mins 200g goat’s cheese (such as Petit Billy or Chavroux) 2 green apples (such as Granny Smith) 16 slices of smoked duck breast 10cl single cream 2 tablespoons of olive oil 20g butter Salt and pepper 1.Peel the apples and cut them into small cubes, avoiding the pips and the core. Melt the butter in a frying pan over a high flame, and brown the apple cubes for several minutes, stirring all the time.

Put to one side.

2.Crumble the goat’s cheese into a bowl. Pour the cream into a small saucepan, over a low heat, and add salt and pepper.

Remove from the heat before the cream boils. Slowly add the hot cream over the crumbled goat’s cheese, little by little, using a fork to remove all lumps. Continue until you achieve a creamy consistency. Add the olive oil and mix thoroughly.

3.Layer the verrines alternately with the goat’s cheese cream mixture, apples and smoked duck. Leave in the fridge to cool.

Remove from the fridge 10 mins before serving.

Roasted scallops with Sauternes Serves 4 Preparation time: 15 mins Cooking time: 10 mins

16 scallops 20cl Sauternes (or other sweet white wine) 2 medium sized leeks 150g butter 1 small bunch of flat leaf parsley Salt and pepper Thaw the scallops in water and milk.

Pat them dry with kitchen paper.

Remove the stalks from the parsley, peel and wash the leeks.

Cut them into round slices.

Fry them in 20g of butter in a frying pan.

As soon as they lighten, pour in the Sauternes wine and add 10cl of water.

Heat without boiling and add the rest of the butter.

Blend in a mixer until creamy.

Choose a frying pan large enough to hold the scallops flat on one side. First of all, pour the creamy liquid into the pan and bring to the boil. Then add the scallops and add salt and pepper. Cook for 3 mins while gently shaking the frying pan.

Divide out the scallops and the sauce into the washed scallop shells, or onto 4 plates, coat with sauce and garnish with parsley.

Serve immediately.

La maison Masse La Maison Masse is family business from the South-West of France, who have been specialists in producing Foie Gras for four generations, since 1884. They only select the best poultry from farms with the highest quality standards. They supply several 3 Michelin star establishments.

Frederic Masse, the president of La Maison Masse generously shared his recipe for foie gras with the team at Le Petit Depot when he recently visited Singapore. We are now delighted to share it with you‌

Homemade Foie gras Exceptional offer Subject to availability

- 1 liver : $ 59 (nstead of $ 69) - 2 livers : $ 99 (nstead of $ 138)

Recommended thawing times: 12h minimum or 36h in the fridge.

Simple foie gras - Raw duck liver - 10g of salt for each kg of duck liver, pepper lightly, - 17g of combined white port and cognac or brandy for every kg of duck liver.

The evening before, cut the duck liver into two pieces. You’ll get fairly flat slices.

Prepare a marinade with salt, pepper and alcohol, and pour over the livers.

Leave for about 24h in the fridge.

Preheat the oven to 120 degrees centigrade. Lay the slices of liver flat on an oven tray. Bake for no more than 20 mins.

Remove the baking tray and lay the slices of liver in a terrine. Press down on the liver to bring the excess fat to the surface without removing it entirely.

Leave to cool and pop into the fridge 2-5 days before serving.

Pour 8 personnes Préparation : 30 minutes Cuisson : 2 heures

With baby vegetables, chestnut pieces and lemon confit 1 capon: 2.5kg 250g chicken breast 100g duck liver 2 shallots 150g cooked chestnuts 1 salted confit lemon 3cl olive oil 7g finely grained salt 1g ground pepper 1 stick of celery 1 carrot 1 sprig of flat parsley 3 sprigs of tarragon 5cl of semi-skimmed milk 50g of breadcrumbs

• Prepare the capon Ensure there are no feathers on the thighs or legs of the capon. Season the inside of the bird with salt and pepper.

• The stuffing Mix the breadcrumbs with the milk.

Finely cut the herbs.

Finely cut the chicken breast Wash the duck livers and cut them into cubes measuring about 1cm.

Peel and dice the shallots.

Cut the chestnuts into 4 and cut the skin of the confit lemon into small cubes.

Peel and dice the celery and carrot.

Pour a trickle of olive oil into a frying pan and fry the diced vegetables, the shallots and the diced duck liver.

Mix the stuffing ingredients in a bowl: the herbs, meat, vegetables and duck liver, lemon zest, milk, salt and pepper.

Stuff the capon.

• Truss the bird.

Tie the bird up with string to hold its shape.

Fasten the wings and the neck with one piece of string, then the rump and the thighs with another piece.

•Cooking instructions Preheat the oven to 160 degrees (th 5-6) Place the bird on a baking tray in the oven, then roast for 2h, basting regularly.

Half-way through cooking, add butter.

Half an hour before the end, drizzle a little of the cooking juices over a large sheet of baking paper. Place the bird in the centre, remove the string and fold the paper around the bird to make a parcel.

Finish cooking the bird in the baking paper parcel and leave to stand with the oven turned off, at least 30 mins before serving.

Clafoutis with cepes

750g small cepes 70cl single cream 2 eggs and 3 yolks 100g smoked bacon bits 2 shallots 1 garlic clove Half a bunch of flat parsley 1 sprig of thyme 2 tablespoons of olive oil 25g butter Salt and pepper

Serves 6 Preparation time: 30 minutes Cooking time: 30 minutes

1.

Preheat the oven to 180 degrees C (th 6). Peel and finely chop the shallots. Clean the girolles {you only mention cepes in the ingredients] 2.

Heat 15g butter in a frying pan, add the girolles [cepes?}, turn the heat up and stir every 3 mins. Put them to one side, after having drained off any excess liquid.

3.

Put the frying pan back on the heat with 20g of butter and melt the shallots over a gentle heat.

4.

In a large bowl, beat the eggs with the cream, add the shallots and girolles [cepes?} (reserving a couple for garnish). Salt and pepper.

5.

Divide out the mixture into 4 buttered ramekins or silicone muffin moulds. Bake for about 30 mins.

6.

Carefully turn out the flans from the moulds as soon as they come out of the oven. Garnish with mushrooms and serve immediately.

Serves 4 Preparation time: 25 minutes Cooking time: 35 minutes

350g round risotto rice 300g morels 40g grated parmesan cheese 70g and 15g butter 2 onions 15cl dry white wine 40cl chicken or vegetable stock A little parsley Salt and pepper

1.Peel and finely chop the onions. Heat over a gentle flame with 70g butter, stirring until softened (without browning). Add the rice and stir for 1 min until the grains become translucent.

2. Pour in the wine and leave it to evaporate for about 1 min.

Salt and pepper. Bring the stock to the boil. Add one ladle of stock to the rice and stir. Once the first ladle of stock has been absorbed, add another, and so on. Cook for about 18 mins.

3. At the same time, prepare the morels. Carefully rinse them without soaking them. Pat them dry and fry in a pan with 15g of butter for about 10 mins. Five mins before the rice is cooked, add the morels and finish cooking normally.

4. Once the rice is cooked, but firm, remove from the heat, add the parmesan cheese, stir, cover and leave to stand for 2 mins. Then serve immediately, garnishing with a touch of parsley.
