ringing glamour back to the Island of the Gods, Je suis Flirt was launched in 2009 by design duo Indah Kalalo and Fabiola Aisha. Their partnership started in 2005 as show organizers in Jakarta. Amid planning parties, grand openings and products launches, they always found new ways to create customised looks for each event. A leader with so much poise and laughter, Samit is one of the most personable characters in this industry. After starting his career from the bottom, this seasoned hotelier is now helming The Westin Jakarta. We had the chance to sit down with him to find out more about the challenge of leading a hotel in these unprecedented times. – By Rizky Adityo

: What made you decide on a career in hospitality? A: I think the hospitality business came naturally to me. I am not a hotel management graduate, and I have never done any formal training in hotel management. I graduated with a Bachelor of Commerce with honors in accounting and also a qualified software engineer. But I found out all that I have learned is all past, and I have to study again with new systems. That's when I decided to move to a different stream. I had a lot of conversations with my dad, who wanted me to study business management, so I did my MBA with a major in Marketing. I was on my way to follow a career in banking when I saw a big hotel chain in India looking for a front office assistant, so I had an interview and landed the job. Generally, when people graduate from an MBA, they are expected to become a manager; but I started in a junior position. I was challenged because in the interview I was told that I will never be able to do it considering I have no hospitality education background. But then, I gradually proved that I was capable and spent the rest of my career in prominent flagship hotels around the world. : The Westin Jakarta is an iconic building with its twinkling LED lights, but what makes your property stand out in this metropolitan city? A: I think you cannot take away the hotel’s building. The Westin Jakarta completely

stands out as the highest hotel in Indonesia, and then we have Henshin on top. The acceptance of the first Nikkei cuisine not only in Jakarta but in Indonesia was significant. Now, the Henshin brand belongs to the Indonesians. Tomorrow you will see new openings of many other restaurants with fancy names, but you have to be accepted by the Indonesians, and Henshin managed to do that. It is a part of what makes The Westin Jakarta very special. Here, we focused on defining true luxury while delivering personalized service. : The ongoing pandemic must have created challenges for people in hospitality; as a leader, how do you overcome this situation? A: 2020 has been the most challenging year in my career. I never thought in my wildest dream that something like this could happen. We were all surprised, so it took some time and a lot of resilience. I think in this period, talking to my team was important, giving them reassurance that at some point in time things will be back to normal. In my opinion, all hoteliers are like superheroes; we bring happiness, put smiles on their faces, and fulfill the dreams of our guests. We are not Marvel characters or from DC, but we proudly call ourselves Superheroes of Marriott Hotels. : Nowadays, sustainability is important to travellers. How does the hotel address this?

A: The Westin Jakarta has gone majorly plasticfree now. We have started using glass bottles in the room and also sustainable materials in our operations, and we even changed the coffee. Our motto is ‘buy local, be global’. Indonesia is very famous for coffee, but we used to have imported coffee in our hotel until I realized that people come from all over the world to try Indonesian coffee, so why do we have to import the coffee from somewhere else. That's how we started serving one of the best coffees of Indonesia in all of our outlets, and now we are also in process of replicating the same philosophy to our food as well; to source the best ingredients locally. : In your opinion, what makes a great general manager? A: Everybody has different definition of good general manager. From good to great, is decided by the ladies and gentlemen working with you, and the performance. However, to me, listening skills are one of the most important attributes. Whether it’s with your guest, your colleague, the market in general, you have to be able to listen carefully, not just hear. I also feel that you need compassion, empathy, and positive attitude. You have to be someone who wants to do something differently. Do not be afraid to do something that people say that can't happen. And do not be afraid to make mistakes. After the hurdles, when you become successful, everyone will follow you and replicate your efforts. : What plans do you have for The Westin Jakarta in the coming years? A: We are looking at diversifying culinary experiences with new collaborations and creating new dining delights. I am also very enthusiastic to open our Heavenly Spa again and curating a new Feel Well experience. : In your down time, what do you do to relax? A: I do enjoy travelling and photography, I also like to visit different cities and visit the best hotels in those cities. I do take some time out to play tennis, while spending time with my daughter. After relocating to Puerto Rico, Montenegro and Sri Lanka, Henry Scott decided to join the COMO Hotels and Resorts team as General Manager of COMO Metropolitan Miami Beach, before relocating to Bali and making Canggu his new home. – By Rizky Adityo

: How did you get into the hospitality industry? A: After I graduated from the University of Georgia, I was uncertain of what profession to follow. My mother recommended the hotel industry as she has been in it for 30-plus years and I was familiar with it from early childhood. : Has it always been your passion? A: Yes, I really love what I do; it is more than satisfactory at the end of the day. Moreover, it does not stop with the customer-facing part of the hotel, you have the opportunity to meet and socialize with people representing a wide range of nationalities in an even wider range of places all around the world. : In your own words, what makes a hotel stay with COMO unique, especially in Canggu? : What are the most challenging issues you are facing in your current position? A: The most challenging one is to bring first-time guests to Canggu. Born to parents with a passion for exploring unexplored destinations, the husband and father of two has brought his worldly perspective to Bali. As an avid sportsman and triathlete enthusiast, Titus has proven he is astute at setting goals. His strategic planning and training skills ensure he completes every challenge presented to him. – By Nathan : Who or what gave you the drive to get into the hospitality industry? Has it always been your passion? A: The drive came from my parents. When I was young, I was my mum’s sous chef in the kitchen, helping her prepare our Christmas dinners. I enjoyed it and my mother recommended I get into hospitality. My father is an architect who designed several hotels in our city. While visiting his projects and learning the trade from the general managers, I became intrigued with hospitality. After my career in professional sports, hospitality has remained my number one passion. : What drove your decision to accept an assignment in Bali two and a half years ago? A: How could I possibly not accept such an amazing opportunity? We loved the island and we love Indonesia. We found a great school for our children and a fantastic environment in which to live. We didn’t need more than one second to accept the opportunity to move to Bali! : What have been the most rewarding experiences of your tenure in the hospitality industry? A: Working with so many diverse people. While in the Middle East, I spearheaded creating teams that consisted of a mix of cultures and genders. It was truly inspiring to be part of a multicultural team and challenge the social norms of that era. After my tenure in the Middle East, I moved to Bali to work alongside the most incredible talent I have ever seen. Throughout the past 18 months in Bali, my team has remained positive, optimistic and displayed great resilience. This has made it possible for us to sustain through the crisis and work towards building a great future together. : You have worked in multiple countries, which has been your favourite and why? A: I have enjoyed every country I have worked in. I met my wife in Bahrain and we spent three fantastic years there together. Both of my daughters were born in the United Arab Emirates where I loved the ambition of the people. Bali in particular

: During your tenure within the hospitality industry, what has been the biggest challenge you have faced and how did you overcome it? A: I think the past 18 months have been incredibly challenging. The constantly changing outlook, the unpredictability of the pandemic and the roller-coaster of circumstances that we were part of. Looking back at this experience I’ve realised it has become one of the most rewarding challenges I’ve faced. I have been pleasantly surprised by the resilience of our teams. How they manage to stay positive, driven and inspired to keep moving forward is motivating. We’ve had to re-examine everything deemed normal before the pandemic, ensuring it was still relevant to a post-pandemic world. The team at W Bali Seminyak has re-shaped our guest experience and once the first international flights land, we will welcome them with open arms.

: In your opinion, what personality traits do all great general managers possess? A: I believe great general managers lead with humility. We are so fortunate to work in these amazing hotels and with these amazing people. The general managers I know and interact with frequently excel in passion and professionalism, however, in my opinion, the great ones’ place humility at the top of their strongest traits.

: What do you enjoy doing in your free time? A: Besides spending time with my two daughters and my wife, I love to get on my bike and explore the island. While the past 18 months have been challenging professionally, it has been a pleasure moving around the island without traffic

: As the hospitality industry adapts to a post-pandemic environment, what advice do you have for someone looking to break into the hospitality industry? A: How can you not love hospitality? Every day is different and brings a unique set of challenges. You will be encouraged to think out of the box, handle every situation differently and create unique personalized experiences. Guest are counting on you to provide them with an amazing memory and your colleagues depend on you to work as one team. From his first job he was hooked and knew that he had a passion for the hospitality industry, it was in his blood. Before arriving in Bali, his travels and studies exposed him to multiple countries and cultures. – By Nathan

: Do you ever completely switch off? If so, what do you do to relax? A: I don’t believe it is possible to completely switch off. However, when I do have the opportunity to relax, it is during international trips. Those trips usually include returning home to Holland. I value time with my immediate and extended family. We gather around the table for meals. I exercise with my father on runs through the forest. Reconnecting with them is rewarding and rejuvenating. Simply spending time in the kitchen with mum and reuniting with my siblings and friends is therapeutic. It tops my list of relaxation activities.

: What attracted you to accept your position with The St. Regis Bali Resort? A: Many things about Bali attracted me to the Island of the Gods. Of course, the opportunity to manage a property that consistently ranks among the top three properties for St. Regis globally was part of it. But more so than that, Bali itself is a phenomenal destination. The optimism of the people and the culture is amazing. If you run a resort, there is no better destination. : What or who motivated you to pursue a career in the hospitality industry? A: My first job inspired me to pursue a position in hospitality. As a child, I loved helping my mum in the kitchen preparing holiday meals. At the age of 15, I took a position in the restaurant of a small fourroom hotel to earn pocket money. I worked in the kitchen as a helper and I loved it more than studying. It was during those years, I decided to pursue a career in the kitchen. : What was your first role in the hospitality industry? A: My first formal role in the industry was working as a full-time chef. When I was 17, I became a line chef in a 200-room hotel. During those years I realized I enjoyed the management side of the business more than

just being creative in the kitchen. I also understood that if I wanted to be successful in hotel management, I had to go back to school and pick up my studies again. : Where did you study hospitality, and where did you begin your postgraduate work? A: Holland, Cyprus, Australia and China. I began my formal studies in Holland. From there I took up a pre-internship in Cyprus before moving to Australia. I ultimately earned my bachelor’s degree in hospitality management from the International Hotel of College Management (IHCM) in Adelaide. As part of my studies, I was required to undertake a formal internship which brought me to Beijing where I began my career with Marriott in 2008. Beijing is also where I met my beautiful wife. : How do you reward someone for a job well done? A: I think recognition and a genuine thank you goes a long way, especially toward other team members. If somebody consistently does an outstanding job, and they are highly motivated, what we do is develop them. I develop those individuals to become stronger, multi-skilled and advanced in their careers. I think that is the ultimate reward for someone who consistently does a good job. And within Marriott, it’s an ideal place to grow.

: In one or two words how would you describe your management style. A: Empowerment and delegation. I believe in empowering people. I don’t micromanage but I do want to be involved. I rely on the strengths of my teams to educate me on developments within the industry that are evolving in the roles they play. I like to continuously be learning. : What has been the most memorable compliment you have received from a guest? A: I recently received a beautiful email from a woman who brought her family to Bali for their first holiday since the start of the pandemic. In that email she shared how my team made a mark on her stay. I attribute her memorable experience to how my team’s impact resulted in a favourable remembrance of her visit. That is where you can see the warm genuine hospitality of the Balinese culture and people shine through. : What suggestions would you make to an individual who aspires to pursue a career within the hospitality industry? A: First, you need to know why you want to go into this industry. To be successful you need to work hard and be persistent. You also need to be transparent about the demands of your position with family and friends. Their support is crucial as you may not always be as available. : Congratulations on the opening of Andaz Bali! As one of the few hotels that launched in the middle of these unprecedented times, what has been the biggest challenge you faced? A: Thank you and we are very thrilled to open the first Andaz in Indonesia. Opening a hotel is always fun and challenging, whichever period you are in. The current period does present unique challenges indeed. For example, our foreign consultant was not able to fly in due to travel restrictions. But apart from that, the biggest challenge is to maintain the wellbeing of our associates during this challenging time. We have to make sure that everyone is healthy and well, physically and emotionally. : As the first Andaz resort in Indonesia, what would you like to share about the property with our readers? A: Andaz Bali is one of those places you visit that will leave a trail of memories. Andaz means personal style in Hindi and no Andaz resort is built the same – ours in particular is modelled after a Balinese village in modern times. From the way the rooms are laid out, to our village rituals and dining concept, guests are transported to the jolly times of village life, yet they’re located in the heart of Sanur.

: In your own words, what makes a stay at Andaz Bali different from other hotels? A: Our resort is unique because you get a different ambiance depending on which area you stay in. Some areas like Dukuh are very peaceful, whilst our main pool is for those who like to be in the spotlight. In that sense, no stay is the same. The resort is also designed to evoke a feeling of discovery, with hidden gems scattered around the resort, waiting for guests to uncover them. In terms of service, our associates are trained as Cultural Insiders, who are keen to assist you to explore Sanur as locals would. Our butler, or as we say in Andaz Bali “Wang Jero”, is personalized depending on guest profiles. : If we’re not mistaken, you are Hyatt Indonesia's first female general manager. Can you tell us the most exciting part of your job? A: I take great pleasure in shaping and mentoring the talents of tomorrow. Being part of someone’s career growth gives me a fulfilment and joy. : What made you decide on a career in hospitality? A: When I studied in Switzerland, I realized that hospitality offered so much

more than just a job; it’s a great way to see the world and learn from different cultures, and it’s an exciting lifestyle. : You've spent many years working as a hotelier outside Indonesia. What are some of your memorable experiences? A: Indeed, it’s a blessing to spend over 15 years in different countries and the moments I treasure are the ones where I could make an impact on people. During my time in UAE and Malaysia, I was able to mentor and shape colleagues from around the world. It makes me happy to this day to remember the time I shaped them into leaders in Sales & Marketing and Rooms Division. However, as much as my time abroad was memorable, my homecoming to Bali is just as, if not more memorable. Now I appreciate and see my hometown with a renewed perspective and I can’t wait to make even more lifetime memories on this island. : With the world easing its travel restrictions, how are you preparing for the arrival of international travellers? A: I believe the pandemic has made us rethink how we lead our lives and as the border slowly reopens, hopefully we will make the choice of travelling more slowly and mindfully. The Andaz brand is rooted in a borderless and immersive concept, which is very relevant post-pandemic. Our borderless concept will be wellreceived by travellers who have spent so many months indoors; the freedom to roam around from one restaurant to another, direct and genuine connection with our Host, and barrier-free surroundings. Furthermore, once people start travelling again, the focus will be more on the destination rather than ticking all the touristy boxes, which matches our immersive concept very well. CHEF ATTILA KÖRMÖCZI CULINARY LEADER AT INTERCONTINENTAL JAKARTA PONDOK INDAH

As a 13-year resident of Indonesia, this humble German-born culinary wizard takes the wealth of his European roots and blends it with the simplicity of Asian cuisine. Chef Attila joins InterContinental Jakarta Pondok Indah to introduce his unique gastronomic perspective to the epicurean scene of the city. – By Nathan

: Who or what inspired you most to pursue a career in the culinary arts? A: For me, it was being born into a very culinary family. We owned a small restaurant in Germany when I was 8 years old, my brother was the chef, my mother was the front of house waitress and my father was a butcher. My brother is 12 years older and I looked up to him very much. By the time I was 14, I was proficient with the professional preparation of ingredients used in the restaurant. : Being relatively new to the epicurean scene in Jakarta, what was it about your current position that motivated you to relocate to Jakarta? A: My brother used to work in the city during the early ’90s. Having visited many times, I knew the city well and always looked back on it nostalgically. Jakarta is a booming and thriving city and I was very motivated to work for InterContinental. It was a challenging offer to take, but you could see the hotel was serious about what it was doing with its F&B programme. : Before moving to Indonesia, to what countries has your career taken you and what country has had the greatest impact on your culinary style? A: There are only three countries: Germany, China and Indonesia. The country that had the greatest impact on my style is Germany. I was taught the basics and what I learned is still with me. I use the same mindset and the same approach to food today as I did back then, just with new and different ingredients. I love the simplicity of local techniques. They make you adaptable and

flexible. You learn how to use new methods to produce the same product. : When someone else is cooking for you, what is your favourite dish? A: First of all, I always enjoy it when someone else is cooking! I like simple food. Dishes that are honest, sustainable and cooked from the heart. I think family dinners and sharing food is beautiful. : What has been the most rewarding aspect of your career? A: My job allows me to travel and explore many different cultures. During which your mindset and your thoughts are expanding. Your thinking is not short-sighted. You have a greater understanding of cultural differences around the world, which is an eye-opener. : What do you find to be the most challenging issues in your current position? A: In today’s environment, it’s challenging responding to changes in regulations in a proper, flexible and fast way. It means having to manage your staff, your food supplies and your opening hours to remain in line with the latest government protocols. These challenges reinforce that anything is possible, rather than impossible. : What has been the greatest compliment you have received from a guest for whom you have cooked? A: She married me. I met my beautiful wife on 24 December in Bali. As for other guests, when I have the chance to cook a tailored meal specifically for a guest that may have previously had an unfavourable dining experience, that is the biggest compliment.

When I am allowed to cook for them again, seeing the reaction in the guest’s eyes, in their voice and their smile always makes me happy. : When not in the kitchen, what do you enjoy doing to relax? A: For me, there are two things. I love to go to the gym to free my mind. Secondly, I am very connected with nature. I like hiking, the ocean and fishing; anything outside that allows for that connection. : What has changed the most during your years working in the culinary world? A: When I began my professional career, I worked in Michelin-starred restaurants, where you use up to eight pots and pans to complete one plate. It was a very complicated way of cooking, but it was a very fun way too. Now, I think simplicity is nice. Not going overboard is important. The things that need to be on the plate are there without overdoing it. : What advice would you offer someone when beginning their journey to becoming a master chef? A: You need to know about the sacrifices you will have to accept. Your friends and family need to understand that you may not be able to celebrate occasions such as birthdays and public holidays together. You have to be clear about what you want to achieve. Learn as much as you can at a young age in the best restaurants. Show that you have the passion and motivation while always trying to work for the best of the best. Brined Roasted Turkey

INGREDIENTS

METHOD

Brined Roasted Turkey • 1 fresh turkey (with a good amount of fat)

1. In a container deep enough to completely submerge the turkey in liquid, add the first ten brine ingredients and stir to combine. 2. Clean turkey, pat dry with paper towel and place into brining container with mixture. 3. Add enough cold water to container to completely submerge turkey in brining mixture. 4. Marinate in brine overnight for 12-18 hours. 5. Remove turkey from brine and place breast side down in an appropriately sized roasting pan. (reserve brine for use in step 6) 6. Fill roasting pan with enough brine to reach a level 4-5cm from the bottom of the pan.

For the Brine: • 1 bottle white wine • 3 fresh oranges (cut into large cubes) • 3 onions (cut into large cubes) • 3 apples (cut into large cubes) • 4 cloves garlic • 10 twigs fresh thyme • 150g honey • salt & pepper as per taste • 3-4 sticks cinnamon • 4-6 pieces star anise • cold water (reserve for use in step 3)

7. Place turkey into pre-heated 200C oven and roast turkey bottom side up for 45 minutes. 8. After 45 minutes, turn turkey breast side up and roast for an additional 45 minutes. 9. Continue roasting at 200C for about 90 minutes until doneness indicator pops up, if turkey lacks doneness indicator, after 90 minutes, test for doneness every 10 minutes until internal temperature at thigh/leg area reaches 74C or until juices run clear. 10. Allow turkey to rest for 5-10 minutes and carve as desired. *Chef recommended sides: Red Cabbage, Brioche & Dried Fruit Dumplings and Brussel Sprouts.
