AN EYE FOR STUNNING VISUALS

Talented photographer Adrian Stephanus started his career in 2009, when he worked for one of the leading media groups in Indonesia. His passion for capturing stunning visuals and a penchant for the art of photography focused him on his own business as a freelance photographer and videographer in 2013. Since then, he has been working on both commercial and non-commercial projects for top brands and personalities.

Upon the conversation of photography genre, Adrian describes his as quite eclectic. “I cover several genres. However, most of the projects I’ve taken on usually revolve around people and their activities, and not so much on still life or food photos,” said Adrian. In addition to commercial and editorial works that can be seen on his Instagram account @lucentdaypro, Adrian also showcases exquisitely enchanting wedding photography on his other page @hellolucentday.

The always refreshing nature of the job, including encounters on various projects and locations, keeps Adrian excited about being a photographer. He explains that a good photographer should be able to understand different clients’ needs

and personalise the service based on their needs. “Good communication with a good team also helps overcome any challenges,” Adrian mused.

Adrian advised the newer generation choosing photography to be patient, learn

as many genres as possible and get as many references as they can, and find their own visual identities.

THE PORSCHE WORLD ROAD SHOW RETURNS TO INDONESIA

After eight long years of absence, the Porsche World Road Show returned to Indonesia last month. Held at Sentul International Circuit from 3 to 10 February, the event flew in 27 Porsche sports cars straight from Germany for a week of driving experiences. Among the collection were the all-new, razor sharp 718 Cayman GT4 RS, and the highly anticipated 911 GT3 RS.

The professional driving event is held in over 45 countries around the world, with Indonesia as the first country kickstarting the 2023 worldwide tour. Participants not only got to experience these Porsche sports cars to their fullest extent, but also honed their own driving skills in the process. Guided by

Finding a decent bar on the outskirts of Jakarta is not an easy thing without heading for the already crowded Senopati, SCBD and Menteng areas, or heading further out to Pantai Indah Kapuk or Bumi Serpong Damai. However, Goodwill Bar & Dine is a fine, recent addition in a convenient location.

Goodwill is nestled within the young Segitiga Social Hub, and is an intimate, exclusive venue that can host up to 60 persons, indoor and outdoor, including private events. From the outside it looks more like a repurposed container, boxy and compact. However, it is far from boring as you step inside. The interior blends classic New York-style with the living room arrangement of a retro speakeasy, with a fair number of tables suitable for dining, as well as spaces for whisky drinkers at chic cushioned sofas in the corners.

The menu reflects the background of the quality spirits afficionados who created it. The single malt whisky library in particular is quite impressive, carrying various world-class bottles that range from a younger to a more vintage age. On every table, Goodwill places one bottle from among its exquisite wine collection for guests to choose – a nice personal touch.

While the phrase hidden gem has become rather overused these days, Goodwill and its honest, straightforward presentation and intentions give true meaning to the term. It is the real deal

in an unassuming neighbourhood, which makes it a pleasant surprise for suburban casual drinkers.

Choose your seat in the idyllic Kuta Social Club, surrounded by elevated views of the Kuta neighbourhood and beach, and bask in the unmistakable tropical ambience. Deya, the mixologist, will bring the cocktail trolley right to your table and concoct select Tipsy Tea Cocktails. You can choose from the sweet Hillberries, made from spirits infused with strawberries, cherry and lychee; or the zesty Sourland, infused with lime, lemon and orange.

After a welcoming glass of Champagne, Tipsy Tea Cocktails and your preferred tea are served, Chef Ben will serve a magnificent spectacle of sweet and savoury delights in a smoking presentation – quite literally. A glass display filled with smoke is placed on the table, and when the glass is lifted, the

smoke subsides and reveal a colourful, tiered cake stand.

On the stand are delectable delicacies including hazelnut praline choux craquelin, peanut butter and chocolate gateau, as well as passion fruit and mango Italian meringue pie. On the savoury side are creative bites, such as the gochujang and cheddar cheese pinwheels, and coronation chicken

This one-time only dinner took place on 20 January 2023, when discerning diners had the chance to experience a special meal prepared by the resort’s culinary team, who joined forces to welcome the new director of culinary. Along with Chef Marco’s creation, the dinner also featured dishes from Chef Romain Lefevre, Chef Nanda Vanles, Chef Robi Wiryawan and Chef Abdul Abadaeni.

The six-course menu showcased intercultural dishes ranging from sous vide Angus beef tenderloin to seafood saffron consommé, tortelli cacio and pepe and more. Making the night memorable, each dish was paired beautifully with wine that had been specifically chosen by the resort’s sommelier.

THE GLENROTHES SOLEO COLLECTION

When The Glenrothes launched its Soleo Collection a few years ago, it highlighted the importance of sherry casks in the creation of exemplary single malt whisky. For those who are not familiar with whisky making and sherry making, and why the now-flagship collection is named Soleo, then read on.

A vital step in making single malt whisky is maturation for several years in wooden casks, ones that have usually been used previously in other liquor production. Casks previously used for bourbon or sherry are among the favourites, while the latter is the traditional choice for single malt whisky.

Sherry is the native drink of Jerez, Spain, and is made from the region’s white grapes, which are harvested and dried under the sun until ready to be fermented in casks. This is where the term soleo comes from, as it means sunbathing. Over time, the fibres of the oak casks become well imbued with remarkable flavours. The distillers make full use of these unique properties, using these oak casks to mature single malt whisky so the aromatic hints from previous use lend a distinctive character.

The Glenrothes Soleo Collection has a distinct aroma and flavour profile, especially our personal favourites, the darker and older expressions. The 18 Years Old is amber with floral and dried fruit on the nose, offering smooth, creamy and lingering caramel on the palate. The darker 25 Years Old has

Joined by Wanda Huang, a well-known forager for some of the city’s best restaurants and hotels, the two teams foraged in the abandoned farms and remote trails around Tai O. Among their harvest, wild peppercorns, Chinese box orange leaves and calamondin were chosen as the stars of this farmhouse-style ale. The result is a refreshing session-able beer with pronounced spiciness and floral characteristics balanced perfectly with delightful fruity notes.

MONDRIAN HAS ARRIVED IN SINGAPORE

The vibrant, trendy neighbourhood of Duxton Hill in Singapore welcomes a new, inspired hotel destination this March. Even before the opening, Mondrian Singapore Duxton had created a buzz, with expectations of it becoming the home of dynamic minds from the world of hospitality, cuisine, design, fashion, nightlife and art.

“Rather than a direct translation of the classic shophouse, we took its parts and deconstructed it into contemporary forms. We wanted to recognise it, but also reinvent it, that Singapore silhouette, and rediscover old details in contemporary and unexpected touches,” Robbyn said.

Repurposing historical shophouses into 302 rooms and suites turned out to be a marvellous idea. Incorporating inspiration

from traditional Singapore architecture and elevating it with contemporary flair, the hotel also showcases a curated art collection that further colours the story. Further excitement is brought into the design inspiration from Singapore’s melting pot of cultures and its trade route neighbours.

Q: Tell us about how you started your career in hospitality.

A: Hospitality wasn’t really my choice at first. My first job was as a flight attendant, which allowed me to experience the true meaning of hospitality and led to my career in the hotel industry.

Q: You’ve been working for hospitality’s biggest names. Is there any secret to keeping up the good work and your reputation?

A: Integrity, staying positive and, of course, loving what you do.

Q: Following the previous question, what do you think is the most important thing that all brands value the most?

A: The commitment to serve not only guests but also your colleagues and the community around your business. This is a 360-degree full practice that is believed and implemented by most hotel brands.

Q: What was it like when you first joined Mandarin Oriental, Jakarta, and how have you liked it so far?

A: This is actually my second time with Mandarin Oriental, Jakarta, and it is safe to say that I am a forever fan. My first time working for the hotel was back in the 90s,

Q: What’s a typical weekday for you?

A: No matter how demanding my schedule is, I always try to make time for my family by dropping my kids to school first, before heading to the office to start my day. After work, I try to catch up with my kids and my husband, as being present is very important.

Q: What is the most valuable lesson that you’ve learned working as a hotelier?

A: I have learned to embody the essence of hospitality, such as teaching my kids to be hospitable to anyone they meet, greeting people and smiling. Such small gestures can make someone’s day. Aside from that, the discipline that we practice at the hotel is reflected at home as well. There are so many lessons that I could lay out here, but the page won’t be long enough.

Q: Tell us about how you started your career in hospitality.

A: I started 22 years ago and right up until now, I still love every minute of it. My first job was with a four-star hotel in Jakarta, which lasted for five years before I moved to Bali. I’ve lived on the island for 17 years and my career here has seen me serve at several five-star hotels.

Q: How do you like working in Hotel Indonesia Kempinski Jakarta so far?

A: So far, I love it so much. At Hotel Indonesia Kempinski Jakarta, it’s all about people. The deeply rooted Kempinski DNA brings the team together into one family, which is very evident in the great teamwork.

Q: What have been the most memorable moments in your career?

A: The many people I have mentored, that was extremely rewarding. I have enjoyed watching each one of them grow in their respective careers. Apart from that, of course, all the wonderful people who have mentored me, including my first general manager, Mark Aitken; the

super smart and cool general manager Brad Edman, and the most macromanagement general manager, my current boss, Sjefke Jansen.

Q: Which would you prefer, joining a pre-opening team or a pre-existing team? Tell us why.

A: A pre-opening team! The best part of the pre-opening experience is being

able to bond with the team. It’s like being welcomed into a new family. I felt a great sense of achievement as I contributed to setting up systems and procedures for the hotel. It is stressful, and you need to be able to multi-task and be flexible to change. Many would say that it is easier to work in a fully operational hotel but where is the fun if everything is easy, right?

Q: You’ve spent a lot of time in Bali. Professionally, what’s the difference between Bali and Jakarta?

A: Even though they are located in the same country, have a remarkably different businesses and culture environment. Jakarta is dominated by domestic guests, while Bali is a paradise for foreign guests. The work pace and work pressure in Jakarta are also so much faster and higher compared to Bali.

Q: What is the most valuable lesson that you’ve learned working as a hotelier?

A: Working in the hospitality industry teaches you skills you could not learn anywhere else. It teaches you about respect, prioritisation, communication, swift problem-solving and humility. You will learn more from a single day on the line at a busy hotel than in any classroom. Working in hospitality teaches you real-life soft skills that you will carry through your entire life.

Q: Tell us about how you started your career in hospitality.

A: After graduating from high school, I enrolled in a Hotel Management school in the Blue Mountains of Sydney, Australia. Upon completion, I returned to my hometown and secured my first job as a guest relations officer, where I eventually progressed to a role in the Executive Club. It was during this time that my career path shifted towards public relations when the incumbent left and I was tasked with taking over their responsibilities in the sales and marketing department. I discovered a passion for networking, meeting new people, and interacting with the media, which has driven my professional development ever since.

Q: You’ve been working for Jakarta’s top names in hospitality. Can you share with us the secret to keeping up the good work and reputation?

A: There is no formula for this; genuine care and authenticity are essential for building a connection with our peers. As a PR professional, it is crucial to always present myself in line with the hotel’s brand, which plays a critical role in maintaining the hotel’s reputation, regardless of where I work.

Q: The Four Seasons brand is known for its unparalleled experience in hospitality. What caused you to join them and how has the experience been so far?

A: It is an incredible honour to have the opportunity to join Four Seasons Hotels and Resorts, one of the world’s foremost luxury hotel brands. Working with Four Seasons has taught me the importance of remaining humble and cultivating a strong sense of professionalism.

Q: Following the previous question, what is the Four Seasons Hotel Jakarta experience, and what can guests expect from visiting the hotel?

A: Simply, an exceptional luxury experience with the unique blend of Indonesian culture and the Four Seasons brand’s sophistication. They will enjoy luxurious and comfortable accommodations, impeccable service from highly trained staff, while the hotel’s

Q: How would you describe your responsibilities in under 10 words?

A: Managing the sales and marketing department to achieve total hotel revenue.

Q: What makes a typical day in your line of work?

A: I work in a very dynamic environment with a lot of movement. So, in my typical day I leap from one customer meeting to another while overseeing all sales and marketing activations. You can see me at the Jimbaran Convention Center with MICE clients to secure the next group leads and in the next hour see me at Bella Cucina talking about the restaurant photoshoot with my marketing team.

Q: What does your day off look like?

A: As my day at work is typically busy and structured, I like to slow things down on my day off. I want to have me-time during my day off. I usually exercise to maintain my fitness and then meditate to clear my mind. I also like spending time with my family sightseeing or trying new restaurants.

Q: What’s the toughest part of your job?

A: As I am usually the middlewoman in the department, thus, the most challenging part of my job is to make sure that we have good synergy and communication between the sales and marketing team and the operational team to achieve the same goal and win business.

Q: What do you find most satisfying in your job?

A: When the hotel runs well at its full capacity, all the guests are happy and we can achieve the targets, it certainly impacts the wellbeing of the entire team and their family.

Q: Who has been the most influential figure in your career?

A: My previous area general manager. He has the ability to turn a problem into an opportunity. And the way he delivers feedback or criticism to us is good, so instead of feeling offended, it motivates us to do better.

Q: Name one really special thing about your hotel?

A: The location! InterContinental Bali Resort is strategically situated in one of the most prominent locations in Bali. We are blessed with a perfect sunset, beachfront resort; it also makes it easy for our guests to access the airport or trendy areas in Seminyak or Uluwatu.

A: I am an introvert. I like to have me-time on my day off. It is part of my process to recharge and keep my motivation high.

Q: If you had not taken this career path, what would you have chosen?

A: I think it would be a motivational speaker. I have a weird habit of always motivating people to do better, as well as sharing my knowledge and

experience. I believe we can learn faster if we have someone to deliver the knowledge in an exciting way.

A: Create and implement sales and marketing strategies.

Q: What makes a typical day?

A: The day always starts with checking the news, both general and hospitality to keep up with the world. Making my bed is a must as the first positive act to kick off the right mindset, followed by a healthy breakfast. I check through my workload and to-do list before morning meetings with the heads of department and then my team to discuss each individual's activities, then set about my day with clients, admin and regular strategy meetings. Finally, where possible, I finish my day with a run, gym or yoga to have personal time.

Q: What’s the toughest part of your job?

A: Not always being in control; you never know what the day will bring, which is exciting and keeps you motivated. However, when you have a plan for the day, you have to be flexible to change the goalposts and your time.

Q: What do you find most satisfying in your job?

A: I love being able to travel, however, working with people, the different departments, the guests and clients we meet and, of course, my team, being able to achieve goals and seeing the team deliver results is always satisfying.

Q: Who has been the most influential figure in your career?

A: I have been lucky to have many influential people for a number of reasons, and worked for some of the best general managers, including my current GM, Titus Rosier. My parents are in my corner for guidance, and one lady has always been a guide and mentor, Seema Pande, a true connector and respected titan in the industry.

Q: Name one really special thing about your hotel.

A: Easy, the people. We have the location, the outlets, the rooms, the views, you name it, but without the talent working hard day in and day out to elevate your experience at W Bali – Seminyak, we would be just another hotel.

Q: How do you unwind?

A: I like to keep busy, this could be at the gym, going for a hike, or something like yoga, or a good meal and glass of wine with friends and family. I’ve always been restless when it comes to free time.

Q: If you hadn’t taken this career path, what would have you chosen?

A: Instead of reading about me, I’m sure you would have been watching me on the big screen as an actor. I am sure that Hollywood’s loss is hospitality’s gain!

THE LIGHTWEIGHT SPEEDER FASTLANE
The significant performance boost comes from moving the radiator of the GT3 RS to the middle. Instead of the usual three-radiator layout, it relies on a

large, angled centre radiator in the car’s nose. This has made it possible to use the space freed up on the sides to integrate active aerodynamic elements, along with adjustable wing elements in the front and on the two-part rear wing to provide 409kg of total downforce at 125 mph.

As for the look, the 911 GT3 RS is immediately recognisable from the large number of functional aerodynamic elements. For the first time on a Porsche production vehicle, the upper edge of the rear wing is higher than the car’s roof, while the front end no longer has a front spoiler, but instead features a front splitter that divides the air flowing over and underneath. The remaining outer part has inlets, side blades and fins for optimised airflow, with air openings on

the front and sides used exclusively to improve aerodynamics.

The 911 GT3 RS offers three driving modes: Normal, Sport and Track. In Track mode, the basic settings can be individually adjusted, while the other settings can adjust the rebound and compression damping of the front and rear axles. Another first in a Porsche is the installation of a drag reduction system to achieve low drag and higher speeds on straight sections of the track. Even the suspension comes in for aerodynamic attention, with components of the double-wishbone front axle designed in teardrop-shaped profiles.

THE WINNER’S MENTALITY

After being crowned Puteri Indonesia 2019, Frederika Cull continues to make her mark, from being the first Indonesian contender to get into the top 10 at the world-renowned Miss Universe pageant, to starring in hit television shows. With a fashion project on the horizon, Frederika shares her key to success.

Q: How did you decide you wanted to join the prestigious Puteri Indonesia competition? Has it always been your passion?

A: Not at all. I’ve always enjoyed watching beauty pageants, but I never thought I was pageant material. I was offered the opportunity to join by my manager when I was 18, she did a good job of convincing me about the opportunity and the potential Puteri Indonesia could offer. I ended up taking part and won the competition not long after I was 19 years old.

Q: How about acting? Have you always wanted to do that, or did you come across the film industry by chance?

A: I’ve always been interested in film and theatre. I remember taking theatre lessons from a young age and doing school productions and loving it.

Q: You represented Indonesia in the world-renowned Miss Universe 2019 pageant. What is the most memorable story that you can share from that experience?

A: Definitely when Steve Harvey called Indonesia to the top 10 for the first time in history. This will probably be one of my greatest moments in my life, I still get emotional thinking about it.

Q: Being a public figure must have its ups and downs. Can you share what’s your favourite part and most challenging part of having many followers?

A: Being a public figure means you are your own brand, which allows you to have more authority and creativity in your career. I’ve been very lucky to have worked with brands that I love and have met incredible people because of my

following. I owe my success and my career to my fans who have been so supportive of me. The downside of fame is that there is an unrealistic expectation placed upon you and a sense of ownership from the public. Since we are our own brand, we must always protect our image and do things that benefit it. Sometimes thinking about yourself as a brand and not a human being can make you feel disconnected from your emotions and drain you.

Q: Are there any future projects – films or other endeavours – that our readers can look forward to?

A: For the past few months, I’ve been working on my own clothing line with my childhood best friend. It’s a project we have planned for many years now and we are finally pursuing it. We hope to launch soon in 2023, so keep your eyes and ears open.

Q: In your opinion, what is the key to success?

A: In my opinion there are two types of success. Internal success, which is how you choose to live your life, and your values, which are most important. External success, which is how well you do in the outside world. The key to success is when you can create the right balance between the two and live your dreams in line with your morals and values.

Q: What advice would you give someone who wants to compete in prestigious pageants like Puteri Indonesia or Miss Universe?

A: Know who you are! As simple as it sounds, getting to know yourself is actually quite challenging. The reason I find this important is how can you expect to be an inspirational figure who can create real change if you don’t know who you are? Focus on yourself, figure out what you want in life and you’ll develop the right mentality to be a winner.

Pavithar Harjani is not a new player in large-scale investments. However, when he made the move to become the owner of Four Points by Sheraton Balikpapan, as well as opening Prasana by Arjani Resorts in Bali, he appreciated the opportunity to make people happy. He talks to Asia Dreams about what makes the all-villa resort shine.

Q: Tell us about how you got into the hospitality property business.

A: At first it started just being part of our portfolio – but then we took it a step further. We decided that in a world where people face a lot of mundane activities and problems, where they face a lot of adversity, we have the opportunity to give them an experience of happiness, to create good memories for them, to make everything they do worthwhile. That is why we created Prasana. The word prasana means happiness. The full name, Prasana by Arjani, translates to happiness by a happy person. That is the basis of why the hospitality industry was so attractive to us.

Q: What attracts you to this industry?

A: The hospitality industry gives us the opportunity to make people happy. I think that’s the core of hospitality itself.

Q: What’s the biggest difference between the hospitality industry and the business that you ran before?

A: It’s very different. My previous business was basically pure investment, I never got into the experience of interacting with our guests, or with anyone who experienced the product itself. We were purely investors. This time we are putting effort into getting

to know the guests, trying to see what they want, and to see what we can do to make them feel more comfortable.

Q: Can you tell us what guests can expect when visiting Prasana for the first time?

A: They can expect warmth, absolute care, and all kinds of needs fulfilled, even if it’s not on the menu or our normal service, we will try to give it to them. They should know that Prasana is almost like their home, where we try to make anything possible, just to make them happy, whatever they need.

Q: Can you tell us some interesting stories from the development of Prasana?

A: We started in a place where the road was non-existent and everything had to be done by hand. So everything in Prasana is handmade, all with artistic flair, so every villa is slightly unique. You can see a bit of artistic touch in everything, every piece of furniture, every wall piece, there’s something a little bit different if you look closely.

Q: Since you built it, what are your favourite things about Prasana?

A: I like the vibe, but it’s not just that. There’s a vibe of relaxation when you step in, it’s absolute relaxation. No one

can explain it, but the moment they step in, they’re suddenly at peace. That cannot be bought, it’s something that’s always been there, and I think many people appreciate it, and that’s why we’ve always been a thriving, small, boutique villa. You don’t get this experience in larger hotels, this is something that is unique to Prasana, the peaceful vibration. The relaxation, the surroundings, the warmth, are things that are unique to the place.

Q: Can you tell us about your typical weekday?

A: That depends on where I am. I travel a lot, two to three weeks in a month, so there is no typical weekday for me.

Q: Having two properties in two different parts of the country, what is next for you in the hospitality industry?

A: I have no idea! You will have to see. Again, it depends on what we can best do for our guests, that’s all. We have time to discover, and we will take that time.

NICK SEBASTIAN OPERATIONS GENERAL MANAGER OF ALTITUDE GROUP

Leading a restaurant is not an easy task. But how about this: leading restaurant operations, and being tasked with not only keeping the kitchen running but also maintaining first-class quality, as well as managing the many personnel within? Oh, did we mention also doing this for several restaurants all at once? As the operations general manager of Jakarta’s top fine-dining group, Altitude, that is the daily life of Nick Sebastian. We met with the hardworking manager and discussed his secrets to success.

Q: What’s a typical day for you?

A: A typical day for me begins with my morning cup of coffee, during which I check my schedule for the day ahead. I then head out to our restaurants to hold my morning briefings with the team leaders and supervise operations at each of the locations. To end the night, I conduct a review of the day’s service and hold more discussions with the team leaders on areas for possible improvement.

Q: Can you tell us the must-try dishes or beverages in each of Altitude Group’s restaurants and bars?

Q: Tell us about how you started your career in the culinary business.

A: Ever since I was young, I have been intrigued by the culinary world. My family would take me to Michelin-starred and other high-end restaurants whenever we’d travel on vacation. It would amaze me how well the food was presented and how it looked so appetising. Since then, it has been my passion to be a part of the culinary industry.

Q: How did you join Altitude Group and how do you like it so far?

A: I was fortunate enough to be introduced into Altitude Group by my mentor, and since joining, it has been an amazing journey. I have been given the opportunity to gain comprehensive exposure to the various operations involved in running a successful group of restaurants – including the kitchen, floor operations, marketing, and backoffice departments.

Q: Please explain briefly to us about the Altitude Group.

A: Altitude Group is a culinary collective comprising more than a dozen high-end restaurants, which was established in 2013 – and is still going strong.

Q: How do you handle the pressure of running the operations of multiple restaurants and bars?

A: At Altitude Group, we approach the challenge of running multiple restaurants and bars with a proactive and wellplanned strategy. We establish rigorous operating procedures and rely on a team of highly qualified leaders to ensure that everyone is executing their role. Additionally, we hold weekly meetings among the leadership team to address and resolve any obstacles that may arise.

Q: Following the previous questions, what is the most valuable lesson that you’ve learned from leading operations in Altitude Group?

A: To have a strong sense of teamwork. Just as the various parts of the human anatomy must work in sync for a person to function optimally, so too must all members of our team to work together seamlessly in order to be successful.

Q: What has been the most memorable moment in your career so far?

A: The most memorable moment was when we had the opportunity to create a collaborative event with multiple chefs and restaurants.

A: It’s going to be a long list. I’m going to start with our Japanese places, beginning with Yugen and its premium Japanese shabu-shabu, then the Japanese blue fin tuna at Enmaru, followed by the variety of open temaki and White Momo for both Maza and its bar. Moving on to Altitude Grill, my choice is its dry-aged Wagyu striploin, while Oscar has the exquisite black king fish. Closing the list with excellent drinks from M-Bar is its Stairway to 46, and the signature Cloud Negroni at Cloud.

Q: What’s the next exciting thing from the Altitude Group that our readers can look forward to?

A: We just welcomed a new, thrilling addition to the Altitude Group, which is Maza Jakarta. This new dining establishment offers contemporary Japanese cuisine in a warm and inviting atmosphere, complete with live DJ performances after hours to add to the lively ambience.

Q: Where do you see yourself in five or 10 years from now?

A: I hope to still be expanding my knowledge and expertise within the industry and continuing to learn from culinary experts and established professionals.

LEADERS Nurturing Future

Mike Miller was inspired to join the world of education while he was training new talent in the financial consultancy industry. He discovered a penchant for imparting knowledge and helping others grow and develop. Now, as the head of school for Bali Island School, he shares his thoughts on the educational system with Asia Dreams.

Q: Bali Island School prides itself on its IB diploma programme. How would you describe what the International Baccalaureate is?

A: The IB Diploma Programme (IBDP) is a very rigorous but rewarding two-year high school programme that precedes university entrance. Students who embark on the full diploma programme choose six subjects that are matched to their prospective career path, and that they wish to study further at university. What sets the IBDP apart from other programmes offered by other organisations is that the IBDP takes a more holistic approach to student development. For example, students must also partake in Theory of Knowledge (ToK), Creativity, Activity and Service (CAS) and, finally, the Extended Essay (EE). It is widely accepted that because of these additional areas of study over and above the six academic subject areas that IBDP students are the best prepared for university studies.

Q: How familiar are you with the educational system in Indonesia and what do you think about it? Is there room for improvement?

A: I am new to Indonesia and Bali but have learned a lot about the Indonesian education system through close collaboration with my SPK (Satuan Pendidikan Kerjasama) Principal, Yunita. I’m aware that the Indonesian Education Minister, Nadiem Makariem,

has just launched a new Independent Curriculum in February 2022 as part of Program Merdeka Belajar in Indonesia. I believe the curriculum focuses more on a student-centred approach, essential learning material and to the development of students’ character.

Schools also have authority in developing this curriculum and learning in accordance with the needs of the students. Learning is also carried out through project activities, while in the previous national curriculum, schools did not implement projectbased learning. I believe this approach can provide broader opportunities for students to explore many different things to enrich and enhance their learning, and at the same time, provides a more empowered experience. So, for me, this is definitely a well-informed and astute decision designed to move Indonesian education forward.

Q: What is the most memorable/ rewarding moment in your career?

A: For me, perhaps the most rewarding moment has been seeing the grit, determination, resilience and fight that students from all around the world put up during the pandemic. No one and nothing was going to take away their right to an education and their chosen career path. As an example, last year’s cohort at BIS graduated with an average of 34.19 points, with the world average being 32.00. Additionally, one of our students scored a

perfect 45 out of 45 points. An incredible feat during online learning!

Q: What makes Bali an ideal (if not the best) place to raise a child?

A: For me, Bali is truly a majestic island with a plethora of activities to keep every child happy and stimulated. The climate obviously helps, in that you can spend a lot of time engaging in outdoor activities. In a world that is increasingly dependent on social media and tends to now spend more time indoors, this is a major plus point. The culture is rich, steeped in history, and the island is a very safe place to live. Due to the diversity of people living in Bali, children are provided with the chance to not only learn about local culture, but the cultures of other representative countries. The ability to learn from others and appreciate differing perspectives is a golden opportunity for children living here in Bali.

Q: As the Head of School of Bali Island School, you are the captain of the ship. What does it take to lead and inspire your students?

A: Being the leader of a school means that you are continually under the spotlight, 24/7, and constantly responsible. Therefore, being cognizant of this responsibility means that I have to model best practice and behaviour all the time. By this, I mean how I talk to people, how I respond, how I dress, how I treat my community. In other words, doing the right thing at all times will in itself inspire students. Being an inspirational leader is about serving the needs of others, not your own, and my leadership philosophy revolves around a quote from Ghandi who was quoted as saying, “The mark of a good leader is not how many followers you have, but how many leaders you create.” I try to continually inspire others by serving them and leading by example. I hope that I can inspire others to enter into leadership and serve others.

TO FOLLOW A Leader

Andreas Bergel is no stranger to the island’s stellar hospitality scene. With more than 20 years of experience, Andreas took up the reins as general manager of Hotel Indigo Bali Seminyak Beach right in the middle of the pandemic. We sat down with him to understand more about what it is about the industry that he loves so much.

Q: There are so many beautiful aspects of the resort, but what’s your favourite thing about it?

A: My favourite thing to see at the resort is guests with a smile on their faces. And I truly believe that we, as a team, have done a good job of providing that. Secondly, I am most proud of our coffee.

Q: You were clearly meant for this industry, but what do you imagine you would have become if you hadn’t pursued a career in hospitality?

Q: Today you are general manager of one of the finest resorts in Seminyak, but how did you first enter the hospitality industry?

A: Being in the hospitality industry is definitely in my genes, my parents and grandparents were involved in the restaurant business, and I have always enjoyed serving people at the restaurant, seeing them happy was real fulfilment for me. Eventually, I turned my hobby into a career in the hospitality industry.

Q: You are originally from Germany. When you relocated from Europe to Asia, what differences did you notice immediately in terms the industry?

A: Before moving to Asia, I did a stopover in the Middle East for 10 years. And when I moved to Bali, I quickly realised the biggest differentiator is the service culture. The Balinese people are the pinnacle of genuine service because they do everything with a smile and happiness to serve customers. That was probably the most startling thing to see for someone new to Bali.

Q: You were appointed GM of Hotel Indigo Bali Seminyak Beach back in the middle of the pandemic. What challenges did you face, and how did you overcome them?

A: It literally felt like Groundhog Day because we were chasing these bubbles of hopes and dreams. In my field, I believe a lot of leaders have done dozens of re-openings, re-planning and budgeting, and eventually, I had to push myself very hard to believe in those as well. It was not until I saw international planes landing on the tarmac in Bali with

my own eyes after a two-year absence that I was thrown back to these cocktails of hope and challenges; but it was an amazing journey.

Q: What changes have you implemented, or begun to implement since you took the reins? Can you tell us some of the things you have planned for the hotel in the future?

A: The hotel was built on beautiful grounds and is highly conceptualised. In the past two years, it just didn’t get the attention that it needed. I am very proud now of this resort as a product, but I am prouder of the young and dynamic team heading it up with a commitment to providing a luxury lifestyle service culture in the future.

Q: We can tell you have a very teamfocused approach to management. Can you tell us more?

A: I guess it comes down to how I treat people based on how I want to be treated. Great things happen when you have a solid team, especially over the last two years when I realised only with a strong team we can get through tough times.

Q: Seminyak is a hub of five-star hotels and resorts. In your opinion, what is it about Hotel Indigo Bali Seminyak Beach that stands out from the rest?

A: I think our hotel stands on a platform that means we’re not competing with other lifestyle luxury hotels. We want to provide our customers with a homeaway-from-home experience through authentic design elements, Balinese service culture and fine selections of dining. Who wouldn’t love that?

A: You would be surprised, but there wasn’t really much of an alternative. At some point in time, I was thinking of being a marine biologist, this was simply because of my curiosity. But, I’ve turned that into being in the hospitality industry and I am very happy with that.

Q: You’ve been in Indonesia for around nine years now. How has the high-end hospitality industry evolved between then and now?

A: In those nine years we have certainly seen a lot more hotels opening up on the island, and there are also more destinations in Bali. The curiosity of people exploring Bali, seeing these various experiences and destinations, is definitely the big difference between then and now. Secondly, I think more people are realising that breakfast is the most important meal of the day with so many places offering brunch.

Q: As a general manager, travelling plays a big part in your life. If you had to name one ultra-special place, where would it be and why?

A: I have not been to Europe for a very long time, and if you asked me right now, I could see myself at a mountain resort with a spa and amazing outdoor activities, eating at a farm-to-table restaurant while enjoying the view. But the greatest destination so far in my life is, and will remain, Bali.

A seasoned hotelier with decades of experience, Syahreza Ishwara is now the ringleader at Anantara Ubud Bali Resort. After years managing five-star properties abroad, the award-winning leader is now back home in Indonesia. We got the chance to spend the day with him to understand why being part of the pre-opening team of a grand-scale property is exciting for him.

Q: First of all, welcome home! How is it being back in Indonesia after years of living abroad?

A: It is obviously very exciting after more than 20 years of being away, finally I can come back to my home country of Indonesia to build the soon-to-be Anantara flagship resort in Bali. I have always loved Bali, especially its culture and traditions.

Q: Can you share what made you decide to move home?

A: After more than 20 years abroad, I decided it is time for me to come back and share my knowledge and experience, and to help develop young hoteliers in Indonesia.

Q: Anantara Ubud Bali Resort is a brand-new property, in your own words, what can you tell us about the concept and what guests can look forward to when staying at the resort?

A: A graceful, tropical sanctuary hidden deep in an untouched forest, Anantara Ubud Bali Resort invites guests to experience healing moments of serene contemplation while making enriching discoveries that foster a connection to the Balinese way of life.

Q: It is always exciting and challenging at the same time to be part of a preopening team. How do you feel about leading the pre-opening team of a gorgeous property like Anantara Ubud Bali Resort, and how important are these early stages of development?

A: The hospitality industry is a people business, finding the right local talent to work together and learn from each other to open Anantara Ubud Bali Resort is the prime foundation. It is always exciting for me to develop a rural area, especially in Desa Puhu, Payangan, Bali.

Q: Your background also shows an enviable track record in the food and beverage industry. Can we expect more attention from you in terms of the hotel’s F&B operations?

A: Absolutely! We are currently working passionately to launch authentic regional Indonesian cuisine and create culinary

experiences like no other. Please stay tuned for more culinary offerings from us at Anantara Ubud Bali Resort.

Q: How would you describe your management style?

A: As part of the Minor Hotels I believed in five values, which are customer focus, result-oriented, people development, innovation and partnership.

Q: As a seasoned hotelier, could you share the highlights of your career so far?

A: In 2016, I received Minor Award of Excellent for extraordinary efforts and was also the only Indonesian general manager to work outside of Indonesia. And now? I am happy that I am part of the opening of Anantara Ubud Bali Resort.

Q: Now that you are back in Indonesia, what goals do you have for the resort?

A: To place Anantara Ubud Bali Resort on the world map and to be recognised by top world-renowned accolades, and to introduce Indonesian cuisine to the world.

Q: Where do you imagine yourself being if you hadn’t started a career in the hospitality industry?

A:  As a lawyer! I have always been passionate about law, and I even went to law school before ending up working in hospitality.

Q: Last but not least, what advice can you give to budding hoteliers and hospitality professionals trying to make it big in the industry?

A: Young hoteliers who are trying to make it big in this industry need to have passion and the will to keep learning. There are many aspects to learn and know in this field, so it is important to be consistent if you want to achieve that goal. Lastly, do everything with humility and be fully dedicated.

Falling in love with Indonesia almost two decades ago, Shaun Dünhofen believes that a leader cannot succeed by doing it alone. The newly appointed, South African-born leader is general manager at Uluwatu’s most renowned resort, and couldn’t be happier to make Indonesia his second home for the second time.

Q: How would you describe yourself? What makes Shaun Dünhofen tick?

Q: Can you briefly share the story of your career so far, and how you ended up at Karma Kandara?

A: I have been in the hospitality industry for more than 22 years now, and had the opportunity to slowly transition into understanding the industry. My journey in Asia started in Yogyakarta, which opened my eyes to creating experiences for guests. I then moved to Bali, India, Sri Lanka, Thailand, The Maldives, South Korea and China. It’s lovely to be able to come back here with Karma Kandara, and have the opportunity to take this flagship resort to new heights and create new experiences for our guests.

Q: You have an enviable track record in the hospitality industry, has it been your passion all along?

A: I grew up in the industry. Working with people and assisting them in developing their careers is my passion, as well as working through people to get the best from the products and the place, also working with the community. I have thoroughly enjoyed every step of this beautiful journey.

Q: Bali has seen a boom in high-quality hotel and villa openings over recent years. Why will Karma Kandara be a favourite?

A: Karma Kandara is very lucky to be situated in the south, in Ungasan, with amazing sunsets and a crystal-clear waters of a soft sand beach. The natural limestone hills surrounding Karma Kandara allow our guests to do a lot of walking, just going from the villa to the restaurant is a good five to 10 minutes of exploring.

Bali as a whole is absolutely stunning, there are a lot of arts and crafts, but it’s more about the people. Many years ago, I came to Bali and fell in love with the place. Now that I am back, we try to look at a lot of community programmes and see how we can support through Karma Cares. We also try to integrate the arts and creative elements through our Artist Residency, thus creating experiences. For this, Bali as a location is one of the most amazing destinations.

Q: What made you come back to Indonesia?

A: I absolutely love being in Indonesia and being among the people. Bahasa Indonesia was the first Asian language that I learned, and I had the opportunity in Yogyakarta to integrate well into the culture. I have always loved the different religions in Indonesia and, with some understanding, I have been able to assess each of the team members we work with. Indonesia opened my eyes and heart, so when I go travelling, I feel very comfortable everywhere. Coming back to Indonesia, after all that it has given me, I am taking strong hold of the opportunity to give back through time, effort and patience for each of member of our team, for the community, and even the company.

Q: You’ve spent quite a long time in Asia, what do you think about Indonesian tourism and its competitiveness in Southeast Asia?

A: Well, we’ve got a wonderful opportunity in Indonesia, and Asia in general is starting to really pick up. At Karma Kandara, I am very proud to

A: I am a very simple, humble person when it comes to expressing what I like in life. I am a character who is passionate and driven and has people at the centre of what I do. I am also very open-minded, diplomatic, and because of all of these factors, I try to embrace family, my own and, Karma and the team members and their families who are close to me.

Q: Do you have any advice for foreign GMs who want to work in Indonesia?

A: Embrace the culture and embrace the food. Wherever you go, understanding that will take you one step further. I believe in assisting and improving the people and the community around us. So, my advice to any manager is that a true leader takes the opportunity to look at the personalities and characters around them and identify what needs to be done with the product, how we can make it a better place, and to allow people to have the time to grow around you.

Q: What does the future hold for you?

A: The future for me is my current situation, meaning today. I believe that what we do today becomes the future, and what I strive for is that people around me enjoy being with me and the property each day. I look at what we can do to build a great network and friendships, and if we haven’t met, I look forward to meeting you because I do take the time to listen, as much as I do love to talk.

A Year in the Life OF PLAZA INDONESIA

One short year showed that a lot of things can change, expand, and glow. After a temporary pause because of the pandemic, the legendary Plaza Indonesia came out of its shell to shine even brighter.

During its short life, the pandemic brought many favourite pastimes to a halt. Retail shopping, even in a shopping mall mecca like Jakarta, was forced to stop. So, when the world finally opened up again, shopping centres were brought back to life, embracing the return of their millions of fans by bringing all pending plans and agendas forward.

With the re-opening, Plaza Indonesia started welcoming prestigious new tenants, such as Ferragamo. Curated Indonesian brands like Pillar can also be found at Plaza Indonesia, on top of Calla the Label, a Bandung-based

Several exciting activations in collaboration with brand tenants also brought the mall back to life, including the celebration of National Batik Day around Jakarta landmarks with a week-long batik exhibition. Plaza Indonesia also joined the World Cup euphoria when Hublot launched a series of new watches in its pop-up store, paying homage to sport, the participating countries and the quadrennial event itself.

Dimas is known on social media platforms as Dimsthemeatguy, his channel dedicated to his love of quality meat. Nearly all of his content is about the beauty of meat - from trivia to cooking, testing recipes, trying different grades of beef, experimenting with various methods of preparation, and, of course, eating his creations in pure bliss. He sometimes take challenges from his followers, or does a collaboration video with fellow foodies and cooks.

After gaining millions of views and followers, last year Dimas took his infatuation to the next level when he fulfilled his dream and opened Meatguy Steakhouse. Inspired by the robust and classy New York-style grills, his restaurant is a modern venue that combines industrial and minimalist styles, with posh, dark elements in the marble and wood. In one corner, there’s a large dry-age showcase refrigerator displaying an extensive collection of meat undergoing the dry-aging process. The venue interior is dimly lit to focus all the attention on the main attractions.

Dimas hasn’t held back in constructing his menu to highlight meat, everything on it has beef, including the Caesar salad which has grilled tri-tip. Simply put, apart from the desserts, sides and sauces, everything else on the menu has beef in it.

Clearly due to his journey to fame, other than the impressive meat selection, Dimas himself is the restaurant’s main attraction.
