Secrets from the Mozaic Kitchen

T

hese days, as people stay home, more and more are turning to cooking and discovering the joys of crafting exciting, nutritious dishes in their own kitchen. Chefs are supporting this move and helping amateur home chefs to up their game by sharing their own recipes and kitchen tips, including Master Chef of France Chris Salans from Bali’s renowned Mozaic gastronomic restaurant. Chris has been sharing tips, including keeping produce like fresh herbs and lettuce fresh for longer in the fridge by storing them in a cloth bag or wrapped in a slightly moist paper towel. He also notes that eating healthy supports the immune system, which means you can fight off infection and stay strong. Indonesia is home to a multitude of health-boosting spices that are easy to access, like ginger to warm the body and fight off chills, turmeric to improve endurance, and cinnamon, which is not only an antioxidant but also has antimicrobial and anti-inflammatory properties.

At Mozaic and Spice by Chris Salans, plenty of spices are used to amp up the flavour and boost health, including in the drinks. At Spice, guests enjoy the Energizer Mocktail, a refreshing drink served over ice, made by juicing two pieces of red or green

Mamaka by Ovolo Coming to Kuta

volo Group, a design savvy company with hotels in Australia and Hong Kong, is opening on Kuta’s beachfront in late 2020. Famed for its playful aesthetic and design-driven style, the Ovolo brand has unveiled its By Ovolo Collective, where each hotel will be unique, special and have plenty to explore. A newcomer to the culinary scene in Indonesia, Marco Violano has honed his skills in many luxury kitchens around the world. Before moving to Indonesia, the Italian from Puglia was part of the team awarded one Michelin star for both Mio and Cai Yi Xuan restaurants at Four Seasons Hotel Beijing. – By Rizky Adityo : How would you describe your style of cooking? Marco Violano: For me, cooking is like composing a song, where each note has to complement the others. In this case, the notes are the ingredients, which are brought together to create such diverse and exciting flavours. Although my style of cooking is very traditional, I still try to be mindful to a certain extent of the current trends. Cooking is also like art, where the art of plating plays a big part too. : Being Italian, how big of an influence is your family cooking on your own creations? M: It influenced me a lot! I was born and raised in the south of Italy, where the heart of the house is the kitchen. As a family, we always hang out in the kitchen, it’s like being born there. The lives of Italians usually revolve around food and the kitchen. I learned how to cook from the women in my life, because my mother and grandmother are prime examples of Italian housewives who prioritise cooking and taking care of the family. : Do you still remember the first time your mother taught you to cook? M: I do. I was very young and always trying

to help my mother in the kitchen during school breaks. Then, when I was 14 years old, I got a job at a pastry shop below our house. I worked there for four to five years and learned a lot. As I grew up, my father wanted me to go to school and into business, but I quit and now have been working in the kitchen for almost 27 years. : You have travelled the world and tasted many different cuisines, what is the most interesting food that you have ever eaten? M: Personally, my grandmother’s eggplants will always be my favourite food. But when I moved to Malaysia, I discovered the beauty of Southeast Asian cuisine. I also love everything that is raw, like sashimi, because you really get to taste the true flavour of the food. : As an executive chef, you have the freedom to create a whole new different experience for diners. Do you see that as a challenge? M: No, because the most beautiful thing that can happen as a chef is to create new dining experiences for guests. I personally believe that as a chef, I have the responsibility to introduce new flavours to my guests. Of course, it can go both

ways, where one might like it and another doesn’t. I take that experience and make myself do better as a chef. Being the executive chef means you have a team that is willing to work with you to create something magical. Good teamwork is the key to a happy kitchen. : Who has been your biggest mentor in the culinary world? M: I would have to say Sergio Mei. He’s a chef at Four Seasons Hotel Milan. He told me that every ingredient has a soul and needs to be respected. He is also very famous in Italy and has written around 12 books. : Indonesia has a bountiful choice of exotic spices and ingredients, is there one specific thing that you have been trying to conquer or use? M: I would say kaffir lime. The smell of it is very addictive to me. : In your own words, what is the best thing about being a chef? M: The freedom of creativity in the kitchen. When you are working in the kitchen, there is always excess food that you can turn into something great. For example, we had some extra tofu that we recreated into a delicious dish. : If you had to choose only one dish to have for the rest of your life, what would it be? M: It would still be my grandmother’s eggplants. The dish itself is very simple, she uses leftover eggplants and leftover bread with fresh basil and tomatoes, with raisins on top. Just thinking about it brings me back to my childhood. My grandmother is 98 years old and she still cooks. Whenever she’s cooking, nobody dares to bother her! : Do you have any advice for budding chefs? M: My advice is to have a good balance between your work and personal life, but when your work life becomes your life then it’s best. And also, never give up and don’t waste your time. Renowned chef Yuda Bustara honed his skills in prestigious bistros and fine dining destinations in Malaysia, and the Crown Casino Hotel in Melbourne, Australia, before coming home to Jakarta to help his father’s vegan restaurant. Currently the Culinary Diplomat for Indonesia, Yuda is also famed for his TV show Urban Cook on the Asian Food Channel and his collaborative private dining service Tree Food Concept. In his spare time, he shared what it’s like to adjust to living at home. – By Runi Indrani : How much has your daily life changed with this situation and the stay-at-home appeal? Yuda: It has changed a lot. As a chef, I went from working in a commercial kitchen to having to stay at home. I can’t even shoot for my TV shows and my YouTube channel, so everything has to be postponed until the WFH (work from home) appeal ends. That being said, I always try to be productive by creating new recipes or short cooking videos that I can post to provide content for my followers. : In a time when maintaining a healthy lifestyle is paramount, how do you implement this in your life? Y: As someone who handles food for work, it’s always important to pay attention to personal hygiene. Since I work in a commercial kitchen, I’m used to paying extra attention to clean nails and wearing

a hairnet when cooking. I carry these kinds of habits into my daily life, including washing my hands before preparing food. In terms of the food I consume, I try to choose that with higher nutritional value. Many people prefer to eat instant food at home, but I think nutritious fresh goods are what we need.

Y: Sop buntut, nasi goreng, or even just corned beef and sunny-side-up egg. Ever since WFH was implemented, I have limited going grocery shopping to once a week, so I choose simpler ingredients. As most people would, I choose to cook my meals myself to make sure they are clean and hygienic.

: What activities do you like to do now that you have to stay at home? Y: I’m not an expert in producing my own cooking videos, but the situation has encouraged me to learn to do this without my team. I try to upload one new recipe video daily, showcasing simple and healthy food on my Instagram account @yudabustara. I want to encourage my followers to learn how to cook.

: Do you have any kitchen tips for the readers at home? Y: Learn to cook or try anything new during WFH. You can organise your kitchen so that it’s neater and more efficient, or try arranging meal prep to make your daily activities easier. I usually go grocery shopping once a week, I cook all the ingredients, pack them in containers, and store them in the freezer. Any time I want to eat, I just reheat the food. It’s really practical compared to having to cook each and every single day.

: What dishes do you like to cook at home?

To season • Green onions, chopped • 1 tsp salt • 1 tsp pepper • 1 tsp sugar Method: 1. Put all main ingredients, excluding seasoning, in the rice cooker. 2. Add 1 litre of water. 3. Set the rice cooker to cook and cook for two cycles. 4. Add chopped green onions, salt, pepper and sugar. Stir well. 5. Add fried garlic right before serving.

This includes stints in Michelin-starred restaurants, luxury five-star hotels and as a contestant in The Final Table on Netflix. Previously, for his Rafa’s Private Kitchen, he created masterpieces for discerning gourmands. Now, during this uncertain situation, he is posting recipes daily on Instagram (@rafafgil). Exquisite Taste talked to him about enjoying staying at home. – By Amanda O’Connor : You’ve been posting delicious comfort food recipes on your Instagram, often with your young daughter helping out. It looks like you’re having a lot of fun during lockdown. Rafael: I’ve actually started cooking with my daughter because of the lockdown. All the facilities where we live have been closed, so I can’t take her to the playground or even swimming. So I decided to try involving her with what I love to do. The big surprise for me has been discovering her own passion for cooking. It’s been great fun to see how she has reacted. She loves copying me, especially with making bread! : What are you cooking at home for your family during lockdown? R: I try to cook a bit of everything, including what I am posting on Instagram. R: I think that one thing we are all learning so that we can stay safe from the virus is that we have to strengthen our bodies and our immune systems now. Eating only junk food and heavy comfort food without much protein and good nutrition is just not good for us. We have to eat healthy, nutritious food. At home, I eat a lot of rice, but we cook it half and half combined with quinoa so that it has plenty of protein too and is not entirely carbohydrate. I also eat a lot of fruit at home, this is very common in Brazil and easy to do in Indonesia, too. It is also important to eat lots of salads and vegetables. Nowadays it is very easy to get things like chia seeds – and other such seeds – in the supermarket. This is what I do at home.

: Have you discovered any new hobbies while you’ve been staying at home with your family? R: I have never watched much TV because my life in the kitchen is really busy, but now I am discovering Netflix. Being at home with my family all the time means that I am finding out what my daughter loves to do. I’m playing games with her at home, like hide and seek, and other simple games. This is the beautiful thing from this lockdown. : What do you do to stay positive at home while we are restricted from going out? R: These restrictions have meant that we can focus on our family and our home, whereas before we didn’t have the time and our focus was more outside the house. Spending time with my wife and my daughter, talking to them and doing things together is the best. I can take the time to do things that make them happy even when we are spending our entire time at home.

4. Add the chocolate pieces and stir in until well mixed. 5. Take 100g to 125g cookie dough in your hand and shape into a ball. Place on a baking tray lined with parchment paper. Repeat until all dough is finished. 6. Place in the freezer for at least 1 hour. 7. Preheat the oven to 200C, with a baking tray with parchment paper in the oven. Place the frozen cookie dough balls onto the baking tray, leaving plenty of space between them. 8. Bake for 17-20 minutes. 9. Remove from the oven and leave to cool for about 15 minutes.

Vindex: I am loving this time at home because I get to spend it with my family. Since the lockdown, we have been cooking together more, especially lunch. Besides that, I’m still doing my F&B consulting at home, as well as selling baked goods, which are freshly made every day. I have also been getting a lot of requests to create online cooking lessons, so I am trying out live sessions with my followers on Instagram. Korean Fried Chicken Ingredients • 800g chicken, cut into 10 pcs Batter: • 128g all-purpose flour • 3 tbsp corn starch • 1/2 cup water Sauce: • 1 tbsp sesame oil • 1 tbsp garlic paste • 1 tbsp ginger, grated • 4 cups water • 3 tbsp sugar • 3 tbsp BBQ sauce • 2 tbsp Gochujang (Korean chilli sauce) • 1 tbsp light soya sauce Method: 1. Make the batter by mixing all ingredients in a bowl and set aside. 2. To make the sauce cook sesame oil, garlic and ginger for 40 seconds in a microwave or in a saucepan. 3. Mix the rest of the sauce ingredients with the garlic and ginger sesame paste.

4. Fry the chicken twice. First dip lightly in batter and fry in mediumhot oil until cooked and light brown. Drain excess oil and set aside. 5. Then, once again, dip the cooked chicken in the batter and fry again until golden brown. Drain excess oil. 6. Dip the still hot twice-cooked chicken in the sauce to glaze. It is ready to eat, however, if you want to caramelize the glaze, then place the glazed chicken on a tray and bake in the oven at 180C for 10 minutes. 7. Serve hot with steamed rice. 33

As the executive chef of The St. Regis Bali Resort for many years, he has won the hearts of many discerning diners and, yes, awards and accolades too. Now that he is spending more time at home, he shared his favourite activities, as well as a recipe too! – By Runi Indrani : How has the stay-at-home situation changed your daily activities? Agung: There have been quite some changes, obviously I spend more time at home now, although the hotel is still open. The positive outcome of this situation is that I get to spend more time with my children, as opposed to when I spent more time at work. : What kind of activities do you do now that you spend more time at home? A: I like being busy, that’s what keeps me motivated. I like to keep in touch with my team and to motivate them, it’s really important for me to strengthen their mentality. I also like to share some food pictures on my social media to fill my time. Cooking is not only my profession but also my hobby, so that’s what I do at home, and

I get the chance to teach my kids to cook something simple and basic, and more importantly, to have fun doing it too.

I exercise in the morning by walking around my housing estate for 45 minutes. With the extreme weather we have been having lately, we must remember to drink a lot of water. Eat well, have enough rest, and don’t give in to laziness! Consuming balanced nutrition can help you be fit. Most importantly, don’t forget to maintain personal hygiene.

: What kind of dishes are you teaching your kids to make? A: Basic breakfast eggs any style, pasta dishes, and simple baking that we do together. Pan-Seared Red Mullet Fillet With Heirloom Tomato, Leek, Shimeji Mushroom, Onion Petal, Cilantro and Lemon Butter Sauce Ingredients: • 150g red mullet fillet • 1 heirloom tomato • 2 organic leeks, steamed and cut in half lengthways • 50g shimeji mushrooms, cleaned • ½ baby onion • 25g cilantro • ½ lemon • 50ml white wine

1 clove of garlic 50g unsalted butter olive oil salt and crushed black pepper

Method: 1. Season fish with salt and pepper, and pan-sear in olive oil. Make sure the skin is crispy. Turn when the fish is 80 percent cooked and keep to the side of

that pan. Add chopped garlic and sauté until fragrant. Then add wine, continue with butter and lemon juice. Finish with chopped cilantro. Spoon lemon butter sauce quickly over the fish, then remove from stove. 2. Heat pan and add olive oil. Pan-sear tomato first until it is well roasted. Do the same for the mushrooms, onion and leek, then season with salt and crushed black pepper. 3. Arrange the vegetables on the plate and place the fish on top. Drizzle with lemon butter sauce and garnish with fresh cilantro. Long-time Bali resident and renowned chef Maurizio Bombini opened his own restaurant, MAURI, in 2018, after a stellar career in the kitchens of various five-star luxury hotels. An immediate hit, running MAURI has meant that he is always busy and on his feet. Exquisite Taste asked him how he is adjusting to the new normal. – By Amanda O’Connor : What are your daily activities now that you’re spending more time at home? Maurizio: I try to maintain a routine. I do yoga in the morning three times a week with my wife and I keep my mind busy as well! I brought all my books and my computer home so I can concentrate on creating new menus for when MAURI restaurant opens again, as well as for our new concept, MAURI AT HOME. It requires a lot of research and time to find the right dishes that can be delivered outside the restaurant while maintaining a high quality. After my work hours, I spend my evenings cooking traditional dishes and simple recipes at home, watching TV series that I never had time to watch before, or walking our dogs around our home.

: How are you managing to stay healthy while at home? Could you share some tips? M: I try to avoid heavy meals and stick to a Mediterranean diet, avoiding processed food, fried food and fatty sauces using butter or cream. My tip: try to prioritize recipes with 80 percent fresh vegetables and 20 percent animal protein, like chicken or fish, and eat fresh fruit.

As a child, staying home when the restaurant was closed was a very special time. Today I feel exactly the same. : What is your favorite comfort food these days? Would you mind sharing the recipe? M: Pasta with seafood. When I have the chance to do the grocery shopping, I especially buy fresh seafood and fish to prepare my favourite seafood ragout pasta.

: Have you discovered any new hobbies while you’ve been at home more? M: Not really! I’m actually still busy with the new concept of MAURI AT HOME and working on new ideas for MAURI restaurant to prepare for the re-opening. Cavatelli Seafood Ragout Ingredients Cavatelli Dough • 300g pasta flour • 150g semola • 250g water • 10g olive oil, extra virgin • 5g Salt Seafood Ragout • 200g Manilla clams • 200g wild shrimp • 200g octopus, cooked • 200g squid • 50g cherry tomato, diced • 20g garlic, crushed • 1500g lobster stock • 150g clam stock • 10g basil • Salt • White pepper Lemon Zest Candy • 3 pcs lemon skin • 200g water • 50g sugar COMPONENTS : • • • • • •

Cavatelli dough Cherry tomato Clam stock Prawn stock Seafood ragout (shrimp, squid, clam, octopus) Chopped parsley

Method Cavatelli Dough 1. Mix together flours and salt on a clean surface. Make a well in the centre and gradually add the water and oil, working flours into the centre until a dough forms. If the dough is too dry, add more water. Knead dough until smooth and it springs back when gently pressed, about 5 minutes. Rest for 30 minutes. 2. Sprinkle 2 rimmed baking sheets with semolina flour. Divide dough into 8 pieces; keep covered with plastic wrap. Roll one piece at a time into a long rope, about 85mm in diameter, then cut rope into 85mm-long pieces. Using tips of index and middle fingers, firmly press each piece and pull dough toward you so it lengthens slightly and forms a curl in the middle. Transfer pieces to baking sheets. Repeat with remaining dough. 3. Cavatelli can be refrigerated, covered, for up to 4 hours. Or freeze on the sheet; once frozen, transfer to a resealable bag and freeze for up to 3 months. There is no need to thaw before cooking. Seafood Ragout 1. Saute the clams with crushed garlic, for 30 second , deglaze with white wine and cook until until the clams are open, strain the stock, keep separately and leave to cool. 2. Cook the cherry tomatoes over a medium heat, add lobster and clam stock 3. Dice the shrimp, octopus and squid into

small pieces and marinate with extra virgin olive oil, salt and white pepper. 4. Pan-fry the garlic until golden, then add all the seafood. After few seconds, add seafoodtomato sauce and cook for 1 minute. Then add remaining seafood. Lemon Zest Candy 1. Julienne the lemon zest. 2. Quickly blanch 3 times in boiling water. Then blanch in sugar syrup until cooked. 3. Leave to cool. Final Step 1. Cook the cavatelli in saltwater for 3 minutes. 2. Mix with the sauce and cook for another 3 minutes. 3. Transfer onto a plate and garnish with lemon zest candy. SERVES 5 39

: How are you doing with the current situation and having to stay at home? Jennifer: The current situation isn’t easy. The whole world, and all of us, are affected by the circumstances. That being said, we should stay happy, healthy, active and also mentally well during selfquarantine. : What’s your secret to a healthier lifestyle? J: I have been a vegan for around three years now and I’m loving it! My body feels great, I feel strong and happy. Currently my exercise routine is my own home workouts, which I post on my YouTube channel under my name. I’ve made a workout plan for each week, starting the end of March, so that my followers can join in and stay active. The videos are short yet effective workouts that everyone can do from home. They start from a quick 10-minute booty workout, to a quick HIIT session, and much more. I try to implement my lifestyle with my children, and they love it. You can see in some of my videos that my son and daughter join my workouts.

: Do you have any tips for those who would like to maintain a healthy lifestyle? Jakarta and Bali have had to close down for now, but we are trying to look for other ways. People can still shop online or use our personal shopper facility. Our restaurant Biku is open again today for takeaways and delivery. Guests can also dine in, so we try to make it as comfortable as possible – with hand-washing facilities at the front, enough distancing and paying attention to cleanliness and hygiene. Yes, my life is going through changes, I only go out if it’s really urgent, and even so, I take precautions, like wearing a mask, bringing a hand sanitiser and washing my hands whenever I can. That said, I try to refrain from being over paranoid, so that I have mental wellness too.

Happy Salma Actress, writer and mother Happy Salma is known for her theatrical works, among other things. Now that she has to stay at home, she shared some stories about the changes she’s facing and how to have fun with the family. : How did the challenging situation of having to stay at home change your life? Happy: I have to face many changes due to this situation. I was supposed to be in a play this April, but it has been postponed. Anything that involves a large number of people gathering in one place, I have put off until further notice. Our Tulola shops in

: What do you do to keep active while staying at home? H: The good thing about the quarantine is that I have more time to spend with my children. I’m kept busy trying to entertain them, while also doing my job online. Since we have a printer at home, I like to print out photos of my family and frame them. I also find time to finish reading books that I meant to read. Even before we got into this situation, I’ve tried to make eating healthy a habit, by choosing foods with more protein, eating more vegetables and fruit, and drinking more water. I do pilates regularly, sometimes with my husband, who teaches me the movements. My children love Zumba for kids, and I like to join them in the morning, and swim with them in the afternoon. : Do you have any tip to be stress-free staying at home? H: The stress level of each person is different from others because everyone has their own needs. The important thing that we need to remember is how we respond to the stress. When you’re stressed, often your body tries to tell you that with a migraine or such. When that happens, respond accordingly, by slowing down, for example. Take time to recognise how you feel and what you need. Try to fulfil what you need in moderation if some adjustments are needed. Humans need to detox, and I like to think that this is the way nature reminds us of that. @happysalma

Didi: I’m not going to lie, it has taken a while to adapt to this

I would also like to encourage people to educate themselves about what’s going on. Although we have social media, not everything there is the truth! Find reliable sources and learn why staying at home or physical distancing is needed at times like this. We can easily help the world heal more quickly by staying inside. Another thing to mention is to stay away from people or group chats that make you feel bad and think negatively. It’s better to live a stressfree life rather than putting up with fake news and hoaxes. : Do you have any new hobbies that you have developed while staying at home? D: Not so much new hobbies, but it’s nice to have your chores done and still have time to relax afterwards. This free time at home is like a blessing in disguise, not because of having more time, but because I get to pay more attention to everything in my house. I also help distribute masks for free and am actively involved in getting donated funds to the communities that most need them during this pandemic. : Please share your tips on what to do to stay positive at home. A: I keep a positive mind set by always trying to set a target each day, whether it’s reading a book, or doing a physical workout. This way, there is always a positive change, no matter how small, but the change is there each day. Psychologically, we feel good after a task or target has been reached.

Having to stay at home has brought big changes to his day-to-day activities, but he shares the silver lining with us. : How has the stay-at-home situation changed your daily life? Ari Wibowo: It has been an easy change to be honest, as I have always enjoyed the comfort of my own home, as do my wife and kids. I do miss being more productive with my time; previously, as an actor and restaurant owner, I would normally spend my days either involved on shooting locations with casts and crew, or at the restaurant mingling with my guests. I also miss riding my motorcycle, touring with my friends. Indonesia is so beautiful, there is so much yet to explore. But for now, it’s not about me, it’s about the common good, and for that, we all need to remain at home, for the safety of all. : What is the first country you want to visit after the quarantine is over and why? A: Germany, it’s the country where I was born, and where I spent all of my childhood. I want to show my kids the castles, the forests and the beautiful cities. They have never been there. L: Every weekend my family used to eat out just to get a new and different ambience from home, but now we can’t do that. We tried ordering in the food we wanted, but it’s just different, we didn’t get the new ambience and the food wasn’t really as fresh as when it’s straight from their kitchen. I also miss going around the mall during the weekends and meeting up with my friends. : What is the first country you want to visit when the situation returns to normal and why? L: My kid goes to school in London and we were planning to go there to take a road trip around the UK this May, but of course it has had to be postponed for now. When the situation is back to normal, I will send my kid back to school and do the road trip as planned.

Lay Diza Larentie: Of course, there are many changes. From the business point of view, there are a lot of people who have to work from home now. We try to make the best of Zoom for meetings. Previously, when the sales force wanted to provide service to our customers, they did it face-to-face or by phone, now we use Zoom to instead. I still go to the office to work, but I try to use all the necessary safety procedures, like wearing a mask and applying social distancing. I don’t really feel much difference in my dayto-day activities until the weekend... I used to go to the gym to practice yoga, now I do yoga at home following yoga instructors on YouTube. Another change that I have noticed is that I’m back in the kitchen baking cookies like kaasstengels after probably 20 years.

: What tips do you have for people out there to stay positive and healthy? L: I believe that hardships will end; there’s always light after dark and a rainbow after the rain. I believe the most important thing is how we get through the difficult situation. We need to be optimistic, stay positive, and keep thinking about what we can do, be it in the family or in business. On the business side, with these limitations we need to be creative to find opportunities. Sometimes good ideas are born during tough times, like now. As long as we’re optimistic, there are always opportunities that we can grab. I also think that we need to contribute in any kind of form, don’t just sit there and do nothing. To maintain your health and fitness, don’t go out if you really don’t have to. If you have to, wear a mask. For me, the most important thing is getting enough sleep, so that I can stay fit and not easily fall sick. Plan your meals to get more nutrition, eat enough, choose food with higher protein and avoid junk food. @dizalarentie

: What banking products would you recommend that your customers use during this situation? L: With this kind of large-scale social distancing, many of our customers’ incomes have decreased. Many businesses can’t open at this time, except for specific industries. So customers need flexible funds standing by. If that’s the case, I would say conventional products like savings and short-term savings deposits are good options. Short-term because in this kind of situation we’ll never know what we need to anticipate and how long the situation will last. For customers who have saved enough funds for a longer term, bonds are one of the good options for investment. Mutual funds are

: Do you have any tips to maintain a healthy lifestyle? A: I just purchased a static roller for my bike and use it every other day. I also go swimming with my kids quite often, especially in the morning to get some sun exposure. Eat healthy food and plan what you eat, so you don’t get too much more calorie intake than outtake. : What do you miss the most from your normal life? A: Being able to go to places that I normally visit, whether it is just casual dining, going to the movies, or socializing with friends. But I believe we will all be able to do this again soon, as long as we follow all the health protocols. We will be rejoicing about life once again in no time.

: What is the first country you want visit after the quarantine is over and why? A: I love Japan. I love its culture, I love its food, I love everything about it. As I just opened up a new Japanese restaurant, Aburi, last December, I feel the need to go to Japan to look for new dishes to be recreated at the restaurant. A: I have a lot of free time to study what I’ve been wanting to learn, of course online. I am currently subscribing to masterclasses, photography class, as well as videography class, something that I have been really keen to do for some time. P: I love that I get to spend a lot of time with my family and experience what it’s like to be a stay-at-home mum. The kids now do school and lessons from home. This means I actually get to sit next to them while they are doing this. I also get to spend more time with my husband, who used to travel a lot. Now we explore a lot of movies or TV series together, and every now and then, we even do things with the kids that we have not done before, like baking, playing badminton and playing games such as Pictionary.

P: Exercise regularly, at least four times a week. Watch what you eat, easy on the carbs, plenty of veggies and fruits and limit junk food. Take your vitamins. It may sound like a cliché, but I do find clarity in finishing tasks and crossing things off a list. : Please share your tips on what to do to stay positive at home. I: No matter what the situation is, in life you have to think positively and see the good side. I have been distancing myself from news that is too depressing because most of it is not true. From the way I see it, the world needs time to heal because many people have been abusing it. There’s nothing more that I can do other than pray to God for a better outcome soon and give thanks to Him for protecting me daily. : Do you have any tips to maintain a healthy lifestyle? I: Every morning, I sit on my patio and soak in the morning sun, as it is recommended that we get more vitamin D. I also exercise regularly on the treadmill or take my dogs out for a walk around the housing complex. I have also been drinking jamu and juices daily to help boost my immune system. With the current condition, I have been trying to live a healthier life and to take a good care of my health.

Irma Djohan Managing Director of Legian Hotel Management (LHM) and one of the founders of Bali International Flight Academy (BIFA), Irma Djohan is adapting to a slow-paced life during lockdown. While it took some time to get used to this new way of living, she is now enjoying being indoors and reexploring an old hobby, cooking.

: What do you miss most from your normal life? I: Being able to spend time with my friends and family on the weekends! And also travelling, because it is a passion of mine. : What is the first country you want to visit after the quarantine is over and why? I: I would love to go to Vietnam. Maybe because I have never been, and my company has been approached to expand The Legian brand there. Irma Djohan: The first week of social distancing and staying home was frustrating, but then you see the positive impact it has on your life and our surroundings and learn to adapt to this new kind of life. You never really can stay home to relax and reflect on what you want to do or what you need to do for yourself and your family. Now is the time that I can really enjoy my own time, keep myself occupied and spend quality time with my family. We now live in a modern era, where you can stay home and still be productive and manage your business effectively from home. : What activities do you like to do now that you have to stay at home more? I: I always try to keep myself busy. On the second week of lockdown, I organized a little fundraising to buy basic staples to be distributed to street vendors, online drivers, taxi drivers and to the people who need it the most. We fully understand that there are many people who are being affected by the situation right now. Other than that, work is still ongoing by communicating through video conference apps. I’m also using this time at home to read more books and watch TV series that are available on Netflix, but I try to stay away from the Korean dramas as I heard they can get very addicting. And I have been cooking again, which is something that I enjoyed before life got very busy.

L: I wake up at the same time as when I go to work every morning. and during the morning I do my office work by video call or email. During lunchtime, I do physical exercises in my room. L: Usually, I drink at a restaurant with my colleagues for dinner, but now I have dinner with my family at home every day, so I have more time to talk with my family without drinking. Having to stay at home doesn’t hinder his lively spirit. Here he shares with us his great tips to keep the body and mind healthy under these circumstances. : How has the stay-at-home situation changed your daily life? Renaldi: While my daily routines have changed, I realised that working from home can be just as productive as normal office-based working. Of course, prior to starting WFH (work from home), we made preparations to make sure almost 100 percent of our work could be done from home. It also helps that the workload is low since PSBB (large-scale social distancing) is affecting everyone in Jakarta, and the world (our principals in Europe also have their own form of PSBB). On a more personal level, I feel that the quality of my relationships with family members has improved since we are spending more time together. Oh and the big plus, I spend less money now. Hahaha. : What activities do you like to do now that you have to stay at home more? R: I get to do my online simulated racing more! : Please share your tips on what to do to stay positive at home. R: As with many cases, stress comes when reality is not in line with our expectations. So the main trick for handling PSBB positively is to be content with the situation, accept that things will change and prepare for the change. Accept that malls and places we like to visit are closed, accept that activities we like to do are temporarily halted, etc. Just as important, sincerely thank God that we still have our health, plus we now have the likes of Internet, WhatsApp, Zoom, Gojek, Tokopedia, Netflix,

YouTube, to make staying at home far less boring than it could have been. We need to will ourselves to stop stressing, because stressing will not change the situation, only our mood – and ultimately our health. : Do you have any tips to maintain a healthy lifestyle? R: First, the mind controls the body, so keep the mind healthy by being content. Second, do physical exercise. If we have no exercise equipment at all, even something as simple as skipping without a rope for 15 minutes will burn more than 150 calories. Need something more rigorous? If you don’t know them already, Google burpees and do three sets of 15. That should get your heart rate going. Third, the body needs fuel – good fuel. So when you eat, note your protein, fat and carbohydrate intake. Try to reach an easy balance of 50 percent carbohydrate, 25 percent protein and 25 percent fat. Of course, reduced fat is better, if replaced by more protein. Start counting calories, don’t take in more than 2,000 calories a day if you are 75kg like me, calculate proportionally to your bodyweight. Lastly, the body needs rest. Since we are staying at home, there is absolutely no reason for not getting our seven to nine hours of sleep. Will yourself to return to the office looking better! : Since you have to stay at home more, what do you miss most from normal life? R: Sitting in the passenger seat next to my daughter while she gets more experience driving in traffic. : What is the first country you want to visit after the quarantine is over and why? R: Honestly, I am hesitant to visit any other countries until months after the pandemic is over. @aldihutasoit

Sylvain Pasdeloup Now in Bali for eight years, Sylvain's career first brought him to the island on a mission for the pre-opening of Sofitel Bali Nusa Dua Beach Resort and to prepare for the APEC conference being held in the hotel. Sylvain Pasdeloup: I guess it has changed everyone’s life a lot. For my daily life, I personally find myself more aware of health

Eat healthy plant-based food, do routine exercise, stay hydrated by drinking lots of water, make sure you have enough sleep and socialise with your loved ones. S: The things that I miss the most from normal life are chilling out with my friends and going travelling, discovering new places, learning a new culture and simply just enjoying nature. S: France will absolutely be the first country on my list. I can’t wait to be back in my hometown to see my mom, as well as the rest of my family. We had actually planned to have a skiing holiday in Hokkaido, Japan, this year, and I would love to take my daughters, Isabella and Sienna, my mother and sister, to Disneyland Japan. Cicilia: It has changed me a lot. I am used to being very mobile, yet now I have to do everything remotely from home, making more video calls than ever before. : What activities do you like to do now that you have to stay at home more? C: The fact that I can still work from home is actually pretty good, work-related matters are still being delivered or executed in many different ways. The thing I like most about this current WFH (work from home) or stay at home situation, is that it has very much encouraged my team and me to explore new ideas that continue the business, while having more time to enhance our team skills through remote training. That is the positive side. : Please share your tips on what to do to stay positive at home. C: I do my morning ritual the same as any other day before this current situation. I wake up and get dressed as if I am going to work. The difference is only that I don’t have to drive to work, so I can have 15 minutes to spend outdoors and do some light stretching or core exercise. I set and respect the same working hours, set my remote meetings a week ahead, especially with my team, as well as with third parties – although sometimes only to touch base. Being able to work from home means I can also closely manage domestic life – now that physically I am sort of at home.

C: The closest place is Bali (one of my favourite places in the world) – it’s very easy to arrange and the beaches usually bring back sanity for me, which is good after a long time staying at home. It’s also good to support Indonesian tourism and to meet some of my closest friends there. The other destination would be Italy as I had already planned it prior to this pandemic. Tantra: It obviously hinders my passion for flying and travelling. I’m also saddened to hear of the negative impact of the situation on my friends in the travel industry, from the airlines, hotels, travel agents and other related sectors. The industry is the bread and butter for a lot of people, and now we have to put it on hold. That said, this is a global issue that we need to face, so all we need to have is patience and self-awareness to fight the pandemic. : Staying at home is challenging, especially for someone whose life is heavy on travelling such as yourself. Do you have any tips on how to make staying at home stress-free? T: Yes, it is very challenging considering I used to be very mobile, and now I’m staying in the same place for weeks. I try to keep productive by making podcasts that are related to travel and also write some articles for a few publications. I know right now we can’t travel yet, and we can’t tell when this thing will be over, but with the travel content I’m publishing, I hope we can appreciate all the little aspects of travelling once the pandemic is over.

: Now, more than ever, people pay more attention to their health. What do you do to stay healthy? T: I pay more attention to things I eat now. Thanks to the quarantine, I’m consuming more homemade meals lately, which is good because I can control the nutrition. Since I’m Javanese, I really enjoy sambal tempeh and sayur asam. I drink more water at home now, something that used to skip my mind before. Another positive thing about the quarantine is that I exercise more now. Other than to fight boredom, it is also to improve my immunity. I usually walk around in my house for one hour per day, that way I can stay indoors; it’s simple, no equipment needed, but it’s effective to make me sweat and keep me fit. @tantratobing

Next is probably Italy, as there are still a few places I haven’t been to, such as Puglia and Sardinia. The beautiful coastline of Italy keeps me going back for more, and I have definitely missed the food!
