A Creative Shed Within the Village

amously known as the place where youngsters and stylish people hang out, Potato Head, now known as Desa Potato Head, is Bali’s most prominent lifestyle centre. First gaining popularity as a beach club around ten years ago, the whole complex of Desa Potato Head has now grown into a spot to support creativity, aiming to make positive changes for a better

After adding inspiring dining outlets, such as Ijen and Kaum, Desa Potato Head has now debuted the first Indonesian plant-based restaurant with Tanaman, and a new environmentally friendly hotel, Potato Head Studios. Designed in collaboration with architect David Gianotten of OMA, Potato Head Studios feature both private guest rooms and public spaces, including an exhibition space, a sunset bar and underground nightclub. We went behind the scenes and talked to the mastermind behind these popular restaurants, which is how we got to know Toar Christopher – Indonesia’s very own master sushi chef and restaurant consultant extraordinaire. Toar began his story by reminiscing on how he got his passion for cooking when he was little and used to watch his grandmother cook. As he grew up, he got into sports and put cooking on the backburner for a while. It was during his

college years that Toar got back into the kitchen with his parttime job as a server. From then on, he began to work his way up the kitchen, before focusing on the art of sushi making, and he has never looked back. Toar is known for bringing a twist of modern fusion to traditional Japanese cuisine, making the dishes fun and stylish, as well as scrumptious. Toar knows the importance of knife skills, speed and accuracy when it comes to crafting sushi dishes, but he credits something else as his key to success. “My basic principle is that I want to make people happy,” Toar said. “When I’m running a restaurant, I want my employees to be happy, I want to make the customers happy, and if there are investors, I want them to be happy too. A: We have received quite a number of accolades from the media and tourism organisations, but none tops my own personal favourite, which is our weekly Brunch à la Française. Some of our brunches have been recognised as among the best in the world. Our brunch caters to everyone, even kids under 12 years old are free to join, and they get free access to the resort’s kids’ club and the pool during the course of the brunch. A: Creating awareness, traffic, generating revenue, and developing my team Q: What makes a typical day? A: A typical day for me is arriving at the office at 8am, when I check my emails and respond to important ones that need immediate follow-up. I then prepare tasks and direction for my team, while I enjoy a black coffee and croissant. Before I have a briefing with the general manager, I do a short briefing with my team. Mostly I finish my morning and afternoon by clearing my inbox, and meeting with colleages or clients for short- and long-term strategy discussions on how we can maximize revenue. At 4.30pm, I start chatting with my team to get updated on their assigned tasks or the progress of a project they are working on. Also, I gather information about the current trends of our target market and what kind of business has been generated for the day. Usually, I finish my day at 7pm, when most of my team have gone back to their families.

Say Nothing is the seventh studio album by the acclaimed Canadian rock band Theory of a Deadman. Known for their tongue in cheek rock songs, like Lowlife and The Bitch Came Back, this recording gets serious as Tyler and the band tackle issues such as domestic violence and racism. The album continues their collaboration with Swedish music producer Martin Terefe, who oversaw the critically acclaimed album Wake Up Call. Expect a pop rock-infused style with a serious message.

The closing of a chapter and the beginning of something new, Father of All… might not appeal to all, but to die-hard Green Day fans it will be pure nirvana. With no specific theme, expect pure anarchy as Green Day takes a pop at the current state of the corporate music scene. The first single, Father of All…, was released on 10 September 2019, alongside the announcement of the Hella Mega Tour with Fall Out Boy and Weezer. Green Day will play Singapore in March.

The first album by Australian rising star Banoffee, Look At Us Now Dad is an uplifting, optimistic journey that celebrates survival in the face of abuse and adversity. Featuring some notable collaborations, and co-produced by Banoffee and Yves Rothman, it is a hybrid of experimental club and pop music. “Each song uses human experience to talk about more complex concepts of addiction, obsession, heartbreak and resurrection,” says Banoffee. “Not to dwell in sadness, but to join hands.”

Q: Can you briefly share the story of your journey so far, career-wise, and how you ended up at The AYANA Midplaza, JAKARTA? A: I have been lucky enough to be able to travel and live in different parts of the world. It all started in my hometown of Vienna, in Austria, where I worked as a concierge. After a few years of working, I decided it was time to improve my English language skills, so I moved to London. That journey eventually took me to the United States, Canada, Spain and Asia. My first general manager role happened when I was in China, where I spent five years meeting wonderful people who taught me a lot. After China, I decided to take a short break from working and moved back to Vienna to plan out my next move. Along came the offer to work at Avani Riverside in Bangkok, Thailand, and not long after that, this great Indonesian-based hospitality group offered me the chance to see more of Asia, specifically Indonesia. Q: AYANA Midplaza, JAKARTA has been undergoing extensive refurbishment since it became an AYANA hotel. How is that going? And what is the next plan? A: It is doing superbly well. We started the process in 2017, and it is such an exciting time for all of us. The plan is to renovate every guest room, and further focus on each suite and the hotel’s other facilities.

But I believe what makes Jakarta stand out from the rest is the personal touch. Q: In your own opinion, what makes a great general manager? A: A great manager needs to have the gift of drawing back on past experiences. Managing a property is not easy because it has various products and services, and to stay ahead, one needs to understand what the customer wants and needs. Also, a great general manager needs to be down to earth and easy to work with because you are working with a lot of people from different backgrounds. It is very important to be humble and to put yourself in their shoes. Q: What is the most challenging and rewarding aspect of your career? A: Living so many different lives. I am blessed to have been able to travel and live in different parts of the world. As a human, we always have that curiosity about living in other countries. The most challenging part? Maybe the long work hours because the hotel never stops operating.

Q: What plans do you have for The AYANA Midplaza, JAKARTA in the coming years? A: In this hotel, we will continue the extensive renovation programme. We will also be giving skills training to our employees to work on service consistency. The main target is to gain the reputation as a trusted local-based luxury hotel. We want local travellers and guests to be proud of the AYANA brand and for it to compete with other big international hotel chains. Q: Do you have any advice for anyone looking to break into the hospitality industry? A: My advice is to not to be shy of hard work and long hours, even though the salary seem lower than other industries. The thing that you have to remember is that working in the hospitality industry will allow you to see the world, meet new people and see different cultures. Q: Outside the hotel, what do you do to relax? A: I like to go out and watch live music to get my feet moving. Jakarta is great for its nightlife, so I enjoy the casual environment. A: There will always be difficulties in trying to rebrand such a massive property, but you take this as a chance to better grow the company. One of the biggest challenges is trying to be recognised by the market with your own identity. Q: Given your credentials and strong track record in the hospitality industry, what’s your take on the current standard of luxury hotels here in Jakarta, based on what you’ve witnessed so far? A: When people think of luxury, they don’t think of Jakarta. Mainly people come to Jakarta for business, and those who seek luxury go to Bali. In Jakarta,

Q: What drove you to pursue a career in hospitality? A: To be honest, I did not plan to go into hospitality. I followed a friend into taking a hotel management degree and fell in love with hospitality. Q: Having studied, worked and lived in numerous countries over three continents, what have you learned from being exposed to different cultures and how do you adapt each time you relocate? A: Constantly living abroad is very transformative because you’re constantly observing, learning, reflecting and changing. Simply, you learn about other cultures, but you also learn about your own culture, and even to know yourself better. From a professional standpoint, it fosters creativity. I always learn something when I move to a new country, and starting anew is like being a child again. Before, everybody acknowledged that customers were looking for experiences, but now if you look at the marketing campaigns of all the global brands, they have started to incorporate the destination itself. A true hotelier at heart, the Kiwi has been in the industry for more than half his lifetime and continues to perfect his leadership to create a happy environment for both his team and his loyal staying guests.

Q: You graduated with a degree in hospitality, what made you decide to choose a career in this industry? A: Funnily enough, when I first started working in a hotel, I hadn’t even graduated. Back then, I was looking for ways to get some money and had the opportunity to work part-time as a waiter. After a while, I decided to try another position in the banquet division and even had some time behind the bar pouring drinks. I love the lifestyle of being a hotelier, where you get to live in different parts of the world and meet many wonderful people. In 2008, when I was first appointed general manager of a hotel in Fiji, Accor helped me to get a degree in hospitality, and I focused solely on the rooms division and revenue management divisions. Q: You’ve worked in several countries, which is your favourite and why? A: Of course, Indonesia! No matter where you are, there will be pros and cons, but at the end of the day, the people and the culture of Indonesia are the two things that have blown me away. Indonesian people are just naturally happy and it shows on the faces of the people that work at this hotel. From the moment you step out of the car, you are greeted with the warmest smiles and a willingness to help you feel at home. Q: What made you decide to move to Indonesia? A: I have always wanted to work here. In 2014, I was lucky enough to attend a seminar in Jakarta and had the chance to stay at this hotel. When I arrived, I was so mesmerized by the property that I kept telling myself I would work here someday. When I got the opportunity to be general manager of this property, I was so happy. I truly believe if you want something bad enough, you can make it happen. Q: This hotel has massive MICE facilities. Are there any challenges that come in managing a property with the capacity for such large events? A: The main challenge is how to

maximise the space. Our ballroom is 3,000sqm and can hold up to 5,000 people. In addition, we also have six other meeting rooms that are popular for corporate events. Working with a facility this big, we operate it as a separate business, where the sales team alone can generate the revenue of a small hotel. Q: In your opinion, what qualities make a successful hotel general manager? A: Apart from the experience, you need to have passion. You have to be happy with what you are doing. Being a general manager is not a 9-to-5 job, it’s a position where you really need to be committed 24/7 to the job. You also need to be able to share your experience with the people you work with. My biggest key selling point is my experience and how fulfilling I find it to see others around me grow in their careers. Q: Your previous role was managing a pre-opening team. Is that something you would like to do again? A: When I did that, it was like I had achieved my dream. But if you’re asking me whether I would do it again? Maybe, but not anytime soon because I really need the rest. Working for a pre-opening

property really takes a lot out of you. I don’t think I had a day off for six months. But the satisfaction factor is really amazing when you see the end result. On my last visit to Singapore, I was so happy to see the building from the street. You get attached to hotels like that because it is like your baby. Q: What do you think about hospitality in Indonesia? A: The industry is flourishing in Indonesia. It is easy for the Indonesian people to work in hospitality because they are always happy and give the biggest smiles to everyone. It is my job, as an expatriate, to mentor them so that one day they have the ability to perfectly manage other properties. Q: What is next for Pullman Jakarta Central Park? A: In 2020, we are planning to continue upgrading within the hotel. We are going to change and update most features inside the rooms, including the TVs, carpets, bathrooms and more. From sashimi moriawase and nigiri sushi, to modern sushi rolls and more variants in between, the restaurant is the perfect destination for an ultimate sushi fest. We talked to Seriwati Chandra – known as Sese, the brains behind Saké-yo and Almaluna Bar & Resto, to hear about the stories behind the establishments. “F&B has always been my passion, and I finally had the chance to open Almaluna around four years ago,” Seriwati said. “I like wine and I like to go to bars, but back then enjoying wine in a bar was not a popular pastime in Surabaya.” Seriwati explained that when it first opened, Almaluna was only selling wine, before turning into a popular bar and restaurant like today. “We were kind of a pioneer when it comes to making wine

bars popular in Surabaya,” she said. “We used to have mostly wines, but now we offer more and more liquors, like whiskey, for example. Almaluna is also a restaurant now, offering tapas, and Western and Indonesian dishes.” The liquor culture has also followed to Saké-yo, as the Japanese restaurant offers the biggest selection in Surabaya of sake. When asked about the F&B scene in Surabaya, Seriwati did not hold back her pride. “For the last year or two, Surabaya’s F&B scene has developed so fast. It’s just as dynamic and developed as Jakarta’s scene,” she mused. “I have high hopes for the industry, for it to keep getting stronger and stronger.” Seriwati also gave a sneak preview of Almaluna Group’s latest endeavour: bar catering.
