La gastronomie fait partie intégrante de la découverte de la région. Elle s'articule autour de produits célèbres : salaisons, le Comté, le Morbier... C'est avec Plaisir que Céline et Alain, les responsables de Patrimoine des Terroirs vous présentent quelques unes des spécialités de leur région, la Franche Comté...

The gastronomy is an integral part of the discovery of the region. It revolves around famous products: meats, Comté, Morbier ... It is with pleasure that Celine and Alain, founders and managers of Patrimoine des Terroirs present you some of the specialties of their region, the Franche Comté ....

Les salaisons : Impossible de parler des salaisons de Franche-Comté sans évoquer les immenses fermes à tuyé du Haut-Doubs. La maison en pierre s'organise autour d'une pièce de 20 m2 surmontée d'une gigantesque cheminée pyramidale en bois, le tuyé.

Lorsque toutes les autres issues étaient bloquées par la neige, les montagnons sortaient par le tuyé. Mais la vocation de cette cheminée était le fumage de la viande.

Cette pratique de conservation est demeurée typique de la Franche-Comté. On peut déguster les produits fumés à base de viande de porc des premiers contreforts du Jura jusqu'aux Vosges saônoises.

French salting : The salt meats of Franche-Comté: pigs in more ways than you can imagine. It is impossible to talk about the cold meats of Franche-Comté without mentioning the enormous tuyé farms of Upper Doubs.

The stone-built farmhouse is organised around a central room of some 20 sq m, in which there is a huge wooden pyramidal fireplace, the tuyé.

When all the other doors had been blocked by the snow, the locals could always leave by the tuyé. But the vocation of the fireplace was not to serve as an escape hatch, but for smoking meat. This method of preservation has remained very typical of the Franche-Comté. Visitors can enjoy smoked pork products from the foothills of the Jura up as far as the Vosges overlooking the River Sâone.

Gastronomie et Terroir / Gastronomy , regional products Nos fromages : La découverte gourmande de la Franche-Comté chemine à travers pâturages et forêts. Les innombrables troupeaux de Montbéliardes brunes et blanches qui broutent l'herbe des prairies, dont les limites se confondent avec le ciel, sont à l'origine des fromages du plateau.

C'est en montagne que l'on trouve les ancestrales coopératives laitières rurales qui continuent à fabriquer les fromages comtois selon les méthodes artisanales d'autrefois.

Famous French cheese of Franche-Comté : Every taste is a discovery The gourmet's tour of Franche-Comté will continue on through pastures and forests. The innumerable herds of red and white Montbéliard cattle grazing in the prairies which seem to merge into the horizon are what we have to thanks for the different types of cheese on our platter. It is here in the mountains that we will find the ancient rural cooperatives which continue to make famous French cheese in accordance with traditional methods.

Le vignoble : La notoriété des Vins du Jura est fort ancienne. Des documents écrits prouvent l'existence d'activités vinicoles dès le Xe siècle à Arbois et XVIème pour Château-Chalon. Pendant des siècles, les propriétaires nobles développent une pratique vinicole de qualité.

French wine growing region Jura : The wines of the Jura region have a reputation stretching back many centuries in France. Written documents prove that wine-growing was already being practised in the 10th century in Arbois and in the 16th in ChâteauChalon.

For centuries, the land-owning nobles developed a tradition of quality on their wine-making.

Gamme vins, Rhone / Rhone valley range of wines « Imaginez ! 250 km du nord au sud, 250 communes… Les vignobles de la vallée du Rhône, c’est tout un monde à découvrir, un univers changeant qui s’enroule et se déroule autour d’un axe fluide : le Rhône, fleuve-roi, charriant cailloux et Histoire. Le Rhône, c’est le trait d’union, l’élément fédérateur de ces terres de contrastes. De Vienne à Nîmes et Avignon, jusqu’aux confins du Luberon, sur les deux rives du fleuve, une multiplicité de chemins s’offre à vous » Passage privilégié entre le monde méditerranéen et l'Europe septentrionale, la Vallée du Rhône déploie ses vignobles sur six départements. Toute entière par le Rhône, elle tire sa force de ce fleuve riche et puissant qui lui prête son caractère, autant qu’il sculpte son terroir.

Située entre Vienne et Avignon, bordée par le Massif Central, les Alpes et au sud, la douce Méditerranée, ses appellations tirent leur force du soleil et du vent qui les caressent, et de la volonté de tous ses vignerons de produire des vins de qualité dans le respect de l’environnement… Ceux-ci, ciselés et inspirés par leur grande variété de cépages et de terroirs, séduisent les amateurs de vins ou élégants dans le monde entier.

Forming a corridor between the Mediterranean and Northern Europe, the Rhone Valley extends over six French départements. The region draws its strength from this rich and powerful river, which shapes its landscape and moulds its character.

The wines grown between Vienne and Avignon, between the Massif Central, the Alps and the Mediterranean Sea, draw their strength from the sun and caressing wind, and from the determination of the region’s many wine-growers to produce quality wines while respecting the environment… These wines, crafted and inspired by a great variety of grape varieties and terroirs, give pleasure to wine-lovers in all parts of the world.

The wines are available at a single domain to be taken by a transport company or a forwarding agent.

Solution 3 Enlevement ou livraison GROUPAGE chez un domaine Notre nombre de vignerons et leur proximité géographique et présence sur toute la France, nous permet de favoriser les "groupages" locaux entre vignerons.

Les vins partent depuis UN domaine (FRANCE) en livraison panachées ou sont mis à disposition par et chez UN domaine en commande panachée pour enlevement par un transporteur (EXPORT).

Les ordres de commandes sont transmis à Patrimoine des Terroirs afin d'assurer REACTIVITE, BONNE ORGANISATION et RESPECT des conditions négociées.

Solution 2 Enlevement ou livraison DEPUIS la plateforme Les vins partent depuis la plateforme à CORPEAU en livraison panachée (FRANCE) ou sont mis à disposition à la plateforme pour enlevement par un transporteur (EXPORT).

VINEXPO 2013 / VINEXPO 2013 Une des forces de Vinexpo réside sans conteste dans sa représentativité unique.

Le salon international est la plus large vitrine au monde du vin et des spiritueux. Pour sa 16ème édition, Vinexpo a attribué 40 000 m² de stands à 2 400 exposants venus de 47 pays. Chaque visiteur pouvait découvrir des vins des grands pays producteurs (France, Italie, Espagne, Allemagne, Chili, Etats-Unis, Autriche, Argentine, Portugal) mais également des vins du plateau du Golan ou encore un vin thaïlandais. Les sociétés de spiritueux occupaient 12% de la surface totale de stands.

One of Vinexpo’s strengths is clearly how uniquely representative it is. The exhibition puts the widest range of wines and spirits in the world on show. At this 16th Vinexpo, 40,000 sq. m of stand area was attributed to 2,400 exhibitors from 47 countries. Visitors were presented with wines from the major producing countries – France, Italy, Spain, Germany, Chile, the U.S., Austria, Argentina and Portugal – but they could also try wines from the Golan Heights and even a wine made in Thailand. Spirits companies accounted for 12% of the total stand area.

Coup de gueule ....

Le véritable intéret de la mondialisation, n'est elle pas de découvrir différentes cultures, différentes richesses, différents produits gastronomiques, différentes musiques ? Ne peut on pas valoriser les produits locaux, les cultures diverses, les spécialités locales plutôt que de standardiser les mêmes produits.

L'ouverture au monde ne doit pas permettre de rendre les choses communes a tous mais de permettre à tous de découvrir des produits régionaux ! N'est il pas intéressant de découvrir la diversité viticole et la diversité des vins ...

En tant que fondateur avec Céline de Patrimoine des Terroirs, nous avons souhaités mettre en place une certaine éthique, une valorisation de VRAIS produits, d'une part qui ont du goût, qui respirent la tradition, un savoir-faire, une certaine authenticité et d'autre part, élaborés dans le respect de l'environnement, de la nature, des personnes, autant le producteur que le client...

Alors qu'en nous entondons que nous mangeons du cheval, certes sans doute en bonne santé, à la place du boeuf, quand on retrouve des produits chimiques sur les fruits ou autres légumes... ne peut on pas envisager de considérer la nourriture autrement que comme une volonté permanente de proposer le plus petit prix possible.

SE NOURRIR, BOIRE, c'est comme respirer, c'est vital. Si en plus, c'est pour s'empoisonner ou ne plus se faire plaisir... Le vin, tout comme n'importe quel alcool ne tue pas, il peut même etre bon pour la santé... C'est comme tout, il ne faut pas en abuser !

En vous unissant à notre groupe de vignerons, vous défendez les petits producteurs, vous défendez une autre idée du "manger", "boire", "profiter de la vie" et "du respect".

My rants : The real interest of globalization, it's to discover different cultures, wealth, various gourmet foods, different musics, no ? Can we not valorize local products, diverse cultures, local specialties rather than to standardize the same products ?

To open to the world should not allow to make things common to all but to allow everyone to discover regional and national products ! It's allways interessant to discover the diversity and variety of grape wines, doesn't it ?

As founder with Celine of the consortium Patrimoine des Terroirs, we desired to establish a certain ethic, with the value of TRUE products, with taste, with tradition, know-how, a certain authenticity and whch are produced in an environmental spirit, in the respect of nature, people, the producer and the customer ...

Whereas we hear that we eat the horse, certainly probably healthy, instead of beef, when we find chemicals on fruits and other vegetables ... can we not we wish to consider food as anything other than an ongoing commitment to provide the lowest prie as possible?

EATING, DRINKING, is like breathing, it's vital. In addition, if it is to have no pleasure, no passion, or to be ill ... The wine, like any alcohol does not kill, it can even be good for your health ... It's like anything, do not abuse it!

With working with our consortium of winemakers, you defend small producers, you defend an another idea of "eat", "drink", "enjoy life" and "respect."
