North QLD Mumprenuers Expo Welcome to our very first edition. North QLD Mumprenuers Expo is all about supporting small businesses, mumprenuers, WAHP, party planners and our local communities. We showcase all our wonderful products in Townsville, Charters Towers , Cairns and Hughenden. Each town we visit we raise money for their local community groups, so far we have raised money for sporting groups and local health services. Each expo has something for the whole family—kids activities such as jumping castles, face painting mums we have mini make over's, cooking demos and for the dads we have home improvement businesses, government business groups etc ( these may vary expo to expo). As North QLD Mumprenuers Expos are a non– profit group we are always on the look out for sponsors to help with advertising, printing, etc please contact northqldmum@hotmail.com if you can help us out ……….. Luscious Mocha Truffles 225g good-quality dark chocolate, in small pieces 120ml double cream 60ml strong coffee Icing sugar and cocoa powder, sifted to roll Place chocolate in a large mixing bowl. Place cream in a saucepan and bring to the boil, then immediately pour over chocolate. Mix until chocolate has melted and then stir coffee into melted mixture. Cover and set aside for 1-11/2 hours to cool completely - do not refrigerate. Use a teaspoon to spoon out bite-sized pieces. Dust your hands with a little icing sugar to prevent them sticking and roll mixture into balls in the palm of your hands. Roll in cocoa and icing sugar mix.
Sweet Summer Prawns 500g green prawns 3 shallots - finely sliced 2 tbsp macadamia oil 1 tbsp Buderim Ginger Sweet Chilli and Ginger Sauce 1 tbsp Buderim Ginger Refresher 1/2 a lime, grated rind and juice 1/4 cup coriander leaves, shredded 1 pinch freshly ground Red Kelly’s Pepper berry Salt Peel and de-vein prawns leaving tail. Combine shallots with all other ingredients. Place the prawns in a single layer on a tray and cover with the mix. Refrigerate for 30 mins to 1 hour. Cook on a hot BBQ plate until opaque. Serve as an appetiser or as a main with steamed rice and a fresh green leafy salad.
