As North Floridians, we’ve just passed through another noncommittal and mild winter that featured several uncomfortably cold weeks mixed in with pleasantly mild stretches giving us a break from the impending summer heat. Now we are in that time of the year where you catch yourself staring into the afternoon sky thinking “Wow, what a perfectly beautiful day!” The trees and flowers are blooming (and bombing us with pollen), the birds are singing, and even the sun is sticking around a little longer every day. Welcome to Spring!

Wow! If you have followed Family Magazine since the very beginning, you may recognize that this very issue you are reading is our 30th! As such, it is FULL of incredible local features, folks, food, and funtivities. As you read, you will learn about some of our local friends’ amazing personal milestones, wildly interesting endeavors, new local hot spots, adventurous activities, and of course…delicious recipes!

For this season’s feature story, we are honored to highlight the legacy of one of the area’s most recognizable and friendly human beings. A few years back, my now wife and I were walking through the Columbia County Fair when we came to the booth that has always fascinated me most due to the live transparent display of a bee hive. As I stood watching the hive, a man started teaching me from a seemingly infinite well of knowledge about bees and honey. That man, of course, was the incredible and friendly Mike Thomas. Unfortunately, Mr. Thomas passed shortly after our photo shoot for this issue, but his legacy will remain as golden and pleasant as the honey his small friends produce, and I’m thankful to the family for allowing us to share part of their story.

Meet Amanda Frampton, co-owner of Agape Wellness Cottage and a Licensed Esthetician who specializes in skin health. Now a fulltime operation offering nail and lash services, massage Amanda Frampton therapy, facial waxing and yoga classes in addition to Amanda’s facials and skin treatments, Agape began from a much smaller vision.

After obtaining two bachelor’s degrees from the University of Central Florida and living and working in Orlando, Las Vegas and Alaska, Amanda returned home to Lake City to attend Florida Gateway College to pursue a career in esthetics, which encompasses the wellness, beautification and preservation of the skin. Unable to travel and unsure of what the pandemic had in store for her new future, she began Agape Esthetics in June 2020, a humble tenfoot by ten-foot room with a small service menu, as a temporary plan.

Amanda, her mother and sister decided to join forces. All renting their own suites next to one another for their correlating specialties (facials, nails and massages), they decided to pour their own blood, sweat and tears into transforming an old office space into the now relaxing and welcoming Agape Wellness Cottage.

“We had to take a leap of faith and believe we could change the space into how we envisioned it,” Amanda said. “It needed a lot of TLC, but now it feels like home. Every detail of the Cottage is intentional. Not just how we’ve decorated, but the colors, plants, scents and sounds are meant to make you feel calm.”

Facial Treatments

Before the healing can begin, Amanda likes to start with a quick consultation.

She wants to take the time to learn about your skin and structure a treatment plan that both of you feel confident in. “You see your skin every single day, but I don’t,” Amanda said. “I want to get to know your skin, so I know how to best treat it.” Amanda likes to combine relaxation with corrective work in her skin treatments.

There are varying treatment options that correlate with different skin issues, but they all start with the same foundation.

Traditional Facials • Double Cleanse • Exfoliation (Chemical, Manual or Both) • Toner Application to Balance PH • Extractions, If Necessary, to Aide With Acne or Blackheads • A Form of Massage; Pressure Points • Lymphatic Drainage, etc.

• Customized Mask • Finishing Products Such as Serums, SPF, • Oils or Moisturizer This is the foundation of a facial, then you can move forward from there.

“Basically, the goal is to cleanse, treat, balance and protect,” Amanda said. “The steps are the same, but the products and modalities will differ. Every single treatment is customized. My services are not one-size-fits-all.”

The following are some of the treatments Amanda offers, though much more intricate than summarized and not all are mentioned.

Dermaplaning Dermaplaning is an exfoliation method that involves taking a surgical blade and gently scraping away the top layer of dead skin cells and peach fuzz. This treatment offers instant brightening and is Amanda’s most popular treatment.

Dermaplaning can offer smoother makeup application, better penetration of skincare products and is a noninvasive treatment that 98 percent of clients with all skin types can have done.

Microcurrent Treatment Microcurrent uses small electric currents to help the skin fight gravity. Amanda uses the 7e Wellness Myolift device which has been described as a “noninvasive facelift”. Typical microcurrent results include contouring the jawline and cheeks, improved complexion, as well as softer, firmer, smoother skin. This treatment is Amanda’s personal favorite due to the significant results she’s seen first-hand for herself and her clients.

Chemical Peels A chemical peel is a treatment where an acid formula is applied to the top layer of the skin, encouraging dead skin cells to slough away, revealing newer, regenerated skin. Chemical peels can be used to treat a variety of skin conditions such as breakouts, hyperpigmentation and more.

“Think of chemical peels as a controlled burn in a forest,” Amanda said. “You’re encouraging new growth.”

Benefits of Facial Specialists Letting a professional assess your skin is much more beneficial in the long run. Some over-the-counter brands use dangerous fillers that can cause long-term damage to your skin. Not all brands are bad, though, and the same product does not work for everyone, so it’s important for a professional to help guide you through a healthy skincare regimen, in addition to treatments. Estheticians also have access to professional- and medical- grade products for facials, which have both more active ingredients and efficacy in terms of product potency.

Agape’s Outlook Even though each specialist at Agape offers a different service, they all have the same, ultimate goal: to make the building a place of healing, rest and self-care. Whether you’re visiting Agape for an hour for one treatment or coming to visit each specialist and take a yoga class afterward, they want their clients to feel better when they leave than when they arrived, and they’re very passionate about that.

With so much history woven into the White Springs area, it is imperative that the resources are preserved and maintained. This is one of the duties of the Suwannee River Water Management District, and it is not a responsibility that they take lightly.

Edwin McCook, Senior Land Management Specialist, weighed in on the importance of preserving Florida’s natural resources.

“We’re protecting the river and the water resources.

Ultimately that’s where our drinking water comes from, those sources on the river, the underwater aquifer. We want to protect those spring basins and the quality of the water,” Edwin shared. “We want quality water for people and for nature, or rather quality water for nature and quality water for people.”

In addition to managing the resources in Florida, the Suwannee River Water Management District also strives to provide many recreational opportunities for the communities it operates within. The goal is simple: to provide public access to natural Florida, therefore promoting public use of hiking and biking trails, fishing and camping spots, and canoe and paddleboarding tracts.

“Acquiring land for water management purposes is just part of the district’s commitment to resource protection,” Troy Roberts, Communications and Outreach Manager, explained. “District lands are managed under a policy that emphasizes water resource protection, maintenance and restoration of the land’s natural state and condition, but we also strive to provide public access and opportunities for recreational activities.”

The Suwannee River Water Management District owns nearly 160,000 acres of land across the 15-county district, and approximately 97 percent of those are open to the public for recreation. This includes nearly 280 miles of trails, all of which are waiting to be explored by locals and travelers alike. The list of bike trails, walking paths, hiking routes, canoe trips and fishing spots is quite expansive, proving that there is adventure all around if you are willing to explore it.

“No district land is the same. Some offer parking areas and marked trails; others are so remote they can only be reached by a canoe or kayak. But, whether someone wants to hunt or fish, hunt, bike or ride a horse, they’ll find a site that is right for them,” Troy expressed. “They get to be their own tour guide, free to explore North Florida’s natural lands and waterways.”

“All state parks have hiking trails, and if you wanted to do some other backpacking trips, the Florida National Scenic Trail runs along the Suwannee River from just above White Springs at Big Shoals on the Columbia County side down to just above Dowling Park on the Lafayette-Madison side of the river,” Edwin explained, stating that readers can contact the district for more information and guidance when planning out trips.

Although the list of exceptional spots for recreation seems endless, there are a few key spots that Edwin suggests checking out first. The trip from the Roline boat ramp to County Road 6 will bring you to the Cypress Creek Canoe launch, and the area is very peaceful. It is also full of tupelo trees, a tree that honeybees create nectar from, resulting in coveted tupelo honey. Another suggestion for exploration is the Cody Escarpment, a geological divide in the State of Florida. At this spot, Big Shoals drops in elevation over 9 feet in less than a quarter of a mile because of

the divide. Once you pass below the Cody Escarpment, you will begin to see the springs. From Suwannee River State Park down to Manatee Springs is described as spring country!

“The hike from Bell Springs to Big Shoals is gorgeous, especially in the fall! If you think the trees along the mountains are beautiful, that hike is for you! Late October to early November is a great time to view the foliage. The cypress trees turn a golden rust color, and the sun reflects off of the white, limestone rocks and against the white sand on the bank… It’s just absolutely gorgeous,” Edwin expressed. “The ideal time to visit is when you

Novice and experienced paddlers can enjoy this trip, taking in the beautiful views all the way to Stephen Foster Folk Culture Center State Park Launch.

Intermediate: Suwannee River Wayside Park Ramp – White Springs to Woods Ferry Canoe Launch Once you have a paddling trip under your belt, consider traveling the path from White Springs to Woods Ferry. Woods Ferry River Camp is the first river camp on the Suwannee River Wilderness Trail, making it a great place to paddle to and enjoy for awhile. Patrons of this area can enjoy many amenities including a picnic pavilion, public restrooms with hot showers, sleeping platforms and a tent camping area. There is no drive-in access to the river camp. Take out one mile downriver at the Woods Ferry Canoe Launch.

Advanced: White Springs to Suwannee Springs Searching for the perfect overnight trip? This one is sure to result in scenic views and lots of memories. Camp at the Woods Ferry River Camp, taking in all of the views by day and setting up camp in one of the screened pavilions for the evening. Dinner by campfire is not mandatory, but is encouraged! ■

Olustee Festival, hosting first responders luncheons or supporting the efforts of the Lake City Humane Society, Columbia High School and those of local veterans, “We try to give back as much as we can,” John said.

“We try to get out in the community and be involved, and I’ve always said that showing compassion and showing you care goes a long way, and so I think people see that,” Brent added.

Spring is upon us, and with that comes a great excuse to gather together with friends to celebrate! From birthday shindigs to Easter gatherings, springtime offers the perfect backdrop for a garden party at home. Before you begin planning out your picture-perfect celebration, it is important to choose a party theme or color palette that speaks to you. A theme or a distinctive color palette can act as an anchor for your decor, activities and food and beverage for any event. For a spring garden party, Savannah suggests opting for a bright and fun color palette, or incorporating floral designs and fresh elements into your decor. The theme can also be incorporated into the menu for the event, and Savannah encourages garden party hosts to lean into fresh, light options that match the feel of the event.

“The best way to make even the smallest party feel special is to send over an invitation. I am a big fan of snail mail!

People do not typically receive a lot of exciting pieces in their mailbox these days, so a party is the perfect excuse to send something that will brighten their day—and their stack of bills,” Savannah suggested. “You can order one online from somewhere like Etsy or write a simple note on a pretty piece of paper and throw it in the mail! It’s a great way to help make the gathering feel special from the start.”

“If you are leaning into the garden theme, I love the idea of incorporating fresh flowers! There’s nothing more spring than fresh blooms,” Savannah said. “If you are able, pick up a bouquet or arrangement from a local floral designer, or if you have the time, get creative and forage in your own garden to put together a stunning centerpiece full of fresh flowers and greenery. You don’t have to buy florals, you can find great options in your own backyard. Pull pieces in to add that feeling of freshness and seasonality to the gathering.”

Savannah is an avid collector of vintage stamps, explaining that they can really spice up your paper goods. To build your collection, consider purchasing from small shops on Etsy, or locate a local seller. Just make sure you’re buying unused postage and that you have enough to cover the cost of sending each envelope!

Hosting a party may feel daunting, but the good news is that you can plan ahead and delegate responsibilities to dispute those overwhelming feelings.

Even the most experienced host or hostess does not do it all alone! The key is to know your pain points ahead of time and prepare. Pick out your outfit in advance, take anything like paper plates or cups out of their packaging, and ensure that you have all of your decor ready to go. The table is the heart of any great gathering, so why not make it a standout piece of the decor? Savannah is known for her eye for design and is always dreaming up new ways to create a stunning tablescape. Check out her best tips for approaching a tablescape and making it the center of attention at every gathering.

“I always approach a table in layers. Your base layer is either the beautiful table itself, or a stunning linen thrown over it.

Having a soft layer, like a linen, adds a nice texture. Layers and textures are the keys to having a gorgeous tablescape,” Savannah explained. “Charger plates are a wonderful way to add another layer and strong base for each place setting.

Next, place your dinner plate on top.

After your plates, add a folded napkin, place your menu on top—maybe it matches your invitations—and add a personalized place card to make your guests feel even more valued.

Finish off by adding fun flatware and thrifted glassware, and your settings are complete!”

ENTERTAINING WITH KIDS It’s no secret that entertaining with kids can present some challenges, but there are so many wonderful ways to incorporate kidfriendly activities into your gathering! Create a table setup just for them with fun plates and accessories, or serve them an array of fun foods that they will love. Another great option is to provide a kiddie table filled with crafts or coloring sheets for them to enjoy.

Want to go the extra mile? Set up a teepee or tent in your backyard and fill it with throw pillows and toys for the kids to play with during the garden party. The activity and area can even match your theme and color palette to create a cohesive space.

“When designing an area for the little ones, it does not have to be elaborate, it just needs to be something that makes the kids feel included and keeps them safely entertained,” Savannah explained. “It does not have to be fancy, it just has to be thoughtful.”

PREGNANCY CARE CENTER: For the

For over 36 years, the Pregnancy Care Center has been serving the community, providing needed support and education for mothers, fathers and guardians as they navigate pregnancy. Not only is the center committed to supporting the mothers throughout their pregnancy, but also the family as a whole. The foundation for families goes far beyond the nine months that the mother carries her baby, as the organization continues to provide resources, classes and support until the baby reaches 24 months.

While the center began as a place for mothers to come for support during an unexpected pregnancy, the services have expanded to better serve the needs of the community.

The Pregnancy Care Center is known for offering free pregnancy tests and free ultrasound appointments, but that is truly just the tip of the iceberg! The organization offers over 300-plus parenting classes, countless diaper giveaways, a closet full of needed care items for babies, support for parents and guardians, and so much more.

The Pregnancy Care Center provides an array of information to each client that comes into the center, giving an extensive overview of the options that these expectant parents have. Adoption is often a part of the conversation, and while the Pregnancy Care Center does not facilitate adoptions, the staff can connect parents with organizations and community resources that can help with this process. One of the greatest desires of the Pregnancy Care Center is to break the stigma around the topic of adoption and stop the potential shame that biological parents may face.

“So many of these new moms and dads feel judged, and our society and our churches need to help change that.

This is a safe space, and they can meet Jesus here, receiving hope, love and healing,” Lori North, Executive Director of the Pregnancy Care Center, expressed.

“Adoption is not a selfish choice. We are for the family and are committed to supporting them, no matter what they choose.”

Not only are there physical locations in Lake City and Live Oak, but there is also a mobile unit that serves surrounding areas in north and central Florida, as well as parts of south Georgia. The mobile unit offers many of the same services as the two physical locations, with a trained medical staff providing free pregnancy tests, free ultrasound appointments,

and free diapers and wipes to expectant mothers.

With a focus on the family, the Pregnancy Care Lori North Center strives Executive Director of the to provide a Pregnancy Care Center comprehensive educational plan for parents and guardians. Mothers are encouraged to take classes on a plethora of parenting topics ranging from how to properly choose a daycare to car seat safety and “how to go it alone,” if that is their situation. When the parents take these courses, they earn Mommy Money and Daddy Dollars, all of which can be spent in the Pregnancy Care Center’s closet that is filled with everything they need to raise a child, from diapers and wipes to clothing, bassinets, bottles and car seats.

Fathers are also encouraged to take parenting courses and enroll in the “Authentic Manhood” group. In this group, expectant fathers gather together to offer support and learn how to be a great father and husband for their family.

The group is led by facilitators who have similar backgrounds to those in the group, whether that means they had absent fathers or fathers who were not role models for them growing up.

“Our Authentic Manhood group is all about their journey to becoming the man that God has called them to be.

They share a lot about their experiences growing up and talk about the challenges of not having a father in their life or having to grow up quickly. These real life experiences growing up have shaped them,” Lori explained. “Our facilitators speak to these guys and help them work through their past so that they have a brighter future. We try to have people that have backgrounds in all of those common challenges as facilitators so that they can speak to those specific situations and healing can begin to take place.”

“The father’s voice really makes a difference in a mother’s decision. If a mom sees and hears the heartbeat during an ultrasound appointment, there’s an 85 percent chance that she has a change of heart and chooses life. But if dad is in the room, that number jumps to a 97 percent chance. So, how could we not offer support to these fathers as well?”

Lori expressed. “We are honored to help support the family as a whole because we want our community to be filled with strong families.”

Equipping strong families is at the forefront of their mission, and the Pregnancy Care Center is committed to showcasing the beauty of family and sanctity of life each and every day. Their chosen theme for 2022 is “The brightest stars are those who shine for the good of others.” This can be showcased in many different ways, but the Pregnancy Care Center team is choosing to shine a light on the incredible works of the most unlikely of people by society’s standards and the impact they have made on this world because their families chose life.

“We are really shining a light on people that have done amazing things, but that could have been aborted by today’s standards. That brings us to the question of what talents have we missed out on from those who did not choose life? What blessings have we missed out on?” Lori asked. “There are stars that did not get to survive, and then we have stars that did, and look at how brightly they are shining despite their challenges.”

With an outpouring of support from the community, the Pregnancy Care Center has been operating for over 36 years.

PCC BY THE NUMBERS In 2021, the Pregnancy Care Center: • Served 603 distinct, different clients, not including the additional emergency visits; • Completed 2,064 unique visits and non-emergency appointments; • Gave out 368 free pregnancy tests and performed 741 freeultrasounds; • Gave out over 700 FREE packs of diapers; • And of the 269 clients that came in at risk for abortion, 209 chose life. This number only includes the clients that stayed in touch past that first appointment. …And that’s just the tip of the iceberg!

“My heart goes out to our community here locally. It’s that ripple effect, or that shining light of the star,” Lori stated. “We have superstars in this community who have given year after year and they give bigger and bigger each year, and it’s just exciting to watch that happen because it’s not us. God has surrounded us with incredible people that make this all possible.”

Women who are seeking this service can call the center to inquire and speak with medical staff members who will meet them where they are. In addition to the service, the team provides support, prayers and much more to any client who inquires about the Abortion Pill Reversal.

Peer counseling options are also available at the Pregnancy Care Center, as well as a support group called “Surrendering the Secret” for those who have previously had an abortion and want to begin the healing process in a safe environment.

Writing—in its most basic form—is a skill that, for the most part, can be taught, whether it’s how to shape sentences, condense free-flowing thoughts or polish grammatical errors. Storytelling, on the other hand, is a gift, a natural talent and one that Johnny Bullard was inherently blessed with.

“I’ve always had an interest in writing, even in elementary school I had an interest in writing,” Johnny Bullard said.

A native of White Springs, Johnny grew up with poetry and music-appreciating parents that encouraged him and his brother to follow their artistic and educational pursuits, whatever they may be.

“I hit the lotto as far as family is concerned. I really did,” he said.

Finding a mentor in his middle school language arts teacher, Dorothy Bryant, Johnny quickly gained the confidence to express himself through the written word. Later equipped with four graduate degrees from Valdosta State University— including a Bachelor of Arts in English—he began a 35-year career writing for his hometown newspaper, drawing inspiration from his life around the banks of the Suwannee River.

“Life is life and it has its ups and downs, but I’ve been very blessed to be in an area that’s rich in the stories that it has, rich in history, rich as far as natural resources are concerned, rich in humor—very rich in humor— and rich in the fact that, you know, I think north-central Florida is like a patchwork quilt; we have our own richness that’s unique and wonderful

and different from any place else in the world and especially in Florida,” he said. “I’ve enjoyed people and the stories they’ve shared with me wherever I’ve gone and especially family stories that have been shared within my own family and the stories of the area.”

While strengthening his abilities as a columnist, Johnny furthered his long-held passion for education by working as a teacher, principal and—most recently—serving on the Hamilton County School Board. Nevertheless, during this time, friends, family and fans of his growingly-popular column encouraged Johnny to use his knack for storytelling to write a book—a suggestion that lingered in the back of his mind until the right moment finally presented itself.

“We all go through peaks and valleys in our lives. I’ve always been thankful for where I live and for the people that I lived among and that kind of thing, but I was at a little bit of a low point emotionally in my life, and so I thought, ‘let me see if I can write my way out of it,’” he said.

Gifted with a computer from his uncle, Johnny began to write—and write he did—forging characters and storylines guided by his surroundings.

“I think that’s what has helped—what did make—so many Southerners great writers, you know, and the South—for all of its faults and failings—produced some of the greatest literary figures in the world. I’m not one of them, but I was certainly influenced by some people who are. The William Faulkners, the Eudora Weltys, the Marjorie Kinnan Rawlingses, the Carson McCullerses—I could go on,” he said.

people—or I have known them, let’s just say that—because I know the area, and when your family has been here as long as the River Nile, you know it, and my family has been here now for 200 years—seven generations in Florida,” he said. “I’m thankful that my memory has stayed intact and that I have a good love of people and a memory of different events, different people—lots of good memories.”

Johnny’s first novel was split into two separate works: Nightshade and the sequel Secrets, both of which were published in 2015 and focused on five main characters grappling with hope, struggle and victory all set in the Deep South.

“Those stories that they wrote, a lot of them were fictitious just like the four books that I’ve written are works of fiction, but they were based upon experiences that they had and stories they had heard during their lifetime.”

Rather than constructing characters derived from specific people, Johnny’s characters all represented a combination of personality traits, mannerisms and story arcs that read like mini-biographies rather than works of fiction to help create a sense of realism.

“There’s a difference between knowing of people and knowing the people. My characters are fictitious, but I know the 24 |

“I’ll never forget when they brought in that rst copy for me to see, it as unbelievable and it as like—did see it and kne it as there—but thought, my od, that’s a lot of pages and a lot of situations in my life, and there it is, and it as a little bit frightening,” ohnny recalled.

“I did dream of publishing and having books published, and my dream came true in the publication of those books, whether they sell 10,000 or 1,000 copies or 100,000,” he said. “A lot of my dream came true in just seeing the covers of those books and the fact that there are several thousand people out there now

who know about my characters and who know about this part of the world all over the world who might not have ever known them before, and I get great satisfaction from that, I do, and the fact that something that I held dear and hold dear that other people would find pleasure and joy in it.”

Johnny released two more books set in the fictional world he first developed in Nightshade with Destini in 2017 and Black Runs the River in 2019, and while those stories may have come to a close, that isn’t to say those characters won’t make a resurgence sometime in the future.

“When I really get into writing, and those characters really begin to reveal themselves to me as I write, those characters become very—they are real to me—and when you finish a book and that phase has come to a close, there’s joy with it in that you completed it and there’s some sadness too because you’ve lived with some of these characters for a good long while,” he said.

“I wrote those books and I had to let the stories out because I felt I wanted to ... I had something to say and I still think I have some things to say and will write more ... I don’t know that they’ll be along the same lines. I don’t think the next book that I do will be along the same lines that I’ve written; I think the next one may well be a collection of some of my newpaper articles with some of my personal anecdotes. It will be something completely different.”

Apart from compiling a volume of his past works, Johnny’s other novelist ambitions include writing a children’s book to help merge his love for education and storytelling.

Furthermore, for Johnny, White Springs and its nearby communities aren’t just idyllic settings for novels that delve into southern culture and characterization; it is, and always will be, home.

“I go and I read stories and I tell stories at the local elementary school—I’m the chairman of the school board over in Hamilton County—and I try to go about twice a month, sometimes three or four times a month, to the elementary schools and I read stories to elementary students and I tell stories and I find that no matter how much media and technology they have, children and people in general still enjoy having stories told to them,” he said.

“If there’s one thing that I tell you I hope shines through in all of my books, is that I hope it shines through that I have a great love for this area. I hope that—among everything else—does shine through in those books, the fact that I take great pride in the area that is my home and the people that are my friends and with whom I’ve spent my entire life, and I do find them wonderful, terrible, tragedy, triumph, agony, ecstasy. It’s all here, and you don’t have to travel anywhere else to find it; it’s all right here, and it’s beautiful—the area in which we live—and I hope that comes through too,” he said.

While Johnny was lucky to have family members and a school mentor to offer him support and encouragement in following his dreams, since becoming a published columnist and novelist, he’s developed his own words of encouragement for aspiring writers.

“I think if you have a story, have confidence enough to write it down and share it with other people and do that, and if you want to write, write because I can tell you something: creative writing cannot be taught. It can be refined, but for a person to be a good writer, it’s either there with a story or it isn’t there,” he said.

One of the best parts of springtime is coming together with loved ones for Easter. Taking priority to the Easter ham, deviled eggs or potato salad is always the desserts. There’s no better dessert to represent Easter than a moist, homemade carrot cake with classic cream cheese icing, and this one happens to be our favorite.

Ingredients Cake: 2 cups chopped pecans (1 cup cake, 1 cup garnish) *Optional 1 ½ cups dark brown sugar ½ cup granulated sugar 1 cup vegetable oil 4 large eggs ¾ cup unsweetened applesauce 1 teaspoon vanilla extract 2 ½ cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda ½ teaspoon salt 1 ½ teaspoons ground cinnamon 1 teaspoon ground ginger ¼ teaspoon ground nutmeg ¼ teaspoon ground cloves 2 cups grated carrots Cream Cheese Frosting: 16 ounces cream cheese (2 packs) 4 cups confectioners’ sugar 1 ½ teaspoons vanilla extract ½ cup unsalted butter, room temperature Pinch of salt, to taste

Instructions Preheat oven to 300 degrees Fahrenheit. If including pecans, line a baking sheet with parchment paper.

Spread chopped pecans and toast for 7-8 minutes.

Allow them to cool for 15 minutes.

Turn the oven up to 150 degrees Fahrenheit. Grease three, 9-inch cake pans, line them with parchment paper, then grease parchment paper.

Whisk brown sugar, granulated sugar, oil, eggs, applesauce and vanilla together in a large bowl until combined without lumps. In another bowl, whisk flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and cloves together. Fold the wet ingredients into the dry ones with a rubber spatula until combined.

Then, fold in carrots and 1 cup of toasted pecans.

Tips for Best Results Line your cake pans with parchment, as this will ensure your cakes will not stick and can be easily removed from their pans.

Make your cake ahead of time. Carrot cake tastes best when it’s given time to set and for the moisture of the frosting to set into the layers. Bake and frost 1 day ahead of time and refrigerate. Bring to room temperature before serving, if desired.

Grate the carrots from whole carrots, rather than buying them grated. This gives you a better chance at perfectly moist cake. ■

Spoon the batter evenly amongst the cake pans. Bake all 3 cakes at once for 20-24 minutes. Test the center with a toothpick. If it comes out clean, the cakes are done. Allow the cakes to cool completely.

Use a handheld or stand mixer to beat cream cheese and butter together until smooth. Add confectioners’ sugar, vanilla extract and a pinch of salt. Beat on low for 30 seconds, then increase to high speed and beat for 3 minutes until creamy. Frosting should be soft, but not runny.

MEANT TO BEE From an early age, Mike Thomas was enamored with the life and habits of bees. Born and raised in Jacksonville, Mike was the only boy in the neighborhood with an unfading curiosity and, because of that, he eagerly offered to help his aunt tend to her backyard hives. During this time, his intrigue for these buzzing insects never lapsed and, when he got older, he procured

his own hive from his aunt. Mike spent the following years multiplying his colonies and later formed a partnership with two other hobbyist beekeepers to care for what flourished into around 600 hives.

Of course, what initially began as a leisurely activity quickly became a passion and, in 1967, Mike decided to make two major life changes involving a move from the city life to the countryside and a shift in careers. With his wife, Kitsy, by his side, Mike eventually bought out the partnership he helped forge and purchased a small apiary on the outskirts of Lake City to turn this long-held interest in honeybees into a full-fledged business venture.

Apart from a stable curiosity, to be a successful beekeeper, one must have patience and a calm demeanor—traits that helped Mike grow his hive count to 1,600 thriving colonies. Operating now as a commercial business, Mike became a member of the Sue Bee co-op, which bought the honey his bees produced in bulk. To expand his honey profile and flavor varieties, Mike managed to obtain contracts and organized road trips for his bees to set up hives in orange groves further south, clover fields in North Dakota or kept them local to make wildflower and gallberry blends.

At the time, the Sioux Honey Association was more lenient toward their fellow beekeepers, so Mike was able to keep any leftover honey that wasn’t already promised to Sue Bee, and in the ’80s, he gradually began bottling this liquid gold under the Thomas name—eventually opting to let his co-op membership expire.

LIFE IN THE HONEY HOUSE Though Mike may have started this sticky endeavor, Thomas Honey has always been a family business. Mike and Kitsy’s oldest son, Rocky, inherited his father’s love for bees and hive-harboring and still has his own collection of hives today.

Their daughter Kathie helped run the business in the late ’90s and was influential in expanding the retail part of the business whether it was selling jars of honey for restaurants to use in culinary creations or to businesses looking for something sweet to put on their shelves. Their son Jeff isn’t formally involved in the business, but his wife, Marcie, often helps during honey-selling appearances at folk festivals and other events. Their daughter Kelly is the brains and flavor-creator behind the “Kae’s” line of specialty blend products like cinnamon creamed honey, real deal jerk honey and hot tamale honey.

Their youngest daughter, Kristi, is more hands-off in terms of day-to-day operations as she currently lives in St. Augustine, but still manages to offer new ideas whenever she can.

NEW BEEGINNINGS “I grew up, you know, you walk out of the front door and the first thing you see is the honey house, so it was pretty integral to me growing up, and I remember being young like probably middle to late elementary school and I would always ask grandpa like ‘What can I do? Where can I work? I want to earn some money,’” Kortney Stewart recalled.

“I think I was probably 7 and I would nail brads into frames all day, and then whenever I got old enough to work in the extracting room in the summer, they would bring all of the honey back from North Dakota…the extracting room was pretty labor-intensive and in present-day times it probably wouldn’t work the same way because there’s like heavy machinery and stuff, but when I was young I would work in the extracting room in the summer…you’d be really proud whenever you got strong enough to lift a 40-pound box of honey; it was like a milestone,” she said.

While all five of their children played a role in the business’s continued success, many of Mike and Kitsy’s grandchildren have also left a mark on the Thomas Honey legacy. Rocky’s oldest daughter, Emily, was integral in redoing the Thomas Honey website and maintaining and writing the business’s blog. Kathie’s daughter, Kaycee, married a fellow beekeeper and the duo is part of a co-op in North Dakota—their two children also gravitating toward life in the bee business. Jeff ’s oldest son, Justin, is a painter by trade, but is always available and ready to fill in on retail deliveries. Kelly’s daughter Kayla creates recipes featuring Thomas’s acclaimed honey, and her son, Mitchell, works with the bees in his spare time and offers a hand during festival appearances. Of course, it was Kelly’s oldest daughter Kortney that decided to take on a larger role by overhauling and rebranding the retail side of the buzz-worthy business.

trusted beekeepers—that’s already been extracted into 55-gallon drums. When ready to bottle, the drums are hand-dipped into a tank that slowly warms the contents of the drum to around 100-to-110 degrees before the honey can be strained to remove any wood chips or fallen bees. The cooled honey is then dispensed into each glass jar and embellished with the Thomas Honey black and gold label.

“Everything is dipped and bottled and labeled by hand,” Kortney said.

The supers are filled with frames and combs, which the bees use to store and then seal their honey.

These fond memories of working in what they referred to as the “Honey House,” inspired Kortney to follow in her grandfather’s footsteps and leave her high-pressure environment of a career and take over the retail portion of the family business, which Mike was already considering retiring from.

Growing up surrounded by these fluttering insects, Kortney knew the artistry that went into beekeeping, but her interest laid in what happened after the bees made their golden syrup.

For the retail side of the business, Kortney buys honey—either from her Uncle Rocky or from one of three to four other

Apart from the four original flavors of honey: gallberry, wildflower, orange blossom and clover, with the recipe expertise of her mom, Kelly, and the help and advice from other family members and employees, Kortney has been able to expand the retail side of the business to include several specialty blends like the popular creamed honey, beeswax bars and honey straws with aspirations of selling lotion and lip balms in the near future.

“Something that I am very, very proud of is having a business that is fun to work at, you know, like creating something that whether it’s ultimately about the honey—I mean I love honey and could talk about honey and bees forever like it’s just such an intricate thing to be involved in—but I think that there’s also bigger meaning—deeper meaning—for me in being able to say, you know, I have created something that makes the world a better place…maybe the scope is more narrow because I have four employees versus a new set of clients every three months, but the depth of that impact is really special to me and the fact that I can also be much more connected with my family: the impact of having a strong family whether they’re heavily involved or just marginally so, I mean that’s really meaningful to me as well,” she said.

Kortney took a leap of faith in 2020 in deciding to take over the retail side of the Thomas Honey enterprise, but it was a decision that, so far, has proved to be a sweet one that will help continue

the association between the Thomas family name and delicious honey.

“This started from the ground up but, you know, we’re 60 years in at this point and just how much the business has diversified to include so much of our family…I just think it’s really cool because you don’t see families who can make that work often,” Kortney said.

A SWEET LEGACY Forever remembered as the pillar of the Thomas Honey Company and the one who started it all from a single hive from his aunt, Mike Thomas passed away earlier this year just two days shy of his 84th birthday. Fortunately, through years of dedication and unwavering love for his bees, friends and family, Mike created a legacy that will continue to bring a little sweetness to everyone that tastes a spoonful of Thomas Honey.

“There’s a great deal of satisfaction to see the business be successful. I certainly—there’s no way around it—I’m proud of the fact that I built a business that’s sustainable and is doing well,” Mike said. ■

Beeswax and Pollen

Pollination and honey are not the only benefits that bees provide.

Additionally, bees provide beeswax and pollen, which each carry a wide variety of uses.

Beeswax is produced from the glands of honeybees. The wax is produced by young bees and then scraped off their bodies, chewed and mixed with bee saliva as well as other enzymes.

After the bee chews and processes the wax, it attaches it to the honeycomb, where pollen is stored and bees reside.

The wax also helps safely store honey produced by the bees, and it can help protect the hive from infections and other unwanted contaminants.

Beeswax contains anti-inflammatory, anti-bacterial and anti-viral properties.

These qualities offer the perfect balance of nourishment to calm the skin, keep it clear and bacteria-free, heal wounds and fight infection.

Bee pollen is considered a superfood and contains many vitamins, minerals and antioxidants, making it incredibly healthy. Bee pollen is a natural mixture of flower pollen, nectar, bee secretions, enzymes, honey and wax, and can be used as a nutritional supplement.

Beeswax wraps are touted as easy, eco-friendly alternatives to plastic wraps because they are reusable, unlike plastic wrap, and are created from natural ingredients that aren’t harmful to the environment.

Because beeswax wraps are tacky, allowing them to easily mold to a container opening or around food, they work just as well as plastic wrap, and they last longer—up to a year.

DIY Beeswax Wraps Combine 1/4 cup beeswax pastilles, 2 tablespoons of pine resin and 1 tablespoon of organic jojoba oil in a double-boiler on the stovetop. Heat until melted and fully combined. Use a brush to apply an even coat of the mixture across the surface of the fabric (precut to desired size).

Hang immediately while still wet.

To clean and refresh your homemade wraps, fill your sink with lukewarm water and add a mild dish washing liquid. Put the wraps in the water and don’t be afraid to give them a little scrub.

Rinse off and hang them to dry.

WHY HONEY: Honey can be used to replace sugar wherever sugar is called for. However, honey is sweeter than sugar, so you need to use less. Using local, raw honey regularly can help lessen the effects of seasonal allergies.

HOW TO SUBSTITUTE HONEY FOR SUGAR IN RECIPES: To substitute 1 cup of sugar: Use 2/3 cup honey. Decrease other liquids in the recipe by 1/4 cup, because there’s water in the honey too.

NOTE: When baking with honey, the baked goods will turn out darker than if baked with traditional sweeteners.

FUN FACT: Did you know that honey can also be used for burns, wound healing, swelling, sores inside the mouth and coughs?

BANANA BREAD Ingredients • 2-3 bananas • 1/3 cup butter (melted) • 1 egg • A pinch of salt • 1 teaspoon baking soda • 1 teaspoon vanilla extract • ½ cup honey • 1 ½ cups flour • Optional: chocolate chips or nuts

VANILLA-HONEY SIMPLE SYRUP Great for coffees or mixed drinks.

Ingredients • 1 cup water • 1 cup sugar • 1 tablespoon pure vanilla extract

Instructions Preheat the oven to 350 degrees Fahrenheit.

Smash bananas with a fork until they are batter-like. Pour the melted butter in and stir together. Add egg, salt, baking soda, vanilla, honey and stir together.

Once combined, add in the flour. Once totally combined, this is where you’d add chocolate chips or nuts and then pour the batter into a pre-greased or buttered pan.

Bake in the oven at 350 degrees Fahrenheit for 50 minutes.

Instructions Bring the water and sugar to a boil in a medium saucepan over medium-high heat. Continue to cook at a rapid simmer until the mixture thickens slightly, about 8-9 minutes.

Remove the pan from the heat, stir in the vanilla and cool to room temperature. Transfer to a glass jar or bottle and refrigerate. The syrup will last for two weeks.

HONEY & SOY GLAZED CHICKEN Ingredients • 2 tablespoons canola oil • 1 tablespoon minced garlic • 1 tablespoon minced ginger • 6 tablespoons low-sodium soy sauce • 3 tablespoons unsalted butter

• 5 tablespoons mild honey, such as clover, acacia or orange blossom • Kosher salt and black pepper • 8 small bone-in, skin-on chicken thighs (about 3 pounds) • Lemon wedges, for serving

Instructions Heat the oven to 425 degrees Fahrenheit.

Heat 1 tablespoon oil in a small saucepan over low heat. Add the garlic and ginger.

Cook, stirring occasionally, until softened, 3 minutes. Add the soy sauce and honey, simmer, stirring occasionally, until reduced and slightly thickened, about 10 minutes. (You’ll want to cook attentively for this step, as the syrupy mixture can burn if it cooks too long.) Turn off the heat then whisk in the butter. Season with salt and pepper.

1: On an aluminum foil-lined rimmed baking sheet, season the chicken all over with salt and pepper. Add half the glaze and the remaining 1 tablespoon oil and toss the chicken to coat. Arrange in an even layer, skin side up, and roast until browned, 15 minutes. Brush the chicken all over with 2 tablespoons of the remaining glaze. Roast until golden and cooked through, about 10 minutes.

2: Drizzle the chicken with the remaining glaze and serve with lemon wedges. ■

All the World ’s a Stage Dramatic Arts & Theater Program

To maintain the interest of prospective students, Florida Gateway College is always expanding its range of subject offerings and career paths with the last few years focusing on the addition of more creative pursuits under the umbrella of arts, humanities, communication and design with degree concentrations and certificate opportunities in animation, video game design, video production and, most recently, dramatic arts and theater.

Though student plays overseen by faculty members existed at the college in the past, it wasn’t until Professor Todd Siff, who’s worked as a professional actor, director, playwright and musician over the last decade, came to teach at FGC that a complete AA program with a focus on dramatic arts and theater was fully formed.

What began with two basic theater classes has grown into nine—all of which cover multiple facets of the theater experience beginning with theater appreciation, which is an overview of the profession and the individual roles responsible for putting on a successful production. The classes that follow delve further into each of those previously discussed positions with introduction to theatrical design, dramatic literature, introduction to technical theater, directing, theater production and two courses in acting that round out the curriculum.

“Part of what my goal is here at the college is to develop a program that students not only can gain experience in these skillsets, whether that be acting, directing, designing, stage management et cetera, but they also get practical experience by doing

shows, and that’s part of what we do,” said Siff, who earned his Bachelor’s in Theater Arts from Boston University and his Master’s in Directing and Theater from the University of North Carolina at Greensboro.

To apply the skills and lessons learned outside the classroom, students work together to present three productions a year at the Levy Performing Arts Center with a show catered to a younger audience in the fall like that of The Little Prince or A Christmas Carol, an older audience in the spring with shows like Twelfth Night or Almost, Maine and a musical in the summer like last year’s We Will Rock You or this year’s The Sound of Music.

“I try to let every element of the production be student-led so students will design the lights; students will

help design and build the set. My goal is to make it as collaborative of an opportunity to everybody as possible so that we can all learn,” Siff said.

While the program was built with FGC students in mind, the ability to participate in each production extends beyond the college campus.

“All shows are open to community members as well so it’s not just students but community members who want to act or direct or stage-manage or whatever they want to do can also participate,” he said. “My goal is just to not only build the program but also connect to the community at large and show them why theater is something that is valuable to us.”

Siff also strives to welcome surrounding elementary, middle and high school audiences to enjoy the productions and view theater from a new perspective.

“I think if you get that opportunity as a student when you’re 15, 16 years old and you imagine theater as something that you could possibly do with your life, to come and see a professional quality production at a place where you can go ‘oh, wait, I can go there and I can be a

part of that,’ let alone just the experience of being in the theater and seeing a classic play like ‘The Crucible’. I think it’s just something this community hasn’t really had the opportunity to have.”

At its core, the dramatic arts and theater program at FGC is designed for students interested in obtaining a solid foundation in this subset of fine arts but it was also modeled to bring a sense of culture and performance art into the surrounding small-town atmosphere.

“Theater is an art form that is different than all others because of the special nature of the relationship between the audience and the performers. There’s no other art form that you can go into a theater and the audience can make a change upon a performer,” he said.

“In this age of technology and film and Netflix and streaming and all of it, theater still matters, and being involved in it whether as a participant or an audience member is vital to our nature as human beings—we’ve been doing this for thousands of years, you know.

Theater began in Ancient Greece as a way to celebrate and learn from stories, and we’re still doing that today…I think it’s important that we continue that tradition.”

Camp Anderson Anchored

Nestled in the small community of Old Town, Camp Anderson Anchored is a lively campus that is teeming with natural beauty and history.

The campus boasts Joe Anderson of immaculately kept Camp Founder grounds and scenic views of the Suwannee River, but it’s the purpose behind the property that really makes an impact on those who visit.

The camp was founded by Joe H. Anderson, Jr., in the mid-2000s when he purchased the property: a 52-acre KOA campground on the banks of the Suwannee River in Old Town. Prior to purchasing the property, Joe H. Anderson, Jr., affectionately known as Mr. Joe, made a career for himself in construction. Born and raised in Old Town, Mr. Joe began working at the young age of 18. His passion, drive and commitment to excellence in business led him to start a company and grow it to a nationally recognized construction conglomerate with over 1,500 employees. In 2012, Mr. Joe was recognized by his peers and inducted to the Florida Transportation Builders (FTBA) Hall of Fame for his tireless efforts for the transportation industry; working with friends, business associates and governmental officials to ensure quality infrastructure and highways.

Aside from his many career accolades, Mr. Joe was also known for his heart for helping others and his love for spreading the gospel. He and his family were charitable givers, always searching for a way to help those who found themselves in tough situations. Mr. Joe was passionate about sharing the love of Jesus, so much so that he purchased a large tent with a stage, chairs and a sound system and began to host tent revivals all over Florida, Georgia and Alabama. He also placed a high importance on the Ten Commandments, and made it his mission to place Ten Commandments monuments throughout Florida. These monuments can still be seen today in areas like Cross City where the first of these monuments were placed.

When the opportunity arose to purchase the land that is now Camp Anderson Anchored, Mr. Joe and the rest of the Anderson family immediately dreamed up a great vision for the site. It was going to be a gathering place that uplifted people in faith and provided hope for the hurting. The campground was transformed into a site that could support church and other group gatherings, but, soon after, Mr. Joe knew that there was something much bigger on the horizon. He dreamed of a space that would be perfect for a youth summer camp, and envisioned a campus bustling with life! His vision included a facility with a camp-like setting, complete with sleeping accommodations, a commercial kitchen, an open pavilion, swimming pools,

volleyball and basketball courts, and so much more.

With funding from the Anderson Family Foundation, Mr. Joe’s dream for the campus came to life. The Old Town campus was soon hosting youth summer camps with over 400 campers in attendance each week. During the off season, adults and church groups rented out the facilities for special events and retreats. Additionally, the campus has been used in times of disasters, providing shelter for hurricane victims and sleeping quarters for power company personnel as they worked to restore power in surrounding areas.

Mr. Joe passed away in November of 2016, but his legacy lives on and continues to impact youths and adults today. The Anderson family, as well as many friends and supporters of the camp, thank him for his faithfulness to Christ, as they are committed to carrying out his vision at Camp Anderson.

In 2021, the camp underwent new management, appointing Skipper and Crystal Hair as Camp Directors. Skipper and Crystal Hair have been dedicated to Crystal Hair ministry for decades, Camp Director playing a large role in the Fellowship of Christian Athletes (FCA) in the North Florida region. Skipper was the area director of FCA Outdoors North Florida,

“Skipper had a great, big vision for camp. His vision was to incorporate sports and year-round projects with the summer camps. His vision was to put in all-purpose fields for football, lacrosse, soccer for example, as well as a baseball and softball field, to have kids here year-round,” Crystal shared. “When Skipper would take the canoers on trips, he always said that the time they spent fireside was when walls came down and kids would open up. That was just the most special part of his ministry, and we really want to incorporate that into this one. Every night of camp there will be a different activity around the fire. I just want to honor Skipper’s vision, and really just make him and Jesus proud.”

In the fall of 2021, Skipper Hair passed away due to COVID-19, but his beloved wife and family, along with their incredible team, are committed to keeping his dream for Camp Anderson Spring 2022 | 43

Today, Camp Anderson Anchored is a thriving campus that continues to spread the gospel. Crystal Hair, Camp Director, shared that her biggest goal is that every single person who steps foot on the campus in Old Town feels loved. Whether that feeling of acceptance comes from a message on stage, an encounter at the altar, or even just a friendly word of encouragement from a camp counselor, that is the team’s main goal.

With this new vision in mind, Camp Anderson Anchored began hosting community events in 2021. Camp Anderson Anchored proudly partnered with the Old Town Trunk or Treat group to host an inaugural fall festival on campus, complete with food trucks, local vendors, trick-or-treating at the cabins, and a costume contest. Additional community events included a Christmas movie night showing of The Polar Express, and a new year kick-off event held on New Year’s Eve. This “All Things New” women’s event focused all around emotional and physical wellness, both of which are important pillars of the camp.

Notable upcoming events include a comedy show fundraiser featuring Christian comedian Juanita Lolita; a fundraising fishing tournament; and the “Spoken Word” motorcycle rally. The staff also has plans of hosting a men’s conference, a women’s conference and a marriage retreat this fall. More information about each of these events, as well as the upcoming summer camp, can be found on their website.

Community involvement is a main pillar of the camp’s mission, and there are many ways for the community to experience the fun at Camp Anderson Anchored all year long.

As preparations continue for youth summer camp in 2022, the Camp Anderson Anchored crew is excited to welcome aboard campers for the 10 weeks of summer camp. Each week of camp will feature fun outdoor activities, encouraging speakers, creative hobby exploration, fellowship time and so much more. Campers will stay onsite for the week in one of the cabins, all of which have been decorated by community businesses and friends of Camp Anderson Anchored. The summer camp will feature its very own Bible study program, complete with individual writing prompts, group work and scriptures to memorize.

“Discipleship was really important to Skipper, and it’s really important to me as well. We really want to disciple these kids and give them the tools to continue to grow after they leave camp.

We don’t want it to just be a great camp experience and then leave campus and that’s it. We really want it to impact them on a spiritual level,” Crystal explained.

“Another super important thing I’d like to express during camp is how loved and important that each child is. Every single one of their lives matter and God made them perfect just the way they are.”

Summer 2022 is scheduled to set sail at Camp Anderson Anchored towards the end of May, but there are still opportunities to get involved. There are open staff positions, including camp counselor positions for those 18 and older, and there are many ways to volunteer as well.

“There are a lot of great ways for people to get involved here, from volunteering on campus to giving monthly. We also have a scholarship fund set up so that we can offer scholarships for kids to come

to camp, so donations to that fund are always appreciated,” Crystal expressed.

“Most importantly, we just appreciate all of the prayers and outpouring of support we have received. If you want to get involved in some way, reach out to us. We appreciate you staying anchored with us here in Old Town!”

Have you had the chance to experience the magic that is White Springs? The historic structures, gorgeous scenic views and small-town feel all give way to a feeling of nostalgia and comfort. All of these details make this a special place to live and visit, and that is what drew Scott Gay and Julie Williams to the area. The couple is passionate about preserving the natural beauty of the area, and they have found joy in restoring old homes in White Springs over the last twelve years. In their portfolio are two historic homes that were in need of serious TLC, but with a dream and a lot of elbow grease, Scott and Julie set off to make them beautiful and functional once again. The first project that the pair tackled is one that is near and dear to Scott’s heart: the home he grew up in.

“I grew up in this home with my grandmother and mother. I knew everyone in the neighborhood back then, and I have fond memories of selling Christmas cards to our neighbors. I’m in my 50s now, but my journey with this home began again when I was in my 40s,” Scott explained. “I was living in Jacksonville at the time and began to think about what was next for me. I never imagined it would be coming back to White Springs.”

On one fateful day, Scott returned to his hometown to attend the annual Florida Folk Festival, and he witnessed firsthand the horrible shape that his childhood home was in. It was then that he decided he would not allow the home to continue to deteriorate.

“It just seemed like the right fit for me to restore this home. I was comfortable with the idea of living in White Springs then as well. I knew a lot of people in the area and had friends that lived here, plus I loved the idea of hunting, fishing and enjoying nature here,” Scott shared. “Julie is a big part of why I moved here also. She’s interested in gardening and plants, she loves to entertain, and she has gotten into mountain biking as well. It just seemed like a good fit for us.”

Julie weighed in, stating, “It fits our lifestyle as far as being outdoorsy with the biking, running and walking trails, and really just the community here fits us well. It’s not strange to go out for a walk with our dog and end up at a neighbor’s house for an impromptu visit on the porch! It’s a very casual town, and we love the community here.”

When Scott stumbled upon the state of his family home in 2010, he immediately knew that he had two options: restore the house to its original glory, or tear it down. As his renovation journey began, he started by pulling up the layer of carpet in the living room that had been added by his grandparents when

they acquired the home in the 1970s. Underneath that layer of carpet was 1940s linoleum from when his great-grandfather bought the home.

“I started peeling the layers of flooring and wallcoverings back until I found wood behind them! Normally you would not find wood in such great shape like the wood I found in the living room. There weren’t any holes in it or doors cut in… It was fairly intact,” Scott said. “So, the living space now has the original floors, which are roughly 120 years old, and they have been refinished twice. The grain pattern is all virgin timber and nearly impossible to recreate today.”

The discovery of the original wood floors sparked Scott’s enthusiasm for refurbishing the home to its former glory. He set out to create a space that makes you feel like you have stepped back in time, but with all of the modern conveniences that are needed to live comfortably.

“Once the living room was refurbished, I had the idea to complete the whole house and make it look like it did in the 1920s,” Scott shared. “There were no kitchen cabinets at the time, and it really started out as a glorified hunting camp for me and my buddies. But, eight years ago, when we decided to put down roots and live here, Julie came in and designed the living room and the rest of the home to be as functional as possible for us.”

What began as a hunting camp turned into the spot that everyone wanted to be. Every year during the Florida Folk Festival, the couple hosts a celebratory kick-off party in their backyard, and so the home quickly became the gathering place for their friends, family and folk festival attendees.

“Once we began to entertain here more frequently, we took a step back and

thought, if this is really how our life will be here, I definitely need a dishwasher!”

Julie laughed. “The design inspiration was authentic and antique, and we really took what was already here and built around that. We wanted the spaces to be warm and keep that original architecture, all while making it open, airy, bright and convenient. We sort of melded those two with the design and the function of the modern spaces.”

The finished living room is full of mementos and keepsakes, from a replica of the first ever Florida Folk Festival program to sentimental gifts given to the couple by their friend and fellow history lover, Johnny Bullard. An old tobacco rack proudly hangs on the original walls, giving a nod to the times when the rack was used to pick tobacco in the fields. Once it was picked, it would be carried into the barn to dry before being made into a cigarette. Now, the rack has found a home, proudly displayed as a focal point in the living room. As Scott was taking up the floors to refurbish them, he found old newspapers that had been used to insulate the home.

These papers date back decades ago, one detailing information about Israel before it became a state. This newspaper he found is framed and displayed in the living room, along with other sentimental family documents found in the home, like Scott’s grandmother’s youngest brother’s diploma from when he graduated elementary school.

“The room is almost like a small museum, really. I also found my granddad’s old farm books. All of the ledgers are displayed in the case. That’s where he kept up with labor,” Scott explained. “He paid people a couple of dollars a day, and reading those ledgers is so fascinating!”

After the renovations of his childhood home were complete, Scott and Julie set their sights on another local home: Mrs. Kendrick’s Cottage. A young couple lived there at the time, and Scott let them know that if they ever wanted to sell that he would love the chance to own and restore it. To Scott’s surprise, just two months later, the couple was ready to sell it to him and he had no choice but to jump in on the exciting restoration project.

“The process for renovating the cottage was similar to that of the first home: you begin by going in and emptying it of trash and debris, then you move on to ripping out carpets and getting it down to the wood. We kept digging and digging with that house, and eventually we were down to the bare basics,” Scott shared. “Very little original wood was salvageable, but by using the wood from other homes nearby we were able to give a nod to that original style yet again.”

As you can imagine, restoring an old house is not a solo venture. The couple worked with many talented people along the way, including one very special craftsman. Brian Futch, a friend and talented craftsman, taught Scott how to safely deconstruct old homes and preserve the lumber. While taking down three old, compromised houses on Kendrick Street, Mr. Futch educated the couple on the value of antique wood.

He worked alongside them, teaching the step-by-step process of cleaning, storing and preserving this beautiful and rare lumber.

Along the way, Scott and Julie experienced their fair share of construction mishaps that are typical of old houses, from dealing with rotting wood to refiguring their design plan when the entire back of the home fell off during the construction phase! Because the old home had been added onto a few times, a particular spot of the home was never fully attached, causing it to fall off one afternoon while working on the job. Thankfully no one was injured, and both Scott and Julie agree that the home turned out even better because of the mishap. They were able to add on a beautiful back porch, complete with handmade beams from another local house.

The story behind the name of Mrs. Kendrick’s Cottage is also a nod to historic White Springs. As Scott was growing up, he remembers his grandmother visiting Mrs. Kendrick, a neighbor down the street that he recalls as having puffy white hair and a big connection to the community! Her husband was the town dentist, and to this day there are plaques around the White Springs area that read “Kendrick Tenant House 1905,” sharing landmarks that the Kendricks owned at the time.

Scott remembers her fondly, so when the time came to name the short-term rental, Scott and Julie just knew that it should be known as Mrs. Kendrick’s Cottage in her honor. Mrs. Kendrick’s Cottage is now a short-term rental, offering guests the opportunity to stay in historic White Springs and explore the natural beauty all around.

Currently, the couple is working on plans for their next renovation. The project is a bit different as it involves the old fire

station instead of an old house. Scott and Julie plan to turn it into an office, keeping the organic modern style in mind as they conquer the renovation.

“The fire station is a rectangular concrete block building that was built in the 1970s to house the fire truck here in town, and it was built with 11-foot ceilings. When the town of White Springs renovated the station, their firetruck was undersized.

When they purchased an upgraded truck later on, it no longer fit in that building,” Scott explained. “Dr. Barnett, the town doctor, donated that land with a clause that said when the fire station is no longer using it, it would revert back to him. So, I purchased it from Dr. Barnett’s son. We are excited about the project and the renovation efforts there.”

The choice to settle in White Springs had much to do with a sentimental pull that both Scott and Julie had to the area, but the bustling community of creators, musicians, artists, outdoorsmen and conservationists is an added bonus.

The couple described the area as being filled with artists and passionate citizens, all of which are working to make the community a better place. The purpose of their renovations are simple: to restore historic White Springs to its former state and celebrate the beauty of the area.

“We really wanted to show people what you can do with these old houses. There

are not a lot of these old houses left, and a lot of the ones you see here are beyond repair and will have to come down, unfortunately,” Scott shared. “I found that the satisfaction you get out of knowing that we preserved a little piece of history and a little piece of White Springs makes it all worth it. I enjoy the idea of keeping this community a bit like it was at the turn of the century.”

The restoration of White Springs is well underway, thanks to efforts from community members like Scott and Julie, as well as the trailblazers that came before them. Their goal is to inspire others to invest in communities just like this one, all in hopes of preserving historic Florida and finding a community to call your own.

“This area grounds us, and preserving these historic places is something that people are really proud of,” Julie expressed. “It’s all about preserving that piece of historic Florida, while still moving forward with what’s happening today.”

Paddleboarding THE FLORIDA SPRINGS

Have you ever tried to SUP? SUP is short for stand-up paddleboarding, an activity that is growing in popularity. The newest innovation is inflatable paddleboards.

Gone are the days of struggling to tie the boards to the roof of the car and hope on a prayer that they don’t disembark on the highway. After inflating the boards with an electric pump, the boards only weigh 15 to 20 pounds and you’re ready to explore the water. My fiancée and I have taken on the task of paddleboarding as many Florida springs and parks as we can since purchasing our boards, and we’ve discovered some of the most breathtaking waters are in our very own backyard.

ICHETUCKNEE SPRINGS Fed by eight springs, the Itchetucknee Springs State Park offers visitors bluegreen waters year round. The constant current allows for guests to tube down the nearly 6-mile stretch forming the Ichetucknee River.

Although best known for its warm weather tubing, the 2,669-acre Itchetucknee Springs State Park is also a wildlife hotspot where beaver, otter, turtles and gar all call home. Guests can also enjoy three nature trails that guide visitors through lush forest or a sandhill environment with towering pines.

Paddleboards and kayaks can get a special view of the river at the north entrance starting point—where tubing is not permitted. The upper portion within the state park is a National

Natural Landmark, perhaps the most pristine spring run in the state and is best enjoyed by canoe, kayak or paddleboard in rain or shine. Because most visitors are tubing, which starts at the midway point, this course if often quiet and peaceful, and perhaps the most beautiful place, in my opinion, to paddleboard. Not to mention, it’s right in our backyard.

Equipment and tubes are available to rent at the south entrance if you do not have your own.

GINNIE SPRINGS Ginnie Springs is a privately owned park in Gilchrist County, about 6.5 miles northwest of High Springs. Located on the south side of the Santa Fe River, the water is clear, cold and teeming with accessible caverns and fascinating wildlife.

Since Ginnie is privately owned, there are few restrictions on visitors and is the only spring in Florida that allows alcohol. If you’re looking for a quieter day on the water or night camping, Ginnie may not be the best option for you. But if you’re looking to camp with a large group, they have 129 campsites, as well as a cabin, to accommodate many visitors at once.

Ginnie Springs has been privately owned since 1971. When scuba diving grew in popularity, the owners opened the park to the public. Though the most dangerous caverns are now marked off from the public, Ginnie Springs is still a nationally renowned diving spot that is still largely popular today.

In addition to diving, visitors can swim, paddleboard, kayak and tube along the Santa Fe River. The river contains various springs and sights to explore along the entirety of the waterway. If tubing, the run takes about an hour from start to finish. Being on a paddleboard offers the opportunity to explore, tie off for a snack or jump in for a quick swim.

RAINBOW SPRINGS Rainbow Springs is the focal point of Rainbow Springs State Park. It is a firstmagnitude spring formation in Marion County, just north of Dunnellon. This spring is the fourth largest in Florida and produces 490 million gallons of water daily. Rainbow Springs forms the headwaters of Rainbow River and empties in Withlacoochee River.

If you head down the waterway from Rainbow Springs, you’ll hit both KP Hole and Blue Run, two other entrances to the water. At KP Hole, you can rent tubes to float to Blue Run, or kayaks and paddleboards. Be warned that if you’re bringing your own equipment, you cannot get in the water at KP hole, as only their rental equipment is allowed Gilchrist Blue Springs

to start there. To avoid the crowds during our last visit, we put our boards in the water at Blue Run and paddled up past KP Hole to Rainbow Springs, then paddled back, for a total of about a 4-hour trip.

This paddle is unique in that most of the course is behind residential homes on the river. It was a nice change of scenery to see all the different homes, say hello to pets on their docks and wave to many homeowners enjoying lunch on their back patios. Boats are also allowed on this waterway, so be wary of waves stirred up to offset your balance, even in no-wake zones. At Blue Run, there’s also a restaurant called Swampy’s that you can stop at after your paddle for a quick bite or to watch others out on the water.

Our stand-up paddleboards have allowed us to experience the springs and waters around us in an entirely new way. Though we have many spots on our list to still visit, it’s always best to come back home and explore the spots in our very own backyard with new sights to discover every time. The great thing about stand-up paddleboards is that we can use them year round, so the adventure never has to end. Have Barbecue, Will Travel JODI & KENT HARRISS’ ADVENTURES IN BBQ

Jodi and Kent Harriss Over a decade ago, Lake City routinely hosted the Hog Wild–Pig Crazy BBQ Competition, and during one of those annual happenings, Jodi and Kent were offered the opportunity to judge the “Anything But” portion of the contest, which, as the name suggests, involved taste-testing anything the competitors made that wasn’t barbecue. This glimpse into the world of judging food-based tournaments quickly captured their attention but also left them wondering how they could judge the backbone of these delicious duels: the barbecue.

For those familiar with hearty, Southern-style cooking, barbecued food is a mouthwatering, summertime staple served at backyard gatherings among friends and family, but for Jodi and Kent Harriss, the slow-smoked grub has allowed them to travel the world and forge lifelong friendships while enjoying some of the best in barbecue.

Looking for an unusual new hobby and the chance to try a handful of fall-offthe-bone samples, the duo signed up for FBA’s training seminar to become certified judges where they learned the ins and outs of scoring, competition rules and regulations, what exactly qualifies as barbecued food and how to judge non-comparatively as well as other facets of the trade.

“We took the judging class with FBA here in Lake City in 2007 and judged that day and then we were hooked,” Jodi Harriss said.

The Harrisses spent the next 10 years judging barbecue-based competitions under the umbrella of the FBA—over 100 of them—but during this time, they wanted an excuse to venture outside the Sunshine State to fulfill a desire to travel while expanding their new savory pursuit. In 2011, while still members of the Florida organization, they also opted to join the Kansas City Barbecue Society, which is one of the biggest barbecue sanctioning bodies in the country, which also oversees international competitions.

Similar to when joining the FBA, Jodi and Kent had to become certified in the ways of the KCBS, which sanctions nearly 400 events across the world including nearly every state in America and over 35 countries, according to KCBS.us. Despite the name, these competitions aren’t limited to the sweet and saucy Kansas City-style of barbecue but encompass all forms of barbecue from the grilled ribs of St. Louis and the spice rubs of Memphis to the slowroasted Carolina method and the brisket base of Texas.

Requiring certification for prospective judges in these sanctioned competitions ensures that contests are unbiased, the results are fair and the judging methods and techniques are consistent.

Of course, becoming a member and earning certification doesn’t guarantee a spot at the judges’ table, as filling out an application for each competition

and getting approved is also part of the process. So what happens after getting accepted to volunteer under the judges’ tent?

In the case of KCBS-sanctioned events, judges like Kent and Jodi check in and receive a table number with six judges assigned to each.

These contests primarily focus on four categories of barbecue to sample: chicken, pork, ribs and brisket. To keep submissions anonymous, team entry numbers are changed on the sample boxes before they arrive at the judges’ table. To further their impartiality, judges never try two entries from the same team during the contest. When the six-piece sample box arrives, presentation is graded first, followed by the taste and tenderness of the meat. After rating each aspect and taking further notes, the process continues until all four categories are completed with water and crackers served in between each to help cleanse the palate.

BBQ in History Barbecue, also known as barbeque or BBQ, is both a way to prepare food and a style of food.

The traditional purist definition of barbecue is meat that is smoked and cooked slowly over wood or charcoal. Some may mistakenly refer to barbecue as foods also cooked on a grill, but those who know their barbecue understand the differences between barbecue and grilling.

It’s a hobby that doesn’t yield any sort of payment or expense coverage, but it has allowed Kent and Jodi to see the world while devouring some delicious food along the way. To date, the Harrisses have judged in 12 different states, Puerto Rico, Belgium, the Netherlands, Austria and the United Kingdom, creating unforgettable memories and forming lasting friendships throughout.

“We call it our barbecue family,” Kent said. “We’ve met some of the most interesting people from—you know, everybody’s got t-shirts and shorts on—you don’t know if they’re a CEO of IBM or if they’re a ditch digger, nor do you care, but it’s just some really, really interesting people. And our friends over in Europe that we’ve met, gosh, they just pulled you in. They were so welcoming, so friendly, so accommodating.”

Though each international adventure has had its noteworthy moments, one of Kent and Jodi’s most momentous trips was to Salzburg, Austria, where they were greeted by the barbecue competition rep with a tour of the city synonymous with the filming of The Sound of Music and a sampling of the country’s renowned sweet: the Mozart ball, which is a chocolate confection filled with nougat and marzipan.

When the Covid pandemic put a halt on flying to international competitions, Jodi and Kent began touring states of interest in their camper while attending available competitions on their journey—turning a leaf-peeping road trip to Vermont into a fall foliage and barbecue expedition through the Green Mountain State and New Jersey with current summer plans to visit their grandson in Ohio while judging in nearby Wisconsin and Illinois.

According to The Daily Meal, a culinary and entertainment site, barbecue is believed to have originated in ancient times. The term may have derived from the native Haitian Arawakan word “barbakoa,” meaning a framework of sticks on which meat was traditionally cooked. Eventually, Spanish settlers used the term barbacoa and spread this method of cooking to other regions of the world.

Enjoyed across the globe, barbecue is a tasty method of cooking that lends itself well to many different types of foods. The smoky, slow-cooked delights many people instantly associate with classic barbecue are perhaps most associated with the southern United States — with various states boasting that they are the true masters of barbecue. Texas, Tennessee, North Carolina and Missouri are often heralded as some of the top states for barbecue. Dry rubs, certain cooking methods and sauce are just some of the things that help people differentiate regional barbecue styles.

With 86—soon-to-be 100—competitions with the KCBS, 107 events with the FBA and a dozen or so non-sanctioned events under their belt, Jodi and Kent still have a few bucket-list competitions in mind like the acclaimed Jack Daniel’s World Championship Invitational Barbecue and the American Royal in Kansas City, which are the world’s biggest barbecue-based competitions with over 500 teams that participate.

What began for Kent and Jodi as a fun, local activity back in 2007, has turned into a one-of-a-kind pastime that’s kept their bellies full, their wanderlust intact and even gave them an unwavering barbecue-centered family. ■

Lynne’s journey with personal growth and development began years ago, catapulted by a desire for freedom. Lynne found herself feeling unmotivated and undisciplined, and she believed that her circumstances were to blame. It was not until she decided to let go of her limiting beliefs that she truly broke free and experienced the beauty of living unashamed and unafraid. She began her journey to healing and dreaming again by creating healthy habits that helped her reach her goals. “When I share my story, I often tell people that I’ve gone from broken to bulletproof. My life is not perfect, but I do have systems in place so that when those darts come at me, I can handle it,” Lynne shared. “Now, instead of just being consumed by the chaos of life, I have systems in place to stop the madness. Then, I reprogram and get back on track.”

So, how did she do it? Lynne weighs in on the importance of building healthy habits, as they are stepping stones for accomplishing your goals and making your dreams a reality. When she first began her personal growth journey over seven years ago, she called up a trusted friend and asked for advice on how to propel herself forward. The advice that she received changed her life.

“She told me to write down daily gratitudes. She challenged me to get them down on paper every single day.

That was the one thing that I began to do and the first habit that I had ever created,” Lynne said. “I was really undisciplined at the time. You can tell a lot about people by looking at their daily lives, and mine was a mess! I never created habits, so that was the first habit I committed to. From there, I began to stack habit upon habit, and that is really what helped me grow out of that broken mindset.”

Writing down daily gratitude can be a great way to shift your mindset and help encourage positive action throughout the day. In addition to this habit of practicing gratitude, Lynne also suggests writing down your goals with pen and paper. Oftentimes, a goal lives in our head but never makes it to paper. Writing your goal down not only keeps it at the top of your mind, but also helps to narrow your focus and encourage you to do the work daily. Begin with one habit, and then once you have mastered it, move on to the next. Repeat this process over and over again until you have created healthy, consistent habits that move the needle forward.

Another of Lynne’s keys to success with goals is having accountability and investing in your growth. Lynne attributes much of her personal growth to her experiences with mentorship, so much so that she is now a mentor to women all over the nation.

“I really became the mentor and coach

With any form of goal setting, it is imperative to stay committed to accomplishing that goal. Whether you are choosing to prioritize your physical wellness or pursuing a new professional skill, investing in yourself is the key to success.

It’s not always fun… Actually, it’s not fun when someone points out a blind spot to you, and the truth is that we all have them. It’s not fun, but it’s where the growth takes place,” Lynne said, adding, “Sometimes we are just so close to our circumstances that we can’t see the big picture. When you are in the painting, you can’t always see the full picture or the frame.

“Investment in personal growth is so important. We will buy a new car, or buy a new outfit, but we won’t invest in our personal growth. Investing in your personal growth is one of the most powerful things you can do for yourself,” Lynne explained. “I often hear people say that they don’t have time to slow down and work on themselves, but if you don’t slow down and work on you, sooner or later it will catch up with you. Do the work. Whatever the work is that you need to do… Do the work! Forgive the person.

Let go. Start over. Whatever it is, just do it. You will be so grateful that you started today and you will be able to show up better for your family, your community and the world like never before.”

Weddings happen every year in North Florida, but when Shelly Monroe and Matt Watson said their vows on October 23, 2021, it was truly a dream wedding come to life. For these two devout Christian people, they believe their love story—how they met, fell in love and married—was divinely inspired by the very hand of God. This amazing couple put off marriage until they met in their mid to late 30s, as they waited for the Lord to send them each other. When Matt’s sister crossed paths with Shelly at a funeral for Shelly’s uncle, Matt’s sister, Hannah, decided Shelly and Matt would make a great match and asked if she could pass their numbers to one another. Shelly agreed, and they met soon after and fell in love. Embracing a long-distance relationship, the couple saw each other every weekend as they courted and got to know one another. Matt asked Shelly to marry him less than a year later when members of their two families gathered at the beach in West Florida for a week of seaside fun in 2021. Of course, Shelly was surprised and immediately said, “Yes!” as they kissed beside the Gulf of Mexico while their families cheered.

Held at the stunningly restored Blanche Hotel in downtown Lake City, the Live Oak bride and Crestview groom could not have been happier on their wedding day. More than 200 family members and friends were present for the wedding at the exquisite hotel for the occasion.

Smith, an event coordinator for Imperial Productions, the wedding party gathered early in their separate bride and groom suites. These special rooms, adorned with vintage furniture and accessories, are a part of the wedding package offered by the Blanche. Matt and his groomsmen prepared for the wedding and sent notes back and forth to the bride and her bridal party. Meanwhile, the ladies enjoyed getting ready for the big day with hair and makeup styled by friends and family of the bride: Peyton Smith, Brooklyn Cashmore and Sarah Monroe.

The Blanche’s unique and private suites provided a special time for both groups to come together and prepare for the most important day in the lives of the bride and groom.

As wedding time approached, happy guests began arriving while the bride and groom met at the top of the beautiful, tall staircase where Matt was brought face-to-face with his beautiful bride in her spectacular wedding dress amid the brilliant sunlight shining through magnificent windows. Due to a tight photo schedule, they met prior to the wedding as the sun provided a heavenly aura while they kissed and photos were snapped by the dozens. It was a moment captured with hundreds of photos, both professional by June Rose Photography of Lake City, personal cameras and cell phones.

Upon arrival, guests were presented with elegant, printed cards detailing the wedding schedule. These stood as a thank you to the guests and family for their dedication to the bride and groom, as well as to the Lord for His part in their lives. A special part of this keepsake paid reverence to family members who had already gone on to be with the Lord.

At 5 p.m., Shelly began her walk down the aisle in her breathtaking, vintage lace gown with a long train and veil that flowed behind her. Shelly chose her wedding attire, along with her bridesmaid’s gowns from OML Bridal and Formal in Lake City. In her hand, Shelly carried a fabulous fall collection of flowers from CC’s Flower Villa of Lake City.

The bouquet was comprised of flowers given to Shelly in a special presentation by dozens of her friends before the ceremony. Shelly was escorted down the aisle by her mother, Kathy Hals, and

was given in marriage by her mom and Shelly’s father, Douglas Monroe, upon her arrival at the altar.

During the service, pre-recorded songs sung by the bride and groom were sung along with The Marriage Prayer and “Somebody’s Praying,” sung by Shelly’s late uncle, Rev. Randy Lamb.

The wedding, performed by Matt’s pastor, Rev. Ron Williamson, Shelly’s family member Jerry Lamb and Rev. Jim McCoy, was a traditional Christian service, following the theme of the bible verse Ecclesiastes 4:12, “A cord of three strands is not quickly broken.” The ceremony included a formal foot-washing service and braiding of a cord of three strands by the bride and groom, as well as an explanation of the bride’s three-stranded engagement ring, provided by Joey the Jeweler of Crestview.

Happiness spread across the guests, as Shelly and Matt promised to love, honor and cherish each other “until death do us part.” Now Mr. and Mrs. Matt Watson, the groom dipped his new bride for a kiss. The audience clapped and cheered for the new happy couple, as the two flower men danced the mothers and grandmothers of the bride and groom down the aisle.

Arriving downstairs at the reception site, guests were served with a delicious catered meal and exquisite wedding and groom’s cakes prepared by Lake City’s Amy Strickland.

Dancing and visiting made this unforgettable evening even sweeter, as the two-year pandemic had kept many families and friends apart until this event.

A special souvenir menu and bookmark was present at each table setting, along with photos of Matt and Shelly. After the festivities, the couple departed, running through a long line of sparklers to the vintage car that awaited them at the end of the street. Whisking them away in a true 1940s vintage fashion, Mr. and Mrs. Matt Watson honeymooned in South Florida for a week before settling into their residence near Crestview. The couple begin their new life together, along with Shelly’s rescue cat, Bleu, who now rules the Watson house. ■ Spring 2022 | 67

Ingredients • 8 ears yellow corn, husks removed • 3/4 c. mayonnaise • 2 tsp. chili powder • 1 cup crumbled or grated cotija cheese • 1/4 c. chopped cilantro • 3 limes, cut into wedges Directions Preheat the grill or grill pan to mediumhigh heat. Grill the corn, turning three or four times, until it is slightly charred all over, about 10 minutes. Brush the corn with a layer of mayonnaise and sprinkle with chili powder, cotija and cilantro. Serve warm with lime wedges.

Ingredients • 1 medium sweet yellow or orange • 1/4 cup butter, cubed pepper, quartered • 2 garlic cloves, minced • 1 medium sweet red pepper, • 1 tablespoon lemon juice quartered • 2 teaspoons capers, drained & chopped • 1 medium bunch of asparagus • 1 tablespoon minced fresh parsley • 2 purple onions, sliced • 2 medium zucchini, • 2 tablespoons olive oil cut in half lengthwise • 1/2 teaspoon salt • 2 medium yellow summer squash, • 1/4 teaspoon pepper cut in half lengthwise Directions: In a small saucepan, melt butter over medium-low heat. Add garlic; cook 2 minutes. Add lemon juice and capers; cook 2 minutes. Stir in parsley. Brush vegetables with oil; sprinkle with salt and pepper. Cut vegetables as desired. Grill zucchini, squash, asparagus and peppers, covered, over medium heat 4-5 minutes on each side or until crisp-tender, basting occasionally with butter mixture. Grill onions, covered, 1-2 minutes on each side or until tender, basting occasionally with butter mixture. Transfer to a serving platter. Drizzle with remaining butter mixture. ■

“I always knew I wanted to teach art,” said Chris Flanagan. “I loved to sketch and have notebooks from school where I covered the margins with drawings, mostly of horses.” Her enthusiasm and commitment led to a career with the Suwannee County School District from which she retired in 2010. She frequently runs into her former students while she is out and about, taking a few minutes to catch up or reminisce. When she retired, it was actually a former student who took her place as art teacher at Suwanneee High School.

Chris and husband Joe moved to Suwannee County in the late 70s. Joe had a job with water management and she was a substitute teacher until hired full-time at the Boys Ranch to teach English and reading. After a few years, she left to raise her family and establish their homestead that over the years, besides housing children, also provided sanctuary to: horses, ducks, guineas, donkeys, goats, bunnies, a pot-bellied pig, dogs, cats, tortoises and lizards. While raising their children, she continued creating her own art and giving private lessons after school. She also worked with the Live Oak Artist Guild (of which she has been a member since 1979) to bring a program called “Art in the Classroom” to the students of Suwannee County. It was a grant program that provided posters of famous artists that the volunteers from the Guild could take to the students and give a history of that particular artist and their genre.

Chris was also an extraordinary Girl Scout leader. She took her troops on many adventures, including a trip to Savannah to the Juliette Gordon Low house and museum, which my own daughter still recalls fondly.

Her career in the Suwannee County schools began with an initiative called “Art in the Elementary Schools” when she was hired as the art teacher for both Suwannee East and Suwannee West, which were at that time the two public elementary schools in Live Oak. Then in the early 90s, she was hired to be the art educator at Suwannee High School (SHS). During her time at SHS, she promoted her students’ creativity by entering their works in the North Florida Community College High School Art Show where they won several trophies and over the years retired three(had to win that particular trophy three years in a row). “We always won a trophy,” she said, smiling. They also displayed artwork at Valdosta State and, for several years, her students’ art was accepted for exhibition in the Florida State Fair.

Even twelve years post retirement she continues at the school volunteering her time for Art Splash, a summer program she helped start that provides a limited number of students an opportunity to participate in a themed program that introduces a specific art form to them, including art history. Morning and afternoon sessions allow them time in which they create either one large or several smaller projects representing that art technique.

Chris’s preferred medium is colored pencil. She is an active member of the Colored Pencil Society of America and a charter member of the Gainesville chapter (the first in Florida) which is one of three in the state. She has had her pieces accepted into the International Show five different times. Only 120 pieces are accepted internationally each year. She enjoys traveling to the shows and appreciating others’ art.

Other post-retirement, endeavors include being a committed volunteer at Heritage Park and Gardens where she and Joe are also sustaining members. Countless hours are spent there cleaning the

gardens, decorating for the annual Tour of Homes, providing “sleigh” rides at the Christmas extravaganza, painting the photo ops for visitors to enjoy and generally whatever else needs done.

She is also a volunteer for Friends of the Library, helping to set up and promote their annual book sale.

They are both aficionados of the Florida State Parks and have often odonated their time at the Florida Folk Festival at Stephen Foster Folk Culture Center State Park on Memorial Day weekend. She can’t commit to a favorite Park although she has said it’s Suwanneee River State Park, “But really it’s whatever one I’m in; they all offer something different and wonderful,” Chris said.

And as a member of The Live Oak Artist Guild, she has painted several of the barn quilts displayed throughout Suwannee County. “I don’t know how many I’ve painted; if I knew I’d probably stop!” She estimates she’s been involved with at least half; there are close to 70. These are very large works of art, (4’x4’ and 8’x8’) and the money earned goes back into the Guild.

When she isn’t volunteering, she and Joe have traveled extensively throughout the States and internationally. She picks Scotland as her favorite trip overseas because she got to ride horses on Loch Ness. Horses have been a passion of hers since childhood, and she utilizes the trails provided on water management land weekly. She also commits to cleaning them and is an advocate for the rules of use so the trails are available for generations to come.

Edward George said: “Everyone is enthusiastic at times. One person has enthusiasm for 30 minutes, another person has it for 30 days, but it is the person who has it for 30 years who makes a success of life.”

And indeed, she has.

U-Pick Strawberries Branford Farm Stand

Meet the Garrett family, commercial farmers, and owners of the Branford Farm Stand. The Garrett’s bustling u-pick strawberry field has captivated the community since the beginning of 2022, though the Garrets offer the community much more than fresh fruits and vegetables.

Nearly 30 years ago, the Garrett family purchased property to farm commercially. Joseph Garrett’s father and uncle began the family farm on the now 800-acre commercial farm that grows bell peppers, squash and eggplant among an assortment of other vegetables. Joseph and his brother Daniel Garrett now run the farm from the previous generation. In January 2019, the Garretts had the opportunity to purchase 80 acres of an old tobacco farm that sat across the street from their farm. The original plan was to use the property to grow more commercial vegetables, but a different idea began to grow instead.

On the property sat old tobacco barns and the original homestead built in the early 1940s, which was practically condemned and overtaken by the land.

The Garretts and the Leos family, who help manage the farm, hatched an idea to transform the building into a farm stand with the twist of adding a Mexican restaurant inside, and the Branford Farm Stand opened in April 2021.

As previous generations of the Garrett family had owned u-picks and fruit stands in the past in Homestead and in Georgia, Joseph decided to continue the tradition and grow five acres of strawberries next to the Branford Farm Stand. Opening January 1, 2022, the family has offered u-pick strawberries every weekend since and has been flooded with the community’s support.

“Previous generations of my husband’s family have owned farm stands and u-picks, so it’s really special to us to carry on that tradition, as well as providing the community with a memorable experience,” Katie Garrett, Joseph’s wife, said.

The weekend u-picks have been very popular, and the Garretts may grow more strawberries next year due to the popularity. Visitors can pick as many or as little berries as they choose, and you only pay for what you pick at $3.25 a pound.

All the supplies are provided, as well as carts for those venturing to pick multiple bags of berries or to push small children through the fields.

At the farm stand, most of the produce is grown by the Garrett family. Expect to see bell peppers, squash, zucchini, watermelons, tomatoes, okra, onions, field peas and many other seasonal offerings. If you’re looking for something sweeter, try a strawberry milkshake made with their homemade ice cream that you can also purchase by the cup or pint.

Though the strawberries are expected to last until sometime in April, the Garretts plan to freeze enough strawberries to offer their crowd-favorite milkshakes even when the u-pick is not in season.

The Branford Farm Stand also takes their Mexican food very seriously. Serving authentic food, the stand even makes their corn tortillas fresh daily from a tortilla machine they had shipped in from Mexico. Though the menu started small, they now offer a full menu including items such as tacos, tamales, taco salads, street corn, churros and Katie’s go-to, the steak bowl.

“My favorite part of the u-pick is seeing all the families and people that come out to pick strawberries, of all ages,” Katie said. “We see so many people, and they’re all out there picking and having so much fun.” Katie continued, “People absolutely love strawberries, they pick them in bulk to make jams and jellies, desserts, freeze them and give them as gifts to their neighbors and church groups. We really love seeing how much joy strawberry picking brings to the community.”

“I know they’re our strawberries, but they’re the best I’ve ever had,” Katie said.

“A lot of people have never had freshly picked strawberries – they’re completely different than what you buy in the store.

The berries you buy in the store have gone through multiple changes of hands and have been in a cooler for quite some time, so they lose a lot of the sweetness.

Whereas when you pick them right out of the field, they’re super sweet and not like

Strawberry Jam

If you have a lot of berries to utilize, consider making your own jam that can be stored, frozen or given to others to enjoy!

INGREDIENTS

• 2 pounds fresh strawberries, hulled • 4 cups white sugar • ¼ cup lemon juice

DIRECTIONS

In a large mixing bowl, crush the strawberries in batches until you have 4 cups mashed. In a saucepan, mix strawberries, sugar and lemon juice. Stir on low heat until the sugar is dissolved.

Increase to high heat and bring the mixture to a boil. Continue to stir until the mixture reaches 220 degrees Fahrenheit.

Place a plate in the freezer and remove after 10 minutes. Put a teaspoon of the liquid jam onto the cold plate and return to the freezer for one minute. Run your finger through the jam.

If you can make a line through it without it trying to run back together, it’s ready to be canned.

Transfer to hot, sterile jars leaving ½ inch headspace, then seal. Process in a water bath. If the jam is going to be eaten immediately, don’t process and just refrigerate. ■

Composting is the aerobic decomposition of organic materials by microorganisms. It transforms raw materials—such as leaves, grass clippings, garden trimmings, food scraps, animal manure and agricultural residues— into compost, a valuable earthy-smelling soil conditioner, teeming with life.

Every year, U.S. landfills and trash incinerators receive 167 MILLION TONS OF GARBAGE. Benefits of Using Compost: • Provides nutrients back into the soil as well as to the plant.

• Helps the soil hold water.

• Feeds the microbes and soil life.

When using compost, keep in mind that the nitrogen content goes down as the compost is composted. Therefore, it’s a good idea to add another nitrogen source later in the growing season.

There are various ways to use compost.

You can sprinkle compost on top or mix it into your garden beds, gently rake compost into tree beds, blend it with potting soil to revitalize indoor plants or spread it on top of the soil on your lawn as a soil amendment.

Homemade Compost: Making your own compost is a wonderful way to get rid of your food waste by recycling it.

When making your own compost, consider the salt content of your food. You wouldn’t put salt water on your plants, so you want to be mindful of the amount of salt content food you add into your compost pile.

Store Compost: If shopping at a box store for compost, two common types of compost found are cow manure and mushroom compost.

Mushroom Compost: Mushroom compost has higher PH. Columbia County Horticulture Agent, Erin Harlow, recommends mixing mushroom compost with a bag of soil or native soil before adding it into the garden.

Manure Compost: When using manure in the garden, avoid pig and domestic animal waste.

In Florida, the soil tends to be very sandy, so adding compost to the native Florida soil encourages it to hold water. Compost contains lots of organic material which also tends to hold water more easily.

Soil: Row Crop Extension Agent Jay Capasso at the UF/IFAS Extension Columbia County said, “You can get your soil tested at the extension lab at UF. I recommend doing this annually. Then, you can contact the extension office to get help interpreting the report. Fertilizing the soil is not a one size fits all type of thing.

Therefore it is important to get an annual soil test.”

Ingredients • 1 cup uncooked long grain white rice • 1 quart warm water • ½ cup whole milk • 2 teaspoons pure vanilla extract • ½ teaspoon almond extract • ½ teaspoon ground cinnamon • ¼ cup sugar • Whole cinnamon sticks, for serving

Ingredients • Three, 4-ounce cans diced green chilies, with juice • 2 cups grated monterey jack cheese • 2 cups grated sharp cheddar cheese • ½ teaspoon salt • ½ teaspoon pepper • Splash of hot sauce • 6 eggs, beaten • Pinch of cayenne pepper, optional

Directions Combine rice and warm water in a blender and blend for 1 to 2 minutes until the rice breaks up but does not form a powder. Let the mixture sit in the refrigerator for 6 hours or overnight. Strain the rice mixture into a container through a fine-mesh sieve of several layers of cheesecloth to remove the rice solids.

Pour the rice water into a blender and add the milk, vanilla and almond extracts, cinnamon and sugar. Blend for 1 minute until well combined and smooth. Serve the horchata over ice with cinnamon sticks as the stirrers.

Directions Preheat oven to 300 degrees Fahrenheit. Spray a 12 by 8-inch baking dish, or a pie pan, with vegetable oil cooking spray. Spread out the diced green chilis evenly over the bottom of the dish. Mix the cheeses together and sprinkle them evenly over the chilis. Add the salt, pepper and hot sauce to the beaten eggs. Add a pinch of cayenne pepper for a spicier dish. Pour the eggs over the chilies and cheese. Pat the mixture down with the back of a spoon. Bake for 45 minutes, until the center is firm. Allow to sit for 10 minutes, then cut into small squares with a bread knife.

Serve warm. ■
