School Days We're very excited about Back-to-School, it is the time to get fresh at these times, This time it's a little bit different, in the face of these uncertain times, during the pandemic, When Alberta students from grades 7 to 12 switch to online learning to help stop the spread of COVID-19. Alberta Premier Jason Kenney announced the change on Nov. 24. You’d think that’d be good news for students, but Alberta Premier Jason Kenney said only older grades would be affected because, according to him, “teenagers are much more likely to transmit the virus than younger children. ”Students will also return from their winter break one week later than planned, beginning school on Jan. 11.

In Ontario, Minister of Education Stephen Lecce said that schools remain open because, according to Ontario’s chief medical officer, schools remain safe. In British Columbia, Provincial Health Officer Dr. Bonnie Henry also said they weren’t seeing a lot of transmission in schools and aren’t likely to make closures. Earlier this month, Quebec Premier François Legault said the province is seeing transmission in schools and announced an extended holiday break with online learning beginning Dec. 17.

Although other provinces are also considering closures, they have yet to take that step.

Advice A whopping 9 out of 10 kids don’t eat the recommended 1 to 3 cups of vegetables per day, the Centers for Disease Control and Prevention (CDC) reports. And a full one-third of the veggies they do eat are white potatoes, most often French fries.

“There are so many benefits to eating enough produce in a diet of any person of any age, but especially in kids who are growing and developing. The fiber, antioxidants, vitamins, and minerals in veggies help with brain development, building and strengthening their immune system, aiding in digestion and other important body processes,” says Stefani Sassos, M.S., R.D.N., the registered dietitian for the Good Housekeeping Institute.

With flavors ranging from corn and carrot to beet and bell pepper, your kids will enjoy sampling them all and selecting their faves. It can be our little secret that veggies are the first item on each ingredient list— meaning they’re the most-used ingredient in the recipe—so they’re scoring a solid dose of fiber, and a bit of potassium and iron.

Find several veggie-boosted smoothie recipes, or simply add 1 cup of greens or ½ cup of cauliflower rice or florets to your favorite mix.

7. When in doubt, air fry.

Since fries are often among a kid’s favorite foods, cooking potatoes and other veggies in an air-fryer is a nice way to tip-toe out of hidden territory to, “Hey, how about that?! by SELENA BARRIENTOS Kelly Ripa and her husband, Mark Consuelos, didn’t just pass on their good looks to their three kids — the couple of 24 years also handed down their unique sense of humor.

Case in point when the Live With Kelly and Ryan host posted a family photo on Instagram circa 2003 for “Throw Back Thursday.” The pic shows Kelly front and center holding her youngest son, Joaquin, surrounded by her eldest son, Michael, and her daughter, Lola.

But fans were in for a surprise when they swiped right to take a look at the second photo in the gallery. Seventeen years later, Kelly and her kids recreated the same snap on what appears to be a beach. We’d say it’s pretty spot on! “#TBT 2003 vs. 2020 *Objects may appear larger,” the 49-year-old TV host joked.

Fans couldn’t get enough of the hilarious picture comparison. Thousands flooded the comments section with plenty of “😂😂 😂” emojis.

“This is brilliant, you totally nailed it, the look and all 😂 Love your beautiful family,” one person wrote. “But your look of being over it is exactly the same!! 😂,” another added. “You’re the only one that looks younger and smaller and more gorgeous!!! ,” a follower commented.

This isn't the first time that Kelly has posted this particular snap. For Mother's Day in 2019, the daytime TV personality shared it on her Instagram page while writing about how time flies in the caption.

What's more, she also posted it back in the summer of 2018 with a caption that every parent can relate to, courtesy of Mark.

"A #tbt 2003 reminder: 'a vacation with your kids is a trip, not a vacation' @instasuelos ," she wrote.

Should a Single Mother Of a 7-Year-Old Child Get Rid Of Her Land Line?

My sister recently posed the question on Facebook and was deluged with opinions from both sides of the fence.

Arguments came flying at her to keep or ditch the landline, particularly centered around the pros and cons as a mother of a 7-year-old child. The cost savings would not be trivial, especially considering the duplicity of paying for both a landline and cellular service, but there were other factors to consider whether cutting the landline really made the most sense…

Cutting the land line would trim somewhere around $600 from my sister’s annual expenses. But some friends and family argued via Facebook that connectivity and connection quality of landline alternatives like the Magic Jack or other inexpensive landline replacements were not as dependable as an old fashioned landline connection.

The argument was VOIP and cellular options were unstable and unreliable. VoIP services like Vonage and Skype rely on both a reliable internet connection and electrical power, both of which could easily go out during an emergency (or all the time, depending on where you live and who your providers are). Cell phones require a charge and a steady signal to make a call. Corded telephones on the other hand receive their power through the phone line and usually would work when the electrical grid is out during an emergency.

But how many households still use a corded telephone any longer? Sure, the suggestion to keep a single corded phone in the home for emergencies seems pre-cautiously prudent, but in small apartments where phone jacks are sparse and space is a premium, the extra phone seems a tough sell.

For the elderly and young children, ease of use can be an arguable concern. Some amongst the senior demographic still steer away from hi-tech gadgetry with complex user interfaces, making a land line the preferrable option. While this may be true for any given segment of the population, young or old, there are many simple feature cell phones available for easier emergency dialing easier.

In my sister’s case, her 7-year-old is fully capable of using a cellphone (go ahead and try prying Nimble Quest away from him). Her child is never home alone, so he always has an adult nearby knowing of his whereabouts. Neighbors were notified in advance so in case of an emergency, she could call upon their aid instead of just depending upon a phone.

These and other cheap pay-as-you-go cell phones were recommended by my sister’s friends to keep on hand for my nephew to access in case of an emergency.

So is it safe to get rid of a landline with a child in the home? My sister has come to the conclusion cutting the land line will be fine for both her and her son, and I tend to agree. But everyone has a different story, where geographic location, signal strength, and even local community support can factor in, so one should evaluate their own needs carefully.

I was recently invited to a birthday party for a toddler and was stunned to find it wasn’t just the parents glued to phones, tablets, and TV screens during the party. Kids as young as 18 months were scrolling and gaming. I’m not a parent just yet, but seeing this led me to wonder: what’s the “right” age for introducing technology to children?

Turns out, age three might be the magic number.

Dr. Carolyn Jaynes, a learning designer for Leapfrog Enterprises, which produces electronic toys and gaming devices for children, told PBS:

“By age three, many children are active media users and can benefit from electronic media with educational content. This content often uses strategies such as repeating an idea, presenting images and sounds that capture attention, and using child rather than adult voices for the characters.”

On top of that, the American Academy of Pediatrics recently standardized their practice, which advises no screen time for children age two and under.

By ages 2 and 3, kids should watch no more than 1 hour a day.

But not all screen time is created equal. For example, you and your baby playing an interactive color or shape game on a tablet or watching high-quality educational programming together is good screen time.

The jury's still out on the long-standing debate of "How much screen time is too much?" In 2016, the American Academy of Pediatrics (AAP) revised its previous recommendation of no screen time for children under While these recommendations are looser than the group’s 2010 ones, they might still be too restrictive for many families —and possibly unnecessary. A study from Oxford University published in December 2017 found no consistent correlation between parents who followed the A.A.P. screen time guidelines and young children's well being. That study’s lead author, Dr. Andrew Pryzbylski, said in a statement, "If anything, our findings suggest the broader family context, how parents set rules about digital screen time, and if they’re actively engaged in exploring the digital world together, are more important than the raw screen time."

Remember when we all lost our minds over The Wing’s decor when founders Audrey Gelman and Lauren Kassan opened their first outpost in NYC’s Flatiron district back in 2016?

With every subsequent club location, things have just gotten better and better. And it’s not just the broad strokes with furnishings and finishes—the details are on point, too. I mean, I even wrote a story about how pretty (and budgetfriendly!) the blush dinnerware they use in their cafes is. So when we heard the SoHo (South of Houston) location was expanding this week and opening a brand new concept, “The Little Wing,” a kid-centric space offering babysitting services and child enrichment classes, we had to take a tour.

Turns out, the littles space is just as modern, minimalist, and full of smart decorating ideas as the main floor. Plus, it’s decked out in Crate and Kids products. So you really can get the look at home, whether you have kids or not, and here’s how.

1. Big Storage Pieces Can Split Up a Large Room If you’re lucky enough to have a big space, you can still carve it up into separate play areas for your kids or yourself.

All you need is a few tiered storage units like the 2-in-1 8Cube Bookcase, which can be assembled vertically or horizontally to serve as visual room dividers. Graphic rugs anchor and define each little area and provide softness under foot. What’s great about the Crate and Kids pieces is they have built-in compartments and shelves at kid-height, so children can clean up after themselves.

3. Flexible Seating is Clutch If you think beanbag chairs are cheesy, you haven’t seen Crate and Kids’ Adjustable Bean Bag Chairs. These guys can be laid flat like a cushion or raised up with the two straps to become a lounger. They’re also relatively stackable, so not a bad idea to keep a couple around if you’re in a small space and like to entertain around, say, your coffee table. Or throw a bunch in a circle, and create your own conversation pit.

4. Pegboard is a Great Material for Displays Whether decorating a space for kids or adults, pegboard is a relatively cheap, inexpensive way to work your walls and turn them into vertical storage “units” for different kinds of supplies, books or even clothing and accessories. You can use colorful pegs or hooks to to hang your items from, or add little shelves that fit right into the peg holes. Just go to a hardware store. You can find this kind of thing there and paint or stain it to match your color scheme.

5. Remember to Look Up—and Decorate the Fifth Wall On first glance, much of The Little Wing ceiling might look like it’s just white. But it’s actually a version of punched tin, inspired by the original ceilings in the SoHo outpost, painted in a whisper light pale pink (exact shade details above). Working with a fabricator out of Industry City, The Wing’s interiors team sought to match the authentic tin tiles in places where they could salvage them. And as for the entrance, they had this fun punched patterned tile of their own created, which features their special logo among other decorative motifs. Tin is back in, so consider this kind of finish for your ceiling, backsplash or even walls. A matte paint job makes it feel new again, and it’ll always add character to a cookie cutter space.

Part of Martin’s storytelling included rich descriptions of each of these young entrepreneurs’ bedroom spaces—ones we loved seeing reinterpreted for 2020. That made us want to imagine what their adult spaces would look like. Scroll on to see how each character would design their studio apartments as the new (and older) Kristy, Claudia, Mary Anne, Stacey, and Dawn in Netflix’s “The Baby-Sitter’s Club.”

Often seen as the main protagonist of the series, Kristy is the sporty, outspoken founder of the club. According to The Babysitter’s Club Wiki Fandom, where we admittedly brushed up on our BSC knowledge (unfortunately, skimming all 131 books to find tip-offs on specific room decor was not an option), she adorned her walls with posters of Olympic athletes and football stars.

Claudia’s studio has to be the most fun. She is an artist to the core who loves to use fashion as art, making herself the ultimate canvas. She is said to have painted several portraits of her dear grandmother Mimi as well as painting a series of junk food pop art inspired by Andy Warhol.

She is also known for her affinity for dogs, The Mets, and her “uniform” (jeans, a turtleneck, a sweater, and sneakers). Living with six siblings, Kristy isn’t shy about speaking her mind and asserting her opinions, meaning her apartment choices are probably bold, to the point, and decisive.

She always has snacks on hand, loves to sleep in, and doesn’t care much for cleaning. Oh—and she is the only member with her own phone line. Sign us up for a sleepover at Claudia’s!

Likes: Junk food, art, “Nancy Drew” mysteries, shopping, clothes.

Dislikes: School, foreign languages, and sports.

Likes: Sports, being a businesswoman, anchovies.

Dislikes: Crying, snobs, cabbage, blood, people who chew with their mouths open or smoke, loose teeth, bagpipes, and dressing up.

Kristy’s biggest strength: Her enthusiasm (although sometimes it gets her into trouble). She once had to write a 100-word essay on proper classroom behavior because she shouted “Hurray!” at the end of the school day.

Claudia on fashion: “I think clothes make a statement about the person inside them. Since you have to get dressed every day, why not at least make it fun?”

Mary Anne Spier, Secretary of The Baby-Sitters Club Mary Anne is a sensitive, introverted soul who is highly organized and sentimental (she uses a cedar box gifted to her by her grandmother to store special letters). We might glean her studio aesthetic from her personal style, which is often described as conservative and preppy. But we come to find out that her dad picks out all of her clothes, so she may have a wild streak deep down inside yearning to burst through her penny loafers.

In the new TV series, Mary Anne’s pink, child-like bedroom gets a makeover to reflect her current likes (including a yellow and navy color scheme). She’s most likely rocking a neat and tidy studio with some classic flare.

Likes: Animals, her favorite book “Little Women,” getting mail, sewing and knitting, old movies, rock and roll, the colors yellow and navy blue, New York City, and her boyfriend, Logan Bruno.

Dislikes: Crowds, being the center of attention, confronting people, dealing with strangers, sports, bagpipes, home ec class, and the color pink.

How Mary Anne describes her style: Neat, preppy, casual.

Stacey McGill, Treasurer of The Baby-Sitters Club Stacey had a privileged childhood, growing up on the Upper West Side of New York City with a view of Central Park. Her air of sophistication rivals that of an adult, and she even touts shopping at Bloomingdales and going to museums as some of her favorite pastimes. She loves to hang reminders of her beloved NYC life on her walls. Also, she collects pigs, because why not?

Likes: Math, Mary Poppins, Bloomingdales, snow, blueberry pancakes, pigs, sleeping late, shopping, and going to museums and plays.

Dislikes: Doctors, her strict diet (as a result of having Type 1 Diabetes), being alone.

Stacey’s possible future goal: Own a chain of stores.

Dawn Shafer, Alternate Officer of The Baby-Sitter’s Club Dawn Shafer hails from the California coast and loves healthy food (she’s a vegetarian), tidiness, and surfing. We imagine her studio apartment style as “California Casual” (believe it or not, a style distinction given to her by The Baby-Sitters Clubbers back in the ’80s), which has a bend towards the organic, natural style a la Amber Lewis or Jenni Kayne.

Likes: 80-degree Christmases in LA, ghost stories, Hayley Mills films, health foods, and getting phone calls.

Dislikes: Junk food, waking up early, and cold weather.

Dawn in 25 words or less: California Casual—she likes to look trendy, but being comfortable is more important.

It’s not just the sex of Chip and Joanna Gaines’s new baby that’s causing quite the discussion. Now that the Waco duo has revealed their baby’s gender, the world is plotting away trying to determine what the little boy’s name will be.

‘In my heart I’m still Swiss’ Religious persecution, famine, population booms and jobs – throughout history Swiss citizens have started new lives abroad for a wide range of reasons. Do they become dual nationals, and if so, why and how Swiss do they remain?

Ten of the more than 700,000 Swiss who currently live abroad – some in booming cities, others on remote exotic islands – tell swissinfo.ch about their experiences, emotions and motivations.

Some had applied for citizenship abroad for love, others for practical reasons such as not being able to enrol in professional training without it.

But the overall feeling, as summed up by Marthe Lindsay, who moved to Britain in the 1970s, was that “becoming a citizen of another country cannot change the fact that you remain above all a Swiss at heart”.

Similarly, most respondents reckoned that if they had been forced to give up their Swiss passport – something few countries require – they would have had to think long and hard about whether to take the plunge.

When Sophie Lüssi, a successful jazz violinist from Zurich, was applying for citizenship in Buenos Aires, the form said she would have to give up her Swiss passport – “something I’d never do”.

“While filling out the paperwork: I put a cross through that box – and I was granted Argentinian citizenship without having to forgo my Swiss one.” Argentina has allowed dual citizenship since July 2010.

Career move “In my heart I’m still Swiss, but after spending 46 years in New Zealand I’m also proud of being a citizen of this country – and my dual citizenship,” said Bern-born Erika Currie, who arrived in New Zealand in 1967 under the assisted immigration scheme, which gave her permanent residency.

After four years, she was entitled to apply for citizenship.

Her formal naturalisation ceremony took place in 1973 in Wellington and she was allowed to keep her Swiss passport.

Of the 715,710 Swiss who currently live abroad (including dual nationals, see box), New Zealand is home to 6,805, according to foreign ministry figures for 2012.“I took this step because I planned to work and remain in New Zealand long term and to participate in the political life of my host country. It was also advantageous to my career, as with a Swiss passport it would have been very difficult to make frequent business [trips] to Australia, usually at short notice, as I would have had to obtain a re-entry permit before travelling.”

Oath of allegiance Katharina Allen, originally from Zurich, became a Canadian citizen after living in the country for ten years, also for employment reasons.

“At the time, foreign nationals couldn’t enrol in a teacher’s college and since that was my chosen profession, I was obliged to conform,” she said.

“It was a very simple process comprising an oath of allegiance to my adopted country. Swiss citizenship was retained without question.”

Allen’s parents have lived in Canada – whose Swiss community totals 38,959 – for over 40 years without taking steps to become citizens. Some of her siblings still don’t have a Canadian passport – not a problem, she says.“ Their contributions to and love for Canada are not diminished by the fact that they have never formally acknowledged their loyalty.”

Duty and commitment Loyalty and duty are common themes among respondents.

“I believe that if you migrate to another country, it is only fair to be a citizen and do your duty as such,” said Claudia Stillhard, who applied for Australian citizenship after living in the country on a permanent resident visa for two years.

A further advantage, she said, was that her children were automatically Australian.

“We’re lucky that Australia allows dual citizenship and therefore it was not such a hard question. If I would have had to give up my Swiss heritage, I’m not so sure I could do that.”

Roland Isler also wasted no time after living for two years in Australia – current Swiss community 23,632. “Unlike in Switzerland, where every foreigner wanting to become a Swiss citizen is looked at with suspicion, people who settle in Australia are encouraged to make a commitment to their adopted country,” he said.

“The willingness to make such a commitment was my driving force to become a citizen, to be able to participate in the political life of the country, but also to be able to travel freely in and out of the country without having to rely on a re-entry permit.”

He said he often asks himself whether he would have done it if it had meant losing his Swiss citizenship. “I don't know the answer to that – I’m just glad I never had to make that choice.”

Red tape “We are Swiss and remain Swiss!” wrote Petero Koerber from French Polynesia, home to seven other Swiss. “Not only because of our red passport but also because Switzerland will always remain our homeland in our hearts.”

Koerber says he became a naturalised citizen for many reasons, one being assimilation, which for him also means accepting rights and duties. But there was also the dreaded red tape jungle for non-citizens .“As in most countries, foreigners have to periodically apply for residency permits, which, depending on the country, can be a bureaucratic nightmare. There comes a point when you could do without that,” he said.

“Plus you’re never sure whether one day the answer will actually be ‘no’ and you have to suddenly leave – even if you’ve lived in the country for years. And obviously you have to pay for all this.”

All this, he said, makes most people think of naturalisation sooner or later. French Polynesia is governed by French law – albeit with a few tweaks – and coming from a country where French is an official language, like Switzerland, one can get naturalised after three years instead of five.

“A year or two after applying, you go to the local police station to see whether you can hold a conversation in French, and then, several months later, you get summoned back to the police station to pick up various documents.

You have no idea what they are – it’s only at home that you see the letter with the French president’s signature: you’re now a French citizen!”

He was disappointed though that whereas in France “the official shakes your hand over a glass of wine, that doesn’t happen here”.

Swearing allegiance Fred Peyer originally thought the naturalisation process had been complicated in Hawaii, but after reading Koerber’s experience he said it was in fact “child’s play”: three months, $700 (CHF650) and a nice party.

Peyer left Switzerland aged 24 and became a Canadian citizen after living in Montreal for five years. He described an amusing experience with the interviewing judge.

“As soon as she saw I was from Switzerland, she started telling me about her recent holiday there. She was all excited and kept on talking for quite a while until she suddenly said: ‘Oh, I’m supposed to ask you some questions. Who is the Prime Minister?’ I answered ‘Trudeau’ and that was it, I had passed the interview!”

After 16 years in Canada, he moved to Hawaii – Swiss community 704. He became a US citizen two years ago after living there for 22 years on a Green Card. He could still keep his Swiss passport, “but had to swear allegiance to the United States”.

“The main reason was that the Green Card is a privilege, not a right. It can therefore be taken away at any time for whatever reason. My children are here in the US and at 65 I won’t be emigrating anywhere else anymore, so by becoming a US citizen I made sure I couldn’t be ‘deported’ for any reason,” he said.

Cookies and punch The naturalisation process in the mainland United States in the early 1990s was more complicated for Elisabeth Perlman – who had to deny she was a Nazi!

“I don’t recall the exact length of the overall time [it took], but I think it was less than a year. I do remember that in the application forms I had to say that I was never a member of the Nazi party or of the Communist party and that I would defend the US in case of war – which means you could get drafted if you were the right age.”

She said the citizenship test – a one-on-one oral exam – consisted of ten questions, all from a booklet the government had sent her to study. “For the English exam I had to write down the following sentence: ‘I am looking forward to becoming a US citizen soon’.”

Perlman could keep her Swiss passport, but in the US government’s eyes she is exclusively an American citizen.

Last year, 76,330 Swiss lived in the United States.

“The swearing-in ceremony was a while later at the local courthouse and very formal with pledge of allegiance etc.

But afterwards we – there were about 100 of us – were greeted by nice volunteers with cookies and punch, plus we were handed a little American flag and solicited to sign up for one of the two big political parties.”

Not just passing through Isabel Golay was born in Morocco to two Swiss parents but has lived in Argentina since 1980.For her, having an Argentinian passport is linked to values. “I live here, I get involved here, I have a commitment to Argentinian society – I am a part of it, not just a bird of passage,” she said. “I usually say that my life’s like a tree whose roots are in Switzerland, whose branches are spreading out in Argentina and whose fruit will hopefully be for everyone.”

Easy Numbers Cake PREP TIME:0 HOURS 5 MINS TOTAL TIME:1 HOUR 30 MINS 2 boxes vanilla cake mix, plus ingredients called for on box 1 1/2 c. (3 sticks) butter, softened 6 c. powdered sugar 3/4 c. unsweetened cocoa powder 1 tsp. pure vanilla extract Pinch kosher salt Assorted candy 1. Preheat oven to 350º and line two 9"-x-13” pans with parchment paper. Prepare cake mixes according to package directions and bake until a toothpick inserted in the center comes out clean, about 25 minutes. Let cool.

2. Make buttercream: In a large bowl using a hand mixer or in bowl of a stand mixer using the paddle attachment, beat butter until fluffy.

Add powdered sugar and beat until combined, then add cocoa powder, vanilla, and salt and beat until combined. (If you desire a thinner consistency, add 1 more tablespoon cream.)

3. When cakes are cool, flip onto a cutting board level them with a serrated knife. Stack one on top of the other and cut out desired number. Discard scraps, or save them for another use.

4. Unstack cakes and pipe or spread a thick layer of buttercream on top of one of the cakes. Stack with second cake and again frost top with buttercream. Garnish with candy of your choice.

FOR WHIPPED CHOCOLATE GANACHE 2 c. chocolate chips 1 c. heavy cream Sprinkles, for decorating

Cooking spray 1 box cake mix, plus ingredients called for on box 3/4 c. (1 1/2 sticks butter), softened 3 c. powdered sugar 3 tbsp. heavy cream 1 tsp. pure vanilla extract Pinch kosher salt 2 c. white chocolate chips 2 c. semi-sweet chocolate chips 4 tbsp. coconut oil, divided Sprinkles, for decorating

1. Preheat oven to 350°. Line two 9” cake pans with parchment and grease with cooking spray. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.

2. In a large glass measuring cup, whisk hot coffee and sugars together. Add oil and sour cream and whisk to combine. Pour into dry ingredients and whisk until just combined.

3. Divide batter between prepared pans and bake until a toothpick inserted in middle comes out clean, 20 to 22 minutes. Let cool 15 minutes, then invert onto a wire cooling rack and let cool completely.

4. Make ganache: Place chocolate chips into a heat safe bowl. In a small pot over medium heat, heat heavy cream until bubbles form around the edges. Pour cream over chocolate chips and let sit for 1 minute, then whisk until smooth.

Let cool to room temperature and thickened, about 20 minutes.

5. Using a hand mixer or in the bowl of a stand mixer with the whisk attachment, beat ganache until lightened in color and thickened, 5 to 10 minutes.

6. Place one layer of cake on a platter and frost top with about half of the frosting, then place second layer on top and frost with remaining frosting. Top with sprinkles, if desired.

PREP TIME:0 HOURS 45 MINS TOTAL TIME:2 HOURS 45 MINS

1. Preheat oven to 350° and grease a 9”-x-13” baking pan with cooking spray. Prepare cake mix according to box instructions and spread evenly into prepared pan. Bake until a toothpick inserted into the center comes out clean, about 30 minutes. Let cool then break cake into small crumbs.

2. In a large bowl using a hand mixer, beat butter until smooth, then add sugar and beat until combined.

Add cream, vanilla, and salt and mix until smooth. (Add more cream if frosting is too thick.)

3. Line a large baking sheet with parchment paper. Stir cake crumbs into frosting, then form mixture into tablespoon-sized balls. Place on a prepared baking sheet and refrigerate until firm, 1 hour.

4. In a deep-sided heatproof bowl, microwave white chocolate and 2 tablespoons coconut oil in 30 second intervals until melted.

Repeat process with semisweet chocolate.

5. Dip chilled cake balls into melted chocolate, shaking off excess chocolate. Immediately decorate with sprinkles and return to baking sheet. Refrigerate until hardened, 15 minutes.

Big Italian pasta salad PREP TIME:15 MINS TOTAL TIME:25 MINS 375 g rotini pasta, (about 4 cups) 8 slices salami, chopped 2 jarred roasted red peppers, drained and chopped 2 cups grape tomatoes, halved 170-mL jar marinated artichoke hearts, drained and chopped (optional) 1 cup chopped fresh basil 3/4 cup diced mozzarella Italian vinaigrette 2 garlic cloves , minced 5 tbsp extra-virgin olive oil 1/4 cup white wine vinegar 1 1/2 tsp Italian seasoning 3/4 cup finely grated Parmesan 1. Cook pasta following package directions. Reserve ½ cup pasta water, then drain and rinse.

Transfer pasta to a large bowl and let cool.

2. Add salami, roasted peppers, tomatoes, artichokes (if using), basil and mozzarella, stirring to combine.

3. Vinaigrette: In a small bowl, whisk together garlic, oil, vinegar and Italian seasoning. Whisk in reserved pasta water. Pour over pasta mixture and toss to coat.

Sprinkle with Parmesan cheese and toss to combine.

Shrimp and vegetable noodle salad PREP TIME:15 MINS TOTAL TIME:20 MINS 200 g fine rice vermicelli noodles 3 tbsp thinly sliced ginger, cut into matchsticks 2 tbsp granulated sugar 1/3 cup white or cider vinegar 1/4 cup sunflower or canola oil 2 tbsp sodium-reduced soy sauce 2 tsp sesame oil, (optional) 10 cherry tomatoes, quartered 1/2 cup thinly sliced red onion 340 g frozen cooked medium shrimp, thawed 2 cups sugar snap peas, thinly sliced chopped roasted unsalted almonds or peanuts, (optional) 1. Break noodles into a large bowl.

Cover with boiling water and stir until tender, about 5 min. Drain and rinse. Set aside.

2. In same large bowl, whisk ginger, sugar, vinegar, oil, soy sauce and sesame oil (if using). Stir in tomatoes and onion and let stand 10 min. Add noodles, shrimp and snap peas, tossing to coat.

3. Serve topped with almonds, if desired.

Speedy Tortellini PREP TIME:15 MINS TOTAL TIME:25 MINS 350 g fresh cheese tortellini 3 tbsp olive oil 1 onion, chopped ½ tsp salt 680-mL jar passata 4 cups baby spinach 1 cup finely grated Parmesan 2 tbsp chopped fresh basil 1. Bring a large pot of salted water to a boil and cook pasta following package directions. Reserve ½ cup pasta water before draining.

2. Heat oil in a large saucepan over medium. Add onion, garlic and salt, and cook until softened, about 5 min.

3. Add passata and bring to a boil.

Reduce heat to medium and simmer until sauce is thickened, about 12 min.

4. Stir in pasta, spinach, Parmesan and basil until spinach is just wilted, about 1 min. Add a splash of pasta water if sauce needs thinning out. Garnish with more Parmesan.

Creamy Chicken and Bow-Tie Pasta PREP TIME:10 MINS TOTAL TIME:25 MINS 250 g farfalle 450 g chicken tenders 450 g asparagus, ends trimmed 3 tbsp olive oil, divided 1 tsp salt 2 leeks, halved lengthwise and chopped ¾ cup 10% cream 1 cup finely grated Parmesan ¼ cup chopped fresh dill, optional 1. Preheat oven to 425F, then line a baking sheet with foil.

2. Bring a large pot of salted water to a boil and cook pasta following package directions. Reserve 1 cup pasta water before draining.

3. Place chicken and asparagus on prepared sheet. Toss with 1 tbsp oil and ¼ tsp salt. Roast until asparagus is tender-crisp and chicken is no longer pink, 10 to 12 min.

4. Heat remaining 2 tbsp oil in a large frying pan over medium. Cook leeks, stirring frequently, until soft, 8 min. Pour in cream and bring to a simmer, 2 min. Stir in Parmesan and remaining ¾ tsp salt. Add pasta and reserved pasta water.

5. Coarsely chop chicken and asparagus, then transfer, along with any pan juices, to pasta. Add dill, tossing to combine.

Spring Pea Pasta PREP TIME:10 MINS TOTAL TIME:20 MINS 300 g pappardelle 1 cup frozen peas 1 cup sliced snap peas 125 g sliced prosciutto, (about 8 slices), cut lengthwise into ribbons ½ cup ricotta ¼ cup torn fresh mint, plus more for garnish 1 tbsp lemon zest ½ tsp pepper 1. Bring a large pot of salted water to a boil and cook pasta following package directions.

2. Add frozen peas and snap peas to the water during last 2 min of boiling. Reserve 1 cup pasta water before draining.

3. Return pasta and vegetables to pot.

4. Add ½ cup pasta water, prosciutto, ricotta, mint, lemon zest and pepper to the pasta, stirring to combine. Stir in remaining ½ cup pasta water for an even creamier sauce.

Sausage, Kale and White Bean Rigatoni PREP TIME:10 MINS TOTAL TIME:20 MINS 250 g rigatoni pasta 2 tbsp olive oil 3 hot Italian or garlic sausages, casings removed 6 green onions, chopped, white and green parts separated 6 cups chopped kale 398-mL can no-salt-added cannellini beans, drained, rinsed and slightly mashed ½ tsp each salt and pepper finely grated Parmesan, optional 1. Bring a large pot of salted water to a boil and cook pasta following package directions. Reserve 1½ cups pasta water before draining.

2. Heat oil in a large frying pan over medium. Crumble sausages into pan, breaking into small pieces with a wooden spoon. Cook until browned, about 4 min.

3. Add white parts of onions and cook until softened, about 2 min.

Add kale and beans, and cook until kale wilts, about 2 min.

4. Stir in pasta and 1 cup pasta water, adding more if needed. Top with green parts of onions and Parmesan, if desired.
