Classic Truffles

340 g ½ cup ¼ cup 1 tbsp Coating 225 g 2 tbsp 1 tsp
semisweet chocolate (about 12 oz), finely chopped whipping cream (35%) unsalted butter, cubed vanilla semisweet chocolate (about 8 oz), finely chopped shortening, unsalted butter or vegetable oil flaked sea salt (optional)
Line 2 rimmed baking sheets with parchment paper. Place chocolate in heatproof bowl. In small saucepan, heat cream and butter over medium-high heat just until butter is melted and bubbles
