2021!

Here we are in the early days of the new year. For me, these wintry months are a time of discovery and planning.

I have garden catalogs to peruse, projects to dream up and put on my to-do list, and new recipes waiting to be simmered or baked, tasted, and shared. It feels like everything is new all over again.

My outlook is hopeful, and I’m excited for what the year has in store: when it’s safe, maybe some travel to a place I’ve not been before and most definitely catching up with old friends face-to-face.

February is also American Heart Month—the perfect time to look into some heart-healthy meal choices. Our “Heart Smart” recipe makeovers (page 98) will fill you up in a good way. Pair your meal with a cup of unsweetened tea for even more heart health benefits.

This beloved backup singer is taking center stage on bakery menus and recipe blogs, starring in such things as cinnamon-laced drinks, crème brûlées, blondies, and whoopie pies. The peppery-sweet and comforting spice is taking top billing on product packages at the grocery store, too.

Wake up to coffee with a cinnamon twist. Pop in a Starbucks Cinnamon Dolce K-Cup, then add a splash of the corresponding creamer. Dunkin’ (formerly known as Dunkin’ Donuts) and McDonald’s McCafé also have cinnamon-flavored K-Cups for your at-home needs. Or drizzle a little of Nestle Cinnamon Vanilla Crème Coffee mate creamer into your morning cup.

CINNAMON DOUGH ICE CREAMS What’s even better than a cinnamon-dusted churro? Churro ice cream!

Winter squash, pumpkins, carrots, and persimmons don’t just add vibrant color and subtle sweetness to dishes on a cold February day. They also play a role in preventing macular degeneration and in lubricating eyes during colder months.

The common thread and star nutrient in these and other orange foods?

Beta-carotene, the carotenoid (or plant compound) that gives many orange foods their pigment.

Converted by the body into vitamin A, beta-carotene has a proven connection to better eye health.

The National Institutes of Health recommends consuming 3 to 6 milligrams of beta-carotene from food a day to help reduce the risk of eye-related diseases. Luckily, all you need is half a cup of winter squash, sweet potato, or pumpkin to meet this daily minimum.

Add a side of oranges, tangerines, papaya, or orange bell peppers to those starchy veggies to get your fill of lutein and zeaxanthin, two other carotenoids that give foods their yellow and orange pigment.

Research suggests that these nutrients may be promising for treating dry eyes, something that plagues many in dry and blustery winter months. Although green veggies also have carotenoids, the lutein and zeaxanthin in orange and red veggies have a stronger relationship to overall eye health.

CC HH II CC OO RR II EE SS Frisée, curly endive, Belgian endive, escarole, and radicchio are related to common chicory and often referred to as chicories.

Part of the genus Cichorium and the plant family that includes dandelions and sunflowers, these hearty and slightly bitter greens are typically planted as cool-weather crops in late fall and harvested into early spring. You often can sub one for another in recipes, though there are flavor and texture differences.

frisée/curly endive When curly endive (on-DEEV) is harvested young, it’s called frisée (friz-AY), “curly” in French. Its frilly pale green outer leaves and sweeter soft yellow inner leaves have a slightly bitter finish. Frisée is more delicate in both texture and flavor than other chicories and, thus, well suited to salads.

More mature curly endive has a stronger flavor and a tougher texture that withstands heat and benefits from wilting under a warm dressing.

belgian endive Sweet with just a hint of bitterness, Belgian endive is a bonus plant: a second growth from the roots of already harvested curly endive or other chicories.

Forced to sprout in cool, dark conditions (either indoors or in fields under sand to keep out the light), it emerges as a tight bud of pale yellow-white leaves. Red Belgian endive is similar, a forced second growth from radicchio.

escarole More wavy than curly, escarole looks a bit more like lettuce than other chicories. Its wide white stems sport large, ruffled green leaves, sometimes tipped with red. The stems are mild enough to chop and enjoy raw. The bitter, peppery leaves go from slightly leathery to pleasantly chewy in soups or braises.

radicchio This red chicory, also sometimes called Italian chicory, has purplered leaves with white veins and is sometimes mistaken for a tiny head of red cabbage. It grows in small, tight heads, but its leaves are thinner and more tender than cabbage. Beneath its bitterness, there’s a lot of natural sweetness, too, making it enjoyable raw in salads or grilled or roasted.

1 REVIEW A bitter greens salad needs a generous amount of a good dressing like the one here. Chef John advises using a neutral-tasting oil, seasoning to taste (we didn’t use or miss salt), and being sure to thoroughly coat the greens.

For a little more sweetness, add thin slices of crisp apple or pear.

3. Cut radicchio in half through core, then cut out and discard core.

Halve each half lengthwise, then slice across into 1-inch pieces. Trim root ends from endive; peel off and set aside about one-third of the leaves, leaving them whole. Slice remaining endive into ½ -inch pieces.

4. Toss radicchio and sliced endive in an extra-large bowl. Add half the walnuts and half the blue cheese.

Pour in dressing, a bit at a time, and toss to coat.

Bring 3 cups multicolor baby carrots and enough water to cover to a boil in a saucepan. Reduce heat to medium-high and simmer, stirring occasionally, until carrots are tender, about 10 minutes. Drain. Melt ¼ cup butter in a 10-inch skillet over medium heat; stir in 2 Tbsp. honey, 1 Tbsp. fresh lemon juice, and ⅛ tsp. ground ginger. For dressing, whisk together ¼ cup each apple cider vinegar and canola oil, 1 Tbsp. sugar, and ¼ tsp. salt in a small bowl until sugar and salt dissolve. Stir ¼ cup toasted pine nuts into salad, then top with dressing. Toss again to coat just before serving. (You can make this salad a day ahead and chill it, tightly covered.)

AIR FRYER ROASTED VEGETABLES Preheat an air fryer to 360°F. Toss together 3 cups coarsely chopped fresh vegetables—such as zucchini, bell peppers, carrots, and sweet potatoes—with 2 tsp. vegetable oil and ¼ tsp. each salt and black pepper in a bowl. If you’d like, toss in a little Italian seasoning or smoked paprika. Arrange in fryer basket; cook, turning halfway through, until tender, about 10 minutes.

(Firm vegetables may need to cook another 5 minutes.) Serve with your favorite dipping sauce.

We experience spicy heat from different sources differently.

Horseradish can cause your eyes to burn and make you feel like the inside of your nose is on fire. The heat from horseradish (and wasabi and mustard) comes from allyl isothiocyanate, which turns into a gas and quickly makes its way to your nasal passages and eyes. The good news is that this type of heat is somewhat watersoluble, so your saliva and a sip of water will help it dissipate.

Chile pepper heat from capsaicin, on the other hand, is not watersoluble, so no matter how much water you chug, it won’t quiet the burning. Milk, yogurt, and ice cream will help.

Casein, the protein in dairy, breaks the bonds that capsaicin forms with your nerve receptors. And because capsaicin is fat-soluble, high-fat dairy may help dissolve capsaicin even faster than low-fat dairy.

It brings (and blocks!) the pain.

It might seem antithetical, but capsaicin is an analgesic, which means it helps block pain signals.

It is used in patches, nasal sprays, and topical ointments to make the hurt go away temporarily.

Most of the capsaicin in chile peppers is actually in the white membrane and pith. The walls of the pepper and its seeds taste hot because of their contact with the capsaicin-containing membranes. But it’s still a good idea to remove any seeds to temper the heat.

With hot sauce names like Blair’s Mega Death, Mad Dog Inferno, Dave’s Insanity, Ghost Scream, and Pain is Good, hot sauce-makers appeal to a crowd that seems to love to inflict pain on themselves.

Why do some people like hot foods more than others? Affinity for the hot stuff is a learned trait. Babies don’t automatically love spicy foods the way they enjoy sweet foods.

Some experts theorize that if you’re exposed to capsaicin-containing foods at a young age, you’re more

likely to enjoy them as an adult.

You might think chile-eaters look for the hottest peppers because they have become desensitized to the burn, but that’s actually not the case. Research shows that heatseekers love the rush of this low-risk “danger.” It’s the same reason some people like roller coasters more than others. Also, when your brain is tricked into thinking your mouth is on fire, it tries to help assuage the pain by producing feel-good endorphins that reduce your perception of pain.

3.18 MILLION The number of Scoville Heat Units believed to be in Pepper X. The Scoville scale is a rating system that measures the intensity of heat in chile peppers (and hot sauces, too). The higher the rating, the more intense the heat. Pepper X, revealed in 2017, is touted as the hottest pepper on earth, according to chileheads, but Guinness World Records has yet to confirm it.

The Carolina Reaper, created by the same people behind Pepper X, holds the current official world record. No matter which pepper wears the crown, each is about 500 times stronger than the average jalapeño.

AVOID THE BURN

Wear plastic or rubber gloves when working with chile peppers to avoid irritating your skin and eyes. If your bare hands do touch the insides of chile peppers, wash your hands and nails well with soap and warm water.

Enbrel is a prescription medicine called a Tumor Necrosis Factor (TNF) blocker that affects your immune system.

What is the most important information I should know about Enbrel?

Enbrel may cause serious side effects, including: 1. Risk of Infection 2. Risk of Cancer 1. Risk of infection Enbrel can lower the ability of your immune system to fight infections.

Some people have serious infections while taking Enbrel. These infections include tuberculosis (TB), and infections caused by viruses, fungi, or bacteria that spread throughout their body. Some people have died from these infections.

• Your healthcare provider should test you for TB before starting Enbrel.

Also, before starting Enbrel, tell your healthcare provider: • About all the medicines you take including prescription and overthe-counter medicines, vitamins and herbal supplements including: o Orencia (abatacept) or Kineret (anakinra). You have a higher chance for serious infections when taking Enbrel with Orencia or Kineret. o Cyclophosphamide (Cytoxan). You may have a higher chance for getting certain cancers when taking Enbrel with cyclophosphamide. o Anti-diabetic medicines. If you have diabetes and are taking medication to control your diabetes, your healthcare provider may decide you need less anti-diabetic medicine while taking Enbrel.

Keep a list of all your medications with you to show your healthcare provider and pharmacist each time you get a new medicine. Ask your healthcare provider if you are not sure if your medicine is one listed above.

Other important medical information you should tell your healthcare provider before starting Enbrel, includes if you: • have or had a nervous system problem such as multiple sclerosis or Guillain-Barré syndrome.

• have or had heart failure.

• are scheduled to have surgery.

• have recently received or are scheduled to receive a vaccine. o All vaccines should be brought up-to-date before starting Enbrel. o People taking Enbrel should not receive live vaccines. o Ask your healthcare provider if you are not sure if you received a live vaccine.

• are breastfeeding or plan to breastfeed. Enbrel can pass into breast milk. Talk to your healthcare provider about the best way to feed your baby while taking Enbrel.

What is Enbrel?

Enbrel is a prescription medicine called a Tumor Necrosis Factor (TNF) blocker.

Enbrel is used to treat: • moderately to severely active rheumatoid arthritis (RA). Enbrel can be used alone or with a medicine called methotrexate.

• moderately to severely active polyarticular juvenile idiopathic arthritis (JIA) in children ages 2 years and older.

• psoriatic arthritis (PsA). Enbrel can be used alone or with methotrexate.

• ankylosing spondylitis (AS).

• chronic moderate to severe plaque psoriasis (PsO) in children 4 years and older and adults who may benefit from taking injections or pills (systemic therapy) or phototherapy (ultraviolet light).

You may continue to use other medicines that help treat your condition while taking Enbrel, such as nonsteroidal anti-inflammatory drugs (NSAIDs) and prescription steroids, as recommended by your healthcare provider.

Enbrel can help reduce joint damage and the signs and symptoms of the above-mentioned diseases. People with these diseases have too much of a protein called tumor necrosis factor (TNF), which is made by your immune system. Enbrel can reduce the effect of TNF in the body and block the damage that too much TNF can cause, but it can also lower the ability of your immune system to fight infections. Who should not use Enbrel?

Do not use Enbrel if you: • have an infection that has spread through your body (sepsis).

How should I use Enbrel?

• Enbrel is given as an injection under the skin (subcutaneous or SC).

• If your healthcare provider decides that you or a caregiver can give the injections of Enbrel at home, you or your caregiver should receive training on the right way to prepare and inject Enbrel. Do not try to inject Enbrel until you have been shown the right way by your healthcare provider or nurse.

• Enbrel is available in the forms listed below. Do not miss any doses of Enbrel. If you forget to use Enbrel, inject your dose as soon as you remember. Then, take your next dose at your regular(ly) scheduled time. In case you are not sure when to inject Enbrel, call your healthcare provider or pharmacist. Do not use Enbrel more often than as directed by your healthcare provider.

• Your child’s dose of Enbrel depends on his or her weight. Your child’s healthcare provider will tell you which form of Enbrel to use and how much to give your child.

What are the possible side effects of Enbrel?

Enbrel can cause serious side effects, including: • See “What is the most important information I should know about Enbrel?”

• Infections. Enbrel can make you more likely to get infections or make any infection that you have worse. Call your healthcare provider right away if you have any symptoms of an infection. See “Before starting Enbrel, be sure to talk to your healthcare provider” for a list of symptoms of infection.

• Previous Hepatitis B infection. If you have been previously infected with the hepatitis B virus (a virus that affects the liver), the virus can become active while you use Enbrel. Your healthcare provider may do a blood test before you start treatment with Enbrel and while you use Enbrel.

• Nervous system problems. Rarely, people who use TNF-blocker medicines have developed nervous system problems such as multiple sclerosis, seizures, or inflammation of the nerves of the eyes. Tell your healthcare provider right away if you get any of these symptoms: numbness or tingling in any part of your body, vision changes, weakness in your arms and legs, and dizziness.

• Blood problems. Low blood counts have been seen with other

TNF-blocker medicines. Your body may not make enough of the blood cells that help fight infections or help stop bleeding. Symptoms include fever, bruising or bleeding very easily, or looking pale.

• Heart failure including new heart failure or worsening of heart failure you already have. New or worse heart failure can happen in people who use TNF-blocker medicines like Enbrel. If you have heart failure your condition should be watched closely while you take Enbrel.

Call your healthcare provider right away if you get new or worsening symptoms of heart failure while taking Enbrel, such as shortness of breath or swelling of your lower legs or feet.

• Psoriasis. Some people using Enbrel developed new psoriasis or worsening of psoriasis they already had. Tell your healthcare provider if you develop red scaly patches or raised bumps that may be filled with pus. Your healthcare provider may decide to stop your treatment with Enbrel.

• Allergic reactions. Allergic reactions can happen to people who use TNF-blocker medicines. Call your healthcare provider right away if you have any symptoms of an allergic reaction. Symptoms of an allergic reaction include a severe rash, a swollen face, or trouble breathing.

• Autoimmune reactions, including: o Lupus-like syndrome. Symptoms include a rash on your face and arms that gets worse in the sun. Tell your healthcare provider if you have this symptom. Symptoms may go away when you stop using Enbrel. o Autoimmune hepatitis. Liver problems can happen in people who use TNF-blocker medicines, including Enbrel. These problems can lead to liver failure and death. Call your healthcare provider right away if you have any of these symptoms: feel very tired, skin or eyes look yellow, poor appetite or vomiting, pain on the right side of your stomach (abdomen).

Common side effects of Enbrel include: • Injection site reactions such as redness, itching, pain, swelling, bleeding or bruising. These symptoms usually go away within 3 to 5 days. If you have pain, redness, or swelling around the injection site that does not go away or gets worse, call your healthcare provider.

• Upper respiratory infections (sinus infections).

These are not all the side effects with Enbrel. Tell your healthcare provider about any side effect that bothers you or does not go away.

Call your doctor for medical advice about side effects. You may report side effects to FDA at 1-800-FDA-1088.

How should I store Enbrel?

• Store Enbrel in the refrigerator between 36°F to 46°F (2°C to 8°C).

• Store Enbrel in the original carton to protect from light or damage.

• If needed, you may store the Enbrel prefilled syringe, SureClick autoinjector, single-dose vial, Enbrel Mini cartridge, or the dose tray for the multiple-dose vial at room temperature between 68°F to 77°F (20°C to 25°C) for up to 14 days. o When Enbrel has reached room temperature, do not put it back in the refrigerator.

• Throw away Enbrel that has been stored at room temperature after 14 days.

• Mixed Enbrel multiple-dose vials should be used right away or kept in the refrigerator between 36°F to 46°F (2°C to 8°C) for up to 14 days.

• Do not store Enbrel in extreme heat or cold such as in your vehicle’s glove box or trunk.

• Do not shake.

• Do not freeze.

• Keep Enbrel and all medicines out of the reach of children.

D I P - DY E D M A R B L E D MINI DOUGHNUTS all you need:

1 cup Creamy Vanilla Frosting (recipe, below left) or purchased creamy vanilla frosting Food coloring Coarse sparkling sugar and food-safe luster dust

all you do:

creamy vanilla frosting Beat ½ cup softened butter with a pinch of salt and ½ tsp. vanilla extract. Beat in 1 cup powdered sugar, followed by 1½ Tbsp. milk.

Gradually beat in 1½ cups additional powdered sugar. Makes 1¾ cups

1. Microwave frosting in a microwavesafe bowl at 70 percent power, stirring every 30 seconds until it is glazing consistency, 1 to 1½ minutes.

(Do not overheat.)

2 . Transfer about 2 Tbsp. warmed frosting to a ramekin. Tint with 1 to 2 drops desired food coloring.

Repeat with additional frosting in separate ramekins for additional colors, if desired, reserving some white frosting in the bowl.

3. Drizzle 2 tsp. each of 1 or 2 colored frostings into the white frosting in a circular pattern. Dip 1 doughnut into frosting. Lift straight up and allow excess to drip off. Set, frosting side up, on a wire rack over wax paper or parchment paper. Repeat with remaining doughnuts, adding more colored frosting to the white frosting as needed and taking care not to stir the frosting.

4 . Sprinkle frosted doughnuts with sparkling sugar and luster dust.

Pandemic or no, you can keep kids connected with friends and engaged in reading with a virtual book club of their very own.

Here’s how.

A virtual meeting with lots of kids can get chaotic pretty fast.

A small group makes scheduling easier and gives everyone a chance to chime in about the book. Start by inviting one or two families with children who are similar in age (within one or two years) to your child.

2 . P I C K A P L AT F O R M Poll your book club pals about which virtual meeting platforms they use and prefer. Zoom, Skype, Google Hangouts, and Facebook Messenger all allow multiple-user video meetings.

And really any platform that everyone can access will work.

3. find your rhythm Decide how often and how long to meet. Weekly meetings can be nice for short stories.

For novels, you may want to take the full month to give everyone time to read the book. To keep kids engaged, keep the meetings themselves short: 20 minutes for younger children and 30 minutes for older children. And be sure to decide on the next book (or at least task a person to choose it) by the end of each meeting.

4. PRIME THE PUMP

Make a list of questions to prompt discussion about the book. My personal favorites are text-to-self questions like: “Which characters do you relate to? Why or why not?” and “Does this story remind you of a time in your life? Like what?” Raise these questions casually with your kids before book club. Then discuss them with the larger group, so children get a chance to hear

Preheat oven to 350°F. Grease an 8x8-inch square pan and an 8-inch round pan. Line bottoms with parchment or wax paper. Grease paper and lightly flour.

2 . Beat together white sugar, butter, vanilla, and almond extract in a large bowl with an electric mixer on high until light and fluffy. Beat in eggs, 1 at a time, until well combined.

3. In another bowl, stir together flour, cornstarch, baking powder, and salt. Beat 1 cup dry mixture into wet mixture until just combined. Add ½ cup milk; beat until combined. Continue adding 1 cup dry mixture and ½ cup milk, beating after each addition, until all are used and batter is smooth.

Divide evenly between prepared pans.

4. Bake until a toothpick inserted in the center

of each cake comes out clean, 45 to 50 minutes.

Cool in pans on wire racks 10 minutes. Remove from pans and cool completely on racks.

Make Frosting 5. Beat together butter and vanilla in a large bowl with an electric mixer on medium until combined, about 30 seconds. Gradually add powdered sugar, beating after each addition and adding milk as needed, until frosting is fluffy, smooth, and spreadable. Remove ⅓ cup frosting and divide between 2 small bowls. Tint 1 dark pink with red food coloring. Tint the other orange-pink with red and yellow food coloring. Tint remaining frosting light pink with red food coloring.

Assemble Cake 6. Set square cake on a work surface and rotate 45 degrees so that it resembles a diamond.

Spread a little light pink frosting on left and right top sides of diamond. Cut round cake in half crosswise to make 2 half-moons. Attach half-moons to top left and top right sides of diamond, gently pressing cake pieces together to adhere. Spread remaining light pink frosting over assembled cake. Drop spoonfuls of dark pink and pink-orange frosting onto cake. Drag an offset spatula through frosting to create a marbled look.
