“Tuna Porterhouse is one of my favorite dishes to prepare, this dish always reminds me why I love working with the flavors of the Mediterranean coast. From the southern waters of Spain, this cut brings together the finest parts of the tuna in one incredible dish. The Tuna Porterhouse is sourced from the Mediterranean, with the cut taken from the second through fifth ribs at the intersection of the tenderloin, fatty belly, and lean belly. It is then delicately sliced to around 2mm, brushed with yondu (white soy sauce), and gently bathed in Arbequina olive oil to soften the acidity. Served fresh, it offers a pure, melt-in-your-mouth experience”
