Blessed with a body to die for, this American superstar is so much more than the sum of her curvaceous body parts.

I

t is difficult to imagine anyone less likely to become America’s pop princess than Katy Perry. The daughter of Pentecostal pastors and raised under strict guidelines, she had little exposure to ‘pop culture’ other than what she was shown by friends during her teenage years. MTV was forbidden in the household and it was only by sneaking out to a friend’s house that she was able to hear any CD that was current during her teenage years. So insular were her musical surrounds, Edith Piaf, Ella Fitzgerald, Billie Holliday and gospel music were her only influences, that when she finally managed to make it as far as a recording studio at 17 she was asked by a producer about collaborating with another artist. “I had no real idea of anyone other than the few older artists I had listened to growing up.” Born in 1984 the expression ‘poor as a church mouse’ describes very aptly the circumstances in which she was raised. Her parents travelled itinerantly in their chosen work of spreading the word of the Bible. One of three children, young Katy attended various religious schools until the family eventually settled in Santa Barbara. “My parents didn’t believe in public education. They wanted the education to be influenced by their religion, so I was going to these halfway education-slash-Christian schools that were like pop-up shop–style education. Today I still don’t read very well and do have some regrets about the style of education I received,” she explained years later. She was unlike most young girls although she did have a firm belief in the power of prayer as in this famous quote. “I lay on my back one night and looked down at my feet, and I prayed to God. I said, ‘God, will you please let me have boobs so big that I can’t see my feet when I’m lying down?’ At age 11, God answered my prayers although I had no clue they would fall into my armpits eventually.”

With boobs firmly in place, her 13th birthday was in retrospect the catalyst for what was to become a stellar career and worldwide fame. “My parents gave me a guitar so I learnt how to play and began to write songs. I used to busk and sing to make some extra money which in turn gave me the confidence to continue.” Much like Elvis Presley and other greats, it was singing in church and with gospel choirs that seeped in her the rhythm and harmonies required to make popular music suitable for all ears. If some things are pre-ordained than it was her church singing at 15 that started the ball rolling. Spotted by some musicians, they impressed on the fresh faced teenager that she needed to learn how to write and polish songs and suggested that she head to Nashville to listen, learn and be around some of the finest musicians in America. That time in effect settled it for the then Katy Hudson. Music was going to be her career and after a brief period studying Italian opera, she started recording demos in Nashville. She signed to a Christian music label and in 2001 released her self-titled album. By chance she watched a documentary about the making of Alanis Morissette’s ‘Jagged Little Pill’ and heard producer Glen Ballard talking about the song. A chance mention that she would like to work with him, a meeting was arranged and in true Hollywood style she met and presented one of her songs to him. His interest and help enabled Katy to continue to work on her song-writing skills. Realising her name, Katy Hudson, was being confused with actress Kate Hudson, in 2003 she settled on the stage name of Katy Perry, her mother’s maiden name. For those trivia buffs, before she became a global superstar, she worked on Mick Jagger’s “Old Habit’s Die Hard” as a backing singer, a song which went on to win the 2005 Golden Globe Award for Best Original Song. labelmagazine.com.au

By 2007, Katy started to make her mark. A hit single, “I Kissed A Girl”, was followed by her second album in 2008 “One of the Boys” a series of pop rock singalong songs. Then the record breaking “Teenage Dream” was released in 2010. It was the first album recorded by a female artist to feature five number one hits – Teenage Dream, E.T., California Gurls, Firework, and Last Friday Night. Suddenly she was the hottest act on the planet and also the year when she married the controversial Russell Brand. A self-confessed sex-addict who has publicly had issues with alcoholism and drug addiction, the comedian presenter seemed the complete opposite of the sugary, Bible raised, pop princess. In all the marriage lasted 14 months. She told Vogue in an interview years later. “At first when I met him he wanted an equal, and I think a lot of times strong men do want an equal, but then they get that equal and they’re like, I can’t handle the equalness. He didn’t like the atmosphere of me being the boss on tour. So that was really hurtful, and it was very controlling, which was upsetting. I felt a lot of responsibility for it ending, but then I found out the real truth, which I can’t necessarily disclose because I keep it locked in my safe for a rainy day. I let go and I was like: This isn’t because of me; this is beyond me. So I have moved on from that.”

Despite her current equanimity about the relationship, at the time the break-up had a deep effect on her. The lyrics of her emotional song, “By The Grace Of God” are an admission that she questioned whether she could continue on after the divorce was ended by Brand on New Year’s Eve via a text message. She said, “That song is evident of how tough it really was at a certain point. I asked myself, 'Do I want to endure? Should I continue living?’” It is in essence what the key to her song-writing ability is. Sing about the things that you know and if they are painfully, gut wrenchingly auto-biographical, so be it. “I tell my fans if they want to know the real truth about stuff, just listen to the songs.” Today Katy is in a much happier place and space. Her Prismatic tour is set to head Down Under kicking off in Perth on 7th November and continuing until she finishes in Brisbane on 15th December. At 29, she has become the songstress of a generation, growing up and living her life in the public eye over the past seven years. Declared the most followed person on Twitter earlier this year, she has a voice that resonates loud and clear both musically and socially. Successful, beautiful and talented, Katy has determined to make the most of her success but has managed to retain the girlish sense of fun which is perhaps the key to her achievements. She seems like one of us only she shines much brighter.

The quintessential quiet achiever talks about fashion and business.

J

anine by name and serene by nature, Janine Edwards is the epitome of understatement. Arriving for the interview she is, naturally, beautifully dressed but it is done with an eye for detail, mixing and matching items from her varied brands in a way that sets her apart. She wears the clothes as an expression of her personality and not at the dictate of the trends of the moment. It is much like her main business, Edwards Imports. Quietly and effectively Janine has built up a successful fashion business that encompasses retail and international wholesale distribution. Her eponymous boutique on level one in Marina Mirage has been a must visit destination for all lovers of unique fashion pieces for 25 years but there is so much more. “The boutique started way back in Christopher Skase’s day at Marina Mirage. Essentially I started the store as a showcase for the brands we wholesale allowing other retailers to see the brands in a retail environment. The import business is a direct result of my wanting to bring the latest fashion to Australia.” Nothing is ever an easy ride or an instant success and for Janine the hours were long and relentless. “It was never about money. I loved what was being imported and because the stock was what I had personally chosen I knew if it was working or not. A 60 hour week was and is normal but as I said I loved it. I feel blessed to be doing what I do.” In all Janine and her team sell to more than 200 stores across Australia with a range of brands that have been personally selected. From America they include J Brand, Equipment, Helmut Lang, Joie, Free People, Enza Costa and Rag & Bone while from Europe it includes American Vintage, Odd Molly and Hunky Dory. It is that commitment to identifying the best that has led Janine to another chapter in her fashion journey. Later this year she will be opening a Desigual store in Melbourne’s The Strand Arcade. “Desigual is based in Barcelona, Spain, and they do wildly colourful clothes with intense prints, innovative graffiti art and flamboyant splashes. I think it is the perfect brand for Australia. We also have a concept store in Oxford Street and another soon to open in Bondi. There is a large, very young team behind me helping to make all this happen so by no means is this a small business. I don’t make any decisions without running it by them. Originally everything was

chosen by myself from solo trips overseas. These days I encourage my team to head off and if they see something that stands out then we look at it and then decide. Of course I have the final say because I am still a bit of a control freak,” she laughs. It is that collective eye, overseen by Janine, which keeps all aspects of the business at the forefront of what is happening. “If I can see that a new look is coming through, then we go searching for that brand. We are specific about the look that we want for our customer and then we set about sourcing the items. We don’t have a specific age group. I love it when the mothers and the daughters come in together and both can find something. Our customers are switched on to fashion, they travel and while corporate wise they are standardised, on the weekends they know what they want. Fashion is global now and via all aspects of social media, trends catch on instantaneously. For example the retailers we sell to are allowed to use our Instagram photos for their own end. It means that the photos are beautiful, they have been properly shot and styled so that they can see what it is supposed to look like. Control again,” she says with a grin. One addition to the team that has made a huge difference to Janine is when her daughter Fiona joined the company. “For years I travelled alone but when she was old enough to come along it made such a difference. Firstly I had a companion and because she had grown up around fashion she would say things that were pertinent and insightful. Everything I do I talk to her – she is my sounding board and she’s a lot tougher than me.” To have lasted as long as she has in a business as fickle as fashion means that Janine has mastered the subtle art of recognising what will work for her customers. Yes, she is the head of a large team that is working wonderfully and in unison towards a common goal but the leader sets the tone and the pace. “The key is to recognise that everyone has specific talents. I’m a great believer in the Peter Principle and my team is a reflection of that.” Quietly and methodically Janine Edwards has forged a unique place in Australia’s fashion industry. It is a testament to her ability to look, listen and learn as much as her innate good taste that has driven this ultimate quiet achiever to great and largely unheralded success.

fashion Clutch: This is my go anywhere handbag because it slips so easily between day and night. This YSL Tribute nude clutch is another purchase from Net-A-Porter and I promise I don’t have a problem with on-line shopping.

Jacket: I went on a trip to Tokyo with some of my girlfriends which naturally involved some shopping. It is a black blazer from the Zara store in Tokyo. The zips and leather inserts make it a perfect mix of fashion and fun.

Dress: Everyone should own a great LBD (little black dress) and this is mine. It is by ‘Doll Baby’, an Australian brand, and is ribbed at the waist so it sits beautifully. It says it is made out of lace and Fetish Satin which is a worry.

South Beach’s Glimmering Swim Mercedes-Benz Fashion Week Swim celebrates its 10th anniversary since the Greater Miami Convention and Visitors Bureau commissioned IMG Fashion to bedazzle South Beach with a bevy of bikini-clad runway beauties. The past decade has seen almost 200 runway shows, 100,000 glamorous guests and a multi-million dollar boost for the local economy. This year 30 designers debuted their 2015 Spring/Summer swimwear collections from July 17-21 at The Raleigh, featuring 10 Mercedes-Benz 2015 C-Class cars wrapped in patterns by the festival’s top 10 designers each representing a year from 2004-2014. Dolores Cortes, Mikoh and Maaji Swimwear rocked the sunset bright block colours that sizzled their way into the blingy Beach Bunny featuring The Blonds show. Tribal was in for Gottex’s zebra cutout creation and Poko Pano’s textured bikini while multi-coloured mosaics made their way into Mara Hoffman’s sleeved seaside suit. Mara made sure We Are Handsome and Ripcurl got her high-waisted memo – a hit for We Are Handsome’s gleaming tropical theme and Ripcurl’s cheeky mesh panels. Behind the brand

A

runa grew up amidst her father’s empire of practical sporting shoes, but regular dalliances with her mother’s designer closet inspired her to pursue footwear fit for royalty. With more than 50 stockists worldwide and showrooms in London and Moscow, celebrities such as Pippa Middleton, Kate Hudson and Katherine Heigl can’t get enough of the Aruna Seth comfort-meets-glamour craze. What inspired you to pursue shoe design? My father has been in the shoe industry for 60 years and I’ve been surrounded by shoes my entire life. After seeing my father build up an international shoe industry I wanted to do the same. After a brief stint in the city, I studied at London College of Fashion and then decided to launch the brand in 2009. I spent a year in Italy working with the factories to create a collection of over 40 pairs of shoes! Starting a fashion brand was certainly an adventure. What makes Aruna Seth shoes unique in the luxury market? We wanted to produce a designer line of shoes that had the comfort factor at the same time. I own a lot of designer shoes, over 200 pairs and a lot of the shoes can be uncomfortable! Who is the Aruna Seth woman? Modern and glamorous – a lady who loves to invest in quality clothing which lasts. How do you engineer such comfortable high heels? We like to be different from other designers due to the comfort factor. All our shoes are specially padded with a cushioned sock to give cashmere like comfort to feet. Brides especially love our shoes as they are comfortable for all-day wear. Who were you most excited to see wearing your shoes? We knew Pippa owned a few pairs of our shoes but we had no idea she’d wear them to one of the biggest occasions of the century! Pippa wore the shoes on the Royal Wedding day in her green Temperley dress. I was so happy I screamed with delight at the TV. It was a great moment and really helped the Aruna Seth brand get noticed internationally. What is the story behind the butterfly trademark? The butterfly became an emblem because it signifies independence and strong women. I used to play with my mother’s shoes in her wardrobe when I was younger. She had a pair of lovely butterfly Ferragamo shoes, so you never know, maybe my butterfly design subconsciously came from this! Why should women dress from the shoe up? A woman can be having the worst day ever and then stick on a 6 inch pair of heels and feel on top of the world again! A pair of heels can give a girl confidence, as well as having a slimming effect. Shoes are great investments because unlike weight, the shoe size does not change so if you invest in a good pair of shoes they can last years! What styles should we be sporting this season? A lovely pair of colourful heels, a bright pair of pink or yellow shoes. You can see splashes of colour in my collection and all over the stores! When you’re not designing, how do you spend your spare time? I am quite a workaholic. I usually spend my spare time shoe shopping, all in the name of research for the shoes!

By now, the cosmetics market is well acquainted with beauty balms, colour correctors and daily defense creams, but the latest in the quest for perfection? It’s a little more like an Instagram filter. 2014 is all about the blur. Not about dreaded diminishing sight, or the morning after a Label Luncheon kind of blur. Think soft-focus; similar to the camera that enables audiences to believe The Bold and the Beautiful cast is entirely pre-menopausal. The optical illusion eliminates fine lines, wrinkles and uneven skin tone. The white formula feels similar to a primer, but makes a greater effort to blanket large pores. The latest step in your makeup routine goes before or after foundation, depending on the brand, and in some cases may replace your primer. What degree of quality is being discounted? Will the discounted price lead to a reduction in safety standards? The cut price is being advertised for overseas and local Australian clinics and those two questions are extremely important for anyone considering a cosmetic procedure. Also in many of these overseas countries it is recommended that Westerners should not drink the water and yet for the sake of a few dollars Australians are prepared to risk their long-term health. It is a trend that has worried Dr John Flynn from Cosmedic & Skin Clinic and as a Fellow of the Australasian College of Cosmetic Surgery is something he wants all patients considering cut price procedures to think about long and hard. “The medical standards that the top surgeries in Australia have to adhere to and comply with are the most stringent in the world. The other benefit is that in the event of a complication your surgeon and his medical staff are available for immediate consultation. That is not always available in a foreign country or with a cut price operation.” One of the most popular procedures is breast augmentation and for Dr Flynn the key component before any surgery is information. “From experience we have found that women who are well informed and realistic, are the most likely to be extremely pleased with the procedure.” At Cosmedic & Skin Clinic individual concerns are discussed so that surgical choices can be fully explained including the risks, limitations and potential complications. Pre-operative assessment is undertaken and the proposed surgery is explained. After you have been fully informed of all aspects of the procedure including all expenses, you are encouraged, after having assimilated a large amount of information to re-present, if appropriate with your partner, and any aspect can be re-discussed, until you feel fully informed and comfortable with proceeding. Once the important decisions have been made, surgery is booked. “The procedure usually takes about one and a half hours,” explains Dr Flynn. “On admission to the operating suite, the nurse will check all of your details and give you a quick pre-op assessment. The

Anaesthetist will also examine you prior to the procedure and your pre-op photos are taken and you are marked out for the surgery. On completion of the surgery you will be in recovery for at least an hour until you are properly awake and ready to go home. You must have a Carer who will help to look after you. You will also have an appointment for your first post-op check the next day. An anti-biotic is given and while there will be some post-operative pain that is usually managed with oral medication.” After the procedure there will some post-op pain and a feeling of ‘tightness’ for a few days. Light activities and showering recommence the day after surgery and normally you can resume driving a car after a few days. You should avoid vigorous activity such as gym or cardio workouts, jogging or running for about six weeks. At all times Dr Flynn and his staff are available for patients should they have any problems or concerns. It is an integral part of the Cosmedic & Skin Clinic service and an aspect of his surgery that Dr Flynn takes particular pride in supplying. The importance of the pre-procedure consultation is most important because every patient is different so the concept of a ‘fly in, fly out’ is something that worries Dr Flynn enormously. “A simple example is that most of us are not symmetrical, that is we are different from left to right. This occurs with breasts as well and so if asymmetry is noted before surgery then this might be corrected by using different sizes of implants.” Dr John Flynn has practised on the Gold Coast for more than 20 years and has wide experience in Cosmetic Surgery including Facial Lifts, Breast Augmentation, Liposculpture and Laser Surgery. He is in constant demand for teaching and speaking engagements at conferences in Australia and internationally. Crème Fraiche with Chocolate Mousse The tanginess of the crème fraiche is soothed by the rich and creamy chocolate mousse, which is in turn lightened by the crème fraiche. 2 tablespoons unsalted butter 115g bittersweet or semi-sweet chocolate, chopped 3 large eggs, separated ½ cup sugar ½ cup heavy cream ½ teaspoon vanilla extract 570ml crème fraiche In a saucepan over very low heat, melt the chocolate and the butter together. Just before the chocolate finishes melting, remove it from heat and beat it with a whisk until smooth. Transfer the chocolate mixture to a bowl and beat in egg yolks with the whisk. Refrigerate. Beat the egg whites with 2 tablespoons of the sugar until the whites hold stiff peaks but are not dry. Set aside. Beat the cream with the remaining 2 tablespoons sugar and the vanilla until it holds soft peaks. Stir a couple of spoonfuls of the whipped whites into the chocolate mixture to lighten it, then fold in the remaining whites thoroughly but gently. Fold in the cream and refrigerate the mousse until chilled. If you are in a hurry, divide the mousse mixture among six cups; it will chill much faster. Serve the mousse within a day or two of making under a generous scoop of crème fraiche. Note: This recipe uses uncooked egg whites and yolks. It is not recommended for small children or people with compromised immune systems.

Chorizo-Chocolate Tapas The idea of chocolate and cured sausage seems bizarre, at best, but the last time I was in Barcelona, this tapa was offered with four o’clock cocktails and it’s simply sensational. Like many wonderful Spanish dishes it’s also extremely easy. 1 x 30cm chorizo, preferably “hot” 1 baguette Bittersweet chocolate spread, or Nutella spread Saffron (optional) Slice the chorizo crosswise into 3mm disks. Slice the baguette into 2.5cm thick slices. Spread the bread with bittersweet chocolate and place 1 to 2 chorizo slices on the chocolate. Finish with 1 thread of saffron if desired. Serves 4-6 appetizers.

Sweet and Spicy Spareribs I’m crazy about spareribs. Nothing like a down-and-dirty barbecue to have fun. This recipe also works well with baby back ribs, which take less time to cook through – about a half hour. The internal temperature of the cooked ribs should be the same -165° to 175°F. 2 cups dry sherry 900g brown sugar ½ cup apple cider vinegar 2 tablespoons balsamic vinegar 2 tablespoons molasses 2 cups soy sauce ½ cup ketchup 1 tablespoon ground ginger 6 garlic cloves, minced or pressed 1 tablespoon Tabasco sauce, or more as needed 1 lemon 4 racks spareribs (about 4.5kgs) In a large saucepan, combine the sherry, brown sugar, apple cider vinegar, balsamic, molasses, soy sauce, ketchup, ginger, garlic and Tabasco to taste. Whisk together thoroughly, then squeeze the lemon, throw away the seeds, and toss the juice and the lemon into the marinade. Bring the mixture to a boil, stirring often, then remove it from the heat and let cool. Slather the ribs with the sauce, transfer to a large sealable plastic bag, and marinate in the refrigerator for 24 hours. Preheat the broiler. Drain the ribs and reserve the marinade. Broil the ribs until golden brown, about 3 minutes per side. Meanwhile bring the marinade to a boil and simmer for 10 to 15 minutes to thicken into a glaze. Preheat the oven to 425°F. Place the ribs on a rack (or two) and place in a roasting pan (or two). Brush on some of the glaze, and roast the ribs for 45 minutes. Turn them, brush on more of the glaze, and roast the ribs for 30 minutes per pound. The ribs are done when the internal temperature registers 165°F to 175°F. Let the ribs rest for 10 minutes, then separate them with a carving knife, brush them with additional glaze, and serve. Serves 4-6. labelmagazine.com.au

Lucky is such a great character that I thought she deserved her own cookbook. Decadent and delicious just like the lady herself.

How does one create a collection of recipes based on a fictional character? Sexy, turn-on recipes that Lucky would make for her family. Mindblowing drinks. Rich desserts. “The Lucky Santangelo Cookbook” is not for anyone on a diet! Everything has flavour, and yet is easy to prepare. There are often scenes in the many Santangelo novels where Lucky hits that kitchen!

Label is loving Lucky’s recipes. What flavours best define her? Lucky is Gino’s true, wild and crazy, powerful daughter – so she really loves making a lot of Italian dishes. From her incredible meatballs to her luscious ‘Fettuccine with Crab and Cream’ – she brings the taste of Italy with her own particular way of cooking – such as the ‘Penne alla Vodka Martini’ with tomato, sausage, bacon and of course cream! Lucky always brings the flavour. In her world great food equals great sex! What is your perfect four-course dinner from The Lucky Santangelo Cookbook? The perfect dinner for Lucky would be to have ‘The Venus Lychee Martini’ before sitting down at the table. And to start there would be delicious ‘Smoked Salmon Pizza,’ followed by ‘Bourbon Chicken Milanese’ – so good. And for dessert ‘Creme Fraîche’ with Chocolate Mousse.’ A fine feast!

How can our readers emulate a party of Jackie Collins’ standards? A great fun party must include four very important elements. 1. An interesting mix of guests. 2. Plenty of drinks – everything from white wine sangria to tequila shots for those inclined. 3. Put together on your iPod an amazing mix – everyone from Drake to Rihanna to Lil’ Wayne, and later in the evening go old school with the Beatles and Sinatra. 4. Fantastic food – not too fancy – comfort food is always a winner.

How did celebrity chef Wolfgang Puck manage to capture you in a cocktail? I was doing an interview for a big TV show in L.A. and they surprised me at my house with Wolfgang – who went straight to my bar and created the ‘Jackie Collins’ cocktail! It’s such a delish drink – refreshing with a bite. And you can get all the ingredients in “The Lucky Santangelo Cookbook.” Naturally I was thrilled to have the Wolfgang Puck create a special drink just for me.

You have written in some scenes throughout The Lucky Santangelo Cookbook. What can we expect Lucky to get up to behind the kitchen bench? Lucky is never predictable – it’s part of her charm. From the kitchen to the bedroom to the boardroom, Lucky kicks ass, and she does it with style.

What preview can you give your fans of the next Lucky Santangelo instalment? The book I am currently writing is “The Santangelos” – a big epic story about the entire Santangelo family – including Lucky’s handsome son, Bobby, and her teenage daughter, Max, who is becoming the hot new ‘It’ girl in Europe. Brussels Sprouts Moutarde This dish is a lifesaver at holiday meals such as long weekends when the oven and stovetop are already busy, because it can be prepared entirely in a microwave oven. If you need to double this, there will be time to microwave it in two batches, especially if you are serving buffet-style. 5 strips thickly sliced bacon 5 tablespoons unsalted butter 3 tablespoons smooth Dijon mustard, such as Maille 2 teaspoons dried tarragon or thyme 2 teaspoons freshly squeezed lemon juice 1 teaspoon finely grated lemon zest ½ teaspoon vanilla extract ½ cup low-sodium chicken broth 1 teaspoon balsamic vinegar 3 good splashes of dry white vermouth 1kg Brussels sprouts, rinsed, trimmed, and halved lengthwise Place the bacon strips on paper towels on a large plate, cover with more paper towels, and microwave on full power until bacon is medium crisp – 3 to 4 minutes, depending on your oven’s wattage. Roughly chop the bacon. Place the butter in a large microwave-proof casserole and cover with a loose-fitting lid. Microwave on full power for 1 minute, or until the butter has melted. Stir in everything else, adding the bacon and sprouts last. Mix well. Microwave on full power for 4 to 9 minutes, depending on your oven’s wattage and your preference for al dente Brussels sprouts. Tip – start testing and stirring at 4 minutes. Serves 4-6.

Ricotta Asparagus Fritters This was previously a ‘no-recipe’ recipe that my mum had stored in the recipe book called her brain. We hadn’t made it in a while so I had to ask her what the measurements were and in her true mum-like way, she just wrote down some ambiguous things like ‘around half a tub of ricotta’ and ‘breadcrumbs’ on a scrap of paper. ‘What about the Parmesan, ma?’ ‘Oh yeah, but just a bit. The main part of the batter is the ricotta!’ With those rough guidelines I made them, filling in the gaps where I could. As asparagus is one of my favourite spring vegetables, I was ALL OVER these. They’re great served with grilled meat but they’re fine as a main course too, if you serve them with a side of grain salad or crusty bread.

4 eggs 125g (½ cup plus 1 tbsp) ricotta 2 tbsp grated Parmesan, plus extra shavings to serve ¼ tsp salt

80g (½ cup) fine dried breadcrumbs 20 thick or 30 thin asparagus spears, woody ends removed (tip: bend each stalk until it snaps) vegetable oil, for frying

In a jug, whisk together the eggs, ricotta, Parmesan, breadcrumbs and salt. Leave to sit while you prepare the asparagus.

Half-fill a deep frying pan with water, add the asparagus and place over a medium heat. Once the water has started to boil, cook for 4 minutes until the asparagus is just tender. Drain the water from the pan and set the asparagus to one side. Dry the pan.

In the same pan, heat 2 tablespoons of oil over a medium heat. Dollop a heaped tablespoon of the batter into the pan and top with 2 thick or 3 thin spears of asparagus. Top with a little extra batter (about 1 teaspoon) to seal the asparagus into the fritter. Cook for 3 minutes until golden brown, then flip over the fritter and cook until golden brown on the other side. Transfer to a plate lined with paper towels, then repeat with the rest of the batter and asparagus. Serve the fritters with Parmesan shavings scattered on top. Serves 4.

hile we don’t have the brutal winters that make life in the south of Australia so miserable, it is still a wonderful feeling when spring finally arrives. As Goldilocks would say, it is not too hot, not too cold – it’s just right. To celebrate the change of season, executive chef David Pommier has devised a new menu. Some of the selections from the tapas menu are real favourites of mine. From the Yellowfin tuna slider to the New Zealand salmon rillettes, beef cheek and chorizo hotpot or the salted cod fritters, they are all truly delicious. The changes are many but our whole New Zealand sole is still on the menu. I think there would be a mass protest if we removed it. As ever we have had a range of famous faces come through the doors to enjoy some down time. One of the ‘Boys from the Bush’, Lee Kernaghan, came in for dinner and was as nice off stage as he seems. Two-time Moto GP World Champion Casey Stoner caught up with V8 legend Jamie Whincup while the sky high dual Olympic gold medallist Grant Hackett also joined us. Gentlemen all and absolute delights to deal with when they come in to visit. It was a particularly fashion friendly crowd who came in for a long lunch one Friday to help Chloe Maxwell and Jay Pask celebrate their respective birthdays. The high end, brand name labels on display made you think that it was Monte Carlo. One of the best (and loudest) lunches we do are the Slim Magazine lunches which raise money for the Gold Coast Community Fund. Kate Bennett does an amazing job co-ordinating all the raffle prizes, organising seating, selling tickets and generally ensuring that everyone has the best time imaginable. Even more so at the last lunch because she checked herself out of hospital after emergency surgery to oversee proceedings. A real trouper! Another wonderful cause was the Rally for Ryven lunch in June. An astonishing $30,000 was raised to help the family of baby Ryven

There are many costs associated with saving young Ryven’s life and the extraordinary generosity of Gold Coasters continues to amaze me. I must admit I was astonished at the reaction when, in consultation with executive chef David Pommier, we added Chateaubriand to the menu. It is one of the classic dishes, a juicy-on-the-inside, seared and roasted beef tenderloin with truffle mash, seasonal vegetables and béarnaise and foie gras sauce. Seasoned very simply, roasted to perfection, and then sliced on the diagonal, this is truly heaven on a plate. It is hard to believe that we have just celebrated five years since Glass Dining + Lounge first opened its doors with a massive opening party. To celebrate the occasion we had another of our famous themed birthday parties, this time it was Black and White, and with Patrik Gennari we greeted the many friends who have become regulars at the restaurant. Time certainly does fly when you are having fun. Given our position gazing out over the Marina Oceanus at Marina Mirage, boats play a big part in our lives. The Sanctuary Cove International Boat Show is one of the biggest events of the local calendar and every year Glass Dining + Lounge Bar stages the Out of the Blue cocktail party to kick start the week. Anyone and everyone associated with the marine precinct around Marina Mirage comes along and enjoys the chance to discuss all things nautical. Whatever floats your boat is particularly apt. QT Sydney A stylish mix of old and new, QT Sydney is a hotel that dares to be different on all levels.

W

hat do guests at uber-trendy QT Sydney have in common with Marilyn Monroe? They too can go to bed wearing nothing but Chanel No 5. One of the many points of difference is that each room in this Sydney hotel is scented with Coco Chanel’s famous perfume and it is another example of what makes QT Sydney so unique. Opened in September 2012, QT Sydney has many select features including being the only Sydney hotel to be a member of the exclusive Design Hotels. Situated in Market Street the hotel has cleverly fused the Gowings Building with the State Theatre to create a vibrant blend of restored gothic, Italian and art deco features, including original artworks and fixtures from William Dobell and Colin Wheeler, with ultra-modern amenities. The thriving hub of Sydney’s CBD is but a step away with great shopping at David Jones, Strand Arcade and QVB Arcade close by. Any stay in an upmarket hotel is firstly about the rooms and then the facilities for guests. The first feature of the rooms is the use of colour. There are 12 unique styles with reds, oranges, yellows and whites featured throughout the 200 guest-room hotel. Cleverly the original timber floors in the Gowings building have been retained but added to with eclectic touches and embellishments. The State Theatre side of the hotel boasts exclusively designed carpets and rugs, creating a lush and embracing feel brought together with distinctive lamps and light fittings. The bathrooms are dark stone accented by signature baths and extra-large separate showers. Everywhere there are quirky collectables and colourful additions creating a highly individual space for guests during their stay. If the aim was to create a home away from home then the designers have certainly succeeded. As with any top flight establishment a range of dining and relaxing options exist within the hotel. For great coffee and a casual snack from breakfast to late afternoon, Parlour Lane Roasters is the place to go. Again the designers have paid homage to the heritage of the building by retaining the tiled floors and the original ornate retail display cabinets. Another dining option is Gowings Bar & Grill, a European style brasserie that provides an unpretentious European-style menu with a signature seafood accent. At night the place that best encapsulates Sydney’s effervescent cocktail scene is Gilt Lounge, a humming after dark party place which is the perfect venue to finish off the night. Any stay in a QT Hotel or Resort is characterised by the point of difference that the chain makes across all areas of a hotel’s operation. The first and most obvious a guest will see is that all staff are kitted out in quirky, avant-garde uniforms styled by acclaimed costume designer Janet Hine. Another is the QT Sydney iPhone app which links guests to their own personal concierge service the moment rooms are booked. It is a city guide in the palm of the hand making it easier to find information on the best places to see and be seen in Sydney. The app is a metaphor for the hotel – everything has been catered for but always with a different slant.

Emily Blunt A bad quote about Tom Cruise, broken romance with Michael Bublé – it has been an interesting journey for this U.K. beauty. There is a certain irony that Emily Blunt’s role in ‘Edge of Tomorrow’ has her appearing on screen opposite Mr. Hollywood aka Tom Cruise. Why? In 2005 as a rising young starlet she made the following statement. “I would rather do badly paid theatre for the rest of my life than ever accept a role as a spear carrier in a Tom Cruise movie.” Awkward? Much! To her credit when she was reminded of this cringe worthy quote in an interview she merely shrugged, laughed and said, “Well, at least I’m not a spear carrier.” The English beauty was born in 1983 and enjoyed a privileged upbringing as the daughter of Oliver Blunt QC, one of the U.K.’s top barristers. As one of four children, the performance gene came from her mother Joanna a teacher and actress, she found her voice literally when she was at Hurtwood House a private college renowned for its performing arts programme. She credits a teacher at the school with helping her to overcome a bad case of stuttering by enrolling her in the acting classes. It is something she has followed through with in later life having sat on the board of the American Institute for Stuttering. Her film career began in 2003 but it was the role of Emily Charlton, the acid tongued sophisticate in The Devil Wears Prada opposite Meryl Streep and Anne Hathaway in 2006 that first brought her to prominence. The success of that has always spawned talk of a sequel and Emily has echoed the firmly stated opinon of Meryl Streep that she would happily sign up if she ‘didn’t have to lose the f ***ing weight!’ “I was playing that character who was on the edge of ill thin just desperately trying to maintain her weight,” she explained. The other notable entry around that time concerned her private life when Emily commenced a three year relationship with Canadian crooner Michael Bublé. hat would you get if you crossed an SUV with a sports coupé? Yes, the best of both worlds but in particular the all new BMW X4. Australians have fallen in love with the SUV concept embracing the extra room and comfort but still wanting the performance and ‘sheer driving ability’ that is part of getting around town in the modern world. For me, this is the ‘Goldilocks’ car – not too big, not too small but just right. Positioned neatly between the X3 and the X5, the new release is part of the ever increasing range of SUVs that are hitting the market. Heading out on the road for the first time the thing that stands out is the amazing grip the BMW X4 possesses. I felt in total control as if the car was reading my thoughts and steering me precisely to the place I wanted to go. The second noticeable feature was the ride. Sitting in comfortable, body fitting leather seats the car is smooth with road noise at a minimum and was simply a delight to pilot around town. The third aspect was the interior design and lay-out. As you would expect from a luxury car maker like BMW the interior is luxurious. From the driver’s seat, the way the instruments and control display are laid out, the feeling is of complete control with everything within easy reach. Seeing my speed on the windscreen above the steering wheel is another great feature. The back seat can easily accommodate three people and when those same seats are laid flat, the room in the back is quite simply astonishing. Speaking to Beric Lynton, Dealer Principal at Bruce Lynton Group, he explained the reasoning behind BMW’s decision to launch this new version. “The all new BMW X4 is based on the technical blueprint of the BMW X3, but it has a much sportier character. I like it because it is very much its own car with a generous level of standard specifications. The reaction and feedback we have received from customers and people who have driven it has been astonishing. They can’t believe the performance and handling that the BMW X4 delivers.” Now to some of the cooler features and the all-important cost. There are two petrol and two diesel units, all with BMW TwinPower Turbo, and all have an eight-speed automatic transmission. The BMW X4 also has voice control, pairing of multiple phones, navigation professional with a large 22.5cm screen and 20GB hard drive for audio files. Cruise control of course but fitted with a braking function and what I really love, front and rear parking sensors, rear view camera and automatic tailgate. Prices start from $69,900 for the xDrive20i up to the top of the range xDrive35i for $87,900. In summary this is a car that made me ask – what took them so long? It is a perfect mix of performance and practicality. Easy to drive, comfortable and with more than enough space to handle all your needs. castle Simon Bennett explains what the recent changes in Queensland’s property laws mean to you and your real estate holdings.

I

n Australia, we have an underlying desire to own property. People have always felt safety with owning land. After all, our home is our “castle”. But what happens when we want a new castle or alternatively want to buy an investment. The common misconception is that it is very easy. After all it is just conveyancing is it not? Well, actually, no it is not. In Queensland we currently have at least 20 pieces of legislation affecting you when you buy or sell property. In addition, there are contract conditions and precedents created by previous cases to be considered. If the seller wants to sell and the buyer wants to buy and you are lucky, your transaction might go smoothly. However, what happens if one party changes their mind, the market suddenly changes, or some other unforeseen event takes place? Well, this is when you need an Accredited Property Law Specialist acting on your behalf. The Queensland Law Society governs all lawyers in Queensland and has as a part of its accreditation a Specialist Property Law Accreditation for those practitioners who have met the quite rigorous requirements of being considered as specialist in property law. The benefit of having such representation is that these experienced solicitors can hopefully foresee any problems in your transaction before they occur saving you and potentially saving your deal. In Queensland the legislation has over the years become extremely complicated with many opportunities for a buyer who has changed their mind to terminate the Contract to Sell on very technical grounds. Quite recently the Queensland government has passed new legislation,

the Property Occupations Act (POA), which will substantially change the way property transactions are conducted in Queensland. This Act will particularly supersede the Property Agents and Motor Dealers Act (PAMDA) which has been the cause of many of the recent difficulties. So, what are the major changes?: • The warning statements Form 30C under PAMDA and Body Corporate Community Management Form 14 statements will no longer be required. They will be replaced by certain wording to be contained above where the buyer signs the contract. • The five business day cooling off period will still apply but will be faster and simpler to waive, no longer requiring a lawyer’s certificate. • Residential property has been better defined so there is less confusion as to whether the property is residential or not. •A uction contracts have no cooling-off period now and this will be extended to any registered bidder buying up to 5:00pm on a second business day after an auction. •A gents’ commissions will no longer be capped and will be open for negotiation by the parties. These changes are positive and should inspire further confidence in the Queensland market, giving more certainty and less opportunity for technical termination of documents.
