Gay, vegan and female – how Ellen broke all the rules of mainstream television to become a global phenomenon.

6

label magazine SPRING 2011

In Hollywood they call it the pitch. An agent trying to sell to a television network an idea for a show would start with, “I’ve got this idea for a TV talk show which will be one of the most popular series on television. It’s to be fronted by a female comedian who is gay and in a long term relationship who also happens to be a vegan.” You could almost hear the doors being slammed as he/she leaves the office. As unlikely as it sounds, the reality is The Ellen DeGeneres Show, which debuted on NBC in September 2003, has grown to be a global phenomenon attracting 2.75 million viewers daily in America. Whether it’s her quirky, down home humour, the way she gently points out some of life’s absurdities or her impish smile which shows off her striking blue eyes, Ellen has found a way into people’s hearts. Born in 1958 in New Orleans, Ellen grew up in Atlanta Texas before graduating from high school and then attending college. She dropped out after one semester taking a succession of odd jobs including work as a para-legal, waitress, house painter, oyster shucker and selling vacuum cleaners before she started doing stand-up comedy in small clubs and coffee houses. “I just like observing people – it’s something I’ve done ever since I was a kid, and I got really good at it. That’s a big part of why I became a comedian,” she explained in an interview in 2006. Her dry, wry, observational humour started to catch on and after winning a competition naming her as the funniest person in America she got her big break by being invited to appear on The Tonight Show with Johnny Carson in 1986. She would always tell jokes against herself and her early years. “I was doing stand-up at a restaurant and there was a chalkboard on the street out front. It said, ‘Soup of the Day: Cream of Asparagus. Ellen DeGeneres.’ Not even top of the bill over the soup of the day. Her stand up work continued and then her first foray into television began when she was cast as a supporting player in two sit-coms, ‘Open House’ and ‘Laurie Hill’ in the period 1989-92. Those roles lead to her own 1994 sitcom on ABC, ‘These Friends of Mine’ (later renamed ‘Ellen’ after its first season). She made TV history in April 1997 when her character and Ellen personally revealed that she was ‘gay’. “I didn’t choose to be anything other than a comedian,” she said at the time. “I just happen to be a lesbian, and I didn’t feel like keeping it a secret, so I announced it. It all turned into this whole big political thing.” Some regional television stations refused to air the controversial episode and major advertisers such as Chrysler pulled their commercials in protest. The show was cancelled the following season due to declining ratings after which DeGeneres returned to the stand-up circuit. In 2001, DeGeneres launched a new series, ‘The Ellen Show’, on CBS, but it too suffered from poor ratings and was subsequently cancelled. She continued her stand-up career and landed hosting jobs for the Emmy’s including a memorable effort after the 9/11 bombings in 2001. “I felt it was important for me to be here tonight,” she said during the telecast, “because what would bug the Taliban more than seeing a gay woman in a suit surrounded by Jews?” Never one to be accused of giving up, Ellen returned with her current show in 2003 and is signed to appear until the 2013/14 season. Her goofy collection of celebrity guests, signature dancing, quick fire comedy, crazy games and audience give-aways has made her show rocket to the top of the daytime ratings tree. That appeal has spread across the globe and the show is now seen in 16 countries including Australia. Ellen’s appeal resonated so strongly with SEA FM breakfast radio personalities Moyra, Paul and Baggs that they initiated a public appeal to get Ellen to bring her show to the Gold Coast. It began with social media pages and newspaper articles before culminating in a mass demonstration on Surfers Paradise Beach with live crosses to national TV breakfast shows. That in turn led to an invitation to go to Los Angeles for the taping of Ellen’s show and the chance to meet the star. “We invited her to come down under and she promised the Gold Coast she would as soon as her studio would let her,” said Simon ‘Baggs’ Baggott. “We’ll find out in season 9 if they will be making the big trip to the Gold Coast which will be amazing for our tourism. She was incredibly friendly and warm and we still keep in touch with the producers who have promised to let us know if she is coming down, so standby, we will let you know as soon as we find out.” The moral of Ellen’s story is being true to yourself and being honest with people about whom and what you are and they will accept you. The small town girl with the big dream has done what no one would have thought were possible – middle America and the world have fallen in love with Ellen.

The Ellen DeGeneres Show can be seen nationally on Channel 9 every day at midday. labelmagazine.com.au

MY WORD

The Flip Side of Heather Filippini Is it the money or the challenge? “It’s the challenge. For a woman going into business in a man’s world it’s the thrill of putting nice people into beautiful homes.” The speaker is Heather Filippini, the woman who established one of the most high profile real estate offices on the Gold Coast. So where did it all begin for this impeccably groomed, softly spoken woman. “I was raised in the Coonawarra region of South Australia, and from an early age I knew that I wanted to be a career woman. Starting work in a pharmacy and moving into cosmetics, I became the state manager for Yardley Cosmetics in both Victoria and Queensland and their first female representative. It seems strange to say but I’ve always had an instinct for making the sale. If you’re selling something you love it’s not difficult to sell.” The change from cosmetics to high end real estate was not an immediate move. Married with daughter, Sarah, Heather and her husband Frank Filippini moved to Sovereign Islands. “We wanted a change and it was a toss up between Noosa and here but I’ve always loved bright lights and the Gold Coast has such diversity.’’ Her life became a round of social engagements. Personable and easy-going she would host morning teas and welcome newcomers to the burgeoning estate. “If the Sovereign Islands sales’ team wanted something done they would ask me to host it. I did it all for nothing because I loved the lifestyle. In a strange way it ended up being good training for my real estate sales career because it introduced me to so many of the residents. My reasoning for changing over to selling was because I thought I could do a better job.” Sadly Frank had a stroke and passed away in early 2008. By her own admission it took her three years to deal with the loss. “There was no time to adjust because it was so sudden. We led an active lifestyle and were in the process of completing a large development. It was very lonely because for years we had always done everything together and now as a single female there were so many places I couldn’t go to alone.” With her daughter Sarah, she threw herself into work and continued to carve a niche selling the most expensive real estate on the Gold Coast. “My work was going well and I firmly believe that women make better real estate salespeople. Women are the ones who buy houses so as a woman you listen and are more intuitive. I started the first open houses and still organise functions including hiring a marquee for a Christmas party for the residents on Sovereign. The thing that has sustained me is the sense of community we have here. Having lived here for 22 years I’ve seen the children of some of the shopkeepers grow up to become adults. Those are the people who know and trust me despite everything they read in the papers and I am so grateful for that friendship and trust.” As for her future Heather has planned a trip with daughter Sarah to New York for a white Christmas. “I’ve got to the stage where I want to enjoy my life. If I feel like spending three months in France in a chateau I will. There’s still a part of me that wants to return to my roots in Coonawarra and have a winery. I spend as much time as possible there visiting family and my mother.” Whatever the next step, be sure that it will be done her way.

I have quite a few friends from who I draw inspiration for my designs. They’re quite fabulous and I know a lot of what is going on in their lives so I think about them when I’m designing a collection. Their ages vary from early 20s to about 60. The current winter collection appears to have a touch of 60’s rock chick mixed in with high street glamour. Is that an accurate comment?

That is a spot on description. The long scarves and big hats that can be worn with the winter collection work beautifully with the clothes. The words used most often when describing your designs are ‘timeless elegance’. Retail is tough at the moment – what are your tips for survival? Try to remain energetic and inspired, have good staff, travel and do whatever you can to keep yourself on top of the game. Australia has different fashion styles e.g. Melbourne women differ from the Gold Coast. Do you allow for that with different stock in each locale? The Gold Coast is definitely different. Opening this store

Seven years ago Camilla Franks was a aspiring actor with an eye for design and detail. Today she sits atop a fashion empire, distributing her exuberant designs to all corners of the globe. “It has been an organic thing from when I was doing acting training and designing the costumes for my characters. People came to see me in these really bad plays and would ask about the clothes so I started making things. After I finished my acting training I decided to do a small collection and it grew from there. Fashion chose me, it was never planned – it felt right and I went for it.” Acting’s loss was fashion’s gain and Camilla’s vibrant, fun filled designs made a mark immediately. Dubbed the Kaftan Queen, the label has stuck and while she is aware of the one trick pony aspect, it is a tag she doesn’t worry about. “Ever since I started I’ve always done other garments. As a designer you want to be known for variety but if you’re known for one thing then it is up to you to educate the consumer.” The point of difference in all of Camilla’s designs is the handmade and wildly colourful material. “Each single piece is individually produced. Everything from a collar to a bust line is done specifically for the garment it is intended.” Of course every interview with Camilla has to make mention of the Oprah effect. “The effect was phenomenal. For that to happen and to have her friend Gail and Oprah’s stylist also come into the Paddington store a few times, was amazing. On a business level it was a major achievement and we had a huge spike in sales. It got so hectic we had to turn our on-line store off, not only nationally but internationally as well.” Oprah’s approval fitted in well with the design mantra of fitting any woman, any size, any age, making them feel glamorous. “Some designers I know have stated emphatically to me that they won’t produce any garments over a size 14. That’s really silly because that is the average size now. Every woman should have the opportunity to feel and look amazing.” As for the future, Camilla rattles off a series of projects that make you tired just listening. “There’s the new development with David Jones, plans for a collection for children and men plus a swimwear range and our jewellery designs. We’re also opening two new stores and of course the new range which is influenced by my travels. Babushka dolls, tropical fish in the Maldives and Mexico have all found their way into the designs.” From self-confessed average actor to global style queen the journey has been nothing short of remarkable for Camilla and it’s a ride that won’t be slowing down any time soon.

COCO POPS Everything old is new again with these Love Story inspired classics

Coco and Rogers was established in 2010 by Vanessa Nguyen in a quest to create pieces which are equally striking on their own as well as complementary to the needs of a modern wardrobe. Focusing on trans-seasonal separates and dresses that exude understated sexiness, Coco & Rogers is designed for women who want classic yet modern pieces over short-lived seasonal trends. Inspired by the 1970’s film, Love Story, the summer collection channels the movie’s chic wardrobe of classic flared skirts and slim caftans with a dose of modernity through heightened tailoring and bold colour. The collection is, as always, designed with form and function in mind – the wide leg pant, shorts and flared skirt provide an anchor for the floating silk voile caftans, shirts and tank tops – in perfect summer colours including tangerine and emerald. Made in Australia using the finest fabrics sourced from around the world, the collection has created a sense of easy any-situation pieces suitable for everything from a day in the office to relaxing on a yacht.

Design it and they will come. Remember this Australian brand name, Robb & Lulu, because it is taking America by storm. Named after partners Rob Zagame and Lulu McDermott, the label was recently showcased to Vogue, Teen Vogue, Glamour, Redbook and many more – with the majority blown away by the artistic influence in each piece and requesting feature stories immediately. Stylist to the stars Rachel Zoe also expressed interest, Tyra Banks pulled stock for her website typef.com and soon major boutiques were clamoring for stock. The buzz is due to the uniqueness of each piece. The formula used to produce a Robb & Lulu garment is essentially to take an intricate illustration or fabric creation by Lulu and fuse it with a unique garment design by Rob. The result is easy to wear, truly individual pieces that will ensure wearers stand out from the crowd, whether it be through an incredibly detailed illustration or a flamboyant, colorful print. The range includes dresses, scarves, tees, tanks, bikinis and lingerie for women and tees for men. Tees are adorned with beautiful Goddess/Warrior Princess illustrations, whilst the intricate, colorful fabric for the balance of the range is also designed by hand. You definitely don’t wear Robb & Lulu if you don’t like being noticed. The illustrations and fabric designs are created by Lulu starting with a drawing pad and pencil. Once the sketch itself is finalised, inks are applied and finished with a water-color wash, coloured pencil and paint or artist markers. The design is then scanned onto a computer so that final touches to the design may be made digitally. Designs are sent to an Australian printer for print either directly onto a tee/tank or onto fabric to be used for other garments. All printing and manufacturing of garments is carried out in Australia and best of all, they’re wash and wear. The Debut Collection which created such a firestorm of publicity in America will be repeated when the Spring/Summer Collection is launched here. Stand by, things are going to get super colourful. Robb & Lulu are offering Label readers 20% off the entire collection until the 30th November 2011. Go to robbandlulu.com and enter code: LABELR&L.

diamond experts Why you should buy your diamonds from 5th Avenue Jewellers? What sets us apart and makes us experts?

An expert is a person with superlative knowledge who has achieved the highest levels of expertise in their field after years of study. 5th Avenue Jewellers are jewellery and diamond experts with expertise in all aspects of the jewellery industry, gemmology, Diamond grading and valuing. Darren Daley is one such expert. He is the newest member of our team of three, including Nicole Hannaford and Jan Whelan, who are fully qualified and registered gemmologists and valuers at 5th Avenue Jewellers, Pacific Fair. Darren is not only a highly skilled manufacturing jeweller; he is also a gemmologist and registered valuer, with additional qualifications in the areas of Diamond Technology and Advanced Diamond Grading and has been a teacher, demonstrator and examiner of each of these courses for many years. Darren’s research has focused on the field of synthetic diamonds and diamond treatments. He has extensive experience on many trade committees, both at a State and National level, seeking to promote education and an increase in the knowledge and training in the jewellery industry as a whole. Darren’s experience guarantees you quality, hand selected, well cut diamonds and the knowledge to answer your questions as a real expert without the need for props. “I feel that there is too much reliance on Diamond Grading Certificates to determine whether a diamond is worth purchasing. Like all things in life there are good and bad 26

certificates, which the general public are not able to discern. We have lost much of the romance that looking at a fine gemstone gives the viewer. After all, we wear the item of jewellery, not the certificate.” “When examining or valuing diamonds purchased overseas or via the internet, I am amazed what is out there in cyber space. Usually the colour and clarity is all that is sold but this is only half the story of diamonds or indeed any gemstone’s value,” said Darren. “Recently I had to value one such item for a client that was purchased over the internet from the United States and whilst he thought he was buying a bargain, the stone turned out to be a fracture- filled diamond of very little value with real issues as to its long term durability. This was a fact of which he was not informed.” “At 5th Avenue Jewellers, we pride ourselves on the fact that all of our gemstones are natural with absolutely no mass produced, synthetic gems in store. We have been successfully trading at Pacific Fair for nearly 20 years. We design, remodel and manufacture fine quality jewellery and either myself, Nicole or Jan are available to provide the best possible advice for our clients. “Because of our knowledge and experience we feel confident that when travelling the world, viewing and purchasing jewellery and gemstones that the items we have in store are the best quality and value that you will see both here in Australia or overseas.”

Face facts Why risk your health on a cut price surgical procedure in a foreign land?

It sounds tempting – travel to some exotic destination and combine an overseas holiday with plastic surgery and come back as a new you. While the price and the holiday may seem tempting it is important to compare what is available here with what is on offer in a country where you may not be able to safely drink the water. Any operation carries an inherent risk and there are several important questions you need to ask before you sign up for something that could quite literally cost you your life or result in emergency care. The anticipated holiday may end up being just recovery in a hotel suite without all the comforts of your own home. There are many things to consider when contemplating surgery overseas; is the person promoting the surgery medically trained or are they simply a travel agent or broker? Do they understand fully medical indications and contra-indications for surgery and will they be able to support you post operatively if you have medically based questions? Is the surgeon a member of the International Society of Aesthetic Plastic Surgery (ISAPS) or Australian Society of Plastic Surgeons (ASPS)? And importantly if having implants, is the surgeon using accredited implants with TGA or FDA approval or are they using copies or sample implants? Do you have a plan in case of any post-operative problems especially if English is not the native language? Most surgical complications will occur more than a week after an operation. If you have surgery overseas you may need to deal with a complication once you return home. Do you have full and real details of how the surgery was done, the sterility standards of the overseas complex or the details of any implants used? If you need a blood transfusion are you comfortable with receiving this in a foreign country? Insurance is compulsory for Australian doctors but may not be in other countries or the insurance policy may only cover a patient that is a national of that country. You may find yourself with significant expenses if there is a complication. The sad fact is most people travelling overseas for surgery spend more time researching the purchase of a household appliance than researching their surgeon and comparing ‘apples with apples’. Make an informed decision regarding your health and well being if considering having cosmetic or plastic and reconstructive surgery.

Sometimes your skin can feel trapped behind dirty and oily shine. Neutrogena Deep Clean Shine Control Daily Scrub combats the problem of sheen in two ways. kudos health club What makes Kudos so different? It’s a question that Kudos operations manager Chris Wells has been asked many times since it was announced they were moving into their brand new facility in Bundall. “Essentially it’s less about the equipment and more about the experience, friendly staff and being in a safe, comfortable place to work out. The club delivers on every level – luxurious fittings; the world’s best training equipment; a super clean and hygienic environment plus a level of personal service unmatched by any other health club. We aim to be the benchmark and set the highest standard possible in luxury and style, making us the ideal place for both working out and relaxing.” With its own members lounge and café, including complimentary continental breakfast and unlimited Wi-Fi access, Kudos also boasts a resort style 25m heated outdoor swimming pool, modern cardio theatre, group fitness studio, Kinesis wall, advanced resistance training machines, personal training services, massage, Nutrition Centre and much, much more. In a word, Kudos equals belonging, members who want the best and the aim of Kudos is to provide them with a club for a select group that want a health experience combined with a social and business network. Another unique concept is that Kudos has a strict membership limit – about a third of the number that most similar sized clubs allow. That translates into a less crowded and more exclusive work out when you visit. Once the numbers have been achieved the only way to join is through a referral and a waiting list. With the best facilities and advanced technology, this stunning new concept in a health and fitness club allows the discerning member of Kudos and the dedicated, highly-trained staff, to focus purely on total well-being and end results. PERFUMES FOR PASSION Spice up your life with these spring sensations

Choose One

Imagine femininity, luxury, and style...bottled. Introducing Jimmy Choo, the fragrance! This is an essential extension of the Jimmy Choo lifestyle. With its green top note, heart note of tiger orchid, and base note of toffee and sensual Indonesian patchouli, this is a scent comprising equal measures of female empowerment and elegance, one that evokes glamour, confidence, desire and refined sexuality. In short, this is a fragrance for women with a sense of fashion and a taste for luxury.

Floral Fun

Composed as an ode to light, Elie Saab Le Parfum celebrates the splendor and the brilliance of radiant femininity with a floral, solar, woody theme. The permanent exchange between flowers and wood is what gives the fragrance such captivating resonance. From the first notes, the soaring brilliance of the orange blossom sets the tone for this olfactory spell. A solar evocation of armfuls of Mediterranean petals, whose luminosity comes from the rays of the sun at its zenith.

Basic Classic

True to his favourite themes, Jean Paul Gaultier has always made tattoos a playful feature of his creations. Thus his lovely Classique Summer pays unprecedented homage to its creator by entirely covering themselves in tattoos. The Classique Summer fragrance once again features rose and orange blossom flirting in the top notes, followed by a burst of Sambac Jasmine and Ylang Ylang middle notes that ripen into vanilla absolute and fresh musk accords.

Cool Britannia

That most British of brands, Burberry, have released Burberry Body, a fragrance designed to reflect all the facets of their brand. Described as oh so very British, this is the most sensual and feminine fragrance while still sophisticated, modern and delicate. A fragrance to appeal to women regardless of their age, it has been created to be sensual, natural, elegant, memorable. The sensual notes of rose and iris combined with woody top notes create this unmistakably British scent.

Dizzy Issey

Since 1995, Issey Miyake fragrances have pioneered the reinvention of their summer limited editions. Created by Jacques Cavallier, the Summer Editions 2011 offer a fresh, luminous and joyful break for the season. Sparkling and crisp, the fragrance radiates fresh and delectable top notes of Rose and Pear Water that blossom on floral middle notes of Peony and Carnation. At the base, a delicate harmony of Osmanthus and precious wood enhances the velvety notes of the scent. Invigorate and reinvent your inner male with these new releases Be a Legend

When an object bears the Montblanc name, style is central, essential. LEGEND simultaneously expresses strength and softness; clarity and mystery. This very masculine yet subtle perfume, created by Olivier Pescheux, belongs to the Fougère fragrance family. The middle notes vibrate intensely: Evernyl, a molecule very reminiscent of oakmoss, deploys its warm sensuality and depth. “I wanted it to be the true heart of the formula,” explains Olivier, “so I was very generous with it.”

bovine devine Join the crowd at this iconic Broadbeach restaurant as it reaches new heights

Great restaurants have an energy and pulse about them that separates the run of the mill from the fabulous. Difficult to quantify it occurs when everyone involved, from the wait staff to the kitchen brigade, have a palpable passion about their job and the service they are providing. Moo Moo The Wine Bar + Grill at Broadbeach on the Park has that and then some with a buzz emanating from every aspect of this popular eatery. It starts in Moobar which has become the haunt of locals and visitors alike as a place to relax and catch up with friends or enjoy a pre-dinner drink before heading in to dine. Be it Champagne, Chardonnay or a cold one, to be in the midst of the Moobar crowd overlooking Victoria Park, slightly removed from the bustle of Broadbeach’s eat streets, is to be in a place of excitement and fun. That vibe translates in to the main dining area as well with the hubbub of the diners and the dragonfly darts of the staff as they zip around attending to the needs of the patrons. A new specially designed beef menu, hand selected by owner Steven Adams & Executive chef Damian Draper, has recently been launched. Combining subtle yet scintillating flavours of fresh seafood and

premium quality produce the emphasis by Chef Damian is flavour, flavour, flavour. Be sure to check out the just released Aussie Black, a brand new full blood Wagyu with of course a side order of Moo Moo’s famous truffle and parmesan shoestring fries. Bliss! smooth as Two years young and getting better with age, Glass continues to impress.

Glass Food: A good restaurant lives or dies by the quality, consistency and variety of its menu. So how best to describe chef David Pommier’s fare? This is modern Australian with an emphasis on the freshest of seasonal produce and ingested with a sizeable dollop of traditional French cooking. For that you can thank David’s work in Michelin hatted restaurants in his homeland and the influence of his grandmother who passed on her love and passion for cooking. The menu covers every flavour in an extensive array of our finest produce guaranteed to sate every hunger. Glass Service: Guided by the tender hand of experienced restaurateur Shanan Harmelin, Glass has the sense of a place where everyone knows your name. Part of this is due to the fact that Shanan and co-owner Patrik Gennari have managed to retain the vast majority of their staff since opening two years ago. That produces an easy familiarity due to the enthusiasm of experienced hands who are dealing with repeat customers and new diners who they want to return. Glass Bar: Two years young and getting better with age, Glass boasts a premium lounge bar like no other, a place to see and be seen. The cocktails are extraordinary and worthy of a visit simply for the sheer indulgence of relaxing with something as decadent as The Rouge Door made with Bombay Gin, Chambord, chilled strawberry puree and lime juice. A tapas menu is also available while you sit and watch the sun shimmer into the horizon. Glass Chef: The cream always rises to the top and so it is with chef de cuisine David Pommier. French born but working in Australia by choice, David’s position at Glass is the culmination of fifteen years hard work and dedicated service. With fellow Frenchman Arnoud Ollivier as his sous chef, David oversees the diners from behind the grill ensuring that everything is just so for every meal. What is his favourite on the menu? The oven baked ‘Bobby’ veal rack with new potatoes and King Brown mushroom topped with Ossau Iraty cheese gratin, baby carrot, broccolini and star anise veal jus since you asked. Glass Style: Sitting prettily alongside the multi-million dollar boats resting quietly in the marina, Glass feels like an extension of an expensive ship’s salon. With highly polished timber floors, expansive views of sea and sky and encased in floor to ceiling windows, this is a venue for all seasons. Unlike some expensive fit-outs this is a room that oozes warmth and welcome and the clever lay-out ensures that every seat in the house is front row to the natural beauty of the Gold Coast. With Christmas fast approaching Shanan and the team have produced an imaginative array of function menus. Able to cater for anything up to 200 people, Glass Dining and Lounge Bar can make any function more memorable than you could imagine. Phone 5527 1009 or visit glassrestaurant.com.au. 50

The Drink of Kings

Produced in the Loire Valley of France, Chambord Black Raspberry Liqueur was introduced to Louis XIV during a visit to the Château de Chambord. Whole raspberries and blackberries are steeped in French spirits for a period of several weeks to achieve a rich fruit infusion. This infusion process produces a distinct natural raspberry flavor and aroma. The spherical bottle is modeled on a Globus cruciger which reflects Chambord’s royal connection.

& wine Craggy Range Wine – Land of Giants

The wine-making traditions of Europe are based upon family traditions. In 1997 Terry Peabody set out to establish a dynasty with the founding of Craggy Range Wine in New Zealand. With Director of Wine and Viticulture Steve Smith as a partner and with the involvement of both their families, they have quickly established a legacy in fine wine-making that will continue for generations. The wines of Craggy Range reflect not only the character of the vineyard and the maker, but also the unique weather and cultural aspects of every vintage. Some vintages are exceptional but when the season dictates that the standard has not been met then those parcels of wine are declassified as assemblage and take no further part in the finished wine. The one word used on all occasions is quality. Each and every vintage must stand on its own which is why Craggy Range single vineyard wines will not be made in all vintages. There are two

Hang Time

distinct collections. The first is the Vineyard Designated Collection, intense and complex bearing the Craggy stamp of elegance, balance and texture. The second is the Prestige Collection produced only in exceptional vintages when the soil, climate and culture at Craggy Range come together in unity. These are released in a very limited collection of single vineyard wines each with a name that reflects its heritage. Craggy Range Giants Winery in the beautiful Hawkes Bay area has gained worldwide acclaim both for the wine tasting experience it provides and the award winning Terrôir Restaurant. The brand is the culmination of different vineyards based in Hawkes Bay, Martinborough, Marlborough and Central Otago. Each produces grapes which are used to make single vineyard wines, in keeping with Terry Peabody’s original dream of producing the best wines in the land. The tradition continues.

Hangover cures – we all have one but often the cure is worse than the illness. Hydrodol is different. Specifically designed to alleviate the adverse effects of a big night out, it contains a amino acids, vitamins, minerals, an antioxidant and a kick-ass Chinese herb (pueraria lobata) which has been around for centuries to help relieve hangovers. Taken whilst drinking alcohol it relieves symptoms such as nausea, dehydration, headaches, diarrhoea, sugar cravings and more. Available from pharmacies in an 8-capsule pack $13.95 and 16-capsule pack $19.95.

sunset Boulevard One of our more picturesque restaurants has added to its beautiful setting by extending the hours of operation.

Ristorante Fellini, the iconic Italian eatery at Marina Mirage, has introduced ‘sunset dinners’ allowing customers the opportunity to dine and enjoy the late afternoon skyscape. Having identified the cosmopolitan demand for customers looking for an all-day menu, diners can now enjoy a Fellini late lunch or ‘sunset dinner’ with the restaurant now serving meals from 12 noon right through to evening. The full menu will be available under the new trading times with co-owner Carlo Percuoco welcoming the extended trading hours as a chance for locals and visitors alike to experience Fellini’s famed cuisine at their leisure. “Over the past few years we have noticed people wanting to have lunch later and dinner earlier, so the partners of Fellini collectively decided it was time to accommodate this market,” said Carlo. “We’re excited about the extended trading hours and now is the perfect time to be enjoying our glorious spring weather. For years the staff have enjoyed the most beautiful sunsets from here in the restaurant. Now more people can enjoy long lunches or come in early for pre-dinner drinks and sit back and enjoy the best part of the afternoon with us.” Carlo said the extension of trading hours marked a historic moment in the restaurant’s history, having only operated separate lunch and dinner sittings since their opening more than 15 years ago. “We have never traded all the way through so this is a bit of a milestone for us,” he said. “It’s a sign of the times. We’ve noticed diners – especially those who are visiting from the bigger cities interstate – are used to being able to dine at their favourite restaurants at any time of day or night. We are meeting this demand while also being able to cater for our regulars who wish to make the most of the afternoons and evenings and enjoy a more flexible time to dine.” With a fresh new menu showcasing the spectacular culinary talents that come with years of experience in fine Neapolitan cuisine, Fellini remains one of the Coast’s most sought after dining experiences. The iconic Marina Mirage restaurant has been owned and operated for the past 14 years by the Percuoco family, including brother Carlo, sister Anna Cacace and partners Richard Burt and Raffaelle Di Benedetto. Together the partner’s modern take on traditional Italian cuisine handed down through the generations has won Ristorante Fellini more than 100 industry accolades since its inception. “We recently introduced a new menu, with a range of exciting flavours, but of course our signature dish favourites remain the same,” said Carlo. “All of our pasta is made fresh daily at our on-site boutique pasta making factory Pastificio Fellini – which is Raffaele Di Benedetto’s specialty. Most importantly, the faces of Fellini haven’t changed and our loyal diners continue to come along and enjoy our famous food, atmosphere and hospitality.” Ristorante Fellini is located at Marina Mirage, Main Beach. Custard Tarts Makes 18 1 quantity Sour Cream Pastry (below) Plain flour, for dusting 1 cup milk 1 cup pouring (single) cream 3 eggs 3 egg yolks ½ cup caster sugar 1 tablespoon natural vanilla extract Maggie Beer Sour Cream Pastry 200g chilled unsalted butter 250g plain flour 125ml sour cream To make the pastry, dice the butter, then pulse with the flour in a food processor until the mixture resembles fine breadcrumbs. Add the sour cream and continue to pulse until the dough starts to incorporate into a ball. Wrap dough in plastic film and refrigerate for 20 minutes. Roll the chilled pastry out until 3mm thick and cut to suit your chosen recipe. Step 1. Divide the pastry into 2 equal-sized discs before wrapping in plastic wrap and refrigerating for 20 minutes to rest. Roll a disc out to 5mm thick. For 7cm round (measured at the top) muffin or cupcake moulds, cut out 11-cm rounds from the pastry. Cut out a round and gently press into a muffin tin mould. Leave the excess pastry sticking up above the muffin tin

to make pastry case taller (which will give you some shrinkage allowance). Keep cutting out rounds and lining the moulds until you’ve exhausted the pastry sheet. When you’ve cut as many rounds out as you can, put the pastry cuttings back together, dust with the flour and roll it out again to cut out more rounds. Keep doing this until you’ve exhausted the first disc of pastry, then take out the second disc and do it all over again. You should have 18 lined muffin moulds. Pop the muffin tin in the fridge for 30 minutes to rest. Do not skimp on resting – this is crucial to the pastry not shrinking too much and becoming one big eggy mess in the oven. Preheat the oven to 200°C. Step 2. Place the milk, cream, eggs, egg yolks, sugar and vanilla in a large bowl and whisk until just combined. Transfer to a jug, and pour into the pastry cases, filling just over halfway – don’t be tempted to fill them anymore because the eggy filling will expand. Carefully place the tin in the oven and bake for 10 minutes, then reduce the temperature to 180°C and bake for a further 10 minutes. Step 3. Remove from the oven and allow tarts to cool in the tin for about 5 minutes, then ease them out with a butter knife. Serve straight away or store in an airtight container for a day.

RECIPES Confit Duck Serves 6 2 tablespoons sea salt 3 garlic cloves, peeled 1 teaspoon black peppercorns 1 star anise 6 thyme sprigs 6 duck Marylands (about 200g each) 2 kg duck or goose fat, plus olive oil for topping up Cherry Sauce ¼ cup red wine 680g jar morello cherries, drained, ¼ cup syrup reserved 2 tablespoons white sugar 2 star anise 1 cinnamon stick Step 1. Lightly pound the salt, garlic, peppercorns, star anise and thyme springs in a mortar using a pestle. You want the garlic to be slightly crushed and the spices cracked. Rub the salty mixture into the duck pieces, cover with plastic wrap and refrigerate overnight to marinate. Step 2. Preheat the oven to 120°C. Rinse the duck under cold water to remove the salt mixture. Pat dry and place in a casserole dish or deep roasting tray that’s just large enough to fit the duck in one snug layer. Heat the duck or goose fat in a saucepan until just melted. Pour over the duck, making sure all the pieces are completely covered – top up with a little olive oil, if you don’t quite have enough. Bake for 2 hours, or until the meat is soft and shrinking back from the bone. Remove from the oven. At this stage you can crisp up the duck skin and enjoy immediately or store the confit duck for later. If you’d like to store it, transfer the pieces to a large sterilised jar or container. Strain the fat into the jar to completely cover. Cool, then store in the fridge until you’re ready to serve. You can store the confit duck like this for up to 2 weeks. Poached eggs with Smoked Trout & Herbs Serves 2 100g hot-smoked trout, skin and bones removed, flesh flaked 1 tablespoon finely chopped dill 1 tablespoon finely chopped basil leaves 1 tablespoon finely chopped flat-leaf parsley ½ cup extra-virgin olive oil Juice of ½ lemon ¼ teaspoon sea salt 2 tablespoons white vinegar 4 eggs, at room temperature 4 thick slices toasted sourdough bread, to serve Freshly ground black pepper Step 1. Place the trout, dill, basil, parsley, olive oil, lemon juice and salt in a bowl and give everything a quick mash with a fork. Set aside until ready to serve. Step 2. Fill a large deep frying pan with water, add the vinegar and place over medium heat. Heat until little bubbles start to form and rise from the base of the pan. You want the water to be hot but not simmering rapidly otherwise the egg may break up. Crack each egg into a cup or small bowl and then slide them into the water. Poach for about 4 minutes, or until the eggwhite is just set but the yolk is still wobbly like soft-set jelly. Scoop out each egg with a slotted spoon. Slide onto a plate while you get the toast ready. Step 3. Spread each piece of toast with a spoonful of the trout mixture. Top with a poached egg and spoon over more of the trout mixture. Finish with generous grindings of pepper. 58

label magazine SPRING 2011

Step 3. Ready to eat now? Preheat the oven to 120°C. Heat a heavy-based frying pan over medium heat. Remove the duck pieces from the fat. You will need to scrape away the excess fat, if you’ve been storing them in the fridge. Add to the pan, skin-side first, and sear for 3–4 minutes, or until the skin is golden and crisp. Turn the duck pieces over and cook on the other side for about 2 minutes, or until warmed through. Transfer to a roasting tray and keep warm in the oven while you make the cherry sauce. Step 4. Pour off most of the fat from the pan, leaving about 1 tablespoon and put it back on medium heat. Pour in the red wine and let it sizzle for half a minute, using a wooden spoon to scrape off any crisp duck bits from the base of the pan. Add cherries and reserved syrup, sugar, star anise and cinnamon. Simmer for about 15 minutes to infuse the flavours and let the cherries collapse and thicken the sauce slightly. Serve the duck with generous spoonfuls of sweet cherry sauce.

Rae’s Spa; food at the Fish Café; the fabulous pink exterior of Rae’s; Marionne De Candia.

RAE’S on wategos It’s pink, it’s personal and it’s perfect. Welcome to Rae’s on Wategos, the exclusive, seven roomed boutique hotel that is one of Australia’s most exquisite and unique accommodation experiences. Perched on the beach front of picturesque Watego’s Beach and within walking distance of Cape Byron, Australia’s eastern most point, Rae’s is a destination of its own. The decor is first class with a mix of Moroccan, Mediterranean and Javanese decor. Warm and accommodating, this is a hotel with an exotic and eccentric charm that embraces and holds you from the moment you walk through the door. Cape Byron was named by Captain Cook in 1770 after his vice admiral, the grandfather of great romantic poet Lord Byron, and it is fitting that Rae’s has become such a haven for lovers of all ages. Romance aside there are a vast array of activities to tempt the guest out of the warm embrace of the hotel. Ranging from the adrenalin rush of hang-gliding or white water rafting, to golf, scuba diving and eco-adventure tours or the more sedate whale watching, bush walking and horse riding, all are within easy distance of Rae’s. Long the hotel of choice for celebrities wanting to escape the annoyance of prying eyes and lenses, Rae’s has played host to a stellar roll call of the rich and famous. To name drop just a little they include Keith Richards, Ricky Martin, Tom Cruise, Elle Macpherson, K.D. Lang, Keanu Reeves, Gwyneth Paltrow and Nicole Kidman. When Sir Richard Branson was asked to nominate his favourite hotels in the world he described Rae’s on Wategos thus. “Rae’s is a lovely little hotel; it’s only got about seven bedrooms and I highly recommend it.” After twenty years at the helm of his piece of paradise, owner Vinnie Rae has added a new dining experience to this boutique hotel. The recently opened Fish Café is a throwback to Byron Bay’s hippie chic beginnings combining casual seafood fare with artful elegance to provide an array of mouth-watering fresh seafood temptations. The new addition sits well with Vinnie’s stated aim when he first created his bohemian rhapsody of bringing the best of all worlds to the best place on earth.

MARIONNE DE CANDIA Chief among the many delights of a stay at Rae’s on Wategos in Byron Bay is the chance to put yourself, literally, in the hands of Marionne De Candia. As the manager of Rae’s Spa, Marionne has previously played a key role in the development of some of Australia’s finest spas. Her 30 years of experience have covered every aspect from therapist, specialist facialist and five star spa manager to luxury spa consultant. Throughout her career, Marionne has studied facial techniques from the very best. The secret of her success is surprisingly simple – her skin care treatments are based on the understanding that even the world’s best skin care products need to be applied with the right intention to achieve their true rejuvenating potential. Marionne’s special topic of interest has always been with ageing skin, particularly the effects of premature ageing due to sun exposure and environmental agents. But whilst her specialty lies within perfect technique and knowledge of the latest advances in anti-ageing skin care, her real passion is in helping people by identifying and applying the right treatments, products and lifestyle adjustments to make a real difference in people’s lives. For fashion and film celebrities, perfect skin is part of their capital wealth. The honorary title of ‘Celebrity Facialist’ is reserved for those whom celebrities trust to regularly care for their most precious asset. Marionne’s skin care expertise and facial skill sets are well renowned and applauded in a wide range of media from Harpers Bazaar and Vogue through Conde Nast and spa industry publications. Her client list includes Elle Macpherson, Kate Hudson and Baz Luhrmann to name a few but celebrity or not, Marionne’s mission is that every person she meets and treats should receive the best of her talents.

Grand Motors Toyota is excitedly looking forward to the expansion of the Prius family in Australia next year with the launch of two all-new hybrid models. The new vehicles being evaluated for the local market will be based on the compact Prius c Concept and versatile Prius v wagon, which are being displayed at the Australian International Motor Show. The go-ahead for local sales would see production versions in their Ferry Road, Southport showroom during 2012 alongside the regular Prius. Toyota Australia’s senior executive director sales and marketing David Buttner said the two show cars represented new possibilities for adapting hybrid vehicles to meet the needs of diverse lifestyles. “The Prius family tree is set to grow in Australia with a Prius for everyone. “The Prius c Concept and Prius v demonstrate Toyota’s ability to offer the benefits of Prius in a variety of vehicles to a wider range of customers.” Mr Buttner also said cutting-edge advances made through Toyota’s continuous hybrid research had resulted in these new cars that offer outstanding fuel efficiency and environmental performance. The cars are directed at two distinctive markets and Grand Motors are confident that the cars are a perfect fit for the Gold Coast lifestyle. The Prius c Concept is a city-friendly car aimed at young singles and couples who want a fuel-efficient car that is fun to drive and has an impressively spacious interior. It will be Toyota’s most affordable hybrid and will offer even better fuel economy and lower emissions than the flagship Prius. The Prius v – with “v” standing for versatility – is designed for young families and fleet customers looking for a car with added space and flexibility, as well as exceptional fuel economy. It offers seating for five with a low, wide-opening hatch that gives access to more cargo space than many small SUVs. The Prius v has the same proven Hybrid Synergy Drive system as the third-generation Prius, with the advantages of low fuel consumption and low emissions – and it never needs to be recharged. These two cars represent new possibilities for adapting hybrid vehicles to meet the needs of diverse lifestyles. The Prius family tree is set to grow and Grand Motors Toyota are confident that with these new models they will be able to find a Prius for every Gold Coaster. be the boss

Check before you become the boss and sign the cheques

So you want to be the boss and control your destiny? Owning your own business is not a simple task and with regulations and rules on top of the difficult financial climate you must be sure that all your ducks are in a row. From a legal aspect you need to ensure that before you enter into a contract to purchase a business that you consult your solicitor. Before you even get to a contract there are extremely important issues of structuring that must be considered. Don’t for a moment think you should just be buying in your own name, serious consideration should be had to owning the business in a company, trust or combination of these vehicles. This type of structuring when done correctly will provide asset protection and may also allow your accountant more flexibility when planning your taxation matters. The contract must be properly drafted to ensure that you are protected as this is the single most important stage of the purchase. A sensible business contract should allow you the opportunity to investigate all aspects of the business before you are committed to buy. You need to make sure the accounts of the business are

accurate and you should ensure your accountant verifies the figures. A trial period can be negotiated where you work in the business and get to see not only the workings but also the customers and the income. It is essential that the premises from which the business operates is secure as often there is a large amount of the goodwill attached to the position of the business. Therefore your solicitor must check the lease and ensure you have security of tenure. All licences and approvals must also be in place to guarantee that you will be able to operate the business. Issues with staff, ownership and transfer of assets, business names, websites and the like form an integral part of the process. Franchises are often part of business purchases these days and it is essential that you are properly advised on these agreements. Your solicitor will be able to guide you through the process and you will soon learn being The Boss simply means that you have responsibility for not only yourself but the whole business.
