Her unique look has launched as many campaigns as Helen of Troy did ships. From Levi’s to ModelCo, Label looks at the evolution of the decade’s most iconic super model.

I

f you are an iconic Australian beauty brand that is conquering the fashion and beauty world, it is only fitting that you should link with a name, face and body that is an iconic fixture in the modelling world. In a marriage made in marketing heaven, ModelCo, the producer of award winning tanning, beauty and sun care solutions, has signed the face of our generation, Rosie Huntington-Whiteley, to be their global ambassador. “It’s an honour to be the face of such an iconic Australian beauty brand,” said Rosie when the deal was first announced. “ModelCo’s innovative, dual purpose, glamour-on the-go cosmetic and self-tanning products really resonate with my lifestyle. As a model and actress my skin always needs the utmost care so I am thrilled to be launching ModelCo’s incredibly effective natural skincare range in Australia.” A renowned lingerie model, Rosie is, as you would expect, a natural stunner. Her long, lean body, golden locks, pouty lips and striking blue eyes make her a natural in front of the camera. Her effortless looks are further polished by her concise cosmetics kit. “I always prime my skin with ModelCo Face Base as it makes my skin smooth and keeps my makeup in place,” Rosie said. “When I’m not working I like to keep it very simple. Something light like ModelCo BB Plus to even out my skin tone topped off with lots of lashes.” Born in Plymouth, England, Rosie is the eldest child of Fiona, a fitness instructor, and chartered surveyor Charles. She, with her younger siblings Toby and Florence, spent what many would describe as an idyllic childhood with weekends spent on the family farm in Devon. Nothing in that rural childhood suggested that she would be drawn towards design, modelling and fashion. At just 15 years old, she managed to get work experience at a London-based modelling agency and within a year had landed her first job for Levi’s jeans. That paved the way for her first big break, a shoot in New York for Teen Vogue. Her looks, grace and natural charm soon had the young Rosie making her catwalk debut alongside none other than Naomi Campbell in New York in 2004. She was in most respects the antithesis of the slightly masculine, too skinny models of that time. Her healthy, outdoors look resonated with agencies and clients alike, and over the next few years she did campaigns for various high profile companies including Abercrombie & Fitch. By 2006 her figure received the ultimate accolade, signed to the celebration of the female form in lingerie super brand, Victoria’s Secret. What ModelCo sees and has rewarded today was evident back then – a healthy, natural beauty, who is approachable and someone all women aspire to be like. Modelling in lingerie would be the stuff of nightmares for most women, but Rosie sees how her career took her down that path quite differently. “It wasn’t a plan. It’s just naturally my look, I guess. I felt empowered doing lingerie shoots. Lingerie is the ultimate feminine buy and I love the feeling it gives women, the empowerment. I love that it’s for women only and then men afterwards,” she explained

at the time. “The thing that I'm always mindful of is when that I'm posing for an image is that it needs to empower me and women. I want there to be a strength there, a strong sexiness in the final image.” From that initial strut down the runway as a Victoria’s Secret angel, the now 27 year-old Rosie’s career has hit the heights. Billed as the next Kate Moss, she participated in a string of high profile campaigns. Burberry came calling; she featured on the cover of British Vogue for the first time; an Elle Style Award for Model of the Year in 2009; in short her life became a hectic round of photo shoots, travel, openings and appearances. Godiva, Miss Sixty, Prada, Loewe and a nude shoot for the Pirelli calendar were just some of the companies for whom she produced a range of images in that time. She even had a photographer produce a series of images of her in a book entitled “Ten Times Rosie.” Then in 2011 the ultimate accolade for the schoolgirl who was teased about her looks came when Maxim declared her as their No. 1 on the Hot 100 list. For someone with an intimate knowledge of what lingerie should look, wear and feel like she has signed a deal with traditional British store Marks & Spencer to produce a range – Rosie for Autograph. While it doesn’t guarantee to make every woman look like Rosie, it has hit the mark with the buying public becoming a best-selling lingerie brand, and in the process, making Rosie a lot of money. “I wanted to make sure that whatever I put my name to made sense for me and my career. I love Marks & Spencer; it’s so iconically British. Everybody shops there, it doesn’t matter whether you’ve got a massive income or not. It just told a nice story for me and I bought my first bra from there.” Today Rosie has it all. Fame, beauty, a Hollywood boyfriend of four years Jason Statham, which is why she is the unique position of being very, very particular about what she puts her name to and which products she endorses. That attitude speaks volumes about her decision to endorse an Australian brand in ModelCo, kicking it off with their 2013/2014 summer campaign. People who know and work with her are constantly amazed at her professionalism; it is something she attributes to her mother. She has spoken publicly how as children they were never allowed to sit around playing games on the computer or lying about on the couch. Unsurprisingly, maintaining her model complexion forms a great part of her work ethic, along with hydration and rest. “I like to ensure my skincare regime is simple yet effective, using products that produce real results for my skin. I always start with my ModelCo Gel Cleanser to lift away any impurities- I love the lightweight gel formula. In the mornings I apply my ModelCo Instant Miracle Booster which instantly firms my skin and invigorates my complexion.” As for her bedtime routine, Rosie applies “a few drops of ModelCo Rosehip Plus because I love the way my skin looks and feels the morning after. Because travel and makeup are such big parts of my life, my skin is quite sensitive. ModelCo Soothing Day & Night Moisturiser is my go-to moisturiser as it calms and restores hydration back into my skin.” The latest range Rosie has fallen in love with is ModelCo CEO and founder Shelley Barrett’s natural range of skincare products that are essential for healthy, radiant skin. Free from chemicals, synthetic ingredients, parabens, sulphates, silicones, PEGs and synthetic colours, the creation process began after intensive customer consultation. Rosie even carries her favourites from shoot to party. “The secret to keeping my skin hydrated and replenished is with ModelCo Replenishing Rose Mist Facial Mist,” she said. “I carry this in my handbag at all times and give my skin a quick spritz for instant refreshment.” Since it was founded 13 years ago, ModelCo has achieved spectacular global success with the brand now sold in five continents, 11 countries and in over 3000 retailers. Who better to take such a natural product to the world than a woman globally known for her organic approach to life and work? labelmagazine.com.au

Shelley Barrett’s Innovation Station

I

n 2002, ModelCo sprung onto the international stage with creator Shelley Barrett’s first beauty innovation TURBO LASHWAND Heated Eyelash Curler. What began as the former model agent’s pet project evolved into a globally beloved beauty brand before Shelley could say Fat Lash. Now in its 13th year, ModelCo continues to triumph over beauty routine tribulations with the latest addition to the range, natural skincare. Label chats to the entrepreneur about the business of beautification, one TAN Airbrush in a Can at a time. ModelCo has seen amazing ambassadors like Elle Macpherson, Dannii Minogue and Cheyenne Tozzi. What makes Rosie Huntington-Whitely the quintessential ModelCo girl? Rosie is wonderful to work with; she truly encapsulates the ModelCo brand. We love that she makes everything look so effortless and glamorous and appeals to such a mass audience. That’s what ModelCo is about – achievable, every-day glamour – Rosie really personifies that. What has owning a model agency taught you about selecting the perfect ambassador? Above everything else, a brand ambassador needs to be passionate and have genuine love of the brand and love the products they are promoting. Rosie was a fan of Tan Airbrush in a Can for years prior to becoming the face of ModelCo. How has Rosie’s ambassadorship strengthened the brand? Signing Rosie really catapulted ModelCo into a mass international audience – she is worldly renowned for her beauty. Even though ModelCo is already a global brand, having an ambassador such as Rosie continues to lift our brand in the eyes of our consumers and our retailers. How did you conceive the revolutionary TAN Airbrush in a Can? Owning my own modelling agency, I experienced firsthand the limitations of innovative beauty products and the lack of accessibility professional makeup artists had to premium products. I just knew there had to be a smarter and more user friendly way for women to self-tan and had often thought about the idea of marrying self-tan

8

with a spray bottle. I knew that if I could create a way to a product that put an end to stained hands and uneven coverage that it would be a success! When TAN Airbrush in Can – the world’s first aerosol ‘tan in a can’ self-tanning product – hit the market it truly changed the way that woman self-tanned, delivering professional results with the convenience of an at-home 360 degree nozzle application. How did your customers help you create the next step for ModelCo in natural skincare? I was driven to enter the skincare beauty category when the results from a recent survey we conducted showed more than 89% of the 8000 respondents wanted to see a natural skincare line added to the ModelCo range. We value all customer feedback and were positive that natural skincare would be a success. What products take credit for Rosie’s perfectly polished look? Rosie loves to keep her beauty routine simple and is a big believer in looking after her skin. She recently visited Sydney for the launch of our natural skincare collection and couldn’t stop gushing about our ModelCo Instant Miracle Booster and ModelCo Rose Mist Replenishing Facial Mist, she said they were her travel essentials. Rosie likes to keep her skin looking fresh with a BB cream and loves a rosy pout and dewy cheeks with ModelCo Cheek + Lip Tint. Like most women, Rosie rarely leaves the house without wearing mascara and is a ModelCo Fat Lash addict. Which ModelCo innovations are in your handbag today? I always carry ModelCo Daily Face Mattifying Sunscreen and Lip Balm SPF50+ as it gives my skin light coverage and high protection, not to mention hydration for my lips with the clever inbuilt lip balm and mirror. What drove you to be a cruelty-free company? As a brand we are ethically and environmentally conscious. This is something that is important to me and important to our customers which is why we are PETA certified and are proudly animal cruelty free. Where is ModelCo’s next stop in product development? ModelCo prides itself on delivering dual purpose, smart beauty products to help women look and feel glamorous – that will always be the crux of the business with all products we launch. You’ll have to stay tuned for the next ModelCo innovation.

Clean Skin

Deb Farnworth-Wood tells how her journey Down Under and success with Australian Skin Clinics began on a train in England.

L

ife is often about being in the right place at the right time. For Deb Farnworth-Wood a chance meeting with famed British business tycoon Baron Alan Sugar on a train in England was the catalyst for what was eventually to become her new life across the world in Australia. “He asked if I was OK because I looked tired and then proceeded to ask me a series of very direct questions about where I was going and where I wanted to be.” Three years later Deb married Shaun Wood in Noosa and they both fell in love with the lifestyle and opportunities that were available to them Down Under. Out here on holiday in 2006 she saw an advertisement to buy Australian Skin Clinics and decided there and then to buy the business. She and Shaun sold up everything and with their children, Jacques and Charlie, made the move. “One of the reasons I bought it was because I could see that the business was able to be franchised.” That initial sense of future success turned out to be prophetic because after a period of consolidation Australian Skin Clinics is now in full blown expansion mode. Today Australian Skin Clinics is widely recognised as a successful and rapidly growing franchise brand that is leading the Cosmetic and Aesthetic industry of Australia. A success story that is largely due to the overwhelming ambition, dedication and vision of Deb Farnworth-Wood. “My background was a fast paced leadership role in a network of multi-faceted medical clinics in the United Kingdom. When I started with them in 1991 the turnover was £700,000. By 1993 I was the first non-GP to be a partner in general practice in the UK. The same year we became the first non-pharmacists to own a pharmacy and a year later introduced a drive-thru for prescriptions because we were so busy. When I left nine years later the group turnover had grown to £9 million. I knew that I could apply the lessons learned from that rapid expansion to a business in Australia.” That expertise and planning has set the tone for what has now become a nationally recognised brand and a leading franchise network around the country providing effective, affordable and medically proven treatments to everyday women. Treatments include cosmetic injectables, laser hair removal, laser pigmentation and redness, microdermabrasion, and radio fractional therapy with dermal stamping.

14

label magazine summer 2014

That initial snap decision to pack up her life in just six weeks and move to the Gold Coast gave Deb the opportunity to specialise in an area that she loved most – cosmetic medical services – and at the same time provide an opportunity to enjoy a new life in Australia. She saw more for the future of that single clinic in Ashmore and spent the next three years perfecting her business and its systems before launching the first franchised clinic in 2011. Despite a conservative roll out plan, the nation has embraced this proven and successful business model with extensive demand from prospective franchisees flooding in from all corners of the country. Through Deb’s determination, commitment and strong business acumen, the company has more than doubled the projected clinic growth numbers and is set to see another 20 clinics open in the next twelve months, adding to the current 15 clinic locations across Queensland and Victoria. When asked about the demand the company is currently experiencing from prospective franchisees, Deb, who is the company’s Managing Director, said, “When developing the Australian Skin Clinics business model, I saw an opportunity to provide customers an experience unlike any other in the marketplace – the highest quality service at affordable prices. Our strategy has been to set the benchmark in quality across all levels of our business including staff training and recruitment, client experience and treatment effectiveness. This dedication and commitment to quality, is the reason why we choose our franchisees so carefully, because we feel it is important that all franchisees share our same core values and high standards.” As the Australian Skin Clinics brand continues to strengthen and flourish within a competitive market, it is Deb’s ethical and responsive approach to staff and client satisfaction that is driving its continued success. Innovation and staff development are some of the strongest attributes Deb has infused into her business model which are generously passed along to her franchisees. Recently announced as one of BRW Fast Starters in 2014 and positioned as number 19 in the top 100 new businesses in Australia, this brand is already reaching great heights. With this truly inspiring woman at the helm, the future of Australian Skin Clinics is exceedingly bright.

maui jim What began as one man selling sunglasses on the beaches of Maui, Hawaii in the early 1980s has become a world-wide phenomenon for those who want the best protection for their eyes. Maui Jim’s initial aim was to provide sunglasses that provided advanced protection from the severe glare and UV rays of the Hawaiian sun without distorting the beautiful colours of the Islands. That was the catalyst for the company developing PolarizedPlus®, which was later patented and subsequently enhanced to create the company’s newest technology, PolarizedPlus®2. There are four main reasons to select Maui Jim over other brands. 1. Glare Reduction due to PolarizedPlus®2 technology which reduces 99.9% of harmful glare. 2. The production of True Colours again due to the technology of the polarising film which produces the truest colours of any lens on the market. 3. Repelling water, dirt and smudges thanks to the unique waterproof and oleophobic coatings which make marks easier to wipe away. 4. The choice of four lens colour options. Maui Jim is the fastest growing sunglass company in the world and it’s because they produce fashionable, highly wearable and durable sunglasses that have you seeing the world in a whole new light. fashion YSL Handbag: I’ve always loved YSL and I was in Dubai and found it in the YSL store in the Mall of Emirates. You can always find something in any YSL store and they are instant classics, will last forever and never go in or out of fashion... and it was tax free too which is great.

White hat and jacket: This is a look I love. The Kooringal hat I bought locally and it goes beautifully with the Valentino jacket I picked up at Incheon Airport in South Korea. We are exporting a lot of beauty products to Korea and I saw it and thought it would be perfect for our lifestyle.

Alison is wearing a Fendi sand coloured knit dress with matching black Chanel necklace and Versace wedges. Necklaces: I love both of these. The bigger one is a handmade piece from Osborne + Grace in Marina Mirage which I had slightly modified. It is more for formal occasions and balls. The other is a necklace and earring set with crystals and signature LV pieces from Louis Vuitton in Surfers Paradise.

Shoes: These are Ralph Lauren and can be worn to almost anything. I saw these when I was in David Jones in Sydney and loved them instantly. White wedges with brown straps are almost a summer staple.

My Style

Alison Atia is perennially well dressed and impeccable groomed. As the founder and managing director of Skino2 Cosmetics & Alive Clinics, her job entails constant overseas travel which allows her to source hard to find classics and then mix them with funky accessories. Coat and Pants: Both of these are from Carla Zampatti in Marina Mirage. The pants are white leather with little holes punched in them and are very cool while the burnt orange jacket is a mix of linen and bamboo with chiffon sleeves. Again it is a perfect outfit for our climate.

Bikini: Summer is coming so I had to include this hot little number by Jets which I bought locally at Sunburst. Black and white is really in this summer and as we live just across the road from Surfers Paradise beach they are the perfect summer ‘must have’.

The Japanese are renowned for a culture that celebrates grace, femininity and strength, all perfectly personified in Mercedes-Benz Fashion Week Tokyo 2015. 38 designers collaborated to show the world the most striking summer trends and updates that every woman needs in her wardrobe. Tokyo fashion week aims to be the gateway for new designers to a path of prosperity, creating beginnings of cooperation between retailers, designers and manufacturers, all while making Tokyo’s fashion scene more animated. Floaty full skirts picked up the runway rush in aquatic jewel tones from Atsushi Nakashima, as well as sparkling soft pink and bedazzled black at Dresscamp, favouring floral embellishments akin to Johan Ku Gold Label’s flourishing mini. Corazon de Alma gave us effortless glamour in a vivid rose two-piece, following on from haha’s fifties femme cherry blossom skirt. Blush continued to bloom at Haori de TiTi, while Hanae Mori designed by Yu brought us butterfly ballgowns similar in structure to Ristuko Shirahama’s metallic mosaic cocktail dress. Silver slipped its way into the dazzling crop top by HirokoKoshino. Blue hues were a hit with Yasutoshi Ezumi, with Zin Kato and Lamarck taking a darker turn with lace and scalloping.

Love your lashes

rimer, mascara, falsies, extensions – there are so many ways to make your lashes look thicker, longer and more luxurious. This season, we are over faking it and have started the search for low maintenance approaches to prepping our peepers. Label investigates eyelash serums that will have you growing glamour in your sleep. We will forgive your reluctance if you don’t believe a tiny tube can start your eyelashes sprouting, so we are looking beyond the promises and analysing those active ingredients. Talika, a French beauty company, discovered the powers of an anti-bacterial cream in accelerating eyelash and brow growth among casualties of war in 1948. Today, it’s all in the peptides; these amino acids are the links in the skin’s chain of protein production. Short chains are absorbed into the epidermis and alert cells to function. We also have bimatoprost, a member of the prostaglandin family which is enzymatically derived from fatty acids to produce lipids similar to hormones. A common component of glaucoma therapy, ophthalmologists have long observed their effect on eyelash growth as the ingredient binds hair to its root and activates development. Conditioning ingredients are also a big hit in preventing breakage and improving the texture and health of your follicles. Be prepared to wait up to six weeks for wow-factor results from most formulas on the market.

Fatty acids such as retinyl palmitate, tocopheryl acetate and ascorbyl palmitate, as well as the provitamin of vitamin B5 and panthenol, combine with vitamins A, C and E and botanical extracts for lush lashes. Babor Sensational Eyes Lash GrowthXL Serum $216, au.babor.com Nourish your lashes with Babor’s developed peptide complex for fall-out, UV light and environmental stress protection to see them grow. Soshan Lavish Lash $39.95, jmraus.com This Australian-made beauty uses amino acids for that fantastic protein growth process we discussed above, along with a circulation booster for the serum’s deeper penetration in an effort to supply follicles with nutrients. Olay Regenerist Micro-Sculpting Eye Cream & Lash Serum Duo $32.49, olay.com.au In one week, lines around the eyes and lids are treated, while lashes are thickened, all using an amino peptide complex and lys’lastine to plump the skin around the eye area. eat & drink vodka in the mix

Australia’s Artisan Spirit Merchants have released a range of naturally crafted, premixed Vodka cocktails. VODKA O is made from carbonated filtered water, real fruit juices, fruit purees and spice flavours. With no added colours or artificial flavours and less sugar compared to other leading premixes, they are the natural choice for discerning drinkers. Available in a range of four imaginative flavours: Apple, Ginger & Spice; Pineapple, Cucumber & Mint; Pear with a hint of Vanilla and Strawberry, Cranberry and a touch of Basil.

Eat & Drink

Delicious bites about all the latest in food news.

Hydrodol has been relieving hangovers in Australia for over 10 years. Designed to be taken whilst drinking it alleviate the adverse effects of alcohol consumption. Feel fresh and ready to take on the world in the morning.

Since 1859, the Duval-Leroy family have been perfecting the quality of their non-vintage Brut, revelling in

Olli & Luca NYE

the art of blending Pinots and Chardonnays.

New Year’s Eve – you want a great meal but don’t want to spend a fortune. Award winning chef Luke Turner has devised a menu for Olli & Luca with an authentic Italian feast. For $65 per head you get a choice of two courses – entrée and main or main and dessert – and a bottle of wine from a selection of three. Bookings are essential: 07 5538 8005.

Enriched with around fifteen crus and a generous quantity of reserve wines, Duval-Leroy Brut have produced a Champagne with a perfect balance between finesse and power, with hints of dark chocolate, cinnamon and roasted yellow figs. Based in the Barossa Valley, the Kalleske family winery has again produced two outstanding wines. The first is Clarry’s GSM 2014, a blend of Grenache, Shiraz and Mataro. The medium-bodied palate is filled with juicy berry fruits. The hallmark of this well balanced wine is the purity of fruit, respected by limited maturation in seasoned barrels. The second is the 2014 Rosina. The palate is alive with intense bright berry fruits, toffee apple and juiciness. Perceptible but balanced natural grape sweetness adds mouth-feel and generosity which is then framed by subtle acidity to produce a flavoursome mid-weight rosé.

Minimum booking of two.

Fijian-Style Sashimi of Trevally Dressing 80ml nuoc cham 55ml coconut cream 1 tablespoon ót tuóng Juice of ½ lime Whisk all of the ingredients together in a bowl until well combined. The Rest 200g piece of sashimi-grade trevally, skinned and boned 1 small long red chilli, thinly sliced 4 cherry tomatoes, quartered 70g young coconut flesh, cut into thin strips 50g salted cucumber 15 coriander (cilantro) leaves 1 red Asian shallot, thinly sliced Slice the trevally into thin strips. Transfer the fish to a bowl with the remaining ingredients. Spoon about 100ml of the dressing over the fish and mix well. Don’t worry if there looks like a lot of dressing, it starts to ‘cook’ the fish as you’re eating it, which is how it’s meant to be. Serve in bowls and enjoy immediately. Serves 2.

Lotus Ice Cream Sundae with Raspberries and Honeycomb Chocolate Fudge 340g caster (superfine) sugar 70g liquid glucose 35g cocoa powder 325g dark chocolate, cut into small pieces 75g unsalted butter 15g xanthan gum Fill a large saucepan with 390ml water. Add the sugar, glucose, cocoa powder and 1 teaspoon salt and heat over a high heat. Bring to the boil, then add the chocolate and butter. Reduce the heat to a simmer and cook until the chocolate and butter melt. Whisk to combine and then bring back up to the boil. Using a hand-held blender, mix in the xanthan gum, which will thicken the fudge. Remove from the heat and allow to cool, then transfer the fudge into a covered container and put in the fridge, where it will keep for up to 2 weeks. Honeycomb 170g caster (superfine) sugar 1 tablespoon honey 65g liquid glucose 2 teaspoons bicarbonate of soda (baking soda)

Mini Pork Banh Mi The Pork 6 litres (24 cups) Chinese master stock 1.5kg pork belly, rib bones removed, skin on Pour the master stock into a stockpot and carefully add the pork belly. Bring to the boil. As soon as it’s reached boiling point, turn the heat down and simmer for 3–4 hours or until the pork belly is tender. Line a roasting tin (large enough to fit the pork belly) with baking paper. Carefully lift the pork belly from the stock, being mindful to keep everything in one piece (not easy to do, since the pork is very soft at this point). Put the pork in the tin, skin side down. Cover with another piece of baking paper then a baking tray. Weight the tray with heavy objects such as tins of tomatoes then leave it overnight (unrefrigerated) to press the pork belly. The Rest 1 loaf of chà lua (Vietnamese pork loaf) vegetable oil, for frying 8 small, soft white rolls pork liver pâté 6 salted cucumbers pickled daikon and carrot 1 bunch coriander – leaves only Sriracha mayonnaise Using a meat slicer or a very sharp knife, slice the chà lua as thinly as possible. Set aside. Cut the pork belly into pieces about 1.5cm thick and about the same length as the rolls. Fill a large heavy-based saucepan one-third full with oil and heat to 170°C or until a cube of bread dropped into the oil turns golden in 20 seconds. Carefully drop in the pork belly pieces and fry until golden. Remove with a slotted spoon and drain on paper towel. Cut the white rolls in half. Spread the bases generously with pork liver pâté. Top with a few slices of chà lua, then add the fried pork, followed in order by the salted cucumbers, pickled daikons and carrots, a few coriander leaves, and, finally, a generous dollop of Sriracha mayonnaise. Serves 8.

Line a small baking tray with baking paper. To make the caramel, add the sugar, honey, liquid glucose and 1½ tablespoons water to a small saucepan and put over a high heat. Resist the urge to stir, just allow the heat to begin to transform the sugar. If crystals start to appear, you can give the saucepan a little swirl, or use a wet pastry brush to brush down the side of the pan. Once a light caramel is achieved (approximately 155°C on a sugar thermometer), quickly whisk in the bicarbonate of soda then immediately pour the mixture onto the prepared tray. Leave to cool at room temperature until it hardens. Break the honeycomb into smaller pieces and store in an airtight container. Do not refrigerate, as the sugars will melt and soften the honeycomb. Raspberry Sauce 500g (4 cups) frozen raspberries 175g caster (superfine) sugar Add the raspberries and sugar to a small saucepan and cook over a medium heat, stirring occasionally, for about 20 minutes or until a semi-thick consistency is achieved. You don’t want to cook the sauce too long as this will create jam; there should still be a little freshness about it. To Serve A good-quality vanilla bean ice cream will do just fine with fresh raspberries and salted peanuts. Warm the chocolate fudge in a microwave until hot. Spoon some raspberry sauce into each of six serving bowls. Add 2 scoops of vanilla ice cream and top with some shards of honeycomb, raspberries and peanuts. Serve the chocolate fudge in a jug on the side so everyone can pour as little (or as much) as they like. Serves 6.

eat & drink and rosewater, while the filling takes an Italian turn with egg-yolky goodness and mascarpone. Feel free to use cherries or blackberries in the filling or drizzle where you see fit, but the Chambord is absolutely necessary for festive spirit. Once constructed and drizzled, eat immediately to enjoy the most of this crunchy, chewy, creamy cake. Meringue 6 egg whites 240g caster sugar 2 tbsp rosewater 1 tbsp cornflour 1½ tsp white vinegar 100g ground pistachios Filling 6 egg yolks 150g caster sugar 2 cups mascarpone 1 tsp vanilla bean paste 2 punnets of raspberries, plus a few extra to decorate

Sumptuous Summer In this season’s veggie patch, we are plucking sweetcorn, tomatoes, turnips and zucchini alongside spinach, snow peas, rhubarb and pumpkin. Lettuce and leeks are at their peak, as well as eggplant, cucumber, chillies and celery. Capsicum is prime for stuffing, and cabbage, carrots, beans, beetroot and asparagus are in full sprouting swing. However, there are few better circumstances to enjoy fruit than summer. The melon family comes to fruition, along with nectarines, peaches, grapes, oranges and persimmons. This issue, we are celebrating the berry family. Raspberries, strawberries, blackberries, blueberries and cherries spring to life to spruce up every dessert story.

Berry-Laden Meringue Cake As Label’s resident gourmet girl, I (Ava) am bestowing the gift of the great lunch and dinner party finale upon you. The delicacy of a good meringue has always lent itself to the warmer months, served with lashings of cream and a hit of acidic berries. My version is a little more grown up than the humble pavlova, beginning with the meringue. A hint of the Middle East sneaks in by way of crushed pistachios

Drizzle 2 punnets of blueberries 1 punnet of strawberries 50g Caster Sugar ½ cup Chambord Black Raspberry Liqueur Begin by preheating the oven to 170C. For the meringues, beat egg whites until soft peaks form, then slowly add sugar until glossy. Fold in rosewater, cornflour, vinegar and pistachios. Line three trays with lightly oiled baking paper and use a silicon spatula to smooth the mixture into small, medium and large circle shapes. Place in oven, reduce temperature to 120C and bake for 45 minutes, then turn off oven and leave until the meringues are completely cooled. For the filling, beat egg yolks with sugar until thick and pale, then add the mascarpone and vanilla bean paste, beating until well combined. Refrigerate until needed. To make the drizzle, place all ingredients in a small pot on medium heat and bring to the boil. Use a wooden spoon to mash up the berries and continue to simmer until the liquid has slightly reduced and achieved a runny jam texture. Allow to cool to room temperature before use. To assemble, place the largest meringue disc crunchy-side-down on your desired presentation platform – I used a wooden board for the sake of rustic charm. Spread half the filling evenly onto the meringue, then place one punnet of raspberries around the edge. Repeat the process with the medium-sized meringue disc and top with the smallest disc crunchy-side-up. Place the desired amount of decorative raspberries on top of the meringue and ladle over your drizzle.

Legian Legend

60

label magazine summer 2014

Mercure Bali Legian – Bali’s newest 4-star international hotel is now open with great rates for Label readers.

S

Location, location Position is everything when you are on holidays. You don’t want to be too far away nor right on top of the noise and bustle of the night life. The Mercure Bali Legian hotel is perfectly located at the T-cross intersection of Jl. Legian and Jl. Sriwijaya, only five minutes’ walk to Legian beach. It is a quick drive of about 20 minutes to the airport, with access from the By-Pass Road, avoiding the often congested Kuta one-way system. Once settled in, there is a free hop on, hop off shuttle service to famous Bali drop off points.

ituated mid-point between the hustle and bustle of Kuta and the laid back sophistication of Seminyak is the area of Legian. Beach side brashness gives way to laid back holiday in this section of the island paradise that is Bali and which has become such a firm favourite for tourists from Australia and around the globe. Mercure Bali Legian is the newest and the largest four star hotel in Legian Kelod, with the lavish resort opening its doors in late December. Located right in the heart of the Legian area at a strategic intersection, the hotel is within easy walking distance and provides ready access to the surrounding places of interest such as Legian beach, Seminyak and Kuta area. The area is a haven of restaurants, bars, shopping outlets, night clubs, and beach attractions but with a relaxed vibe more in keeping with the way Bali used to be. The brand new Mercure Bali Legian is the perfect hotel for that totally relaxed getaway or leisure travel with its facilities making it an ideal destination for families, honeymooners, corporate clients or anyone seeking to simply chill out in Bali. The cleverly designed, eco-friendly and spaciously laid out Mercure Legian is set one block back from the quiet end of Legian beach, but still right in the heart of the boutiques, markets, restaurants, bars and Warungs for which the area is so famous. Guests can look forward to a stunning sea-inspired lobby sculpture, natural timber finishes, in-built trees, open air terraces, an infinity pool deck and bar on the 4th floor, and a large pool area outside the hotel’s Ancak Restaurant. Some of the 321 rooms have their own private plunge pools, for those who prefer a private dip, while eight rooms come with an oversized deck overlooking either the lobby sculpture or pool area. An opening special is the ability to upgrade to a deluxe room for 200,000 IDR (AU$19) and receive a room with a large private balcony. Another opening special gives you the ability to book room and breakfast for two at Ancak for just 908,000 IDR (AU$86) per person. The hotel also offers free wi-fi, a Fitness Centre, Kids Club, Lavare Spa and a Business centre. As is customary with all Mercure Hotels, each room has international power sockets, individually controlled air conditioning, tea and coffee making facilities and in-room safe. An extra special pre-opening “Mates Rates” is available to book until March 31st 2015. For those wishing to take advantage of this unique offer please email directly to Reservation@mercurebalilegian. com. In addition to that exclusive offer, the first 100 Australians that book this “Mates Rate” special will receive a free 20 minute Balinese massage or a foot massage in the luxurious Lavare Spa, located by the infinity pool on the 4th floor. Bookings can be made from now until March 31st 2015 for travel period until June 2015 with some black-out dates over Christmas and New Year’s Eve. Another good reason to visit Bali now, besides the opening of the new hotel, is the abolition of the much disliked paid Visa on Arrival scheme for Aussie tourists. The special opening rate for the hotel of 888,000 IDR (approx. $85 AUD) per night per room means that the first night is almost free with the saving of the entry visa fee. You owe yourself that special island holiday and Mercure Bali Legian is your chance to experience what more than 500,000 Australians discover annually. Bali is paradise and is waiting there for you to explore its natural and man-made wonders. labelmagazine.com.au

The Rock Bar, AYANA Resort and Spa (left); The stunning Karma Kandara Beach Club (bottom left); Scoot underwater with Aqua Star Bali; Monkey in the sacred Monkey Forest (below).

Things to do... Something for everyone is what Bali offers and while it has a reputation for raging and partying all night long, there are places to see and things to do apart from a crowded disco. From nature walks to white water rafting, kayaking, kite surfing and even temple tours, the list of available activities is limited only by time and budget.

Where to play...

Aqua Star Bali have a unique experience with the launch of their new tandem underwater scooters. Safe for all ages from seven to seventy, the unique design allows the passengers to talk while they ‘scoot’ along at a depth of about five metres.

• Ku De Ta: On the beach in Seminyak is another great place to watch the sun go down. All sorts of people head there but the prices are comparable with Australia. Dress code applies after 4pm.

If you are looking for something a little different other than surf, sun and sand check out the Devdan Show at Bali Nusa Dua Theatre. This stage show highlights the diversity of Indonesian culture with highlights from Bali, Java, Sumatra, Kalimantan and Papua. With state of the art stage lighting effects, impressive illusion effects, breathtaking acrobatic effects, exotic cultural dances and costumes, this is guaranteed to create the perfect evening’s entertainment.

• K arma Kandara Beach Club: Pay the day fee and travel down the cliff face by open air escalator and laze on gorgeous day beds with pristine white sand, spa treatments, drink and food service.

Given the number of coffee aficionados that exist these days, purely for bragging rights you need to try the most expensive coffee in the world. Kopi Luwak is produced via the excrement of civet cats. Wild civets roam around the “Luwak “coffee plantations at night and feed on the plants’ best coffee beans. Having partially digested the beans they are then expunged via their excrement around the plantation. In the morning local farmers then search for and pick up the stools and dry them. Then the remaining beans are picked out by hand, peeled and roasted to produce this legendary coffee. And the taste? For most it will be a little mild but for pure one upmanship, you have to try it. The Monkey Forest is a sacred place in Ubud but the monkeys that live there are not a tame, house trained primate. Their natural curiosity and pilfering nature means that they will steal anything that is not secure. Their antics are wildly amusing but be sure to hide your sunglasses and hats and pay particular attention to handbags and wallets. Your credit cards and passport could be gone within the blink of an eye. The Bali Butterfly Park is claimed to be the largest butterfly park in Asia with a staggering 300 species all fluttering about within its confines. The advice is that the best time to go is in the morning when the butterflies are more active. The park prides itself on the study, breeding, and preservation of every species of butterfly found in Indonesia. 62

Bali is a place to set your own pace, be it lazing by a pool and raising a glass or heading out for any number of adventures on water or land. Great restaurants, both cheap and expensive, abound and then there is the ever popular shopping.

Where to eat... Whether you want to indulge in street eats or a fine upscale restaurant, the choice in and around Seminyak is staggering. Sitting watching the sunset with friends or loved ones, clutching a cocktail before heading out to dinner is one of the reasons you came to Bali in the first place. Here are a few recommendations you can trust. • Sarong: Enjoy a leisurely dinner in an outdoor lounge or an informal dining area adjacent to the bar. It is a great meeting place with superb cocktails and world-class wines. Open evenings only. • La Lucciola: If you’re really craving some quality Italian fare this is the place to go. Again right on the beach with two levels under a thatched roof. Booking is advised especially for a sunset view. • Grocer & Grind: A great place to enjoy breakfast or brunch and they make amazing organic coffee. There’s also a deli which supplies a lot of the fresh gourmet foods that you’ve been missing. • Potato Head: It’s all about food, music, art and fashion and blending daytime beach party, upscale restaurant, and sophisticated nightlife. There are three restaurants so there is truly something for all. • Sea Circus: It’s neither a circus nor on the sea but this unique eatery is a combination coffee shop, restaurant, bar and den. The owner is Australian and takes his coffee very, very seriously. • Rock Bar: Get there at least ½ hour before it opens as there are always queues. It takes the concept of ‘on the rocks’ to a new level as it is perched 14 metres above Jimbaran Bay – simply amazing.

Music

listen up dave grohl : s e v o l l e b a L What is a Foo Fighter? Even the legendary Dave Grohl, the straight shooting, front man for the band admits it is the dumbest name ever. “If I thought we have lasted more than a month and a half I might have named it something else.” His musical journey began with self-taught guitar and then a climactic change in direction when he saw his first punk band at the tender age of 13 and took up drumming. A rock ‘n’ roll lifestyle was evident early because his mother insisted that he change schools because his rampant marihuana use was affecting his grades. Leaving high school early he lied about his age and played in a succession of bands before a musician friend introduced him to Kurt Cobain of Nirvana. He joined the group in 1990 and within four years they were the biggest musical act on the planet. After the suicide of Cobain, Dave drifted, worked on his music, toured with other groups before in 1995 gathering other musicians around him to form Foo Fighters. Years of touring and multiple recordings later, the latest album, ‘Sonic Highways’ has been released which he has described as a love letter to the history of American music. Today Dave’s life has a completeness to it that he could never have imagined when he left school. He married Jordyn Blum in 2003, they have three daughters and he is universally admired for his charity work and advocacy for White Ribbon and gay rights. Music is till his passion and early next year the Foo Fighters will return to Australia as part of their world tour.

Sonic Highway – Foo Fighters For this album the group wrote and recorded one song in eight cities, delving into the local musical currents. All songs feature local legends sitting in, with every lyric written in an experimental style: Dave Grohl held off on putting down words until the day of recording.

Beautiful – Jessica Mauboy This is the third studio album by Australia’s favourite songbird. It has become her highest-charting album to date with more than 35,000 copies sold. Includes the hit singles – To the End of the Earth, Pop a Bottle (Fill Me Up), Beautiful, and Never Be the Same.

Madness – Guy Sebastian A song about letting your hair down and having fun is the premise of Guy Sebastian’s new single, ‘Mama Ain’t Proud’ featuring 2 Chainz’. He debuted the single on the final of X Factor, giving Australians a taste of what he has in store with his brand new studio album.

Never Been Better – Olly Murs One of pop music’s biggest and most enduring stars, Olly Murs has released his fourth and most impressive studio album yet. Scarlett Johansson

Robert Pattinson

Sarah Michelle Gellar

Madonna

Megan Fox David Beckham

Hollywood Phobias They may look as though they haven’t a care in the world but these Hollywood stars have a variety of odd, weird and very strange phobias. Scarlett Johansson – Ornithophobia Put the beautiful American actress anywhere near a bird and she will start to scream. She also has a dread of creepy crawly cockroaches. If that wasn’t enough she is also a hypochondriac and loves to ring fellow sufferer Woody Allen to talk about imaginary illnesses.

Christina Ricci – Botanophobia Hard to imagine why anyone would consider indoor plants dirty or terrifying but Ms Ricci starts to freak out if she sees any in her vicinity. Just to add to the general oddness she is also scared of swimming pools and sharks so a trip to Sea World is out of the question.

Megan Fox – Bacteriophobia, Achluophobia and Papyrophobia This star of the Transformers films, has multiple phobias. She is terrified of touching dry paper and scared of germs which would explain why she avoids using public toilets or restaurant cutlery.

Kelly Osbourne – Haphophobia This could explain why the Fashion Police star has no children. Her phobia is that she hates being touched so much so that her brother Jack likes to playfully touch her on the arm to make her dry retch.

Pamela Anderson – Eisoptrophobic For someone who is envied for her looks, Pammy is frightened of mirrors. She also can’t stand to see herself on television or in movies always leaving the room if she can’t get it turned off. Which probably means she has never seen her infamous sex tape.

Billy Bob Thornton This one is so odd that it doesn’t have an official name. Billy Bob has a fear of antique furniture which sort of goes with his renowned weirdness. It affects him so badly that he can’t eat or breathe.

Oprah Winfrey – Chiclephobia The talk show queen has a dread of chewing-gum stemming from childhood when her grandmother saved her used gum in little rows in a cabinet. She is so anti-gum that she has banned it from her building in Chicago. Robert Pattinson – Equinophobia The hunky glow in the dark vampire from the Twilight series of films, is scared of horses. It came about after being knocked down by a horse during a film shoot and he has never recovered. Madonna – Brontophobia Superstar Madge shares this with dogs, cats and a large section of the population – she is terrified of thunder. Which is why she never goes out when it is raining or in a storm. Britney Spears – Herpetophobia This may sound like a fear of STDs but the pop queen actually panics when seeing large reptiles and lizards. The bigger the reptile - Komodo dragons in particular the bigger the panic attack. 70

label magazine summer 2014

David Beckham – Ataxophobia There is a reason why the star soccer player David Beckham always looks so tidy. He can’t stand anything messy around him. This is similar to Obsessive Compulsive Disorder (OCD) and relates to a fear of disorder or untidiness. Sarah Michelle Gellar – Necrophobic For someone who achieved world-wide fame as TV’s vampire-slayer this is seriously ironic. ‘Buffy’ has a very real fear of the dead and would refuse to film any scenes in or near a real graveyard. Carmen Electra – Hydrophobia For someone who was a star of Baywatch, the beautiful Carmen is terrified of water and can’t swim which makes rescuing anyone from the water a bit difficult. Woody Allen – Everything Woody has made a career out of exposing his many idiosyncrasies but he has a real list of fears as long as your arm. In no particular order they are insects, sunshine, dogs, deer, illness, bright colours, children, heights, small rooms, crowds, cancer but obviously not young Korean women.

O for Outstanding

W

hat makes a successful restaurant? Good food of course, great service, attention to detail but on top of all of those attributes, passion. That one ‘ingredient’ is steeped in the DNA of the teams that operate the three O-Sushi outlets. Co-founder Prayan Benglas also believes that the constant interaction between the diners and the restaurants is what helps everyone maintain the standards that have been set over the years. ‘We’re fortunate that our customers give us feedback, both good and bad, because this allows us to carry on doing things that work and try and improve the things that don’t. We are especially proud of our excellent chefs that create the extensive menu that so many of our customers like, so much so that they keep coming back for more. Without that patronage and feedback, we would not be where we are now.’ The multiple award winning restaurants are famous for creating the perfect mood be it a quick and healthy café-style sushi bar lunch, or a leisurely dinner. The teams of highly trained chefs at O-Sushi are consistently creating some of the tastiest and most unique sushi to be found anywhere. Their comprehensive dining menu offers everything from gourmet sushi, sashimi and hand rolls to tapas, tempura, and kushi-yaki. However if you are a fan of the ‘moveable feast’ simply wait until the train glides past and then take your pick from the vast array of sushi plates on display each laden with meat, seafood or vegetarian sushi. All three restaurants are fully licensed with a wide range of all the popular drinks and of course the very best of traditional sake. There is even a selection of sushi made with organic brown rice. All of the soy used is gluten-free and all ingredients are MSG-free. Fresh, well presented food served in a delightful setting is the multiple award winning formula and O-Sushi have no plans to change. For more information on O-Sushi, log onto osushi.com.au, or visit any of their three eateries.

legal

All in the family Let the tax man pay for your children’s and grandchildren’s education.

E

ver wondered how you could save tens of thousands of dollars on your children’s or grandchildren’s private education? Well the answer is quite simple, completely legal, and better still the tax man pays it for you! The tax savings are achieved through a Testamentary Discretionary Trust or TDT. A TDT is a trust set up in a person’s Will and establishes on their death. TDT’s are funded by deceased estate assets, such as real estate, life insurance payouts or superannuation benefits. A TDT is controlled by the trustee who is usually also the primary beneficiary. That is, the person who controls the trust also enjoys its benefits. TDT’s generally include children and grandchildren of the Will maker as beneficiaries. TDT’s have a wide range of benefits and are designed to protect a beneficiary’s creditors and predators. A beneficiary’s creditor can include the ATO. Proceeds of a TDT must be distributed to the nominated beneficiaries such as the Will maker’s children or grandchildren. The relevant tax law applying to TDT’s means children under 18 years are taxed as adults. This is different tax treatment under a family trust where children taxed at extremely high rates. The potential tax savings when income from a TDT is distributed to benefit a child or grandchild under 18 is significant. If the child’s parent is a high income earner and pays a high rate of tax, then TDT income paid to children under 18 years is very tax effective. For example; Fred Smith’s mother died leaving him an inheritance

of $1.5M and a TDT was setup in her Will. Fred is a doctor. He earns $250,000.00 a year and pays the highest marginal rate of tax of 49%*. Fred has 3 children, Peter, Paul and Mary all under the age of 18 years. The TDT receives income of $75,000 per annum from its investments. Fred, as the TDT trustee, distributes $25,000.00 to each of Peter, Paul and Mary. The first $18,200.00 is tax free. The other $6,800.00 is taxed at 19% or about $1,300.00 per child. Had this $75,000.00 been added to Fred’s $250,000.00 annual income, Fred would have paid $36,750.00 in extra tax. The total tax saving to the Smith family is $32,850.00 per year. Multiplying this tax saving by the average 15 years of private education (including university) potentially saves the Smith family nearly $500,000.00. The moral of the story is through proper estate planning, setting up a TDT can create a completely legitimate tax-effective way to pay for your children’s and grandchildren’s education and lifestyle instead of seeing your hard earned dollars end up in the tax man’s pocket. To find out more on TDT’s and other estate planning strategies, speak with Richard Dawson, Partner and Estate Planning Manager at O’Keefe Mahoney Bennett Solicitors, phone 07 5555 0000. *As at 1/7/2015 including Temporary Budget Repair Levy of 2% and Medicare Levy of 2%. Tax rates are subject to change and may be varied by the Income Tax Assessment Act.
