To celebrate the anniversary, JRC will be hosting the 50th Anniversary Gala at the DoubleTree Hotel in downtown Canton.

Thanks to the generosity of two donors, $80 of each employee’s ticket has been paid for. If you choose to come celebrate, the ticket price is $20. You will need to fill out a payroll deduction form and turn it into Finance or Harrison for either April 12th, or May 10th.

MEATLOAF MUFFINS

Ingredients

Onion

Small carrots

1/4 Cup

Grated parmesan cheese

Tomato ketchup

Panko seasoning or breadcrumbs

Garlic powder

Dried oregano

Dried thyme

Salt

Large potatoes

Butter

Milk

Pepper

Additional as desired:

Parsley

MEATLOAF MUFFINS

1. Preheat the oven to 350F (175C).

2. Spray 8 holes of a muffin tin.

3. Grate the onion and carrots straight into a large bowl.

4. Add the ground beef, eggs, parmesan cheese, panko seasoning, garlic powder, dried oregano, dried thyme, salt to the same bowl and mix thoroughly.

5. Scooping out approximately 1/2 cup of the mixture, form into a rough ball shape and then press into the muffin tin. The surface should be a slight dome shape.

6. Repeat with the remaining mixture, fill all 8 tin spaces.

7. Bake for 20-25 minutes until browned.

8. Peel and dice the potatoes. Steam or boil until soft but not waterlogged.

9. Drain, then add butter and 1/2 cup of milk. Mash using a potato masher until consistency is your liking. Add extra milk as needed.

10. Add a dollop of tomato ketchup to each of the meatloaf cupcakes.

11. Top with mashed potatoes, and sprinkle with parsley.

Note: Critical Control Point for beef is 160F for 15 seconds or longer.
